Stews for every appetite

here are certain things in life that put an automatic smile on my face — my family, friends, my dog, Kea, innocent babies, beautiful sunny days and random acts of kindness — the list goes on. However, when food enters the picture, there’s one dish and one dish alone that I adore, one that no matter what I’m craving, I can eat it and be totally satisfied — that’s beef stew! This delicious creation is serious comfort food at its best. Imagine the combination of vegetables and meat mixed with the perfect gravy atop mounds of rice! And if

and Sundays. “We alternate the beef stew with our curry stew each week,” Rainbow Drive-In vice president Jim Gusukuma explains. Priced at $6.25, loyal patrons receive a heaping portion of beef stew made with boneless stew cut beef, carrots, onions and celery, served with two scoops of rice and a hefty portion of macaroni salad. But what sets this plate of stew apart from the rest is the special blend of spices that give it that extra kick. “We’re not giving away our secrets,” Gusukuma says. “But I can say that our tomato-based stew is initially cooked the day before serving and then cooked and thickened again prior to offering it to our customers — it’s a known fact that the stew tastes better on the second day,” he adds with a laugh. the stew is made from the heart and with the right amount of love, then you can probably bet that it’s ono to the max. Now, I usually rely on the aid of my handy dandy crock pot to cook up the perfect stew, yet this week I was graciously treated to some of the most “Ono, You Know” worthy stews our island has to offer. So, while the kitchen may be “stewing” this time of the year, I bet you the holy commandments of all things stew are strictly followed by the talented chefs at the following establishments.

M

akino Chaya is constantly upping the ante of what customers can expect to receive for their dollars’ worth. Earlier this year, the uberpopular buffet restaurant expanded its repertoire with the re-introduction of a pre-set menu that was included in the all-youcan-eat buffet price. Well, Makino Chaya’s done it again, because now diners can shabu shabu to their hearts’ content for the all-inclusive set dinner price of $29.98 MondayThursday and $30.98 Friday-Sunday. (Lunch costs $13.98 Monday-Friday, $16.98 Saturday-Sunday but does not include shabu shabu.) “It’s like Disneyland here — you pay an admission and then you get to try everything,” laughs Jo Makino, president of operations. The Aiea eatery just began offering the hot pot options earlier this summer after watch-

ing the steady rise in shabu shabu’s popularity. “The basic cuisine in Japan was teriyaki, tempura and stuff like that, but now that a lot of people are getting familiar with Japanese food, they’re starting to venture out in other directions,” Makino explains. “Hot pots are getting pretty big, so we want to grow with the trends too.” Each shabu shabu hot pot is portioned into halves and filled with both a miso and shoyu broth so diners have a choice of how to cook their meal, and all orders come with vegetables like shiitake mushrooms, choy sum, Napa cabbage and such. “They can order the seafood shabu shabu, where there is going to be King Crab, Dungeness Crab, Fresh Oysters, Shrimp, Clams,” says Makino. Or folks can indulge with a platter of Washugyu beef, a specialty made by crossing the famous Japanese Black Wagyu (the cattle used to make Kobe beef) and the finest American Black

Angus. “It’s kind of like an American Kobe beef,” Makino says. And just like Kobe cattle, Washugyu cows are raised in the best of conditions. “They feed (the cattle) beer to relax the muscles, they give it massages. It’s very organic,” Makino says. “The cow

lives a stress-free life, and that makes the meat more tender, more flavorful, and that’s why we’re going to use that kind of beef.” Unlike other restaurants, where a single serving of Washugyu can cost between $40 and $50, Makino Chaya is offering this super prime beef at all-you-

can-eat portions (during dinner hours only), so customers can indulge with a 3- to 4-ounce steak stir-fried on the teppanyaki, or opt for thinner slices of the tender beef that cook perfectly in the bubbling broths of the shabu shabu hot pot. “We ordered around 20,000 pounds of the Washugyu, so we’re going to serve that until it runs out,” Makino explains of the extravagant offer. “It’s kind of like, ‘for a limited time’ right now, but if it runs out, maybe we can order more or offer it as a special.” On top of that, Makino Chaya still offers its renowned all-you-can-eat seafood buffet,

a true smorgasbord of Snow Crab, King Crab, Garlic Dungeness Crab, Soft Shell Crab, Lobster, Garlic Shrimp, Green Mussels, Manila Clams and a wide assortment of poke. “Ahi Poke, Tako Poke, Top Shell Poke, Green Mussel Poke, you name it, we got it,” Makino says with a smile. “You can splurge on all the seafood you want here — it’s the best quality you can get.” That guarantee extends to the menu as well, where hungry guests can order madeto-order plate after plate of Miso Butterfish, Puri Puri Shrimp, Sake Shio Yaki, Iddako

Karage, Pork Katsu, Shrimp Tempura, Soft Shell Crab and more. “We fry the Shrimp Tempura and the Soft Shell Crab to order, that way we can control the quality so when it comes to your table it’s nice and crispy,” Makino notes, adding there also is an array of fresh sushi and sashimi all made-to-order, including Uni, Hamachi, Soft Shell Crab Roll, Ahi, Salmon and, of course, the Fresh Oysters. “We’re like a Costco of restaurants, where you can find any kind of Japanese cuisine you could ever want,” Makino contends. “We’ve got it all!”

or a Japanese take on Tawainese cuisine with a modern and sophisticated twist, enter Jin Din Rou and be ready to take on a dining experience and food journey like no other. This magnificently chic and stylish restaurant is located on the corner of King and Kaheka streets and welcomes patrons with one thing in common — an intense desire to sink their teeth into Xiao Long Bao aka Shanghai soup dumplings. “We sell close to 1,000 Xiao Long Bao a day in addition to excellent noodle dishes and other Taiwanese-style favorites,” says restaurant manager Bob Suzukawa.

And albeit delicious, do keep in mind that Xiao Long Bao is accompanied with three-step instructions and a caution label. Why, you may ask? Well, if you’re not careful, you’ll be squirting hot soup at your tablemate across from you, or on yourself for that matter, with each and every bite — it is called soup dumplings for a reason. Don’t be intimidated; the instructions are easy to follow. First simply dip the soup dumpling from the bamboo steamer basket into the recommended black vinegar, then carefully place it on your soup spoon before piercing it with your chopsticks. Soup will spill from the dumpling into your spoon, allowing you to enjoy a burst of flavors as you slurp up the soup along with the dumpling itself.

“We present you with 10 varieties of Xiao Long Bao (starting at $5.90) to choose from, such as Steamed Dumpling with Seafood Broth and Steamed Dumpling with Spicy Chili Flavor, the original Pork Xiao Long Bao and Oolong Xiao Long Bao,” Suzukawa says. “Chen Wen Cheng is our master dim sum chef from Taiwan and he makes the Xiao Long Bao wraps by hand, along with the savory broth and fillings like pork, chicken and shrimp — everything is fresh,” Suzukawa explains. It’s evident that Xiao Long Bao is the mainstay here and takes center stage when it comes to satisfying your appetite. However, there are many other exquisite dishes prepared by skilled chefs, like

According to Suzukawa, the most requested noodle dish is the Tan Tan Noodle ($9.99), featuring a piping hot bowl of flour noodles in a thick sesamebased broth, for which the sesame seeds are grounded fresh every day. “That (Tan Tan Noodle), along with our Sweet and Sour Pork and Ban Ban Ji (boiled chicken with sesame sauce) appetizer, are among our top sellers here,” he says. Now, if you prefer a bit of a kick to your meal, opt for the Mapo Tofu ($9.50), showcasing an enticing blend of bean curd Szechuan-style with savory morsels of ground pork. “This Mapo Tofu is little different than what’s

served at your typical Chinese restaurant,” Suzukawa admits. “It’s spicier and the gravy is thick and not very sweet, but it has tons of flavor. “I also recommend the Mu Shu Pork ($9.50 small, $18 large). It consists of stir-fried pork with egg and Jew’s ear, along with a dash of shoyu.” For the lunchtime crowd, Jin Din Rou also offers a wide selection of lunch combinations, presenting diners with a sampling of dumplings, noodles or fried rice, and salad and main dish, if desired. “We’ve started to serve monthly specials in addition to everything else on our menu — and depending on the popularity we may just add it as a permanent item (on the menu),” Suzukawa says. “For the rest of this month and into

September, we’re promoting a Chef’s Appetizer Plate ($25) that varies daily depending on the chef’s choice. For example, it could be something like steamed chicken, char siu, steamed shrimp, jellyfish and squid,” he adds. “Along with that we’re also featuring Jin Din Rou Fried Chicken Legs ($18), served with shoyu and lemon sauce, and Big Crispy Fried Noodle ($13.50) with pork and bean sprouts.” So, while Jin Din Rou’s expansive menu may be overwhelming for the indecisive diner, the trick here is to order a few delectable entrees for the table to share while taking on piles of baskets of Xiao Long Bao. There’s no MSG here, just mounds of remarkable food that you won’t soon forget.

hen it comes to all the sweeter things in life ,Patisserie La Palme D’or has got you covered. In 2006, owner Hiromi Tanaka brought this exquisite Japanese pastry concept to Ala Moana Center, and with the help of head pastry chef Akiko Kimura

hen Lobster King first opened about a year ago, it attracted customers in droves. Perhaps many of them wanted to see if the King Street eatery could really live up to its lofty proclamation that it was the “kingâ€? of lobster. Now, a year later, the crowds have not died down — the ultimate testimony that Lobster King is making good on its bold claim. Drive by Lobster King on any day of the week at any time, and you’re likely to see a full dining room with a line forming out the door. The other testimony, of course, would be to try Lobster King’s food, which includes lobster entrees prepared with various sauces. Lobster dishes include Live Lobster with Ginger and Green Onion ($14.95 per pound) and Live Lobster with Black Bean Sauce ($14.95 per pound), which owner June Stewart says is one of the most popular items. The House Special is Live Lobster with Garlic Butter Sauce ($14.95 per pound). “Everything is fresh,â€? explains Stewart. “We ship in lobster about two times a week ... and we have 30 tanks.â€? Plus, Stewart adds, Lobster King is always coming up with something new thanks in large part to Jay Chen, Lobster King’s seafood buyer and chef. “He comes up with a lot of the recipes ‌ he always comes up with different things,â€? she says.

But Lobster King is so much more than just lobster. While the lobster dishes are undoubtedly a main draw, the menu also features an array of other dishes, including the Pei Pa Tofu ($11.50), Dried Scallop and White Egg Fried Rice ($10.25) and Roast Duck ($15 for half; $28 for whole). Crab dishes, such as the Salt and Pepper Dungeness Crab ($28.95 for 2.5 pounds), are also popular, says Stewart. But if it’s lobster that you’re looking for, it also makes an appearance in a number of other dishes, like Lobster with Dried Scallop Sauce on E-Mein ($18) or Lobster Rice Soup ($10.99 with one entree). In the mood for more forkfuls of stew, I finally made my way to Kenny’s Restaurant in Kahili to transport my taste buds to ultimate beef stew nirvana. Chef Ernesto Yeban quickly cooked up Kenny’s most popular Local Boy Stew ($12.49), which was absolutely delicious. And chef Ernesto was more than happy to share with me the magic behind the making of this glorious dish. “I simmer the boneless short rib for about two hours until it’s absolutely tenWailana Coffee House der and cook up carrots, onions and 1860 Ala Moana Blvd. potatoes in the beef broth,” Yeban 955.1764 explains with a smile, not wanting to reveal every secret.

However, let me tell you, the beef broth that accompanies this onolicious stew is hard to beat. The broth simmers for a bit before Yeban adds hints of pressed tomato, garlic, bay leaf, Hawaiian salt and other special seasonings to obtain just the right flavor. hen venturing out of the office for lunch, hungry nine-to-fivers often run into a variety of hurdles that can make dining out during the work week a bit unappetizing. But finding an affordable midday meal needn’t be an added item on that already all-too-long list of things to do; simply head to Hukilau for a taste of small-town Hawaii conveniently located in the heart of the big city. “I think we have been well-received in the local downtown community,” says Jason Takemura, executive chef and general manager of the restaurant, which is located in the lower lobby of the Executive Centre Hotel. “Since day one, lunch has been busy every day.” One item the lunchtime crowds can’t get enough of is the Ahi Poke Salad ($13). Made with inamona ahi poke and served on a bed of mixed Nalo greens, this healthy dish also includes local vine-ripened tomatoes, cucumbers, Maui onions, crispy hasu chips, avocado and a house ponzu vinaigrette. “This is a great way to eat a light but hearty lunch without feeling sluggish when you go back to work,” Takemura says. “(It) is our most popular salad that is served as an entrée.” Another popular main course is the Maunakea Kobe

W Going to Hukilau for fine local grinds

hen three local boys – one from Kapaa, one for Ewa Beach, and the last from Hilo – opened the first Hukilau restaurant more than a decade ago in San Francisco, it was to create a place where they could meet up for tasty local-kine food, relax with some island jams and talk story with other Hawaii transplants now living on the Mainland. “They wanted to create a place where ‘locals’ could go,” says Jason Takemura, executive chef and general manager of the Honolulu eatery, which opened in the downtown Executive Centre Hotel in May 2007. “(The restaurant) became a place of gathering all of the people from Hawaii (together), hence a play on the name Hukilau.” In addition to the San Francisco and Hawaii locations, there is a Hukilau restaurant in San Jose, Calif., as well. “The Mainland restaurants do very well with the local crowd,” Takemura says. “There are so many people from Hawaii who live on the West Coast — now they have a place where they can still feel attached to their local roots.” And with a menu serving upscale plate lunch favorites like Miso Butterfish ($19), Asian Chicken Salad ($11), Portobello “Katsu” Mushroom Sandwich ($12), Homestyle Fried Pork Chops ($12; $10 during Happy Hour), Kim Chee Shrimp Fried Rice ($9; $7 during Happy Hour), Huki-min Saimin ($11) and Oxtail Soup with rice ($12), you can’t help but feel the aloha. “They have been a success since day one,” says Takemura, who is always impressed with the weekly specials sous chef Nick Garces thinks up. “He does an excellent job coming up with new and creative specials,” proclaims Takemura, noting the Roasted GarlicCrusted Prime Rib special, which is served only on Wednesdays. “A lot of times he incorporates some type of risotto dish,” Takemura says. “If he doesn’t run a risotto special, we will always have people complain of ask to special-order the dish. The meal comes with your choice of french fries or Caesar salad, but garlic fries, sweet potato fries, onion rings or truffle fries can be substituted for a $1 more. “This is one of our most popular items,” Takemura says. “Who doesn’t love a thick, juicy burger with all the fixings already built in … and bleu cheese?!” Those who crave something even more substantial can’t go wrong with the Bento of the Day ($16), which includes medley of salad, appetizer, entrée and dessert options that are never the same day-to-day. “The bento changes daily and always has fresh fish,” Takemura says. For example, on a recent visit to Hukilau, the bento box contained Nalo Mixed Greens Salad, Kalua Pig & Rock Shrimp Spring Roll, Grilled Opah with Lemon Caper Butter Sauce, white rice and Asian vegetables, and a Cinnamon White Chocolate Bread Pudding with Vanilla Crème Anglaise. Return the next day, and the meal’s contents will have completely changed. “This keeps it ‘fresh’ for customers who frequent the restaurant often and doesn’t allow them to feel like they are always eating the same thing,” Takemura notes, adding that including a salad, appetizer, entrée and dessert all at once also cuts down on the dining time for the busy guest on the go. “Most people don’t have time to enjoy a four-course

lunch on a limited lunch hour,” he explains. “This gives (diners) small but generous portions so that they can enjoy variety during their meal.”
