Y
ou really can’t complain when you’re living in paradise, which is why it’s the little things in life — food, fun and sun — that make me happiest. And when it comes to an ultimate end to a perfect day, complete with awesome surf and sun-kissed skies, nothing can satisfy me more than dining out on some fresh, mouth-watering poke. In my opinion, nothing has ever tasted better! Poke (pronounced “pokay”) — which in Hawaiian means to “slice or cut into pieces” — is a staple in the Islands when it comes to pupus or appetizers. Seriously, what’s a party without the poke?! It consists of bite-size pieces of raw, fresh fish mixed with flavorful marinades and spices adorned with garnishes like sweet Maui onions, furikake, limu (seaweed) and more. Surf aside, it was the per-

fect poke that I was after this week — be it tako or ahi, and paired with poi, rice or lau lau. So without further ado, here are the places around town with luscious morsels of “Ono, You Know” poke goodness! Sam Choy’s Breakfast, Lunch & Crab Hawaii’s own worldrenowned chef Sam Choy has often referred to poke as Hawaii’s soul food, and is the sole creator of the Sam Choy Poke Festival and Recipe Contest. With this in mind, I was ecstatic to return to this favorite local eatery to feast my taste buds on poke creations founded by the poke master himself. Among the many items on the menu the Fried Poke Lunch ($13.95) is a hit among many poke aficionado and, coincidentally, one of my most-desired eats. The fresh, marinated poke is seared to quickly cook the outside of the fish, while
leaving the inside raw to keep with the familiar poke style. Then, it’s seasoned with a fabulous mixture of shoyu, sesame oil, furikake and chili flakes atop a bed of cabbage. Pair it with furikake rice and mac salad and you have a match made in heaven. “Sam Choy has a signature style with poke and it was his idea of having it on the menu,” says general manager Jeffrey Gaspar. “We use fresh ahi or marlin for our poke dishes daily.” For those who want to add a little extra flair to their poke, try the Fried Poke Wrap ($13.95). This heavenly creation includes
fried poke with chopped romaine lettuce and Sam’s famous fried rice wrapped in a flour tortilla. Talk about all my favorite treats wrapped into one! Sam Choy’s Breakfast, Lunch & Crab 580 N. Restaurant group and with locations on both Maui and Oahu, the chefs here are highly skilled in preparing only the finest in Japanese-inspired Pacific Rim cuisine. poke with any kind of fish. We’ve got ahi, salmon, tako, Hiramasa — all kinds,” says Waikiki general manager Ivy Nagayama. “We like to encourage people to try it because it’s always fresh.” I started with a sushi bar specialty: Sansei Style Ahi Poke with Sweet Maui Onions ($12.50) — and wow, it just melts in your mouth! This sashimi-grade ahi poke will appease any poke lovers’ palate as the chefs toss the poke with shoyu, soy sesame, sesame seeds and chili flakes. Wakame, cucumber and Kaiware sprouts also are added to bring out the unique texture of the dish. This dish is usually served family-style, but I ended up sharing it with me, myself and I. If you’re dining with a special someone, the Chef’s Omakase Tasting Menu For Two may be the perfect choice. Although priced at $75, this menu includes chef’s selection of
Sansei’s award-winning signature appetizers and sushi, like the Island Style Seafood Poke Sampler. Bangkok Chef, it’s all
good

o say that Patrick Chang’s restaurant beginnings were humble is something of an understatement. From a converted garage on Nuuanu Avenue, he sold fresh produce and Thai groceries until customers, who enjoyed his occasional foray into the kitchen, persuaded him to start selling Thai food. Eight years later, he’s ready to open Bangkok Chef No. 3. We sat down for a chat early one morning last week and talked about how things just keep happening for the city’s most unpretentious restaurant owner. JM: The last time we talked was less than a year ago, and you still had two tables in the Nuuanu garage. Now, you can seat more than 50 people there, the restaurant in Manoa is bustling and your third restaurant will open on Nimitz. How did this all happen? PC: (Laughs). I don’t know! Well, actually the liquor store next to us on Nuuanu Avenue closed, so we were able to expand Bangkok Chef and add more tables. And then the location on Nimitz came up, and I think it will be good for us. We should be open before the year’s end. JM: It’s such a great stor y — the birth of Bangkok Chef. Did you ever really think you’d be the owner of a restaurant chain? PC: I had no idea. We opened as a produce market with no restaurant in mind. We were selling fresh, locally g ro w n p ro d u c e a s w e h a v e l o t s o f farmer friends and some family farmers in Waianae, North Shore and Ewa. So we wanted to sell their produce, and at the same time we also sold in-

‘Taste at Kapolei’ ready to blast off By Jo McGarry
F
or the past 10 years, the Ko Olina Taste at Kapolei has been the signature food and wine event on the west side of the island. A benefit for the Leeward Oahu youth and community groups, this spectacular evening extravaganza, featuring food from Hawaii’s top chefs and wines from dozens of wineries around the world, ends with a dazzling display of fireworks. With more than 1,500 people attending each year, and ticket sales already healthy, the Ko Olina Taste at Kapolei, organized by the Rotary Club of Kapolei, has become one of the “can’tmiss” food events of the year. More than 20 restaurants from across Oahu will offer culinary creations at the all-you-can-eat benefit this year, in a variety of culinary styles such as Italian, Japanese, Thai, Pacific Rim, Chinese, American and local Island creations. The 2010 lineup of restaurants includes A Cup of Tea, Aloha Salads, Auntie Pasto’s, Big City Diner, Da Pokeman Fish Market, Da Spot, Dole Plantation, Don Ho’s Island Grill, En Fuego Grill & Poke, Formaggio Grill, Hana Sushi 6

coli mashed potatoes, Formaggio Grill; beef stew and kalua pig plates, Highway Inn; Szechuan peppercorn-crusted fish fillets with chipotle chili and Chinesespiced English-style chips, Indigo; and shrimp sautéed with mushroom, spinach and a lemon butter sauce with capellini pasta, Romano’s Macaroni Grill. Tickets for general admission to the all-you-can-eat feast are on sale now, and there are VIP tickets available (tables start at $1,500). Guests will be treated to a specially created menu for the evening. Among the VIP chefs are Chai Chaowasaree, Chai’s Island Bistro; Scott Higa, J.W. Marriott Ihilani Resort & Spa; Dean Okimoto, Nalo Farms; Darryl
Shinogi, Roy’s Ko Olina; D.K. Kodama, Sansei Seafood Restaurant and Sushi Bar; Elmer Guzman, The Poke Stop; Ed Kenny, town; and Russell Siu, 3660 On the Rise. Abigail Langlas, owner of Cake Works, will provide dessert. Continuing the tradition started at last year’s event, students from Kapolei High School Culinary Arts Academy will work with food service professionals to serve desserts in the preferred-seating area. The Ko Olina Taste of Kapolei also will feature a Kids’ Zone sponsored by Zippy’s, a silent auction, and a spectacular fireworks display at the end of the evening.

asKJo Jo, I have a quick question regarding tipping during Happy Hour. What should you tip on — the actual price of the meal or the Happy Hour price? Brad (via e-mail)
? Brad, I love this question. When people actually think about what to tip, it shows they realize restaurant staff are working for a living, too! There’s always a dilemma when tipping on reduced prices at restaurants. Staff does the same amount of work, regardless of the price of the food, so

arguments can be made that they deserve tips at the higher rates. When it comes to using coupons or gift certificates, my advice is to always tip on the full amount of the check. Happy Hour, though, is different. Generally, restaurants offer Happy Hour to attract patrons at an otherwise slow time. Wait staff may be looking at a percentage of $0 without the restaurant’s generous incentive to patrons. Tipping on the reduced price is acceptable during Happy Hour — unless, of course, the service is exceptional. Then, you should always strive to tip more. Jo, What’s the best way to get all the silk from fresh corn? We love it, especially from the farmers market, but my kids won’t eat a bite if it’s covered with “hair.”

Susan, You’re most likely not going to get every last piece from the cob, but there are some easy ways to get almost all the silk out of the way. If you cook the cob with the husk on, then pulling the husk away after cooking will remove much of the silk. Take a small, clean toothbrush and lightly brush the cob to remove the remaining silk. Or, run a clean, damp dish towel from the top end of the corn cob to the bottom. There’s even a silkremoving brush that you’ll find in many kitchen stores. Just sweep the plastic teeth across the corn and the silk is removed. Hope this helps.

he Panya group has always offered a diverse menu of dishes that incorporate local and Asian flavors with a Japanese influence and French flair. “We learned to bake in Japan,” says co-owner of

hether you go for the value teishoku or to enjoy any of the dozens of a la carte dishes, you’ll find it hard to beat Hinone Mizunone for value and friendly service. High on the menu is the Maguro Sashimi ($14), fresh island sashimi that comes as part of a teishoku and is served with rice, miso soup, two side dishes and pickles. Also highly recommended — and one of the restaurant’s most popular dishes — is the Chicken Karaage, Japanesestyle crispy fried chicken with grated daikon and a house-made sweet ginger chili sauce. And if you’re in the mood for fresh, light, crisp tempura, then it may be hard to choose between the Chikuwa
Tempura ($3.50), Sausate Tempura ($3) and Shrimp Squid and Vegetable Tempura ($9). “Our dishes are simple and the kind of foods you’d find in homes in certain parts of Japan,” says Hinone Mizunone operations manager Eiki Tamaki. “It’s not fancy — it’s just good, simple food.” Lunch specials run every day for $8.50, and evening teishoku meals are just $16.75 for two choices of entrée and rice, miso soup, sides and pickles.

Kona Lobster Risotto Sofrito, Saffron, Waialua Asparagus & Marinated Hamakua Springs Tomato Serves Eight by Chef Chai Chaowasaree MARINATED TOMATO Ingredients • 1cup peeled, seeded tomato, small dice • 1/2 tablespoon minced shallot • 1/2 tablespoon Dijon mustard • 1 tablespoon chopped chives • 1/2 cup extra-virgin olive oil • 1/4 cup sherry vinegar • salt and pepper, to taste Preparation • In a bowl, mix mustard and vinegar with shallots. Slowly pour in the olive oil to emulsify and season to taste. Add tomato and chives and marinate for 30 minutes.
Ingredients • 4 tablespoons extra-virgin olive oil • 1 cup diced applewoodsmoked bacon • 1/2 cup sofrito • 1 tablespoon chopped garlic • 1 tablespoon chopped thyme • 3 cups Arborio rice
• 1/2 tablespoon curry powder • 1 cup white wine • 7 cups clam juice • 2 pinches saffron • 1 tablespoon fish sauce • 1 cup Parmesan cheese • 1/2 cup butter • salt and pepper, to taste • 1/2 cup poached asparagus
Preparation • In a sauté’ pan with medium heat, sauté bacon with olive oil for a couple of minutes; add sofrito, curry powder, thyme, garlic and Arborio rice. Reduce to low heat and cook 3 minutes. Add half the stock, wine and saffron. • Keep stirring until the liquid reduce and slowly add remaining liquid. Stir until the rice is cooked. Season with fish sauce, salt and pepper. Add Parmesan cheese and butter, stir until butter and cheese incorporate in the rice. Pour in a serving bowl. Add lobster and garnish with aspara-

For herb butter, combine 1/2 pound butter with 1 tablespoon garlic, 1 tablespoon shallot and 1 tablespoon chopped parsley. • Cut lobster in half and rub herb butter on meat side. Roast in 350degree oven about three to five minutes until medium-rare and remove. The lobster will continue to cook after being removed from oven. Make sure not to overcook the lobster.
