Welcome to the June Edition of OnTrade Scotland A Chance To Be Jubilant Challenges still exist, train disputes, staffing …....etc However there will always be some kind of issue, some challenge as a famous man once sang “Thats Life” What is different is what you make of the opportunities that are available, what you can do with the 24hrs in that given day, the 7 days in that given week. Summer is apparently coming, outdoor ares should be starting to get busier , festival season , holiday happiness, staycations, weddings , oh and a Platinum Jubilee if you can’t find an excuse to be positive or find inspiration to provide an experience for your customer in any of that where will you find it? You don’t have to be a fan of the Royal Family or Her Majesty The Queen to benefit from the tourism opportunities or hospitality benefits this can bring. We encourage the brands and suppliers to support the venues in every way possible to drive an experience and offering fit for a Queen so the entire hospitality sector can prosper. We have introduced a feature this month which looks to showcase what venues in other parts of the world are doing to offer their customers an experience and hopefully you will find inspiration in this or one of the coming features for your venue . In a change to the usual message …. I will say

Industry News LILLET CELEBRATES 150 YEARS & RAISES A GLASS TO FEMALE BARTENDERS celebrated women in its advertising and still today, women remain at the heart of the Maison’s essence. Through the initiative, Lillet is promoting diversity within the industry, as the brand will be offering all of the bartenders featured on the ‘L pour Elles’ map 70 hours of free online Professional Bar Training (worth £375) to allow them to grow their bartending and bar management skills.
Inspired by Lillet’s longstanding commitment to celebrating women, ‘L pour Elles’ shines a light on female hospitality professionals who play with the rules by defining their own paths. Lillet brings the initiative to life through a map highlighting female-led and operated bars available on the brand’s website, lillet.com, and a convivial and purposeful celebration at Maison Lillet gathering the ‘L pour Elles’ ambassadors on the occasion of the brand’s 150th anniversary. In a world where the hospitality industry has been severely impacted by the Covid-19 pandemic, and where females represent just 25% of hospitality leadership positions[1], Lillet believes supporting female bartenders has never been more important. The ‘L pour Elles’ accreditation and map make it easier to find and support female-led and operated establishments around the world and promote diversity and self-expression in the profession. ‘L pour Elles” is the newest expression of Lillet’s longstanding support for women’s empowerment and self-expression. Since its creation in 1872, Lillet has
In the UK, female managers from venues such as The Flower House, The Artesian and Happiness Forgets will be included on the map and feature a Lillet Spritz on their menus. Lillet will be investing in digital media to drive footfall to the ‘L pour Elles’ venues, and the full list includes: Rosie Stimpson – Oriole, Farringdon Giulia Cuccurullo – The Artesian, The Langham Hotel Samantha Duerr – LPM, Mayfair Chelsie Bailey – Happiness Forgets, Shoreditch Jo Jackson – The Flower House, Marylebone Mia Johansson – Swift, Soho and Shoreditch Alice Wakley – Balthazar, Covent Garden Stef Heron – Nebula, Hackney Leanne Banks, Marketing Director at Pernod Ricard UK, comments: “Lillet’s story has always been decidedly female-forward and in 2022, the Maison is proud to start writing a new chapter for and with women in ‘L pour Elles’. With this important initiative, we believe we can transform the simple act of going out and having a drink into a movement that supports female bartenders, one glass at a time. We can think of no better way to celebrate and share Lillet’s 150th anniversary than by continuing the brand’s tradition of playing with the rules and championing women creating change in hospitality.”
HOSPITALITY BUSINESSES NEED RAIL PAY TALKS TO SUCCEED UKHospitality Scotland, one of the country’s leading trade body for hotels, bars, restaurants, nightclubs, coffee shops and indoor leisure, is calling for a swift resolution to the pay dispute that has reduced the country’s rail services and now threatens hospitality businesses and jobs. Commenting ahead of talks between Aslef, the train drivers union, and Scotrail this Thursday, UKHospitality Scotland Executive Director Leon Thompson said: “Right now our businesses are struggling to move towards recovery after two years of lockdowns and restricted opening. The reduced timetable being operated by ScotRail is already harming city centre businesses. With services ending much earlier in the evening, people are not travelling due to concerns they will need to cut short their night out in order to be able to get home safely and easily. “Scotland is also welcoming back visitors who will be dismayed that they cannot enjoy the experiences they came here for due to a lack of rail services. Hotels are already reporting cancelled bookings due to fears of rail disruption. If this dispute continues into the summer the implications for the economy and Scotland’s reputation as a leading visitor destination will be considerable. Our hospitality sector needs the railway back to operating on a full timetable as quickly as possible.” 4

BANKING ON A SWITCH Money comparison sites have done a great job in encouraging us to shop around for the best financial deals. Most people have saved money when it comes to home broadband, car insurance, and even savings accounts – simply by shopping around.
But when it comes to banking, it seems to be a different matter. In my day, you opened a bank account with whichever lender was offering the most incentives, and you stayed with that lender for life. And the same approach tends to hold true with business bank accounts, which may seem surprising on the surface but is perhaps understandable when you discover that some 50% of lending applications by SMEs are rejected by mainstream lenders. It is certainly true that SMEs are finding it increasingly difficult to get finance because they don’t meet the requirements of the big banks in terms of access to funding. And often their credit score is less robust. A GOOD TIME TO CONSIDER SWITCHING As we come out of the pandemic and return to more normal operations, now is a good time for SMEs to review their structures and financial requirements, and to consider renegotiating their banking terms or even switching lenders. Traditionally, complacency and the ‘hassle factor” has made business borrowers reluctant to make the switch. The good news is that there is almost no hassle in switching nowadays and you could save your business a lot of money by negotiating more flexible lending terms. Also, the lending landscape in the Scottish market has materially changed over the last 10 years with numerous lenders in the market.
NEW KIDS ON THE BLOCK Alongside the High Street names, there are a host of alternative lenders competing for your business, including the so-called challenger banks, peer-to-peer lenders, fintech specialists, as well as household names such as PayPal and Amazon. This is good news for SMEs as there are more organisations competing to lend to you, offering sophisticated digital platforms to make switching quicker, simpler and less intensive. What is undisputed, however, is that alternative lenders are growing market share, so it makes sense to find out what they have to offer. If your business operates in a specialist marketplace, you may find it beneficial to approach a lender who has experience and knowledge of your sector, as they will better understand the value of your products or services and be prepared to lend accordingly. DO YOUR HOMEWORK! So it’s wise to do your homework and think about which type of lender is best suited to support your business. Sometimes fresh eyes can identify gaps or weaknesses in your application, something that might delay you getting the green light, and that’s where Gilson Gray can help. We have strong links with the banking and lending sector – traditional and alternative – and offer a number of services to support organisations keen to review their borrowing arrangements and secure a flexible refinancing package. While the timescales for switching banks can vary, we have found that the majority of organisations can be switched over to their new lender within one month. I think that this is wise investment of time given the potential for a positive impact on your bottom line.
ROBINSONS READY TO DRINK PARTNERS WITH THE HUNDRED TO GROW SUMMER Robinsons Ready to Drink is delighted to announce that it will be the official soft drinks partner for The Hundred cricket tournament, kicking off in August. The promotional bottles, which feature a cricket ball design, will be the ideal drink to enjoy during the game and on the go, making it a must stock for operators this summer.
Adam Russell, Director of Foodservice & Licensed at Britvic, comments: “We are delighted to announce that Robinsons Ready to Drink is to be the official soft drinks partner of The Hundred, with our on-pack promotion kicking off ahead of the key summer occasion. In recent times, traditional mealtimes out of home have shifted considerably, and the sector has a range of opportunities to entice customers through their doors as a result. ith the changes to the way customers engage with hospitality venues and their expectations when they do venture out to spend their money on a break from the norm, more so than ever the thing they are looking for is an experience. ontradescotland.co.uk
Something to emerse themselves in, the food, the surroundings, the atmosphere & of course the cocktails and drink offerings. So with that in mind we have looked to bring you insights and inspiration from other cities and venues from around the world that are doing something different to offer that experience to help you think differently. In this edition we look at a fantastic Bianco’s based in the very popular Playa de las America on the island of Tenerife part of the Canary Islands. Bianco is a modern Italian restaurant with an iconic and stylish décor. Conveniently located in the uber-cool Safari Centre at the heart of the Golden Mile just a stone’s throw from the famous dancing fountain. 7
The vibrant restaurant is the perfect venue for holiday nights out, romantic date nights, families with lively little ones alike. With an intoxicating mix of live music and high energy, Bianco is the home of special occasions, setting the scene for unforgettable dining experiences. Key to this experience are the staff, It’s the warm and friendly team that truly makes Bianco and is what sets it apart from other Italian restaurants on the island. Professional and customer-focused, the staff are clearly one of their greatest asset, encouraging, welcoming, like they have known you as a regular for years before. They are an essential part of the Bianco experience but don’t just take our word for it, visit their TripAdvisor page to see what their customer reviews have to say. There’s nothing quite like that feeling of being treated. Whether it’s your first visit you almost feel like it’s your fiftieth, a weekend or a Wednesday, you made to feel like you are a VIP from the moment you arrive. 8
The talented mixologists showcase their flare skills at the bar, the team seem to have genuine fun with the guests, the music is played by top DJs and the aroma of the mouth-watering Italian dishes fills the restaurant. This all creates an atmosphere that is both lively and energetic yet charming and romantic and then there is the food……. Wow! Since 2006 they have been perfecting the art of authentic Italian cuisine. The menu boasts a plentiful selection of original tastes and flavours, combined with contemporary ideas & techniques. Each dish looks like it has been made in “mama’s kitchen” and presented by a Michelin star chef Whether it’s a classic Tuscan focaccia, a delicious ossobuco alla milanesa, the very special grass-fed añojo steak. Or a traditionally indulgent Tiramisu – Bianco is renowned for serving some of the best Italian food in Tenerife. Could you bring an Italian twist with a little Spanish flair to the customers of Scotland in your venue? Why not? ontradescotland.co.uk
CHANCELLOR MUST DO MORE TO SUPPORT BUSINESSES SAYS SLTA
T
he announcement by UK Chancellor Rishi Sunak outlining measures to address the rising cost of living is good news for struggling families but does nothing for hard-pressed businesses.
Colin Wilkinson, managing director of the SLTA (Scottish Licensed Trade Association), said: “Businesses across the country are only just starting to get back on their feet after enforced closures and restrictions during the pandemic and the spiralling cost-of-living crisis is already having an impact on licensed hospitality and many other sectors. “Add to the mix the ScotRail situation with a third of services being cut and the ongoing challenges of staff shortages, supply issues, and new legislative measures that have been on hold for the last two years now looming – for example the deposit return scheme (DRS) and the business rates review – and businesses are in a perilous situation. 12
“Our colleagues at the Night-Time Industries Association warned this week that cuts to rail services will have an adverse effect on hospitality and events as people will be unable to get home at night. “Our hope today was that the Chancellor would recognise these issues and announce some measures to help struggling businesses and stave off the very real threat of ‘tumbleweed’ city and town centres. “With the key summer tourist season fast approaching it is more important than ever that Scotland has a reliable and efficient train service along with late-night public transport provision.” ontradescotland.co.uk

Mental health during separation - reducing the stress Many of us have taken a knock this past year, in terms of our mental health. From an increase in anxiety to a dip in mood due to being separated from loved ones – the pandemic has hit us all hard. Add to that the stress of trying to keep a hospitality business afloat and the feeling of responsibility for staff and it’s no wonder that relationships take a lot of the strain. Recent research by Resolution has found that 41% of those who divorced within the last five years suffered mental health episodes including depression and anxiety during the process. While this number may also correlate with more people being prepared to admit to experiencing mental health challenges, the added stresses caused by the pandemic will surely see an increase in these figures.
Denise Laverty Partner
Divorce is considered one of the most stressful moments in a person’s life. Naturally, conversations around separation and divorce can be contentious and highly emotional, particularly when issues of contact and/or finances are raised. Using a family lawyer trained in the collaborative process can ensure that these discussions are held in a constructive and respectful way to alleviate some of the stress and anxiety involved – and the subsequent impact on either parties’ mental health. As the collaborative process seeks to address and meet the priorities for a couple and their family it also allows more flexible solutions
to be agreed, an outcome that isn’t always possible if left to the court to decide. This ability to be more creative can help a couple to find a middle ground that is acceptable to both with the added benefit of those discussions taking place in a smoother and less antagonistic environment and where each feel that they have retained some input into the outcome. Whilst there are still significant pockets of the country where there aren’t any collaboratively trained lawyers this doesn’t have to mean that those who would prefer to use this less confrontational approach for their separation should feel restricted. The pandemic has shown us that we can access services wherever we live – and that is no different when it comes to separation. As we would do when shopping for
a particular item, if our needs cannot be met locally, we look farther afield. Legal services are now no different, especially with the now common place use of virtual meetings needing only the simplest of technology. As everyday life and business continues to challenge many of us so we are learning to be smart with how and where we seek support while experiencing a significant life milestone. If part of that is seeking ways to reduce the stress and anxiety that a separation brings then looking beyond our local community if required may provide that much needed support for our mental health. Denise is a recognised leading family lawyer and collaborative family lawyer who has been helping couples with all aspects of their separation for over 30 years.

SCOTTISH WHOLESALE ASSOCIATIONS JOINS NEW ZERO EMISSION TASKFORCE
S
cottish Wholesale Association (SWA) has been invited to join Scotland’s new Zero Emission Truck Taskforce in recognition of its ongoing work with members as part of its ‘Decarbonisation of the Wholesale Industry’ project.
The Taskforce comprises industry leaders from the road haulage, logistics, manufacturing, energy and finance sectors who will work in partnership to identify and co-design creative and practical solutions to maximising opportunities. It will also tackle any hurdles in relation to technology, charging infrastructure, costs, finance, and operator engagement in the transition to zero-emission trucks. The new collaboration will set out the steps required to enable a swift and just transition to new technologies, identifying where further development is required and exploring new business models. Consultants Mott MacDonald and KPMG are working with Transport Scotland to support the Zero Emission Truck Taskforce which will run until March 2023. All papers and minutes will be available via Zero Emission Truck Taskforce/ Transport Scotland. SWA chief executive Colin Smith, who is representing the wholesale industry on the Taskforce, commented: “We’re working at pace to explore opportunities and find solutions as we start planning the transition to zero-emission trucks so we’re honoured to be invited by the Scottish Government to sit on the Zero Emission Truck Taskforce. “The SWA recently partnered with Volvo Trucks to offer our members more detailed insight into the electric vehicle and infrastructure market as part of our ‘Decarbonisation of the Wholesale Sector’ project and this was hugely successful, with 19 wholesalers and some of our supplier members participating. “Members also had the opportunity to road test the UK’s first commercially available fully electric Volvo FL 16t HGV
26
which was brought to the event, at the Donald Malcolm Heritage Centre in Linwood, especially for the SWA. “The feedback we’ve had since the event has been extremely encouraging and Neil Park, the managing director for Volvo Truck & Bus Centre, North & Scotland, said that his business had taken ‘massive learnings’ from the event which is something he would like to see happened again. He was also impressed with our sector’s proactive approach. “There’s a lot to take on board as we grapple with how best to achieve zero-emission trucks and it’s our job to help members cut through the myriad information available guide them on the right path to decarbonise their businesses.” Meanwhile, the SWA is inviting members to get involved in the sub-working groups that are being formed within the Taskforce and where the SWA will be active members of each. These range from trials and data to finance and infrastructure, with members having a real opportunity for sharing in, and shaping, Scotland’s investment in zeroemissions trucks. The SWA has already shared the findings of the first phase of its ‘Decarbonisation of the Wholesale Sector’ project which focused on our vehicles and fleets, calculating and reporting on the sector’s fleet emissions baseline and producing a fleet emissions roadmap to net zero. Smith added: “This project is one of the most detailed undertaken by any sector and is based on real data and evidence, compiled direct from our wholesale members. This is an extremely exciting and important time for the SWA and our members as we help shape the future sustainability of our sector and Scotland’s food and drink supply chain.” ontradescotland.co.uk
FRESHLY SQUEEZED JUICE FOR THE TRADE
Those who know use Who Knows fruit juices What has been apparent in the hospitality industry is that there is a desire stronger than ever to create an unforgettable experience for customers. The challenges over the last couple of years has meant that going out for a cocktail is no longer something consumers take for granted, it’s an experience to be savoured and enjoyed. Who Knows Ltd have the ingredients to bring your cocktail, mocktail or spirit to life with our freshly squeezed juice.
our freshly squeezed, 100% natural “ Make fruit juices the perfect addition to your cocktail menu this summer.
Q: Who are the faces behind Who Knows Ltd? We are a family run business with a combined total of over 40 years’ experience in the fresh fruit and veg industry. Our main production premises is based in Cumbernauld; however, you can always find Dougie at the Glasgow fruit market digging out the very best of produce who will always greet you with a smile. We are immensely proud of how rapidly the business has grown and are currently diversifying by adding freshly pressed vegetable juices to our portfolio of products.
Q: What products are the most popular? We would argue that all of our products are amazing, however, popularity dictates that both our lemon and lime juices seem to be a client favourite. We have a sneaky suspicion that this may be due to the fact that both products help create wonderfully tasty cocktails. We pride ourselves in sourcing the highest quality fruits for our juice and this can be seen in our lime juice as it is free from sugar, added flavourings and preservatives. Similarly, when using a juice from concentrate, it means that you can lose many benefits of the juice. This is not a problem for us as our lemon juice is 100% natural and pressed and transported in a manner that ensures the highest quality for your cocktail mix.

SUPPORTING HOSPITALITY CUSTOMERS AS THE WEATHER GETS WARMER
W
ith high hopes for a warm and sunny summer, thousands are planning to spend their holidays in the UK which will include enjoying eating, drinking and socialising outside. As pubs, bars and restaurants make the most of any additional outdoor trading space the summer months open up Adam Jones, business development and partnerships director of alcohol education charity Drinkaware, offers his advice for supporting customers who may be out of sight of the main service areas. Preparing for summer trading sees mowing the grass, pressure-washing paved areas, maintaining umbrellas, lighting, heating and furniture, and creating a summer drinks menu all getting attention in on-trade venues but there is another important factor to consider. We know that keeping customers safe is always a priority for hospitality but, with more customers eating and drinking outdoors in the summer months, it can be harder to spot vulnerable customers or situations. There are a few simple steps that can help staff maintain high levels of awareness both inside and outside. BE VIGILANT AND AWARE OF ALL CUSTOMERS Spotting and keeping an eye on those who may become vulnerable is a simple, yet effective tool. Such customers might include anyone who could become a victim of aggression, sexual harassment or assault, or those who may experience alcohol poisoning. The number of drinks someone has had is not the only indicator that they may have had too much as alcohol affects us all differently. Training staff to be alert and spotting potential issues before they develop is an important part of any licensed operation. Maintaining a presence outside to look for signs of vulnerability and ensuring all
30
of the team are confident they know how to deal with, and report, an incident appropriately are all key. HELP PEOPLE REHYDRATE Alcohol is a diuretic which causes the kidneys to lose extra fluid and we tend to sweat and go the toilet more when we drink. This means customers can become dehydrated, especially if sitting in the sun causes them to sweat more. Making tap water readily available for people to help themselves to, alongside your bottled water offer, can reduce the risk of dehydration, as can displaying prominent reminders for customers. Encouraging staff to proactively offer water is another simple, effective route. DRINK DRIVING Customers can forget what they have drunk in the heat of the moment and may drink more thinking it will cool them down on a sunny day. But there is no foolproof way of drinking and staying under the driving limit and Drinkaware always advises people not to drink at all if they are driving. Displaying posters, giving verbal reminders and offering advice and access to safe routes home such as local taxi companies all help. HAVE A GOOD SELECTION OF LOWER STRENGTH ALCOHOL AND ALCOHOL-FREE DRINKS ON YOUR MENUS This growing category has more choice than ever before. Offering a creative range of drinks for people who are looking for alternatives to beer, wine, cider and spirits, and experimenting with a good choice of alcohol-free cocktails that they can enjoy outdoors, are all good additions to the bar and will help customers moderate their alcohol intake. Offering lower strength drinks helps customers reduce their alcohol consumption and also caters to the millions of hospitality customers who choose not to drink. Details of support services and free vulnerability training from Drinkaware are available at www.drinkaware.co.uk/ ontradescotland.co.uk

UKHOSPITALITY CALLS FOR UK ONLINE SALES TAX
I
n its response to the Government’s consultation on the introduction to an online sales tax, UKHospitality says that due consideration must be given to property-based industries such as hospitality.
The trade body’s submission also calls for such a tax to be ear-marked to provide a targeted reduction to business rates for high street businesses. Business rates remain one of the biggest barriers to recovery for operators looking to rebuild following the pandemic, and the current system results in the hospitality industry overpaying by £2.4bn each year - an overpayment of 300% relative to its turnover. An online sales tax must involve exemptions for services that are ordered online but involve delivery from a physical presence that delivers that service in person, for example hotel bookings and restaurant deliveries, so as to avoid a stealth ‘double-taxation’. While UKHospitality says an online tax should also be based on revenue through relevant online sales, it also specifies that the system must be designed with an allowance below which no tax is levied. It also calls for rates reductions to be achieved via a reduced multiplier 34
for all relevant businesses and not focused solely on smaller businesses, as this is done through the Small Business Rate Relief. UKHospitality Chief Executive, Kate Nicholls, said: “We are calling for an online sales tax to be introduced in the UK to cut business rates for high-street venues and deliver economic regeneration across the UK. “The basis for an online sales tax must not stifle innovation and the development of online business models but must support our British high streets. This is why Government must ensure that an online sales tax avoids double taxation for businesses that deliver product onpremise, such as pubs, restaurants and hotels. “The taxation system has lagged way behind the changes to the modern economy and while we have long known that business rates is arcane and outdated, there is also an absence of an equitable system of justifiably bringing the digital economy into taxation.” ontradescotland.co.uk

Business Interruption Insurance (BII) covers you for loss of income during periods you were unable to carry on your normal business activities. We specifically focus on losses which occurred as a result of the National Lockdowns due to Covid-19. Most claims will relate to the first lockdown in March 2020. AM I COVERED? Before we can answer that question we will need to see the following documents: - Your business Insurance Policy which was in place in March 2020 - Your Schedule of Insurance - Correspondence from your insurers rejecting your BII claim, if applicable. If you do not have these documents to hand we can obtain them from your Insurance Broker. HOW MUCH WILL IT COST FOR FRANK IRVINE SOLICITORS TO REVIEW MY POLICY? We will review your policy on a No Win No Fee basis. If your claim is unsuccessful the work undertaken by us will not cost you a penny. If we succeed in your claim, we will charge a percentage of monies recovered. IF I AM SUCCESSFUL HOW MUCH WILL MY CLAIM BE WORTH? The level of pay-out will depend on the terms of your insurance policy. You could be sitting on a claim worth up to £250,000. The actual pay-out figure will include a detailed calculation of your income and depend on the specific wording of your policy. A Loss Adjuster will look to ensure that your business achieves the maximum level of pay-out.

Here is what some of our clients have had to say about us…. LYNNE FROM CRABSHAKK “We were introduced to Frank Irvine Solicitors by a close friend. Our experience over a very short period of one month was astonishing. The attention we received and the forensic swim through the weeds of the insurance business was something to behold. Following a successful outcome we likened it to drilling into a bank vault – legally of course.”
SEAMUS FROM CAFE GANDOLFI “During the national lockdown 2 members of my staff tested positive for Covid-19 forcing us to close our doors and my business was rejected 3 times for business interruption insurance. Shortly after the final rejection I was lucky enough to make contact with Frank Irvine Solicitors and within 3 weeks they advised me that the rejection of my business interruption claim had been reversed and I would be receiving a pay-out from my insurance company after all. This was an absolute game changer for us. I was able to pay off debts I had accrued during the lockdown and the payment has given us the chance to recover from this hugely challenging time. The future remains uncertain in relation to Covid-19 in the UK and how this will affect small business owners up and down the country. However, thanks to Frank Irvine Solicitors I am in a position to regrow my business and am now much more positive. This is incredible for me, for those I employ, and for our valued customers. I would encourage any business in a similar situation to us to contact the team at Frank Irvine Solicitors and allow them to use their expertise to see if they can help you as they did us.
