We had so much fun planning this issue! As a St. Augustine newbie this year, I got to know this great town in the best possible way – checking out every great bar and restaurant locals suggested I try! Whether you're a northern transplant like myself (Go Bills!) or a born-and-bred St. Augustinian, I'm willing to bet there are a few hidden gems on our 50 Favorite Things to Eat you have yet to discover! My favorites on the list? Tacos from Nalu's Tropical Takeout and Dos Gatos' Orange Jalepeño Margaritas. I'll never turn down a night out that includes margaritas!

It’s always my favorite time of year when the Locals Love List is published. I love finding out what businesses my community loves (and I usually learn about businesses that I have never heard of!). Who knew there was a brow bar called Amazing Brows at St. Augustine Outlets? Not me. Surprising since I love a good eyebrow wax. My other favorite part about this issue was the list of foods to try! We live in such a foodie town that coming up with this list was almost impossible – pretty sure we could have come up with at least 100 more!

I love this magazine and the people who create it (every issue requires work from over 20 people!). This being our 10th issue means over the last year we've created exactly 1,120 pages that uplift St. Augustine. My favorite fact in this issue? It takes just 24 hours for a potato to come out of the ground here in St. Johns County and then be sliced and fried into a Lays or Cape Cod potato chip! That is amazing. I also love our Eat Local Guide. I always fall into a food rut when it's time to decide where to eat, so we've deployed photographers to capture the best food in town and then styled the section to make it easier to find your next meal. Thanks St. Augustine!

Summer is my favorite time of year! Our warm weather really brings all the locals together. But, beyond the busy beaches, St. Augustine's restaurant scene is sure to be popular in the coming months. Just in time for the summertime rush, this June/July issue features The Faces of St Augustine Food Scene! This special advertising section gave us the chance to meet so many amazing chefs in kitchens across St. Augustine! I loved watching these great chefs flex their culinary muscles, plus I definitely added a few places to my own restaurant bucket list.

There is much too much goodness in this issue to just choose one thing. So I have a few! The early morning visit to Parker Produce was, hands down, the most fun I've had outdoors in a while. We got lost on the way, dreamed of how freeing it must feel to have a farmhouse with land (adding that to the bucket list) and I got to ride on a tractor. Another favorite? The strawberry datil ice cream I taste-tested at Gas Full Service Restaurant was the best flavor to touch my tongue – ever. And, I'll never forget the look on the tourists' faces when Jorge Peña started playing the violin in the Cathedral Basilica while we prepped for his photo - they were in awe!

ABOUT THE COVER Compiling and taste-testing the top 50 best bites in St. Augustine was a tough job, but someone had to do it!

I

t started with one lunch-time craving. A Back 40 quesadilla to be exact. After raving about our takeout meal, our editorial director suggested starting a list of our favorite dishes from restaurants in St. Augustine.

A few weeks later, we gathered the contributor team for our monthly editorial meeting with one goal – making the master list of dishes to share with our readers! We had seasoned St. Augustinians and new comers, vegans and proud-carnivores; in short, all the taste buds! After we made the list, we chose to photograph the most colorful, beautiful and notable dishes! On photo shoot day, Big Island Bowls owner Kelly Hazouri created a picture-perfect bowl for us while co-owner Brendan Schneck welcomed us with a cold coconut water. If you're searching for the perfect post-surf, pre-yoga or overall day-boosting meal – look no further.

First Friday Art Walk

Downtown St. Augustine First Friday of the Month Kick off the weekend on the first Friday of every month, from 5pm to 9pm, for a tour of the latest exhibits, music and entertainment at more than 20 participating galleries in downtown St. Augustine. at Roy is the owner of St. Augustine's very own CustomAquarium.com. The name explains exactly what he does. He designs, builds, and even maintains both freshwater and saltwater aquariums of any size. While he came to St. Augustine to work on the St. Augustine Aquarium (he’s building an 80,000 gallon snorkel lagoon), Mat also designs and builds custom aquariums for homes, restaurants, hotels, museums, and sports stadiums. The Marlins Park in Miami features two of his aquariums, installed just behind home plate. If Mat looks somewhat familiar to you, it’s because you may well have seen him before. From May until October, we are sharing the beach with more than just summer tourists. It’s Sea Turtle Nesting Season, and these tiny hatchlings are delicate, so remember to take a few extra measures to ensure their safety. Before leaving for the day, fill all holes left by sandcastles or tire tracks. Also, be sure to remove all beach gear, including tents and chairs, before dark and pick up any fishing line, rope or plastic you see. Never approach sea turtles emerging from or returning to sea. If you live right on the beach (lucky you!), remember not to use exterior lights. Photography by Brian Miller What's one thing you wish every St. Augustine beachgoer knew before stepping on the sand? That we have a beautiful environment that we need to respect. Clean up after yourself on the beach, leave no trace that you were there and respect the power and unpredictability of the ocean. Know your limits in the water and swim near a lifeguard. How many lifeguards are on duty at any given time? The full season runs Memorial Day through Labor Day. We staff on average 32 guards Saturdays and Sundays and 24 guards Monday-Friday. From March through Memorial Day pre-season staffing is in place which consists of seasonal patrols supplemented by 24/7 response from career Fire Rescue personnel. Is there any sort of special training you require St. Johns County Fire Rescue lifeguards to complete? Lifeguards are required to attend our Marine Rescue Academy which consists of eight hours of CPR training, 40 hours of Emergency Medical Responder and 40 hours of Surf Rescue Training. We also require all seasonal supervisors attend an Emergency Vehicle Operations course and Personal Watercraft Rescue Operations Course. Many of our guards are also certified EMTs and

We require all returning lifeguards to complete a minimum of 24 hours of refresher training every year. How many saves on average does a St. Johns County Fire Rescue lifeguard have each season?​ It varies greatly between beaches and guards, some areas have rescues almost daily when surf conditions are rough, while other beaches and guards can go an entire season without a rescue. We encourage our guards to make preventative actions such as whistling swimmers out of a rip current or away from a dangerous area that we hope will mitigate the need for a lot of rescues. Hardest part of your job? Maintaining a balance with all the day to day obligations of the job; making sure that

beach is staffed and there are adequate resources to respond to water related emergencies throughout the county while still allowing time for training both inside the department and with other agencies, as well as public education events in the community and administrative tasks. Part of your job that brings you back every day? I have the opportunity to work in a place that most people visit on vacation. I feel the most comfortable in the water and am thankful for the opportunity to work in a profession that allows me to utilize my skills in a meaningful way for the community that I live in. Can you tell us about your most rewarding save? I think that every save is rewarding in its own way. For the people involved in any given emergency it is often the most traumatic event they have ever been through. The the opportunity to intervene in a positive way whether its finding a missing child, rescuing someone in the water or assisting in a medical emergency is rewarding.

ST. AUGUSTINE MUSIC FESTIVAL For the past 10 years, Creative Director Jorge Peña and the St. Augustine Music Festival have been bringing free classical music performances to downtown St. Augustine. By Sarah McCartan | Photography by Brian Miller Year after year, Jacksonville Symphony Orchestra violinist and artistic director Jorge Peña and his team consistently deliver high quality concerts in support of their mission: "Entertain, Educate, and Elevate through Music." “I believe music — especially classical music — has the power to inspire us to do greater things, to change us for the better, and provide entertainment,” said Jorge. “We want people to come and hear how a first-class classical music concert can truly enhance our human experience.” Though his wife and fellow orchestra musician Jin (cellist) claims the festival was an overnight revelation Jorge brought to life, he explains it was an idea he had been thinking over for quite some time. He found himself drawn to the location of the Cathedral Basilica after he and Jin were invited to perform there. “Father Tim Lozier was looking for ways to make the church more relevant and visible in the community. He loved the idea and approved the festival,” said Jorge. The Cathedral provides a historic backdrop and offers wonderful acoustics for performances.

His goal is to make SAMF “the jewel of the nation...I want to invite everyone to come and enjoy listening to great classical music. You would have to travel far and pay for expensive tickets to go hear these musicians somewhere else,” said Jorge.

Since its inception, SAMF has grown to be a packed out event. Despite its size, it remains free to the public, making it the only festival of its kind in the United States. “About 150 people attended the very first concert, and each night attendance grew by word of mouth. Now the majority of the concerts are standing room only and the festival attracts many tourists who plan their vacations around the event,” explained Jorge.

Looking Back

A DAY AT THE BEACH 100 years ago, St. Augustine Beach was in its infancy. Today, it's a cornerstone to the St. Augustine lifestyle and tourism allure. So how exactly did it get so popular one century later?

y May in St. Augustine the tourist crowds are setting in for the summer, and you can start to feel the squeeze of congestion (more so than usual) downtown and along the beach. Vendors and restaurants are making plans and stocking the shelves for the impending crowds. It’s hard to believe that 100 years ago the concerns would have been the exact opposite. By May 1, 1916, most hotels were closing for the season. Back then, the bulk of the city’s tourist population arrived during the winter months to escape the northern cold, like today’s snowbirds. In fact, once the hotels closed the city entered into what was referred to in 1913 as “the dull summertime when there isn’t a bit of business.” However, about 100 years ago a big shift was happening, especially in St. Augustine Beach, and people began to enjoy the

Because of Jim Crow laws, St. Augustine’s black population (about 40% of the population in 1916) was restricted from enjoying the beach at any time of the year, and the development along the beach was only available for whites. Frank B. Butler would not establish Butler Beach for black beachgoers until 1927. Excursions to North Beach (Vilano Beach today) were common in the late 1800s. Travel via Capos North Beach Transportation (a horse drawn car on rails) would set you back $0.10 during the daytime, but $0.25 on Thursday night when there was dancing. Or you could travel to original North Beach aboard the Victory, captained by Frank Usina, on Sundays, Thursdays, and Saturdays (This was the predecessor of the Victory III, still operated today by the Usina family, giving tours of the bay). Haven, including an all day picnic and fishing, left from Corbett’s Dock (near the east end of Hypolita Street) at 9am and cost $0.50. While we still partake in similar recreational activities as our beach-going 1916 counterparts (fishing, bicycling, swimming, picnicking) we probably wouldn’t share their attire. Bare arms and lower legs were becoming common for men’s and women’s suits by then, but the term “swim suit” didn’t even enter our vocabulary until 1915. Reporting on a beach excursion in 1891 made up of 500 people, the Record noted that “it is estimated that during the afternoon 200 people frolicked in the surf.” When you visit St. Augustine Beach this summer and splash in the surf, remember those that laid the groundwork for your beach day in our beautiful city more than 100 years ago!

As managing partner of Ancient City Real Estate, Lindsey is constantly advising her clients to consider resale value. However, when it came to her own space, she took an entirely different approach. “Although my job is to help people buy property at a good value and advise them not to over-improve, my personal residence was definitely the opposite. This was just something I wanted,” she explained. Foregoing any thoughts of resale, Lindsey set out to create something magnificent that is very 'Lindsey.' She wanted a place she could fall in love with, a place where she could feel like she was on vacation

while at home — her own curated hotel experience. A condo at The Preserve acted as Lindsey’s clean slate for this project. She was attracted to the location and the lack of maintenance a condo demands. The Preserve is quietly removed from the hustle and bustle, yet conveniently located just east of the bridge, in close proximity to the beach, her office in Lighthouse Plaza, shopping areas, and downtown. “It's in the middle of town and 5-10 minutes from everywhere I need to be,” she said. Having rented within the complex previously, Lindsey was familiar with the property. The upstairs unit she selected to purchase is the largest floor plan available, and is tucked away in a corner of the complex, surrounded by trees. Her front door faces a green area, perfect for her poodle, Truffles. “I love how set back this building is and that I have a front yard for Truffles. The neighbors are always friendly and always planting fresh new flowers!” she said.

One of the reasons Lindsey loves hotels so much is the lack of clutter. In her space, everything has its own place. “I wanted to create my own luxurious space with no clutter. If it doesn't serve a pretty purpose, I don't want it in my house. Nothing extra. Nothing sitting out. Everything put away. No extra appliances,” she said.

Total Makeover In just 60 days — from August 19 to October 19, 2015 — Lindsey transformed her condo into a hotel-like retreat. As the sole designer for this condo flip, every decision was one that suited her wishes and aligned with her desire to create an “easy” space. “So much of my time working is spent making decisions. And while one of my strengths is decisiveness, I appreciate a vacation where I don't have to make a choice. Where everything is planned and easy,” said Lindsey. “So why not make home feel exactly like that? I designed a space that was easy and felt like my own personal hotel.” When guests enter Lindsey’s condo, music is playing while the visitors are led up a custom-tiled stairway, and round the corner into her completely open kitchen and living area. A quartz kitchen island

adorns the center of the space, with a light fixture situated directly above that mimics champagne glasses. Tucked away bar stools offer minimal seating. To the right is Lindsey’s living space, with an L-shaped white sofa. This inviting area opens up to the outdoors by way of a porch balcony. Gazing up from the open kitchen and living space is the loft, which is now Lindsey's home office. Illuminated from above with the help of a skylight, the loft doubles as her workout area. Just below, nestled under a spiral staircase is a nook dedicated solely to Truffles. Undoubtedly, the most notable transformation of the renovation is Lindsey’s sleeping quarters and closet. Lindsey turned what began as a two bedroom floor plan into a one bedroom with an en suite.

“I've stayed in some really fantastic hotels and indulged in too many spa days to count, so I wanted to capture that easy, stress-free vacation feeling,” said Lindsey.

She removed the closet from the master bedroom. She then used that space to build an expansive custom bathroom with a large, inviting bathtub, and designed a place for her to put her makeup on. Lindsey then opted to turn her guest room into her closet and dressing room. Here, her wardrobe is neatly displayed and intentionally organized and hung across all four walls. Everything matches and is purposeful, and in Lindsey’s opinion, is just as it should be. Music is constantly played in the background, controlled by Lindsey’s phone. Recessed lighting casts a subtle glow on the space by day, and at night, motion LED lights illuminate her way and twinkle as she walks. essential — for example, a dishwasher. Instead, she decided installing a wine refrigerator would be much more useful. “Although my kitchen is beautiful, I think I've only used the oven once or twice. [I] never even installed a dishwasher... I opted for a wine refrigerator. Who has time to unload a dishwasher?!” said Lindsey. As much as this condo is about Lindsey through and through, it’s also a place to invite her girlfriends and others over to for the sake of gathering together for a glass of wine and sheer relaxation.

MARC ANTHONY & JAMES SINCLIAR In a town as busy as St. Augustine, shop owners are always looking for a new way to get customers to take notice and walk in the door. Needless to say, a cannon outside the door of Spanish Main Antiques on U.S. 1 caught our attention. How I Got Here

CORY BUSICHIO Ocean Extreme Sports – the name says it all. Serving St. Augustine's thrill-seeking community since 1999, this beachside shop specializes in kiteboarding and standup paddleboarding. Its owner, Cory Busichio, blew into St. Augustine riding the winds of change. Now he’s staying put. By Matthew Shaw | Photography by Rob Futrell

ooking out towards the sea, Cory Busichio is, for the moment, trapped in contemplation. With the glassy, docile currents of Intracoastal Waterway to his back and the windswept peaks of the Atlantic Ocean in front of him, Cory stands above an aquatic crossroads, of sorts, as the waters of the Matanzas Inlet – which connects two of the main Northeast Florida aquatic thoroughfares – recede with the falling tide. The moment is short-lived however, as, without a word, Cory, a big smile drawn across his face, is already into his wetsuit and setting up his kite for an afternoon surf session. According to Cory, Matanzas Inlet provides some of the best conditions for kitesurfing – a water-based pastime that combines aspects of wakeboarding, surfing, sailing, and even gymnastics – in all of Northeast Florida. “[Matanzas] has really consistent winds,” he says. “It’s a pretty consistent spot for kiteboarding.” And he should know. Owner of the popular Ocean Extreme Sports – a kiteboarding and

paddleboarding retail store on Anastasia Island – Cory has built a life around waterbased activities. And, according to Cory, the relatively consistent quality of kitesurfing conditions in and around St. Augustine has increased his quality of life greatly.“We have such a great kiteboarding scene here,” he says. “We are a really tight group and we are always looking out for each other.” Setting the Hooks Cory grew up wakeboarding and racing sailboats on the Chesapeake Bay in Annapolis, Maryland. In the early 2000s, one might have encountered a wide variety of aquatic activities on the Chesapeake, from kayaking to fishing for highly sought after local catches like striped bass or rockfish. However, in those days kitesurfing was a fairly obscure hobby. “I remember there was one guy in our community, Jeff Silver, who was kiting [i.e. kitesurfing or kiteboarding] at the time,” says Cory. “My brother and I saw what he was doing and we were hooked. We went out and bought our own stuff and spent nearly the next three years teaching ourselves www.STAUGUSTINESOCIAL.com

how to do it.” Though Maryland provided enough opportunity to learn the basics, Cory felt the need to travel far and wide in order to get the best winds and waves for kitesurfing. Pilgrammages to the British Virgin Islands became almost annual endeavors as Cory’s obsession grew. “The winds blow down there everyday, so it’s perfect for kiting,” Cory says. “That’s where I really improved.” Don’t Let Schooling Interfere With Your Education In 2006, Cory moved to Daytona Beach to pursue a degree in aviation from Embry Riddle University. Was there a correlation between using his kitesurfing rig to navigate windy seas and flying airplanes? Not exactly. “I grew up flying planes, but I really chose to come to Florida because it was closer to the ocean and I knew I could kiteboard more,” Cory says with a laugh. While still in pursuit of his degree, Cory started working part time detailing the school’s fleet of airplanes. Within months an opportunity arose for Cory

Alternating between kitesurfing when the winds are up and paddleboarding on flat days, Cory found he was in the water more often, which is a good thing for him, of course. “With all the water around us here in Northeast Florida, I really thought paddleboarding was just such a natural fit for us.” he says.

to acquire an airplane detailing business, which had a contract through the Federal Aviation Authority for the work on all 65 of the school’s planes. The acquisition of this company was perhaps the first sign that Cory possessed an entrepreneurial spirit that came as naturally as his love of the water.

and giving up his apartment, Cory moved in with his parents, who had just settled in St. Augustine after falling in love with the ancient city during a road trip.

“Even though it didn’t last long, owning the airplane detailing business was a great experience,” Cory says. After a year Cory’s company was outbid for the FAA contract that was the main bulk of their business. Cory, now in possession of a degree in air traffic control, decided to just fold the company up. “It was a good lesson,” he says. “I figured out that I’d rather be kiteboarding than dealing with the politics of the FAA.”

Cory went to work part time at Ocean Extreme Sports, then owned by Daryl and Kristen Drown. Burned out on retail after 12 years in the business, the Drowns were looking to unload Ocean Extreme. Cory, who had become an invaluable employee, and who was already disillusioned from his prior experiences with the FAA, decided to forego his plans to become an air traffic controller and get into the kiteboarding retail business. He bought the company from the Drowns shortly thereafter, with Kristen staying on board to help with the transition.

Preparation Meets Opportunity The process of being hired as an air traffic controller is somewhat arduous. After completing mounds of paperwork, applicants often have to wait six months or more for the FAA to review their information and hire them on. As he waited for the FAA to do their thing, in 2011, after shutting down his business

Winds of Change Since acquiring Ocean Extreme Sports in 2013, Cory has grown the business exponentially, not only through his connections in the budding kiteboarding scene, but also by tapping into an emerging market. Years ago, inspired in part by the mediocre waves and windless days of a www.STAUGUSTINESOCIAL.com

typical Florida summer, Cory hopped on a standup paddleboard (S.U.P.) and tried paddle surfing for the first time. Cory expanded Ocean Extreme' s paddleboard inventory and, since doing so, has seen local interest in the activity grow exponentially. The shop offers rentals of paddleboards, as well as kiteboarding equipment. Ocean Extreme also offers both kiteboarding and paddleboarding lessons. Cory says taking lessons is especially important for those who want to get into kiteboarding. “It’s not a sport you can really figure out yourself,” he says. Cory’s fiancée, Emily, who he helped encourage into kiteboarding years ago, is now one of the main kiteboarding instructors for Ocean Extreme. THE WEBSTER FAMILY This family of six stays active around St. Augustine – it's easy to do when you have four sons who love sports as much as the Webster boys do. Photography by Bethany Walter Meet the Webster family. Chris and Jennifer met right here in The Oldest City. The two married 13 years ago and decided to raise a family in their own hometown. Jennifer is a running coach and co-owner at Empower Coaching and Fitness, endurance coach at The Exchange and physician liason for Flagler Hospital Imaging Center. Chris is an account executive for Design Extensions, a local digital marketing agency. On any given day, you can find this family bouncing from one soccer game to the next. Three of their four boys play for three different local leagues – PDA, Palm Coast Academy and Ancient City Soccer League, which means it's soccer The Webster Family time all the time. s much as we all love live music, we don’t always consider what’s involved in bringing it to life. Enter Dianya Markovits and Ryan Murphy of the St. Augustine Amphitheatre. The Amphitheatre first opened in 1965 and has served St. Augustine ever since. It has a seating capacity of 4,092. Filling a venue like this requires a team effort to not only bring in acts that people want to see, but also make sure that those people know which shows are on their way. Dianya Markovits and Ryan Murphy represent the force that drives concerts at the St. Augustine Amphitheatre. Ryan has the responsibility of actually booking the shows, while Dianya determines the target demographic and markets the shows to that segment of the public. Needless to say, they’re very good at their jobs. Ryan has been with the Amphitheatre since 2010,

while Dianya has been involved just over two years. Both came from a music-related background, however. In fact, they spent time working together at a Gainseville-based record label. When Ryan arrived in St. Augustine, his goal was to put St. Augustine on the map as a premier concert location as opposed to a sort of “B market” to Jacksonville. He found a balance between bands that the baby boomer generation gravitated towards and the acts who are more up and coming, like Jason Isbell or Alabama Shakes. He believes in trying to fill every niche, and sees St. Augustine as a location that is open to taking risks. It’s now gotten to the point where artists are coming to them. The Amphitheatre has acquired a reputation for taking care of not only the artists, but also those who travel with them. It’s not unusual for the children of artists, for instance, to be treated to a day at the beach or at the Alligator Farm. The marketing of the shows is something for www.STAUGUSTINESOCIAL.com

which Dianya demonstrates an incredible talent. She reaches into the fan base of an artist and bring them out. It’s up to her to to determine the mediums for advertising. Their biggest concert coups? Both are quick to mention Stevie Nicks and Robert Plant. Plant, in fact, had avoided St. Augustine until he started hearing reports about the quality of both the venue and the staff. That’s when Plant’s management started calling to book a show here. Who’s on their wish list? Realistically, Ryan says, Neil Young and Van Morrison are at the top of the list. The pair not only book concerts for the St. Augustine Amphitheatre, but the Ponte Vedra Concert Hall, as well. Last year they organized around 125 shows between the two venues. A Day in the Life

A Kindred Crop Trying to live a more "local" life but don't want to give up some of your favorite indulgences? You're in luck. That bag of name-brand potato chips at your next barbecue may very well be locally-sourced. Situated on 1,500 acres of sandy Florida farmland in Elkton, Parker Produce is a family owned and operated business selling to the biggest names in snack foods. rowing a potato is more like slow cooking in a CrockPot rather than zapping in a microwave. At least that’s how Prim Parker sees it. Potatoes need time, patience and a whole lotta love to make it from seed to sprout to a full on starchy, tuberous crop. Prim would know. He’s been growing the edible for more than 34 years.

The barn says it all. Parker Produce is all about the family behind the product. After the original barn Prim's grandfather marked with their surname burned down, the family rebuilt. After a few years with a bare barn, the family knew it was time to brand the side once again. There's no mistaking – the Parkers are here to stay. www.STAUGUSTINESOCIAL.com

“My grandparents on the Parker side moved down here in the late 30s from North Carolina,” says Prim of the farm's early beginnings. “My grandfather was coming back and forth to Florida all the time to buy produce, so he decided to come down here and grow it himself.” Parker Produce, just off of County Road 13A on County Road 305 in Elkton and approximately a 20 minute drive from downtown St. Augustine, has been in the potato business for nearly 80 years. Today, they are one of the premier suppliers for potato chip brands Frito-Lay and Cape Cod Potato Chips, which is owned by Snyder’s-Lance. “My grandfather got into potatoes in the

late 40s or early 50s,” says Prim. “He started doing business with Herman Lay of Lay’s potato chips and everything was done on a handshake in those days.” Like many farmers in today’s American agricultural society, Prim and his family members were born into the occupation. Prim owns 400 acres, his brother Scott another 400 acres and his uncle Fred and cousin Jeff farm together on 700 acres.

“We each farm our own farm, but we farm under Parker Produce as one entity when we harvest and for marketing,” Prim explains. “We’re able to move a lot more volume being combined as we are and it’s really worked out for us. We’re just a family that gets along and it’s really working.”


G.I. Joe's gone agricultural. After a few failed attempts with some "specialty" farm vehicles, the family decided to go back to basics. Retired government-grade trucks with "tires perfectly capable of mucking through a wet day" took over the farm's fleet. Today, the trucks ride in tandem with the havestingtractors.

Prim feels “blessed” to have been saved a spot in the family business. Establishing a farm is expensive – very expensive. The price of farmable land has skyrocketed. Owning a fleet of tractors, like the John Deer lineup that Parker Produce has, can cost upwards of a few million dollars. Not to mention the fulltime and seasonal labor, and all-around finicky character of Mother Nature’s cooperation during growing season. “My father died in an automobile accident when I was five,” says Prim. “And then my grandfather died a few months later. “My grandmother wouldn’t let them divide the farm up until my brother and I were of age. That was a blessing for us. We each got a little bit of land to start with and we had some business that went with the land through Frito-Lay.”

Prim has been farming since his late teens. He started right after graduating from St. Joseph Academy in 1980. This means that a lot of harvests have come and gone. “Harvest season starts late April or early May,” says Prim. “We’re a few days from harvest here and we’re fixin’ to go to seven days a week. That means that a typical day for me will include checking the water on our young crops, making sure the harvesters are out in the field doing what they need to be doing and that the graders are up and running.” There are thousands of different varieties of potatoes, but Parker Produce’s mainstay is The Atlantic, a staple in the chip industry that was developed by agricultural research scientists in the late 1970s.

Parker Produce supplies potato chip plants in the Southeast on a 24 to 36-hour basis. They need to supply enough potatoes to meet the chip demand with Memorial Day being the biggest chip sale day of the year. Prim says that the farm ships 800 semi-trailer loads in a six-week period and an average trailer load is about 44,000 pounds. That’s 35.2 million pounds worth of potatoes in a month-and-a-half. “In the summer months, as soon as harvest is over, we’ll start going through all of our equipment and clean everything up and start rebuilding all of the harvest equipment and put it up, so it’s good to go for next year,” Prim says. “We’re constantly doing maintenance in the slower times, which is July through August.”

Prim will be the first to tell you – Parker Produce is all about the collaboration of people who work hard on the farm day in and day out. Most of the employees are family members – and even those who don't share DNA are welcomed into the clan. Just as it takes a village to raise a child, and it takes a family to grow potatoes.

During the off season when potatoes aren’t in the fields, Prim and his family plant sorghum-sudangrass, which looks like corn, but doesn’t have an ear on it. TEDI'S OLDE TYME ICE CREAM Is there anything better than ice cream on a hot summer day in Florida? Not really. Hence the reason Tedi’s Olde Tyme Ice Cream shop on St. George Street is St. Augustine’s longest running ice cream establishment. In 1966, Henry and Esther Whetstone (yes, of Whetstone Chocolates) opened Ye Olde Ice Cream Parlor, which was renamed to Tedi’s in the early 2000s. “The store celebrates its 50th year in business this year,” said Robert Marston, sales and marketing manager for Whetstone. “And is most likely the oldest family-owned and operated retail business on St. George Street.” Carrying 18 ice cream flavors at any given time (they offer more than a hundred changing with the seasons), Robert says top sellers like Superman, Chocolate and Mint Cookie are available all year round. CHIP RICHARD As one of the most beloved restaurants in St. Augustine, coming up with new, innovative dishes to keep guests interested is part of the culinary game. By Alexter Albury | Photography by Rob Futrell

hile traveling down Highway A1A along the coast, you're treated to the sights of soft beige beach sand, cresting waves, wind-swept sawgrass, and million dollar beach homes. Rising like the shimmering heat waves from the road is the undeniable urge to take in this slice of Florida with all five senses. The beautiful scenery, the sounds of the ocean, and the aroma of delicious food wafting through the salty air compels the hungry traveler to stop and seek its source. That’s when Cap’s on the Water comes into view. Cap’s on the Water, a restaurant located between Ponte Vedra and St. Augustine, offers both indoor and outdoor seating. Whether sitting outside catching the last rays of the sun as it dips below the horizon or enjoying the company of family under the soft lighting inside the restaurant, Cap’s delivers delicious menu options that capture the essence of traditional North Florida coastal favorites. The list of delicious entrees on Cap’s menu requires the expertise of a skilled chef who takes pride in pleasing the many diners who frequent the popular restaurant. Chef Chip Richard is the young chef who prepares the menu. Originally from northern New Jersey, Chip moved to the area in 1997, and began his culinary journey at an early age. “I started working in the industry when I was about fourteen at a place called Eddie’s down in Palm Valley, washing dishes and doing some prep cook stuff,” says Chip. The ambitious chef eagerly learned and became one of the restaurant’s line

cooks. Chip then pressed forward with his burgeoning career by attending culinary art school. His ambitions later took him far away from the beach and palms of St. Augustine. Chip says, “I traveled abroad a little bit. I stayed in Italy for a month and a half. I got to do a little cooking while I was there, too.” While traveling abroad, Chef Chip Richard studied and cooked in Germany, Southern France, Holland, Switzerland, Nassau Bahamas and more. In 2003, Chip was hired at Cap’s on the Water as a line cook, and eventually became the head chef. Over the years, Chip has developed a close relationship with the restaurant’s owner, Bernard de Radd. Chip comments, “He’s kind of like a benevolent www.STAUGUSTINESOCIAL.com

He’s always taken care of me.” This relationship and mutual respect has allowed Chip opportunities to pursue other culinary ventures in restaurants such as The Blind Rabbit and others in the St. Augustine and Jacksonville area. For the last two years, Chip's chef’s hat has hung solely at Cap’s, where his role as the head chef is an integral part of the restaurant’s atmosphere and overall dining experience. As Chip continues his legacy at Cap’s, the culinary influences from his travels and experiences enable him to provide new menu selections. He says, “I’m working on menu development and taking the restaurant in a different direction from where we’ve traditionally gone. Food is

very popular right now. It’s important to keep up on all the trends. That's how you stay competitive.” Chip’s open mind and passion for providing the best cuisine for his diners are what cause the innovative chef to draw from everything he has learned in his life. “I cook a lot of traditional Southern fare. I like to take some of those dishes and use them as a springboard for other imaginative cuisine. I also have a very strong Italian influence from my time over there. My family is not Italian, but my mother is a great cook, and she cooked lots of Italian food in our house. Traditionally, we would eat Polish and Irish food, too. But there’s only so much you can do with perogies and potatoes!” laughs Chip. The unique tastes acquired from the

Mediterranean, Europe, and Asia, influence the young chef as he creates wonderful dishes that give diners a mouth-watering taste of his impressive imagination. The chef explains, “I try not to keep myself penned up into one particular type of cuisine. My daily goal is to try at least one new recipe.” One recipe that spawned from the chef’s daily call to push himself and his repertoire in the kitchen is called The Bloody Mary Baked Oyster. Although he was tight-lipped about its ingredients, Chip assured with a confident smile and a few choice adjectives that it is a very exquisite recipe that may appear on the menu as a special one day. They are just so solid! It’s a personal connection, too. We’re like a family. We've been rocking out phenomenal drinks since 2009. Not to mention our staff and our atmosphere! I love how our atmosphere is really geared towards a rock and roll vibe with great music during the day and DJs throughout the weekend. Things are always on the move at Dos Gatos. The menu is updated seasonally and the crowd changes with the time of day. The one constant? Devon is always dressed to impress. "Looking your best makes you feel your best, and when you're confident – you work harder and have more fun," said Devon. "Confidence is one of the greatest tools a bartender can have."

Part of your job that keeps you coming back night after night? Every day is a new day! In all honesty my mentor (and boss!) is one of my greatest teachers. We have been through thick and thin and I couldn't ask for anything else in leadership. But I can't forget about our guests and the bar itself. What is the most challenging part of your job? Determining whether someone has had too much to drink or not! We want everyone to come in and have great drinks and an amazing time, but responsibility has to come first and safety for our guests as well. What's the most quintessential part of the Dos Gatos experience? It doesn't matter who you are or what you want. We want everyone to have a good time and we have a very accommodating staff for that. This is exactly the case with The Bistro at Culinary Outfitters. Located on South Dixie Highway in St. Augustine, The Bistro is one of those places that you would probably never find if you didn’t know it was there, but it’s also one of those places that will be well worth the time you spend looking for it.

With constant attention to every detail we can possibly control, from the way you are greeted at the door, the quality of the food, the way the phone is answered, lighting, room temperature, music choice, candles and flowers for aroma and ambiance, to the way the check is presented- there are a lot of moving parts.
