CUVÉE IMMERSION
What is Cuvée Immersion?
You will receive two bottles of the same vintage of Champagne. One was aged classically in the cellar, while the other one was aged under the sea, in Stiff Bay in Ouessant (Bretagne). The Cuvée Immersion will bear visible barnacles and corals (polyps) on the bottle.

A Unique Tasting Experience. Champagne maker Carole Doyard was approached by a wine merchant from Lyon who had experimented with aging wines 20 metres under the sea. He wanted to try it at even greater depths, 60 metres deep, to replicate the same pressure inside and outside the bottle. Carole was curious about the experiment and decided to try it out in Bretagne, where her parents spend a lot of time. She says: "It is an incredible journey between land and sea, you have to live it to believe it."

Immersed bottle :
Pale yellow colour and quite bright. A bit messy on first nose, evolving towards iodized notes, shellfish and molluscs, menthol, infusions, wheat. Balanced on the palate with an evolved iodized return, some alliaceous notes, candied lemon, verbena, butter and a powerful and flavourful umami (seawater) finish.
Cellar Storage:
More piercing bright yellow colour. Nose dominated by acacia honey, candied lemon and quince paste. More fruity and evolved register. More velvety, seductive in the mouth, on candied fruits, quince jelly, soft chalk, acacia honey, and a melted and saline finish.

Immersed bottle : Lighter and brighter yellow-green colour. Nose of rocky chalk, Carensac liquorice, iodine, menthol, with a creamy sensation of limestone. Great purity. Creamy and refined palate, a real shellfish juice with the calcium sensation of "Patch" on the tongue.
Cellar Storage:
Bright pale green-yellow colour. Same sensation but with a more expressive fruitiness, butter and lemon heart. Palate more coated on white fruit with a more sunny side, meringue, lemon cream, also leaving a feeling of “patch” but less refined.
Immersed bottle : Yellow gold colour with a green-yellow undertone, beautiful shine. Rich nose with notes of roasted pineapple, cooked apple and pear, quince paste, honey, meadow mushrooms, candied lemon, mocha, peach, almond, rancid butter, curry. Concentrated palate, very deep with a brilliant finish, long lasting quality and prolonged tasty and aromatic persistence.
