HELLO TASTE TRAVEL

W

hat is it with the human condition that traps us in habits we can't seem to break? I'm not talking about bad habits, I'm just talking about the ones that chain us to monotonous schedules, repetitive activites and prevent us from experiencing life – especially here in St. Augustine – at the fullest potential possible. Things like shopping at the same stores, ordering the same entree at your favorite restaurant everytime you dine out, never trying that new food truck that just popped up on your Instagram feed, or worse, never stopping at that cool looking British Pub on U.S. 1 you've driven past for 15 years.

Do you think our lives would feel more enriched if we tried something new each week? Met a new person, tried a new activity, ate at a new restaurant, made it a mission to explore undiscovered places in our town? I can't answer for you, but from my personal experience creating an issue where we made it our job to try new things and meet new people, it's a resounding YES for me.

SUP Yoga could very well be the best type of yoga, especially for us Floridians. Sunshine, saltwater, and serenity inducing yoga flow? It really is as awesome as it sounds. Traveling the world doesn't always require a passport. Take your tastebuds on a journey and experience something new in the Ancient City.

O

ur roundup of authentic international food in St. Augustine turned out to be more of an overwhelming task than we expected. There are quite a few incredible international restaurants in the area (traveling the Oldest City culinary world ought to require a passport) and narrowing them down was only the first step. We coordinated more photo shoots and ate more exotic food than we ever thought possible. But the results are stunning. Chef Marcel Vizcarra is clearly passionate not only about the beauty and quality of his food, but about his own Peruvian heritage. Llama Restaurant, newly opened on Anastasia Blvd, embodies the traditions of the owner’s birthplace and at the same time incorporates the local custom. For us, Llama’s food was the meeting of our city and the fascinating flavor of another country.

Grab your favorite lawn chair and settle in, because your Thursday nights are booked until September! Now in its 27th season, one of St. Augustine’s favorite summer-long music series is back to get toes tapping in the Plaza. Concerts in the Plaza offers a venue for the area’s best musical entertainment – from virtuosos of jazz to bluegrass and beyond – to serenade the community. The fun will kick off June 1 with the bluegrass tunes of the Driftwoods, meander through performances like the swinging jazz of the Big Pineapple and The Raisin Cake Orchestra, and finish out strong with Lonesome Bert & the Skinny Lizards, kings of Americana. Each week there will be music for everyone, so check the schedule for your favorites or make your way to the Plaza to experience something new. The concerts are free and open to the public. Guests are encouraged to bring lawn chairs or blankets to spread out on the grass and more comfortably enjoy the music. Picnic dinners are allowed, but alcoholic beverages are prohibited. MUSIC BY THE SEA CONCERT SERIES St. Augustine Beach Pier June & July Enjoy the 15th season of the annual Music by the Sea concert series, every Wednesday from 6-9pm. Each week features different musical entertainment along with a local restaurant pairing. Concert guests are welcome to bring a cooler, lawn chair, and blankets. Dogs are permited and welcome but must be on a leash. Due to limited parking at Pier Park, attendees are encouraged to ride the Trolley, which runs continuously from City Hall. The first trolley runs at 5:45pm and the last trolley leaves at 9:45pm. Food service begins and 6pm and music begins at 7pm.

L

et me preface this new column by telling you that I’ve never paddleboarded before. I’ve always wanted to, but it’s never something that I’ve gotten around to. So when Heather suggested in the office one afternoon that our first instillation of the “We Tried It” column be SUP Yoga, I was at best, well, apprehensive. I’ve taken yoga off and on for years, but the prospect of practicing it on a paddleboard on the water was a whole new proverbial ball game. And the fact that we were going to have a camera on us the whole time certainly didn’t alleviate any stress. When we reached the Lighthouse Pier bright and early, however, the owner of SUP Yoga Center and our instructor for the day couldn’t have been more motivating. “I’ve had students,” said Jessica Amendola, “that come here never having paddleboarded or even tried yoga. You’ll be fine.” I took solace in the fact that Jessica should know. Apart from spending nearly her whole life living near the ocean, Jessica boasts over a decade of experience in paddleboard and yoga instruction.

She started by giving us a quick paddleboard lesson and we spent some time paddling around the pier as a warm up. Finally anchored just off the pier, Jessica guided us through some basic yoga sequences. Though in the beginning your mind tends to be very focused on just staying on your board, Jessica’s calming voice and gentle encouragement quickly lulls you into an appreciation of the environment you’re in. The sound and movement of the (mercifully calm) water fills you and suddenly your practice feels more natural. Don’t get me wrong, it isn’t easy. You have to be very willing to focus on your body, but the practice allows you to get back to your fundamentals. SUP Yoga enhances every aspect of yoga practice. Careful and determined balance is essential; focused centering is more than just a suggestion; even spirituality is magnified by a physical synchronization with the world around you. Located on State Road 16, the aquarium sits on five acres and boasts an 80,000 gallon Florida reef habitat. Guests can get geared up and jump in to snorkel with over 300 reef fish. You'll be swimming with three Cow Nose Rays, Guitar Fish, Atlantic Rays and many other aquatic species. The Aquarium offers a thrilling look at some of Florida's fiercest and most elusive wildlife. Before opening, the founders of St. Augustine Aquarium, Shawn and Kathy Hiester, spent two years visiting aquariums across the country to get a better understanding of how they work. They hope that the Aquarium will allow them to share their passion for marine biology with the community, conduct future research, and carry out their mission of marine conservation through education.

The St. Augustine Aquarium caters to kids with behind the scenes tours, birthday parties, summer camps, and educational field trips. Within the walls of a college dorm room, creativity and enthusiasm are boundless. A tiny seed of an idea combined with unbridled enthusiasm led Flagler friends, Brian “Hank” Ruxton, Matt Pittaluga, and Josh Jaspan into an unexpected business venture. A class project coupled with a secret recipe resulted in the bottling and local distribution of Hank Sauce. Almost immediately, their product was flying off the shelves of local shops prompting the trio to return to their native New Jersey to build their brand. About their success, Matt says, “We stay busy when it comes to keeping the product in front of people and making sure we’re always doing sampling and face-to-face selling.” In just six years, the entrepreneurs launched their sauce and are currently building a 10,000 square foot manufacturing facility in Millville. However, it doesn’t stop there. They have also opened a restaurant in Sea Isle City, New Jersey. Matt says, “We wanted to launch our brand and our restaurant in New Jersey because it’s where we are from and what we know.” www.hanksauce.com

Armed with a backpack and a camera, Jim Kern tells stories, forges footpaths, and pioneers preservation efforts for America’s hiking trails.

ou never know who you might meet in St. Augustine. Jim Kern first came to our little town in 1978 with the intention of creating an eco-friendly neighborhood. Instead, he sold his block of land but vowed he would eventually settle here.

Kern traveled on for 12 days and 160 miles. Soon the phone began ringing with interested parties and that was the inception of the Florida Trail Association. As volunteer hikers began trailblazing and mapping, the footpath became more defined. It starts at the Oasis Visitor Center at Tamiami Trail and ends at Gulf Islands National Seashore in Fort Pickens.

As a young man, Kern’s passion for photography and exotic wildlife propelled him to travel the world. However, it was Kern’s love of nature and hiking here in the States which set him on the enduring project of curating a long footpath in Florida. The passion began after a hike on the Appalachian Trail in 1961. “After the hike in North Carolina," says Kern, "I began to wonder if there was a long footpath in Florida. There was none, so I founded the Florida Trail.” Today this trail is a 1300-mile hiking path which he launched with only an idea and some publicity.

Kern’s focus is to urge lawmakers and environmentalists to close the gaps in the trail. Four years ago, he founded Hiking Trails for America and three years ago Friends of the Florida Trail. “The mission of these two nonprofits is short and sweet," says Kern, "I want to see the hundreds of miles of gaps closed in our nation’s hiking trails. My heart is in Florida, but all hiking trails in America are important.”

Kern was living in South Florida in 1966 when he began to conceptualize what would become his life’s work. Captivated with the idea of blazing a trail through Florida, he decided success would be dependent upon publicity. He contacted MacGregor Smith, a friend and a reporter from the Miami Herald and they set out together on the Tamiami Trail and hiked north.

Today based in St. Augustine, you might find Kern hiking in the Guana Matanzas Estuary or down in Okeechobee. No doubt Kern has stumbled upon some incredible finds on his many hikes. “Years ago in a vast area of stunted cypress I came across an enormous Cowhorn Orchid," he says, "one of the few times I’ve seen one in the wild as it is rare and often poached.” If you get the opportunity to explore the Florida Trail, give a silent thank you to Jim Kern. www.floridatrail.org

SUMMER GARDENING HEATS UP Unlike the rest of the country, summer is our hardest and least productive growing season. Have no fear, with a few tips you can extend your St. Augustine garden through July! By Shelby Stec

nce our night time temperatures stay above 80 degrees, tomatoes, squash, and cucumbers will struggle to set fruit and fight off pests and disease. Situating plants in an area that receives afternoon shade will help quell the brutal Florida sun. HARVEST AND PRUNE Pruning tomato branches that touch the ground and keeping water off the leaves of these plants will also reduce the chance of disease. If you see any disease or pest infestations, cut off the infected leaves, and dispose of them outside of the garden. After dealing with disease, make sure to wash your hands and pruners before you touch healthy plants! Harvesting veggies at the proper size will also ensure a longer season. If veggies are allowed to grow too big or go unpicked, the plant concentrates its energy on creating seeds, not more fruit. If birds or squirrels are stealing your tomatoes and peppers, you can harvest them when the shoulders of the fruit are maturing but the bottoms are still green. They will finish ripening on a windowsill. WATER THE SUMMER WINNERS Eggplant, okra, peppers, basil, and beans are the workhorses of the summer

Ensure you are watering enough during hot weather, if the soil is too dry these veggies will drop their flowers before fruit is produced. If the plants become top heavy, you can place a 2-3’ stake near the base of the plant and loosely tie the stem to it with twine. This is especially helpful in areas with heavy winds. FERTILIZE & PREVENT PESTS As the season drags on, you may notice yellowing leaves on your plants as they use up all the available nutrients in your soil. We recommend fertilizing with worm castings or fish emulsion if your garden needs a boost. Our favorite brand of fish

emulsion is Indian River Organics. Both amendments are non-burning and can be applied directly to the soil. As fish emulsion contains trace amounts of oils, make sure to spray in the evening to prevent sunburn on leaves. If you see aphids, very small green bugs that cluster on the underside of leaves or flowers, put a couple of drops of liquid soap in a bucket of water, dip your fingers in the water and roll the aphids off the leaves. Mixing ½ teaspoon of pure castile soap in a one liter spray bottle filled with water will also work if sprayed in the evening and rinsed off. Ensure there are no lady bug larvae, eggs or adults on the leaves as they are an aphid’s natural predator.

Staycation Home The Madsons disconnect from the everyday while reconnecting with what’s important at this seaside escape—family, fun and the beach! By Christina Benjamin | Photography by Ed Taylor

T

he Madson family happened upon the St. Augustine area due to a job transfer. Previously residing in Pennsylvania and Arkansas, North Florida was a big change for the young family of five. But after Paul and Laurel Madson settled themselves and their three children, Jaclyn, Jake, and Claire, into the wonderful community of Palencia, they quickly went to work searching for a fun beach destination where they could spend family time together and “start Florida living.” Enter St. Augustine Beach! Laurel says she had a strict list while searching for a vacation home for her family to escape to. It had to be close to home, have a view, and be within walking distance to the beach. Atlantic View street fit the bill perfectly. The Madsons had a realtor help them with the search, but by a stroke of luck, they found their current property on their own when a deal fell through on a neighboring house they had been interested in. They bought their little slice of beach paradise in 2010 only to find that mold issues would soon warrant a complete rebuild of the bungalow in 2014.

The Madsons didn’t take the news as a set back, but rather as an opportunity to grow their dream. Laurel says she and Paul were on the same page with their vision and had a lot of fun with the building process; they wanted it to have a light, airy feel with beachy colors. And a view of the gorgeous ocean that was only a stone’s throw away was a necessity. So they built up — 36 feet up! They went to the max height to be able to enjoy the magnificent third story view, where the main living space is situated. The third floor holds the favorite living spaces for both Paul and Laurel. “Nothing’s better," says Paul, "than enjoying a sunrise with a cup of coffee on the balcony,” but Laurel’s favorite spot is the kitchen. She loves gathering friends and family at the kitchen island where everyone can enjoy the view. She admits, “Even doing dishes is enjoyable with a view of the beach!” Family was the focus of this home design. The second floor houses bright, roomy bedrooms, and elegant en suite bathrooms. The master baths boast porthole shower windows that bring the outside in, for a spa-

like feel. The first floor offers a convenient laundry room when you return from great day at the beach, as well as a cozy family room for everyone to enjoy. There’s even a patio out back for the kids to shoot hoops! The love and time that went into choosing the impeccable design elements is immediately evident. From lighting to artwork, this seaside home lulls you into a relaxed beach vibe the moment you walk through the door. Laurel says she loves watching design shows, and she and a friend shopped the home décor aisles of local stores to bring her seaside vision to life. The cozy design is clearly on point, down to the trendy white, gray, and aqua color scheme that offers the soothing escape vacationgoers crave.

Seeing their beach home come together has been a dream come true for the Madsons. They realize how blessed they are to live in a community where it always feel like they’re on vacation. Every time they drive to their beachfront home, they still put down their phones and take in the enchanting sights of historic St. Augustine. “There’s just something about this town. It never loses it’s magic.” They don’t take living here for granted and enjoy having the opportunity to slow down and reconnect as a family in their second home. Laurel says, “the house has always allowed us to put life away for a minute.” Now however, Jaclyn, Jake, and Claire are older and more involved in after-school activities and sports, so the Madsons adjusted their lifestyle to fit the growing kids’ ever busy and involved schedules. BRIDGE TENDER Contrary to what residents might think, St. Augustine’s busiest intersection isn’t US1 and 312; it’s the crossroads of Florida’s two most active coastal byways. By Shannon O'Neil | Photography by Rob Futrell Since it was first built in 1927, the Bridge of Lions has mitigated traffic between scenic A1A and the Intracoastal Waterway. The weight of this task now falls to a team of bridge tenders from the Florida Department of Transportation. Working ‘round the clock, they hustle to get vehicle, pedestrian, and boat traffic through the busy intersection. “Safety is the priority,” says Dean Metrie, contract coordinator for FDOT and former bridge tender. “District 2 has an incredible safety record and it’s all owed to our bridge tenders.” At each shift change, team members – like Greg Pieper pictured here – go over logs and reports together, making sure that everything is operating as it should. Boaters will hail the tender when they need an opening and, as soon as it’s safe to do so, the tender will raise the twin rolling leafs of the span and lock them in place so the waiting vessel can pass through.

“During our peak season when the snowbirds are traveling in and out of Florida, we could see 700 to 800 openings a month,” says Dean. “For southbound boaters, our bridge tender is sometimes the first person they talk to in Florida, so we feel a little like ambassadors.” Once the spans are locked, the tenders can wander outside and watch the boats pass through. Sometimes, especially on the Bridge of Lions, they get to enjoy a little interaction with St. Augustine’s tourists. Greeters, safety monitors, and traffic stewards – St. Augustine has a bridge tender team who can do it all.

EMMA VOIGT Despite battling both injury and the daily stresses of excelling in high school, soccer star Emma shows strength and poise beyond her years. By Amanda LaConte | Photography by Brian Miller

I

t was December 17, 2015, about halfway through Emma Voigt’s sophomore soccer season, her second year as a varsity starter at Pedro Menendez High School. The game was against Matanzas High School, a formidable opponent. Emma took the field knowing that the stakes were high. She thought back to all she’d accomplished since starting soccer at age four. Then she thought forward to a showcase in which she was scheduled to play 12 days later in front of several coaches from top Division 1 colleges. Emma was well aware that verbal college commitments are made as early as sophomore year. Emma had the ball. She went to cut around an opponent and at the last second decided to cut in the other direction. With that, she heard a loud pop and immediately went down screaming. Emma begged to go back in the game but her coach and trainer said no, they knew the prognosis was bad. A few days later, an MRI confirmed the dreaded news – Emma had torn her ACL. Surgery was necessary and Emma would be unable to play soccer for nine months. Such a devastating blow at such a crucial point in time would be enough to crush the spirit of many aspiring athletes, but Emma is no ordinary young woman. She

proclaimed her goal to her family – she would “kick butt” at therapy and come out on the other side stronger than before. Her surgery went well and she started physical therapy the very next day. In August of 2016, after eight months of intense physical therapy, Emma was finally cleared to play soccer again for her junior year. Just two months later, Emma began talking with head coach Robin Confer at UNF. An official offer was soon made and Emma gave her verbal commitment. She was voted captain by her team, named by the Florida Times-Union as one of the top five women’s soccer “players to watch," helped her team make school history by making it past districts for the first time, and named offensive MVP for her team. She had 21 goals and 18 assists for the season, was awarded All Conference, All County first team, and All State. While many athletes see an injury as the end of the road, Emma used it as a stepping stone to the next level. Such poise and determination is not easy to come by, especially in someone her age. Her accomplishments are not limited to the soccer field – Emma is in the International Baccalaureate (IB) program at school and www.STAUGUSTINESOCIAL.com

maintains a GPA between 3.9 - 4.1, taking all college classes. She works part time at Aqua East Surf Shop and is a member of the Athletic Leadership Council (ALC). She balances all this with practices and travel schedules for both her school and club teams. Emma says time management is the most difficult part of her lifestyle, but her love of the sport makes it all worthwhile. “Whenever I step on the field," says Emma, "all my stress or anything I am going through just goes away." Her journey has not been without challenges, but the future is bright for young Emma. She looks forward to having a successful four years of academics and soccer with UNF and is leaning toward Sports Management for a future career. When asked what advice Emma would give to other aspiring female athletes, Emma’s answer runs true to her determined spirit. “Stay on top of things, and don’t let the little things distract you. If you want something, go after it with everything you have and don’t stop until you get it!”

he is a business owner. She is a mom. She is perseverant and approachably humble. She is Kelly Youngs, founder and heart of She is Fierce. If you’re a woman living in St. Augustine, chances are you’ve heard of, been invited to, or maybe even attended a local She is Fierce Speaker Series event. The organization also offers monthly local networking meet-ups, a weekly local radio show, inspirational articles from global contributors, and a global membership community. All of this has grown in a few short years. Kelly was a jet-setting media producer in London working a bazillion hours (no exaggeration, per Kelly) in her former life. When she and her husband decided to start a family, however, they decided it was time to change pace and return home to St. Augustine where her family has been since Kelly’s middle school years. Going from a fast-paced career in the big city to mommyhood in sunny St. Augustine was a bit of a shell shock for Kelly and she soon began wondering what she was going to do with herself. Kelly loved being a mom and had no desire to return to the rat race, but knew she needed a project through which to channel her inner drive. There was an idea that had been rattling around in Kelly’s head since her early career days. What if we could create a community where women could draw upon each other

for inspiration, advice, support? It would be a place where women could discover their true potential, feel empowered and accomplish amazing things. Kelly’s soulsearching season turned out to be the perfect breeding ground for such an idea to finally come to life. She is Fierce started as a website with articles for women to contribute and share and has been growing and evolving ever since. This summer will mark the third year of the summer Speaker Series held at the Treasury on the Plaza. Kelly says of the inaugural series in 2015, “I figured so much out about the direction we could go in – the pieces I loved doing and those that were maybe not the right fit.” This year, She is Fierce added monthly Networking Meetups in partnership with Bozard and RE/MAX. Each Meetup is hosted in a different local business and features one “fierce” woman and one non-profit. Kelly emphasizes the difference between She is Fierce and other networking groups that are more transactional in nature. “When somebody first encounters it, they might think it just a site for women or a networking group, it really is about highlighting stories www.STAUGUSTINESOCIAL.com

of women. The reality is everybody has a story and everybody’s had to struggle through something. It really highlights the fact that even these women we put on a pedestal have been dealing with that stuff, and it’s ok if you’re dealing with it too. It’s creating a community to help support those women as they’re figuring out what’s most important to them and getting through barriers.” Being a successful and fierce woman in her own right, the message Kelly shares with other women is whatever that thing is that you really care about – you can do it. “If you really genuinely care about something, you should invest your time in it and not be afraid to tell people that it’s important to you. I think that’s the #1 way people hold themselves back – because it’s scary to tell people that you care about something or that maybe I won’t be perfect at this. Meagan and Jeremy started dating exactly ten years ago. It took them a while to get to St. Augustine – a publishing career in Nashville for Meagan and world travel for Jeremy, as well as a brief stint together in the desert of New Mexico. But while in the dry heat of the Southwest, the two realized that they couldn’t stay away from the beach for long. So they made their way back East and into the beauty of the Ancient City. Now that they’re settled, they’ve truly become St. Augustine locals. Jeremy works as a Master MDT mechanic at Beaver Toyota and Meagan is a workfrom-home mom who freelances digital marketing for startups. on Veniard and his wife, Amber, own and operate Cultivate Tea and Spice Co. Their passion and appreciation for nature and the powerful benefits of natural ingredients, are what fuels the drive of the rapidly growing local company. A company that started from a humble beginning has now expanded to partner with other businesses. “I’ve always loved nature and how we interact with it," says Jon, "As soon as I had a little bit of land, even a patio, I started growing my own plants and herbs. I just became obsessed with it.”

Jon began his venture small by selling a few herbal teas and spice blends at local farmers markets. As his business grew, he decided to broaden his knowledge of locally grown herbs and spices and others from various parts of the world. This newfound scholarship led to exotic recipes that included smoked paprika, lemongrass, hibiscus, and Nigiri Blue. The delicious tastes and bold flavors served to further expand Cultivate’s reputation for quality organic goods. Soon partnerships with local businesses were developed.

Jon and his wife continued to grow small crops and herbs at home, filling every available space in their yard and soon they had an abundance of organic goods, much more than their small family could readily use. “What started as a hobby, making personal teas and spice blends, got to a point where we had more than we needed," Jon shares, "so we gave fresh herbs and spices to neighbors, family, and friends.” Those people with whom he shared his hand-crafted teas and herbs encouraged Jon to branch out and bring the delectable flavors to more people.

As Cultivate Tea and Spice Co. continues to grow, Jon Veniard pushes himself to increase his inventory with more natural products and delicious teas. Teas like Coco-Mango Black with its distinct tropical blend of black Ceylon tea leaves, marigold petals, sweet mangos, and coconut, exude a floral aroma. Quiet coastal tunes aren't the only music that the Oldest City has to offer. Tim Savage is here to introduce a new sound. Written and Photographed by Steve Parr

W

hen you think of the music scene in St. Augustine, it’s easy to get lulled into the comfortable mindset of jazz and blues along King Street or the sound of acoustic guitars wafting down St. George Street. But there’s an entirely different genre of music which is gaining a formidable foothold in St. Augustine. Call it hip hop. Call it rap. Call it whatever you want. Tim Savage just wants you to listen. The 41-year-old Massachusetts native was born in the small town of Newburyport, and the family lived in the small town of Win Henson until Tim was 12, when his family moved to York, Pennsylvania. His college years took him to Philadelphia, where he experienced “the big city” for the first time as an adult. He loved everything about Philadelphia – “In Philly, I got to live in and be around a city like I’d never been around before. So, when I got to Philly I kind of dove into it. It’s the “City of Brotherly Love” but it just punches you in the face.”

It was in Philadelphia where a 21-year-old Tim Savage first learned to rap. “I would go down to the open mics on South Street. I would show up and all these guys would be passing the mic. I’d be there rapping and I’d think I’m doing well and the whole room starts chanting ‘PASS THE MIC! PASS THE MIC!’ and for a second I thought that was good," he laughs. "It’s not good!” What draws Tim to rap? “It’s this algorithm of words in my head and I have this insatiable need to connect all these words together. When I first saw people who could do that it was like seeing math done to an equation for the first time.” Tim’s primary form of rap is known as “freestyle.” Essentially, you hand him a microphone and he goes off the cuff, unrehearsed and spur of the moment. It’s certainly not easy and it takes work to do it well. He says he was fortunate to come up around people who took their craft very seriously, and it compelled him to want to show them that he could do it, too.

Tim moved to St. Augustine in the spring of 2016 and quickly found a circle of performers who accommodated his skills as a rapper. There’s an obvious level of pride when he looks at this musical form; largely dismissed by many in the past, it's now being accepted as it is around town.“This is a really cool town to engage in. The town wants to welcome new people, good people. Quality over quantity.” Tim looks at his last 41 years as an investment in his future, whatever that may be. On any given night you can find Tim downtown at Stogie’s or on Anastasia Island at Planet Sarbez and Shanghai Nobby’s, passing the mic to others who share his passion for the art and the performance. When he’s not out rapping, he’s probably off somewhere doing what he can to change the world around him for the better or helping someone else do the same. BRIAN FREELAND More than a decade ago, Brian Freeland, St. Johns County’s 2016 Firefighter of the Year, stood in front of an open career horizon. The path he chose allowed him to save lives along the way. By Shannon O'Neil | Photography by Brian Miller

T

hirteen years ago, Brian Freeland found himself at a crossroads. Recently laid off from his job, Brian was searching for a new career or, more than that, a new passion. At the time, his brother-in-law was a firefighter, and Brian thought a job serving his community might be the ticket.

Over the next decade, Brian's new career path took him all over the county. His first post was at Station 14, on the corner of King Street and Holmes Boulevard. Though he began as a backseat fireman, within a year he was driving the station’s engine. That was when – at just the right moment – Brian's path intersected with two strangers.

He entered EMT and fire school and, upon graduation, applied for openings in different counties across northeast Florida. As fate would have it, the Jacksonville native wound up accepting a position at a firehouse in St. Augustine. “It was kind of a natural progression,” said Brian. “It was a good opportunity. While I was in school I met some great people who worked for St. Johns County, so I developed some relationships there and it just worked out.” One afternoon in late January 2007, Brian was behind the wheel of Engine 14 returning from a brush fire out in Hastings when his sharp eye noticed some unusual activity just off State Road 207. Brian quickly turned the truck around. What he found was a Ford Mustang overturned and submerged in a waterlogged ditch with a couple still trapped inside. Along with the two fellow firefighters onboard that day, Lt. Marc Grabert and Darren Hendrix, Brian pried open the door, cut the two passengers’ seat belts, extricated the victims from the wreckage, and

administered CPR until rescue crews arrived.

Thanks to Brian's alertness, training, and rapid response, both victims survived. “It was definitely one of my most rewarding moments on the job,” said Brian, who received a commendation for his work that day. “We were just there at the right place and right time.” Brian's coworkers and supervisors soon came to realize the fortitude he exhibited that fateful day was just the beginning of his commitment to the community. Through many moves, from Station 14 to Station 16, then out to Station 4, and eventually to the county fire headquarters at Station 12, Brian earned the admiration of his peers while moving up through the ranks. In 2016, St. Johns County formally acknowledged its appreciation by bestowing one of its highest honors on Brian, naming him Firefighter of the Year. “I www.STAUGUSTINESOCIAL.com

was very humbled,” said Brian. “I work with a lot of quality people who are deserving of awards and accolades in so many ways. It was a big honor for me to receive the award and it felt really good to be appreciated.” Now an engineer for the department, Brian has expanded his training to include a number of certifications including Hazardous Materials Technician, Urban Search and Rescue Technician, Marine Rescue Technician, and Aircraft Rescue and Firefighting response. He also added to his first responder skills by completing paramedics school. It’s been over a decade since Brian Freeland stood at an important crossroads and made a choice. The path he chose to take wasn’t the easiest, but St. Johns County residents have certainly benefited from Brian's sacrifices and perseverance. "It’s a lot of hard work and responsibility,” said Brian, “And you certainly don’t do it for the money. But it’s a fantastic job.”

ituated among the wooded areas and long, quiet roads of Elkton are the rust-colored hills and curving black berms of the First Coast BMX track. The track of tight turns and wavy jumps is the home of exciting competitive racing and a fun place for riders who enjoy the thrilling speed and stunning tricks of the sport. Anthony Sargent is the operator and the propelling force behind the track of both dreams and entertainment. Anthony is just as eager about BMX racing as the bikers who frequent and train on the track. As the operator of First Coast BMX, he takes on both the constant maintenance of the track and the business affairs. As a fellow BMX rider, Anthony understands and appreciates every aspect of keeping the track functional and up to par. He understands the expectations of other riders who are serious about the sport and it’s something that he has done since he became the operator of the track. “My sons and I built the track about six years ago after we took it over from the previous operator,” he says. www.STAUGUSTINESOCIAL.com

Operating the business calls for a lot of hard work, sweat, and dedication. They are all characteristics exhibited by Anthony, as he continuously seeks to expand the sport by keeping the track in top shape and full of enthusiastic riders. Anthony is very quick to point out that teamwork is just as important in running the track as it is in the sport of BMX.

Anthony Sargent has been engaged with BMX racing since he was a kid living in New York. He enjoyed the fun of riding for many years. As he grew older, however, life changes and responsibilities slowly pulled him away from the world of spiraling spokes and bar spins. “I’ve been riding since the eighties," Anthony explains, "but I stopped racing and started a family. I worked a regular job and kind of left BMX. When I left New York and came down here, my oldest son said, ‘Hey! I want a BMX!’ At that time, I kind of let myself go. I was about threehundred and fifty pounds. I came out riding with my son and lost one-hundred pounds! A couple years of riding got me in better shape. I still have a little work to do, but I’m feeling and looking a lot better.” Not only does Anthony try to stay fit for himself but also for the daily rigors of the sport and for running First Coast BMX in St. Augustine. To further compound that drive to remain healthy in mind and body, Anthony Sargent

also operates First Coast BMX of Daytona. His non-stop attention to both locations keeps him busy on and off the track. Operating the business calls for a lot of hard work, sweat, and dedication. They are all characteristics exhibited by Anthony, as he continuously seeks to expand the sport by keeping the track in top shape and full of enthusiastic riders. Anthony is very quick to point out that teamwork is just as important in running the track as it is in the sport of BMX. “The director of Parks and Recreation, Will Smith, and other county officials have helped us out here with lights, dirt, and many different things to keep the track going. A lot of volunteers help too. No one is getting paid to do this. It’s just a lot of love for the sport and for the community,” says Anthony. That love for the sport is a strong part of BMX and it’s what helps Anthony successfully operate First Coast BMX. It’s also what initially attracted him to the sport

as a kid – “In BMX, we all help each other. It’s a great dynamic between BMX and many of the other sports. No one sits on the bench. Everyone always races. It doesn’t matter what size you are or your skill level. There’s a place for everyone. Everyone gets a chance. Kids that don’t normally fit those traditional sports, actually do pretty well here. BMXers take respect for one another very seriously. There is no discouraging other riders. The group dynamic in BMX fiercely discourages that negative attitude. You don’t see that a lot in other sports, nor in life. If you’re willing to come down that hill, you’re immediately given that respect,” Anthony says with a proud smile. Anthony Sargent not only incorporates his knowledge and passion for BMX in his daily operations of the track, but makes it a point to show riders the morals of the sport. and the track. Anthony shares, “We have whole families that ride – mom, dad, and the kids. They all ride competitively, some even at the national level. We’ve had some national champions from this track, like locals Taylor and Jenson Koll. They’re kids from St. Augustine, from this track!” The excitement that Anthony feels about BMX is equally matched by his genuine excitement for the achievements and happiness of the riders on his track. As the sport of BMX continues to reach around the world, its growing impact and popularity generously affect Anthony and First Coast BMX. He prides himself in helping to develop the talent and skill of the increasing number of locals interested in the sport. By serving the local community with a great track, Sargent has also opened the doors for even larger crowds and events to First Coast BMX. He says, “We had an SSA (Sunshine www.STAUGUSTINESOCIAL.com

State BMX Association) event. There were three thousand people here! A couple of guys who ended up in the Olympics raced on this track at that event. The Olympics brings a lot to the table to make things evolve here.” However, no matter how many large racing events come to First Coast BMX in St. Augustine and no matter how many local stars rise from the dirt jumps of his track to world stardom, Anthony Sargent remains committed to the core values and basic fun of the sport. f you're one of the many people whose stomachs start growling at the thought of a Greek Salad loaded with olives and feta, you're about to fall in love with the Greek Wrap at Flavors Eatery. Caesar salad wraps were a pretty common occurrence, but a Greek Wrap was new on my radar until a visit to the downtown cafe. This spot on King Street serves a warm and abundant Greek Wrap with your choice of chicken or lamb, but they’ll also happily do a no meat option for vegetarians. I highly advise not missing out. In addition to the expected spring mix, kalamata olives, tomatoes, and tzatziki sauce, Flavors adds their garlic house dressing and just the right amount of melted, gooey mozzarella cheese. Trust me, it’s not a wrap you’ll be able to just pick up easily. The juices from the veggies as well as a plentiful supply of fresh ingredients necessitate silverware. And if all that weren't enough, each wrap is served with chips and a fresh housemade salsa. Their menu is pretty expansive and includes more than a few options for vegetarians. In addition to the Greek Wrap, the veggie wrap is another delicious choice. It’s loaded with

Portobello mushrooms, broccoli, cauliflower, squash, carrots, two kinds of cheese, Cajun spices, and their house garlic sauce. Be prepared when you order, though, because Flavors doesn't shy away with portion sizes. Their delicious wraps cover the length of a full dinner plate (but each entrée is under $10). In addition to their entrée items, Flavors Eatery offers smoothies (heralded as some of the best in town), beer, wine, and espresso. And if you still need an incentive, Flavors has their own free parking lot (a downtown luxury!). They offer a few outside seating options, and on the weekends, play host to live musicians. If you’re looking for a fresh and healthy lunch with plenty of vegetarian options, it's about to be your new spot. Flavors Eatery has been a staple in downtown dining for many years now. Culinary Character

MICHAEL LUGO One of the Ancient City's culinary icons, the owner of Michael's Tasting Room blends his own Puerto Rican heritage with the city's Spanish history for an experience like no other. By Matthew Shaw | Photography by Rob Futrell

T

here can be no doubt about it St. Augustine’s culinary scene has grown at a frenetic pace over the last decade. While the emergence of more ingredient-conscious consumer trends in larger metropolitan areas ignited the fire globally, farm-to-table inclined restaurants have fanned the flames locally. And while there was no big bang to spark the evolution here in the Oldest City, certainly chef and restaurateur Michael Lugo’s relocation from Dallas, Texas to St. Augustine in the early aughts predated the current wave of progress. Opened on Calle Cuna in 2006, The Tasting Room was one of the first restaurants in the area to focus heavily on quality, locally-sourced ingredients prepared in a traditional way. Today, Michael’s Tasting Room – as it’s now known – remains one of the city’s premier fine dining establishments, specializing in Spanish and

Puerto Rican cuisine with an emphasis on elegance. Michael grew up in Dallas, but it was family gatherings during his early childhood in Puerto Rico that first aroused in Michael a passion for food. “The culture in Puerto Rico revolves around food,” Michael says. “My earliest memories are ‘taste memories.’ I always call them taste memories because the palette is how you build knowledge.” In Texas, Michael began working in restaurants as soon as he was of age – everything from large corporate restaurants to small fine dining establishments. He says he gravitated toward the hospitality and customer service side of the restaurant industry, but remained passionate about the food, from preparation to presentation. In his early twenties, Michael cut his teeth working as a chef at Chamberlain’s Steak and Chop House, a high end restaurant www.STAUGUSTINESOCIAL.com

well-known in the state of Texas. “I knew at the time that I would end up opening my own place,” he says. “I put that as my end goal – to be a restaurateur, not just a chef.” Michael met his wife in Dallas, but says he always felt the culture and flavors of his early childhood pulling him elsewhere. He yearned to establish roots in a place with similar character. On a trip to visits his in-laws – snowbirds from Ohio who’d relocated to St. Augustine – Michael says he was struck by how much the city reminded him of Old San Juan, the historically significant Spanish outpost in Puerto Rico. After moving to the city in 2002, Michael worked in a variety of local restaurants, from a stint at The Raintree Restaurant on San Marco Avenue to helping Michael and Christine McMillan open the upscale Opus 39 on Cordova Street. “I spent a few years just getting to know the city and getting to

They were like 'Grandma’s house is weird.' But I loved it. I didn’t realize it then but that was the foundation for my passions.”

know people,” Michael says. “As the wideeyed, eager, late-twenties-person that I was, I thought, ‘Hey, everything is like Dallas.’ But, [St. Augustine]’s a smaller city – different personality. So it was kind of good that I took my time. I got the opportunity to work for some great people. I got a good feel of the town.” Michael says it was important to him during that time to understand what the city’s culinary landscape might be lacking. Interestingly enough he felt, although overflowing with architectural and historic remnants of its Spanish heritage, St. Augustine was in need of a restaurant that captured that same charm. “It was almost like it was a calling,” Michael says, discussing his informal investigation of Spanish cuisine. “The language was my original language. The flavors took me back to my grandmother’s cooking in Puerto Rico. Everything kind of clicked in a weird way. Like it was meant to be. More than

a historical connection, it felt personal. It brought passion into what I was doing.” With help from Michael McMillan, Michael Lugo opened the Tasting Room with the intention of establishing a fine dining establishment serving classically prepared Spanish dishes with an extensive menu of Spanish wines. The restaurant developed a dedicated following with locals and tourists alike. Michael also expanded the business model to offer off-site catering for events and special gatherings. A self-proclaimed eternal optimist, Michael is encouraged by the city’s culinary progress, as of late. He says, however, there is work to be done. “In the last three years we’ve had a blossoming of the beverage aspect,” he says, referencing the bevy of upscale cocktailfocused establishments now dotting the city’s downtown landscape. “Right now we are flourishing in the cocktail side, but I think that’s short-sighted. culinary scene like Savannah or Charleston, we need to expand beyond that. I really think we have an opportunity to attract the sort of destination diners that you see in other cities. We should push the dining and elegance, outside of the tourist price points.” As for his own ambitions, Michael has plans to develop a mobile food truck and kitchen to service off-site events. As the city’s palette continues to expand he says he’ll confidently continue to push it further. “Our philosophy is not for remembering tastes but introducing new tastes,” he says. “There are great businesses here doing great things. I only hope we inherently challenge ourselves to do more. I want us to be a bigger expression of our creativity and character.” 25 Cuna Street www.michaelstastingroom.com

DOUG MURR With a combination of luck and a penchant for innovation, brew master Doug Murr is venturing out on his own and bringing exciting new brews to Lincolnville. By Matthew Shaw | Photography by Brian Miller

I

n March, after a decade and a half as brew master at King Street’s A1A Aleworks, Doug Murr brewed his last beer for the popular restaurant and tap house. And this summer (if all goes according to plan) Doug's opening the doors at Dog Rose Brewing Company. It’s a bold move to venture into the world of sole proprietorship. There is a laundry list of variables – many out of one’s control. But it isn’t the first time Doug has allowed lady luck to have a say in a big decision. And given his track record of success in such matters, there’s no reason to believe he isn’t still playing with a hot hand. Case-in-point: Doug's arrival in St. Augustine was the result of a coin flip. He’d already decided to leave Atlanta, where’d been living in years prior, and the decision came down to the two sides of a coin – Asheville, North Carolina was heads and St. Augustine, Florida tails.

Tails it was and by January of 2002, Doug – who’d long worked in bars and restaurants – was heading up the brewing process at A1A. He was happy, but not quite satisfied. “You always want to do something that’s going to be your own,” Doug says of his decision to leave A1A in early 2016. Consistent with his past good fortune, Doug's leaving A1A coincided with the restaurant giving up its adjacent brewing facility and selling off its brewing equipment. Knowing full well he intended to go out on his own, Doug jumped at the opportunity and acquired the familiar equipment at a decent price. “It kind of all fell into place,” Doug remembers. Dog Rose Brewing Company – named after the Rosa Canina, a wild rose said to have medicinal properties – is just the latest addition to a neighborhood that has become one of the fastest developing in the city. “We are excited about being a part of Lincolnville,” Doug says. “There’s so much cool stuff happening over there. DESSERT FIRST BISTRO Dessert First Bistro made be a little hidden away, but it’s worth the hunt to experience fresh, local flavor and always housemade confections. By Molly Wilson | Photography by Rob Futrell

T

hough its owners carry with them a plethora of culinary skills and experience, the little bistro is a newcomer to the St. Augustine food scene. Back in April of 2016, owners Laura Highsmith, Heidi Fogle, and Rachael Rogers happened upon the space near the Vilano Bridge and fell in love. In August, Dessert First Bistro opened its doors to the public. That time of year is the slow season for the marina community, but the team decided this was a blessing. It was a period that gave them time to iron out details, perfect their menu, and discover their niche. As they head now into the busy summer months, they’re more than ready for the inevitable onslaught of patrons. Most of the bistro-goers are basking in the sunshine, lunching and sipping their espresso al fresco, as we wander in. Dessert First is bright and open, sporting trendy chalkboard messages throughout – “All You

Need is Love & a Good Cup of Coffee” – and boasting a mingling of the sweet, sugary smell of pastries and the unexpectedly savory. Laura, Rachael, Heidi, and their team – Chefs Sebastian Sikora, Billy Hodges, and Lucy Kamada – besiege us with some of the best offerings of their highly eclectic menu. We start with the Fried Green Tomato BLT ($8.50) – which, yes, is as good as it sounds – a take on the classic that consists of green tomatoes dipped in cornmeal and grilled, apple cider Cherrywood-smoked bacon, lettuce, and remoulade on toasted sourdough. The next on our plates is the Boulangerie Pork Sandwich ($6.50) which coats a fresh croissant in the mouthwatering remoulade before piling on a hearty portion of in-house slow roasted pork as well as avocado, swiss cheese, and an egg.

After satiating our inner carnivores, the menu took a left turn without deviating from the path of substantial flavor. We were hesitant about the Eggplant Sandwich ($7.50) at first, but were floored by the roasted heirloom tomato, grilled eggplant, arugula, goat cheese, and onion jam on housemade artisan bread. Vegetarians rejoice. Thankfully we left at least a little room for dessert – the aptly named bistro’s specialty. We were treated to a warm and gooey, made-from-scratch cinnamon roll ($2.95) that would have fully satisfied our sweet tooth until the Triple Chocolate Cake ($6.95) was brought out. The chocolate cake layered with chocolate mousse, chocolate ganache, and chocolate buttercream is not for the faint of heart.
