ST. AUGUSTINE SERVES Just as it takes a village to raise a child, it takes a motivated team to create the magazine you have before you. While every issue is a collection of our favorite stories around St. Augustine, we're always bound to have a favorite!

As a Catholic in St. Augustine, the first story that came to mind for this issue is that of the Sisters of St. Joseph. I've seen the Sisters walking down St. George Street on their way home from Mass at the Cathedral and always knew there must be a story worth telling. We spoke with three Sisters, each with very different ministries, that serve our St. Augustine community to get the full scope of their local impact. Rather than limiting the word count, the Sisters quickly became this issue's extended 'Persons of Interest' piece (page 76) – hope you love it as much as I do!

I first met Barbara Lynch (page 72) months ago at Starbucks for a meeting to discuss advertising for her church. We immediately became sidetracked and she told me stories of all her travels around the world to help end human trafficking. Her stories were inspiring, sad and beautiful all combined into one feeling. I had never met anyone quite like her, and was blown away by all of her selflessness. She truly is a wonderful woman who, one step at a time, is making a difference – not just here locally but throughout the world. We’re lucky to have her in St. Augustine!

In celebration of Social's two year anniversary, we put a pilot and his bird on the cover. As you may know I spent almost 10 years as an Air Traffic Controller for the Federal Aviation Administration (FAA). During those years I "worked" hundreds of air ambulance flights. Helicopters inbound and outbound from accident sites always posed a logistical situation for controllers from a safety standpoint, pilots too. They also fly low and fast, so the next time you see one of these $8 million birds go overhead, be thankful for the professionals who are committed to transporting individuals experiencing the most difficult time in their lives. I spent more time this issue in retail locations then I ever thought I would in my life. Although I learned that the retail I once new and hated was completely different in a small business. These people absolutely loved their jobs, they loved their product and they really cared about the outcome of the store. That was so refreshing to me, something you do not normally see, and thats coming from a sales guy! Nikolaos, a TraumaOne pilot servicing St. Johns County (and beyond) knows that every day he has to fly, it's going to be the worst day of someone else's life... and that's a stress he doesn't take lightly. First Friday Art Walk
Downtown St. Augustine First Friday of the Month Kick off the weekend on the first Friday of every month, from 5pm to 9pm, for a tour of the latest exhibits, music and entertainment at more than 20 participating galleries in downtown St. Augustine. The Council on Aging provides nutritious meals for homebound seniors in all of St. Johns County.

By Meeka Anne eals on Wheels is one of the many programs that the Council on Aging provides seniors in St. Augustine and surrounding areas.
COA’s Emily Quam supplied the statistics of the program. Each week, between 200250 seniors benefit from weekly deliveries of nutritious meals. (Those living in the far corners of the county may receive bi-weekly delivery.) The program delivers around 1300 meals per week. Those with limited mobility and resources benefit greatly from the knowledge that someone will be dropping in on them, not just with a hot meal, but also with a kind word. Those who have financial resources yet have experienced situations such as surgery or a fall can also benefit from this program by enrolling in the private pay option. The 250-plus volunteers are the heart of this
program. Those who generously donate their time to program participate in the assembling of the meals, or the logistics of getting the food to the participants. In 2010, a wonderful addition of pet food delivery was added to the program. According to Michael Large, the COA Care Connection Coordinator, this program currently delivers meals for the pets of 41 participating seniors with a total of 64 pets. The program also offers assistance with preventive pet care in collaboration with Johns Veterinary Clinic, Murabella Animal Hospital and the St. Augustine Humane Society. In the works in St. Augustine Beach is the implementation of a search and rescue K-9 division for missing children. Chief Robert Hardwick has always shown a special interest in children and this has become his “pet” project. In the past, the force has had to rely on resources that may take up to an hour to arrive. The commission recently agreed to allocate the funds to add a canine to the force, which is specifically trained to search for missing children. T
he Empty Stocking Fund is a longtime tradition of Morris Communications that started by simply sharing a story many, many years ago. In 1928, an unsigned opinion editorial from the December 12th issue of the Augusta Chronicle praised efforts in the Southwest Georgia town of Albany which had set up an “empty stocking fund” to benefit children. Inspired by the effort, two years later The Chronicle started its own Empty Stocking Fund raising $869.29 in the first year. Since then, The Chronicle continued to urge donations every year and in doing so, the fund grew and grew. Decades later, the program is now carried out to support local communities in nearly every market Morris Communications has a publication in. The Record’s newly named Publisher, Tony Bernados will continue to carry on the company tradition in his new position. “Being new to The Record and St. Augustine, I’m curious to learn more about

the true needs of our community and excited to see for myself the outpouring of support from our readers this year,” says Tony. The fund is a 501(c)3 organization run entirely independent from The Record. There are no administrative fees, no costs. What goes in, goes out. “We absorb all the admin costs so that all the money donated goes to those in need,” he says. While the program runs during the holiday time, the support isn’t just relative to Christmas toys. “We’ve purchased everything from eyeglasses to air conditioners,” he continues. Families in need can apply for assistance by filling out an application at The Record or with partnering agencies like United Way and the Council on Aging. When the fund kicks off in November, The Record publishes a new story daily about a local family to show the

St. Augustine resident, Katelin Maloney, has dedicated her life to speaking for the voiceless and the broken down. Ten years ago, she began writing her fast paced and engaging novel, Drowning, that deals with a woman in an abusive relationship. As a domestic violence survivor herself, Katelin felt the issue was near and dear to her heart and not only needed some way to educate the public on the prevalence of the issue, but offer hope for victims that they are not alone. Drowning became a perfect medium to get her message out. The novel is captivating and mesmeric and the problem of domestic violence is placed at the forefront, forcing the reader to come to terms with its reality. Veterans Council of St. Johns County assists all who’ve served and reside in St. Johns County.

t. Johns County is no stranger to veterans. Currently, over 22,000 have chosen to make St. Johns County their home and that number doesn’t appear as though it's going to decrease any time soon. With so many who’ve earned the title “veteran,” it’s nice to know that there’s an organization like the Veterans Council of St. Johns County to look out for them all. Established on July 4, 2001, the Veterans Council of St. Johns County is a 501 (C) 3 organization which acts an an advocate for veterans and veterans groups. While their mission is not to work with individuals, they act as an "umbrella" organization for groups like the Veterans of Foreign Wars, Disabled American Veterans, the American Legion and the like. In St. Johns County, there are a total of 28 of these organizations, and the Veterans Council, as dictated by their mission statement, serves to ensure that all of them are able to speak with a single voice. According to Bill Dudley (Lt. Col. USAF Ret.), Chairman of the Veterans Council of St. Johns County, St. Johns is a great place to be if you're a veteran. "St. Johns County is the friendliest and easiest county in the state of Florida for veterans to obtain the www.STAUGUSTINESOCIAL.com
services they require." Why is that, you wonder? "It's because of the attitude of our elected officials in this county. I can go before the county commissioners on just about any veteran need or request and will usually get a vote of 5-0 in our favor and I've never had a request denied." Along with helping veterans groups help their members, the Veterans Council of St. Johns County is involved in many civicminded projects, as well. Currently, the Veterans Council is working on a Veterans Day weekend-long event in St. Augustine, starting with a parade on November 11. "We're also having a film festival featuring five documentaries which include World War II, Korea, Vietnam, POWs and K9s for Warriors." The documentaries, produced by current Secretary for the Veterans Council, Michael Rothfeld, will play in a film festival held at the Corazon Cinema. The weekend will culminate with a patriotic concert, featuring Lee Greenwood on Sunday, November 13 at the St. Augustine Amphitheatre. The Veterans Council of St. Johns County serves a vital role by ensuring that all veterans in the county, and the groups which serve them, receive all of the help, guidance and direction they require. www.veteranscouncilofstjohns.org

DON TOLEDO HOUSE: AN INSINCERE GIFT Winston Churchill is often quoted as saying “you make a living by what you get; you make a life by what you give.” What better way to “make a life” than by giving a new house to a bride in St. Augustine?
T
he Don Toledo House almost fits the bill. Located at 36 Aviles Street, the two-story coquina house is part of the Sisters of St. Joseph complex with a small balcony overlooking the picturesque brick street. For many years it was advertised as being, “built in 1516 by Don Toledo, for his Indian bride.” With this sentiment, however romantic, the house and the Churchill quote share one thing in common: they are both based on lies. The quote is charming, but Churchill never said or wrote those words (The Churchill Centre keeps a running list of quotes that have been falsely attributed to the statesman). The house is old, but it wasn’t built in 1516 and there was no Don Toledo. For starters, that would have been 49 years before Pedro Menéndez came ashore and founded St. Augustine.

By Matt Armstrong The house was actually built by Gaspar Papy sometime between 1803 and 1817, which still makes it one of the few surviving colonialera houses in St. Augustine. The myth of Don Toledo wasn’t attached to the house until Everett C. Whitney leased the house in 1903, billing it as “Whitney’s Oldest House.” Whitney operated several other dubious attractions around town at the time: the Burning Spring Museum on Anastasia Island, wherein water from an artesian well was mixed with gasoline and lit aflame, to dramatic effect; and Whitney’s Ponce de Leon Spring, which was claimed to be the “original” Fountain of Youth located in West Augustine near the present day Crookshank Elementary School (the namesake for both Whitney Street and Spring Street, which run parallel to Masters Drive).

Even though Whitney only rented the Don Toledo (Gaspar Papy) House for five years, the myth stuck around until the Historical Society leased the house in 1939. It’s easy to be cynical about Whitney’s turn of the century tourist trap, but I like to think all the attention it garnered as the “oldest house” may have protected it from the wrecking ball. So many colonial-era houses have been lost over the years, and it could have easily been the same for this one had it not been that the crumbling plaster walls served to make the title seem more authentic. The house was restored in 1944 and still graces Aviles Street today. Maybe that was Don Toledo’s real gift (via Everett Whitney): he didn’t build the house, but he did help save it for future generations to enjoy.

T
he Marks decided on St. Augustine as the place to settle after a long-distance relationship which spanned Milwaukee to Miami. While visiting family, they noticed the area was becoming more sophisticated and the history of the city appealed to them. They made the decision to have their wedding in St. Augustine and soon the town became their permanent home. Stacey had long dreamed of owning a historic 20s era home. However, after a couple of failed attempts of procuring downtown treasures, the couple changed their approach. Kevin found the acreage and said, “I knew we could build something old here, be close to the beach, be close to town and still have the elbow room to do what we wanted.” Soon, they purchased the land and then waited and pondered for five years. When the time came to nail down the plan, the individual dreams of the extended family became the impetus for the Marks’ blended family compound. Stacey still longed for an old-fashioned Southern style farm home. Her husband Kevin, owner of Shoreland Home Builders, was excited to
utilize his talent and resources to do the construction. The collaboration of this group of dreams became a reality about a year ago when the Marks family moved into their new home. The piece of property coined “Dos Acres” by Stacey provided them with the key elements they required: family, functionality and space. Architect Anthony Harwell had collaborated with Kevin on several projects and they wanted him on this one. “Anthony is a purist when it comes to old homes and he kept us on track," says Stacey. THE PLAN The final plan included the main home with an expansive front porch and a large kitchen/family area. A detached garage with a luxury garage apartment on the top floor would house Stacey’s parents. Finally, a last minute idea to build a private guest suite with a covered walkway completed all the elements they were looking for. REPURPOSING The floors of the main home were constructed of reclaimed wood from an old mill in Tennessee. “It was lots of work

getting the floor in; most of it had to be re-planed and there was no way to make it perfect," says Kevin. “It’s not perfect, and that’s what I wanted with a big dog and little kids. I look forward to where the wear spots happen, so I can see where we live the most,” says Stacey. FAVORITE LIVING AREA Both Kevin and Stacey wanted a functional home that would work well for their family. Most evenings find the family sitting around a gorgeous reclaimed seven-foot farm table that Kevin’s aunt gifted them after they told her it was the type of table they were looking for. Above the table is a cage chandelier with Edison style bulbs, which completes the vintage feel. Across the room above the back counter Stacey opted for thick plank shelving with sign lighting for easy access to often used kitchenware. The oversized center island offers plenty of work space, which she

loves so her friends can join her in the kitchen on special occasions. Stacey’s eyes light up when she talks about hosting friends and family in her new home. “My favorite feature of the home is having enough space to invite friends over – indoors and outdoors. We were condo living so long that now having porches, a bonfire pit, guest room and a big farm table for everyone to sit around is all we’ve ever wanted,” she says. UPSTAIRS Kevin took a risk with a bright green (Behr Healing Plant) sliding barn style door which leads into the laundry room at the top of the stairway. This bold move provides a pop of color that sets the tone for the entire upstairs. Moving on to the master bathroom, a freestanding claw foot tub is the centerpiece alongside a functional roomy dual-head shower and his and her vanities – which

Kevin's aunt offered to give this kitchen table to the Marks on a family trip to Wisconsin. They couldn't refuse its rustic charm (even so far from home) so they bought a trailer to haul it back to St. Augustine.

August has a teepee (that he often sleeps in) and a wilderness theme, while Piper has a sweet vintage style metal cot complete with a country quilt and offset by a hanging canopy net. The top of the stairway houses a children’s book nook that would rival any library. The built-in book rack features an adjacent wood beam growth chart that is used by both the children and their cousins. The icing on the cake for Kevin and Stacey is sitting on their front porch while their children have the freedom and safety of playing in their large yard. KEVIN’S FUTURE PROJECT WISH-LIST As a builder, Kevin never stops thinking about the next improvement project on his list. On Father’s Day he started a deck extension after he realized there wasn’t quite enough space to house a big gathering. He said, “I’m not sure which one will be first, but my list of projects includes a chicken coop, a tree fort and a raised garden bed.”

JEROD MEEKS Jerod Meeks, owner of Arnett Heating and Air, Inc., joined St. Augustine Shrine Club 10 years ago, inspired by the group’s passion for helping children. By Sue Bjorkman | Photography by Rob Futrell As Restaurant Chairman of the First Annual Chowder Challenge for Children, Jerod says he’s just one of many “hard working folks” behind this important fundraiser. The fests’ goal is to have fun tasting (and judging) the area’s best Minorcan, conch, seafood and clam chowders while “maximizing contributions” to the Shriner’s Hospital for Children. Local Shriners’ events in the past have raised an average of $30,000 a year to support this hospital that provides specialty orthopedic and burn care for children regardless of the family’s ability to pay. Currently six local children are undergoing treatment through the Tampa hospital. Help the cause by just having a sampling, sipping Sunday Fun-day. Join the Shriners at the First Annual Chowder Challenge, October 30, 12-4pm at St. Augustine Amphitheatre. At least 20 St. Augustine independent restaurants are participating. ETHAN JOHNSON To this St. Augustine teen, there's nothing more enjoyable than combining his passions for surfing and serving others. More often than not you'll find Ethan Johnson at the beach riding the waves and prepping for his next day out in the water volunteering with Surf Quest, a program that serves to connect a caring community of surfers and people with disabilities. E
than Johnson is an amazing fourteen year-old St. Augustine High School student who truly enjoys riding the waves under the bright North Florida sun. What is so special about this avid young surfer is his desire to help others. Ethan found an interesting way to combine his love for surfing and his compassion to reach out and help others in his community. “About two summers ago I attended the Pit Surf Shop camp,” says Ethan. “That was the first time that I actually stood up on a surfboard.” He immediately felt that he had found his sanctuary and destiny in the shifting warm waters. He says about surfing, “I like the calm of it, not worrying about anything. When I stand up, the motion of being moved by the waves feels like time is slowing down.” That experience at camp introduced Ethan to the life of wave chasing and board wax that he would grow to love. It also led him to to join Surf Quest. Surf Quest, a program

run by the Arc of the St. Johns, serves the community by helping adults and children with mental and physical disabilities learn to surf and enjoy the waves of St. Augustine Beach. This activity is held every third Saturday of the month. When asked about his first time helping with Surf Quest, Ethan answers, “It was really fun! Some of the kids stood up on the boards on their first and second tries. It was really great to help!” One child attending Ethan's first outing with Surf Quest comes to his mind and an honest and inviting smile appears on his face. He says, as the memory unfolds, “There was this one kid that just wanted to keep going out in the water. He didn’t want to stop! It felt really good to be there with him, helping him surf. That feeling was so awesome!” Ethan's kindness doesn’t end with Surf Quest. He also assisted as the local Rotary Club fed the homeless last Thanksgiving. Then, landing a job at the Dustin Estes Surf School gave Ethan yet another chance to help others learn to surf. www.STAUGUSTINESOCIAL.com
Just as Ethan finds the mental focus and physical stamina to keep his footing on a wave barreling toward the hot sands of the beach, he also manages to stay focused on his education. As a student in St. Augustine High School’s AICE program (Advanced International Certificate of Education), his school work can be arduous, but he perseveres to keep quality grades. He even squeezes in time to teach his younger siblings to ride the waves. After a long day of school books and pounding waves, Ethan likes to enjoy his evening admiring the stars through a very impressive telescope that he purchased with funds earned from teaching surfing lessons. He says, “I like astronomy. On real clear nights it's fun to look at the stars. How I Got Here
NIKOLAOS KANELLOS A clear vision and some skillful maneuvering brought this helicopter pilot to St. Augustine. Fate – and a bit more maneuvering – has brought him back. By Matthew Shaw | Photography by Rob Futrell
T
o truly understand Nikolaos Kanellos’ love for his adopted home you’d have to see it from his perspective. In order to do that you’d first have to glean the Oldest City from a few thousand feet above – specifically from the cockpit of Nikolaos’ EC135 helicopter, which he flies all over St. Johns County as a TraumaOne pilot servicing University of Florida hospitals. Even that bird’s eye view wouldn’t tell the whole story, however. In fact, to really gain the proper insight as to how he got here, you’d need to travel another 5,000 miles to Nikolaos’ native city of Athens, Greece. From an early age, Nikolaos says he understood that his love for flying was profound. “I was lucky to be the kind of person who knew at an early age what I wanted to do,” he says. After earning a degree in aircraft engineering, Nikolaos enlisted in Greek Air Force, where he served as a Sergeant mechanic. “That’s where I really fell in love with the helicopter as an idea,” he says of his time in the military. Although he loves his home country – as evidenced by the years he spent in the armed forces – after his time in the service, Nikolaos shocked his friends and family when he announced he would be moving to the United States to attend civilian flight school. “My family thought I was crazy,” he laughs. “I knew no one in the States. I could speak and maybe understand 45 percent of the language.”

“It hasn’t been easy. I’ve had to work very hard to get to where I am. I am so proud that I get to help other people doing something that I love. And the fact that they pay me for it, that’s amazing,” says Nikolaos.
Despite his own reservations, Nikolaos says the training he would be able to undertake in the United States was well beyond what he could get anywhere else. Just two weeks after he was dismissed from the Greek Air Force, Nikolaos boarded a flight to the United States to attend Titusville’s Bristow Academy – the world’s largest civilian helicopter training facility. “My intentions were always to return to my family in Greece,” he says. “Looking back, I guess I was very naïve. Life ended up getting in the way.”

Nikolaos excelled at the Bristow Academy, earning certification as a commercial pilot, flight instructor, and instrument flight instructor. Upon graduation he was hired by the Bristow Academy as an instructor. Soon after, Nikolaos went on a date, traveling north to visit St. Augustine. And this is where, one could say, life certainly ended up getting “in the way” of his future plans, as Nikolaos fell head over heals not only for the city he was visiting, but with the person he was visiting the city with – another pilot named Jessica. In
2012, Jessica and Nikolaos got married. The location of their ceremony? Where else, but St. Augustine? “If I could have time back, I’d love to live that era again,” Nikolaos says. “It was such an exciting time. The learning curve for me as a new person to this country and as a pilot was ninety degrees. Then I met my wife. Things couldn’t have worked out better.” The couple moved to South New Jersey, where Nikolaos flew medical helicopters servicing the greater Philadelphia area. But they longed to return to Florida. “We hated the winters up there,” he says. When the company Nikolaos was flying for was bought out, he applied for transfer to Florida. He didn’t get the gig on the first try, but kept at it, finally landing a job to fly for TraumaOne, which was in the process of opening an operation based out of St. Augustine. Saving lives while flying a state of the art
medical helicopter, Nikolaos is living a life that is professionally fulfilling beyond anything he could have ever dreamed. “It hasn’t been easy. I’ve had to work very hard to get to where I am,” he says. “I am so proud that I get to help other people doing something that I love. And the fact that they pay me for it, that’s amazing.”
Northeast Florida from above. It’s a view of which he never tires. But, with a three year old and a ten month old at home, Nikolaos admits his current schedule – which had him working 12 hour shifts weekly, one week on followed by a week off – is just another perk on a long list. “To be able to see my family everyday is such a blessing,” Nikolaos says.
Oh, and the helicopter is pretty cool, too. The Eurocopter EC135P2 Plus (produced by Airbus) is a twin-engine helicopter equipped with night vision and IFR technology (which makes it possible to land in low visibility situations). The aircraft has incredible range allowing Nikolaos and his crew – which typically includes a paramedic and a flight nurse – to service an area that includes St. Johns, Yulee, Flagler, Putnam, and Clay Counties, as well as Duval and Volusia, when needed.
On his days off Nikolaos can be found exploring Anastasia Island with his family or stomping around downtown St. Augustine hunting for vintage finds. “I take the boys with me to look for old books and vinyl, which I’m a big collector of,” he says.
In emergency situations Nikolaos’ team can land virtually anywhere, but his main role is to transfer patients between facilities, in case a patient is administered into Flagler Hospital, for example, and the nature of his or her injuries exceed the capabilities of that particular hospital. With the Spanish architecture and the St. Photios Greek National Shrine, Nikolaos says there is plenty to remind of his home continent. While he’s got plenty of whirling and roving journeys left, he hopes his movements will be confined to the cockpit of his helicopter. Together they run The StarLight Project, a non-profit organization partnered with the Down Syndrome Association of Jacksonville that creates dream rooms and provides therapy equipment for children with special needs. Since the start of the organization in 2011, Cherie and Craig have reached out and supported 70 children in need. BARBARA LYNCH She felt called to South Africa to serve young women and children in need, but she didn't know where to start fundraising. Years later, she's visited countries across the world serving more individuals than she ever thought possible. By Alexter Albury | Photography by Rob Futrell

unning a thriving business can be as exhausting as it is lucrative. It’s a truth that Barbara Lynch, owner of Action Cleaning Services, knows firsthand. From cleaning executive business offices to putting a mirror finish on home windows, Barbara and her cleaning service does it all with professional care and courtesy. However, it's the mostly unseen part of her service that actually brings the most pride to Barbara. Through Action Cleaning Service, Barbara returns much of her business proceeds to the community through involvement with local charities and through donations to other charities. And this giving goes to the core of what makes Barbara who she is as a person and as a business woman. Barbara’s warm and caring heart is much too big to be contained in one city. Her kind and giving soul has to be free to serve many, many causes that extend beyond the boundaries of St. Augustine and America. Through the non-profit organization of Act 4 the Nations, Barbara has been given such an opportunity. “It’s all about feeding children’s programs, orphanages,human

trafficking rescue, and restoring hope to the exploited,” Barbara explains. Act 4 the Nations organization is a mostly womendriven missionary endeavor that sends its missionaries around the world to places like China, Nepal, South Africa, Cambodia, Thailand, and Honduras. Being in such an organization causes Barbara to spend a lot of time out of the country. Act 4 the Nations’ missionaries are responsible for paying for their own travel and necessities for trips abroad. These expenses range from hundreds to thousands of dollars. “I didn't know how in the world I was going to be able to pay for my first trip. But I heard God’s voice saying that he wanted me to go. So I knew that if He wanted me to go, He would provide.” Just as her faith yielded her to believe, through donations from friends and family, Barbara secured the funds for her first missionary trip with Act 4 the Nations. Every trip since then has been sponsored in the same fashion. While embarking on these missionary trips around the world, Barbara and the other women see and experience situations that www.STAUGUSTINESOCIAL.com
most American citizens cannot fathom. Going to places where open sewage runs down dirt roads, while shoe-less children play nearby, and hearing the painful cries of starving babies and the helpless wailing of their distraught mothers, are just a few of the things that Barbara experiences often on her journeys. “We only go where we are invited. We never know what we’re walking into. Every trip is different,” she says. One experience that Barbara shares takes place in Johannesburg, South Africa. “In Johannesburg there are these squatter camps that have about two-hundred and fifty thousand people,” she states. “They are small, densely populated pieces of land that the government gives to people who are fleeing from persecution in other parts of Africa. The government digs wells to give the people water. The people live in small shacks, and I tell you, those people are so thankful for what they have. They take so much pride in their homes!” While visiting these squatter camps, Barbara and Act 4 the Nations minister to the people through biblical teaching and by other efforts including providing food

SO I KNEW THAT IF HE WANTED ME TO GO, HE WOULD PROVIDE." and clothing. But witnessing such gratitude in such dire circumstances gives Barbara a wise perspective on her own life. Stretching out her hands toward the things in her home, she says, “That’s how I know that none of this matters. None of this really matters! Life is about so much more than just having nice things. It’s people that really matter.” Another missionary trip in a different country allows Barbara to see the horrible aftermath of human trafficking. Young girls, often ages fifteen or younger, are forced into prostitution, where they become indebted to their captors for food and lodging for years until they pay a nearly insurmountable amount for their freedom. It’s a debt that many of the young girls and women never earn enough to pay. However, with Act 4 the Nations she was able to make a real difference in the lives of some of these women. “We helped prostitutes that we got off the streets and taught them how to make jewelry to support themselves,” she says. By selling their fashion jewelry, the women find a safe way to earn money to support themselves and to escape a life of destruction. Barbara goes on to describe her experience with some special orphanages in Africa. “We go to these places called Baby Safe Houses. On the outside wall of each house is a slot,
which resembles a large deposit box at a bank. Women who cannot or will not keep their babies for any reason place their babies in the box and close the door. Once the door is closed, the mother cannot open it again. On the other side of the wall in the baby safe house, workers take the babies and clean them and feed them. The babies are all tested for H.I.V. and AIDS.” From there the babies are cared for in the orphanage. These abandoned children are given a chance at life that they may not have received outside the walls of the orphanage. Barbara’s involvement with Act 4 the Nations gives her a very uncommon lifestyle. It’s a lifestyle that a friend of her’s compares to that of a famous theatrical hero. Lynch explains her friend’s comparison, amidst laughter, “He says that I’m like James Bond! I said, not really, but if that helps you understand what I do, then go with it!” Like the jet-setting man of mystery and espionage also known as Agent 007, Barbara Lynch travels the world saving lives and giving hope. ELIZABETH ROTH This local muscian makes sharing the gift of music her business by weaving her talent into every aspect of life from teaching, coordinating inspiring and performing for others. Written and photographed by Steve Parr
I
n 1985, Elizabeth Roth came to St. Augustine for the summer. That summer has lasted 31 years.
Originally from Jacksonville, Elizabeth has logged some serious stage time. When she was 13 years old, her father bought himself a guitar, but he rarely played it. Elizabeth picked it up and hasn't put it down since. While she really just wanted to play guitar, she began singing as a way to accompany herself and play entire songs. When she was just starting out performing, Elizabeth says she dealt with nerves, stage fright and lacked confidence. She got a small notebook and started keeping track of the number of gigs she was being hired to play as a way to show herself that, despite her fears, she just might be able to do this for a living. When she'd been hired for her tenth gig, she began to realize that music could very well be her career. Now, as she's closing in on her 5,000th show, she looks to those small notebooks in which she's tracked her

gigs as a testament to both her career and the confidence she's built over the years.

She's also built quite a collection of small notebooks.
Her musical influences are varied. While she's quick to cite artists such as Billy Joel, Joni Mitchell, The Beatles and Led Zeppelin as having an impact on her music, she quickly includes classical music, specifically Beethoven and Dvořák, as examples of what she enjoys listening to during her scarce downtime.
When she's not playing at Tempo, The Conch House, Tradewinds, Zahariah's or any of the other many venues on her resume, Elizabeth can be found at the Florida School for the Deaf and Blind, where she's worked for the last 14 years. She's the Assistant Director for the Outta Sight Band and N’Vision, which are comprised of high school and middle school aged students who are visually impaired. Members of the Outta Sight Band have to audition and they perform between 25 and 30 shows a year. What's been her most rewarding experience with music? While she's rightly proud of the work she does at FSDB, she's equally proud of the work she did with Body & Soul, a Jacksonville-based organization which would send musicians to perform at hospitals and nursing homes. "I've always believed that music is a healing thing," says www.STAUGUSTINESOCIAL.com
In addition to her solo performances, Elizabeth also performs with her group The Grapes Of Roth, with Matt Van Rysdam and Trey Moore. She finds herself performing roughly a dozen times a month, and this January will mark 25 years that she's been the Saturday afternoon performer at Tradewinds on Charlotte Street downtown. O
n Easter Sunday 1916, three nuns were arrested in St. Augustine. Their crime? Being white women teaching black children. Sisters Mary Thomasine Hehir, Mary Scholastica and Mary Beningus were charged with an interpretation of the Jim Crow laws. Yes, they were guilty. By this time they’d been teaching AfricanAmerican children at St. Benedict the Moor for 18 years. But they weren’t going to stop; they answered to a higher authority. The charges were soon dropped after the judge examined the law closer and ruled it didn’t apply to private schools. Amen. These fearless teachers were Sisters of St. Joseph of St. Augustine, a courageous group of vowed women devoted to living a consecrated life. This group began in 1866 in St. Augustine when eight Sisters arrived from France to educate and evangelize the children of freed slaves and the Lincolnville community. They faced prejudice, financial hardships, and many nights spent miserably scratching bed bug and mosquito bites. They even survived – and nursed others through – two Yellow Fever epidemics. Blessed with spiritual spunk, they met each challenge with love and strength, paving the way for the Sisters actively serving today. In the next 150 years, these remarkable Sisters would set up 100 missions and parish schools, essentially establishing much of the Florida Catholic School System. They first established the St. Benedict the Moor Catholic Complex, the first African-American parish of the St. Augustine Diocese and one of Florida’s first all-black Catholic schools. This school was used until desegregation in the 1960s. Currently, the local parish operates the Cathedral Parish Early Education Center, Cathedral Parish School and St. Joseph Academy Catholic High School. They’re renowned as prayerful, powerful pioneers in education, health care and social services in Florida.

FROM FRANCE, WITH LOVE Father Jean-Pierre Medaille founded the SSJ in 1650 in Le Puy-en-Velay, France. The group expanded to America when Florida’s first Bishop, Augustin Verot asked for eight “strong sisters, with a good head and solid virtue,” to come to post Civil War St. Augustine to serve an unprecedented community need. The first Sisters showed godly grit in their controversial ministry, while adapting to a new country, climate and language. They worked alongside a special group of Catholic priests known as ‘Josephites,’ whose mission also focused on ministering to Negroes. Now the Sisters live together in the Motherhouse, busy with a myriad of ministries. They serve the sick and dying, orphans, unwed mothers, teach hundreds

of students, and much more. Our featured Sisters each hear a different call, encouraged by Medaille’s belief that Sisters should “do whatever a woman is capable of.” SISTER BARBARA CEKOSH: LITURGICAL DESIGNER AND ARCHITECT Wearing jeans and a personalized “Sister” hard hat, Sister Barbara Cekosh is in a category all her own. She’s a Liturgical Designer with a degree in Architecture, as well as a Masters in Pastoral Administration. “I’m not aware of any other architects that are also Catholic nuns. There are a few priests in this ministry, but so far, no Sisters with my particular background,” she says. Congregations nationwide seek her expertise, in everything from drawing up blueprints to choosing the furnishings
to the SSJ because they told her from the beginning there was a place for her gifts and talents. "After 40 years, I can honestly tell you they did not exaggerate,” she says. “I am proud to have the opportunity to give back to God for all He has given me. I am grateful to be part of the Sisters of St. Joseph especially in the idea of finding God in all things, and in being a healing and reconciling presence to God’s people.” SISTER DIANE COUTURE: STAINED GLASS ARTIST Soon after the September 11th tragedy in 2001, the Pastor of St. Frances of Assissi Catholic Church in Manhattan asked Sister Diane Couture to create a Memorial stained glass window honoring all who were lost, including their own Father Michael Judge.

Before any work commences, she spends time with the parish until she truly understands the theological statement they’re trying to make. Locally, she designed San Sebastian Church, helped with the demolition project of the original St. Joseph Academy and helped put a new façade on the adjacent convent. Her financial compensation goes straight to her Congregation. Some projects are freebies, just to help ensure the project gets completed and God is served. “No one goes into religious life because of money so I have the unique privilege of choosing projects that are challenging and unusual, more than profitable,” she says. Being a Liturgical Designer and a Sister has opened up an amazing variety of ministries, she says. There’s been working with farm worker housing, carrying Eucharist to the homebound, being a founding member of HabiJax, and serving on hospital and Diocesan Boards, for starters. She joined the SSJ of St. Augustine after already graduating from the University of New Mexico, and working in the Jacksonville Urban Development department. She was drawn www.STAUGUSTINESOCIAL.com
“This parish lost many members in the towers, so their church members decided to create a memorial shrine,” says S. Diane. She and another Sister walked around New York, amidst the terrible chaos and ruin, gathering insight into how to radiate healing and hope with their art. Stained glass windows have a long tradition of offering light, love and assistance in response to tragedy and disaster, S. Diane says. As an artist whose spirituality is interwoven with creativity, she offers these same gifts. “Beauty begets beauty. If you surround yourself with beauty then that’s what you see and feel. Beauty draws us to the Depth of Soul where the true love and Beauty of God dwells,” she adds. The beautiful memorial window was revealed at the NYC church’s Remembrance Ceremony on 9/11, 2002. She says the experience continues to change and affect her life. She still receives inspiring emails from people who have found comfort in the memorial window. “We strive to create what God calls us to create for his people’s needs. The art is an avenue through which God touches and changes lives for many years to come.” After Hurricane Katrina, the National Guard asked her to help restore damaged stained glass windows in seven Mississippi churches and create new ones to replace those destroyed. She’s also created windows for Jacksonville’s Naval Air Station Chapel, Our Lady of Le Leche Shrine and the Cathedral Basilica locally and other projects in surrounding states. In 2009, she helped set up a Glass Studio at Beacon College of Leesburg, FL. “Once we complete a project we have the humbling experience that now God will begin his work through the windows. He will touch those who gaze upon them,” says S. Diane. S. Diane has served Sisters of St. Joseph for 43

years. She has a degree in Psychology and counseling and specialized in Gerontology and Oncology. While working in a Catholic Nursing Home, she discovered the ministry of stained glass and answered its artistic call.

Beyond creating art, she encourages others’ creativity. She helped establish the Stained Glass Studio in 1992, where artists design, paint, fabricate and restore stained glass for churches, homes and businesses. The studio also offers classes and workshops for all ages and abilities. She’s especially zealous about teaching art to children.
SISTER THOMAS JOSEPH: AUTHOR AND HISTORIAN Sister Thomas Joseph has witnessed almost half the history of her fellow Sisters; she’s been serving for 73 years. Now 90, she says, “Our Sisters today continue with the same spirit as our foundresses; however the needs of the Church and the people are quite different now. Hopefully we have the same measure of zeal as they did!”
“It’s important because it trains and enlightens that part of the brain that learns to see a whole picture. It teaches the art of reflection and quiet. It’s essential to the development of full human beings and the next generation of good citizens,” she says. Keenly aware of the Sisters’ legacy, she says, “We stand on the courage, strength and love of the Sisters who have gone

When she joined in 1944, the reason for her devotion was beautifully uncomplicated; “I simply believe it was God’s will for me. I desired to give my life for others.” From 2000 to 2010, this esteemed and humble historian worked in the Congregations’ archives. The invaluable access to these’ historical materials led her

to the very personal, enlightening letters written by the early Sisters back to their Motherhouse in France. Originally stored in the French Motherhouse’s archives, the letters were translated into English by the St. Augustine sisters. She was fascinated, inspired and “more than surprised” by the contents of the correspondences. “Because of them, we have the first-hand story of our founding history here in St. Augustine in 1866,” she says. Not just the “professional” news was relayed – how they educated the children of liberated slaves – but also often humorous tales of arriving by steamship, makeshift accommodations, and heat so oppressive it “boils in the blood.” There were also letters between bishops and mothers superior discussing the prejudice the Sisters’ faced. And their incredible determination to keep going despite it. The archives contain continued chronicles of the Sister’s works, up to the present day.
Sister Diane Couture delicately crafts stained glass pieces for Catholic churches windows across the state (and country!). What you don't see here? That'd be her to-do list including Irish pubs, restoration for private family homes and churches of all denominations. General Superior (Sister Ann Kuhn) asked S. Thomas Joseph to compile her extensive research into a book as a tribute to the devoted women through the generations. The result was “Beyond the Call: The Legacy of the Sisters of St. Joseph of St. Augustine, Florida," published in 2008. The book took on new life this year when Rich Conner, WJCT Producer/Director in Jacksonville, produced a one-hour documentary, “Celebrating 150 Years of the Sisters of St. Joseph, A Legacy of Faith.” It premiered in March on Jacksonville’s public TV and was
also shown to packed houses locally. “The PBS documentary is, for the most part, based on ‘Beyond the Call,” says S. Thomas Joseph. Both give lasting evidence to the major role the SSJ of St. Augustine played in advancing the Roman Catholic Church in 19th century Florida and Georgia, she adds. Though their double-decker tacos are worth writing home about – with a soft shell, hard shell and melted cheese in between – they also serve up delicious burritos, salads, nachos, beer, and breakfast. In local 904 spirit, breakfast kicks off at 9:04am and dinner closes out the day at 9:04pm. At Mojo’s, there’s no frills, only delicious, fresh tastes. Though their all day lunch and dinner menu board reads simple, Mojo’s makes their food memorable by taking a creative spin on classics. In addition to beef and chicken, for those seeking a more traditional island-inspired taco, shrimp and fish are available. If you’re hungry for something a bit more offbeat, check out the Mojo’s special chalkboard, where you just might find the Ahi Tuna Poké Roll, featuring ginger rice and seaweed salad. For vegetarian eaters, Mojo’s offers marinated tempeh and tofu. Rich with both flavor and texture, these options are anything but ordinary, and might even fool, or at least win over, a meat lover. Whatever protein you choose can be enjoyed in any form, though for the hungry diner,

it’s hard to pass up a hearty burrito loaded with beans and rice. While their creamy Mojo sauce is a signature, swap it out for guacamole and corn salsa and skip the cheese to make a tempeh or tofu selection entirely vegan. Once you’ve ordered at the walk up counter, your order is handwritten on a brown paper bag. When ready, your menu pick will be served in the bag with chips. Beer and other beverages are available from the cooler. And Mojo’s is now serving Local Booch kombucha tea. For those dining in, the best seats in the house might just be along the bar, lining the floor to ceiling windows. FRED MERO COSTA BRAVA Costa Brava’s new Executive Chef Fred Mero brings New York City experience and his South American heritage to create adventurous international fine dining in St. Augustine. By Sue Bjorkman | Photography by Rob Futrell
F
ine dining is like a Broadway play, Executive Chef Fred Mero believes. Before the curtain rises, or the first seating in this case, the ‘back of the house’ is buzzing. Not rehearsing lines, but busily chopping, slicing, stirring – preparing for the night’s performance of plating a delectably memorable meal for each guest. “Just like a Broadway show, you’ve got to do your absolute best and kill it every night. And then the next day do it even better,” says Mero. While diners don’t customarily applaud this kind of performance, Mero’s stylish blend of classical techniques and legendary creativity could inspire a raucous, ‘Bravo!’ The Broadway comparison comes naturally to this gourmet chef. He’s spent the past three decades building his remarkable restaurant resume in top establishments in and around New York City’s theater district. Now he sets the stage for greatness at the Costa Brava restaurant, the culinary heart of the circa 1888 Casa Monica Resort & Spa. Well-known in big city circles for his “enlightened menus and fresh perspectives,” Chef Fred was initially recruited by the Kessler Group, owners of

the Casa Monica and eleven other iconic boutique hotels nationwide, for the position at “The Mansion” in Savannah. But during his tasting for executives, Chef Fred's brilliant fish and seafood finesse inspired a change of venue. St. Augustine is where you belong, they agreed. Remarkably, the relocation from New York City to St. Augustine was culture-shock free for this Ecuadorian-born chef and his wife. “When they sent me here, I just fell in love with it. It felt familiar. My wife is from Colombia, and it reminds us of Cartagena. With all the history, the seaside, it reminds me of Europe, too,” says Chef Fred. IT’S ALL ABOUT THE MENU Kimberly Wilson, Casa Monica’s General Manager, says they feel very fortunate having Chef Fred lead the food and beverage operations, including catering and special events. “The menu is a true testament to his knowledge of worldly flavors and passion for locally-sourced ingredients,” she says. About that menu, Chef Fred has so many things he wants to do here – risottos, paellas, ceviche and fish, fish, fish. “Here we have such great seafood, shrimp and fish. I love combining fish with fruit, like salmon with a passion fruit or cherries, peaches. It’s all about getting the

best, freshest ingredients and focusing on the classics.” But don’t expect the menu to always remain the same. “All things should be kept seasonal. Strawberries are best in spring, so that’s when I’ll use them. Truffles are November and December, not yearround. Don’t mess with Mother Nature. She knows what she’s doing.” The same could be said for Chef Fred. INTERNATIONAL INFLUENCES Chef Fred was born in the coastal town of Guayaquil, Ecuador. In 1970, when he was four, his entire family immigrated to New York. “Naturally, we brought all our traditional South American cooking techniques with us. It gave my upbringing a different perspective. My mother was an excellent cook and made everything from scratch always. My breakfast was ceviche. My box lunch for school was soup or octopus,” he says. The transition from “ just a kid who loves food” to chef-dreams happened in college. He was playing soccer on scholarship at St. Johns University in New York when an injury halted his free ride. To get by, he washed dishes at a restaurant, then worked his way up through every job in the kitchen. “This was all way before the Food Network on TV. Back then you learned by doing,

CULINARY CAREER This began an almost 30 year career in NYC where he helped open Tropica and the
Trustee’s Dining Room at the Metropolitan Museum of Art. In 1994 he worked as the sous chef at the Four Seasons restaurant. He was “wildly successful” in helping transform their menus, resulting in glowing three-star reviews. Chef Fred's worked with many of the world’s top chefs – Wolfgang Puck, Alfred Portale, Fabio Picchi – just to name-drop a few. in Venice, Northern Italy, Switzerland, France, England and beyond. While executive chef at the Loeb Boathouse Central Park, the NY Magazine food critic described Chef Fred’s octopus carpaccio salad as the “best dish of its kind ever experienced.” That bears repeating: Best. Ever. But his way with eight-legged creatures was just part of his “surprising and adventurous” flavor creations. He has a knack for reawakening ho-hum menus into dishes that delight even the most sophisticated diners. NOW HE’S HERE Now his biggest focus is on challenging, motivating and building his culinary team. With crazy-long, intense shifts, it takes a certain mindset – and stamina – to make it. “It takes commitment. In NYC, teams stay with a chef for 10-15 years. They stay because they like the way things are done and what they’re learning. I’m working on taking us all to the next level,” he says. “And the Casa Monica is such a gorgeous destination place. I want the whole experience to be a combination of the highest hospitality. I want to make the Costa Brava the best of the best.” He loves that “best of the best” description. NON-COMMISSIONED OFFICERS CLUB For those who've served our country, the NCO Club of St. Augustine is a place of community and fellowship... and $2 beers on Thursdays. By Matthew Shaw | Photography by Rob Futrell
W
ith decades of experience tending bar in locales around the globe, it’s interesting to wonder about the banter that has found its way into the bartender’s ear of Kenneth “Woody” Woodruff. But, within minutes of talking to the Air Force veteran, it becomes abundantly clear that he’ll not be sharing any privileged information. Besides, the non-commissioned Officers Club’s regulars just don’t seem too interested in gossip. Located inside the cannon-flanked Mark W. Lance Armory on San Marco Avenue in downtown St. Augustine, the St. Augustine NCO Club was founded in 1968 to serve retired or active duty non-commissioned U.S. military officers. Before moving into the armory in 1972 the club used to meet at the White Lion on Cuna Street. It’s open to members on Thursday nights. Members are allowed to bring guests. Originally established as a place for those with a military background to rub shoulders with people who’ve had similar experiences, military clubs have been around for decades. “We’re similar to the VFW or American Legion,” Woody says of the NCO Club. “It’s a place for those who are in the service or those have been in the service to get together, chat, have a drink, or just hangout.” Woody, who’s served in the Air Force for 32

years, volunteers to bartend at NCO Club. An Idaho native who speaks in a fast and somewhat frenetic manner, he’s been in St. Augustine since 1991. Before that he’d bartended all over the globe. But Woody is much more interested in talking about the history of the NCO Club, than he is about his own personal history. “Egypt was pretty nice,” he says, quite matter-of-factly. The club is a pretty darn good deal. Membership to the NCO Club is just $1 per month and drinks cost just $2. Woody says his regulars – which usually consists of 10-12 members, but depends heavily on deployment – mostly just drink beer. “This is a beer crowd,” he says. “We drink Bud Light, Yuengling, domestic beers, stuff like that.” The club got rid of its kegerators some years back, so members drink from cans or bottles as they take advantage of the pool tables or dartboards. A few members have started a cigar club, which takes place every third Thursday, while on the first Thursday of each month, the NCO Club provides the main course for a potluck. lived. “Well, we stopped doing trivia about 6 months ago,” he says. The members were coming in for the potluck, but they wanted to eat and chat. They didn’t come in to play trivia.” Ninety percent of the money taken in by the bar at the NCO Club goes toward supporting several local charities, including Wreaths Across America, the Boy Scouts, the Girl Scouts, Wags and Whiskers Pet Rescue, and the March of Dimes Cancer walk. Woody says he always looks forward to opening the bar at 1730 (5:30pm for you civilians) each Thursday and doesn’t mind sticking around late, on the rare occasion when members want to push the conversations and revelry into the wee hours of the morning. But, he’s not one to push it there himself. And he’s certainly not barhopping. “I’m not really one to go out,” he says. “I really just like hanging with the guys at the NCO Club.” 190 San Marco Avenue 904-823-4748

t's no secret that there are a lot of great restaurants in St. Augustine. What's far less common, however, are great dessert shops. In fact, if you didn't know where to look, you might not ever find one. But, if you were to find yourself searching at the north end of San Marco Avenue, you'd be in the right spot. Owned by Nils and Bailey Rowland, Crème de la Cocoa opened in their new location this July. Both graduated from the University of Central Florida, Nils with a degree in Hospitality Management and Bailey with degrees in Hospitality Management and Marketing. Nils is also a graduate of the Notter School of Pastry Arts and has been featured on the television show "Cake Wars Christmas" on the Food Network. Nils has a simple philosophy when creating his desserts: "People don't gamble on dessert." It's with this in mind that he strives to offer the best confections possible. Bailey and Nils originally started with dessert catering, as well as providing local businesses with their delectable fare. Before

they opened their shop doors, you could find their creations at eateries as diverse as the Marriott at TPC Sawgrass, Casa Monica and even DOS Coffee & Wine. All of the desserts at Crème de la Cocoa are made on site, and the selection is extensive. There's something here for everyone and there's plenty to go around. From cookies to chocolates to pies, the selection begs you to bring your sweet tooth and to leave your diet at the door. A perfect start to your dessert tour would be the macarons. A macaron is a meringuebased confection, filled with buttercream that is delectably sweet. They're a feast for the eyes, as well, as they're one of the more colorful desserts you'll find. Care for something a bit more substantial? The sticky buns are downright decadent and would pair rather nicely with cup of robust coffee. Be forewarned, these are temptingly gooey and, if you eat them with your hands, it's going to be a mess. A yummy, satisfying mess. Are

chocolate truffles more your thing? Well, you're not going to be disappointed. All of the chocolates are hand-casted in dark, milk and white chocolate. Flavors range from milk chocolate and peanut butter to cinnamon whiskey. You'll be hard pressed to choose a favorite, as each one seems better than the last. Crème de la Cocoa also serves up some of the most amazing pies and cakes you're likely to find anywhere. The Snickers cheesecake (yes, it's exactly what you think it is) is a cheesecake lover's nirvana. Snickers crumbles are not only baked into the cake, but there's a generous helping on top, as well. Be prepared here: a little goes a long way. A single rich, tasty slice will challenge even hardiest of dessert appetites.
