appy Halloween to all my fellow foodies! Halloween happens to be one of my favorite holidays (no, it’s not only because of the mountainous amounts of candy that I’m able to consume guiltfree) because I get to attend costume parties, scare myself silly with horror flicks, visit many “haunted” attractions, carve jack-o’-lanterns, bob for apples and, of course, trick-ortreat! This year (like every year), I found myself on a frantic, lastminute search for a costume.

Thank goodness I was able to find a gorgeous used wedding gown for cheap, and with a little work and creativity, I was able to transform myself from your everyday journalist into a runaway bride. Whether it be by foot or with many hitchhiking attempts, my main desire was to take in every Halloween goody in sight. And with no tricks up my sleeves, this runaway bride did everything in her willpower to share with you loyal readers some of the best “Ono, You Know” Halloween treats in
town. Only offered at this time of year, I couldn’t resist the urge to polish off Halloween-themed cakes, cookies, cupcakes, pancakes and more. cover story With great Chinese food and fast, friendly service, what’s not to like about Happy Day?
W
hen Happy Day opened on Waialae Avenue more than 10 years ago, I remember teasing co-owner Lisa Lum about the restaurant name. “I want everyone who comes to have a happy day,” she insisted. In the weeks following the opening, I wondered how she’d fill the commodious dining room as she waited for word of Happy Day and its good food to spread. But it didn’t take long and today, especially on Sundays, you’re hard pressed to find an empty table as the restaurant buzzes with families coming together over food. From early morning dim sum served from carts stacked with bamboo towers and house-roasted whole duck and sides of roast pork, to dozens of specialty seafood dishes, Happy Day has built a reputation on value, quality and uncommon hospitality. “I always thought it was important to smile and to treat people nicely,” says Lum, when recalling her 20 years of waitress service before she opened Happy Day. Her skills in customer relations weren’t lost on Yung Sung Chan, who first met Lum when she worked in Sea Fortune, the restaurant he owned on King Street. “The customers always liked her. They always wanted to see her, because she took care of them,” he says. But while Lum’s ready smile and warm welcome have done much to further the restaurant’s reputation, it’s the consistency of dishes such as Steamed Catch of the Day (market price), Stir-fried Eggplant in Szechuan Sauce ($8.95) and Sweet and Sour Spareribs ($8.95) that have created a devoted following. Honey Walnut Shrimp, Mini Cake Noodle and Green Beans with Pork. For $10.95, the Sea bass Filet with Choi Sum is possibly the best on the island, with moist, juicy chunks of sea bass lightly stir-fried and served with fresh, green choi sum flavored with garlic and slices of fresh ginger. Regular customers swear by the Honey Walnut Shrimp, in which plump shrimp are lightly battered and tossed in a house mayo dressing, and served piping hot in golden, puffy batter. But it’s hard to focus on just one or two entrees from a menu that reliably offers hundreds of dishes. The Hearty Casserole of Seafood ($11.95) is filled with seasonal vegetables and fish, and other hot casseroles include Oyster, Pigs Feet or Black Mushroom/Duck Web with Chicken ($10.95), all sure to satisfy substantive appetites. Special entrees include Spare Ribs with Pepper Salt ($8.95), Steamed Stuffed Tofu and Beef with Bitter Melon ($9.95), Grandma Tofu ($8.95) and dozens of seafood specialties, including Shrimp with Cashew Nuts ($12.95), Abalone with Black Mushroom ($23) and Crab with Ginger and Onion (seasonal). Dim sum service has become another restaurant specialty, with towers of steaming manapua, shumai and half moon available from 8 a.m. each day. Service is speedy if you’re ordering takeout, and is especially fast if you’re eating dim sum during busy lunchtime hours. There’s a 25 percent cash discount offered to customers ordering dim sum to go, many of whom pick up mass orders for office meetings. Lum laughs when I comment that she must make hundreds of shumai each day. “More like thousands, I think,” she says. “The dim sum chef starts working at 5 a.m. and yesterday, for example, one order was for 300 baked manapua. Today at 2 o’clock, someone ordered 300 shumai to go. That’s pretty normal here.” Roast pork, whole roast duck and house-made char siu are new additions to the Happy Day menu, and the roasted meats, which hang in a glass cabinet by the restaurant’s entrance, have already become a favorite with customers. “Some people say we have the best char siu they’ve tasted,” says Lum. Prices, in typical Happy Day-style, are value-driven. A whole roast duck is $20, char siu and roast pork are $8.50. The fatty, tender roast pork, with its wonderfully crackling skin, is well-worth trying — especially when it’s hot. There’s a second restaurant under the Happy Day umbrella that opened earlier this year on Liliha Street. Lum named the restaurant Good Day. “People keep telling us that they come because the food is so good and because we are always happy to see them,” she says. “We try to treat everyone well so they can have a happy day. Now we can help them have a good day, too!”

hile Makittii’s recently arrived chefs weren’t hired to protect a rural village from invading bandits, the seven kitchen samurai were recruited to add their expertise to a kitchen staff eager to learn the ways of their imported leaders. Some came directly from Japan, while others arrived at Waikiki’s newest colorful eatery by way of other Hawaii establishments. Either way, owner Toru Makino asked each to come aboard and do what they do best. “Makino told me to do whatever you like,” says one of the chefs, Takeshi Urushido, through an interpreter. The owner of Richo Korean Cuisine on Waialae and four other restaurants in Tokyo has created a Korean-style noodle dish called Chapche, which he says reflects his non-traditional style of cooking. “I like to stress healthy, lighter foods,” he says. “I like simple flavors and presentations that please the five senses.” One of Makittii’s signature attractions is its tofu bar — a first in Hawaii. Currently, the restaurant offers Sesame Tofu, Peanut Tofu and 100 percent Soy Milk Pudding, but that list will grow in the coming months. The person tasked with crafting

all this tofu is Munehiro Yamada, who makes the popular soy bean product on-site every morning. Yamada is a former organic farmer in Japan and the Mainland and has used this knowledge to create tofu that is naturally sweet and creamy. One of the ways he accomplishes this is by using natural ocean nigari instead of chemical nigari. Koji Kuwa, another one of the seven kitchen ronin, is the chef at the popular Hakkei Restaurant on Young Street. Kuwa developed his skills under chef Seiya Masahara at the famous Hakkei Onsen, or hotel spa, in Japan’s Okayama Prefecture. Kuwa’s goal is to provide both locals and visitors with traditional Japanese breakfast items that just aren’t offered in Waikiki. “Before, no one had a real Japanese breakfast in Hawaii. Now we do,” says the chef, who describes his flavors as clean and very natural. Another popular local eatery to join Makino is Gaan Sushi, whose owner, Masa Furuichi, dipped into history to create the sushi at Gaan Express. Furuichi uses red vinegar made from sake for the sushi rice, which gives his creations a bigger flavor than traditional rice vinegar. The vinegar also is a perfect pair with the fatty fish he uses in his sushi and handrolls. Makittii’s new master of desserts is Norihiro

andee Ashby is a familiar face around the local restaurant scene. She started both Crepe Fever and Mocha Java Cafe before moving to the Mainland a few years
S Zap Cafe & Lounge brings breakfast back to the menu Zap Cafe & Lounge After a few months’ absence, breakfast returns to the menu of Zap Cafe & Lounge, just in time to help fuel hungry ghosts and goblins looking to stir up thrills and chills this Halloween night. Zap opened July 14 in the former American Savings Bank building on the corner of Young and McCully, but after the air-conditioning system hit the fritz shortly thereafter, owner Sandee Ashby said it just got too hot to keep the kitchen open all hours. Now that the AC is fixed, Ashby has brought breakfast back with items so good, it’ll make you scream. For starters, there’s the wide selection of Frittatas and Pancakes, which start with a traditional base recipe but can be personalized with delicious and healthy add-ons. One standout is the Iron-Man Frittata, a threeegg omelette stuffed with broccoli, tomato,

Now that she’s back in town, the avid marathoner and triathlete said her first order of business was opening a restaurant that was the cafe version of Cheers — that go-to destination where everyone knows your name. “On my marathon travels, every neighborhood has a cafelounge where locals go to that’s also a destination for tourists. Everyone kicks back and has a good time. That’s my vision here,” says Ashby, who runs Zap with son Chad Garcia. “I wanted this to be a place to relax,” she adds, “where you could come in here fresh from a bike ride or run, take a deep breath, and just feel non-hurried.” Well, mission accomplished. From the rich-red walls to the billiards table, dart boards and ample seating, the atmosphere at Zap is warm and inviting. The menu also caters to athletes with what Ashby calls “good, healthy things intertwined with lounge foods.” For example, all pancakes come topped with fresh fruit rather than smothered in syrup. Make it even healthier by ordering the whole-wheat version. A wide selection of pastas and a full coffee bar are ideal fuel for any workout, and for those who want to indulge a little, there’s the Chocolate Addict’s Cake — a rich, dark chocolate cake made with “zap” of bourbon and mounds of whipped cream piled on top. Something else good for your health: giving back. Zap accepts donations to Hawaii Foodbank year-round, and if you bring in a canned item, you can get a dollar off any menu item. “The atmosphere at Zap is really casual,” Ashby assures. “When you finish your exercise route, just come in and refuel.” And everyone knows athletes like to party just as hard as they work. Yakiniku adds nigiri, sushi to buffet menu O
ne of the regular customers at Yakiniku Camellia in Honolulu says he drives in from Waianae often to eat the restaurant’s poke and sashimi, and proclaims the selection of fish the best on any buffet menu. He’ll be pleased to know that Yakiniku Camellia now offers nigiri and maki sushi on the buffet, at 5 p.m. every day, at no extra charge. With an emphasis on homemade kim chee, specialty marinades, quality meat and sauces, Yakiniku Camellia offers tremendous value at both lunch and dinner for those who enjoy a wide variety of Korean specials. Made-from-scratch marinades, soups and a variety of kim chee are created early each morning at the busy Beretania Street location, and regular diners are enthusiastic about the red bean soup, bulgogi and kim chee. In addition to the six different types of meat offered alongside a wide selection of vegetables, soups and rice dishes, the

Festival opens at Sam Choy’s for oyster lovers

here’s still time to check out the semi-annual Oyster Festival at Sam Choy’s on Nimitz Highway, where executive chef Aurelio Garcia and his team have put together an outstanding menu of oysters, flown in daily from around the nation. On the menu today, you’ll find Washington oysters on the half shell for just $1 apiece, chilled fresh Kumamoto and Fanny Bay oysters, chilled fresh-shucked Royal Miyagi oysters and a selection of oysters served in traditional and contemporary styles. This oyster was originally found in Kumamoto Bay on Kyushu, the southernmost island of Japan. Now successfully cultured in the Pacific Northwest, the Kumamoto is an extremely small oyster (usually about 1 1/2 – 2 1/2 inches long, with incredibly sweet and succulent meat and a deliciously briny liquor. This is a great oyster served on the half shell — or as an oyster shooter.

Fanny Bay oysters were among the first to become commercially available. They have beautifully fluted shells, which are typical of commercial, trayraised oysters, and they have a smooth, sweet flavor.

These Pacific oysters are cultured in British Columbia and grow to around 3–4 inches in size. They have a clean, round flavor and a slightly fruity, mild tropical fruit finish.

Dear Anonymous, It always amazes me at the number of people who go out for dinner and then feel it’s OK to leave a paltry tip for their server. I regularly have correspondence with a reader who
believes that tipping should not exist, and will no doubt get an e-mail from him immediately after this column is printed. You were right to feel guilty. In similar situations I have doubled back to the table and left extra cash for fear of being labeled a cheap tipper, and without wanting to offend a host. But I can see why you might not have wanted to go that far. Tip on the full amount of food ordered; it doesn’t matter how you pay, or if you’re given a discount. Wait staff and kitchen staff are giving you the same level of service, regardless of whether you are paying with a coupon or a gift certificate.

Honolulu’s newest hot pot restaurant on Kapahulu Avenue makes sukiyaki dining fun, affordable
habu shabu is the hottest restaurant trend in Honolulu. From a single sukiyaki-style restaurant just a few years ago, Honolulu now boasts more than a dozen popular, largely inexpensive restaurants, where hot pots and cold ingredients offer a cookit-yourself-style meal.

But not all shabu shabu are created equal. Most local shabu shabu restaurants offer a la carte menu items and require you to serve yourself from their refrigerators and a variety of broths reflecting Asian culinary styles. At Shabu Shabu Bangkok, a new restaurant on Kapahulu Avenue, the emphasis is on service, quality ingredients and Thai flavors served in a casually contemporary atmosphere, with full restaurant-style service. I was immediately impressed with the main dining room’s contemporary
décor, where tables are set with individual serving and cooking utensils. There’s a casually elegant feel about each of the four dining rooms, where colorful lanterns, tasteful fabrics and Asian-inspired art pieces set the tone in this interesting and calming space. There’s a well-balanced flow to the main dining room, and to the second, smaller room that seats 40 and faces Kapahulu Avenue. There also are two more small, private dining rooms, each with traditional Thai-style (floor) seating for six. Both of these rooms are fur-

nished in earth tones and with soft lighting. I see these two rooms in high demand for those looking for a private dining experience. Shabu Shabu Bangkok menu prices are reasonable and range from $2 (for udon, spinach soba, egg noodles, long rice, ramen noodles and Jasmine brown rice) to $19.95 for a Seafood Combo (which includes shrimp, scallops, fish, calamari, mussels, clams, shrimp wonton, fishballs and seafood balls.) Five different Thai dipping sauces come with each entrée. I loved the spicy cilantro lime dipping sauce — a beautifully balanced mix of garlic, chili and cilantro — and I’d also recommend the House’s Red Bean sauce, which has medium bite and lots of flavor. Soup broths come in five flavors — beef, chicken, vegetarian, tom yum, curry broth — and are $2 per person with free refills. In addition to the menu combo choices of seafood, meat and exotic fresh vegetables, there are a la carte items with prices ranging from $3.73 for vegetables to $5.75 for seafood items. Daily specials include bitter
melon, Hawaiian taro, daikon, beef tripe, tendon, tongue, pig’s stomach, small intestine and jellyfish. Vegetarians will love its colorful, artistically arranged mélange of fresh exotic vegetables in the Vegetable Combo ($14.95), which includes locally grown greens, baby bok choy, choi sum, watercress, ong choi, baby pumpkin, a selection of mushrooms, tofu and other seasonal vegetables from local farmers served with vegetarian broth and vegetarian sauces. Those with a sweet tooth will love the restaurant’s selection of desserts that feature the Filipino-inspired ice cream trio of ube, coconut and mango, homemade brownies topped with ice cream and fresh seasonal fruits. Even the drinks at Shabu Shabu Bangkok offer something unique. There’s a gorgeously smooth, creamy, fresh organic mango juice made with North Shore-grown mango, a fresh, refreshing calamansi juice that is perfect with the spicy flavors of the sauces, and Thai Young coconut juice served with slices of fresh coconut. As the city’s newest restaurant, Shabu Shabu Bangkok has succeeded in keeping the sukiyaki-style of dining fun, fresh and affordable. And, fitting in a city with some of the finest restaurants in the country, it’s raising the bar for Honolulu’s hot pot cuisine.

Pig Blood & Fish Maw Soup Serves 4 | by Chef Chai Chaowasaree

Ingredients: • 2 cups dried fish maw • 8 ounces chicken, cut to bite-sized pieces • 5 pieces dried Chinese shiitake mushrooms • 2 tablespoons vegetable oil • 2 cups pig blood • 8 cups chicken stock • 1 tablespoon thin Chinese soy sauce • 1 tablespoon thick soy sauce • 1/2 tablespoon sugar • pinch of pepper, to taste • 1 stalk green onion
cut to 1 inch • 2 tablespoons cornstarch (mix with two tablespoons water)
• In a sauté pan on medium heat, add oil and shiitake mushrooms, sauté until the mushrooms turn light brown on both sides (about a minute).
• Add pig blood and cornstarch before bringing to a boil. Turn off heat. Add green onion before serving.
Preparation: • Soften dried fish maw by soaking in water for a few minutes or until the fish maw is softened. Cut in bite-size pieces. Put aside.
• Add chicken and cook for a minute. It is unnecessary for chicken to cook all the way at this point.
Tips: • Dried fish maw should be made from fish stomach — air dried and deep fried.
• Soften dried Chinese shiitake mushroom by soaking in water for 10-15 minutes. Remove stem; set aside.
• Add fish maw, chicken stock, thin soy sauce, thick soy sauce, sugar and pepper. Bring to a boil and simmer for a few minutes.

IHOP Hawaii With my tummy full, the trek for Halloween goodies continued on over to IHOP in Waikiki to partake in a scary, salivating feast of pancakes galore — and when you’re at a place like the International House of Pancakes, you’re bound to be in for a treat. General manager David Bagood knows a thing or two about the perfect pancake, and in honor of this special day served me up one scary breakfast. The Scary Feast ($4.99) is a 7-inch buttermilk pancake with Oreos, whipped cream and candy corn on top, says Bagood. But it’s much more than that! The mini-Oreos serve as eyes and the candy corn and whipped cream serve as teeth, with a succulent strawberry nose — creating the ultimate pancake to feast on. Ashby says another favorite on the breakfast menu is the Mr. Crispy, which takes a fried egg and choice of breakfast meat and sandwiches the concoction between two slices of Texas Sweet Toast, “French Style.” For those who don’t know, the Texas Toast (a breakfast option by itself) is a gigantic slice of bread dipped in a cinnamon-egg batter, then grilled to golden perfection and dusted with powdered sugar. Breakfast is served all day, and nothing costs more than $11. But if you’re appetite is growling for something more on the savory side, Ashby says there’s loads on the lunch and dinner menu to satisfy even those with
a Godzilla-size hunger. Don’t let the title “Hand Foods” scare you off — it’s just good ole burgers hand-crafted with toppings that include roasted chilies, mushrooms, garlic mayo, smoked bacon, crumbled blue cheese, melty mozzarella and chipotle ranch sauce, just to name a few of the mouth-watering combinations to be made. Then again, maybe Dr. Frankenstein had a hand in making the Cocka-Doodle Moo. Story goes that one dark and stormy night, a stranger came into the cafe and ordered a Double Cheeseburger and a Chicken Pita Wrap. Somehow, the chicken ended up in the burger, and from there a food
challenge legend was born. See if you can defeat it, along with the sides of seasoned french fries, fresh spring greens, garlic fries or sweet potato fries.
