Berries with Cashew Whipped Cream
I created this dessert one summer when I was craving fresh berries with whipped cream. Well, to avoid the high fat dairy and processed sugar (or worse yet, the processed vegetable oils and high fructose corn syrup and chemicals of non-dairy whipped topping), I decided to create a healthy yet satisfying alternative. You are sure to love this one!
Ingredients: 1 cup of raw cashews or macadamia nuts soaked in water for at least one hour 1/3 cup of dates soaked in water ¼ cup of date soaking water 2 tsp vanilla
Preparation:
Rinse and drain the nuts after soaking Put all of the ingredients into a high-speed blender and blend into a whipped cream consistency. Dollop over a bowl of fresh berries and enjoy

Simplest Ever Black Bean Chili
This is a recipe adapted from the Physician’s Committee for Responsible Medicine as part of the Food For Life class on Reversing Diabetes. You can do the gourmet thing and make everything from scratch but if you want something healthy and super quick, try this simple yet amazing dish. This is great for large crowds since it is so easy to make. Be sure to serve it over brown rice or quinoa and accompany with a green salad for a nice hearty satisfying meal.
Ingredients:
2 25-ounce can of organic black beans drained. 2 16-ounce jars of any organic salsa you love 1 16-ounce bag of frozen organic corn Optional Juice of two limes ¼ cup of cilantro chopped avocado Add cumin and salt and pepper to taste

Fresh Simple Salsa
The following are my own quick and simple salsa and guacamole recipes that do not take much fuss or preparation as the ingredients are simple. They are light and refreshing in taste, without any overpowering flavors, so they go well with any Mexican or Mayan foods you may be serving.
Ingredients:
2 medium tomatoes 2-inch piece of cucumber 2 T of red onion 2 – 3 T of cilantro Pinch of sea salt (you may optionally add garlic and/or jalapeño peppers)
Preparation:
Place all ingredients in a small food processor until desired combined consistency.
Servings: 6 – 8

Smoothie Inspiration
Blending foods can be wonderful for the taste buds and easy on the digestive system at the same time. It is a good idea to blend foods to assist with digestion and assimilation of nutrients as the blender helps to begin to break down the foods. A fruit smoothie, with added protein, healthy fats, and greens makes for a nutritious breakfast or snack. You determine the amount of each ingredient so that the taste is to your liking. For all recipes to follow, just place the ingredients in a good quality blender, blend and enjoy!
Simple Fruit Smoothies: Select favorite fruits and combine frozen and fresh if available. Add some fresh apple, grape or pear juice with water for more flavor and sweetness. Bananas in the smoothie add sweetness and creaminess. If you desire additional sweetness, consider adding stevia, Organic Zero or Lakanto (natural no calorie sweeteners) or honey, agave or pure maple syrup. Simple Freshly Cooked Tomato Sauce For a truly authentic Italian taste, be sure to try this late in the summer when you are inundated with fresh tomatoes. This tastes exactly how my grandmother used to make a quick bowl of pasta. Don’t hesitate to try some of the gluten free quinoa or brown rice pastas as an alternative to wheat.

Potato and Winter Greens Soup The guys in my family really enjoy this soup on a crisp fall day.
