The Désir Nature Vertus Premier Cru is a superior Champagne made from 50% 2020 old-vine fruit and 50% the house’s most mature reserves. Although the Doyard-Mahé Champagnes are enticing across the board, this bottle captured my highest score. The bouquet greets the senses with aromas of ripe red apple, lemon, white blossoms and pastry while its body and notably long finish are adorned with notes of mineral-laden lemon, lime and white grapefruit flavours. Crafted from a blend of 87% Chardonnay and 13% Pinot Noir, the Doyard-Mahé Rosé Nature, Vertus Premier Cru beckons with a pretty rose-coloured hue and fine pearly mousse. This is a lively Champagne evoking a profile of rose, lime, cranberry, cherry, red currant and rhubarb. An appealing tension between this wine’s zesty acidity and its fruit core carries from the mid palate though to its lengthy finish. Champagne can be a superb match throughout the meal.
