am not a picky eater by any means — and never have been. In fact, when asked on the spot, it’s hard to come up with a food that I don't like. However, having said that, there are a few edible creations I haven't explored to their full culinary potential, one of those being scallops. This week I made it a point to broaden my horizons and expand my palate beyond its comfort zone, and immerse myself into a scallop sanctuary of sorts. Boy, was I missing out on some of the most delectable foods to come from the sea. No matter how they’re prepared, these crustaceans are so rich, sweet and tender that you won't know what hit you.

Mention the words “surf and turf” and you’ll hear my stomach growl just a little (OK, a lot), but really who doesn't love some steak and seafood in their lives? You don't have to ask me twice! This week, I ventured to the heart of Waikiki to what was once the former Waikiki No. 3 Theater — now transformed into Atlantis Seafood & Steak aka a culinary paradise on earth. The staff here is friendly and patrons are free to seat themselves, whether you wish to dine under a ship's majestic frame or out on the lanai overlooking beautiful Waikiki. or nearly 20 years, Seafood Village has called the lower level of the Hyatt Regency Waikiki Resort & Spa home. The location, which used to house a night club, offers a unique atmosphere and shape that features three private dining rooms, and remains a favorite with visitors from around the world and kamaaina alike. Even the late Michael Jackson left a note of gratitude near the entrance during one of his visits to Hawaii. If the King of Pop’s taste in food was as impressive as his musical talent, Seafood Village will no doubt have customers moon walking with delight. The eatery has found a way to ride the wave of change in Waikiki. As new buildings spring up and an Americanized form of Chinese cuisine proliferates the dining market, Seafood Village continues to prepare dishes in the “Hong Kong” style. The majority

Its recipe for success includes using the freshest seafood selections available and offering traditional Chinese recipes presented in a simple yet elegant fashion. Executive chef Sonny So brings decades of experience to the kitchen, and is the driving force behind the authentic recipes and their presentations. Dining Out stopped by Seafood Village recently to get the scoop from Matsuno and manager Johnson Ma.

DO: With the emergence of so many “Americanized” Chinese restaurants, how does Seafood Village remain true to its roots? Matsuno: We feature Hong Kong-style cuisine, and we’ve been here close to 20 years. I like to say it’s a taste of Hong Kong within the heart of Waikiki in the Hyatt Regency. We have live fish, live prawns, live lobster and live Dungeness crab. It’s a great place to celebrate anything, whether it’s two people or 200. Chinese food lends itself to a party atmosphere; everyone shares and has fun. DO: When groups dine in at Seafood Village, what sorts of

from anniversaries to birthdays and retirement parties. For $24.95 per person, groups with a minimum of four people can indulge in one of our dinner party menu sets that includes Chicken Salad with Oriental Dressing, Bacon Wrapped Shrimp and Scallops, Country Style Crab, Honey and Walnut Shrimp, General Tso’s Favorite Chicken, Sautéed Seasonal Vegetables, Steamed Rice and Mango Pudding for dessert. We also feature lunch menu sets starting at $10.95 per person for groups with a minimum of 10 people. Ma: We offer a good deal for parties, especially at lunch. We have a lot of return customers. Matsuno: It’s nice to come into Waikiki and experience what we have to offer.

DO: In addition to the party meal options, which a la carte items are customer favorites? Ma: The Peking Duck ($28) is very popular. Every time we prepare it for the customer, they always exclaim “wow!” Also, they love the walnut shrimp — it’s very popular. This location is very convenient for when people need a break from the world class shopping that surrounds us. It’s a great destination. DO: Are there any menu specials customers should take advantage of? Matsuno: We are offering a Tea-Smoked Jumbo Kahuku Shrimp ($23.95) that uses oolong tea leaves, which are deep-fried to bring out all the flavor. The shrimp are cooked and tossed in with the tea leaves, and the

result is a unique combination of taste and texture. Another special item is the Kalua Short Ribs ($18.95) that come bathed in a Chinese vinegar and chili sauce. It’s so good! DO: Is it true that Seafood Village is home to some great dim sum? Ma: I believe we have one of Waikiki’s best dim sum selections available. In Mandarin, dim sum means “touch the heart,” and our selections do just that. A lot of our Mainland guests know about it and keep coming back every time they visit. It’s made to order and extremely fresh. DO: How is the parking situation at Seafood Village? Matsuno: Parking is $3 with validation in the Hyatt, and even if you choose to valet, it’s just $4 and we’ll do the rest!

n the past six months since its inception, 4Kings Kitchen has proven to be a mecca for locals and tourists alike who crave upscale plate lunches at an affordable price. This family-friendly, neighborhood establishment has been booming with business — with items such as the Red Wine Braised Chops ($9) and the Not Your Normal Loco ($11) selling like gold. Now the time has come when owner and chef Kapo Kealoha will give 4King's fanatics much more to look forward to. “We've had a lot of return customers who have pretty much ran through a large chunk of the menu,” Kealoha says. “We always knew this was going to happen, but we're surprised by how soon it came —

expanding the menu is something we always wanted to do. “We also added two new house-made salad dressings to the menu, the Wild Boar & Blue Cheese Dressing, featuring Hawaiian smoked wild boar bacon with creamy cheese crumbles, and the Hawaiian Honey & Balsamic Vinaigrette.” Don't fret, all your original favorites will still be there, in addition to a handful of other remarkable dishes, including Smoked Rack of Baby Back Ribs ($12), Pulehu New York Steak Plate ($14), “Garden Isle” Bone-In Short Ribs ($14) and “Primo” Fish-n-Chips ($10). All entrees also come with a choice of white or brown rice and a choice of MA‘O Farms Sassy Mix Salad or homemade kimchi and cucumber kimchi. “I started working with ranchers on Kauai to incorporate Kauai-raised, grassfed beef on the menu, so we're really proud to offer this to our customers,” Kealoha states. hen describing Eggs ‘n Things, general manager Michael Skedeleski does not immediately mention the restaurant’s award-winning fresh Ahi Steak or fluffy pancakes. Instead, he emphasizes the eatery’s focus on local flair and fresh ingredients. “The motto from 1974 was ‘serving quality food in a spirit of Aloha,’” Skedeleski recalls. “It’s (Eggs ‘n Things) a breakfast restaurant with local Hawaii flair, which focuses on using the freshest ingredients and serving food with the Aloha Spirit. We don’t store much of anything; we get everything delivered fresh daily.” Husband-and-wife team Jerry and Jan Fukunaga opened Eggs ‘n Things in March 1974. Jerry, Skedeleski recalls, used to work at the Original Pancake House located on Dillingham, and was encouraged by the restaurant’s owner to start his own business. “He saw that Jerry had a lot of talent and drive,” Skedeleski says. “Jerry put more of a local twist on it (at Eggs ‘n Things); he tried to implement fresh fish in his dishes. That became our

thing —local flair— whereas Pancake House was more of a continental chain.” Since it first opened, Eggs ‘n Things has moved from its original site on Ena Road to its current location on Saratoga Road. Many changes have occurred since its creation, according to Skedeleski. “When we moved to this location (Saratoga), the hours changed,” he says. “The old hours were from 11 p.m. to 2 p.m.; that was because that other location was close to a lot of bars and

Now, we have more traditional hours, from 6 a.m. to 2 p.m. and 5 to 10 p.m.” The change in location also draws different crowds to the eatery. “We don’t have that late night bar/club crowd,” Skedeleski says. “We have a lot more of a traditional, family-style crowd. In the morning, there’s a lot of families and couples; in the evenings, it’s mostly tourists.” When it comes to the

T

o the ocean we go! Locals and tourists have been setting sail for Fresh Catch, an island-style Seafood & Meat Deli serving up the freshest in local cuisine. Chef and owner Reno Henriques opened the doors to this nautical-themed, onestop poke picnic and tailgating deli four years ago in Kaimuki, and since then opened up a second location in Kaneohe last year.

With 30 different types of poke, marinated meats, sashimi platters, lau lau, patele, beef stew and more than 15 types of seafood plate lunches gracing the menu, Henriques, a local boy who graduated from Saint Louis School and the Western Culinary Institute in Portland, Ore., loves creating island favorite upon island favorite and treats each customer as if they were family, with the warmest aloha. Dining Out couldn't resist the charm of this local establishment, or the Ahi Katsu, Furikake Salmon and the Spicy Hawaiian Poke, for that matter, so all aboard, mateys, it's time to reel in one Fresh Catch!

2 food (laughs). Smoked Meat and Onions, Kalbi Beef, Beef Stew, Lau Lau, Patele, Ox Tail Soup, Tripe Stew and then a bunch of fish dishes. When it comes to the fish plates, I love using plenty of mayonnaise, and I started pairing it with the Ahi Katsu and Furikake Salmon. When I first started this restaurant I only had three items on the menu — I was trying to keep it simple and small — and every day I would feature a new special. Slowly I began to see what was working and the Furikake Salmon started taking off (sold 200 plates per day), so I made that and other top sellers a part of the daily specials.

DO: Fresh Catch is definitely bringing in the customers, no question about it. How did this establishment come to be? Henriques: Actually, it wasn’t always a goal of mine to open my own restaurant, but I love to fish DO: Now that’s impressive. Of course, you only — and if I’m not fishing, then I’m diving. It consists of ahi and crab meat wrapped up in nori like sushi, and then it’s panko deep fried, topped with our secret and sauce furikake. It’s a little similar to the ahi katsu. If

you love meat, you’ll enjoy the Smoked Meat and Onions ($10.50) — a daily special — where we smoke our own pork and sauté onions, and top it with our special teriyaki sauce. It’s served with two scoops of rice and potato salad. Our Fish-n-Chips ($10.50) is another daily special. It features mahi mahi or cod fried in our own beer batter and paired with seasoned fries and potato salad. Everyone also comes for our poke bowls. We charge 50 cents per scoop of rice and the poke is priced by weight. You can really customize your poke bowl.

Henriques: Yes, you know, fish prices are always fluctuating, but I try to keep everything here at a set price — so no matter if the fish price goes up, my prices will always stay the same. We have 32 different types of poke, from your basics like ahi poke to aku poke, spicy poke, shoyu poke, shrimp poke and crab poke. What makes us different is that we offer the whole spread. We even have ake poke that no one really makes anymore. Our poke usually ranges from $9.99 to $13.99 from quarter pound up to two pounds.

DO: Fresh Catch is literally your one-stopshop for all your local favorites. What is your personal favorite on the menu? Henriques: Well, everything on the menu is considered to be my favorite, but if I had to choose just one, I guess it would have to be the Smoked Meat and Onions. DO: You’ve really personalized the restaurant and made it your own, by hanging personal family photos from previous fishing trips on the walls. Describe the atmosphere of the restaurant. Henriques: It’s really casual. It’s almost like Fisherman’s Wharf with the nets, buoys and floaters hanging, and the old school pictures from young kid time — we really added a personal touch. Being a fisherman, I love to cook, so it’s great to be able to do what I love for a living.

DO: Breakfast is served during the weekends. What can early birds find here? Henriques: We have an Ahi Loco Moco, Smoked Meat Fried Rice, Kalbi and Eggs or Mahi Mahi and Eggs, and we also make a Banana Rum French Toast. DO: Everything is delicious here! Tell us, what’s the secret? Henriques: It’s all in the sauce, but I can’t give away the secret recipe (laughs). But it’s a gourmet dipping sauce that we also sell in Longs, and we’re planning to make our dipping sauce available at other stores as well. We also have a creamy salad oriental dressing that’s really ono, too. DO: The portions are large and the prices are very reasonable, wouldn’t you agree?

For Vegetarian Duck, mushrooms and bamboo shoots are wrapped in bean curd and then sliced ($9.50). It's one of the restaurant’s best-selling vegetarian offerings. It’s a simple dish, not spicy, but the flavors and textures complement each other and the result, in color, does resemble roast duck. Some vegetarians out there

may not understand this scenario. If someone chooses not to eat meat, why would they want to eat something that looks like meat? There is at least one good reason. Owners Billy Rattanasamay and wife Nila opened the doors to the restaurant's first location in Manoa Marketplace in 1992, and in 2008 opened a second location in Waimalu Plaza Shopping Center. And while the array of out-of-this world pastas runs the gamut here, seafood lovers marvel in the Scallops and Shrimps Alla Bolla (small portion $21.90, regular portion $26.90). “The Scallops and Shrimps Alla Bolla features four jumbo shrimps and six pieces of jumbo scallops,” says Paesano executive chef Gerry Quach. There is even a page stocked with Asian delicacies like shrimp dumplings, Honeydew Snow Ice ($6.50) beef brisket and tendon, fish balls and pigs feet, all swimming in a homemade soup base and wonton noodles specially ordered from Canada, of all places. “We wanted to have a casual place where everyone can find something they want to eat,” says the cheery and vibrant Cindy Wong, adding that her personal experience with a picky eater inspired the varied menu. “My son is only 10 years old, and when we go out to eat, he always wants pizza, pasta. Me and my husband, we like other food like Chinese and Japanese,” she says. “This way, if you come to this café,” she continues, “you can order anything you want. My son can eat what he wants, I can eat what I want, and my husband can have what he wants. Everybody can come here and find something they like to eat.”

Anytime Cafe introduces new and improved menu atrons of Anytime Café may notice a few changes this week at the popular Market City Shopping Center eatery. For starters, there is a brand-new menu to peruse, complete with photos of every dish that is listed in its glossy pages. “Our new menu is done and on its way here from Hong Kong. We can’t wait to see it!” says Cindy Wong, who runs the year-old restaurant with her husband, Ken. Another happy addition is the inclusion of more dinner offerings like the Bone-In Pork Chop ($14.95), which previously had been available as a limited-time special. “Before, we never had a set dinner,” says Wong. “This dish is very popular, which is why we wanted to put it on the new menu.” The dinner’s popularity comes as no surprise. To begin with, the 10- to 12-ounce pork chops are special ordered from a local meat company, ensuring that the meat is fresh and of the best quality. “Since the Bone-In Pork Chop is so fresh, we don’t need to use any special seasoning. We just use a little salt and pepper,” Wong notes. The pan-fried pork chops are served with a mushroom cream sauce over a bed of pasta with vegetables and choice of soup or salad on the side. “It’s really good, very tender, and with the sauce, it is really good,” Wong adds. Turn the dinner into a full-fledge meal with an order of Thai-Style Pork Cheeks ($6.95), an appetizer of marinated pork cheeks served with a spicy dipping sauce. And for dessert, Wong

with Sun-dried Tomato and Puna Goat Cheese

• 3 teardrop tomatoes • 3 pieces baby zucchini • 2 pieces fresh shiitake mushroom, cut in quarters • salt and pepper, to taste • 1-2 tablespoons butter

Ingredients : • 1 boneless chicken breast • 2 tablespoons Sun-dried

Tomato and Goat Cheese Filling • 2 tablespoons vegetable oil

• 3 cloves garlic • 3 pieces pearl onions • 1 ounce dry white wine • 1 cup chicken stock

Preparation: • Cut a small pocket in the chicken from top to bottom, enough to be able to stuff the goat cheese filling. Be sure to not cut too deep or create a hole, the cheese may leak out when cooked. • In a sauté pan on medium heat, add vegetable oil and chicken skin-side down and cook for a couple minutes or until light brown, then turn over. • Add garlic, pearl onions,

and cook for a minute; deglaze with white wine and chicken stock. Add tomato, zucchini, mushroom, salt and pepper and let it simmer until the chicken is cooked all the way (about 3-5 minutes). When the chicken is done you should have very little sauce in the pan. Turn off the heat and add butter. Stir until the butter is incorporated into the sauce. • Serve with mashed potatoes, rice or pasta.
