Ratafia de Champagne is a sweet drink that is a fresh wine grape juice – Pinot Noir in this case – fortified with high-strength alcohol to 18%-plus strength. After fortification, this version is aged in a solera system, launched in 2005, for about three years. Medium yellow with the aromas of hay, pear, melon, dried star fruit and flowers. Sweet with medium acidity, soft texture and medium body, with poached pear, pear preserve, dried flowers and fruit to medium finish. Drink now.–ir
