OPEN CITY ROMA IS A NON-PROFIT ORGANIZATION FOUNDED IN 2010 BY YOUNG PROFESSIONALS WITH DIFFERENT SKILLS IN CREATIVITY AND COMMUNICATION FIELDS. FROM THE BEGINNING WE HAVE BASED THE ORGANIZATION ACTIVITY ON THE “COMMON GOOD” CONCEPT: IN OUR VISION IT IS THE GENERATOR OF A NEW ECONOMY, FOCUSED ON ENVIROMENTAL PROTECTION, CULTURAL PROMOTION AND COMMUNITY INVOLVEMENT. OPEN CITY ROMA IS ENGAGED IN SEVERAL PROJECTS IN CULTURAL AND CREATIVE FIELDS. IN PARTICULAR, IT HAS WORKED TO PROMOTE HISTORICAL HERITAGE, ART, SOCIAL INNOVATION, THROUGH ORGANIZATION OF EVENTS, TALKS AND WORKSHOPS, IN ORDER TO GET CLOSER CITIZENS AND CULTURAL PRODUCTION AND INVOLVE COMMUNITIES IN THE CREATION OF THEIR OWN URBAN ENVIRONMENT. ALONG TIME OPEN CITY ROMA HAS BUILT SOLID PARTNERSHIPS WITH PUBLIC AND PRIVATE COMPANIES, NATIONAL AND INTERNATIONAL FIRMS, PROFIT AND NON-PROFIT ORGANIZATIONS, IN ORDER TO ENLARGE ITS INFLUENCE AND MAKE IT MORE EFFECTIVE.

OPEN HOUSE IS THE LARGEST FESTIVAL OF ARCHITECTURE IN THE WORLD. IT IS BORN IN 1992 IN LONDON, AND ALONG TIME THE CONCEPT HAS BECOME SO SUCCESSFUL IT HAS SPREAD TO 30 CITIES WORLDWIDE (WWW.OPENHOUSEWORLDWIDE.ORG). SINCE 2012 WITH OPEN HOUSE ROMA HUNDREDS OF IMPORTANT AND BEAUTIFUL PLACES ARE OPENED UP EVERY YEAR DURING A MAY WEEKEND, TOTALLY FOR FREE AND WITH GUIDED TOURS. KNOWLEDGE, PARTICIPATION, CULTURAL CONTAMINATION ARE THE KEY-CONCEPTS ON WHICH WE BUILD THIS GREAT PROJECT THAT INVOLVES THE WHOLE CITY, WITH AN INCREASING ATTENDANCE (70.000 PEOPLE IN THE 2016 EDITION). THROUGH OVERPASSING PHISICAL AND CONCEPTUAL BOUNDARIES, OUR THE GOAL IS TO PROMOTE THE CREATION OF A COMMUNITY THAT TAKES CARE OF MORE SUSTAINABLE CITY. PARTNER

URBAN SUBURB ISSUE HAS BECOME VERY CENTRAL IN THE CULTURAL AND POLITICAL EUROPEAN DEBATE. IN FACT, THESE TERRITORIES REPRESENT BOTH FRAGILITY AND OPPORTUNITY FOR THE SUSTAINABLE AND EQUAL GROWTH OF THE CITY. ABITARE PER WANTS TO SEW UP THE LINK BETWEEN DESIGN AND USERS NEEDS. IT IS A WORKSHOP AND EVENTS SET, ORGANIZED IN THREE PUBLIC HOUSING DISTRICTS – ROME, BARI AND VENICE – THAT ENABLES CITIZENS TO DEEPLY UNDERSTAND AND EXPRESS THEIR NEEDS AND EXPECTATIONS, IN ORDER TO MATERIALIZE THEM IN A PUBLIC SPACE DESIGN. IT IS NOT SIMPLY A USER-DRIVEN URBAN DESIGN ACTIVITY, IT IS A CULTURAL, SOCIAL AND POLITICAL ACT: THE TRANSFORMATION OF THE CITY STARTS FROM CITIZENS AND RECLAIMING PUBLIC SPACES. PARTNER

WE ARE CONVINCED THAT EXISTING URBAN SPACES CAN BE RE-DESIGNED AND RE-VITALIZED IN ORDER TO MEET THE NEW NEEDS OF THE THIRD MILLENIUM ETERNAL CITY THROUGH A SENSES DISORIENTATION AND CULTURAL CONTAMINATION. APERTI PER FERIE IS A SET OF EVENTS, PROMOTED DURING 2-4 SUMMER WEEKS IN 2015 AND 2016 THAT WANTS TO CHANGE OUR OVERVIEW ON URBAN SPACES. APERTI PER FERIE 2015 HAVE BEEN ORGANIZED IN A COURTYARD IN THE CORE OF THE HISTORICAL UNESCO-PROTECTED CITY. OWNED BY BLIND PEOPLE FOUNDATION, THIS PRIVATE SPACE HAVE BEEN DISCLOSED TO CITIZENS IN ORDER TO SHOW A BEAUTIFUL, SECRET PLACE IN THE HEART OF THE CITY AND IT HAVE BEEN REVITALIZED BY CONCERTS, TOURS, WORKSHOPS, THAT HAVE BEEN FOCUSED ON HOW CITY CAN BE PERCEIVED WITH ALL OUR SENSES. APERTI PER FERIE 2016 HAVE CREATED A LAND ART INSTALLATION ON A PEDESTRIAN BRIDGE IN A STRATEGICAL DISTRICT OF THE CITY. THIS WORK HAVE BECOME A PLAYGROUND DURING THE DAY AND THE STAGE OF CONCERTS AND PERFORMANCES DURING THE NIGHT, SHOWING HOW A PLACE CREATED TO BE CROSSED, CAN BE CHANGED IN A HYBRID PLACE, BOTH STREET AND SQUARE, ACCORDING TO THE TRADITION OF INHABITED BRIDGES IN ITALY. THE CITIES AND THEIR ARCHITECTURES REPRESENT UNLIMITED SOURCES OF KNOWLEDGE, INSPIRATION AND PRODUCTION. THEY ARE CONTAINERS AND CONTENT OF FORMS, STYLES AND PROJECTS. “TASTE OF A CITY” WANTS TO PORTRAY THE CHARACTERISTICS OF A REPRESENTATIVE NEIGHBORHOOD OF 4 CITIES, PARTNER OF OPEN HOUSE PROJECT, THROUGH TASTE, THE ONLY MISSING SENSE IN THE APPRECIATION OF ARCHITECTURE. THROUG AN EDITORIAL PROJECT AND A PUBLICATION, WE INVITED 4 ARCHITECTS AND CRITICS BY LONDON, BELFAST, ROME AND LUBIJANA TO WRITE SHORT PAPERS ABOUT THE TASTE OF A DISTRICT OF EACH OF THESE CITIES. THEN WE ASKED TO 4 IMPORTANT LOCAL CHEFS TO BE INSPIRED BY THESE PAPERS AND TRANSFORM THEM IN AN ORIGINAL RECIPE. IN OCCASION OF EXPO MILANO 2015, THE PROJECT WAS PRESENTED IN THE SPACE OF CASCINA TRIULZA-CIVIL SOCIETY PAVILLION, DURING THE EVENTS PROMOTED AND ORGANIZED BY PLEF (PLANET LIFE ECONOMY FOUNDATION). C the chef

my heaRt Beats foR Rye BReaD It's so fragrant, with full, sweet and sour flavour and a moist crumb. It goes with practically everything and everyone, so it just calls for socialising and company of other dishes. High in pentosans that, together with fibre, absorb water like a sponge, it stays fresh for up to a week, which makes for a genuine ecological statement. And it's modest rye flour usually sits on the lowest shelf in the store and costs only a third of the price you would pay for the popular and trendy spelt flour. Should I ever have to reach for only one type of bread to chew on for the rest of my days, it would be rye. O'Ryelly takes a step forward, incorporating wholegrain wheat flour and kefir into a wholesome and tasty compromise.

K leMen Košir Klemen Košir (1974) is an independent publicist whose main interest for the last decade has been on eating culture. The centre of his attention is man with all his needs, imperfections, past and wishes captured in space and time. For Klemen, food serves as an excuse to go on a field trip to knock on farmers’ or wine growers’ door, to stop in a remote village and join a crowd of local people or simply to enjoy a chat with a fisherman on the coast. He finds that writing and publishing books is the karma he is happy to embrace. My Daily Bread is Košir's third book, coming out after his well-received Namazi Za Mizo (Table Spreads, 2012) and FAO 37.2.1 - the Wild Adriatic (2013), winner of multiple awards. His book on bread won the Most Beautiful Slovenian Book Award at the Slovenian Book Fair 2014. Graphic design by Kabinet01.

Srce mi bije za kruh iz ržene moke, tako dehteč je, polnega, sladko-kislega okusa in sočne sredice. Poda se k praktično vsem jedem in ni prav nič zahteven za druženje in kombiniranje. Zaradi pentosanov, ki skupaj z vlakninami kot goba vsrkajo vodo, ohranja svežino tudi do teden dni, kar je čisti ekološki statement. In še skromnega značaja je - ržena moka običajno ždi na najnižji polici trgovine, cena za kilogram je trikrat nižja kot za popularno in trendovsko pirino moko. Če bi že moral poseči po le eni vrsti kruha, ki bi ga žvečil do konca življenja, bi bil le ta rženi. Ržo gre korak naprej in je s kombiniranjem polnozrnate pšenične moke in dodatkom kefirja zdrav in okusen kompromis.

Portate ad ebollizione una pentola di acqua salata e versateci la pasta cuocendola per 4 minuti. In una padella portate ad ebollizione la bisque e versateci la pasta scolata e continuate a cucinare risottandola. Da parte saltate brevemente i gamberi rossi, riscaldate i percebes e il pesce bianco, condite i gamberi bianchi con olio e sale. In un bicchiere da minipimer versate il brodo caldissimo e aggiungete il pecorino e frullate fino ad ottenere una crema abbastanza densa. Tostate il pepe e riducetelo in pezzi abbastanza grandi con l'aiuto di un mortaio. In un piatto componete la pasta lucidata con l'olio al peperoncino, tutti gli ingredienti come desiderate e finite con le polveri di prezzemolo ed espellette.

Boil a pot of salted water and pour the pasta and cook for 4 minutes. In a pan, boil the bisque and pour the drained pasta and continue to cook. Briefly sauté the red prawns, barnacles and heat through the white fish. Season the white shrimp with Evo oil and salt. In a glass blender pour the hot broth and add the cheese and blend until you get a fairly thick cream. Cut the toasted The passmore edwards pepper grains and crush into pieces large enough with the help of a mortar. In library a plate place the pasta finished with a little of the chilli oil, all the ingredients as desired and finish with Espellette and parsley powder.
