The Chef ’s Corner Th e S o f t S he l l C r a b

It is said that the sweet and subtle flavor of fresh soft shell crab is the essence of the sea. The texture and delicious combination of meat and organs makes it my personal favorite sea food with blue point oysters and fresh caught tuna a distant second. Legend has it that blue crabs are influenced by the phases of the moon. In their natural environment they begin to molt their outgrown shells on the first full moon of May. This is when they are considered to be the highly anticipated soft-shell crab. Now for some people itʼs hard to wrap their mind around eating the whole crab, pinchers, legs and all, but try to think of it as a crisp flavorful crabmeat filled delicacy. Just try not to look ʼem in the eye before devouring them. Just kidding! Everyone knows you cut their peepers off with scissors before preparing them. LOL! Which brings us to the job at hand. I can break the cleaning process down into three easy steps. 1. Snip off eyes & mouth with scissors. 2. Remove gills. 3. Turn over and snip off the small flap known as apron. Now weʼre ready to prepare..... Soft shells are so versatile its ridiculous. You can grill, saute, deep fry, bake or broil them. We reserve the boiling process for their hard-shelled predecessors. For beginners, I recommend this..... Call me on Wednesday or Thursday, Iʼll order some in and you can enjoy them at the Stone House or.... dip them in some buttermilk then dredge them in Old Bay seasoned flour and saute or deep fry until crispy. They are great on sandwiches or an addition to any meal. I recommend a nice buttery Chardonnay, a grassy Sauvignon Blanc or “Iʼll have mine with a Dogfish Head 90 Minute I.P.A, Thank you” And remember, stay hungry my friends.
