HELLO
LET'S GET TO WORK
Y
ou'll notice every single issue of St. Augustine Social has a theme. We do that for two reasons - it fits seasonally and well, it makes running this machine a tiny bit easier. And when it comes to running a business - we're all about getting any break we possibly can get. That's why we love this time of year. Coming off of the post holiday excitement we seem to all come out of the glitz and glamour with just a little bit more energy than we had early December. Whether it's the New Year's resoutions, tax time or year end reporting that makes the fresh start feel so good - we don't know - but we love it.
k of a o o l e h t s i This ness owner i s u b g n i p p bootstra "am I doing this thinking ight?" r
Whether you are running a business or running your family, we're pretty certain both take a lot of working parts to work right. So that's why we bring to you this issue full of stories about locals running interesting businesses, a slew of experts in the field of accounting, law, finance and insurance to help you with your own matters, and great news of grand openings and growth. All around things are looking up for St. Augustine in 2016. PS - Do you love this magazine as much as we do? We'd certainly love to hear how it fits in your life. ABOUT THE COVER
For the Year
Just your average Flagler Alumnus, family guy selling dreams one car at a time.
I
f you ask us, we'd say it takes one cool cat to make the business of selling used cars... well cool. That guy is Rhys Slaughter. Brother to Breck Slaughter whose beach billboard business we're certain you've seen. Cleary the cool factor runs in the family genes. Either way Rhys is a genuinely nice guy with an authentic style we saw fit to be cover worthy. You'll read more about how he got here in our new extended column "Person of Interest" on page 84. Shot on location by Rob Futrell at Lee F. Slaughter Fine Cars at their new location on U.S. 1 South. It was peak of the Christmas selling season when we took over the showroom for this issue. Rhys really does make car buying simple. In between takes he stepped away to close a deal and was back in 20 minutes. Simple dimple. Right?

SKATEBOARDING AT THE BEACH A new skate park is in the works for St. Augustine Beach and the committee leading the efforts is calling for your help.
T
here is a group of very instrumental members of our community banding together all in the name of skateboarding – and they could use your help too. Lenny Byrd is a member of the Citizens for Ron Parker Park, a non-profit organization formed to raise money to bring a skateboarding park to St. Augustine Beach. He says "I joined his effort late fall of 2015 and have been a skater for over 40 years." While the concept of the park was originally the idea of Chief Rob Hardwick of the St. Augustine Beach Police Department, he is joined by many others, like Byrd, who would like to see a place for kids (and adults) to
skate in a safe, designated location. The proposed 15,000 sq. ft. skate park will be a part of a redevelopment master plan for Ron Parker Memorial Park located off Pope Road. In an effort to use zero taxpayer dollars, the non-profit was formed to fundraise for the project. The group is made up of several committees that are helping with the fundraising, land planning, and general organization of the project If all goes as planned they will break ground on the park in mid 2017. To get involved by donating or volunteering your time to support the efforts, contact Lenny Byrd at (386) 986-8565.
For 15 years the goal of the St. Johns Riverkeeper has been to advocate for and help to bring awareness to the Save the St. Johns Campaign. Recently, the campaign received a grant from the Dolores Barr Weaver foundation that challenges the community to aid the Riverkeeper in raising a total of $300,000. To kick off the fund raising, the Riverkeeper team will be embarking on 12-day, 310 mile paddle/boat tour. Along the way, the Riverkeeper team will stop at local communities to raise awareness about the importance of keeping the St. Johns River safe. The tour kicks off on March 30. BUSINESS NEWS THIS MONTH
Q&A
MADE BY SURVIVORS
St. Augustine businesses are rebranding, relocating, building and brewing up some serious new opportunities for our small town. Here's what we know this month...
Sarah Symons started this charitable organization after seeing a moving documentary. 10 years later, Made by Survivors is a world wide organization helping individuals escape the chains of abuse. Photography by Brian Miller What inspired you to start Made by Survivors? I was inspired to start Made By Survivors after seeing a documentary film about child trafficking called "The Day My God Died." This film showed people who were standing up against slavery, putting their lives on the line to fight it – with limited resources, and with emotional and physical scars from years of indescribable abuse. After seeing their example, I believed that if they could find the courage to fight slavery under those circumstances, I had to find a way to support them. How did you hit the ground running? I started by contacting one of organizations featured in the film and was invited to visit their shelter in Kathmandu. It was there that I learned of the need for job opportunities for rescued survivors. We train and employ survivors in traditionally male professions, such as goldsmithing, that tend to more highly paid and respected than traditionally female professions. We started by selling survivormade goods at home parties in our St. Augustine community,
32
"My husband and I have modeled the conviction that love can change the world. That is a legacy I am proud to leave my children." and on our website. What types of outreach does Made by Survivors offer? We focus on employment, education and entrepreneurship, giving rescued survivors the tools they need to become and remain free forever. Since poverty and the low status of women were root causes of trafficking for all the girls in our program, we address those issues, giving them well-paid employment and increasing their status in society as well as changing the way they view themselves, helping them to value themselves and to know the laws about human rights and trafficking. Where are your artists located? Our artists and other program participants are in Asia,
which is the region hardest hit by trafficking. What types of products do you sell? We sell handmade sterling silver jewelry, and unique accessories such as bags and scarves, all exquisitely handmade by survivors, with a strong commitment to quality and design. What brings you the greatest joy working with this organization? I was emotionally devastated when I first learned about this issue of trafficking. There were many hard times as I researched it further, going deeper into the world’s darkest places, seeing the suffering of children up close. Of course I felt depressed and overwhelmed at times. However, once I had made the commitment to work on this issue, there was no turning back. There is much more joy and love in my work than sadness and suffering. The survivors in our programs are some of the most joyful, loving and grateful people you could ever wish to meet. Available at Amistad www.madebysurvivors.com

THE BUSINESS OF BUILDING A CHILDREN'S MUSEUM The town was abuzz with the announcement of the children's museum concept. So, what is the latest? Executive Director Kim MacEwan gives us the scoop. By Amanda LaConte | Photography by Brian Miller In what stage of development is the museum? We’re so excited that our office has just relocated to the site of our new home at the St. Augustine Shipyard, located at 76 Dockside Drive. Besides being the new home for tag! Children’s Museum, the new Marine Merchant Community located off US1 behind Target will include dry boat storage, wet slips and a pedestrian “promenade” offering a variety of shops, restaurants and lodging. When is tag! expected to break ground? We are currently making architectural adjustments to our design to plan for future growth and hope to be breaking ground in a matter of months. It is imperative to make sure we are looking at every aspect before we break ground on a facility that will provide innovation and creativity for the generations. We expect construction to begin by October and be open before the end of 2017 pending any unforeseen construction delays. What are some development activities happening now? This is an exciting time for us and we’re very busy! The design team is working diligently on the exhibits

to create a fun, unique and educational experience for everyone. We are also putting the finishing touches on architectural plans as we continue to get input from our national experts on growth and innovative exhibit design, curriculum and program development as well as green building and safety guidelines. Are there any community events going on? Yes! Workshops aligned with our five areas of focus – 1) STEAM (Science, Technology, Engineering, Art and Math), 2) Environmental Stewardship, 3) Culture and History, 4) Health and Wellness, and 5) Citizenship and
Compassion – began in December of 2015 at our new office location. The tag! Team continues to provide community outreach through school and community events. How can locals help? Volunteers and community support are vital pieces of what it takes to bring tag! Children’s Museum’s vision to life. Check the tag! website and Facebook page to learn about their ongoing community events, volunteer opportunities and ways to donate. 76 Dockside Drive, Suite 105 www.tagmuseum.org

MATANZAS THEATRE Nestled on Cathedral Place, this quaint theater was home to St. Augustine's movie go-ers until the early 1960s.
T
By Matt Armstrong
he Matanzas Theatre is the backdrop for many cherished memories for St. Augustinians. Date nights in the dark auditorium, watching cartoons in the cool AC on a hot summer weekend, days collecting RC bottle caps around town to go see a Saturday matinee with pals; they all revolve around the Matanzas Theatre on Cathedral Street. Although the ticket area and entrance still stands (it exists as the Tripp Harrison Gallery these days), the auditorium was demolished for parking spaces after the Exchange Bank purchased the property in 1967.
888 seats in the auditorium section. 231 in the balcony section.
Construction began in 1938.
The theater was (mostly) demolished in 1968. The ticket area and foyer were left standing, but the auditorium was razed.
10 of 28 theaters for which Roy A. Benjamin was the architect still stand. He was a notable architect in Jacksonville, who moved to the city after the 1901 fire to take part in the rebuilding. You may have visited one
36
of his theaters in Jacksonville - he was the architect for the Florida Theatre, the Riverside Theatre (although this has been substantially remodeled), and the San Marco Theatre. The San Marco opened the same year construction on the Matanzas started, and still operates as a movie theater - probably the closest you will get to visiting the Matanzas Theatre these days.
Tickets for a movie cost .25, although a Saturday Matinee would only set you back just 6 RC Cola Bottle Caps.

Crowds gather outside the Matanzas Theatre, spilling out into the plaza, to catch a glimpse of the film’s stars Gary Cooper, Mari Aldon and Richard Webb. Filmed here in St. Augustine at the historic Castillo de San Marcos, the 1951 film Distant Drums, dubbed a “Florida Western” was the first production ever to use the famous “Wilhelm Scream,” a sound effect later used in over 225 movies and television shows including Star Wars and Indiana Jones.
December 22, 1951 - The Matanzas hosted the world premier of the film Distant Drums, a “Florida Western” film set in the Everglades during the second Seminole War, but many scenes were filmed in St. Augustine, and some locals (including a young Sidney Capo) served as extras in the film.
July 22, 1965 - An attempt by 21 black youths to integrate the auditorium seating area ended in confrontation and arrests. Black patrons were restricted to seats in the balcony section of the theater.

What motivates you in the workplace? What I love about my job as a lawyer is that I learn something new everyday. Every person that walks through the door has a unique situation that I try my best to understand and help them find a solution. Being a solo practitioner allows me to be more flexible in the cases that I take on and I enjoy the process of researching new or complex issues. What is your competitive advantage? The main distinction between my firm and other local firms is that it is a true "solo practice," meaning that I handle each and every aspect of every case. Some of my clients have expressed frustration with lawyers who they have worked with previously, explaining that they often had a difficult time reaching their lawyer directly. At my firm,

there are no buffers as I answer all the calls personally and I provide my personal cell phone number to each of my clients so that they can reach me directly anytime that they need to. What has been the most rewarding experience in your job? Some of the most rewarding experiences so far in my practice have been with helping clients plan and form new businesses or sell existing businesses. The excitement that clients bring when they meet with me the first time to discuss their ideas for a start-up is very motivating. I enjoy seeing these businesses grow from a dream to a reality. ANCIENT CITY ACCOUNTING Kim Fader KNOWN FOR: Bookkeeping services, QuickBooks training and tax preparation for both businesses and individuals.
What is your competitive advantage in your industry? Our competitive edge is being able to communicate with our clients. Accounting and taxes are very personal and sometimes make people uncomfortable. We work hard at putting our clients at ease by answering their questions and helping them to understand the things they want and need to know. Many of our customers, are first time business owners; Ancient City Accounting is here to get them started off on the right foot. If a personal tax client receives a letter from the IRS, that can be very scary so we help put them at ease. What has been the most rewarding experience of your job? When I see my clients succeed. I've watched a young lady go from having a small shop downtown to now owning her own building where she and her husband run a very successful retail store and also have a line of wholesale items they sell to other retail shops. This is what makes our community shine, and I enjoy being part of it. What is the best work related advice you were ever given? My first boss in the accounting field told me, "if you make a mistake admit it and correct it." Nobody is perfect, so if we do make a mistake we own up to it and make it better. What are your long term business goals? To provide quality, dependable services to our clients while continuing to help our staff grow and achieve their goals.

are moving towards opening a second location in Ponte Vedra or Jacksonville in the next few years. What are your competitive advantages over other businesses in your industry? Because we are a smaller firm, the partners have direct contact with our clients through all aspects of their accounting and tax needs. Based on our client’s feedback they really feel more comfortable with the smaller firm and the efficient and direct contact with the partners versus the interaction they have received at a larger CPA firm. Therefore I believe our smaller size gives us an advantage over the larger firms in our industry. What is the best work related advice you were ever given? Years ago I was told by my father, in a business, “always remember you are there for the clients and without the clients you won’t be there.” I have always acted that way and have that expectation for my staff.

These aren’t your average piggy banks. Missing a characteristic removable cover and extraction point, these pots don’t let you retrieve the change and dollar bills from the vessel until it’s entirely full. ight years ago, California dwellers Sylvi Herrick and Matthias Herzog were itching for a change of environment and scenery, and quickly found themselves fixated on St. Augustine. “We wanted to move to a small town, on the water, where the water is warm, and where there’s a college [I could teach at]. Plus, I wanted to ride my bike to work. St. Augustine is kind of it,” said Sylvi. And so, they set out across the country with a lofty ambition. As if their move from Oakland wasn’t a daunting enough undertaking, they decided to do something monumental — transform what they considered to be the worst house on the best street into their family dream home. Together, utilizing Sylvi’s artistry, fashion design background, interest in 3D arts, and Matthias’s engineering background and solar technology savvy, they executed what is now their Water Street estate along the marsh. “We knew we wanted to find an old house that we could update with everything technologically forward, but keep all the old elements and character,” said Sylvi.
58
At the time of their purchase, the home was in such a poor state, those who knew it assumed it was left for dead and bulldozerready. After some waiting, this property that had been in the same family for 100 years, became Sylvi and Matthias’s. And so began the transformation of this two-story, vacant shell. Because the home had no preexisting architectural detail, Sylvi was given a blank canvas to work with. ARCHITECTURAL ARTISTRY As a child, Sylvi received hands-on building experience working with her carpenter grandfather. “I grew up banging nails with him,” she said. This seed planted early on found its growth through Sylvi’s interest in 2D and 3D design, and her experience in fashion school. “A house is really like clothing. All the seams are on the inside. I actually think fashion is more complicated than houses because clothes have to move,” she said. Architecturally speaking, Sylvi has spent time working directly alongside an architect during her 15 years of teaching. And having previously renovated a California bungalow, Sylvi developed an innate understanding of what it takes to bring a project of such

magnitude to life. “If you’ve done these projects before, you know what’s possible,” she said. “I know how long it takes to put in five toilets. And I know how long it takes to tile a certain amount of space.” As a result, the revival time was a rapid-fire six months, start to finish. A CONSCIOUS TRANSFORMATION When they acquired the home, the rooms were closed off, and the space as a whole was compartmentalized. “We changed the shape but not the footprint, building up, and around,” explained Sylvi. Walls were were ripped out. Elements were exposed. A popcorn drop ceiling was removed. Barn-style beams were revealed. Original heart pine floors were unearthed, and finished by simply coating in beeswax. “Everything is about trying to keep things chemical free and natural,” said Sylvi.
60
In addition to installing new electrical, new plumbing, and swapping out windows to meet hurricane protection standards, one of the biggest advances in the home is the use of solar energy. Ninety percent of their home is powered by solar energy, thanks to Matthias’s background as a solar engineer. For the two, the use of solar is a no brainer decision. OPEN DOWNSTAIRS DWELLING Throughout the downstairs dwelling space, interior walls were opened up, allowing for a natural, uninterrupted flow from one room to the next. An expansive kitchen supports Sylvi’s love of cooking and entertaining. A back-pantry baking area turns into a bar when they host parties. In addition to the open living, kitchen, and dining space, the first floor includes a library, and an added Florida (sun)room, serving as an art oasis for Noora and Siena.
www.STAUGUSTINESOCIAL.com
American Clay products line the walls of the first floor dwelling space, utilizing materials including oyster shells and natural plasters that not only breathe with the humidity, but add character. Plaster work throughout the home executed by Matt at Traditional Finishes.
INTERNATIONAL INSPIRATIONS The home tells a collective story of heritage and the places Sylvi and Matthias have experienced. Matthias is from Switzerland, while Sylvi has Estonian roots. Collectively and individually the two have traveled intensively, sourcing inspiration from around the world. Sylvi’s visual inspirations come from places she’s not only lived, but cultures she’s fully immersed herself in, such as Los Angeles, New York, and Japan. VOGUE-INSPIRED MASTER BATH Upstairs, situated directly above the Florida room is the addition of a master bath— a different type of oasis. The space blends classic touches like a sleek, free-standing bathtub, with an open, glass walk-through shower. The space incorporates Moroccan cement tiles and Venetian Plaster. Here, floor to ceiling windows mean not only an uninterrupted view of the marsh — on nights with a full moon, bath by moonlight is a reality.
STYLE ART SANCTUARY Climbing up a ladder takes you from the second floor sleeping quarters to a third floor addition — Sylvi’s art studio. This studio concept was a dream she had for her last home, and was finally able to bring to life. This is her spiritual place where all of her deepest and profound moments occur, and where she is creating work she considers her poetry — her paintings. Now that she’s finished with this dream home renovation, becoming known for her paintings is the last thing remaining on Sylvi’s bucket list. In her latest body of work she’s setting out to explore subjects including feminist issues, sexuality, and race. View her work here: www.sylviherrick.com

AYLA GRAY Assisted by her family, seven-year-old Ayla Gray is already a business owner taking steps to give back to the community. Walking on the beach with her four dogs, Alya’s mother, Molly Cones, taught her “treasure was meant to be found by a creative eagle eye.” The first necklace Ayla made was with a simple nut strung onto a ball chain. Shortly thereafter, Ayla’s Industrials was born.
With a clever eye for design and a helping hand from her supportive family, Ayla is able to create original, one of a kind pieces. Through her business, this young entrepreneur is learning the act of generous gift giving. Ayla, in addition to her expert creativity, holds an enormous amount of love in her heart for animals. Fifty percent of every purchase goes to local animal shelters – Ayla's way of ensuring deserving dogs find new homes in our community.
By Meaghan Alvarado | Photography by Rob Futrell
Where do you find the items you use in your jewelry? Ayla: On the ground at the beach, mostly I find them in parking lots. Molly: Since Ayla was two, she and I spent a lot of time collecting sharks teeth at the beach and walking our dogs. On numerous dog walks, Ayla would find “treasure” on the ground. What made you decide to start making jewelry with the treasures you found? Ayla: Because no one ever did it before. And, some people like old, rustic nuts and bolts, and never had the idea to make them into jewelry.
68
Molly: One day, her stepmom had on a ball chain necklace with a simple nut as the charm. I asked her right away where she got such a cool, industrial piece and she said Ayla made it for her! She found the nut on the ground, found the chain in her Dad’s garage toolbox and her first piece was born. Not too long after that, Ayla found me a large rusted nut buried in the ground and I too put it on a ball chain. Her stepmom and I layered her pieces and more and more people asked where we got them. That’s when Ayla’s Industrials formed. What is your family’s role in Ayla’s Industrials? Ayla: They help with the www.STAUGUSTINESOCIAL.com
stamping and putting the tags on. Sometimes they help with making the jewelry if we have a lot of sales. Molly: Both Amber Seay, her stepmom, and myself are actively involved with the marketing and photo productions. Her Dad makes all the stands for the boutiques that carry her collection. 50% of each $32 necklace goes to the animal shelter, which one? Ayla: We split the money with the animal shelter that my dog Nikko came from. You can find Ayla's Industrials at Anchor Boutiquey on

Rows of plastic-sleeved pulp fantasies with flashy, colorful covers draw in potential readers. The aroma of fresh ink and crisp pages meanders from classic novels and heroic fiction. omic books certainly are the focus of All Books and Comics, however, that was not always the case.
According to Vanessa Starling, the store owner, the shop was not always the showcase for mutants and super-powered people. “I opened the store in 1986 with just books, no comics,” says Starling. “The store was originally named the Book Exchange and was located downtown near the Florida School for the Deaf and Blind.” The store offered more traditional books and novels. It was only by a stroke of fate that comic books were introduced into the store’s stock. It all began when an elderly lady entered the store carrying a small bag of comics that had been left behind by her children. The woman brought the books to the Book Exchange, but at that time, the store didn’t carry comic books. “I didn’t really have a place for those books at that time so I just

put them away. The books sat in that bag for six months before I looked at them again,” says Starling. Deciding to make a small profit from the used books, she placed the previously stored comics on the front counter and charged 50¢ each. To her surprise, the comics were a huge hit and sold quite easily. “One day a customer told me that although he appreciated the price of the used comics, they were worth a lot more than what I was selling them for,” says Starling. “And something that I have seen even to this day, is that comic book readers are typically very honest and intelligent people.” Heeding the advice of her customers, Vanessa Starling researched the price of the used comic books and raised the prices accordingly. The increased price did not deter the book sales nor the demand www.STAUGUSTINESOCIAL.com
for more selections from eager customers. Motivated by the call for more comics, Starling immediately ordered a few select titles. By 1988, the increased number of comic book clients caused Starling to add more comics to her shelves. That year the Book Exchange became All Books and Comics. Perfect timing too. The 90’s ushered in an explosion in comic book readership. “There was a huge boom for all comics across America!” states Starling. In 1992, readers were shocked by the death of one of the most iconic of all comic book heroes, Superman. “The Death of Superman made mainstream America aware of comics,” says Starling. That awareness brought about a surge in comic book sales from those wanting to read and or collect the unimaginable story arc. The demand for the Death of Superman also led readers to buy other new and exciting titles from DC, Marvel, and the newly-founded Image comics. All Books and Comics profited greatly during that time, which pleased Starling immensely. Sadly, with the rise of a thing must come the eventual fall.
Spurred by speculation, the market was flooded with the Death of Superman and other monumental story arcs from other publishers. Values in these books dropped drastically toward the end of the 90s, and a great decline in readers soon followed. The comic book boom was over, but it would not see the end of Starling’s book store. Long after the 1990’s comic eruption, All Books and Comics is still the lone comic book store of St. Augustine. “I have seen several comic book stores come and go during my time,” says Starling. “Many were started by some really nice people who loved comics. However, to be successful one must first be a good business manager.” With a welcoming smile, she listens to and advises her customers and she makes their satisfaction a priority. That charisma and dedication to the customers have aided in the survival of All Books and Comics when many similar stores have vanished. When

asked how it’s been for the only comic book store in St. Augustine, Starling replies with a chuckle, “Well, it’s been great!” A new surge in comic related media is emerging. Blockbuster movies and highlyrated television shows like The Avengers, Man of Steel, and The Flash renewed interest in the comic book format. When asked if comic book-based shows and movies have affected her business, Starling says excitedly, “The Walking Dead trade paperbacks have been huge! I’ve sold hundreds because of that show.”
many readers are still hungry for the tales of fists, aliens, and invincible heroes. Luckily, Vanessa Starling and All Books and Comics will be there to deliver the Pow! and the Bang! to readers across St. Augustine.

The Art of Medicine Andy was born Augustus E. Anderson, Jr. in Jacksonville on Dec. 28, 1923. When he graduated from high school, he was still too young to enlist for WWII, so he worked in a shipyard building wooden decks on minesweepers. But he had bigger dreams. Getting accepted into the U.S. Navy’s V12 program enabled him to attend Emory University to study pre-med. He then earned his Medical Degree from Tulane University in New Orleans. This eclectic locale proved inspirational for his later paintings of jazz and blues musicians such as Ray Charles, Louie Armstrong and John Lee Hooker. He remained in New Orleans for his internship and residency, but returned to Jacksonville to practice medicine from 1953 to 2013. Just a few highlights of his illustrious career include more than 65 published scientific articles in prominent medical

IT’S MY THERAPY.” research journals, and serving as a Consultant to the Surgeon General Advisory Committee on “Smoking and Health” in 1964. His family has always enjoyed a strong connection to St. Augustine. Andy’s parents, Gus, Sr. and Alma, lived in St. Augustine in the 1920s. When Andy’s kids were young, they loved visiting the Old Jail, the merrygo-round and feeding the fish at the Santa Maria Restaurant. After the death of his wife Sandra, he married Joy in 1998. Between them they have eight children, 30 grandchildren and two great-grandchildren. A Natural Talent Growing up, Andy knew he had some natural artistic talent, but never had any formal instruction. Turns out he didn’t need it. He first tried painting in the 1970s, inspired – or dared – by Sandra.
“Sandra was the artist. But I’d watch her work and tell her,’ you should do it this way or that.’ Finally, she said,’ then why don’t you do it yourself,’” recalls Andy. So he did. Through trial and error, and the forgiving medium of oils, he discovered and developed his talent. “Oils on canvas take a long time to dry, so I have time to go back and get it right,” Andy says. Now he paints daily. Sometimes all day long. His daughter Robin Anderson, a St. Augustine resident, takes many of the photographs he uses for inspiration. “He’ll ask me to take a photograph for his next painting and he’s very specific of what he wants,” she says. “There isn’t anything he hasn’t tried to paint that he doesn’t wind up doing well. There’s just so much richness in his paintings. So www.STAUGUSTINESOCIAL.com
much amazing detail.” Her brother Bill also takes photo assignments from their father. Robin handles her father’s website, painting and book sales, and gallery showings. She is currently working on finding the right art gallery in St. Augustine’s historic district to display the art collection. Roses and Reflections Andy says he paints “most anything.” If he had to name one specialty, though, it is roses. Joy used to grow magnificent roses and Andy has painted every variety. Even with so many medical and artistic accomplishments, Andy says that’s not what completes the portrait of his life. His heart and pride belong to his “wonderful wife and incredible children.” www.augustuseanderson.com

awyers are advocates by definition (a person who speaks or writes in support or defense of a person or cause), and St. Johns County Legal Aid particularly embodies the spirit of advocacy. St. Johns County Legal Aid is the St. Augustine branch of Jacksonville Area Legal Aid (JALA), an exclusively pro-bono firm that has been handling general civil cases for the poor, elderly and disabled in the community since 1937. In addition to the full time attorneys employed by JALA in their three locations – Jacksonville, St. Augustine and Green Cove Springs – numerous local private attorneys use JALA to administer their voluntary pro-bono work. Megan Wall is a full time lawyer employed by St. Johns County Legal Aid who chose her career because she wanted to “walk the walk,” not just “talk the talk.” She explained that she is most happy when she feels like

she’s being of service to others saying, “I want to be on my deathbed looking back at my time on Earth and say at least I did my best to help those I could – as that is what I think we are all here to do.” Types of Cases St. Johns County Legal Aid handles cases involving community development, consumer issues, education issues, family law, elderly law, employment and unemployment, housing and fair housing, health issues, public benefits, mental health and immigration. Their work has had a direct positive impact on the community in many ways. One example occurred during the downward economic spiral, when Legal Aid worked with other volunteer lawyers and the St. Johns Housing Partnership to save more homesteads from foreclosure than any other community. Per Ms. Wall, the partnership between Legal Aid and local social service agencies is a being used as a www.STAUGUSTINESOCIAL.com
model in other communities. Who is Eligible for Legal Aid? Clients must meet financial eligibility guidelines to be considered for JALA’s probono legal services. The general income range for consideration is within 125% to 187.5% of the poverty line, although clients below 125% can be considered as well. Program units that are not based on income level are the fair housing unit, the Ryan White (HIV/AIDS) unit, the immigration unit and the Title III (elderly) unit. How is it Funded? Jacksonville Area Legal Aid is funded by a combination of federal, state, city and county grants in addition to generous donations from private and corporate donors. Interested supporters can donate funds or property, create an endowment for one of JALA’s programs or leave a bequest in their will. More information on these opportunities can be found on the Donations page of JALA’s website. Musical Chair
DEWEY VIA Playing an average of seven shows in St. Augustine each week, this musician's decade-long Oldest City music career isn't slowing down anytime soon.
N
o matter where you go, if you find yourself someplace with a vibrant live music scene, like we have here in St. Augustine, there’s always one performer who seems to be attached at the hip to the town. There’s always that one guy who everyone knows and who always seems to be playing somewhere. In St. Augustine, that guy is Dewey Via. Originally from the small town of Ettrick, Virginia, Dewey first found his way to St. Augustine about ten years ago. For the last ten years he’s played countless shows in an impossible number of venues in town, always with a guitar in hand.
Written and photographed by Steve Parr Dewey first got interested in music around the age of eight, and that interest has never waned. He made his living as a plumber in Virginia until 2005 and also served as a worship leader at his church for 13 years. He decided to move to St. Augustine and throw caution to the wind to pursue music full time. The pace he keeps as a performer isn’t an easy one; his typical schedule has him playing as many as seven shows in five days (he treats himself to Tuesdays and Wednesdays off). His biggest challenge, he says with tongue planted firmly in his cheek, is being tired all the time.
When asked about his most memorable gig, Via says, very matter of factly, “The last gig I did”. It shouldn’t really come as a surprise to anyone that it’s hard for him to pick out a favorite after performing so many. His current performance schedule is as diverse as it is enjoyable, and you can find him in all corners of town. While Dewey most often performs solo, he also fronts two bands which perform a mix of Dewey’s original songs and covers. The Dewey Via Band (affectionately known a “The DVB”) and Moses Creek Band can be found at Tradewinds on Sunday and Monday nights, respectively. Of course, that Sunday night gig is after his Sunday afternoon show at Mi Casa on St. George. The most enjoyable thing about watching Dewey Via perform is that there’s probably no one in town with a repertoire as deep and expansive. Go ahead and feel free to throw out a request. Chances are he knows it. Ask him what he likes most about being a musician in St. Augustine and his answer comes quickly: “I love the fact that there’s quality music and art around every historical corner, and I’m honored to be a part of that scene”. When you watch him perform, it’s pretty evident that there’s nothing he’d rather do more. Dewey’s interaction with his audience is natural and comfortable, like hanging out with a buddy on your front porch on a rainy Saturday afternoon. “I perform with the hopes of making someone feel what they need to feel”. It’s difficult to find anything wrong with that. Find Dewey at: www.facebook.com/ DeweyViaSingerSongwriterMusician

The showroom at Lee F. Slaughter Fine Cars is the opposite of what one might expect of a car dealership. Dim lighting sets a relaxed mood. Reclaimed wood touches and a metal roof add a classic feel. A handful of fine cars are intentionally positioned around the room, including a Corvette with the hood open, allowing for a look at the nuts, bolts, and the force that drives this machine. Music plays in the background. Surf paraphernalia lines the walls. Out front is a collection of less than 30 select cars for show and sale. It’s approachable and unassuming here. It’s anything but over the top. And it’s everything one could hope a car buying experience would be. It’s a setting and an ambiance that embodies the personality and character traits of owner Rhys Slaughter, a down to earth family man committed to the thing he loves to do, and has proven to do successfully.
84
“I do one thing really well — buying and selling really nice cars,” said Rhys. Rhys has been going to car auctions since he was 10, and buying cars since the ripe age of 16.
the footsteps of his family, Rhys’ grandfather Lee F., started his own new car franchises in small-town Smyrna, Delaware in 1948, selling Ford, Chevrolet, Lincoln, and Studebaker.
Following in the footsteps of his father and grandfather, this Flagler alumnus is carrying on the family legacy, putting his own spin on the business of supplying the local community with a selection of unusual, fine used cars. Think Porsche, Jaguar, BMW, Land Rover, all with low miles, minimal changing of hands between owners, clean records, and representing a range of price points.
“It was a small town. He sold everyone their cars. Even the police officers were driving around in his Studebakers,” said Rhys. Factory warranties weren’t exactly a thing of the time period. And as a result, Lee F. eventually found himself in the position of fixing as many cars as he was selling.
IT’S IN HIS BLOOD Cars are in Rhys’ bloodline, and have been since long before he was born. Following in
www.STAUGUSTINESOCIAL.com
“He would sell them, and then he would fix them,” said Rhys. “He built his reputation this way, but it was breaking him to continue selling new cars when he was spending his time fixing them.”
The Legacy of Lee F.
Perfect for company branding and a true reflection of his personal style, you will often spot Rhys driving around town in this classic Falcon Club Wagon complete with fuzzy dice. It may not be the most practical family mobile, with its missing modern safety features like airbags and head rests, but it's the ideal beach mobile. And that'll due.
After a long period of success in the new car business, Lee F. shifted his focus to used cars, a move that seemed a bit taboo. Then, a car was considered disposable by the time it reached 80 or 100,000 miles. Nowadays, they are just getting started. Much like the cars Rhys buys and sells today, Lee F. had an eye for unusual, low mileage cars. The shift to selling such vehicles was a move that paid off and kick-started the fine, used car buying and selling empire his son Mark — Rhys’s father — would build upon. Though it was Lee F. who built the foundation and reputation, it was Mark who really put the family business on the map and took it to the next level.
In the 1970s, when Lee F.’s health left him unable to continue to run the show, Mark stepped up and took over the business, and moved it to Dover, Delaware. Here he erected a new, iconic dealership, specializing in Corvettes, muscle cars, and vehicles that are now almost untouchable money-wise. “He was really immersed in the whole car culture and was looked to as an authority,” said Rhys. “Everyone in the area knew the name for years and years, and for miles and miles. The caliber of cars went up. He built a huge business. As a result, he worked ding to dong, nine to nine, seven days a week. He went at it very hard.”
www.STAUGUSTINESOCIAL.com
Although Rhys wasn’t able to get to know his grandfather to the level he hoped during Lee F.’s lifetime, he was fortunate enough to have the opportunity to hear stories from his grandfather’s best friend who lived well into his 90s. The stories suggest that Rhys is living out his life in a similar fashion to Lee F., from what he likes to wear to the cars he chooses to drive. Rhys attests to the fact that Lee F. was the epitome of a daredevil. “He was far more of a loose cannon than I am,” said Rhys. He regularly flew his private plane under powerlines, landing on back roads. He once drove a motorcycle off a dock into a lake and left it at the bottom. Beyond his adventurous nature, Lee F. was a reputable business man. Though the car industry has shifted leaps and bounds since Lee F.’s time, today Rhys keeps the emphasis on family, quality, and running an upstanding business. The result? A trusted, no gimmicks kind of operation.

At one point during college, Rhys returned to Rehoboth for a time, to help his dad manage the business. At that point, the operation had grown to once again include a number of employees. As a result, Rhys found himself putting in more than 80 hours a week, which was enough to help him determine that if he ever ran his own business, he would keep it small and have a lean crew.
COASTING SOUTH Since he was a kid, Mark loved surfing as much as he loved cars. This love took Mark and his family to the coast of Delaware, and then eventually all the way to the East Coast of Florida. When Rhys was late into his elementary school years, his dad’s love of surfing and longing to be near the water led their family from inland Delaware to Rehoboth Beach. Here Mark bought a farmhouse that had been used as a fruit stand. He turned this newly acquired rental space into a modest dealership, starting by placing a handful of classic cars out front with for sale signs on them. “It was a 100-year-old place with a couple of garage doors,” said Rhys. “He would leave a sign on the door that said something like “in Dover - be back by appointment after 6pm’” The cars went like hotcakes. As they sold, he continued to add more, and as those sold, came even more. Within a month he decided to close Dover and opened full-time in Rehoboth. It was surfing that led the Slaughter family to Rehoboth. And it was surfing that ultimately destined them for another coastal town, this time farther south — St. Augustine. When it came time for Rhys to consider colleges, he embarked upon a father-son surfing trip. First along the West Coast.
86
Then down the East Coast. “The College of Charleston was supposed to be the last school I looked at, until dad said, “We haven’t looked at Flagler. I responded, ‘ Where’s St. Augustine?’ ” As soon as they arrived in St. Augustine, Rhys felt at home. “It felt just like the town I grew up in, but warmer. I fell in love right away.” Where Rhys led, his family eventually followed. Immediately after graduating from Flagler College in 2008, Rhys put his knowhow and love for surfing to use, working for Pit Surf Shop. His parents’ desire to be where it was warm, drove them to follow Rhys to St. Augustine and retire here. Lee F. Slaughter Fine Cars was put to rest — at least temporarily. www.STAUGUSTINESOCIAL.com
EDITOR'S NOTE: Rhys may look like a natural in these photos but he was as bashful as a boy could be. We're super appreciative he let us take over his space and put him on the cover of this issue. Thanks Rhys!
Despite his newfound retirement, Mark went ahead and obtained his Florida business license, in case he decided to buy and sell a car here and there. A NEW GENERATION All it took was Rhys returning to auction with his dad just once, and the rush of the car buying experience came back. “It came out of nowhere. I thought it was in the past,” admitted Rhys. “As soon as I got there, I felt that adrenaline — getting pumped up about the cars. I came home that night and was like, shoot...I think I want to do this again.” A partnership opportunity opened up at a location on San Marco in 2013. “We were just going to sell a couple of cars on the lot,” said Rhys. Once it grew to be more than a couple of cars, Rhys was all in. “I only know how to do it one way. If I’m going to do it that way and sell that way, I knew it had to be Lee F. Slaughter Fine Cars.” By 2014, Rhys decided to run the show. A
“I always saw Lee F. Slaughter Fine Cars as what it was in Delaware. To start something here and watch it take off has been really neat. We’ve been in the green since day one which is really hard to do with a small business,” said Rhys. As of late summer 2015, Rhys made the move over to a new location on U.S. 1 which allows for a showroom and a space that is entirely his own. KEEPING TRUE & STAYING SMALL Throughout the multiple generations of Lee F. Slaughter Fine Cars, although the preferences of the buyer has shifted generationally, the characteristics of the cars bought and sold remain the same. “I always look for the one and two owner cars, low mileage, no paintwork, no accidents, and clean history. Every car on my lot is going to meet these guidelines,” affirmed Rhys. As for the types of cars, “It’s cars people want to buy, not that they have to buy.”
We have a really cool community here where everybody does the support local, go local thing. People are willing to go out of their way to shop with the small business owner and eat with the small business owner..... new generation of the family business was born. And Rhys has been defying the odds of being a third generation business, ever since. “If you consider this a third generation business, statistically, I have a high rate of failure. Second generation businesses fail 60 percent of the time. Third generation businesses fail 90 percent of the time,” said Rhys. “Even though I am a third generation business, it’s a totally different state, business, and set up.” Immediately after introducing the St. Augustine community to Rhys’ own interpretation of Lee F. Slaughter Fine Cars, people wanted to do business with him, liked the cars, and the business organically accelerated.

Though Rhys certainly sells vehicles that can and do function as the sole car for transportation, the bulk of what he sells are considered toys. “I feel like I have a niche in the toys. I am selling a lot of people their third, fourth, and fifth fun car,” he said. Rhys still goes after many of the same types of cars as his forefathers, including Mercedes, Jaguars, BMW, Land Rovers, and Porsches. Though he keeps a couple of high end cars on hand, rather than stocking and selling toy cars with price tags upward of $50,000, Rhys would rather appeal to the middle market of individuals who are able to pay between $10,000 and $40,000 for a vehicle, and forgo having millions of dollars worth of inventory. He also makes a point to offer a handful of automobiles in the highly

accessible sweet spot — between $5,000 and $15,000. These decisions align with Rhys’ priority of keeping things manageable and staying small. “I saw dad do small, medium, and large. And to me, small makes the most sense. “I just want to keep the tiger by the tail and keep things controlled,” he said. “I know what I want to do — how I want to do things, and it works.” Ultimately, for Rhys, his idea of success includes low stress and the ability to lay his head down at night peacefully. “I am not looking to buy a yacht. I want to go home at 5pm and see my kid and experience the lifestyle St. Augustine has to offer. I like

being outside and doing things with my family.” His small-scale business approach means keeping a small inventory and small overhead. Rhys’ inventory typically includes between 25 to 30 automobiles, increasing as needed to keep up with demand. “If I sell five cars a month I’m happy; 10 I’m stoked, 15 then Merry Christmas, it’s wonderful.” Rather than running a rapid-fire car selling model, Rhys doesn’t haggle or hassle his customers, he simply sells cars in a straightforward manner.

With the help of his dad, Rhys remains virtually a one-man show. Though Mark is still technically retired, he remains a valuable part of the business, and is part of the buying and selling with Rhys. “He helps me, but it feels more like we are hanging out together. Now it’s just fun we get to

In addition to his dad’s involvement, Rhys’ “lean crew” as he refers to it, is a single, highly valuable employee — Jesse. “I’m happy with the lean crew I have right now. rave: a verb used to communicate the intense longing or hunger for a specific something. No matter what someone is referring to when they use this word, my thoughts and tastebuds immediately whisk me away to Riberia Street—the home of the one and only Crave Food Truck—a downtown lunch hotspot I couldn’t possibly stay away from even if I wanted to. Tucked away in the San Sebastián Marina, this lively, blue stationary food truck serves up a seemingly endless supply of local produce in the form of healthy, hearty wraps and salads, day in and day out. Crave’s menu takes on a build-yourown approach, meaning you are sure to end up with everything you could want in your dish — nothing more, nothing less. Because the menu is rooted in plants, no special accommodations or extra effort for vegetarians or vegans is needed here. Most Crave options are not just veg-friendly, they’re what I refer to as veg-ready. When it comes to ordering, Crave’s ever-changing “specials” chalkboard is meant to help guide your decision-making process. Spring for a daily special and swap ingredients to your liking, or start from scratch, selecting from ingredients

like greens, carrots, beets, beans, and seeds (oh my!). For under $10, enjoy your fill of a wrap large enough to share or save for seconds. Wash it down with one of Crave’s signature almond milk or coconut water-based smoothies, like The Funky Monkey (peanut butter, banana, and cacao nibs), or the berry-licious Fruit of Life. At Crave, show up to sit and stay in the covered picnic area situated directly alongside the water (my personal preference), or grab your food to go. All meals are served the same way — box-style. There’s something to be said about consistency, simplicity, and freshness, not to mention having the opportunity to talk to the upbeat, personable Andrés (owner) every single time you walk up to the window and order your food. Did I mention Andrés and his team always get it right? Added bonus. Feeling adventurous or just can’t make up your mind? Let Andrés and his team surprise you with a wrap of their choosing. Simply tell them if you’re vegan, vegetarian or have any food allergies and they will work their magic and leave you craving a repeat ASAP. 134 Riberia Street, (305)297-1885 www.STAUGUSTINESOCIAL.com

SIMONE PARISI At Terra & Acqua, Owner and Chef Simone Parisi creates a casual, modern dining experience with authentic Italian cuisine inspired by land and sea. By Kara Pound | Photography by Rob Futrell
L
ocated in Sea Grove Town Center in St. Augustine Beach, Terra & Acqua (translation “land and water”) is one of the area’s newest additions to an ever-growing and refining restaurant scene. Opened in the spring of 2015, this family-owned and operated 200-seat eatery plus outdoor courtyard offers fresh, locally-sourced ingredients transformed by chef and owner Simone Parisi into authentic New World flavors. THE BEST OF BOTH WORLDS Born in Florence, the capital of Italy’s Tuscany region, Parisi’s culinary creations have always been heavily influenced by his familial roots. His father’s side hails from Tuscany while his mother grew up in Emilia-Romagna, a region in Northern Italy. “My mom had three sisters,” Parisi explained. “I grew up with this authentic pasta making experience from one side and then the influence of cooking with seafood, steak and wild boar from the other side. It was the best of both worlds.” As a medical student on his way to becoming a dentist, Parisi was called on by his homeland for a one-year mandatory military service. During that time, he worked in a firehouse kitchen under a Michelin starred chef. It was there that Parisi abandoned his dreams of dentistry and began exploring a career in cuisine. “My mom was a marketing director for Conad grocery chain,” said Parisi. “Part of

my training in Florence was that I worked in every department. I would do six months with a butcher in town, six months in produce and so forth. I also took smaller baking and pastry courses in Italy and eventually owned my own delicatessen.” Following a move to the United States in 1997, Parisi settled in Denver, Colorado and opened two restaurants. The first, appropriately named Parisi, was established in 1998 and has been regularly named as the best pizzeria in the city. The second, Firenze a Tavola, which translates to “Florence at your table,” was opened in 2006 and has made a name for itself as one of the area’s top fine dining locales. “I know Italian cuisine like I know my Italian wine,” Parisi explained. “This is what I know how to do. Over the past 18 years, I’ve been www.STAUGUSTINESOCIAL.com
exposed to a lot of different cuisines and techniques. Cuisine is always evolving. I like to create the traditional with a twist.” After visiting St. Augustine in 2010 while on vacation with his family, Parisi knew it was time for a change. Less than a year ago, Parisi and his wife, Monica, and two young sons, Matteo and Luca, chose a large restaurant space in the Nation’s Oldest City with an emphasis on catering to the locals. “I fell in love with this city at first sight,” said Parisi. “Coming from Europe where everything is old and people are always on the street walking, St. Augustine is the perfect place for our family. We’re 45 minutes from the airport, 50 minutes from horse country and right by the ocean.” During their trips, the Parisis would dine

regularly at eateries like Cap’s On The Water, The Floridian, Culinary Outfitters and Casa Maya. And while they fell in love with each and every restaurant mentioned, it was evident that the area was in need of a “really good, modern Italian restaurant” as Parisi likes to put it. “We had bought a house in Sea Grove, and during one of our visits noticed a sign on the building where The Groove Café had been,” the chef explains. “We weren’t ready to open a restaurant yet, so passed on the opportunity. Then Mermaid Café opened in the space for a few months.” After that eatery closed, it was time for Parisi to make his move. “I was a bit nervous about their being so many restaurants that had closed in the same location,” he admits. “But I trust our concept as we’ve been really succcessful in Colorado, and decided to go for it. Today,
Terra & Acqua has become a fusion of everything I’ve learned up until now.” KEEPING IT LOCAL Though he still owns his two restaurants in Denver, Parisi’s focus over the past 10 months has been building Terra & Acqua into a St. Augustine favorite. “A lot of locals come here,” said Parisi. “I picked this location as a place for families to get together with large portions and an ever-changing range of specials.” Parisi buys from local seafood and meat purveyors and even allows them to dictate what specials he’ll be serving that night. From regional wild boar to his signature double stuffed pork chops to grouper pappardelle, the menu is an explosion of authentic flavors refined from decades of Italian tradition. “I still get to Italy at least once a year for

food and wine shows and to visit friends and family,” explained Parisi. “I consider myself self-made. School is really important, but the passion for learning is more.”

ROGER LIM With a focus on healthy eats and local drinks, Roger Lim and his team at Brewz |n| Dawgz are committed to bringing new and exciting takes on American classics to St. Augustine. Photography by Brian Miller
Tending bar since: 1994 Opened up Brewz n Dawgz: July 2015 When did you get a taste for craft beers? I've been drinking European/Craft Beer since before I was supposed to be doing so legally. I really got a taste for the American Craft Beer movement in 1999 when my roommate at the time brought some beers back from Oregon and introduced me to Rogue!
Serving up clean eats and local brews isn't all this restaurant owner does. Roger and his team are dedicated to raising funds for charitable efforts, recycle appropriate restaurant waste, and offer local military, fire and police men and women discounts for their service.
Why all the local brews? Our entire concept is focused on offering locally and regionally as much as possible. So, why not introduce people to a wide array of beers from their own backyards that they may or may not have been aware of or able to get hold of? With 24 Florida crafts on draft, there is something for everyone!
hasn't had a good one that's right for them! I can narrow it down to taste by what they normally drink and then start the process of elimination by styles of beer and mood.
What's your favorite beer on tap? Radegast (Czech Pilsner) on tap is one of my all time favorites, but has not been available locally for many years. What kind of food can we munch on while trying all those beers? We focus on American comfort food specializing in a variety of gourmet style Franks, Brats and Sausages, as well as organic chili, organic french fries and house-made organic coleslaw, and everything we offer is as 'clean' as possible. We only use fresh or local organic/non-gmo ingredients and all of our meats are from real farms that are trusted
96
to provide the best humanely raised/grassfed meats without any antibiotics, hormones or nitrates/nitrites (except those that are naturally occurring from celery salt). We also offer many vegetarian/vegan and glutenfree options! How do you introduce the non-beer drinker or classic brew drinker to the new stuff? Anyone who says they don't drink beer, just www.STAUGUSTINESOCIAL.com
Most challenging part of your job? Being a business owner is always challenging and time consuming. Keeping up with the constantly changing draft line up and making sure it is up to standards. This usually means I have to test each beer we bring in. It's a tough job, but somebody's gotta do it!

CATCH 27 This downtown haven is a local favorite for seafood, cozy dining and its BYOB (wine, that is) policy. Written and Photographed by Steve Parr
T
here are fewer more satisfying experiences than finding some unearthed jewel of a restaurant in your own backyard. Just when you think you know about all of the “go to” places, another pops up. Well, that’s exactly what happened with Catch 27. If you're wondering about the name, it's actually pretty clever. "Catch", on a sign with a fish pictured on it, tells you it's a seafood restaurant first and foremost. The "27" tells us that the seafood they serve is all caught in the waters of Florida. Florida, you see, was the 27th state to join the union. "Catch 27". A clever mystery solved. The husband and wife team of Stephen and Lindsey Hutson first opened Catch 27 on
98
www.STAUGUSTINESOCIAL.com
Beyond the menu, Catch 27 signature small dining room is what their followers have always loved them for. The new location right around the corner on Cuna Street, while a bit bigger, still delivers that cozy feeling everyone loves.
Left: New Location on Cuna Street Hypolita Street three years ago. Their success at that location has allowed them to move to the current Charlotte Street location at the beginning of December, opening the doors on December 4th. The Hutsons are very "hands on" as owners, and they take a very active role in interacting with their guests. In a time when it seems that so much emphasis is put on volume; moving through as many customers as possible, it's comforting and encouraging to see owners who respond to more than just the bottom line. In a town that suffers no shortage of restaurants, they truly appreciate that people choose to dine with them. Believe it or not, getting fresh ingredients is a bit more challenging than you might think. Stephen has to call his local seafood supplier at 2 o'clock in the morning to put in his order, and the fish, already cleaned and filleted, arrives at the restaurant later that morning after the fishing boats unload their catch. Unless you're standing on the dock when the

boats pull in, your seafood just isn't going to get it any fresher. Of course, having the freshest ingredients is only part of the equation. It takes a magician in the kitchen to bring it all together and, in the case of Catch 27, there are two: Mallory Byrne and Joshua Smith. Byrne has been with Catch 27 since 2013 and Smith is the former head chef at The Ice Plant. Catch 27 offers a quiet, comfortable dining atmosphere in historic downtown St. Augustine that would be perfect for either "date night" or for a group of friends. Everything about it says "Welcome, and thanks for dining with us." It's hard to ask for much more than that.
