et’s get one thing straight: When it comes to pizza, I often lose complete control. Seriously, I can’t even begin to count the number of times I’ve devoured entire pizza pies all by myself. Man versus Food with Adam Richman? Pfft. If I had my own TV show, it would simply be called Alana versus A Lotta Pizza! But I’m showing better self-restraint lately because I’m really trying to eat healthy. As a result, I decided to skip the greasy pies this week and instead immerse myself in the world of “upscale pizzas.” These gourmet creations need minimal adornment, and they really do shine in a class of their own. So come along with me as we veer off onto the Rodeo Drive of Pizzas — fabulous hot spots on Oahu that, quite amazingly, have mastered the art of the perfect pizza!

Conveniently situated in Market City Shopping Center, Anytime Café has been quietly serving upscale pizzas since the restaurant first opened its doors in February 2010. However, loyal fans like myself know that the upscale pizza is what it’s all about! Owners Ken and Cindy Wong have intermixed a symphony of cultures resulting in a fusion of flavors from around the world. Be it Chinese, Italian or local favorites, you’ll find scrumptious pizza under one roof at Anytime Cafe. My Italian cravings got the best of me again this week and thoughts of a piping-hot pizza pie had my stomach rumbling for days. When I finally made it into Anytime Cafe, I was looking for something a bit off the beaten path. I immediately chose Seafood Pizza ($10.95). “Our pizzas are a popular item here,” says Cindy, adding that the Seafood Pizza can be considered the most unique of the bunch. “The base of all of our pizzas consists of mozzarella cheese and a light tomato sauce atop a thin, crispy crust.”

apanese-style preparation meets Korean culinary fare at Richo Korean Cuisine, where tatami mats and the inviting aromas of kal-bi, chijimi (Korean pancakes) and kimchi offer an authentic Asian flair to this modern establishment. At Richo, the clientele run the gamut — from kamaaina to globe-trotting visitors who include Japanese celebrities — all of whom seem to have one common goal in mind: to taste the scintillating dishes expertly prepared by executive chef Masato Tsuji. Dining Out recently caught up with Richo owner Takeshi Urushido, who graciously took time out of his schedule to discuss how he’s found so much success serving up Korean cuisine.

DO: You opened the Hawaii location in August 2008. What was your motivation in bringing the restaurant overseas? Urushido: I visited Hawaii for the first time 20 years ago and I absolutely loved it. At that moment, I knew that I wanted to open a restaurant and make a name for myself here in Hawaii. DO: You’re Japanese, born and raised in Tokyo, and yet you decided to dedicate yourself to Korean cuisine. Why is that? Urushido: Korean food is known to be very healthy and tasty. I wanted people to be able to experience and enjoy this type of food. I go to Korea very often to learn more about Korean cuisine and to eat different foods. I’ve been there more than 100 times.

DO: Richo Korean Cuisine originated in 2006 in Tokyo, Japan, before you brought it to the Islands. There are now four Richo locations in Japan. What type of clientele frequents Richo Tokyo? Urushido: It’s a very upscale restaurant, so we have many businesspeople, those who live around that particular area. Sometimes, even celebrities

DO: For someone who may be dining at Richo Korean Cuisine for the first time, what are some of the items that you would highly recommend? Urushido: The Hot Stone Bowl Bibimbap ($9 bowl, $15.80 set) has always been a wonderful item on the menu since we opened the restaurant. This dish 1

features hot rice within a hot stone bowl topped with namul and eggs. When mixed well together with sesame seed oil and hot pepper paste, it’s delicious. I recommend saving some rice for the end of the meal to eat with hot soup. For a party of two, I would recommend sharing the Teppan Combo ($38.80). It’s a filling set where guests become full on the miso soup of South Korea, an array of kimchi, namul, salad and seaweed. Then they can cook their choice of meat on a tabletop hot grill and roll the meat in sangchu, which is much more nourishing than lettuce. Our homemade kimchi ($5) is also one of the best, something that everyone must try, and so is our chijimi. The Seafood Leek Chijimi ($8 half, $12 whole), for example, is very popular and consists of pan-fried clams, squid, shrimp and green onion in a special pancake batter. The sugary delights keep coming at Larry’s Bakery I f you’re a lover of sweet goodness, you won’t want to miss out on the scrumptious treats found at Larry’s Bakery on Lawehana Street in Salt Lake. Iris Yafuso now serves as vice president of this family-owned business, which was originally operated by her late-father, Larry. “We create many cakes, cookies, cupcakes and cinnamon bread, which is a popular fundraising item, and we’ve finally brought

back our pastries,” Yafuso says. “Basically, we have 50 to 60 different items that our customers love.” According to Yafuso, 90 percent of the business includes providing wholesale items to a variety of local stores, including Don Quijote and Tamura’s in Waianae. However, the store itself is ever-bustling with customers from near and far, all of whom can’t get enough of Larry’s Bakery items.

White Chantilly Cake ($12.50 and up) This white chiffon cake features a light chantilly frosting and macadamia nuts. “It’s very light and we can even decorate it and have it available in different sizes as well. Everyone seems to just adore it — we can’t keep it on our shelves,” Yafuso says.

Cinnamon Bread ($4 per loaf) Created from an old family recipe, the Cinnamon Bread features chunks of cinnamon throughout the bread itself. “A lot of people slice the bread up and dip it in egg batter to make French toast with it,” Yafuso adds. “You have all of your ingredients in it — cinnamon, sugar and our special glaze.”

Kit n Kitchen’s bold, beefy dish

any dishes on Kit n Kitchen’s menu combine the boldness of European cuisine with the subtle satisfaction of Asian flair. One such dish, the Spicy Ground Beef and Eggplant, started over a decade ago, although that dish has since evolved into other varieties, including the Spicy Ground Beef and the Ground Beef with Shrimp. “If you ask where the origins come from, it’s more like a twist between Euro and Asian,” says May Yiu, wife of Kit n Kitchen owner Kit Yiu, of the restaurant’s many dishes. The key to this blend of European and Asian cooking, according to May Yiu, is complementing each style harmoniously. "The tomato side of the dish is definitely Italian or European, and the Asian part is more light. Italian dishes are normally very thick, very rich and we try to add the lighter, Asian side to the meal as well,” says Liu. The Ground Beef with Shrimp ($11.95) is simple in its combination. It starts with a bed of pasta, normally spaghetti, but some customers do order linguine. “We recommend a thinner pasta because this sauce is light, and if you use a thicker pasta it cannot handle the sauce,” she adds. On top of the pasta lies chef Yiu’s signature ground beef tomato sauce, which includes low-fat lean beef and garlic olive oil. The shrimp is prepared very simply, quickly sauteed and arranged on top of the sauce. “The taste is really intense and it’s also natural with the blending of tomato and garlic. This is one of our favorite dishes, “ says Yiu. The Ground Beef with Shrimp is served for both lunch and dinner.

A

“I want them to be my friends,” says operations manager Eiki Tamaki with a warm smile. “Once I remember you, I’ll keep remem-

bering you.” Hinone Mizunone opened on South King Street — in the former Taco Bell location — in May 2008. Part of the Japanese food chain Fujio Food System, Hinone Mizunone roughly translates to “sound of fire, sound of water,” which refers to the way they cook their food. “It’s homestyle cooking,” Tamaki says of the unpretentious food, which perfectly matches the easy, cheerful atmosphere of

the downtown eatery. “A lot of our regulars come back maybe two, three times a week, especially at lunchtime; some people come back three, four times a week!” he adds. “A little after 2:30 p.m. it slows down. But during the peak time it really, really gets crowded.” The reason for the high volume of repeat diners (in addition to Tamaki’s friendly service, of course) could be the wide selection of fresh Teishoku. The

Shogayaki, consists of thin slices of pork stir-fried in a shoyu-ginger sauce. “Shoga is ‘ginger,’ and yaki is ‘to cook,’” Yamaki explains. “It’s very popular in Japan,” he adds, rattling off other popular entrees like Oroshi Rib-eye Steak with Ponzu Sauce, Karaage, Saba Nituske, Tempura, Chicken Katsu, Ebi Fry, Katsutama, Salmon Sashimi and Ahi Sashimi. “Honestly, I don’t think there’s going to be just one dish that’s going to stand out,” Tamaki confesses. “Our restaurant has home-style cooking. It’s the kind of food you’ll see in the houses in Japan, something your grandma and your mom used to make. “Maybe not hamburger steak,” he adds with a laugh, “but something like that. Something simple but delicious.” The same goes for the rice, which is prepared in the traditional fashion in a pot on the stove rather than a flip-of-the-

combo platters are available for both lunch and dinner and come with an entree (two at dinner), rice, miso soup, two side dishes and tsukemono. “There are one, two, three ...,” says Tamaki, as he begins counting from the restaurant’s menu, “16, 17 … There are 17 entrees to pick.” One of the choices is the Sizzling Hamburger Steak, a simple mixture of ground beef and ground pork topped with a demi-glaze sauce that is slightly sweet, almost like a teriyaki glaze, Tamaki says. “The hamburger steak is Japanese-style, so it’s somewhere between hamburger and meatloaf,” he adds of the tender, juicy patty. “It’s really soft. You can break it with the chopsticks.” The Pork Ginger, or

Though it takes more time and effort for the cooks to diligently tend to the water and stir the precious grains, the result is rice that is fluffier and sweeter, and Tamaki boasts customers can immediately tell the difference. Prices at lunchtime, which is served between 11 a.m. and 5 p.m. Monday through Saturday, range from $8.50 to $14. During dinner, which immediately follows from 5 to 9 p.m., the Teishoku cost $16.75 to $29.75, but remember, that includes an extra entree. Every month select Teishoku are available for $8.50 at lunchtime only. Daily specials for March include Garlic Tonkatsu, Aji Fry, Ahi and Vegetable Tempura, and Saba Miso, with different items to be featured in April. There also is a good selection of Japanese Curry and Udon from which to choose. “(The flavors) are pretty consistent, so you can keep coming back,” says Tamaki, before adding with an infectious smile, “It’s really an easy-going place to come.”

Summer is right around the corner, bringing with it the promise of longer days, warmer nights and the need for fresh, flavorful food worthy of a fiesta. Foodies will find exactly that at El Charro Mexicano Aiea Restaurant, where owner/chef John Ramirez and his crew of cooks create authentic Tex-Mex cuisine suitable for any form of celebration. Ideal for large parties or folks who can’t decide what to order, the Appetizer Sampler ($14.99) includes four of El Charro’s most popular appetizers. “It comes with one flauta, which is almost like a chimichanga, with shredded beef and chicken,” Ramirez says. “Then you have the two taquitos, one with shredded beef and one with shredded chicken, one cheese quesadilla and then in the center you have the ceviche” — a mahimahi marinated in lime juice and mixed with homemade pico de gallo. If you don’t want to share your meal, Ramirez suggests the Camarones Volcano ($14.50). This must-try consists of shrimp coated in a bright red sauce made from scratch each day with habanero peppers, garlic and onions. “It’s sweet and a little bit spicy,” Ramirez says of the dish, which also comes with black beans, Spanish rice, pico de gallo and guacamole. hen John Ramirez opened El Charro Mexicano Aiea Restaurant in Aiea Shopping Center last September, he also fulfilled a life-long dream of owning his own eatery. “It was just an accomplishment I wanted in life, to have my own restaurant, and also to be successful,” says Ramirez, who works as letter carrier in Kahaluu during the day before traveling over the Koolaus to work in the kitchen at night. “It’s a lot of responsibility, but I like it,” he admits. Dressed in vibrant yellow and red paint and decorated with mirrors, paintings and even a sombrero, El Charro has quickly become one of the best places to have a quick bite to eat on the Leeward side. It specializes in authentic Tex-Mex staples like quesadillas and enchiladas, but Ramirez, who is originally from San Antonia, Texas, and fellow cooks Gloria and Jesus Orias (who are siblings from Mexico) also put their own personal spin on traditional recipes. “We got our recipes together, and Sofia, my wife, decided what went on the menu and what didn’t,” he explains with a chuckle. “It’s a mixture of what me and my wife like.” Making the cut is the Pollo Poblano ($10.50), a creamy and surprisingly mild treat made with white-meat chicken breast sauteed in a white cream sauce that is made with Maui onions and poblano peppers. Other popular menu specialities include Carnitas ($10.99) — chunks of slowcooked pork loin garnished with lettuce, pico de gallo and guacamole that Ramirez says fills up even the hungriest “big boys” who come into the restaurant — and Fish Milanesa ($14.50) — a breaded piece of fresh fish prepared similarly to chicken katsu. “They’re different and no other restaurant has them,” says Ramirez of the three meals, which are each made complete with a side of Spanish rice, black beans and choice of corn or flour tortillas. In addition to the extensive assortment of apertivos (appetizers), ensalads y sopas (salads and soups), a la carte items and classic and specialty plates, El Charro also serves vegetarian dishes, breakfast and desserts like Flan ($3.49), Sopapillas ($3.49) and Fried Banana Split ($8.99). “It’s a fried banana wrapped in a flour tortilla with a secret family recipe inside. When you bite it you’ll know what it is,” Ramirez says of the sinfully delicious dessert that comes with two scoops of deep-fried ice cream as well as drizzled fudge sauce, cinnamon, powdered sugar, whipped cream and a cherry on top. “The community really loves us, so we’ve been keeping busy,” he adds. “And we’re happy that the customers love the food and keep coming back for more.”

hen a restaurant has been in business for more than 45 years, change can be difficult.

W

But the team at Kenny’s Restaurant is on the verge of making substantial changes in a number of areas, beginning with its menu. On a recent weekday morning, owner John Fujieki Jr. and several members of his staff discussed the new dishes they plan to add to the formal menu. The reason for the change is very simple, according to Fujieki. “We’re trying to bring in 1 the younger generation,” he explains. His daughter Courtney nods from an adjacent stool at the long counter. As a third-generation restaurateur in her 20s, she was tapped, along with manager Rory Sandobal, for an insiders’ understanding of the culinary cravings of the young. “We’re giving the menu a facelift,” says Sandobal. “New ideas, new foods. We want to keep the ingredients we’re famous for, but change them in a way to attract new people.”

Named for one of its founding partners, Kenny’s Restaurant opened in 1965 at the Kamehameha Shopping Center on North School Street, just off Likelike Highway. John Fujieki Sr., an original owner and cofounder, passed away in July 2001. His son and granddaughter say it’s been a long time

since substantial changes were made to the menu. “We’ve been working on the new dishes for two or three months,” says Fujieki. “We’ve considered everybody’s comments and developed them that way.” Chef Ernesto Yeban brings the first new dish to table: Teriyaki Chicken Pizza ($12.50). ful, with white onions, mozzarella, and a thin ribbon of mayonnaise piped over it. Two other pies — Spinach & Tomato, and Vegetable — will also be available for the same price. Next, Yeban brings a plate of Kim Chee Fried Rice ($9.49): two generous scoops of fried rice, loaded with 2 spicy fermented cabbage, topped with two eggs, any style. “The younger generations like foods that are spicier and sweeter,” comments general manager Raynell Diggs. “But we’re not trying to change Kenny’s. There’s a reason Kenny’s has been here for 3 45 years! That’s still the same teriyaki; it’s just been made into a teriyaki pizza.” Of all the new dishes that have been informally introduced at Kenny’s, reports Yeban, the Kim Chee Fried Rice is the most popular. “I think this one is going to do well also,” he says, pointing at Kenny’s Waldorf Salad, a fresh twist on an old classic. Toast, made with huge squares of Hawaiian sweet bread, will now be available in Strawberry and Haupia versions. All are priced at $8.29; toppings are $1.90 extra. Like most of the other 6 items on Kenny’s menu, they’ll be available all day long. In 2008, Kenny’s Express Hawaiian Barbecue opened in the food court of the Royal Hawaiian Shopping Center in Waikiki. The small eatery offers an abbreviated menu of Kenny’s favorites. “It’s our chance to try something a bit smaller, utilizing what’s good over here at our original location,” says Fujieki. “Eventually, when that takes off, we plan to expand.” Kenny’s Kalihi regulars needn’t worry that they’ll be forgotten. Traditional favorites on the menu will remain, including Chinese Chicken Salad ($10.79), Korean Style Chicken ($11.99), and the extensive fish list, subject to availability. Today’s offerings include Ahi Steak or Ahi Nitsuke ($11.99), Opakapaka Fillet ($16.99) and two whole-fish options: Akule ($14.99) and Menpachi ($19.99). “People come from all over just to eat our fish,”

says Diggs. The restaurant will continue to offer a kamaaina discount of 20 percent on its specials, which change every two weeks. Kenny’s Restaurant is currently open daily from 6 a.m. to 10 p.m. and open till 11 p.m. on Fridays and Saturdays. Those hours may be extend8 ed after the restaurant secures its liquor license, which Fujieki anticipates will happen within the next four months; he says they’ll emphasize draft beer. “We’ll also introduce some new appetizers,” adds Diggs proudly. “We’re gonna be here for another 45 years!”

The beef rib-eye is also very popular.” The secret behind the flavorful meat can be credited to Camellia Buffet’s magnificent marinade of shoyu, sugar, garlic ginger and other secret ingredients. Crowds also can’t seem to get enough of the fresh oysters that recently hit the buffet line. Imported straight from Korea, the oysters are only available Friday through Sunday as part of the dinner buffet. “We also have sashimi that the locals love to pair with their meal, along with the Korean pancakes,” Park states. Then for dessert, cleanse your palate with a refreshing selection of fruit and ice cream.

A premium plate fit for royalty B

e prepared to take the throne at 4Kings Kitchen, where owner and chef Kapo Kealoha knows exactly what it takes to feed royalty. The South King Street eatery opened to the public earlier this year, specializing in premium plate lunches. According to Kealoha, who’s been working in the culinary industry for the past 16 years, the menu is derived from family recipes taught to him by his mother. “We create local favorites — basically food that I ate when I was growing up with some twists here and there,” he says. All the menu items, he adds, are relatively healthy and guilt-free. “I use all fresh ingredients — local always, organic when I can,” Kealoha insists. 4Kings signature dishes include Not Your Normal Loco ($11), a house-made fish burger with fresh-caught mahi mahi,

served with shiitake mushroom gravy and two eggs any style; and Chef Kapo’s Mochiko Chicken ($10). Kealoha admits that this particular entrée took years of practice to perfect, and the mochiko chicken is easily his favorite item on the menu. More recently, however, the rage has been all about the Red Wine Braised Chops ($9). “This dish has become increasingly popular,” Kealoha says. “It’s made out of a quarter-inch cut pork collar that we braise for about two hours in red wine beef stock, veggies and garlic. “It comes out very, very tender; you don’t even need a knife to eat it. We heat it up on a flat griddle and smother in homemade brown gravy.” All entrees come with a choice of white or brown rice and a choice of MA’O Farms Sassy Mix Salad or homemade kimchi and

ochi Restaurant and Lounge serves up tantalizing menu options when it comes to atmosphere at its South King Street location. Diners can eat in the full-service restaurant, or enjoy appetizers at the bar or sushi bar. Food items can be ordered as full meals or a la carte — you make the call. According to Kochi’s general manager Reid Mochizuki, many of his customers choose the Kurobuta Kakuni ($18.95), a premium pork dish considered “the Kobe beef of pork.” The dish, unlike the common white pork found in most presentations, comes from Berkshire pork — an ancient breed of pig traced to the British Isles that offers up a dark, rich and marbled meat that makes for a distinctive juicy flavor. According to Mochizuki, the pork is braised for at least five to

six hours and melts in your mouth with each bite. “That one is extra special for us. It has a nice richness to it,” he says. Kochi also is known for its Furikake Chicken ($11.95, $7.95 for a half order). The dish’s garlic sauce and combination of flavors has led customers to tell Mochizuki that it’s “kind of addicting.” Mochizuki prides his menu for its boldness and originality — a departure from traditional bar food. Other popular pupu items include the Shrimp Tempura Roll ($13.95) and the Sashimi Moriawase ($25.75) — a sampler platter of fresh fish selected by the chef that usually consists of maguro (ahi), salmon and tako. Kochi is open nightly from 5 p.m. to midnight, and stays open until 2 a.m. on Fridays and Saturdays. The eatery also offers Early Bird specials nightly from 5 to 6:30 p.m., when diners can enjoy specially priced

items, and complementary rice and miso soup with a la carte entrees. From 5 to 8 p.m., patrons also can take advantage of Happy Hour specials that offer up deals on beer and mixed drinks.

For carnivores, opt for the Santa Fe Pizza, which offers a colorful blend of chipotle pesto, mozzarella, chicken sausage, red onions, corn, Serrano chilies, tomatoes and cilantro all on a bed of crispy-chewy crust. The Greek Pizza was equally marvelous, with farmfresh feta cheese and mozzarella, red onions, Greek olives, fresh rounds of tomatoes and oregano. So what are you waiting for? Head down to the nearest ZPizza location and immerse yourself in upscale pizza at its finest.

Fendu Boulangerie Fendu Boulangerie is wellknown for its delicious French-style breads, pastries and desserts. However, owner and pastry chef Niel Koep offers all this and much more to new and repeat patrons, including homemade rustic gourmet pizza. “All pizza is hand-tossed and baked to order in our oven, which has a nice stone surface in there,” Koep says. “The tomato sauce is something that we make fresh, and

the vegetables are always fresh as well. The secret behind the cheese is that we use Parmesan reggiano cheese and whole milk mozzarella,” he adds. Crispy Potato Wrapped Oysters with Bernaise Sauce By Chef Chai Chaowasaree

Ingredients: • 2/3 cup warm clarified butter • 2 shallots, chopped • 1 tablespoon tarragon, chopped • 1 teaspoon black peppercorn, crushed • 3 tablespoons white wine vinegar • 3 teaspoons white wine • 3 egg yolks • 1 tablespoon cold water • 2 tablespoons tarragon, chopped • salt, to taste • cayenne, to taste • 1 handful spinach, chopped

• 2 tablespoons ouzo • 5 oysters, preferably small • 5 potato slices on mandolin, transparent • 5 toothpicks • 5 leaves basil, cut into thin strips Procedure: • Put shallots and 1 tablespoon chopped tarragon, black peppercorn, white wine vinegar and white wine into small sauté pan. • Reduce until almost dry. • Add 1 tablespoon cold water and strain into clean mixing bowl with egg yolk.

• Whisk and place over double boiler on medium heat until mixture is nice and thick. • When thick, remove from heat and slowly pour in clarified butter while whisking continuously. • Fold in seasonings to taste and the remaining chopped tarragon. In a separate pan, sauté chopped spinach until wilted and deglaze with ouzo. Set aside to cool. • Place one oyster in mid-

dle of potato slice with some basil. Fold bottom of potato to top and weave shut with toothpick. Do for all five oysters. • Fry potato-wrapped oysters at 350 degrees until golden brown. To serve: Fold spinach into béarnaise sauce, place potatowrapped oysters back into clean shells and spoon sauce over oysters.

We decided to advertise through Dining Out with our grand opening. After our first month of ads, we experienced a sales jump of over 50%. When we had an editorial story mentioning our Wonton Pho in November, we sold more than 700 bowls in ONE day!! Now, the “Wonton Pho” has become associated with Pho Kitchen and is now our signature dish.
