Following the holiday’s heavy meals with
Light Soups turn to the reliable dish of diversity — soup! And with the temperatures hopefully dropping a bit with the arrival of winter, what could be better? So this week, with an already full stomach, I headed to some of my favorite restaurants to savor their many soups. With a soup for every taste, you can never go wrong at these following eateries — all are “Ono, You Know” worthy, of course. So without further ado, come along with me and enjoy a perfect taste of the holidays!

K, I know most of you are probably still stuffed from Thanksgiving and probably still partaking in a fridge full of leftovers — because I sure am. With this said, I hope you all had a very happy Thanksgiving and are now ready to go full-speed into Christmas, as it is fewer than 25 days away. (Sorry for that little reminder, but it is sneaking up on us.) I wasn’t able to hit any Black Friday sales due to work obligations, which is both good and bad. It’s great because I man-
aged to escape the crowds; it’s terrible, however, considering I have tons more Christmas shopping left to do. And one thing’s for sure, it sure is difficult to dive into your Christmas shopping on a full stomach from Turkey Day. I mean, what’s worse than trekking through the crowded malls feeling lethargic and stuffed from a heavy meal, right? Therefore, when I need something of sustenance, but still want to feel light on my feet, I

The chefs prepared the Won Ton Soup ($5.25) and my personal favorite Gyoza Soup ($5.25) to warm my tummy and satisfy that slight pang of hunger. “We use no MSG, which a lot of people love,” Cho says. “The gyoza is filled with pork and cabbage and the won ton is only filled with pork.” And the soup broth is made to perfection in what Cho calls a traditional Japanese style. “We use the pork bone and chicken bone to make our soup base, and we let it sit overnight to get a flavorful taste,” he adds. Topped with fresh vegetables, I believe the soup base to be healthy and fresh, and an ideal blend of tastes. It is simple and not too overpowering as to take away from the gyoza or wonton, as they are in a league all their own. “The wonton pi has a bit more egg and we use less egg

n the course of a career spent writing about food, I’ve met a lot of people who’d hoped I’d believe that their food was a little more, well, authentic, than it really was. On those occasions, I’ve been told tales about fresh ingredients, grandmother’s recipes and made-from-scratch sauces, only to have my suspicions of canned vegetables and packaged pre-mixes confirmed upon peeking into the pantry. Thankfully, I had no such fears when El Charro Mexicano owners Sofia and John Ramirez began to tell me of their homemade Mexican food. It’s obvious, even without a visit to the kitchen, that these novice restaurant owners are cooking their hearts out, and loving every minute. “We have such a tiny kitchen and so little space that sometimes we’re starting from scratch two or three times a day,” says Sofia. “When the guacamole

runs out or the pico de gallo is almost done, we just make it all over again.” With scant refrigerator space and a small cooking area, this couple, with help from Mexico City natives Gloria and Mike Orias, keeps cooking almost around the clock. With John’s San Antonio background, and Gloria’s Mexico City upbringing, the two shared a passion for food when they met several years ago. 4 John, who’d always harbored dreams of opening a restaurant, decided to test the couple’s recipes on potential patrons last May by opening a Mexican restaurant for just one day.
“I took over Bob’s Barbecue for Cinco de Mayo and the response to our food was fabulous,” John says. “That’s what pushed me into doing
the restaurant.” By day, John works as a mailman at Kaneohe Post Office and enthuses as much about the U.S. postal service as he does about El Charro. “Oh, I love those people there in Kaneohe,” he says, talking about his colleagues and his route through Kahaluu and across the Windward side. “They are like my family.” After

We are not picky, we don’t mind what they want, just that they enjoy.” Customers also can venture off the beaten path when it comes to drinks. Orchata ($2.15), a sweet, milky, rice-based drink, is cooling, refreshing and a wonderful antidote if you overdo the hot sauce, while Jamaica ($2.15), a slightly sweet hibiscus tea with a vibrant, ruby-red color, is an ancient antidote to rich food and drink, and makes a wonderful alternative to iced tea. Whether you go for menudo, Milanesa or your favorite Mexican food, what you’ll find at El Charro Mexicano is a warm welcome and some genuinely home-cooked food.

One of the reasons is that they say the quality of our food is so high that they believe we can do the same for breakfast. People like a goodquality meal to start the day. JM: What can people look forward to on the breakfast menu? JM: So did that change your idea of what the menu would be? KY: Oh, yes! At first, the menu was pasta, pizza, salads. Now, we have two-course- and four-course set menus that include lamb, osso bucco, oxtail stew, escargot; good value, well-priced food. JM: You have a lot of dishes that we might expect to see at less casual restaurants. The four-course menu, for example, features a soup or salad course, a second course with a choice of escargot, grilled beef or shrimp,

But the real jewel at Blue Ocean is the upstairs VIP room, which has a full bar, flat-screen TVs, lots of seating and is open from 5 p.m. to 2 a.m. every day. Owner Chivanan Phanphongsa says it’s the perfect place for any type of celebration, from fundraisers to birthdays to the much-anticipated Christmas and New Year’s parties. The room can accommodate 100 people, and Phanphongsa adds Blue Ocean will cater the event and include a DJ and karaoke to the party list free of charge. order of the day f you’re craving a fresh, inexpensive meal that looks and tastes like it might have been prepared on any city street in Thailand, Bangkok Chef might be exactly what you seek. “At our restaurant, we don’t add garnishes to make dishes fancy,” says owner Patrick Chang. “We’d have to sell at a higher price. Our clientele doesn’t really care about fancy food; they want something simple, delicious and affordable.” Bangkok Thai, which has become known for freshness, simplicity and its reasonably priced menu, actually began as a produce market. Chang, originally from Laos, opened the Nuuanu Open
Market in 2000 with his Thai wife, Sansane Pornchairattanakun, whose family owns a restaurant in Bangkok. “Because we sold all the ingredients to make Thai food at the market, we thought we’d start offering some cooked dishes,” says Chang. “We offered just a few to begin with, and we had two tables. Gradually we added another, and another. A year later, we changed the name to Bangkok Chef.” The place soon caught on with locals who cared more about quality than ambience. A second, similarly plain location in Manoa was opened in 2009. “Those who are looking for nice decorations will be disappointed if they come to our restaurant,” Chang says frankly. “There’s nothing on the walls. It feels like you’re in Thailand. And the Thai food we serve here, you’d find on the streets of Bangkok.” Only about three dozen numbered items are listed on the short menu (and the clever website at www.bangkokchefexpress.com). Half consist of “main course” plates priced at just $5.70, including fried long rice with pork, lemongrass fried chicken wings, and four kinds of curry: red, green, yellow, and panang. “The most popular is No. 1 on the menu — pad Thai. Chang muses. “Every Thai restaurant has it. But still we sell so much of it!” Except for three noodle and long rice offerings, all 15 main course plates come with jasmine rice (for sticky or brown rice, add 50 cents). Plates may be ordered in larger portions for $7.25, or with fish ($7.70) or shrimp ($8.25). À la carte items on the menu include pad ki mao, a spectacular noodle dish stir-fried with egg, onions, bean sprouts, chili peppers, fresh basil, and chicken ($6.95) or shrimp ($9.65). You’ll also find appetizers like Thai crispy noodles ($4.75); chicken sateh ($6.95); and spring, summer, and vegetarian rolls ($4.50$5.95); as well as three heart-healthy sal-
ads: shrimp ($7.95), papaya ($6.75), and mango ($7.25, a Bangkok Chef original). Chang himself personally recommends No. 22 (tom yum goong, $7.95, a piquant soup with shrimp, mushrooms, tomato, lemongrass and kaffir lime leaves) and No. 22, the chicken larb ($6.95), minced chicken with herbs and spices in a special lemon sauce. He also invites diners to try the House Delight dessert ($3.50). “In Thailand, they have a dessert in which they put a fresh sliced mango over sticky rice,” Chang says. “But mango is not available year-round here. So we conjured up this dish with mango ice cream and coconut sticky rice. We can serve it year-round, anytime. Some customers say it’s the
best dessert they’ve ever had.” More than 50 percent of Bangkok Chef’s business at both locations consists of takeout orders, Chang reveals. “We do a lot of delivery to hospitals at our Nuuanu location. If doctors want to treat their staff to lunch, they call us. We have a $50 minimum, and we don’t charge extra for delivery.” The restaurant also has a catering menu, which mirrors its regular menu. “Any combination of three trays — one starch and two entrees — would feed about 15-20 people,” Chang says. Curries are $35, basil shrimp and shrimp with snow peas are $45, and a big tray of pad Thai costs $27. In January, when Bangkok Chef opens its third location at the old Weyerhaeuser

At the restaurant’s Manoa and Nuuanu locations, customers place orders at a counter, pick them up in Styrofoam plates and bowls, and carry them to their own tables to eat. “A lot of people don’t like using Styrofoam,” says Chang. “At the new restaurant, we’ll offer table service and serve on chinaware. If it goes well, we might convert the other restaurants to chinaware.” Will dishes at the new place be painstakingly arranged and stylishly garnished? “The presentation of the food,” Chang says, with a serene smile, “will be exactly the same.”

t Hot Pot Shabu Shabu, Bill Trang wants customers to come in and enjoy fresh, healthy ingredients and the flavors of Asian foods. Trang, who also owns Green Papaya restaurant, says his goal is to create a restaurant where customers can choose their own ingredients and add spices as they like. “I really want people to have a lot of choices,” he says. “We have Vietnamese-flavored broth, Thai broths, spicy kim chee and Korean flavors. (We have) many different ways people can enjoy their soup.” Making your own combinations is part of the fun of shabu shabu, and at Hot Pot Shabu Shabu refrigerated items such as fish, shrimp, meats and vegetables are stored in large, glass-fronted refrigerators. There, guests help them-
selves and build a meal around their own preferences. “Before we used to make the soups, but now people make their own and they seem to enjoy it more,” Trang says. With nine different broths and varying heat levels, Hot Pot Shabu Shabu offers many options. “It’s healthy food,” says Trang, who also encourages guests to order from sister restaurant Green Papaya if they prefer. “We don’t mind if people want to look at the menu from Green Papaya and order from there.” Soon, Trang will open a Korean restaurant next door to the shabu shabu and Vietnamese restaurants. “I would like to have all the flavors of Asia in one place,” he says. “Then people can come and choose their favorites.”

Paesano Ristorante Italiano My family and I have been coming to this renowned Italian eatery for years. Located in Manoa Marketplace and on Kaahumanu Street in Waimalu, Paesano has always been one of my Alist picks, and with its friendly staff and exquisite cuisine, it’s my go-to choice for all things Italiano. “Next year we make 20 years here in Manoa,” says owner Billy Rattanasamay who, along with his wife, Nila, have gained many loyal customers throughout the years. “We cater to everyone — families, couples, friends, business people.” And it’s the magnificent food that has helped to secure that bond between dining patrons and the Rattanasamays. Executive chef Gerry Quach serves top-notch cuisine with great continuity, and it’s a fact that you’ll be pleased with each and every meal — soups included. With three delicious soups (all bowls priced at $4.90) to choose from — Pasta Fagioli, Minestrone and Vichyssoise — you’ll have to try them all to pick a favorite. “Pasta Fagioli is more Italiano,” Billy says. “It’s a very good soup.” And I’d have to agree. As my top pick, Pasta Fagioli is a pinto bean soup served with macaroni and bits of ham in a hot and savory chicken stock soup base with a touch of their fresh tomato sauce. If you’re vegetarian, the Minestrone soup is for you. Made with fresh vegetables such as carrots, celery, potato and beans, it’s a wonderful start to any meal, especially when paired with Paesano’s famous Italian bread that is always served fresh daily. Dip a bit of the fluffy bread with its crispy crust into your soup and it will definitely appease any appetite before the main course makes its way to your table. In the mood for something different? I highly suggest the Vichyssoise soup. This potato soup is served cold and is often popular during the lunchtime hours. “It’s creamy and rich,” Nila explains, noting that this refreshing dish contains potato puree and leek in a chicken stock base with cream and egg yolk. And although all three soups are different in nature, they are all equally delicious and quite fitting for the holidays. Of course, don’t indulge solely on 12

And if you’re feeling a bit under the weather or just want something warm and uplifting, why not opt for some of Bangkok Chef’s traditional soups? According to Chang, both the Tom Yum Goong ($7.95) and Tom Kha Gai ($6.95) are quite popular in Thailand and will definitely clear your sinuses with their spicy flavor. The Tom Yum Goong, perfect for any seafood lover, consists of shrimp, mushrooms and tomatoes in a spicy and sour broth, flavored with
lemon grass and kaffir lime leaves. The Tom Kha Gai features sliced chicken breast simmered in coconut milk with galangal (Thai ginger), kaffir lime leaves, lemon grass, chili and head cabbage. Ingredients: List A • 20- to 25-pound young turkey • 1 cup chopped garlic • 1 cup chopped ginger • 1 cup chopped shallots • 1 cup Aloha shoyu • 1/2 cup whiskey • 1 cup chopped Chinese parsley • 1 tablespoon ground black pepper
List B • 2 cups onions, diced • 2 cups celery, diced • 2 cups carrots, diced • 2 cups leek, chopped • 2 cups chicken stock
Ingredients for gravy: • 2 cups flour • 1 cup butter • 10 cups chicken stock
chicken stock and pepper, simmer for 15 minutes. Remove some of fat. Put through a strainer to remove excess vegetables, then set aside. • In another pan, sauté flour with butter on medium heat about 3-4 minutes, then add liquid from drippings and keep whisking to avoid lumps.

Then rub ingredients all over turkey including inside. Let it sit in the refrigerator overnight. • The next day, remove all mixtures and liquid from turkey and stuff with half of the ingredients on list B; leave the other half outside the turkey. Bake in oven at 500 degrees for half an hour then decrease to 325 degrees and bake until turkey is cooked (about 15-20 minutes per pound). • Remove turkey and leave vegetables with liquid from drippings, add

(Soak in water for about an hour or until mushrooms are softened. Cut into small pieces.) • 1 cup fresh shiitake mushroom, sliced • 1 cup shallot, sliced • 1 cup celery, diced • 1 cup green onions, sliced (prefer white part of onion) • 1/4 cup chopped garlic • 3 cups roasted chestnuts • 1/2 cup Aloha shoyu • 1/2 tablespoon black pepper • 1 large piece cheesecloth • 1 cup green onions, sliced (prefer green part of onion) • In a large sauté pan, add vegetable oil and Chinese shiitake mushrooms and cook for a minute until mushrooms turn light brown. Add fresh shiitake mushrooms, garlic, shallot, celery, green onions (white part) and sauté for couple minutes. • Add chestnuts, sticky rice, Aloha shoyu and black pepper, and cook for 3 minutes. • Line cheesecloth on bottom of steamer then gently add stuffing and steam for 45 minutes or until rice is cooked. • Mix in green onions (green part) evenly and serve as stuffing with turkey and gravy.
