ity cuisine. And truthfully, my faith in these establishments hasn’t been misplaced, as I’ve yet to be disappointed in the restaurants’ service and menu. This week was no exception as I ventured out of my desk coop and spread my wings a bit — searching for the tastiest chicken creations on Oahu. What I discovered were crowds of people, ou’ve all heard Aesop’s idiom, like me, feasting on fabulous poultry and “Don’t count your chickens before enjoying each and every bite. of creamy mushroom, spinach risotto. “The chicken really makes the dish,” says manager Bo Perez, adding that the vibrant flavor of the chicken and the flavor of the crust really pulls it all together. “And we’re looking at creamy risotto with three different types of cheese in it — Cheddar, Parmesan and mozzarella. It’s an excellent dish.” In the mood for some garlic? Opt for Don Ho’s Garlic Chicken. For $18, customers will receive a half-roasted chicken wokfried in a secret garlic sauce served with

When it comes to all-you-can-eat buffets, it’s best to start with your personal favorites. For me, I go straight for the kalbi, which is marinated for 24 hours in a rich concoction of shoyu, sugar, garlic, ginger and a plethora of secret ingredients. The meat is real tender on the inside, but it’s deep-fried so you still have the crispiness of the skin. cover story and thought it was a great business venture. DO: How has business been at the new Kahala location? Gambetta: It’s been going well. This is a neighborhood restaurant and bar, and it’s really fun getting to know the people who live around here or tourists that are in town. We’re feeling like we’re part of a community here and it’s slowly growing and developing and we’re starting to get to know our customers on a personal basis. On Tuesdays and Friday’s we also have live music from entertainers like Simple Souls, Kaala Boys and more. Tuesdays are Taco Tuesday and Wednesday is family night. Pietsch: I think many people are realizing that we have a full-service bar if they’re wanting to drink. The industry people also are really excited to have a new bar to go to. At Ward, we get a lot of people who are in and out for lunch, and then at nighttime they’re going to the movies. They might not necessarily live around the area, so there’s a bit of a demographic difference. But I think being a part of a neighborhood was part of our business model and it’s been really fun for us. DO: What type of clientèle do you cater to?

Then last December, the entrepreneurs decided to capitalize on their growing popularity by opening a second location in Kahala Korner.

In staying true to the concept of love of surf and good food, first developed by another set of siblings — Wahoo’s pioneers Eduardo Lee, Mingo Lee and Wing Lam — Pietsch and Gambetta see it as their duty to share both a North Shore-beach vibe and a healthy, yet affordable menu with locals and tourists alike. Dining Out recently caught up with the sisters at the new Kahala location to see what it takes to reel in the hungriest of diners — one appetite at a time.

Pietsch: We definitely cater to people who want good, healthy food at a reasonable price. One thing that is most misleading is, because we’re a franchise, a lot of times people think all the food is brought in, but we’re actually really behind supporting local farmers and local businesses. Our tortillas are from Hawaii, the majority of our produce is sourced from Hawaii and we work with different vendors and different farms across the island. Pietsch: It’s grilled fish, grilled chicken, so all our meats are marinated in herbs and spices and Cajun spices then grilled. It’s salads, tacos, sandwiches, burritos — basically it’s a lighter play on Mexican food. Our tacos are not fried; there are no preservatives in any of our food, so it is definitely healthy Mexican.

Gambetta: Our beans are boiled beans; they’re not refried beans, so there’s no lard in it, no fat, just herbs and spices — very healthy and natural. We have a lot of vegan and gluten-free options as well. And if you go into our kitchen, you’ll find that everything is made fresh every day, so no one’s opening cans or cutting open bags. Everything is being cut by hand, it’s always fresh food and ingredients, and that’s really important for our customers to understand what they’re putting in their bodies. It’s energy for their day that keeps them going.

DO: What are some of the popular items on the menu? Pietsch: The Outer Reef Burrito ($7.99) is one of our most popular burritos, and it’s a burrito that basically has everything in it and you can do it wet-style with our fat-free cilantro sauce and mild enchilada sauce. The flour tortilla is stuffed with ahee rice, cheese, guacamole, sour cream, savory black or spicy Cajun white beans, lettuce or cabbage and your choice of filling topped with our fresh salsa. We also

Pietsch: Great! Happy Hour starts daily from 3 to 7 p.m. and then picks up again nightly from 10 till midnight. It draws both the after-work crowd for the first half and then the industry after-work crowd for the second half. I think it’s really catching on. brule is served with brown, sugar, sour cream and whipped cream. Hy’s, however, takes the dessert a step further by adding a dash of coconut for a bit of island flair. Once all appetites are satisfied, sit back and enjoy the smooth sounds of local musician Audy Kimura, who performs Wednesday through Saturday from 6:45 to 10 p.m. With a superb menu and fine music, a lovely evening is guaranteed for all at Hy’s Steak House.

ith Valentine’s Day just around the corner and the smell of love in the air, we’ve found the perfect place for a romantic dinner — and it’s right in the heart of Waikiki. Known for its signature selection of USDA prime beef, Hy’s Steak House serves only the finest kiawe-broiled steaks, including the New York Strip, Delmonico and Filet Mignon. According to executive chef Zach Inouye, the native Hawaiian kiawe wood cooks with intense heat, thus complementing the flavor of the beef. Hy’s also makes it a point to age and trim all meat on the premises — ensuring that the beef retains its tenderness and taste while also reducing its fat content. And for those diners who prefer

a flavor of the sea, there’s an array of catches to relish as well. Assistant manager Ernesto Mera highly recommends the Oriental Style Hawaiian Fresh Catch (market price), which features the steamed local catch of the day, be it opakapaka, monchong, salmon or opah, to name a few. The fresh catch is then served sizzling with peanut and sesame oils, ginger and green onions, on a bed of stirfried oriental vegetables. “It’s a traditional, local-style fish with a bit of a Chinese influence,” says Mera. “It’s a healthy choice.” Perfect. Now patrons won’t have to feel guilty after partaking in Hy’s sinfully delicious desserts. According to Mera, customers can’t seem to get enough of the Bananas Foster, a specialty flambe

prepared tableside. Priced at $13.25 per person for two or more, this popular dessert has been a leading choice among customers for years. “It’s one of several flambes we have tableside. It has bananas, brown sugar, cinnamon and three types of liqueur — banana liqueur, rum and the orange liqueur. here’s no need to venture off to Europe to feast on European breads and pastries when you can have it all right here at home — at Fendu Boulangerie, to be exact. Owner and chef Niel Koep opened this bakery in Manoa Marketplace in March 2009, and since then has been greeting customers with a varied selection of daily breads, breakfast pastries, pizzas, sandwiches, desserts and more. cent all-natural, there’s no hydrogenated shortenings and it’s made with fresh vegetables, chicken (white and dark meat) and fresh butter.” And Koep makes it a point to support local farmers as well, using fresh taro, green papaya and bok choy, among other items, in bringing a bit of the islands to his pot pie. “The taro cooks just like a potato and it has a very nice texture when intermixed with the pot pie,” he explains, adding that the pot pie makes for a great lunch or early dinner. “It’s a classic chicken pot pie with fresh vegetables and chicken stock. The whole thing is bound with a cream sauce, topped with pot pie dough and then baked in the oven.”

oreamoku is neither an anime character nor a new game show on cable TV.

In Honolulu, it’s the affectionate nickname for lower Keeamoku Street, often called “Koreamoku” by those who love the Honolulu neighborhood for

its intriguing little Seoul-flavored eateries. And the buzz in the street is all about Sikdorak, a fairly new Korean restaurant tucked into the back of the Samsung Plaza. “Local people know,” said a guest on a recent lateafternoon visit, as he paid the bill for his party of six. A longtime Honolulu resident, the man said he would be dining at Sikdorak at least three times that week. “I bring all my friends, and I’ve met new friends here, too. The prices are great, but we come here because of the good food!”

Open for just three months, Sikdorak, which means “epicure,” has quickly become popular with Honolulu’s Korean expat community. It’s very possible to spend several hours in this busy little plaza without hearing a single word of English. “Ninety-five percent of our customers are (expatriate) Korean; only 5 percent are local people,” says Patrick Choi, co-owner of Sikdorak. “But when local people come, they’re very happy and appreciate it, and they come back with friends.” Open every day of the week from 11 a.m. to 4 the

Choi, who worked as a chef for 10 years at Yakiniku Seoul, the popular eatery at the intersection of King and Kalakaua, covers the restaurant’s long hours with his partner, Andy Chang, previously a chef at Choi’s Garden on Rycroft Street. “I’m a yakiniku chef; my partner is Korean-style chef who does the soup and pan-frying,” Choi explains. Sikdorak’s main entrance, an elegant wooden arched door, is almost as wide as the restaurant itself, which cozily seats 50. Art consists of a series of photographs of sensuous, dramatically lit entrées. And although several hours have passed since lunchtime, several large parties are busy cooking and eating and chattering happily away. “It’s 4 p.m., but a lot of customers are here because we have a lunch special till 5 p.m.,” says Choi. Most other restaurants, he explains, end their

lunch specials at 2 or 3 o’clock. “Our customers say it’s very important to have longer lunch hours, so we (offer the special) till 5 p.m.” This week, the special at Sikdorak is Shabu Shabu ($19.95 for two), available from 11 a.m. to 5 p.m. “On cold days like this, people like shabu shabu at lunchtime!” Choi says. Customers who order two yakiniku meat items (chicken, seasoned pork butt or pork belly, $15.95; beef ribeye, short rib, seasoned short rib, brisket, tripe or tongue, $19.95) also have been enjoying free miso soup and a Korean pancake with a coupon. Banchan, the little plates of pickled and fermented vegetables and pancakes and other delicious things, can be ordered in sets of six or eight here. “We are famous for our own daikon and won bok kim chee,” says Choi. “We have two different kinds, and we alternate. One day we make 100 pounds of daikon, the next day 100 pounds of won bok. Customers want us to sell it, but we don’t sell it.” The place gets mobbed at lunchtime, he reports. Recently, customers lined up for specials like naengmyeon (both mul naengmyon, cold noodles, and bibim naengmyon, cold noodles with spicy gochujang

he buffet menu over at Camellia Buffet is getting an upgrade, and what better way to introduce new items than with fresh raw oysters straight from Korea. “When you have the same thing, it gets tiring. his year Camellia Buffet celebrates its 26th anniversary at its McCully Street location, where foodies in the know regularly flock for some authentic Korean-style specialties in the all-you-can-eat buffet line: kim chee, taegu, fresh-cut vegetables, fried rice, Chap Chai noodles, kal-bi, bulgogi, spicy marinated pork, red bean soup ... with more than 50 items up for grabs, the flavor combinations are endless. The most current owner of this yakiniku hot spot is June Ha, who took over operations last year. Despite the change in management, everything else has remained the same, including the talented staff and tasty food prepared by the diners thanks to tabletop propane gas grills located throughout the dining room. “We have history, that’s very important,” says Kenji Ha, June’s brother. “If it was junk, it’d be closed already, but being opened 26 years, that means something.”

Larry Foster: “It’s a nice day, we usually like to sit here and look out on the harbor and see the boats. We always get the Kalua Pork Sandwich ($10); it’s the best and it’s what we got today. The kalua pig is tasty and the guava barbecue sauce really gives it a nice island feel. “The atmosphere here is great, it’s hard to beat. That’s why we walk over here during our lunch hour — and the service has always been pretty good, too.”

Recently, customers lined up for specials like naengmyeon (both mul naengmyon, cold noodles, and bibim naengmyon, cold noodles with spicy gochujang pepper paste, on special at $3.95; regularly $8.95) and seolleongtang, beef bone soup ($3.95; regular $7.95). “When customers like the special, they come in,” he adds with a chuckle. As of Monday, Sikdorak introduced a new special that is sure to bring in the late-night crowd: all-you-can-eat yakiniku, with a selection of the finest choice meats available, at $19.95 per person,

every night until 4 a.m. Kids 12 and under may eat for $16.95. Sikdorak has no liquor license, but perhaps even better, the restaurant allows patrons to BYOB, and there’s no corkage fee. “For local people, BYOB is very important,” Choy says. “The food is very, very spicy — Koreans like it very spicy. They bring their own beers or soju or liquors, and we give them ice and cups, and it makes them happy!” As the restaurant develops a following, it’s becoming wellknown as a caterer. “Last Christmas, we hosted a family party with 50 people,” Choy says. “They used the whole place. They were very happy.”

Jump-starting this new year of luck is Golden Palace Seafood Restaurant, which will be dishing up a Dinner for 10 through the entire month of February. The dinner costs $159 and is loaded with a mouthwatering combination of traditional Chinese delicacies local patrons have been returning for since Golden Palace opened in 2001. Honey Walnut Shrimp, Peking Duck with Buns, Oyster Sauce Abalone with Vegetables, Chicken Cake Noodles, Steamed Sea Bass with Ginger and Onions, Scallop Soup, Chinese Chicken Salad and Steamed Rice all round out the meal, but be

sure to pass around the Jai to get an extra helping of prosperity this year. “On New Year’s Day, the Chinese do not use any sharp objects whatsoever because it’s bad luck, and since they can’t kill any pigs or chickens and what-not, that’s why they eat the vegetarian dishes,” explains Gary Lam of the significance of Jai, a fresh medley of rice noodles, snow peas, baby corn, carrots, mushrooms, fungus, bean curd, water chestnuts, dried oyster and dates. “And we’re opened from 7 a.m. to 10 p.m. daily, so that special is not only for dinner. We can serve it for lunch if people want to do like a

luncheon thing. It’s available all day and also for take-out.” Gary is the son of Howard Lam, who owns the Chinatown eatery and operates it with help from his two sons (Gary and younger brother Sherman) and wife Virginia. In fact, the Lams also have a stand in King’s Market next door, which Virginia runs during the day before joining her family at the restaurant for the busy nighttime rush. Family is important at Golden Palace, which regularly offers dinner specials that encourage eating in large groups and sharing the bounty of the meal.


inside feature One of its most popular orders, for example, is the $149 Dinner for Ten, which comes with Chinese Chicken Salad, Chicken Scallop Soup, Peking Duck, CrispySkin Chicken, two live Maine Lobsters, Seafood Combination Basket, Sweet & Sour Sea Bass, Chicken Cake Noodle, Steamed Rice and Dessert. “That’s the main one that everyone comes in for for the past seven, eight years,” says Gary, adding that people also leave with a bag full of their handmade dim sum. “I can honestly say that we have the cheapest prices for dim sum. It costs $1.89 and has only gone up 39 cents over the past 10 years.” In addition to the dim sum, most of the food at Golden Palace is the brainchild of the senior Lam, who immigrated to Hawaii in 1972 after starting out as a head chef in Hong Kong. “He’s been cooking for the past 30-plus

years,” Gary says. “He was actually hired to come here (in Hawaii) to cook.” “At the old Golden Duck, in McCully,” Howard adds. Gary himself has literally grown up in the restaurant scene, his family having started Golden Palace when the space fronting North King Street became available 10 years ago. He just finished college, where he majored in travel industry management, and now works fulltime at the restaurant both behind the scenes and out front with the customers. “I like to keep my customers happy,” he says. “That’s my main focus, to keep the customers happy so that everyone stays happy and healthy.” Considering he was born under the Year of the Boar, his aim to please is to be expected — according to Chinese astrology, Boars are chivalrous,

honest and tolerant, all good traits to possess when working in the fast-paced restaurant industry. “I thought I would be going into the hotel industry, but I’m here for now. We’ll see where this goes.” As for what Gary wishes for in this new year: “I’m hoping this new year is going to bring us another 10 years,” he laughs. Which may come true if he eats some Gau. According to Chinese belief, partaking in this sweet, sticky rice pudding will ensure good luck and prosperity. “It represents family sticking together,” adds Gary, “and it’s round, which signifies family unity also.” Golden Palace makes its own Gau fresh daily in three sizes, small ($2.49), medium ($3.95) and large ($7.50). Be sure to eat some this Chinese New Year to ensure 2011 is your best year yet.
