And while the Pinakbet and Kare-Kare are divine, it’s the Pancit, or noodles, that I find myself craving on a regular basis. Joven served me the Canton Pancit ($7.95), and with the first bite I felt as if I was whisked away right to the heart of Manila. It was that good! As a form of Filipino comfort food, the Canton Pancit, which can serve up to three people, consists of a wide variety of vegetables, including carrots, celery, onions and cabbage. Then a bit of pork, chicken or shrimp is added for additional flavor. The secret, however, is the special sauce, exclusive to Max’s, that the chefs add to all sauteed items. Be ready to chow down because this special sauce is just too good to resist. “We make our pancit at the request of the customer,” Joven says. “Some don’t want pork with it, some just want shrimp, or the egg and rice noodles without any meat.” The chicken pancit is grow-

Y

ou can expect to see lots of holiday color on the menu at Kani Ka Pila Grille as the year comes to an end.

“There’s a seasonal theme to our dishes,” says chef Harold Beltran, who’s hoping dishes like seared ahi and fresh poke will be a hit alongside berry and asparagus salad and rack of lamb. It’s part of the mission of Outrigger Reef on The Beach to keep local music and local food alive in Waikiki. “It’s very important to us that we keep the theme of Kani Ka Pila Grille close to our menu, so dishes are always about local produce and about the kind of things that people have told us they want to eat when they come here,” he says. Beltran and the culinary staff have been working hard on the menu at the popular Waikiki hot spot of local music and entertainment for almost two years, and they’re starting to see their catering and restaurant business boom. “While we have different menus for both catering and the restaurant,” says Beltran, “both sides have really started to take off.” The change is due in part to a wide range of new menu items aimed at guests of all levels, and with varying budgets.

“We’ve really stepped up our menu,” says Beltran, who says that one of the casual dining spot’s most popular dishes is a nori-crusted ahi topped with macadamia nuts and served on a bed of salad greens with house dressing. He makes a great loco moco, too, with a made-from-scratch ground beef patty and house-made gravy over rice, topped with an egg and fried Maui onions. “The Maui onions really take it over the top,” says Beltran with a grin. And you’ll also find some kicked-up entrees on the menu this week, that Beltran says make Kani Ka Pila Grille a competitive dining spot in Waikiki. “We have some of the best restaurants in Hawaii around us,” he says, pointing to such restaurants as Ruth’s Chris Steak House, located within a short walk of Outrigger Reef on the Beach. “The standard for food in this part of Waikiki is very high, and we think it’s up to us to offer competitive dishes that are reasonably priced. It’s challenging to be in such awesome company, but it’s good for our menu.” That’s why you’ll find dishes such as FireGrilled Rack of Lamb , Rib Eye and New York steak on the menu next to salads, burgers and sandwiches. The music and the warmth of island-style hospitality are what drives Beltran and his staff, and encourages them to keep their menu affordable. “We don’t want someone to come here for the music and not be able to eat, so we made sure there are a variety of choices where people can eat well and not spend a fortune,” he says. “We want everyone to come eat, hear great music and have a good meal. That’s what Kani Ka Pila is all about.”

A Taste of Mexico

t takes a while to get Francisco Dominguez, the chef at 11th Avenue Mexitlan Grill in Kaimuki, to open up about his food. Once he does, however, it’s clear that he’s passionate about introducing the taste of original Mexican dishes to Hawaii.

Without the memory of taste, Dominguez says, it’s hard to re-create authentic food. So that’s what he’s trying to do at Mexitlan. “I’m cooking the kind of food I learned to cook as a child,” he says, “and I’m sharing it with the people who come.” For the most part, you’ll recognize most dishes on the Mexitlan menu. There’s Guacamole (made to order), Nachos, Chili Relleno, Tamales and a selection of burritos that start at $9.95. But there’s also a lot to get excited about if you enjoy venturing out of a comfort zone of Tex Mex blandness. I sat down to chat with the chef about his fabulous chile rellenos, colorful plates, and the flavors that remind him of home.

Jo McGarry: Did you grow up cooking in Mexico? Francisco Dominguez: Yes, pretty much. I am from Mexico City, and I left to live and work in Baja and lived there for a while before I came here. I was persuaded to come to Hawaii to help open a restaurant seven years ago. JM: So Americans have their own idea of Mexican food, and it’s not really what they’d be eating in Mexico. Is it harder to make American-Mexican food? FD: Not harder, but it’s true that a lot of things, of course, are different. You wouldn’t see soft tacos everywhere in Mexico, for example, or burritos and quesadillas mixed with

The Mexican food here is more of a mixture of Mexican and Tex-Mex kind of dishes — and really more the kind of food you might see in the streets, not really in fine restaurants. But that’s OK. We do what people want and then add in some interesting dishes, too. JM: Your salads are really interesting. They’re colorful and seasoned well, and offer something a little different from the norm. I love the Fish Orange Salad. FD: When we were kids, we would take an orange, peel it and then sprinkle on a kind of salty seasoning. I wanted to remember that taste and so I made it in the salad. And did you know that the Caesar salad was created for the first time in Mexico? I have one on the menu to remember that. JM: What I like about your food is that it seems

to be infused with flavor. None of the flavors overwhelm the others, but there’s a gentle heat and a well-balanced blend of spices that linger on the palate well after you’ve finished eating. FD: I use ingredients from Mexico, including the chili and spices. It’s important to use the correct chili for each dish. For example, most people don’t know that the poblano chile should always be used in rellenos. That’s what makes the difference. For me, it’s important to cook the kind of food that I would cook if you came to my home. And then I hope people come to share it. JM: Lobster tacos and poblano chilies stuffed with crab are not really what you see on too many menus around town. FD: Yes, not too many people are serving them, but they are so popular. I mix the lobster with a little blue crab, sauté with wine and some spices

and the flavor is really good. JM: Tell us about your pork. It’s tender and has great flavor. FD: Cochinita is marinated pork with orange. It’s a dish of Southern Mexico that’s made with chilies. I slowly roast the pork in the oven and it is so good. We put it into tacos or burritos. People love it. JM: So are you going to be able to succeed in introducing a different kind of Mexican food to Hawaii? FD: Well, we’ll try. In January, I will start to make different specials – maybe once a week on Sunday for example – and then we’ll invite people to come and try them. The first one I will do is posole – a corn stew with pork and chicken and beef. It is so so good. I think that people here like menudo, but the posole is even better. I think it will be a big hit.

hat regulars like most about Waialana Coffee House is the fact that it not only serves local favorites like fried rice, kalbi and teri chicken and a lot of American-style dishes like New York steak, but it ser ves them 24 hours a day. The local-style diner closes for just a few short hours each Tuesday night,

and then reopens to serve its menu of Hawaii home comfort food. With specials dictated by popular events and festivals (Honolulu Marathon, Grandparents Day and Valentine’s to name but three), Wailana’s regular menu of staples has remained the same for decades. On Thursday, those in the know beat a path the restaurant’s door

for a sizeable bowl of some of the best oxtail soup in the city. Rich with house-made broth and topped with peanuts, cilantro and juicy shiitake mushrooms, the oxtail soup is ser ved steaming hot with rice on the side. “It’s definitely one of our most popular dishes,” says Wailana Coffee House owner Kenton Tom. “It’s

one of the dishes that has stayed the same since we began.” We’re not sure regular diners would be able to handle a change, though. “We don’t plan on taking it off the menu,” says Tom. “We listen to our customers and know what they want.”

A dish just for kids

A

t Camellia Buffet on McCully Street, you’ll find the usual staples of Korean barbecue, chicken, meats, seafood and a variety of house-made kim chee. But recently the staff at Camellia has added an item or two with smaller guests in mind. “We noticed that people were asking more and more if they could have something for their kids, as not all kids like spicy food and vegetables,” says the restaurant’s longtime manager, Kelly Park. “So,” she continued, “we added orange chicken.” It might seem slightly incongruous that amid the kim chee and cucumber, you find the popular orange chicken with fried rice, but it’s proving to be a huge hit with families. “We cook it all ready so the kids don’t have to wait

to eat,” says Park. “As soon as they come in they can head straight for the buffet. They love it!” And a comforting favorite like orange chicken makes young diners slightly more ready to try the different vegetables, sides, sauces and meats on the Camellia line. Camellia’s house specials include a seaweed soup with generous amounts of seaweed, red bean porridge, red

beans and rice, rice and noodles. Newer menu items also include Korean pancakes. “People like them because they are trying to eat more healthy,” says Park of the pancake made with sesame oil, soy bean paste and seaweed. “It’s good for vegetarians, and it’s a healthy food.”

Reasons to love Richo’s

F

or Takeshi Urushido, who first discovered Korean cuisine while on a business trip more than 20 years ago, much of the cuisine’s appeal lies in its legendary health benefits.

“He says his body felt happy after eating it!” says Ayako Hanzawa, Urushido’s niece, translating for her uncle. Inspired by his culinary experience in 2006, Urushido found a talented Korean chef to partner with, and they rapidly launched four Korean restaurants in Urushido’s native Japan. This year, Urushido opened Richo Korean Cuisine on Waialae Avenue. It’s been a tremendous challenge for this seasoned restaurateur and businessman. “My uncle loves what he’s doing, even though it’s tough,” translates Hanzawa. “He wants people to love this restaurant, and he’s trying so hard to give them reasons to love it.” Richo’s Waialae Avenue location opened its doors this past August in the building that once housed Momomo Izakaya. The first thing you see upon entering is an eight-seat sumiyaki bar. If you’re a fan of charcoal-grilled morsels of meat, seafood and vegetables, you’ll want to belly right up to this bar. Selections at the sumiyaki bar may be prepared with salt or homemade sweet shoyu sauce. Yakitori include chicken thigh cutlets ($3), chicken meatballs ($2) and wings $3); other items include skewers of regular or premium beef tongue ($6/$6.99), beef tripe ($4), ahi ($4), onions ($2) and Tokyo nage onions ($2.50). Urushido and his crew are especially proud of their kimchee, which is homemade. “Twice a week, we spend hours cutting up Napa cabbage … me, my boss and the kitchen staff. It has eight or nine secret ingredients!” Chijimi, the savory Korean pancakes, are available with seafood, squid and chive, leeks, beef and yams, or mozzarella and kimchee, at $7-$8 for half-portions, $10-$12 for whole portions. Traditionalists will love beef or seafood chapgae ($10.96), with cellophane noodles and vegetables; samghetang ($28/whole, $18/half), chicken stuffed with rice, nutmeg, carrots, garlic and ginseng; or the teockpokki ($11.80), a stir-fry of spicy rice cake, seafood and vegetables. For $9, the hot stone bowl bibimbap (which some Koreans insist is a great diet food) is popular, as is the spicy pork cochujang stir-fry ($10). “And everybody loves the L.A. Kalbi!” Hanzawa says of the dish, which is garnished with green onions and sesame seeds, and served on a big ceramic plank, for $13.50.

hen you’re working at a restaurant named after one of Hawaii’s most-famous entertainers, running into a celebrity is just part of the job. Mike Maielua has been with Don Ho’s Island Grill since it first opened in 1998. Over the years, the general manager has seen many a famous face frequent the Aloha Tower Marketplace eatery, including notable names such as Bobby Womack, Shaquille O’Neal, Arnel Pineda (lead singer of Journey) and even the Hoff, as in David Hassellhoff. Most recently, Willie K celebrated the release of his Christmas CD, Willie Wonderland, with a party and performance at Don Ho’s. Diners can see more famous names on the restaurant’s celebrity wall, which features canoe paddles signed by the actors, singers, athletes and dignitaries who have walked through the iconic dining room. And true to its namesake, Don Ho’s has become a bit of a celebrity in its own right. “They’ve shot a few Hawaii 5-0 episodes in the towe. We are featured in the montage section in the new film The Descendants, and other food shows have filmed here as well,” Maielua says. As for who he’d like to see come in for a bite, Maielua says without hesitation: “The Pittsburgh Steelers. We’ve had a few of the older players, but I’d love to see the newer ones — Troy Polamalu, Ben Roethlisberger — come in too.” He may just get his wish when the Pro Bowl comes to town next month.

Noodles of fun at Sik Do Rak

I

t only takes a minute in the kitchen with Patrick Choi, the co-owner of newly opened Sik Do Rak, to realize that he’s something of an expert when it comes to making noodles. Moving quickly around the restaurant’s tiny, efficiently laid-out kitchen, Choi puts starchy, fresh buckwheat dough into a huge noodle machine above a metal pot of boiling water. As the fresh strings of noodles squeeze through the pre-formed mold, they drop into the water for no more than 20 seconds before they’re collected by Choi and thrown into a bowl of cold running water to remove any excess starch. Next, he whips around, deftly ladles soup broth into a bowl and tops the noodles and soup with

garnish from a stack of already prepared toppings. The entire process takes less than a minute. “The ordering time is fast — and everything, as you can see, is freshly made,” says a smiling Choi, who opened Sik Do Rak just two months ago. With nothing on the menu over $20, there’s already a large following of guests who come for the lunch specials — the buckwheat cold noodles are just $3.95 and barbecue short ribs are just $4.95 — and then come back for the wide variety of dinner and late night specials. “We open at 11 a.m. and close at 4 a.m., so people have lots of choices about when to come and eat,” Choi says. ack in the Philippines, they call Max’s Chicken sarap delicious — to the bones. And it’s certainly popular at Max’s of Manila’s two Oahu locations. “To those who are familiar with our restaurants in the Philippines, we’re known for our chicken!” says Maly San Juan, general manager. Cooked according to a secret recipe that was created more than 60 years ago, the crisp, juicy chicken is available in half-portions ($7.95) whole portions ($13.50), and in six different Combo Meals ($5.75-$9.50) designed to satisfy any appetite. The cuisine at Max’s, developed in the Central region of the Philippines, is slightly different from Filipino food at most Oahu restaurants, San Juan says. “In Honolulu, many Filipinos are from the Northern province, so the restaurants here mostly serve (Ilocano) food.”

There are little variations, she explains: For example, when making pinakbet, the beloved traditional stew, Northerners use anchovy bagoong (fermented fish paste); the Central region uses shrimp bagoong. Several dishes are big favorites at Max’s Hawaii locations. For starters, many enjoy Lumpia Ubod ($5.95), stuffed with shredded heart of palm, Chinese celery, and a bit of pork and crab meat. They may be ordered fried with a side of vinegar, or fresh, with peanut soy sauce for dipping. One of the most popular entrées is Crispy Pata ($12.95/small-$16.95/large). “The pork knuckles are braised till tender inside and then deep-fried, so they’re real crispy outside,” says San Juan. “We serve them with a soy-vinegar sauce and homemade

papaya relish on the side.” Kare-Kare ($11.95/small; $18.95/large), oxtail-peanut stew, is also a favorite among regulars, as is the Sinigang ($8.50-$15.95), the tangy-sour Filipino soup with a tamarind base; diners may choose among pork ribs, deboned milkfish, shrimp or miso and mahimahi for their soup. Max’s is known for its Halo Halo ($5.50), the dessert that blends shave ice, evaporated milk, beans, fruits and other sweets. “Ours has about a dozen ingredients, including palm seeds, macapuno (coconut), azuki and white beans, various fruits and gelatins, flan, and ube (yam) ice cream imported from the Philippines,” says San Juan. Buko Pandan ($3.95), a Max’s original, is made from pandan-flavored gelatin, coconut and tapioca pearls, flavored

Beeff Tenderloin Wellington n with Mushroom m Foie e Gras Puffss Merlott Demi-glace

by Chef Chai Chaowasaree Serves 8

Ingredients: • 5 pounds beef tenderloin, clean • 1 large piece puff pastry • 1 pound sliced button mushrooms • 2 tablespoons vegetable oil • 2 tablespoons butter • 1 tablespoon chopped garlic • 1.5 tablespoons chopped shallot • 1 tablespoon chopped black truffle (optional) • 1/2 cup red wine • large pinch black pepper • 1/2 tablespoon fresh herbs (equal partS of thyme, tarragon, chives and parsley) • 1 egg wash • 2 cups red merlot demiglace

Preparation: • To prepare duxelles, in a sauté pan with medium-high heat, add vegetable oil, butter, shallot and garlic, sauté for a few seconds to sweat the garlic, then add mushrooms and cook for a minute. Add red wine. The mushrooms will release more liquid, which is normal. Add truffle and season with salt and pepper, and keep cooking for about 10-15 minutes, or until all the liquid is gone. Set aside once it cools down, then toss in fresh herbs and mix well.

• In a hot pan with high heat, sear the beef about 1 minute on each side; season with salt and pepper to taste. Once it’s done, set aside for a few minutes. Then coat evenly with the mushroom duxelles, wrap and spin several times. Keep in the refrigerator for half an hour.

• On a lightly floured surface, roll the puff pastry out to about 1/4-inch thickness. Depending on the size of your sheets, you may have to overlap two sheets and press them together.

• Remove beef from refrigerator and unwrap the plastic wrap. Set beef in the center of the pastry and fold over the longer sides, brushing with egg wash to seal. Trim ends if necessary, then brush with egg wash and fold over to completely seal beef. • Save ends to use as a decoration on top, if desired. Top with coarse sea salt. Place beef seam-side down on a baking sheet. Brush top of pastry with egg wash then make a couple of slits in the top of pastry using the tip of a paring knife. This creates vents that will allow the steam to escape when cooking. Bake for 40-45 minutes until pastry is golden brown and beef registers 125 degrees F on an instant-read thermometer. Remove from oven and rest before cutting into thick slices. Merlot Demiglace
