You a

Are

The Best of Both Worlds If someone were to ask me whether I’m a city girl or a country girl, I’d have a very difficult time answering that question. I was born and raised in the city, but most of my summers were spent either at my grandparents’ farm or on the lake in a verdant, scenic area of Kentucky. Some of my favorite childhood memories are of spending Saturdays watching a movie in a grand, ornate theater, then lunching and shopping with my mother. It was a Saturday ritual for most of the year, and I loved the culture and excitement of the big city. But then, my summers were spent in the country—swimming, playing and exploring—and I cultivated a deep love for the outdoors as well. After I married, I moved to Ocala, which I believe is the ideal blend of town and country. I suppose that’s what drew me to it in the first place. Ocala mirrors my affection for both the city and country ways of life, and since I suspect many of you are nature and city lovers, too, it reflects your personality perfectly as well. Here, you can be as citified as you’d like, all without sacrificing your outdoorsy side. You can view a world-class exhibit at the Appleton Museum, catch a live production at the College of Central Florida or dine at an elegant restaurant downtown. But then in no time at all, you can be out in the country. Just head out via car or motorcycle, and you’re in another world altogether—far from the traffic and the noise, enveloped by nature and a general sense of peace and tranquility.

Here, you can be as citified as you’d like without sacrificing your outdoorsy side.

This is why I’m particularly pleased with Ocala Style’s first-ever Town & Country feature. We bridge both worlds with an article that is filled with ideas for adding a little adventure to your calendar, which is particularly timely with the kids out of school most of this month. We focus on the outdoor fun that’s right around the corner in places like the Ocala National Forest, Croom and Steinhatchee, and we also introduce you to far-flung locales like San Francisco, Austin and Denver that offer big-city glitz. I believe the best gift you can give is the gift of sharing an experience together with loved ones. Consider a getway instead of a toy, something less tangible but more memorable. It goes without saying that the last few years have been a particularly strained time in all of our lives. I hope you find this issue to be a valuable guide to escape the stress, to carve out some time for fun and relaxation—whether you prefer the soft light of a campfire or the bright lights of the big city. Or both, like me.

Pain-Free Life Outstanding Credentials of Dr. Zhou • Trained at Harvard Medical School • Board-certified in Pain Medicine and Neurology/Psychiatry • PhD in Psychology • Author of numerous books and journal articles on Pain Management • Former Director of Jackson Memorial Hospital Pain Clinic, U. of Miami • Winner of Physician Recognition Award, American Medical Assoc.; 2003 • Distinguished Physician Award, Florida Medical Assoc.; 2004, 2006

Back pain, joint ailments, headaches, sciatica—chronic pain is the debilitating reality of many people’s lives. It can severely limit its sufferers’ lifestyles and even consume their day-to-day existence. Fortunately for Ocalans, however, life can become painless once more with the expertise of one of the world’s preeminent pain specialists, Dr. YiLi Zhou of Comprehensive Pain Management of North Florida. An esteemed practitioner and leader in his field with numerous academic articles and publications to his credit, Dr. Zhou follows a fundamental philosophy of “patient first, quality first.” This means patients receive minimallyinvasive, non-surgical, and effective treatment for a broad spectrum of pains with surgery as a last resort. In fact, 80 percent of Dr. Zhou’s cases involve back pain, and spinal injections are the most common form of treatment he uses to alleviate it. Treatment may even be as simple as one single injection. With three locations in North Central Florida, Comprehensive Pain Management is quickly becoming the region’s premier pain practice, and over his many years of practicing, Dr. Zhou has earned a reputation for accurate assessments and effective, cutting-edge treatments that always put his patients first. With Dr. Zhou’s expertise on your side, your pain can finally be a thing of the past.

! While the theater is being upgraded to include FM transmitters that will broadcast the sound through a car’s stereo system, John notes that they plan to install 200 of the oldfashioned speaker boxes on poles for those that want the nostalgic experience, crackling sound and all. John and his brother, Charles, have invested more than $150,000 in improving the 11.61 acres the theater sits on, doing much of the work themselves. They even upgraded the old 212-stall flea market, which will also reopen. “We plan to give the people a memorable evening at a great price,” says John.

In the 1950s and 1960s, the drive-in movie theater was in its heyday. More than 5,500 were up and running throughout the country, including one right here in Ocala. Today there are only 104 drive-in theaters operating in 71 cities in the United States, but later this month, Ocala’s drive-in will reopen, becoming only the fourth in the state. The theater will play first-fun movies and have space for 550 cars. “We have a lot of plans for the place,” says current co-owner John Watzke. “THE OCALA DRIVE-IN will be a fun, affordable place for the whole family to enjoy.”

Music For The Masses The Ocala Symphony Orchestra’s much-anticipated SYMPHONY UNDER THE LIGHTS will take place December 10 at 7pm on the downtown square and is sponsored by the City of Ocala and Jenkins Auto Group. “This year, the Youth Symphony Orchestra will kick off the concert before being joined by the Ocala Symphony Orchestra,” says OSO Conductor Matthew Wardell. The event will end with music by the Ocala Symphony Orchestra. Expect to hear plenty of holiday pops favorites, including “Sleigh Ride,” “Here Comes Santa Claus,” “The Nutcracker,” and “A Charlie Brown Christmas.” It’s free, but don’t forget to bring your own blankets and chairs.

High Tech & Historic Haven’t checked out the MARION THEATRE downtown yet? You’re missing out! The theater offers patrons first-run movies in a nostalgic atmosphere. There’s nothing old-fashioned about the technology, though. Take a look at the theater’s capabilities below. Call (352) 622-1245 for available movie titles and show times. » » » »

2 screens, one 3-D capable 420 seats 7.1 Digital Surround Sound Wall-to-wall screens measuring over 850 square feet » Digital projection » Beer and wine, in addition to popular concession items, available for purchase Source: Carmike Cinemas

QUICK TIP

Get there early because Sweet Adeline's Chorus, a local ladies’ barbershop group, will open the event, taking the stage at about 6:15pm. Consider it two free concerts!

Thursday Night Flings are a great way to indulge in a little palate pampering. This quaint eatery’s special Thursday night menu features a selection of pâtés, cheeses, truffles, nibblings and imported chocolates, all inspired by the Provence culture in the South of France. Soft French music playing only adds to the evening’s appeal. “We’ve had such great interest in the event,” says owner Edie Crupi. “I’ve been booked weeks in advance.” Reservations are required. Endless Baskets is located on East Fort King Street near the downtown square and serves lunch Tuesday-Friday, 11am2:30pm. Call (352) 732-0357 for reservations.

Your Carriage Awaits If the upbeat song “Sleigh Ride” doesn’t get you into a merry mood, maybe experiencing a sleigh ride firsthand will do the trick. What better way to usher in the season than bundled up in the back of a horse drawn carriage admiring the flickering holiday lights. “I have the best job,” says OCALA CARRIAGE & TOURS Owner Mary Garland. “The ambiance is great and you can’t beat making people happy.” Special holiday rides include a 15-minute tour of the downtown square with rides available from 6pm to 9pm. Mary also offers a 30-minute Historic Holiday Light Tour through the quaint streets of Ocala’s historic district. Reservations are required so be sure to call (352) 867-8717 to reserve a spot. On a side note, the horses pulling your carriage could very well be Hollywood celebrities. Two of Mary's horses, “Duke” and “Doc,” have a starring role in the soon-to-be-released Pirates of the Caribbean 4: On Stranger Tides.

“The Internet is a crazy thing,” Mary says. “The production crew called and asked if we had four big draft horses that could pull a stage coach. I said, 'Sure we do! When do you need us?' Well, they called on a Saturday and said the horses would have to be at the airport the next day at 3pm.” Luckily for Mary, her horses had a vet visit just that week and their passports were up to date (seriously) so all was in order. “It was a one-day shoot so we had to get it right,” Mary says. “It was dusk and there were flames on all the porches. It’s a very cool scene.” Mary is currently working with the movie company to bring a premiere of On Stranger Tides here to Ocala. The movie opens May 20.

Leslie Hammond Digs In

Top: Hammond holds a Mycenaean terracotta quadruped figurine discovered among the artifacts from the ash altar to Zeus. Above: A screen is filled with pottery fragments uncovered from a variety of areas (upper and lower sanctuary) from the Mt. Lykaion site. Right: The excavation team works within the ash altar of Zeus, which is part of the upper sanctuary of Mt. Lykaion. The elevation there is about 4,500 feet.

You’ll never hear DR. LESLIE HAMMOND complain about getting her hands dirty. Working in the field on an archaeology dig is one of her greatest passions. That quest has taken Hammond around the globe and already given her more memories than most people accumulate in a lifetime. “A lot of people don’t realize I’ve been doing this since I was an undergrad,” says Hammond, who has a bachelor’s in art history from Ohio State University, a master’s in classical archaeology from Indiana University and a Ph.D. from the University of Missouri in art history and archaeology, along with a minor in museum studies. Curator of Ocala’s Appleton Museum of Art from 2002 to 2008, she left that position to devote more time to archaeological research and Artistic Eye Fine Art Services, her own fine art consulting business. Hammond has The spent the past five finds we summers working in at the site of Mt. discovered Greece Lykaion (recognized were in Greek mythology colossally as the birthplace of Zeus) and is in charge historic. of processing all finds —LESLIE HAMMOND recovered at the dig. Located in the Arcadia region of southern Greece, the Mt. Lykaion Excavation and Survey Project has yielded a wealth of remarkable discoveries. While the Greek government had excavated the site in the 1800s and early 1900s, no work had been done since, until the last few years. The current project is a collaboration between the University of Pennsylvania, University of Arizona and the Greek Archaeological Service. “The finds we discovered were colossally historic. We found artifacts dating to at least 2,000 and possibly even 3,000 years earlier than anybody expected,” notes Hammond. “Some finds date back to at least 2500 B.C. It’s a big deal. We knew this was a sanctuary site to Zeus, but it also involved civic buildings and an athletic complex. The site has the only visible hippodrome

[horse racetrack] in all of Greece. We’ve pulled up bridles and all sorts of horse trappings.” Although the summer work involves long days working in hot, dusty conditions, Hammond relishes it. “It’s like Christmas every day,” she says. “You never know what will show up. We’re always discovering things. Traveling is one of the things I like most. I love the whole aspect of living in a village on the side of a mountain.” Archaeology may deal with ancient artifacts, but there’s nothing out-of-date about how the discoveries are recorded. “This past summer we went virtual,” Hammond explains. “We spent the last five years trying to come up with a system where everything is compatible and in one spot. We still keep written records, but now we’re using smart phones so the archaeologists can enter data and scan photos right from the field.” At the present time, the excavation is finished, and the mental work begins in earnest. After the materials have been studied, researched and papers published, the Greek government will issue more permits for additional excavation. The project is expected to be ongoing for many years. “During the summers, I play with really old stuff, and during the academic year, I work on research and other things with my business,” says Hammond. “It’s all about working with objects, whether I’m working with dirty pieces of pottery, ancient coins or a painting by a famous person. It’s not a lot different from my work as a curator at the Appleton.”

DIDYOUKNOW? Despite suffering from a deep recession, the United States contributed $303.75 billion to charities in 2009. Approximately 75% of that—$227.41 billion— came from individuals.

Charity Check-In A year and a half ago, Ocala Style readers first met local pilot CAROLANN GARRATT. An article on her world record-breaking flight (“Around The World In 8 Days,” May 2009) documented her global journey in a single-engine Mooney to raise awareness and money for ALS, or Lou Gehrig’s Disease. At press time then, she was $184,000 toward her goal of $1 million. Today, she has raised a total of $265,999. To honor veterans on Veterans Day last month, students from GRACE SCHOOL recreated the dramatic Iwo Jima flag-raising photograph in front of Veterans Memorial Park on Silver Springs Boulevard. “We have done this in the past, and it is a great way to help the students appreciate the veterans in our community,” says middle school Language Arts teacher Bea Morgan. “They went to Washington D.C. in fifth grade and saw the memorial, so it is familiar to them. The students are part of the National Junior Honor Society and Student Council organizations at our school, and all of them hold a leadership position among their peers.”

On December 11, helping ST. JUDE CHILDREN’S HOSPITAL couldn’t be easier for locals. The public is encouraged to bring their new, used, broken or otherwise unwanted cell phones, computers and other household electronics to Chili’s on SR 200, and all proceeds from the refurbishing or recycling of the items will benefit the hospital. The Ocala company Recycle All Electronics will be on-site from 9am to 5pm to receive the donations and will perform data clearing on all items. “Chili’s has a longstanding relationship with St. Jude,” says the restaurant chain’s Area Director Chad White. “This is an easy way for locals to support ill children as well as protect the environment by disposing of their electronics properly.” Individuals can also drop off items at Recycle All Electronics’ location at 5854 SE 5th Street. If you have a large number of items to donate and require pick-up, call (352) 502-4202.

Poster With A Purpose Dylan Streit, a third-grader from WARDHIGHLANDS ELEMENTARY, beat out all other third-graders with this winning poster design. Sponsored by Marion County Fire Rescue, the annual poster contest helps promote the theme, “Get Down. Get Out. Get On the Phone!” And kids pick up that message strongly in many different ways. Congratulations, Dylan!

Students Salute Service Members Over 3,000 people watched as hundreds of student musicians, Color Guard members and Junior ROTC cadets showed their appreciation for local veterans recently. Each year, the school district presents the county’s official Veterans Day Ceremony—with students from dozens of public schools that are open on Veterans Day participating—so students have a direct link to learning about the sacrifices made for our freedom. To our veterans, we say “Thank You.”

Look Who’s Walking Thousands of students walk or ride their bicycles to school every day here in Marion County. Recently, parents trekked along to see some of the dangerous scenarios—with police escort to encourage kids to continue making safe, positive choices. The annual “Walk Our Children to School” event rotates to a different elementary school each year thanks to complete cooperation from local law enforcement and traffic planning organizations. This year’s walk took place at Eighth Street Elementary in Ocala.

Outside The Crayon Box

Mainolfi At Maplewood He’s the main weather guy at a leading Orlando TV station, but he was also the guest speaker at MAPLEWOOD ELEMENTARY recently. Meteorologist Tony Mainolfi challenged fifthgraders—including this handful—to become better readers, study hard and set lofty goals for life. His hands-on, friendly approach invited lots of student questions—everything from how “hard” it is to be on TV to the most famous person Mainolfi’s met. Of course he also discussed the science of weather with them as well, offering insight into his tornado and hurricane experiences.

They’re the “Crayola” Box of 13—not 64!— but these staff members from HOWARD MIDDLE certainly stayed sharp when it came to “Costume Day” for United Way. The outfits splashed the campus with color to help raise over $300 in one day for the school’s campaign. Kudos to (l-r) teacher Emma Hawkins, guidance counselor Heather Jones, teacher Paul Reed, guidance counselor Natasha Oliver, Principal Kathy Collins, Magnet Coordinator Lisa Coleman, Assistant Principal Donna Cook and Dean of Students Chris Watts.

Afghan Comfort For Solider When HAMMETT BOWEN ELEMENTARY students in Mrs. Kelly King’s third grade class heard U.S. Marine Corporal Shane Hathaway’s story in early September, they immediately jumped to action. You see, Hathaway had been wounded and was recovering in Bethesda, Maryland, from four bullets received in battle. But instead of sending “get well” cards, these students donated coins to buy yarn for a handcrocheted afghan. Their teacher’s mother-inlaw spent hours on the project, and the blanket was shipped to Corporal Hathaway for comfort just a few weeks ago.

Eye of the Beholder The Appleton Museum’s new photography exhibit is an eye-opening experience.

In a stunning black-and-white portrait on the second-floor of the Appleton Museum, Sophia Loren, eyes closed and neck exposed, tosses her head away from the camera. In another, a chubby-faced, newborn Anderson Cooper sleeps soundly. On the opposite wall, a young boy, caught in play, dances with his eyes closed in front of a scuffed wall. The photographs may be the work of Richard Avedon, Diane Arbus and Henri Cartier-Bresson, respectively, but the reason for their temporary residence in Ocala is collector W.M. Hunt. His exhibit “The Unseen Eye: Photography From the Collection of W.M. Hunt” opened last month and runs through the new year. “They are all magical, heart-stopping pictures of people in which you don’t see their eyes,” Hunt says during a busy morning at the museum, preparing for the opening. “Or you just see their eyes and nothing else.” Hunt, who brought nearly 200 photographs to the Appleton for the eclectic exhibit, is a collector and curator from New York City. He also happens to be the brother of Mary Jane Hunt, a horse breeder in Reddick, and has visited Ocala many times. “Ocala’s great, so pretty, and I’m happy to do this show here,” he says. “This is my first show at the

34

ocalastyle.com

dec’10

Appleton and this is the U.S. debut of the collection. It’s been in Europe three times, so this is the big kickoff. We hope we’ll be in other venues in the States.” The exhibit is, as all good ones are, provocative and captivating. The juxtaposition of contemporary and vintage, black-and-whites and colors makes for a forceful experience. The works are organized to represent the human life cycle, starting with birth—which is where the infant newsman comes in—and ending with death. Among the many renowned photographers whose work is featured are William Klein, Robert Frank and Lee Friedlander. The collector does have a favorite. “This one,” he says eagerly, striding over to a 1972 Irving Penn photograph of two veiled North African women. “It’s the best in the collection. I love it. I bought it 30 years ago. When you look at it close up in the light, it expands into this constellation of silver and gray. It’s a platinum print. Irving was a great master. He happens to be my favorite photographer.” Hunt says his hope is that the exhibit “provokes, engages and delights” visitors. It is certainly one exhibit the public should see for themselves, with their own two eyes.

Johnny On The Spot In late October, MUNROE REGIONAL MEDICAL CENTER hosted a very special guest in its orthopedic ward. Baseball legend and Hall of Famer Johnny Bench toured the Munroe Orthopedics program and met with patients alongside Dr. Derek Farr and Dr. Nirav Gupta of Twin Palm Orthopedics. “It was an honor to have him there,” says Dr. Farr. “I’m a big sports fan, and so were several of the patients he met with. He passed out baseballs and signed them, too. One female patient even had an old baseball card of his, which he signed.” Bench, who as a Major League catcher performed some 500,000 squats during his career, suffered from hip pain for years before he underwent his first successful hip replacement surgery in 2004. Six years later,

in February 2010, he became the first recipient of Stryker’s ADM X3 Mobile Bearing Hip. Since that time, he has traveled around the country discussing his joint replacement experience with others. “He’s outgoing, personable, and was eager to share the stories of his pain and recovery with the patients,” says Dr. Farr, who was the first surgeon in Marion County to replace a hip with the same ADM X3 Mobile Bearing Acetabular System that Bench received. IN OTHER MRMC NEWS, the Munroe Heart program was recently recognized as having one of the top 50 heart bypass programs in the country by Consumer Reports magazine. It was one of only three hospitals in Florida to earn the distinction.

It seems only fitting that the FOREST PUBLIC LIBRARY would become Marion County government’s first LEED Gold-certified green building. The aptly-named library, located on Highway 314A in Ocklawaha, recently met the U.S. Green Building Council’s Leadership in Energy and Environmental Design Gold standards in six major areas: energy and environmentally efficient use of land, water, recycled materials and resources, indoor air quality, and innovative design. LEED is the nation’s premier program for the design, construction and operation of high performance green buildings. “This is a great example of county staff and local architectural, engineering and construction teams working together to produce a phenomenal end result,” said Marion County Facilities Management Director Andy Race. “Most of the same components that helped to achieve a LEED Gold rating at the Forest Public Library are being used in all Marion County buildings. This is helping us conserve energy, save tax dollars and minimize our carbon footprint countywide.” The Gold certification is the second-highest designation applicants can receive, and Forest is only the third Gold-certified library in the state.

Feher holds a master’s degree in social work with a concentration in mental health from the State University of New York at Buffalo. What doesn't need to be covered? Azaleas, crepe myrtles and rose bushes to name a few. According to Norma Samuel, horticulturalist with UF’s Institute of Food and Agricultural Sciences, Marion County falls within USDA Plant Hardiness Zones 8b and 9a. Norma stresses that steps to prevent cold weather damage to your plants should begin before cold weather is forecasted. This is what she recommends: 1. Select cold-hardy plants. 2. Avoid application of quickrelease nitrogen fertilizers after September 30. 3. Potassium fertilizer application in the fall will help enhance cold tolerance. 4. Avoid severely pruning plants in the fall. 5. Mow grass at recommended height, promoting deeper root growth.

6. Use of windbreaks helps protect plants from the cold. 7. Water the soil before a freeze. The moist soil will absorb the heat of the sun during the day and will be reradiated at night to provide extra warmth for the plant.

For additional information about plant care, call the UF/IFAS Marion County Master Gardeners at (352) 671-8400 or visit the Plant Clinic at 2232 NE Jacksonville Road in Ocala.

If tennis talent is genetic, then it’s little wonder that sisters Terri (r) and Kami Thomas are both so impressive on the court. The two were just 9 and 6, respectively, when they first picked up tennis rackets. Ten short years later, they’ve already made quite a name for themselves in the world of tennis.

T

erri and Kami Thomas have excelled in their sport from the very beginning. Since the two sisters were in elementary school, they have been putting in long hours on the tennis court, and the years of dedication and training have paid off. Both were named the Marion County High School Player of the Year for tennis—Terri in 2009 and Kami in 2010. While some siblings probably couldn’t resist that competitive urge to one-up each other, Terri, 19, and Kami, 16, acknowledge that their friendly rivalry makes them both stronger tennis players and closer sisters. “We get very competitive when we play one another,” Kami says. “But we’re also very supportive of one another.” “We should turn some of that competitive spirit on our opponents,” laughs Terri. Both girls train locally with Jason Weiss, head tennis professional for the Fort King Tennis Center. “When I first got a hold of them I thought I had two great athletes who played tennis,” says Jason. “Now, they are two great tennis players.” Perhaps it’s their willingness to learn from one another that allows Terri and Kami to develop and improve as athletes. Theirs is a sport that requires patience and dedication. “When you practice tennis you don’t see immediate results,” says Jason. “You learn something new every day and begin to implement it into your game. Over time you grow as a player. Both Terri and

Kami always make a strong attempt to improve as tennis players.” The girls admit that they couldn’t do it without the support of the other. “Kami has a lot of drive,” Terri says. “She’s very motivated and fiery. She has a lot of that and I sometimes feel like I could use a little bit more.” “When you see Terri play,” says Kami, “she looks great. She has the best forehand, backhand and serve. Terri is the person everyone wants to play like.” So just who do the girls admire? For some teens, the chance to see Beyonce or Lady Gaga would be a once-in-a-lifetime experience. For the Thomas girls, though, it was sitting in the stands while Roger Federer worked the court. “He makes the game look so easy,” Terri says. “It’s like he doesn’t even break a sweat. I like to watch the professionals and incorporate some of what they do into my own game.” “And she’s good at it,” laughs Kami. “Terri can see something once and emulate it.” The girls are also quick to acknowledge the support of their parents, Cosworth and

Hyacinth, who ironically have never played tennis themselves. “Our dad is on the court with us every day,” says Kami. “Whether it’s sunny or raining, he’s out there. For never playing the game himself, he certainly knows what he’s talking about. Mom goes to every match, every tournament. She’s always there to cheer us on.” Kami, who is halfway through her junior year at Forest High School, is working toward earning a United States Tennis Association ranking in the hopes of attending a T-1 school after graduation. At the same time, Terri is gearing up to begin her first tennis season at Hillsborough Community College where she’s studying mass communications. With all they’ve achieved in the sport of tennis, the Thomas sisters have become role

models for up-and-coming tennis players. Their best advice? “Have fun,” Kami says. “When I was younger I was so serious when playing and I would lock up. Now I have fun and do my best. That’s all anyone can do.” Terri agrees and adds not to let anyone intimidate you. “Play the ball, not the opponent,” she says. “If someone is bigger or stronger than you, just focus on the ball.” While education is the priority for now, both girls admit to having aspirations of becoming professional tennis players. “It would certainly be a dream come true,” says Terri. “But if it doesn’t happen, I’ve already gained more than I thought I would from playing tennis.”

When it comes to sporty siblings, Terri and Kami are in very good company. Here is just a handful of the top brother and sister athletes who have made a name for themselves in the wide world of sports.

a national treasure

The Ocala National Forest is one of just three national forests in Florida. Ocala has something special in its national forest. As a matter of marion fact, there are only three national forests lake in the whole state of Florida. The 380,000plus acres with more than 600 lakes, rivers and springs received its national forest distinction in 1908 from President Theodore Roosevelt—the first in the state of Florida and the first east of the Mississippi River. It’s also the oldest and southernmost national forest in the United States and the world’s largest contiguous sand pine scrub forest. How’s that for a history lesson! Last year more than 1.7 million people visited our national forest. If you weren’t one of them, here are some ideas for getting started. If there’s one thing our forest isn’t lacking in, it’s stuff to do, plain and simple. From camping and kayaking to four-wheeling and hunting, the outdoor recreational opportunities are endless. Whether you’re a true outdoorsman who prefers to rough it sans electricity and running water, or you prefer a few of the comforts of home, the forest has a little something for campers of every level. Primitive camping is allowed throughout the forest. Just pitch your tent and set up camp wherever you see fit. There are a few things to keep in mind, though. Yes, there are bears in the forest. No, contrary to popular belief, they aren’t afraid of the sound of knocking putnam

two sticks together. Make sure to keep your food and drinks locked up tight. Also, during general gun season camping in the forest is restricted to designated areas. Of course if the thought of being alone in the middle of the forest gives you the heebie jeebies, you can check out any one of the dozens of campgrounds scattered throughout the woods, each with their own appeal. Davenport Landing is the perfect spot for canoers and kayakers looking to settle in for the night. According to the United States Forest Service, this site, situated deep within the floodplain of the Ocklawaha River, is a former steamboat stop. For details, call the Ocala National Forest Lake George Ranger District at (352) 625-2520. Still too close to nature? The forest has a handful of cabin rentals that each offer their own charm and historical significance. Located just off the Juniper Run, the Sweetwater Cabin housed the crew of the 1954 film The Yearling. Surrounded by the Juniper Prairie Wilderness, the structure was built in the 1930s and features two bedrooms, a full bath, a kitchen and a rustic fireplace. Just bring your own bedding and food and you’re good to go. Fair warning, though—this site is so popular that a lottery is held every year to determine the lucky 52 visitors (and their parties, of course) who will get to call this secluded spot home for a week. For reservation information, call Recreation Resource Management at (352) 625-0546. Sources: fs.fed.us, fs.usda.gov

For a memorable off-road experience, check out the Ocala Adventure Trail near Blue Sink in the Ocala National Forest. Also known as the Centennial Trail, this loop trail system is 47 miles long and offers a unique opportunity to view the Big Scrub ecosystem up close and personal. Activities at Blue Sink and nearby Farles Prairie include fishing, picnicking and wildlife watching. This trail also meanders its way around the Pinecastle Naval Range, so if you’re really lucky, maybe you’ll catch the Navy pilots doing their training drills. Unlicensed vehicles less than 65 inches are allowed on the Ocala Adventure Trail system. A 20mph speed limit is enforced on this trail. You can download a copy of the trail map and find more details at fs.usda.gov. Remember: • All ATVs operated on public land must be titled. There is no state registration requirement. • All riders under 16 must wear a helmet and eye protection at all times. • ATV use is prohibited on paved roads. Source: fs.usda.gov

a magical getaway Experience the quaint, quiet side of the Walt Disney World Resort in your own treehouse getaway. While our own forest is filled with a plethora orange of outdoor adventure options, traveling just a few hours in any direction will introduce outdoor enthusiasts to an abundance of one-of-a-kind camping opportunities. Just to our south, beyond the hustle and bustle (not to mention the long lines of the Magic Kingdom and Epcot Center), is one of Disney’s best-kept secrets. The new and improved Treehouse Villas at Disney’s Saratoga Springs Resort & Spa are what you might call “glamping.” Look it up, it’s a real word! Glamorous camping allows campers to experience the benefits and joys of nature without sacrificing any of the comfort and convenience of resort-style vacationing. Built in the mid-1970s, Disney’s tree house accommodations welcomed guests through 2002 before closing their doors. Newly modified, the Swiss Family Robinson-style tree houses are reminiscent of a child’s fort. A very well-built, lavish fort. “Seeing the tree house villas open again is like welcoming home an old friend,” says Sonya Deese-Byrnes, general manager of Disney’s Saratoga Springs Resort & Spa. “One of the many exciting things about the tree house villas is how the resort’s original concept has been

preserved while bringing the units up to modern standards. Our members and guests are already raving about their glamping experience.” Featuring 60 three-bedroom units, each octagon-shaped tree house is elevated 10 feet off the ground making campers feel like they’re surrounded by nature. Panoramic views of lush greenery and scenic waterways greet you from each room. (It’s Swiss Family Robinson without the splinters and bug bites.) Guests are treated to granite countertops, flat-screen televisions, cathedral ceilings and full kitchens. Now that’s roughing it! Guests of the villas can utilize all the main resort offerings, including boat transportation between the Downtown Disney area and the Disney Saratoga Springs Resort & Spa dock, tennis courts, bicycle rental, playground, on-site Surf ’s Up restaurant, nearby spa and fitness center and High Rock Spring Pool, which boasts its own water slide and whirlpool spa. cottage-style camping Glamping on the Steinhatchee allows for all the luxuries of home. Let’s get back to the premise of glamping. Steinhatchee Landing Resort, just 65 miles west of Gainesville, features cottages that look like they should grace the pages of a child’s storybook. Guests can choose from 50 Victorian, Georgian or Florida Cracker-style cottages (19 of which are pet-friendly), each with their own unique charm. Some feature fireplaces, Jacuzzis and wood-burning stoves, and all include outstanding views of the Landing’s lush 35 acres. Just a few minutes from the Gulf of Mexico, Steinhatchee Landing Resort is, you guessed it, situated on the waters of the Steinhatchee River. Perfect for anglers and nature lovers in general, the resort blends contemporary amenities, including a wellness spa, with the recreational opportunities only available in the great outdoors. The picturesque village even has a petting zoo for the kids and a croquet lawn, not to mention picket fences, a tidal creek, herb and vegetable gardens, wooden bridges and gazebos. Steinhatchee Landing is like a Norman Rockwell painting come to life. While each of the cottages includes a full kitchen where guests can create their own meals, sometimes you just want to indulge

the lazy river If you prefer your camping a little closer to sea level, a trip on the St. Johns River may be just the solution. Imagine what it would be like to wake up on the water—the soft clay st. wake gently rocking johns your houseboat, putnam flagler the sound of water lapping the shore, marion volusia birds chattering in the lake distance. seminole At just over 300 orange brevard miles long and at times two miles wide, the osceola St. Johns River is one of Florida’s most wellindian river known waterways. Stretching from Indian River County to our south to Jacksonville in Duval County to our north, the St. Johns is one of only a handful of major rivers in the world that flows north. Even better, it’s very houseboat-friendly. With its slow, meandering pace, the river allows houseboaters a lazy, leisurely pace to enjoy nature at its finest. Houseboat rentals are available up and down Florida’s major waterways, but Holly Bluff Marina in DeLand is one company that specifically services the St. Johns River. “My husband, Rick Armstrong, and I have been in the houseboat business in Florida since 1986, and we purchased Holly Bluff in 1992,” says owner Judy Armstrong. “We just love it. duval

The river is absolutely beautiful and doesn’t have a lot of development. A houseboat is a fantastic way to escape the everyday demands of life and I highly recommend it as a great source of stress relief.” A selection of boats are available to rent and include sleeping arrangements for anywhere between two and 10 people. By the way, the boats are fully equipped for your convenience. Even the linens and silverware are included. A stove, a color television, air conditioning and heating, hot water, a gas grill, a microwave and a refrigerator are just a few of the other amenities. It’s like home, only with a better view. No special license is required to drive a houseboat, and an instructor will give each driver a lesson on the river before you and your party sets sail. Along your journey you may spot alligators and turtles basking in the sunlight, otters splashing playfully in the water and deer and raccoons exploring the shoreline. “We’ve even had customers who have seen bears swimming in the river,” adds Judy. Don’t forget to bring a camera and plenty of extra batteries. Houseboats are available for weekend, mid-week and week-long excursions and prices vary depending on the time of year and length of trip. “Right now through February is our low season,” Judy says, “and we’re offering wonderful specials that make houseboating even more affordable. We invite anyone down to the marina to check the boats out for themselves and to ask questions.” You can also check out hollybluff.com or call (386) 822-9992. Source: hollybluff.com

Roy’s Restaurant, overlooking the river, has been a crowd-pleaser for more than 35 years and includes a complete selection of burgers and seafood, not to mention a fully stocked salad bar. Fiddler’s Restaurant has a full-service bar in addition to a full menu, and Mason’s market, the town’s quaint grocery, offers filling and tasty to-go lunches, perfect for families on their way to a day of outdoor excitement. Or you can stock up the cottage fridge and fend for yourself. The choice is yours, and that’s just one of the perks of the laid-back atmosphere at Steinhatchee Landing. crazy for croom Croom Motorcycle Area is an ATV-enthusiasts dream. Like your camping experience mixed with a little bit of adventure? A little bit of speed maybe? Croom Motorcycle Area, named one of the “10 Coolest Places in North America” by The World Wildlife Fund, is well-known throughout the ATV community. And rightfully so! With more than 2,600 acres of trails—some tame, some downright challenging—Croom draws ATV and motorcycle enthusiasts to the area from across the country. And yes, you can camp here. The Buttgenbach Mine Campground, located southwest of Ocala near Brooksville, is a 50-site campground (complete with water and power hook-ups) shaded by 100-year-old pine and oak trees. The grounds feature space for both tents and RV campers and is located within the Croom Motorcycle Area, or CMA. “Our campground is very unique,” says Forestry Supervisor I Mark Good, “in that it’s set up specificially for riders. You can literally drive out of your campground and have direct access to 2,600 acres of trails. We also provide wash stations to rinse off your bike after a day’s ride and the Red-Line Theater hernando

Get back to nature (literally) as a guest in Club Florida’s Treetop Yurt. Imagine camping under a giant umbrella, surrounded by panoramic views of lush treetops. You roll over and spot a cardinal on a nearby branch, joyfully announcing the morning. You’re close enough to reach out and touch it. Did we mention that you’re sleeping on a platform some 11 feet above ground, nestled in the treetops? Don’t worry, this one-of-a-kind yurt is surrounded on all sides by floor-to-ceiling screens, ensuring you won’t accidentally roll out, and that bugs and other critters won’t roll in. Situated at the edge of a quarry that fills and empties along with the Santa Fe River in Gilchrist County, the Sunrise Oasis yurt, owned by Club Florida, is surrounded by four acres of primitive landscape. “You won’t find another yurt like it anywhere in the world,” says owner Virginia Seacrist. Designed and built from scratch by Virginia’s sons Patrick and Jonathan, the yurt was finished in 2004. Since then, it’s been gilchrist

supportive of the facility and has been coming here and riding the trails since he was a kid.” And then there’s the sand pit. No mention of CMA would be complete without highlighting The Sand Hill Day Use Area, aka “The Front Pit.” This mining-pit-turnedATV-park is an enthusiast’s dream. Just like the trail areas of Croom, the Front Pit’s degree of difficulty varies from beginner level to expert. Perfect for spectators, too, this area is composed of clay mud and deep sugar sand and boasts nearly a full square mile of sand dunes, turns, berms and jumps. So grab your tent (and your ATV keys) and prepare for a few days of daytime thrills and nighttime relaxation. Check out croommotorcyclearea.com or call (813) 442-1678 for permit details.

featured in newspapers across the state and was recently named in Florida Monthly magazine’s “Where To Stay And Play” list for 2010. So what exactly is a yurt? Well, according to yurts.com, it’s a round, domed shelter originally used by nomads across Central Asia. Intrigued? You should be! Two separate platforms make up this tree house yurt, the first of which is just four feet off the ground. The 16-by-16-foot space includes a relaxing spot to sit and enjoy the view, a dining table, a two-burner propane stove, a cooler, a dishwashing tub and soap, and a 50-gallon rain barrel for dishwashing, not to mention flatware, a coffee pot and other cooking supplies. For a nominal fee, Virginia will even supply you and your group with five gallons of drinking water. She really has thought of everything. A quick climb up an attic-style ladder leads guests to a trap door in the floor of the yurt’s upper sleeping level, which includes four two-inch sleeping mats and a queen futon mattress. A look up reveals the underside of the huge umbrella-like structure and the circular plexiglass dome—perfect for allowing the soft moonlight to filter through at night. “The yurt is completely environmentally sound,” says Virginia. “We didn’t remove any

trees when building the structure, it features a composting toilet and we only allow handpowered boats on site.” Virginia is quick to point out that the use of two hydrobikes is included in the rental price, though. Club Florida Vacation Rentals also operates several other vacation sites in the area, such as a bed and breakfast and a nearby cabin. For details, visit clubfla.org.

A series of winding trails connect throughout the park, creating more than 100 miles of turns, jumps and elevation changes. While some of the trails are maintained, the majority of riding areas at Croom are left in their natural state. Some are smoothed from the constant barrage of riders, while others are more difficult to handle. Croom is frequented by world-class racers who often set up camp on the grounds to prepare for upcoming competitions. Travis Pastrana, Ricky Carmichael, J.T. san francisco The City By The Bay

All cities are born of necessity. A train stop begets a town. An industry attracts a city around itself. It’s only fitting that San Francisco sprung from gold. So idyllic, so captivating, this city by the bay, which boomed during the California gold rush, is the gem of the Pacific Coast. With its beautiful foggy harbor, charming cable cars and sloped streets, San Francisco is an enchanting place with something for everyone. Much of the action in San Fran seems to center around Fisherman’s Wharf on the water. This quaint district, which juts out on the coast between the Golden Gate and Oakland Bay bridges, is a perfect focal point for a first visit. Take your pick of the restaurants here, but be sure to hone in on the seafood.

Franciscan Crab Restaurant and Alioto’s are perennial favorites. For dessert, there’s nearby Ghirardelli Square for chocolate lovers. You can’t miss it. Just head toward the iconic “Ghirardelli” sign gracing the skyline. Whatever you do in San Francisco, make sure you get out on the water for a while. Whether it’s riding the ferry to Alcatraz Island off the coast, stepping onto a docked historic ship at Hyde Park Pier or embarking on a whale-watching tour, your visit won’t be complete otherwise. Speaking of wildlife, the Aquarium of the Bay, which showcases thousands of marine animals, is a real treat as is a walk to Pier 39 to watch the barking sea lions piled up on the docks. When you head further inland toward downtown, be sure to check out the famously crooked Lombard Street, the largest and oldest Chinatown in the U.S. and Haight-Asbury’s Painted Lady Victorian homes. And if you only have time for one place outside of the city proper during your stay, make it Sausalito. The ferry

is a scenic way to travel to this picturesque enclave, but you can also rent a bike and ride from Fisherman’s Wharf, across that mighty red bridge (all 1.7 miles of it) and into town. The shops in “America’s Amalfi Coast,” as the town has been called, are charming and perfect for souvenir-hunting. As far as transportation goes overall, San Francisco International Airport is a dozen miles or so south of the city so plan on a short ride via shuttle or cab after your flight. Other than that, the city is walkerfriendly and has, of course, those wonderful trolley cars, so no rental is necessary. It’s virtually impossible to overstate the allure of San Francisco. There’s no place quite like it, and there’s a reason why Tony Bennett and millions of others have left their hearts there. You’ll see.

chicago The Windy City

Forty-five million people can’t be wrong. That’s the number of tourists who visited the Midwest’s crowning metropolis in 2008. More impressive than that is the fact that 11 Fortune 500 companies and countless other businesses managed to get a lot of work done all the while. Yes, this industrious city works hard, but it also knows how to play hard, making it an ideal travel destination for, well, millions. You’d be hard-pressed to find a better starting point for an inaugural Chicago visit than the Navy Pier. The expansive beauty of Lake Michigan is a must-see for tourists, and the pier is just the spot to enjoy it. Over eight million people visit the landmark each year, jetting off on boat rides from the South Dock, whirling around on the 15-story-tall Ferris wheel and breaking bread at the numerous waterfront restaurants.

Frank Gehry’s Pritzker Pavilion

Ah, food. Chicago is worldfamous for its good eating, especially its pizza and hotdogs. The city’s famous deep-dish is at its finest at Lou Malnati’s, a family-owned eatery with five locations in Chicago alone. As far as dogs go, your Chicago trip won’t be complete without a stop at Wieners Circle in Lincoln Park. The only thing saltier than the hotdog here is the staff’s famously foul language. After one bite, though, you won’t mind the abuse. For higher-end fare, take a cue from our President and First Lady and make reservations at Spiaggia on North Michigan Avenue. Live theater is as synonymous with Chicago as deep-dish pizza. The Chicago Theatre, with its legendary marquee (at left), as well as the Ford Center, the Goodman Theatre and several others comprise the Loop’s famed theater district and present fantastic productions all year long. The company “Broadway in Chicago” even offers behind-the-scenes access at some of the theaters. For laughs, don’t miss The Second City, which has graduated such talents as Gilda Radner, Tina

Fey and Chris Farley. By the way, chicagoplays.com is an excellent resource for ticket discounts. Chicago’s two-dozen-acre Millennium Park offers a welcomed respite for visitors after a long day of sight-seeing. The Frank Gehry pavilion there is spectacular to see in person and a regular site for outdoor concerts. Millennium is part of the greater 319-acre Grant Park, or “Chicago’s front yard,” which famously hosted President Obama’s election rally in 2008. If after some rest, you’re looking for more adventure (and don’t have a fear of heights), step out onto The Ledge at Skydeck Chicago. This glass floor 1,353 feet above the street lets you feel like you’re floating—or falling, depending on how you look at it. Before you board your flight back home from The Windy City, be sure to catch a Cubs game at Wrigley Field or at least have your photo taken in front of the ballpark’s familiar signage because nothing is more Chicagoan than a team that gets up, practices and competes despite 102 years since its last World Series championship. That’s a team after Chicago’s own heart.

The Live Music Capital of the World If the Lone Star State only conjures up images of boots and spurs and cattle ranches, it’s time to get Texas’ hip capital city of Austin. Nestled in the hills of Central Texas—with Dallas to the north, San Antonio to the south and Houston to the east—Austin is a stand-out destination in a state filled with big-personality locales. It’s home to incredible live music, beautiful weather and a funky Western vibe, a place that manages to keep one foot firmly rooted in its colorful past and the other striding toward the next big thing. A sensible place to start here is at the capitol building itself. Although some states’ capitols aren’t worth the bother, Austin is an exception. Built in the 1880s, this striking Renaissance Revival structure—complete with a domed rotunda and a portrait gallery of the state’s

governors—gives our own national capitol a run for its money. You can’t talk about Austin for long without mentioning its worldrenowned live music scene. Austin City Limits is a pretty tough show to catch live—tickets are free but the unscheduled, first-come, first-serve giveaways online don’t guarantee an actual spot in the audience. However, you always have access to the blues, country, rock and jazz pouring out from the more than 200 bars, dives and other music venues onto Austin’s streets. Everybody has to eat, and in Austin, you don’t want to miss The County Line Bar-B-Q on Bee Caves Road. It’s quintessential Austin and has been around for decades. Shady Grove, just across the Colorado River from downtown, is another neat spot to grab a bite. Eating a burger and fries under the pecan tree on the restaurant’s patio, with the stringed lights above and old wagon wheels all around, is hard to beat. If you’re there on a Thursday around 8pm, you’ll catch an “Unplugged @ The Grove” concert, and do visit the famous Hippie Trailer on-site before you leave for a fun photo op. Avenue, or SoCo, is the place to be every first Thursday of the month. Loads of people mingle out on the street, shops stay open later and restaurants offer drink specials. This writer had a riotously good time nearby at The Aquarium On 6th (that’s 6th Street, another hot spot) a few summers ago. Not to worry, downtown isn’t only for the younger set. There’s always a comedy show to be had at renowned Esther’s Follies on 6th Street or a visit to the Austin Museum of Art on Congress. Yes, when it comes to fun, Austin is certainly an equal opportunity provider. So don’t take that “don’t mess with Texas” slogan literally, and poke around this capital city any chance you get. It won’t disappoint.

Shrimp boils, plantation houses and magnolia blossoms—say the name Charleston and the imagination runs wild with vivid images of lowcountry living. Though not South Carolina’s capital, Charleston is a charming ambassador for the Palmetto State, and she’s a gracious host to the millions who enter her city limits every year. It goes without saying that if you’re historically inclined, you’ll want to visit Fort Sumter here, site of the first shot fired of the Civil War. You can catch a 30-minute boat ride to the national park from either Liberty Square downtown or Mount Pleasant. A visit to Battery Park, at the southernmost tip of Charleston where the Ashley and Cooper rivers converge, is an antebellum history lesson unto itself. A walk along Rainbow Row downtown on East Bay Street is another peek at the past. The

pastel-painted historic homes there make for terrific photos. Certainly put Boone Hall Plantation, located about 8 miles from downtown, on your list, too. The famous oaklined drive there is breathtaking and very O’Hara-esque. The property itself has been producing crops for more than 320 years. When you travel to Charleston, it’s best to ditch your diet altogether. Lowcountry cuisine is irresistible. For excellent seafood, head to Hank’s Seafood Restaurant on the corner of Church and Haynes streets. Or if you have an extra half-hour before dinnertime (this place can be hard to find), head for The Wreck of the Richard & Charlene in Mount Pleasant. The restaurant, which overlooks Shem Creek, serves up shrimp, oysters, crab, fish, you name it. If you head out even farther on Highway 17 from Mount Pleasant, you’ll find Seewee Restaurant—a converted general store with a tin roof that has the best fried shrimp, hands down. If you require more refined dining, try McCrady’s where the James Beard Award-winning executive chef, Sean Brock, specializes in creative Southern

cuisine using fresh, local ingredients. Our first President liked it well enough. Washington himself dined in the Long Room there. Yes, y’all, Charleston goes way back. High Cotton is great for steaks, and Poogan’s Porch has the best grits in town. Don’t forget to shop at the Charleston City Market downtown. Any day of the week, start at Market Hall facing Meeting Street, which features vendors inside, and then make your way down Market Street toward the four blocks of open-air buildings filled with local wares. This shopping strip is a Charleston tradition and best of all, it’s open 365 days a year, from early morning to around dusk. If you’re in the mood for a little nightlife fun after all of that shopping and eating, head to The Pour House on Maybank Highway—a very cool little spot for live music. No matter what you’re doing, in Charleston, you’ll always feel welcomed, enveloped in that distinctive ambiance of the Old South. This historic town is unmatched in its character and charm, and best of all, she’s not following any other city’s lead. This one’s all original.

The Mile-High City For the final destination of this Town & Country feature, we couldn’t do better than a city that marries big-city life and outdoor adventure. Perched a mile above sea level (you’re officially 5,280 feet up on the state capitol’s 15th step), Denver, Colorado, is both the gateway to the Rockies and a booming metropolis. Even the most ardent woodsman or woodswoman would be hard-pressed not to find something enjoyable here—from the spectacular views to the numerous outdoor activities just waiting to be tackled. Meanwhile, city folks can relish the art and culture of this dynamic capital. If you’re itching to get out to those mountains just outside the city’s limits, coordinate a trip through Denver Adventures. Pick your poison—the crew offers skiing, mountain biking, rock climbing, rafting, hiking and even snowshoeing. In fact, several fascinating attractions await in the Denver neighborhood of Golden, where Denver Adventures is based. Discover how they tap the Rockies at the MillerCoors plant there, travel back in time via the Buffalo Bill Museum and catch a concert at the magnificent Red Rocks Amphitheatre a little farther out in Morrison. Back closer to town, you’ll want to spend some time shopping. You might have heard of Larimer

Square and for good reason. This historic area is packed with top-end designer stores as well as other smaller, picturesque shops. If you have kids in tow or waiting for you back home, be sure to check out Wizard’s Chest on Fillmore Street. It’s 8,000 square feet of toys and games, and a magical stop for young ones and the young at heart. Also, make time to pop into Tattered Cover, a favorite bookstore (they still exist!) on 16th Street. Finally, you’ll need a Western shirt to remember your Denver visit by, so stop by Rockmount Ranch Wear on Wazee Street. Rockmount shirts are a favorite of celebrities, including Leno, Springsteen and Slash. Another way to remember the city is by purchasing a piece of art for your wall, and the dozens of galleries in the Art District on Santa Fe will help with your selection. The district is located around Santa Fe Drive and Kalamath Street, between Alameda and 12th avenues. With 300 days of sunshine per year, Denver is the ideal place for outdoor dining, and the Buckhorn Exchange—the city’s original steakhouse—on Osage Street boasts a rooftop patio with spectacular views. If, inspired by the adventurous spirit of Denver, you’re looking for a bolder food choice, head to the very famous, award-winning restaurant The Fort for a buffalo steak. The adobe-style building alone is worth the price of dinner. Sporty yet stylish, artsy and active—Denver just goes to show that town and country can happily coexist. There’s a balance. Apparently, you just have to go a mile up to find it.

alk through the front doors of The Salon Professional Academy in The Villages and the enthusiasm is immediately palpable. A group of stylish young students work busily at the chair stations. Others eagerly chat with their teacher in the Basics classroom, surrounded by mannequins with perfectly coiffed hair. The school is abuzz with creativity and excitement, and it’s contagious. “This has been a lifelong dream,” says Cory Lindley, who is at the very end of the academy’s nine-month course. “I always knew I wanted to go into cosmetology, from the time I was three years old when I cut my own hair off. I moved here from North Carolina just to go to this school.” “When I came up here and toured the school, I felt like I was at home,” adds student Erica Gonzalez. “I felt like I was back in New York in my

aunt’s salon. There’s a wonderful vibe. You feel like you’re stepping into a whole new world.” The Salon Professional Academy may be a thrilling place for students, but make no mistake—this Redken Fifth Avenue-endorsed academy is first and foremost a cosmetology school and one of the best in the country. The coursework is rigorous, with students in class for 35 hours per week for a total of 1,200 clock hours of instruction in nine months. They spend their first five weeks with educator Janice Case, a 30year veteran of the industry, learning the basics of hair cutting and styling on mannequins. Then it’s on to the student service floor, where they apply what they learned in the Basics classroom on actual clients. “The academics here are very structured and very good for teaching and learning,” Janice

explains. “The students know exactly what they’re going to be doing each day, and the education level just grows. In nine months, they are salon-ready.” Currently, the school has 120 students. Every five weeks, it welcomes between 20 and 25 more. Earlier this year, the academy achieved a major milestone when it was approved as a Title IV school, which means its students can apply for federal student loan money and grants. The nationally accredited school is also licensed by the Florida Department of Independent Education. The instructors and students make excellent use of the facility’s 10,000 square feet, complete with five classrooms, 50 styling stations, eight pedicure and manicure stations, a color bar and a sound-proof aesthetic room. When they graduate, students are well-rounded and wellprepared to enter the cosmetology industry. “The educators teach us the utmost professionalism,” says Cory. “We are expected to be here 15 minutes before our time, in dress code, makeup and hair. That’s what you need to have when you go out into the real world. They do not accept mediocrity here. You have to really push yourself.”

Students are expected to master The Power Wheel, the five elements of a successful client/stylist relationship—the greeting, the consultation, the workshop, the close and the follow-up. In fact, business acumen is a crucial aspect to the educational experience here. “Students develop their business skills,” says Joseph Guinto, academic superintendent. “They learn how to gain referrals and repeat customers, how to recommend and offer services and retail products that benefit their clients. If, in addition to business instruction and professional training, one of the most important qualities to ensure success in cosmetology is enthusiasm, the future looks bright for the students at The Salon Professional Academy. They have it in spades. “They are passionate to join this industry,” agrees Owner Janet West. “We have many who are secondary career students, and they are as excited about this industry as someone who’s fresh out of high school. Being around this energy all day is very exciting.” If you or someone you know is interested in the beauty and fashion industry, call (352) 753-5511 and book your tour of the academy today!

The Big Apple Just because you’re not in The Big Apple this month doesn’t mean you can’t enjoy a big apple. OCALA’S CHOCOLATE & CONFECTIONS’ new Holiday Apple is a slice of candy heaven. The extra-large Granny Smith apples, which owner Keith Terrelonge buys directly from a company in Miami, are decorated with caramel, nuts, red and green sprinkles, or white, milk or dark chocolate, depending on the customer’s preferences. Each apple, which is equivalent to three regular-sized apples, contains 12 or more slices. “It’s my special creation,” says Terrelonge. “I used to make these in Miami and they were very popular. I haven’t seen anything like them in Ocala.” If the Holiday Apple is kept covered and refrigerated, Terrelonge says they can last a week or longer. Plus, he adds, they make for a lovely centerpiece until they’re sliced and divvied out. To place an order, contact the downtown shop at (352) 789-6882.

Dishing Up Delicious When Dish Fine Grocer and Eats opened late last year, patrons quickly made it their go-to source for fresh, all-natural, local food items. Partners Greg Mullen and Mary Gary believed their idea for a Europeanstyle market in Ocala would be wellreceived. They were right on the money. Customers have made Dish a favorite spot not only for its remarkable variety in organic meat, product and pantry items, but also for the delicious and everchanging array of prepared dishes. Cozy, comfortable seating makes it easy to pull up a chair and relax as you enjoy one of the signature crab cakes, a hearty serving of decadent four-cheese macaroni and cheese or a tasty helping of one of the many sides and salads. “Our menu is consistently changing, depending on what’s available,” says Chef Mullen, who handles the majority of the cooking duties. “There’s no fixed menu, but our customers have learned to love it because there’s always something fresh and different.” Dish relies on an extensive group of trusted farmers and purveyors when it comes to offering healthful products that are all natural and organic whenever possible. Kobe beef, known for it leanness and rich flavor, is always on hand, but more exotic fare is also available. “We’ve had people ask for elk, ostrich and whatever they’re looking for, we can get because we’re a custom provisioning house,” notes Mullen. “If someone wants antelope from West Texas, we can get it for them.” That “make it happen” attitude applies to other items as well. The shelves are well-stocked with fresh produce and grocery supplies that make it easy to whip up a meal. “We have all the pantry essentials; our pantry is your pantry,” says Mullen. “Many of our customers don’t realize that even if they

don’t see what they want on the shelves, we may have it in the back, so just ask.” And by the way, Dish is definitely the place to wrap up your Christmas shopping for the foodies on your list. The wine selection is top quality, targets every budget and includes unusual vintages produced in small lots. For the man interested in outdoor cooking, check out the specialty woods as well as the highly popular Big Green Egg ceramic smoker and grill. Of course, if you’re uncertain, a gift certificate always solves the problem. Dish usually features at least one special event per week and hosts cooking classes in its expansive demonstration kitchen, so call to see what’s on the schedule. And don’t forget to plan ahead and order your custom Christmas dinner package. You can be certain that whatever you choose, the resulting meal will be as flavorful, fresh and local as it comes.

Glass dividers in the dining room depict Asian scenes, and typical porcelain and Tang tri-colored pottery are displayed on shelves. sour flavors certainly whet the appetite. The kitchen specializes in Japanese cuisine, including a variety of fine sashimi, nigiri, rolls and salads; seafood with an emphasis on snow crab legs, shrimp, oysters, mussels, scallops, crawfish and fish that is cooked healthfully by steaming or grilling; and Western cuisine as well, like the delicious steaks prepared with Chinese and Japanese sauces. All of the food at China Lee is prepared with the customer’s health in mind, with homemade sauces, little oil or salt and no added MSG. The buffet’s items are also changed regularly to keep the customers’ interest. Lee is eager to hear opinions and suggestions, and updates the bar accordingly. “The owner should pay attention to every detail in the restaurant, no matter how small or large,” says Lee, who is also determined to provide his customers with only top-quality service. Every customer who walks through China Lee’s doors gets VIP treatment according to Lee. “Only the highest level of service should be expected,” he says. “The customer is always right and their happiness is the highest priority for my entire staff.” As for the future, Lee plans to continue making improvements to his current restaurants, including the recent addition of alcoholic beverages to the China Lee Buffet menu. He also plans to expand the menu to offer more delicacies to reach a broader range of customers. “I am happy because I am bringing great food to local people,” he says with a smile. “I created an ideal place for them to enjoy Asian and Western cuisine with their friends and families.”

If the menu at Daisy Mae’s Café reminds patrons of The Big Apple, owners Bill and Rose Collins will take that as a compliment. There’s a definite “New York slant” to many of the items, including heroes such as The Legend (an Italian hero), the house Antipasto salad and a large hot dog—make that “dawg”—menu featuring Pizza Dogs, Pigs in a Blanket, Chili & Cheese Dogs and numerous others. “We have specialty sandwiches that are unique to Ocala,” says Bill Collins, a vintage car buff who has restored many of the classic autos displayed in the café's photos. Named for one of the family dogs, Daisy Mae’s is located in Frontier Plaza on the corner of Pine Street and S.R. 200, directly across from the BP gas station. Open since January 2010, the café serves lunch Monday–Friday. Eat in or take out. Delivery is also available within a three-mile radius. 240 SW 10th St., Ocala / (352) 622-5187

In addition to the snow play area where you can compete in a snowball competition, make snow angels and build a snowman, kids and adults alike can try their hand at “winterized” carnival-style games like the Frosty Ring Toss and Elf Bowling. There’s also a kiddie snow tube run. Ticket prices and hours vary. Right next door is the ICE! attraction at the Gaylord Palms (pictured above). Christmas scenes, including carolers, gingerbread houses and sleigh rides, all made of ice, come to life in this exhibit. This year, the 18,000-square-foot display will feature a tribute to Twas the Night Before Christmas as well as two 30-foot slides. It takes roughly 30–45 minutes to meander through the exhibit and it’s kept at a frigid 9 degrees, so dress appropriately. Yes, parkas are provided (including child sizes), but long pants and closed-toe shoes are required. Also, don’t forget the mittens and hats! Check out gaylordhotels.com and click on Gaylord Palms for details and to purchase tickets. (407) 586-4423

Their most popular song to date, “Christmas Eve/Sarajevo 12/24” sent their premier holiday album, Christmas Eve and Other Stories, to double-platinum status. An excess of 7 million records sold, Trans-Siberian Orchestra can only be fully appreciated live in concert. The $20 million-plus production has played to more than 7 million fans in countless cities, and now it’s your turn. Trans-Siberian’s Winter Tour 2010 will make a stop at the Amway Arena for one day only, Dec. 12. Show times are 3pm and 7:30pm. Visit ticketmaster.com or trans-siberian.com for ticket prices and details.

Young Gun The public first met him on Nashville Star, and now Ocalans can see CHRIS YOUNG up close and personal during his Dec. 16th Dec concert at Urban Cowboy. The 16 25-year-old country crooner, who’s best known for his numberone hits “Gettin’ You Home (The Black Dress Song)” and “The Man I Want to Be,” is a fast-rising star on the music scene, so this is one concert you won’t want to miss. ocalaentertainmentcomplex.com or (352) 433-2232

FACEBOOKFANS

A Facebook Questionnaire Ocala Style recently asked its 1,700+ Facebook fans about their favorite desserts, where to visit out of state and their best memories of Ocala’s old drive-in theater. Here’s what they had to say:

BONNIE HARKER TRIPI My first would have to be Tennessee for two reasons—my daughter and granddaughter live there and because of its beautiful scenery with all the mountains. I just feel like I’m in a different world when I go there. Second choice is New York City. I have only been once, but I am aching to go back again someday. There’s just something so mysterious and exciting about the city. REBECCA HUTTON WEBBER Denver. It’s so beautiful there. You can look in any direction and it’s just breathtaking.

and LA because I lived there and go back now usually to do music projects. Best weather is definitely in California. SHERRIE CEBERT New York City for Campagnola’s restaurant! MICHELE ROSENSTEIN-FAULCONER New York for the art museums and of course, the shopping and food! OLYMPIA RUSSO New York City! Let’s see—Broadway, Central Park (John Lennon memorial there), Fire Island, Jones Beach, The Hamptons, tunnels under the Hudson River, the Statue Of Liberty, Empire State Building, The Bronx, the many entertainers from there. It is the best city in the world.

SARAH SETTY-COLLIER Jekyll Island, GA. When you get on the island it’s as if you’ve stepped back in time. You can ride Schwinns around everywhere. You can camp, fish, nature-watch, swim, eat really good seafood and just have an all around relaxing time.

TONY MARCHESSEAULT Boulder, Colorado! The mountains!

KELLY LYNN New York because I was born there and there’s always something to do

JEROMY TAYLOR Danville, Illinois. It’s all about the family.

JENNIFER SPECK I remember being very young, going to the drive-in, in my nana’s VW green van to see ET! I remember hiding out in the back of the van because the movie scared me! KIM WITT PEAVY Went there when my sister, nephew and [brother-in-law] were visiting. We took our lawn chairs and let our kids experience the outdoor movie. It was a wonderful night.

What’s your favorite out-of-state city to visit? MICHAEL BUMBACH Definitely Chicago! Culture, museums, food and just plain nice people.

What’s your favorite memory of Ocala’s drive-in theater?

LAURA STRAWN Gotta stick with Pigeon Forge and Gatlinburg, Tennessee. Something about The Apple Barn & The Old Mill restaurant in Pigeon Forge.

SUE MORRIS SKIPPY DOFF We begged Mom and Dad to take us to see A Hard Day’s Night because we were Beatle-freaks. They made us sit in folding chairs outside the car because we were screaming! “John! Paul! Ringo!” Sometimes “George” but he was the lonely Beatle. DAPHNE PRICE My first James Bond movie— Moonraker—in the family station wagon. My brother and I laid on the roof in sleeping bags and watched the movie! It was great! ALICHA HUGHES-YANKEE When I was about 5 my mom took me and my siblings to see a double feature of Bedknobs and Broomsticks and Robin Hood. We had popcorn and blankets and all cuddled together in the huge front seat of the old Catalina and watched the movies while we tried not to be eaten alive by those dive-bombing mosquitoes. It was wonderful! KELLY MORNINGSTAR-WILSON The whole family—aunts, uncles and cousins, too—going to the drive-in for a treat. Kids wearing pj’s and the younger ones falling asleep in the back window of the big cars or in the back of the station wagons.

What’s your favorite dessert? MICHELE HIRSH Chocolate cake. Or anything with chocolate. That’s my weakness. STEPHANIE TEBBY MEDLEY Strawberry shortcake with lots of strawberries and whip cream! SUSAN BLUMBERG LANDE Cheesecake Factory’s Godiva Chocolate Cheesecake or Pasta Faire’s Chocolate Tower Cake NYLEENE ALBERS LAND Pecan pie—it always reminds me of my mother. She used to bake 10–12 of them at Thanksgiving and give them to all of us. Now I bake them and usually give them away! SHELLEY MCCARTHY Peanut butter cookies with the chocolate kiss on top! Mmmmm SAMANTHA KIRST Definitely pumpkin pie! MICHELLE OHMAN Tiramisu is always at the very top of the list. Also, Tres Leches and Créme Brulee. Apparently, it is all about the fancy desserts from other countries for me! Yumm-O! JEANNE MCKENNA DEMBENSKI Pina colada cake, the very best JASON DEAFENBAUGH Tres Leches, Emeril’s banana cream pie MILLIANN JOHNSON A real good chocolate chip and ice-cold glass of milk. Simply good!

Do You Know An Outstanding Local? Ocala Style is looking for people of excellence! We want to hear about the most accomplished, innovative person you know for an upcoming feature article on notable locals.
