Driving you Nuts! unil Sanklecha says that it is invisible ingredients that have catapulted his brand Nuts ‘n’ Spices into success, and given their products a quality that many swear by. “We try to maintain quality in every packet of any product we sell. The nuts and dry fruit business is rather dicey and quality depends largely on the agricultural harvests at one particular time. People say that only families that have been in the business, generation after generation, can really excel in this trade.” Well, people may just have been right on this count. Being the third generation of businessmen who made their fortunes in wholesale and retail of dried fruit and nuts, Sanklecha grew up learning the tricks of the trade from his grandfather and father who led traditional business set-ups - that ran as much on reputation as it did on astute business processes. In 1999, Sanklecha decided to take things a step ahead, and set up their first Nuts ‘n’ Spices store in Nungambakkam. Over the past decade, the brand has set up 13 more stores and has found its presence in Hyderabad too. Settled into an easy chair in his work station – a large Old Madras bungalow-turned-office – Sanklecha thinks back on his journey so far and is modest enough to admit that timing has been an essential ingredient in the success of his brand. He says, “Our timings was perfect. Just when we started,

everyone was beginning to get healthconscious, and wanted quality nuts and spices, and we provided them just that.” From low fat munchies and imported confectionary to traditional Indian spices and organic teas, his stores stock items that will catch the eye of the health conscious, and those looking for quality items to grace their spice jars and snack boxes in the kitchen. Briefing on their selling quotient, Sanklecha says, “Our brand is one that has been carefully created over the years by maintaining the quality of our products and is one that is visible even outside India; from day one we have always ensured we stock in-house made

snacks and cooking powders, stamped with our own brand – Nuts ‘n’ Spices - in our stores. That is what sets us apart, and will do so even if we ever share the market with international players.” Sanklecha also introduced the city to exotic teas, through Cup ‘n’ Saucer. A chic café that serves a wide variety of organic and herbal teas.

It also serves to market the teas available at Nuts ‘n’ Spices. “We wanted to allow people to taste these teas before buying them, and so Cup ‘n’ Saucer happened,” he explains. Having established themselves as a brand to reckon with, the next step for Nuts ‘n’ Spices is to make themselves more pan India, and open stores in all Indian metros. -

You can mix and match these kurtas with their patialas or leggings. Apart from the readymade clothing, you will also find salwar materials here with block prints, worked ones, kalamkaris etc. Kiah’s has a tailoring unit which stiches these materials according to your requirements. Amrita, the shop incharge, is a fashion design student. Not only does she help around the customers in the shop, but also guides them with designs which will complement the designer material they buy. “ These materials need special designs which will enhance its beauty and make it look grand and beautiful. I give suggestions on the neck patterns, sleeves and anything that I believe would add on to the beauty of the dress.”

With bright colour combinations, typically North Indian style is the USP here. “ People here in Chennai have started to prefer these styles. A while back this was not the case.” Amrita adds. Owned by Mr. Padam, Kiah’s was started six years back in Alwarpet, and the Nungambakkam branch was started earlier this year. College students and middle aged women form a major group of the clients. The sizes here range from S to XL, but even their S is a little big. Alterations are done here for free, so size does not matter in Kiah’s. And the different materials you find here are cotton, silk, silk mix, crepe and the like. The price ranges from Rs. 500 onward for kurtas and designer salwar suits can cost upto Rs. 4000. As I walk out with the smart cream kurta with an anarkali pattern work I bought, I make a mind check to drop in here before my cousin’s wedding. But even without the reason, the very collection here will make you buy.

Yet, it would be delightful to do justice to the festival if only we gathered its history for starters and later moved on to indulge in the sumptuous turkey treats! Known to be a harvest festival, it is celebrated mainly in the USA and Canada, on the second Monday of October and the fourth Thursday of November respectively. Though in today’s world it is taken as a secular holiday, there is an interesting tale about it . Of pumpkins and popcorns… It is believed that during the year 1620, more than a hundred pilgrims from England sailed across the Atlantic Ocean to settle in the ‘New World’, which now, is Massachusetts. Having arrived during the winter season, hardly could they harvest any crops, which led to the death of more than half of them who travelled so far. This is where the Native Americans came to the rescue! Having taught the newcom-

ers how to cultivate crops like maize and corn and venture into a fishing expedition, they were worshipped and praised for their kindness. While, at a later period the soil also bore other crops like barley, pumpkins and beans. Isn’t this reason enough for a toast and celebrations? Well, they thought so too! But, with a few exceptions. Hot pepper sauce – 1 tbsp

How to prepare: Heat the olive oil in a wide pan at medium heat. Add onions, garlic, green peppers and habanero pepper and saute till the onions are partially fried. Set aside Crumble in the ground turkey. Cover and cook for 5 minutes. Keep stirring till the meat is fully cooked. Add the onion fried mixture to it. Make sure the garlic doesn’t burn. CMYK

Garnish with chili powder, red pepper flakes, paprika, cumin, oregano, pepper, hot cocoa mix and seasoned salt. Stir it in liquid smoke, diced tomatoes with green chilies, tomato sauce and kidney beans. Add some beer to it. ood quality food is the basic requirement of every human being. In our country the food supply system is so vast that it involves middlemen at different stages and is exposed to fraudulent practices Adulteration of food / foodgrains is done mostly for gain and sometimes due to carelessness during processing, storing, transportation and marketing phases. Some of the common adulterated foods are milk and milk products, wheat, edible oils, cereals, condiments (whole and ground), pulses, coffee, tea, confectionery, baking powder, nonalcoholic beverages, vinegar, Chickpea flour and curry powder. According to the Prevention of Food Adulteration (PFA), Act 1954, the main criteria for food to be deemed adulterated are: If the product is not of the quality demanded by the purchaser; contains substances that affect its quality; and contains any poisonous or other ingredient that is injurious to health. If we start listing the number of adulterated products in circulation and the variety of adulterants used, it will be frightening indeed. For instance, a 16-town study in Tamil Nadu conducted by Centre for Consumer Education, Research, Teaching, Training and Testing (CONCERT), Chennai, shows that tea, clarified butter, honey and pulses are the most commonly adulterated items. The others include coffee powder, mustard, cooking oil, milk, sweets and soft drinks. Some common adulterants that are not easily visible include chalk powder in sugar and salt , starch in milk , papaya or andi mandarai seeds in pepper , saw dust in tea , vanaspathi in ghee and colouring agents in sweets. It has been found that when commodities are in demand or become scarce, fraudulent practices are resorted to by unscrupulous traders.. To detect common adulterants in foodgrains , the Annam test kit launched by CONCERT , with the support of Bureau of Indian Standards , will be very useful . It comes with 12 chemicals, 10 filter papers, two test tubes, red litmus papers, a magnifying glass, a pair of gloves, and a glass dropper. A booklet lists the procedure to test over 25 food items, including rice, wheat, milk, ice cream, juice, sweets, oil, jaggery, tea,

chilli powder, salt, honey and asafoetida. The kit costs Rs. 500 (excluding 4 % VAT and packing charges ), and can be obtained from CONCERT (Ph: 044-24494576 ). Now a look at the common adulterants :

CUMIN SEEDS (Grass seeds)

Rub the cumin seeds on your palm . If palm turns black adulteration is indicated.

- Artificially coloured foreign seeds as a substitute for cumin seeds.

Put a spoonful of sugar in a glass of water..while sugar will dissolve, the chalk powder will not..

- Poppy seeds and andi mandarai seed in black pepper - Sand, marble chips, stones, filth in foodgrains, pulses etc - Lathyrus sativus in Khesari dal alone or mixed in other pulses. - Foreign leaves or used tea leaves, saw dust in Tea. - Of course, we know about water and milk. Chemical contaminants:

Take 1 ml. of oil in a clean dry test tube. Add 10 ml. of acidified petroleum ether. Shake vigorously for 2 minutes. Add 1 drop of Ammonium Molybdate reagent. The formation of turbidity indicates presence of Castor oil in the sample. HONEY (Sugar , glucose or jaggery):

- Lead chromate in Turmeric whole and powdered, mixed spices

Add resorcinol and Hcl to a sample of honey. Appearance of cherry red colour indicates presence of sugar/jaggery.

PULSES (Kesari dal)

- Mineral oil (white oil, petroleum fractions) in Edible oils and fats,

- Cadmium in fruit juices, soft drinks, etc.

A few items are listed below:

Add 50 ml. Of dil.HCl to a small quantity of dal and keep on simmering water for about 15 minutes. The pink colour, if developed indicates the presence of Kesari dal.. You can also use a magnifying glass to find out Kesari dal which has a wedge shape.

MILK (Water)

CHILLY POWDER (Brick powder)

Put a drop of milk on a smooth surface. The drop either stands still or flows slowly leaving a white trail behind it. If milk is adulterated with water it will flow immediately without leaving a mark.

Pour the sample in a beaker containing water/ carbon tetracholoride . Brick powder will settle at the bottom.

- Brick powder in chilly powder…etc. HOW TO DETECT : (The adulterant is given within brackets).

Shake a little turmeric powder (suspended in water) with solution of rectified spirit.. The solution turns yellow immediately if it has dye. TEA (Used leave or dal husk) Take a filter paper and spread a few tea leaves. Sprinkle water to wet the filter paper. If coal tar colour is present it would immediately stain the filter paper. Wash the filter paper under tap water and observe the stains against light. To examine if your tea dust has iron filings, move a magnet through the sample. If it does, then the dust will stick to the magnet. The testing kit should be kept beyond the reach of children as it contains harmful chemicals. Use gloves while performing the tests. Food adulteration is a punishable offence under the provisions of Prevention of Food Adulteration Act, 1954 and the Rules made there under. Consumer awareness of quality of food and alertness in detecting common types of food adulteration can thus help in arresting this menace It is always advisable to buy food or foodgrains available at hygienic places. Consumption of cut fruits/vegetables/ readymade dosa dough etc being sold in unhygienic conditions should be avoided. Better buy certified food from reputed shops only. -Correspondent

or all those people who are wondering what this commotion about 2012 is all about, here’s the crust of it.

San Francisco. Our hero Jackson rents a private plane to rescue his family. In fact, they manage to escape disaster even as Los Angeles collapses into the Pacific Ocean!

American geologist Adrian Helmsley (Chiwetel Ejiofor) comes to India(yeah, right!) to meet his friend Satnam, who has discovered that a massive solar flare is causing the temperature of the Earth’s core to increase rapidly. Adrian informs the US President Thomas Wilson that this will bring about the end of the world. At the G8 summit in 2010, other world leaders are made aware of the situation. What ensues is a secret mission to ensure another Noahic expedition, but only a lucky few are destined to make it to the arcs!

As millions begin dying worldwide, they fly to Yellowstone to retrieve Charlie’s map. Realising the arks are in China, the group soon reaches Las Vegas, where they meet Yuri and his lot. Also bound for the arks on board Air Force One are Anheuser, Adrian, and First Daughter Laura Wilson. The brave President Wilson chooses to face the tsunami instead. Many more disasters later (including magnanimous earthquakes, fire and tidal waves), the heroes and the heroines survive the last day (it’s not the last day, after all!). Even as the flood recedes, they show you the more human angle – Jackson reconciles with his family and Adrian is in love with Laura and Africa survives it all!

Come 2012, John Cusack appears as Jackson, a failed sci-fi-novelist-turned limo driver who heads to Yellowstone National Park for a vacation with the kids. It results in an encounter with Charlie Frost, a conspiracy theorist who believes that the world would come to an end in 2012 (It’s the Mayan’s theory, of Course!), and he also claims knowledge of the secret arc project. Even as the family returns home, cracks develop along the California coast and earthquakes occur in

Roland Emmerich’s earlier disaster encounter ‘Independence Day’ had the charms of Will Smith and Jeff to save the box office. But for this one, let’s hope the highly rated CG does the magic. For all we know, Roland may be laughing his way to the bank even as we, the people await the end of the earth.
