HELLO From Us
FAMILY MATTERS Just as it takes a village to raise a child, it takes a motivated team to create the magazine you have before you. While every issue is a collection of our favorite stories around St. Augustine, we're always bound to have a favorite!
-Heather Vreeland Editorial Director

I love celebrating teachers! As the daughter of a kindgergarten teacher I've definitely taken part in my fair share of "behind the scenes" classroom experiences. From early summer mornings spent hanging number lines on bulletein boards (with Dairy Queen as payment for my efforts) to a few late Friday nights spent setting up for the next week's themed unit – it's safe to say my mom taught me what it means to be a thoughtful, hard-worker in the classroom. In this issue you'll meet some of the best teachers in our small town – just in time for this new school year!

If you know me this is old news, but if you don’t… my dog, Billy, is perfect! No, really. He's great. I am so excited about the pet section, everything from where to shop for your pet to local business "Doggie Piles Be Gone" (I wonder if he will walk with me around the neighborhood and help a sister out?). Pets are such big parts of our families and with this being our Family issue, it seemed fitting. Side note, you can also be sure to check out Billy’s adventures through #whataboutbilly on Instagram. I promise you will see lots of breathtakingly cute snaps!

My favorite part of this issue is hands down the fact that it's the August/September issue. More specifically the word September, which means summer is drawing to an end. Two things happened to me this summer. First, I realized temperatures above 85 degrees are no longer my friend. Second, I believe I finally acquired my "old man strength." It's more of a stateof-mind than anything, and only parents or teachers (see page 66) are able to use it. We've also added an interactive section on page 94 for locals to share their foodie photos. Simply tag your best food or drink photos with #stagusocial and we'll feature our favorites in each magazine. Thanks St. Augustine!

The family issue really gave me a chance to reflect on how thankful I am to be back in St. Augustine with my family! My girlfriend Kim is new to the area so I am really getting to appreciate the beauty of our amazing town for all it's worth. With our two kids, Cameron and Caine (shameless name drop) in Hartley Elementary, the whole experience has a been a whirlwind of educational fun. The teachers who came into the office for the photoshoot really brought to mind the full spectrum of educational experiences we have both in and out of school.

A day in the life of Andy Calvert, local librarian and epic story teller, is my favorite feature in this issue. I first found Andy at the St. Johns County Main Library when I brought our son Asher to toddler storytime. Andy starts each session by transfixing the tiny-humans with his bass violin and creative songs. He encourages them to jump and dance to get all the wiggles out and it's just the cutest thing you've ever seen. Andy is a great example of someone using their passion for good. In fact, this issue is packed full of peole who have "never worked a day in their life" because they truly love what they do.

For the Year
ABOUT THE COVER Just three days after we envisioned the cover shot, Adelaide Pacetti excitedly posed in front of our chalkboard wall!
O
ur St. Augustine community is lucky to have a range of different schooling options to consider when finding the perfect fit. From a top-knotch public school system, to independent religious and teaching-method schools, options are seemingly endless. While the schools are vastly different in their classroom environments, two things remain the same: a great education and even better teachers! Rather than choose a favorite teacher to put on the cover (because really, who could choose?), we reached out to the Pacetti family to see if their beautiful daughter Adelaide could bring our cover photograph vision to life. Adelaide held steady while she balanced three heavy books and one shiny perfect apple! (In case you were wondering, our editorial director, Heather, spent quite a bit of time in the produce aisle at Publix looking for a flawless red gala... all for the sake of getting the shot!) The picture perfect image was captured by Rob Futrell just in time for print.

The Balefire Brasserie on Anastasia Boulevard is the perfect setting; intimate with a menu that reads like food you wish you knew how to cook. There’s only one more choice to make for the night (besides which bottle of wine to order). The answer is easy; you ask for the Grilled Beef Tenderloin medium-rare.

“It’s like riding a bike,” they say. “You can hop right back on and it’ll all come back to you.” But riding a bike isn’t always the easiest thing to learn in the first place (or teach for that matter!). When it comes time for the training wheels to finally be abandoned, it can take a while for the little ones to be comfortable without mom or dad’s hand guiding them. Enter the Balance Belt.

MAKE EVERYONE WEIRD
St. Augustine oddities institution wants to help students embrace differences. By Matthew Shaw
I
n the early 2000s, the slogan, “Keep Austin Weird,” began popping up on t-shirts and bumper stickers in the notably hip and artistically vibrant Texas city. By reframing a formerly disparaging word, “weird,” the mantra poignantly and playfully advocates for commitment to diversity and acceptance for all. While our neighbors to the north in Jacksonville have reworked the phrase to read, “Make Jax Weird,” St. Augustine’s Ripley’s Believe It or Not has come up with its own way of conveying a similar message. Through a curriculum called “Odd Is In,” Ripley’s hopes to encourage young people to celebrate what makes us all different. Designed primarily for elementary and middle school children, the curriculum combines lessons about bullying and DNA science with introductions to some of the Museum’s most famous historical figures,
Kim says the curriculum has been well received and hopes to introduce it to more students when school starts back up in the fall. “Most kids want to help. They want to accept each other. I think this gives them good tools to help them do that.” 19 San Marco Avenue www.ripleys.com
Heartbreak led Lee Ann Kendall to start “sunrising” on the beach every day. On July 30th she took her 1,000th consecutive sunrise photo walk. This daily peaceful connection to nature led to soul-healing and an unexpected new venture. Transformed, renewed and inspired, Kendall shared her photos on social media and made connections with people from all over the world. Now she sells prints of the specific sunrise of special days, like children's birthdays, wedding days and anniversaries. Find your sunrise at High Tide Gallery or online, www.sunnystaugustine.com

like the 8’11” Robert Wadlow and Ching Shoo who was born with a blue face. Kim Kiff, General Manager at Ripley’s, says the idea for the curriculum originated from a paper written by her eight-year old son. “The paper was about bullying and it made us think about Ripley’s and what some of the people featured [at the museum] must have gone through,” Kim says. Ripley’s founder, Robert Ripley, famously banned the word “freak” from anything associated with his work.

LOCAL WRITERS BAND TOGETHER
BUSINESS NEWS THIS MONTH
Local author Nancy Quackenbush founded the League of Extraordinary Authors to inspire, encourage and support the talented literary community of St. Augustine.
Nancy (left) and Christina (right) met at a writer's conference and after realizing they share so many similarities, they immediately connected.
Photography by Brain Miller What is the League of Extraordinary Authors? LEA is a small group of authors who are dedicated to helping one another achieve greatness through pooling resources to sharing events like book signings, conventions, school visits. We decided that instead of looking at other authors as competition, we wanted to look at each other as support. Being an author was a lonely business until I found Christina Benjamin and Jaimie Engle, two amazing authors who shared the same zest and passion for sharing literature. Tell us about the curriculum and your involvement with local schools? My books, The Rocket Ship Bed Trip, The Afternoon Moon, The Pirate Ship Bed Trip and The Children’s Horrible House, share a common educational thread through astronomy. The picture books introduce young readers to outer space and the middlegrade books, The Children’s Horrible House takes them further into the STEM (Science, Technology, Engineering, Mathematics) curriculum. They learn about astronomy, meteorology, horticulture, The Farmer’s Almanac, and how they are all dependent on one another through a really fun and engaging mystery. The Children's Horrible House has been called Goosebumps meets Diary of a Wimpy Kid. The goal for all of my books is to educate

"We decided that instead of looking at other authors as competition, we wanted to look at each other as support." children without them even knowing that they are learning about advanced subjects in a way that makes it entertaining and tangible for their amazing minds. How did this idea come about? It came about when Christina Benjamin and I won gold medals for our books. The Rocket Ship Bed Trip won the award for Best Children’s Picture Book 2014 by the Florida Authors and Publishers Association and Christina’s book, The Geneva Project: Truth, won best young adult book. We met at a local coffee shop and found out that we really liked one another and we had a lot in common in general. We were both very new to the business and both had experienced different ups and downs. We decided to share the things that worked and the things that were a waste of energy. This way we were able
to get further, faster than if we relied only on our own limited experiences. Is this group only in St. Augustine or do you work with writers and schools in other communities? Our other associate, Jaimie Engle is in Titusville, Florida and we have met many other authors since and have brought them in to help them on social media by sharing their new releases and encouraging one another when we need a boost. What advice do you have for young writers who have aspirations of being a published author? Stay focused and want success as much as you want to breathe. There is nothing easy about this business. It’s hard and can be lonely, but if you look at every achievement big and small and don’t expect too much, you can make it. At times, like most artists, you feel like giving up, but I learned that this is something I can’t just shut off. I have to be writing or creating constantly and if that ever went away, I would be devastated. So if you have it in you, get it out while it’s there!

ADOPTION IN ST. JOHNS COUNTY Catholic Charities of the Diocese of St. Augustine assists local families looking to welcome a new child into their home across St. Johns County. By Amanda LaConte The idea of adoption can be very overwhelming at first for prospective adoptive parents. There are so many questions, so many stories from others (good and bad!), and so many choices. It is difficult to know where to even start! Catholic Charities of the Diocese of St. Augustine is a licensed and accredited child placement agency and a local leader in the adoption field, located right here in St. Augustine. Catholic Charities provides several services to families looking to adopt, including general information, personal home studies, adoption, and post placement care. The agency has over 70 years of adoption experience and can provide guidance to interested families at any stage in the process. Offering both domestic and international home study service, Catholic Charities social workers are familiar with the various requirements for both types of home studies and work closely with families to ensure they are prepared for parenting and meet the legal adoption requirements at a reasonable price. All adoptions require post placement visits and reports; this service is also offered by the agency in accordance with legal requirements. Local adoptive mom Lindsey M.* used Catholic Charities of St. Augustine for her daughter’s adoption six years ago. “I have one adoptive child and one biological child. road but Catholic Charities was responsive and caring with our every concern. I loved that even while they were on our side, they were also very caring and respectful to our birth mother as well.” Catholic Charities of the Diocese of St. Augustine is ready to assist local families looking to welcome a new child into their home, or birth mothers looking for pregnancy counseling. 3940 Lewis Speedway, Suite 2103 www.ccbstaug.org *name has been changed to maintain confidentiality
St. Augustine is a city teeming with musical ability, but it doesn’t just come out of nowhere. KINGS AND POETS OF THE BENET FAMILY
Most people are duly familiar with the story of the Minorcans refugees who came to St. Augustine in 1777, but when Esteban Benet (pronounced Ben-ay) first stepped ashore in St. Augustine the other Minorcan families had an eight year head start on him.
E
steban and his brother left directly from Minorca, fleeing a stepmother they were at odds with, as legend has it. His brother stayed in Cuba and joined the navy. Esteban married another Minorcan, Catalina Hernandez, and had a son named Pedro. Pedro lived and flourished in a dramatic period of change: he was 23 years old when the United States purchased Florida from Spain. Pedro was so accomplished in his social and professional life that he was known locally as “King Benet,” and had quite the resumé. Starting as a police officer, within 16 years he was Justice of the Peace for St. Johns County. He was elected alderman from 1840-1843, served as interim mayor in 1843, and County Commissioner in 1859. He was federally appointed to the positions of Collector,
32
By Matt Armstrong Assistant Surveyor, and Surveyor of the Port of St. Augustine. In addition to his life of civil service, he owned a liquor store on St. George Street, which eventually expanded into a grocery and “provisions” store, and was Director of the St. Johns and St. Augustine Canal Company. Pedro’s youngest daughter, Ysabel, followed in her father’s footsteps in terms of influence. She often had Henry Flagler’s support, as well as funding, for local projects that enhanced the community. Pedro’s eldest son, Stephen Vincent Anastasius Benet, was the first cadet from Florida admitted to West Point, eventually attaining the rank of Brigadier General and position of Chief of Ordnance. The apple did not fall far from the tree with his son, James Walker Benet, who attended West Point and www.STAUGUSTINESOCIAL.com
worked in the Ordnance Department from 1886-1921, eventually obtaining the rank of Colonel. His three children with wife Frances Neill Rose are perhaps the best known of all the preceding Benets: Laura, William Rose, and Stephen Vincent were all accomplished writers and poets. Stephen Vincent won the Pulitzer Prize for poetry twice, among other literary accomplishments. William Rose Benet won the Pulitzer Prize for The Dust Which is God, an autobiographical poem set partly in St. Augustine (in which datil pepper sauce gets a shout out). Of course, this is only one fraction of the Benet family tree here, as many descendants still live in St. Augustine, but the story of the Ancient City would certainly be less interesting, and a lot less poetic, had Esteban Benet not stepped ashore 231 years ago.

T
he Humane Society of the United States has been “Celebrating Animals and Confronting Cruelty" since 1954. As the nation’s largest animal protection program, more than 10,000 animals are cared for each year across the U.S. Locally, the St. Augustine Humane Society strives to reinforce the longterm human-animal relationships in the community. Their main focus is to “eliminate the need for families to relinquish their pets to shelters, enabling pets to live happily and healthfully in their homes.” Several issues are addressed by our local humane society daily, including overpopulation due to unsterilized animals. While the employees work vigorously to ensure every pet is placed in a safe and loving home, they do participate in euthanasia. When the time comes for an animal to be euthanized, the HSUS staff firmly believes that every procedure ought to be performed with the same skill and compassion that one would expect to see if they brought their own suffering animal in. There are a number of ways to get involved with our local humane society. In St. Augustine, you can volunteer each week at the wellness clinic, participate in fundraisers, donate, or bring in food to the pet food drives. You can visit the St. Augustine Humane Society online or in person to get more information about either giving back or adopting a pet.
I
n September of 2008, S.A.F.E. Pet Rescue, Inc. began with one goal in mind: to save adoptable animals from euthanasia in Northeast Florida. Hundreds of healthy cats, dogs, kittens, and puppies are euthanized weekly due to overpopulation in shelters. At S.A.F.E., they focus their efforts on rescuing pets from such facilities – within their first year of operation, they saved over 500 animals. Since then, they have saved over 7,000 furry lives. There are two S.A.F.E. locations in St. Augustine Beach with animals ready to love. Apprehensive about adopting a rescue for fear of illness? Fret not. Each animal is already spayed or neutered and every cat is previously tested for feline leukemia and feline AIDS. All animals older than 12 weeks received their rabies and first distemper/upper respiratory vaccines. Any neccessary deworming has already taken place too. There are adoption fees to rescue a pet at S.A.F.E., so bring your wallet. Fees range from $50 for cats to $100 for dogs, which help cover the veterinary expenses to keep pets healthy before their adoption date. Since S.A.F.E. is run entirely by donations, the simplest to give back is through writing a check. You can also become a foster parent – after all, a house isn’t really a home without a pet. If you don’t have any room to spare, you can also lend a hand at adoption events, assist in fundraising, or sign up to by walk and play with the animals.
Whether you're helping an elderly relative surrender the pet they can no longer care for, actively looking to welcome a new furry friend of your own, or seeking medical care for the pet your currently own, the St. Augustine Humane Society is there to assist.
The only requirement when adopting one of these four-legged furballs is to provide a home full of love and compassion. All these animals want is food to eat, a warm place to sleep, and a family to protect, so if you’re looking for a pet for the kids to play with this summer, check out S.A.F.E. before you go to a local pet store.

PET FRIENDLY RESTAURANTS READ TO ROVER Eliminating the stresses of criticism or judgement, the St. Johns County Public Library provides a safe (and cuddly!) environment for children learning to read. By Emily Goldthwait
I
f you were to try and imagine the most adorable method you could think of to aid in the process of teaching a child to read, this program would be what you’d come up with. Read to Rover will melt your heart, and the best part is that it truly is helping children here in St. Augustine learn to do something very important to their every day life: read! For the past five years, the Southeast Branch of the St. Johns County Public Library has hosted Read to Rover on the second and fourth Saturday of each month. On these designated days, children in the St. Augustine area can show up to the library and practice their reading skills in a no pressure, quiet environment by reading to sweet, four-legged furry friends (not all of whom are named Rover). Generously provided by the Alliance of Therapy Dogs, kids are allowed the time and patience they need to practice their reading skills without having to worry about being embarrassed or having judgement passed on their progress. If a child isn’t at the level where they’re reading words or full sentences, the library encourages even preschool aged children to come and spend time with these therapy dogs, emphasizing that they have plenty of picture books for kids to show off to the appreciative pups. In an effort to serve the visually-impared, the library also has books with braille, so that blind students can come out
and utilize the Read to Rover program as well. Of course, all of the readers' hard work does not go without recognition. Every child receives a “frequent reader card" and the chance to win fun and motivating prizes like stickers (and even bigger prizes are available for children with more visits under their belts!). Participants can even get a free t-shirt, and who doesn’t love those? Not only does this program give local kids the option to enhance an important skill that they will use forever, but as the director of the program Alex Phillips pointed out, it also “allows them the opportunity to become more comfortable with animals.” Is the South East branch of the library a little too far from home? You’re in luck. Because Read to Rover has been so successful, the Anastasia Island Branch of the library has also begun hosting the program, making it even more available to everyone. A genius idea that has definitely proved to help those that take part in it, this program almost makes you wish you were still learning to read!

Since there are too many pet friendly restaurants in St. Augustine to include here*, here's a short list of a few of our faves. By Matt Shaw CAFÉ ELEVEN Your post-beach jaunt choices are many on Anastasia Island. Sunset Grille and Salt Life Food Shack are good options, but we recommend letting the sun set behind you from Café Eleven’s dog-friendly front stoop where the options range from high quality tea and coffee drinks to beer and wine, which is halfprice during happy hour (3-7pm everyday). 501 A1A Beach Boulevard MOJO OLD CITY BBQ Pair some of the best tasting (and smelling) brisket with a roomy outdoor patio and you’ve got an ideal setting for a dogdate. (Tip: the brisket ends are great to share with your pup if his or her diet allows). 5 Cordova Street BEACHES AT VILANO Again, nothing beats the beach, except the beach and a cocktail with man's best friend close by. Overlooking the Tolomoto River, Beaches is the perfect spot to kickback after some fun in the sun. 254 Vilano Road *For a complete and updated list of dog friendly eateries in St. Augustine checkout the Facebook group "Dog Friendly St. Augustine."

K9S FOR WARRIORS In a society that often forgets about military men and women once they return home from war, K9s for Warriors is fighting for their healing, independence, and dignity. By Molly Wilson
K
9s for Warriors is a local non-profit organization that first rescues dogs then provides them as companions for military men and women battling PTSD, disabilities, and the hardships of returning to civilian life – all at aboslutely no cost to the veteran. K9s for Warriors trains both the service dogs and their soldiers for life with their companion. A three week program in which the warriors stay at the organization’s facilities teaches the new owner how to finish up the training of their service dog, provides veterinary care, equipment, and food, and offers a chance to bond with their new dog. Before they even meet their soldier, the dogs have been trained by the organization’s professionals as well as socialized by foster families in the community. By the time they run into their new owner’s arms, the dogs are fully prepared to love, care, and assist in healing.
pets of St. Augustine
Ninety-five percent of the canines trained by K9s for Warriors have been rescued from local shelters. Through this program, both dogs and soldiers are “getting a new leash on life.” All operation costs and programs are funded by donations from the local community and local corporate sponsors, but writing a check isn’t the only way to help out. Before they reach their warriors, the rescues are raised by individual families to get them used to a home environment, socialize them, and assist in their service training. These families commit to raise the puppies from the age of eight weeks to around twelve months before they meet their veteran. Foster families commit a shorter period of time – up to around 4 months – for dogs that need either medical assistance or more socialization training. 114 Camp K9 Road, Ponte Vedra www.k9sforwarriors.org

WHERE TO GET A PET Pets are a wonderful addition to any family, but choosing a pet is a big decision. Each family’s needs are different, so peruse these local options and find your perfect companion. By Molly Wilson

ANCIENT CITY BULLIES
WAGS & WHISKERS PET RESCUE
Sometimes you just want a puppy that will spark an “Aww” in everyone you meet. A bulldog is just the breed you need.
Give yourself a new family member and give a pet a new lease on life. Nothing feels better than giving a deserving pet a place to live.
Trust us, we know that wrinkles and squished faces are hard to beat. And we’re not alone – Susan and Joel Langdon of Ancient City Bullies are passionate about their wrinkly, furry friends. Their family’s first bulldog filled them with so much joy that they wanted to spread the love around.
There are far too many pets without loving homes, far too many pets populating shelters, so sometimes the best option is to give a dog or cat a second chance with your family. Cue Wags & Whiskers.
Being bred for protection doesn’t mean they’re all business. These tough dogs will win your heart. Don’t let such an official name intimidate you – the International Canine Narcotics Detection Foundation has been providing wonderful German Shepherds to the loving families of St. Augustine since 1986. Their abundance of experience means that each puppy in each litter is of optimum quality and comes home welltrained. The family of dogs from which the puppies are bred were carefully selected for their temperament, sociability, physical soundness, and working ability. The family of fourteen beautiful German Shepherds live with the breeders and are well adapted to children.
After learning about the breed and how to best care for them, the Langdons became top quality bulldogs breeders, breeding from healthy and solid bloodlines (including a direct line from the UGA mascot, football fans!). Each of their bulldogs is AKC certified and health is their first priority.
Wags & Whiskers is a non-profit, no-kill pet rescue made up of eager volunteers taking in pets in need. It is not a shelter – the workers offer foster homes until the pets are adopted. Many of the pets come to the organization sick or handicapped, but that won’t stop the love. They are given veterinary care and put up for adoption.
To ensure that you are getting the best of the best, the pricing of each puppy includes obedience training, a microchip, training collar and leash, health certificate, puppy vaccinations, and a 2-year warranty. There’s no better way to guarantee that you get a well-behaved, family-friendly guard dog.
After you take your new baby home, Susan and Joel are fully available for any questions you might have. The breeders’ extensive knowledge and strict care means that these happy, healthy puppies are utterly precious and a perfect addition to your family.
Right now, Wags & Whiskers has over 60 cats or kittens and 40 dogs or puppies looking for their forever home. For those who want to be a savior for the unadoptable and a blessing to the forlorn, look no further. Your new pet is waiting for you.

Style BALANCING ACT By Molly Wilson “It’s like riding a bike,” they say. Brainchild of St. Augustine local, Travis Smuckler, the Balance Belt is a device designed to steady your child and alleviate their fears of falling while learning to ride. The sturdy fabric belt goes around your child’s waist while you hold either end (say au revoir to back pain from bending over!), keeping them upright when they first begin to ride and over time, loosening the hold. It prevents the little one from falling over, so fear doesn’t get in the way of their learning. They’ll be balancing the bicycle themselves, so soon enough they won’t need to rely on the belt and will be able to speed off on their own. Since its launch earlier this year, moms and dads all over have been singing its praises. The Balance Belt is the easy way to get your kiddos riding in no time! The Balance Belt will allow your kids to learn to ride a bike quickly and without the fear-inducing falls. It doesn’t take much to save their scraped knees and your backaches, just this handy little invention.

Mid-Century Minimalism Transformed from the worst house on the block to the most stylish, this Davis Shores dwelling packs a major minimalist punch. By Sarah McCartan | Photography by Ed Taylor

ast summer, when Andrew Deming and Rachel Gant set out in search of a house to call home, it was a humble 1950s house tucked away in the winding streets of Davis Shores that caught their attention, and sparked their vision. As designers, these co-founders of St. Augustine-based independent design house, YIELD, saw well beyond the cosmetic renovations needed. They simply let themselves fall for the elements — the vaulted ceilings, the native trees and shrubbery, and the strong bones of this concrete house. “This house had the most potential even though it was in the worst shape,” said Rachel. “And this house kind of opened up this neighborhood to our budget.” Together, they turned this shell into their own interpretation of a “minimal, bright space with accents of warmth and greenery.” The fact that the time period of the house aligns with their design-style meant appreciating the character of the house and building upon what was already in place
came naturally. “You can dream anything up, but I think it’s important to consider what exists already, and work with that in some ways,” said Andrew. Although they moved in just two weeks after closing, they had to do some serious legwork to make the house liveable. After wearing a hazmat suit and removing asbestos tile, they refinished the concrete floors buried underneath to leave raw for both functionality and a cool, clean look. By knocking down a single wall, they were able to open up the kitchen and redefine it as illuminated and open, rather than small and dim. While the interior walls were given a clean coat of white paint, they made the bold move to give the exterior of the home an unconventional refresh by painting it black. “Black is beautiful with greenery — it makes the green pop — and since we had so much greenery around, we thought it would be a nice combination,” said Rachel. Since settling into the space, they’ve turned what was once a Florida room used as a storage and workspace into what they feel aesthetically is the most pleasing room in their home — the dining room. blend of pieces made in house and vintage mid-century thrifted finds collected by the pair over time.
“Our favorite room visually is the dining area because of the windows and all the green,” said Andrew. Leading into this room is open shelving, where interior windows once stood — an example of working with an existing element of the home, and finding a new way to appreciate it and give it a new purpose.
Since housewares and furniture are a focus of what YIELD designs and makes at their manufacturing headquarters, (formerly San Francisco, now based here in St. Augustine), it only makes sense their collection would find a home within their own dwelling space.
Though aesthetically the dining room might be hard to beat, Andrew and Rachel spend the majority of their time in the open kitchen and living area. “Since the spaces are mostly connected, we find ourselves relaxing on the couch with our dog Clover or making meals in the evening,” they said. Made In House As for furnishings, the house represents a

“It’s nice to be able to make something and then immediately have a place for it here, to try it out,” said Andrew. “We wanted our home to be a place to gain inspiration for types of products we can make and see them in place.” The house isn’t just a place for the products to live and be tested. Their experiences at home helps drive ideas for new products. “The house has really inspired a lot of our

new products,” said Rachel. Needs are discovered through daily living — a simple example, making the decision to powder coat their planters to make them suitable to weather the Florida outdoors. “The outdoor planters are a situation where I don’t know if we would have thought of them if we didn’t have the house,” said Andrew. Making Minimalism Feel Warm Thoughtfulness and good clean design can be found in every corner of Andrew and Rachel’s home. The warmth comes from both the intentional use of greenery in the form of plants, and the feeling of liveability — the lack of excess, the richness of purpose of everything seen in its place. Andrew and Rachel’s home, just like their products, was created to be enjoyed and lived in, and that’s just what the two are doing. Thanks to a newly completed back patio area, throughout the summer months, and even more so as the weather cools, you can expect to find Andrew and Rachel taking advantage of this extended living area.

RUSTY HALL According to Benjamin Franklin, there is only certainty in this world when it comes to death and taxes. Needless to say, Rusty Hall has ample job security as Funeral Director of Craig Funeral Home. By Kara Pound | Photography by Brian Miller Growing up on Granada Street, across the street from the funeral home’s original locale, Rusty worked for the Craig family doing odd jobs like washing cars and pulling weeds for extra spending money. Little did he know it would eventually turn into a full-fledged career. “When I was a senior in high school, Mr. Gus Craig sat me down and asked what I was going to do after graduation,” says Rusty. “I had no quick answer and he offered to send me to school to become a funeral director.” After graduating from Gupton-Jones College of Funeral Service in Atlanta, Hall moved back to St. Augustine to return to work at Craig Funeral Home. That was nearly 34 years ago. “There are two things I like most about my job,” says Rusty. “Foremost is the sense of helping someone in what has to be their darkest hour, guiding them through the process of caring for our dead and celebrating that person’s life. The second would have to be the people I work with. We are like one big family.” 1475 Old Dixie Highway www.craigfuneralhome.com

CONNOR EVANS For some, this August marks the beginning of another high school football season – and with it that undeniable sense of community that comes with every kickoff. For Connor Evans, former St. Augustine High School middle linebacker, it's the start of a brand new chapter just a few hours from his St. Augustine home. alancing work and play can be difficult for even the most diligent person. Add to that mix the daily pressures of being a teenager and suddenly that balance begins to teeter. However, for eighteen-year-old Connor Evans, perseverance and a commitment to excellence help keep the scales in check. Evans, a recent graduate and former star football player at St. Augustine High School, shined brightly on and off the field. The middle linebacker, now on his way to bring his talents to the collegiate level, shares his thoughts on his journey to the next exciting stage of his life.
and long hours of grueling practice in the sweltering Florida sun. However, where some faltered, Connor thrived.
“I began playing football when I was about eight-years-old,” says Connor, “I loved the game right away, but I also played baseball. It wasn’t until my freshman year that I really started to focus on football and weightlifting.” And focus is exactly what Connor did.
Racking up ninety-seven tackles and three interceptions, his senior year served to only solidify Connor’s proof that hard work and focus yields great results. Connor's magnificent feats were just as prevalent under the fluorescent lighting of the classroom as they were under the bright lights of Brumley Stadium. “I graduated with a 3.5 GPA. During football it's a lot harder to keep up those good grades.”
Playing for the Yellow Jackets football program demanded a lot of hard work
58
Throughout his high school football career, Connor dug deeply into his reserves to excel on the field and in the classroom. His self-determination and discipline were rewarded with notable titles and awards. The most noteable decorations? First Team All-County for the last two years, First Team All-First Coast, Second Team All-Area, Team Defensive Captain, Male Athlete of the Year for St. Augustine High, Top Jacket Award, and invitations to play in the All-Star Game.
www.STAUGUSTINESOCIAL.com
Exhibiting such great attributes in football and academics garnered Connor attention from many colleges and universities. The character of this humble, easy-going young man certainly added to the interest of schools eager to have the talented player on their team. Colleges like Penn State, Dartmouth, Florida Tech, and Sacred Heart are just a few of the schools that eagerly recruited him, however, Southeastern University stood out above the rest. “I loved the nice campus, and it was awesome and it’s only two hours away from home here in St. Augustine. They offered me a full scholarship. I just knew I wanted to go there, because they really wanted me. If someone wants you, they're going to treat you better.” Southeastern has not only gained a great athlete. They have also gained a student who is respectful, courageous, welldisciplined, and kind. Southeastern has gained Connor Evans, a true All-Star.

ANDY CALVERT A stand-up bass, a pound of patience and a sprinkle of crazy all blend together as the perfect recipe for Andy Calvert to captivate the children who attend his story telling sessions at the Main Branch of the St. Johns County Library. By Meeka Anne | Photography by Rob Futrell
A
The local library is one of the most important resources that families and schools depend on in a small community. In particular, the children’s librarian must be tuned in to school curriculums, new authors on the horizon, and of course the needs of parents. It is a juggling act and requires left and right brain skills. Andy’s left-brain skills keep things organized, researches materials, and designs programs while his right-brain side dresses up, plays music, and reads stories with the flair of an actor. THE JOURNEY Andy graduated college with the idea of becoming a radio personality and started on that path at a local St. Augustine radio station. At the time radio was undergoing significant challenges and soon Andy realized that he may not survive a corporate takeover. He started to think about other options. With a baby on the way, he felt he needed stability, so he accepted a job at St. Johns River State College in the library. This ignited a passion for the field, so he pursued a Master of Library and Information Science degree. Once completed, it was time to discover what type of librarian he would become. Fate stepped in at this point as the opening came up for a children’s librarian. Andy thought, “I have children, I can do this. So I went for it, and got lucky.” THE PROGRAMS Parents depend on the library as a free and

accessible resource offering activities for their children. One of the most important aspects of the position of children’s librarian is designing a curriculum. “It’s a lot of listening to the community and making sure we are filling their needs with the budget we are given,” said Andy. He said his biggest challenge (yet, a fun one) is finding new and interesting ways to educate and entertain the children.
reading program. Last year 900 children signed up and this summer started off with a bang with 300 children signing up the first two weeks. In this program a reading log is stamped each day a child reads a book. When the child receives five stamps, he/she gets a free book and toy. Last year they gave away over 1600 books and toys. The Friends of the Library are a big help in ensuring the success of this program.
One of the most successful summer programs at the library is the summer

Sessions are available for babies, toddlers and elementary age children. Andy and his assistant Marsha start out with a stand-up bass and ukulele duo. Within seconds, the children, even the shy ones, have pulled themselves away from the grasp of their parents and are jumping up and down on the “Hungry Caterpillar” rug. “The music is the crazy part and the books are the calm down part. I’m always pushing my luck going back and forth between the two,” explained Andy. The bottom line is that the children love it, the weekly turnout is huge, and most return weekly. THE KIDS Summer is a time when many grandparents are taking over the care of their grandchildren while parents work. Storytime is a welcome
addition to their summer activities. Patty Hunt, there with her four-year-old grandson, said, “Andy is awesome with the kids and he has tons of patience,” and Tammy Grab, with her three-year-old grandson, said, “Andy has a knack for incorporating fun and education.” Lisa Compton, with her five-year-old granddaughter, said, “I think he’s awesome. I love the bass as it adds to the cultural enrichment. Her granddaughter, Kayden added, “His art projects are great and I can always do them.” Cheryl Piscopo has been a regular for a year and said, “My grandson loves the bass, the singing and the dancing.” HOME LIFE Andy has two children at home, an eight and a ten-year-old. Interestingly, his wife is also a librarian. No doubt the love of knowledge is an important element of their home life. Andy credits his mom for his love of reading.

She brought him to the library weekly and checked out stacks of books just as the children visiting his library do now. Music is another important aspect of Andy’s life. You may see him around town with his group “The Wobbly Toms” playing at places like the Colonial Quarter or up in Atlantic Beach. He enjoys getting out his bass whenever possible. DESIGNING THE PERFECT TEAM It takes a dedicated and immaginative team to pull off St. Augustine's most creative charitable event. By Molly Wilson | Photography by Brian Miller

ove Your Mother Eco Fashion Show is an eccentric, fluorescent, green affair that will again benefitting Home Again St. Johns, a local homeless charity. The event (where area designers create over-the-top outfits strictly out of trash) has a goal of $50,000 to raise each time the event is held. This is certainly no meager feat, so the faces behind the show are veritable superstars of St. Augustine fundraising. At the helm is Kristy Weeks, owner and founder of Panache Salon. Ten years ago, Kristy began the fashion show as a way to give back to the community. “As a small business owner, the community gives us so much. This was a way to not just take from, but give to St. Augustine,”says Kristy. In the realm of fundraising, however, a recycled runway is not a common platform for philanthropy. But Kristy says that she and her family have always been environmentally conscious so this was a

natural path to take. “We waste so much. This is a fun way to show what we can do with things we might just throw away.” Kristy is not alone in her efforts, however. Alongside her in this gargantuan task is a dream team of community pillars, donating time and services to bring this event together. Luis Vienrich, husband of Panache stylist Angie, assists Kristy in the overall organization of the event and Juliana Koutouzakis, who has been involved since the beginning, is the event’s creative director. Donna Guzzo, Kristy’s “woman on fire,” organizes all social media while Ari Sufalko designs all advertising graphics. Kristy’s son, Austin Weeks, works with designers to find music that suits the style of their pieces and Jay Ruditis provides creative audio and lighting. Sway DiFeo, of Volkswagen of St. Augustine, is the host of the fashion show. “It takes a village to pull this off,” says Kristy. Everyone behind the scenes of Love www.STAUGUSTINESOCIAL.com
Your Mother donates all their time and professional skills to a cause they believe in – namely, combating St. Augustine’s growing homelessness problem. The homelessness issue sparks heated emotions for many residents, but all seem to agree something has to be done. “Home Again St. Johns treats a homeless person’s entire being,” Kristy insists, “and since they’re still in their beginning phases, we all saw a need to help out.” There are still tickets available for September’s delightful and spirited event. “We just want the audience to be shocked by the fabulous creations,” says Kristy, “And we want them to appreciate all the hard work of everyone involved.” Love Your Mother Eco Fashion Show is September 24. LOCALS grocery stores, video stores and delivering pizza – Billy considers himself fortunate that he hasn’t had to work outside the music business for the last 16 years. “It’s nice to wake up and not have to worry about anything other than playing music.” His musical journey has certainly been a colorful one. He’s had the pleasure of playing and/or touring with the likes of the Four Tops, Chaka Kahn, P.O.D. and The Time. And, while he's had some memorable times on stage, Billy says his favorite musical experiences have actually come while off stage. "One time I was in a band called Skin Deep and we were in Los Angeles playing a competition called the Yamaha Music Showcase. We came in second place to some band you've never heard of. Robin Zander from Cheap Trick was one of the judges and he saw me. He runs up to me and says ‘Mate, you guys shoulda' won!’ The show stuff is cool, but it's those moments that mean the most to me." His biggest horror story? On stage at the Cotton Club in Atlanta. Billy says, "I was rockin' out on stage and there's this chasm thing between the stage and the audience. So I'm rockin' out and playin' bass and I just fall into this great big hole. I go falling back, the bass goes flying. It was bad. Bad, bad, bad. You could hear the gasp from the audience. But I got back up and my leg was hurtin' but I finished the show."

Aside from playing guitar (and bass, which is his main instrument), Billy also landed a gig with Flagler College radio while pitching an idea for the Limelight Theatre two years ago. He was being interviewed on air and someone who heard him suggested he would be perfect as on-air talent. He’s had his own jazz show WFCF 88.5 FM ever since.
It’s been said “If you love what you do, you’ll never work a day in your life.” If that’s actually true, then musician (and educator) Billy Buchanan is the busiest unemployed man in St. Augustine. Written and photographed by Steve Parr

orn and raised in Cleveland, Ohio, Billy’s musical web extends to several different musical endeavors. He’s working on his degree in music and communications, teaches music and hosts his own radio show. Oh, and add to all of that his performance schedule, which has him playing in venues from the Renaissance Hotel to the rooftop of the San Sebastian Winery, and you’ve got someone who’s in a position to have a unique perspective on the St. Augustine music scene. Billy arrived in St. Augustine in 2007, having moved here from Nashville, TN. His musical influences are varied, but he cites Prince as

the primary influence behind his picking up a guitar. “I can remember seeing the ‘Little Red Corvette’ video and saying alright, that’s what I’m doing.” Billy says. Although he talks of his grandfather and his uncle playing guitar, he says of Prince “When I saw him? It was over.” Growing up, he was raised in a home with a diverse musical playlist which included everything from Earth, Wind & Fire and Stevie Wonder to Crosby, Stills & Nash and Janis Joplin. He once counted how many non-music related jobs he’s had: 26. After having so many jobs (admittedly, none of them for very long) – which included working in www.STAUGUSTINESOCIAL.com
When asked what he’d be doing if he wasn’t able to play music full time, Billy's initial reaction is a pause followed by a heavy sigh and “Gosh, that’s a horrible thought.” He enjoys teaching music at University Christian High School in Jacksonville, and figures teaching would be his calling if he wasn’t playing music professionally. After school hours, Billy can be found playing gigs across St. Augustine and performing further north in Ponte Vedra Beach and Jacksonville. Whether you see him performing solo or with his band Free Avenue, you’ll be hard-pressed to find someone who’s more musically inclined and talented than Billy Buchanan. And, if you think about it, that’s not a bad life for the busiest unemployed guy in town. www.billybuchanan.org

What do you love about your method of teaching? In fourth grade, at meet the teacher, I walked into my new classroom with quite an attitude. I had been given the "mean" teacher, Mr. Barnwell. I had wanted Ms. Bryant. I remember letting him know this and his witty reply, "I wanted her too, but they said I was too old." He never missed a beat and it was my favorite year yet. He played volleyball with us at recess, he invested in us and really got to know us! I'm a local. Born and raised here. This county and its schools gave me the tools I needed to be successful, so I find myself back in this county that educated me, how could I not want to teach with those great minds? Teaching at Palencia feels like a second home. The teachers I work with are friends. Our kids have play dates, we support each other in times of need, we laugh together, cry together, and play together! I love that I get to teach students I worked with for after school and summer camp when I first returned home from college. I also get to teach the kids of friends. This city is all about community and teaching in the public sector allows me to give support in a small way to that community. Some of these kids will move far away, some of them will take over family businesses and some of them will open new local spots. I love the saying, "It takes a village," when referring to raising kids, I am happy to be a part of that village. What sets your classroom apart? I think what sets my room apart the most, is that it is not mine. I spend a lot of time getting the room ready at the beginning of the year. I put a lot of thought into a "theme," decor, seating, bulletins, celebrations, but that room is nothing without the kids. They have to own that space. They need to be able to run it. We develop expectations together, they tell me what they need from a teacher, we develop our boundaries. The stuff in the room becomes theirs. They are the leaders of the classroom. They are just as important, if not more important, than I am. While I am the teacher, it does not mean I am not also the student. Every year you are presented with another set of students and each student brings with them a chance for you to learn something; whether it be about you, about them or about the curriculum. My classroom is that space where we learn together. What type of impact do you hope to make on your students? A banner in my classroom reads, "Shake it off." I want my students to remember that each day is a new beginning and they shouldn't let the mistakes of yesterday hold them back. I want them to start each day with a clean slate remembering that they are capable. I want them to know that I believe in them, they are valuable and they are loved. I want them to know they matter.

What do you love about your method of teaching? I love everything about Montessori! Montessori looks at education from the perspective of human development and what is needed to become a strong, contributing member of society. Montessori education offers the best chance a child has to achieve his or her full potential – this is because this type of education works from the inside out. It is a whole organization of the child physically, mentally, emotionally, and spiritually that allows the child to become his or her very best self. Because the method is based on developmental phases, the children are grouped accordingly in classes that cover a three-four year age span. This is similar to family and social life. The primary goal of the child through age six is functional independence. So, they are given many opportunities to do things for themselves. Once they have been given a lesson, they may practice on their own as much as they like. This develops independence, selfesteem, and a growing sense of who they are and their place in the world. Children six through twelve are working towards intellectual independence. They want to know everything about the world and wonder about big questions such as, "How did the world begin?" They are given the opportunity to explore various topics through research, as well as delving deeper into geometry, mathematics, history and culture. What sets your classroom apart? I think the most noticeable thing about Montessori classrooms is that they are active and busy and simultaneously peaceful. Children are engaged with their environment. They are working to develop themselves. This creates contentment and openness to others. What type of impact do you hope to make on your students? The mission of our school is to create an environment where the spirit of the child is nurtured and where children develop knowledge, skills, and values that prepare them for life. My hope is that they will discover themselves through meaningful work. I know that I am successful when I see that they do not need me.

What do you love about your method of teaching? We chose to homeschool our children because we believe we are the most equipped to give them the best Christ-centered education possible. We aren't teaching to a test, and have the freedom to assess and address each individual learning style. The power of the question has been our focus, and we are very question-and-conversation based, loosely following the classical model of education. We school at home four days of the week, and one day we spend in a Classical Conversations Community. At home my kids are spread out in different rooms, outside, inside, in pajamas, bathing suits or clothes. My older girls are in the upper level challenge programs with Classical Conversations (CC), so they are pretty independent. Most of my time will be spent with the boys this year.At Classical Conversations everyone is in their own class from 9am-3pm, and I tutor the Challenge A class (12-14 years old). What sets your classroom apart? Reality. I wanted to say golden nuggets of knowledge and wisdom blossoming in a nurturing environment of p assion for learning and a love for God and each other... but as many honest home educators will tell you, this is not the norm but an exception. When it happens it is beautiful, but for the most part I think what sets us apart is reality. My kids don't get along with each other all the time. They are at different maturity levels, struggles and interests, which gives them opportunities to work through hard areas in relationships. They sometimes see me being really impatient, rude, angry and selfish; we discuss the things happening around the world, even the really dark things. We have conversations about ourselves and others on this blue planet, apologize to each other, and learn that the real world is not what it looks like in movies, books, Facebook or Instagram. What type of impact do you hope to make on your children?I want my kids to know God and make Him known. I want them to learn about all of the beauty and sadness this world has to offer and not to run away from either. I want them to learn in a safe place, where any question at any time is acceptable and good. I want them to embrace their faith as their own. I want them to never lose the wonder of it all. God's creativity, mystery, mercy, grace and sovereignty. If in 30 years, regardless of their position in life, my children know and love Jesus, and aren't afraid to do hard things that help others, then somehow by the grace of God I have fulfilled my calling as a homeschool mom.

What do you love about your method of teaching? My first teaching job was at a large, open-admission state college in Louisiana where I had classes with over 100 students. At Flagler College my classes have 12-25 students in them which allows me to get to know them. I learn their strengths, weaknesses, and interests which allows me to assist them when looking for an internship or their first job. Flagler College is also fairly selective when it comes to admission so I get motivated students who make my job easy! Teaching at Flagler College is a great gig in a beautiful city! What sets your classroom apart? Three words: relevancy, application, and evolution. All forms of media are present and relevant in my students' lives. Each of my classes has a direct impact on their lives. My video and audio production classes are 75% hands-on experiential learning where students apply classroom concepts to create content. My media law class covers everything from the First Amendment to how the legislative response to the Pulse nightclub murders may impact privacy rights. The media landscape is constantly changing and a challenge to keep up with which makes my job very interesting! What type of impact do you hope to make on your students? I tell students in every class "use your powers for good, not evil!" My job is teaching students to tell stories and shape them into what we call a "civic professional" which is a graduate who applies their skills to create social change. I am so proud when they use what they learned at Flagler College to make a difference in the world! They can create a powerful video message which acts as a beacon to illuminate social injustices. They have the power to inform people about a plethora of important issues on every level from local to global. I give them the chance at the end of each semester to go tell stories – to use their skills to make a difference and motivate change. I know of so many alums who are doing amazing things all over the globe! To think that I may have had a tiny influence on the direction they took after college is incredibly rewarding.

What do you love about your method of teaching? I am a product of public education and believe in the value of education. In 1991, I started the first career academy in Northeast Florida at Wolfson High School (National Academy Foundation Academy of Finance). I taught and ran that program for 18 years. In St. Johns County School District, my team supports 19 career academy programs in our high schools. A career academy provides an opportunity for a group of students to enroll in a specific set of courses associated with a designated career area. Students will be taught by teachers with expertise in the career field and excitement to engage learning. Students may earn more college credit or earn an industry certification through their enrollment as well as become more involved in local businesses. What is a day-in-the-life like for you? Every day is different for me and my team. At times, we are in schools supporting teachers, attending advisory board meetings, researching new workforce trends and needs, or collaborating with economic development, post-secondary partners and workforce development partners to ensure alignment. At other times, I serve on regional, state and national committees regarding career academy work. At other times, we are working on grant funding, setting up internships, field trips, competitions, guest speakers, etc. What sets your classroom apart? The best parts of being in a career academy are the project-based learning, field trips, mentoring, guest speakers, internships, competitions in which students can participate. What type of impact do you hope to make on your students? We would hope that students are able to make a wise choice about their future after being in a career academy. Finding out what you want to do for a career and finding out what not to do are equally informative. Over time, 30% of students nationally stay in the career area where they were enrolled in a career academy. Students from career academy programs over time have higher earnings and higher post-secondary completion rates than their non-academy peers!

What do you love about your method of teaching? I originally had no plans to teach in a private school, but God had different plans for me and led me to exactly where I am called to be in life. The goal of most teachers, myself included, is to help their students become happy, well-rounded, and productive members of their communities. Most schools have to do this without mentioning Christ. As a part of a Catholic school, I get to help students develop their faith. I have personally seen the power of prayer in the classroom. I have witnessed ten-year-olds praying for a friend's sick grandmother, asking for a blessing for those who are lonely, gazing at our Lord in Eucharistic Adoration, and giving comfort to a friend who has lost a loved one. These examples of students sharing Christ's love bring tears to my eyes and strengthen my faith in Catholic education in a profound way. Nothing can bond us with each other like faith can. I am proud to be a part of it at Cathedral Parish School. What sets your classroom apart? I strive to create a classroom that fosters independence and critical thinking. I am honest with my kids. It's not "sit down and follow the rules because I say so!" While they know I'm in charge, we make school a group effort. My students know that they create the classroom too. It's our class. I encourage creativity. I like giving student options in their learning and assessments. For example, instead of a written book review, students choose from options like making a video trailer for the book, putting on a puppet show, or making a playlist of music for the book. I also try and have students move as much as possible in class. We stand up a lot in class and most students have bands on their desks to have something to do with their feet. Music has a special place in my class. If I can still remember all of the words to every one-hit-wonder and commercial from '97, then music can help students remember too. I take a lot of catchy pop songs and make them about things like rocks, matter, and moon phases. I also have a pretty impressive classroom library - 500+ books that I'm always willing to share and talk about with students. What type of impact do you hope to make on your students? Teaching is especially difficult, in that often I don't know if I'm having a positive effect on my students. Teachers plant the seeds and do the best they can with their students in the time given. I pray that I inspire my students, not only to achieve academic success, but to be kind, hard-working, and generous people.

GRILLED BEEF TENDERLOIN By Kara Pound You know the scene all too well; the kids have been dropped off at grandma and grandpas or the babysitter just arrived at your house. You go through the entire spiel that encompasses teeth-brushing instructions and who gets what vitamin at bedtime. Date night has officially begun. Starting with an eight-ounce choice filet grilled to your personal taste, this entrée features a shitake mushroom gratin with local potatoes from Black Hog Farm in East Palatka and Blue Sky Farm in Elkton thinly sliced and layered with shallots, shitake mushrooms and herbs like thyme, rosemary and oregano. The gratin is then baked for 45 minutes. Next, the filet is topped with foie gras butter from Hudson Valley, New York and a balsamic reduction, as well as grilled asparagus. The finale, if you will, includes a collection of microgreens from the restaurant’s own on-site living garden of corn shoots, sunflower microgreens, cabbage and daikon radish. 113 Anastasia Boulevard www.thebalefirebrasserie.com

y own personal rules for meal selection when dining out are fairly straightforward: use of fresh plant-based ingredients, hearty portions, thoughtfulness in flavor, and perhaps most importantly, something I wouldn’t typically make at home that leaves me feeling fully recharged, and satisfied. Creative Juices Natural Cafe on Anastasia Island meets all of these rules, and then some. Of course, when choosing to dine with another person for breakfast, lunch, or any meal for that matter, it’s not just about your rules, but consideration of their preferences, tastebuds, and dietary needs. Although one can’t look past what Creative Juices is known for — being a cold-pressed juice and smoothie shop — the cafe presents a selection of breakfast and lunch plates, served all day, made suitable for all, including vegetarian, vegan, and gluten-free options. Though a salad might seem like a rule-breaker of mine — something that can readily be made at home — the Super Salad Bowl with tempeh is anything but ordinary. It’s a game-changer
86
that feels as cleansing and energizing as a juice. This packed salad combines a blend of greens and quinoa lentil salad, with cucumbers, tomato, avocado and root vegetables, and is served with a house tahini dressing, or vinaigrette. A sandwich winner is the Tempeh Reuben, readily made totally vegan by request. A simple slice of tomato layered with the signature sauce and kraut adds a sweet punch to this savory bite. It feels almost wrong to dine at Creative Juices without making it a combo. Here, that means ordering a juice or smoothie to sip with your meal. If you have fresh juice on the mind and it happens to be after-hours, Creative Juices has a vending machine out front with a few favorite 16 oz. juices in stock. Though the cafe seating at Creative Juices is pleasingly small and intimate, there’s the opportunity to dine outdoors if you have a larger group with you, thanks to the newly added backyard picnic-style seating area. Creative Juices is open 8 am-4pm, MondayFriday; 9am-3pm, Saturday; and 10am-2pm, Sunday (for smoothies and juices only) 846 Anastasia Boulevard www.creativejuicesnaturalcafe.com

FIRST COAST TECHNICAL COLLEGE A delicious foodie future awaits students at First Coast Technical College’s Commercial Foods & Culinary Arts Program. Meet Chefs Kit Keifer and Sherry Gaynor. By Sue Bjorkman | Photography by Rob Futrell
W
hether boiling an egg or making a gourmet meal, there’s an order to cooking. Gather the right ingredients, follow (or create) a recipe, apply heat, time it perfectly and serve it graciously. This same process applies to culinary students at First Coast Technical College. Motivated learners and instructors are the main ingredients, the curriculum is the recipe, and the heat and timing come from being tried and tested in the classroom (and the kitchen). For the past year, Chef Kit Kiefer led the program as Culinary Arts Coordinator. Much of Chef Kit's career was spent as Food Science and Research and Development Chef for mega-chains Ruby Tuesday, Applebee’s, Dunkin Donuts and many more. You know that blueberry pancake bite treat at Dunkin’ Donuts? That tasty little now-I-have-to-go-running indulgence was Chef Kit's idea. Just one of hundreds over the years. Chef Kit's vast knowledge and experience made him the ideal go-to guy to help build up the program in 2015. FCTC has been a tech school for 50 years and has operated as a Charter School since 1999,
88
but this year will transition to merging with the St. Johns County School District. With this change, Chef Kit is moving on but has helped set the table for the program’s continued success. LUCKY TO BE A LOCAL Both adults and high schoolers can get cooking at FCTC but younger students have two options now. They can do dual enrollment at the technical college or study at the Culinary Career Academy ProStart program at St. Johns Technical High School. The two programs partner together like peanut butter and jelly. “There is such a wide interest in the culinary programs. They really propel students to get out there and get going in great careers,” says Culinary Arts instructor Chef Sherry Gaynor. Even the location is like the cherry on top of the sundae. Chef Kit says living and studying in St. Augustine’s “sky-rocketing culinary scene” is a huge benefit. “There are some very, very talented chefs in this town. I think St. Augustine is well on its way to becoming a culinary mecca, I really do.” Local chefs are invited to speak and teach specialty lessons. He rates the FCTC chefs on staff as “phenomenal,” too.
www.STAUGUSTINESOCIAL.com
ACADEMIC APPETITE "What is your goal? Your dream?" That’s the first thing Chef Sherry asks students. “There is a lot of interest in food trucks, being a personal chef, catering or even being a sous chef in a Michelin Star Restaurant. Some want to open a gourmet specialty shop or a restaurant. Others don’t even want to be a chef. They want to be food writers or photographers. There’s a lot of diversity and opportunity in this career.” "Whatever goals students enter with, the program gives them a unique competitive advantage when they join the workforce," says Arleen Dennison, director of College Advancement. Dreams are like dessert, but finding a niche in the workforce is the real goal. Work being the operative word. When it comes to mastering the chores and challenges of being a chef – not to mention all that chopping – FCTC students take the cake. ”One of our best features is our curriculum aligns with the kitchen in a real time, real world setting,” says Chef Sherry. The students run Walter’s Reef Café, a fullservice restaurant open to the public on campus. While school is in session, it’s open from 11-1 Tuesday through Friday.
They also work alongside chefs to create elaborate feasts in the campus banquet hall. “In this industry one of the biggest complaints about culinary grads is they’re knowledgeable but they’re not ready to work. You have to move in the kitchen, it’s very physical. Our students are prepared for the hard work,” Chef Sherry says. In the restaurant, they gain valuable cooking experience while also learning the front end of the hospitality business by serving local diners. “Their creative abilities come to life as they are part of a team that designs menus, organizes catered events and develops unique dining experiences,” adds Arleen. Those already working in the food service industry can earn while they learn by taking part in FCTC’s Culinary Arts Apprenticeship Program. It takes about 2-3 years of working with FCTC Apprentice Coordinator and a Mentoring Chef to complete training and
There’s no “Hell’s Kitchen” mentality here. The emphasis is on getting along. Comparing it to an orchestra, Chef Kit says each instrument is played individually and differently but together they make beautiful music. So it is in the kitchen. Each chef is doing a different job, from prep work to garnishes, but they need to harmonize to make scrumptious food.
earn the highly regarded Certified Sous Chef certification with the American Culinary Federation. JOSUE ROMERO If you've ever snuck into Odd Birds for a late nightcap, chances are Josue was behind the bar mixing up a your boozy delicacy. Photography by Brian Miller Bartending since: 2009 What is Odd Birds best known for? Odd Birds has such a good vibe; from its friendly and relaxed atmosphere to their tasty concoctions. I see Odd Birds as the neighborhood bar where the locals mingle, musicians hangout, and the industry staff go for a nightcap after their work shift. It is one of the few places downtown where you can get food after 11pm, along with a great cocktail. The drink menu changes often, so there is always something new and exciting to try. All the glassware is vintage and so unique, and there is live music playing every night.
"To fully experience Odd Birds is to be open to experience a different cocktail and let the bartenders surprise you with their creations. There are infusions, syrups, tinctures and shrubs always in the making, and we are always looking for guinea pigs. I always encourage guests to enjoy the culinary aspect of the bar – the arepas are really tasty, made from scratch with fresh ingredients!"
Part of your job that keeps you coming back night after night? I love taking a classic cocktail and making it something else, bringing a different aspect of the spirit itself. I am adapting the cocktail to the season while keeping it balanced. At Odd Birds we have the resources to create new cocktails all the time, in so much that management encourages it. We want to bring craft drinking and the appreciation for it to our community. What is the most challenging part of your job? Introducing a new spirit or brand to a newcomer. At Odd Birds, we focus on crafted libations and that includes the spirits used. Deviating from the mainstream brands, we find small distilleries, small batches, limited editions, and mom-and-pop's brands that are not so well known, however, have quality. So, when a patron comes to Odd Birds and already has a brand set in the mind and such brand is not on our shelves, we proceed to dig up the qualities and flavors the customer wants and

THE BLACK MOLLY GRILL Away from the hustle and bustle of downtown, you'll find The Black Molly Grill, a distinctly "St. Augustine" eatery with a delightfully surprising dining experience. Written and Photographed by Steve Parr Located in Cobblestone Village on State Road 312, owner Ryan Torboli opened The Black Molly Grill in June of 2011. After working at another area restaurant, Ryan decided it was time to strike out on his own and he brought chef Pat Giblin with him. Together, Ryan and Pat serve up a variety of dishes to please the palette. To get your meal started, try the “Shrimp Snaps,” an original appetizer priced at $9.99, are lightly breaded and tossed in The Black Molly Grill's own red chili aioli before finding their home atop a bed of fresh crunchy cabbage. This unconventional dish gets a big thumbs up as a lead into any entree.

The Datil Chicken ($15.99) is topped with goat cheese and served with The Black Molly Grill's signature sweet and spicy datil jelly. It has the right amount of bite without being overpowering. If your tastes lean towards pasta dishes, try the Flamingo; a corkscrew pasta served in a tomato cream sauce with sauteed shrimp, sundried tomatoes, fresh basil and Romano cheese. Don't feel bad if you need a take-home box for this. Your $15.99 can easily feed you twice. The assortment of available entrees run the gamut from steaks and seafood to hearty pastas, each flavorful and filling. All dishes, though seemingly familiar, pack an unexpected punch.
