What a year it has been Twelve months ago I set out to bring a title to the industry that offered a different approach & a better way of bringing the brands, venues & suppliers together. A title that reflected the modern on trade, the modern customer & how they interact with the brands & venues from bars to hotels , restaurants to gig venues. We wanted to really engage with everyone across the industry to help , inform and support in whatever way we can. We also wanted to inspire by bringing the views and insight from respected individuals in the trade. We hope we have been able to achieve this so far but we have no intention of resting on our laurels and with your support our goal is to work with the industry and everyone in it to help make it the best it can possibly be. SCOTTISH WHOLESALE ASSOCIATION PARTNERS WITH ARCOLA ENERGY Trade group the Scottish Wholesale Association has joined forces with Arcola Energy to identify the business case for fuel cell technology in the UK’s transition to zero-emission road freight. The Scottish Hydrogen Fuel Cell Freight Trial (SHyFT), led by London-based Arcola Energy, has secured funding from the Department of Transport’s Zero Emission Road Freight programme for the design of a trial of hydrogen fuel cell trucks, supported by a green hydrogen refuelling infrastructure in Scotland. With the aim to help develop innovative solutions to support the uptake of zero-emission trucks, the trial will use learnings from field testing battery-electric vehicles in a real-world environment and from undertaking feasibility studies. The activities undertaken will help to design and develop cost-effective, zero-emission heavy goods vehicles (HGVs) and their refuelling infrastructure in the UK. Arcola Energy, which has an engineering and manufacturing facility in Dundee, said that the project will assess the opportunity for zero-emission fuel cell electric vehicles (FCEV) with key freight operators who are looking to decarbonise operations in emissionsensitive sectors such wholesale food and drink logistics
– including cold chain – and utilities and forestry. The project partners include: the Scottish Wholesale Association; NewCold; the University of St Andrews; BOC; and Scottish Power. SHyFT will also make use of Scotland’s green hydrogen supply and expanding refuelling infrastructure by incorporating long-distance routes in its testing.

battle against anxiety, stress and difficult operating situations. are suffering badly at the hands of the so-called pingdemic, with numerous staff isolating each week. “On top of that there is the seemingly forgotten issue of Brexit, with so many seasonal workers or students simply not here and looking for work. “Brexit also has had a huge impact on deliveries and stock – it’s clear to see. People everywhere are struggling to get hold of essential products. “And then on top of that we have the current beer situation in Glasgow and the looming strikes. I understand people need to stand up for themselves but the timing when the whole industry is on its knees is difficult. “So while we have been asking this for some time now, it is once again vital that the public PLEASE be kind to hospitality workers. They are really up against it and doing their absolute best in very difficult circumstances. Superstar chef Dean Banks, of The Pompadour and Haar at Home, said: “We have had serious issues with staff shortages, sadly. “Mental health is a very big problem among workers in our industry at the moment, as with people in general to be honest. “Some people are struggling with getting out of bed to face each day, that is a story we are hearing a lot. “We are looking at ways we can improve things for our staff, anything we can do to help them through this. It’s the responsibility of any business owner. “Some people are having to take sick days over mental health, others are having to self- isolate due to being pinged – although we haven’t had a single positive case, we still suffer from the isolations. “I dread my phone ringing in the morning at the moment. “We are very lucky that stock shortages haven’t affected us at all – but that comes back to our ethos of using local produce. Our suppliers are so local and we have such strong relationships it hasn’t had an impact at all, so we are lucky. “But please, think of the staff and what they are going through – and be kind.” Graham Suttle of Kained, who run Porter & Rye, Rogue St Andrews, Lebowskis and The Finnieston, said: “As we all face a new world and try to get to a version of normality that works, there’s lots still impacting hospitality and everyone that works in it. As we opened in between lockdowns we asked people in general to ‘be kind’. The purpose was to help our teams get used to working again whilst under huge pressure and so many additional factors to deal with. “This next stage needs our amazing customers again

Helping us transition into a version of normality that we hope to achieve given the difficult trading environment. “There are so many new challenges for our industry as we transition into what is a new normality - with massive staff shortages, supplier shortages, product shortages, massive logistic issues and in general continued restrictions on how we operate, the pressure on our teams is greater than ever. We need to ask once again for our amazing customers to step up and help us transition through this period by simply being kind. “Remember it’s things outwith our control most of the time and we are trying our very best. But most importantly give a little extra time to our teams, they are facing the same struggles as everyone and with the added burden of shortages and long hours, a little love from the people goes a long, long way. “ Deirdre and Gary Curley Of Sligachan Hotel in Skye run the family business together. Deirdre said: “Hospitality has been one of the hardest hit sectors and it continues to struggle with staff shortages and high levels of stress and anxiety amongst those having to work twice as hard to give customers the best experience possible. “For the most part, we are succeeding but it has been incredibly tough. The majority of customers understand that we are living in a new normal but some have returned to bars and restaurants with a bizarre sense of entitlement and lack of awareness of the current situation. “Customers need to understand that being rude to hard working staff over things that are out with our control such as supply chain issues affecting menu choice or longer wait times on tables or food is just bad form and shows a real lack of empathy and awareness of what we are all still going through as a society.” Gary added: “Some businesses are fighting for their lives in a really tough environment and some staff are still feeling vulnerable having had to deal with 16 months of changing restrictions, stress and uncertainty about their jobs. We are all responsible for the words we say and how we say them. “Customers who abuse staff by being rude or inconsiderate really need to check themselves and appreciate the reality of the situation. A little bit of kindness always goes a long way but right now it is so essential to show your fellow humans some solidarity given what we’ve all been through and are still going through. ontrade@gilsongray.co.uk Foreign workers and Brexit – Does Scotland have enough staff to support our Licensed Trade? First a note to say thank you to Justin and all for the On Trade Scotland team for a fantastic evening at the 1st Birthday Bash. I am sure everyone who was there has already told them how enjoyable it was. It was fantastic to see the licensed trade in one room and have a chance to talk to people face to face instead of just by phone or by video call. It was also great to get an opportunity to speak with so many of the licensed trade and catch up on the events of the last 15 or so months. While a number of the stories are difficult to hear as the trade has gone through such a hard time, so many of you are positive and it is great to see. There are, however, issues the licensed trade needs to face. Some brought about by Coronavirus but others by the usual day to day considerations of business and operating in Scotland / the UK. One of these, which may have been somewhat overlooked due to the pandemic, is the effect of Brexit on the trade.

One of the things we are seeing at present is the lack of supply of goods with reports of premises potentially having to close. We have already seen Nandos in England close due to chicken shortages and there are reports as recently as last week about beer supply problems in Scotland. This was an issue back in April 2021 and has resurfaced now. The main problem seems to be with the availability of stock and deliveries, however, labour shortages are having an impact on the whole industry. Another issue many of you reported to me at the 1st Birthday event was a lack of availability of staff within premises, quite apart from any issues of supply. On discussing this it seems clear that while Coronavirus did have an effect on staffing, now furlough is coming to an end and most premises have opened, there are still insufficient staff to fill spaces available in many cases. Why is this? Admittedly, some staff have opted not to return from furlough even though their furlough has been brought to an

end. Many of the positions available in licensed premises in Scotland were filled by foreign workers and a huge number of them have gone home and either decided not to come back, if they already have a Right to Work in the UK, or are currently unable to come back due to restrictions. While there is question under Coronavirus restrictions of whether a country is on a red, amber or green list, a bigger issue is Brexit and the restriction of movement of workers across borders. So is there a solution and is this solution a workable one? Cue our employment expert, Graham Millar. Graham confirms that, to introduce foreign workers into the UK from any country out with the UK, they will now require them to have either an existing right to work or require visa sponsorship. Visa sponsorship can be very expensive. There are companies that can assist the licensed trade and other businesses in setting up such visa sponsorship schemes but there is a cost and it cannot be achieved overnight. Such a scheme will require financial investment from the employer. Each visa has to be individually sponsored and there will be a cost per each employee. There is also a huge amount of paperwork to go through for each applicant which will incur additional admin costs to the business in terms of support, potentially both internal and external to the business. The process is not guaranteed as employers must be able to persuade the authorities that it is a necessary process. In the first instance any employer wishing to sponsor incoming foreign workers needs to be able to show that they have tried to obtain employees for the same job from the currently available workforce within the UK. This is easier to show if the role is a very specialised one, such as a specific type of cooking where only certain chefs are qualified or trained to
do. Outside of that, potential employers of foreign workers in Scotland would need to be able to show that they had tried to take on workers already within the UK with the right to work in place. To do that they would have to show they have advertised reasonably extensively and the results of that advertising. Another issue is not just the availability of work force but whether the workforce which is currently available is prepared to carry out the work. Many of you indicated to me that you are struggling to secure staff to carry out KP and back of house roles as these are less popular than visible, front of house roles. You also said that wages are a massive consideration for employees with many seeking at least Living Wage or above Minimum Wage. If licensed trade employers do find they have to pay higher wages to secure and retain staff, one of the ways to protect yourself is to ensure your contracts are up to date and provide as much scope to retain those employees as possible. Measures can be put in contracts for notice periods and for financial penalties if employees do not give you notice, avoiding you being left in the lurch. You can also include requirements for employees to repay training costs if they leave within a certain period of time after the training. As the licensed trade have such a high standard of training and require to train all staff for 2 hours as well as any personal licence training, this can be an advantage in retaining staff.
