Bodega Rezabal

Bodegas Gutiérrez-Colosía was founded in 1838. This Andalusian winery, at the mouth of the Guadalete River, is ideally located to capture the drying Levante and humid Poniente winds. These dueling elements are integral to the production of Jerez’ famous flor – the layer of yeast that protects Fino during its ageing. Excellent fortified wines are made here in the estate’s multi-tiered solera system.

This fine topaz-coloured reserve brandy is made from Jerez’ signature grape, Palomino Fino, aged for ten years in a traditional solera system. The final blend includes a small portion of 50-year-old brandy as well as a touch of sweet, raisined Pedro Ximénez bringing roundness and complexity.– jb

Palomino

Fino is a style of “biologically aged” sherry, matured under a layer of flor yeast which protects the wine from oxidation while imparting signature baker’s yeast and apple aromas to the wine, as well as a bone-dry palate profile. Amontillado sherries undergo a period of biological and oxidative ageing, giving them both a very dry character and nutty, tertiary flavours. Palomino

Oloroso sherries are matured in an oxidative manner, meaning that controlled oxygen exposure is allowed throughout the long solera ageing. This turns the wines a rich mahogany colour over time and imparts intense nutty, earthy, dried fruit notes. This is a weighty, richly layered Oloroso with lovely freshness and enticing toffee notes to balance the earthy, savoury finish. 2023-2027–jb

Pedro Ximénez grapes are sun-dried to concentrate their flavours before vinification. The fermentation is halted early with the addition of a neutral grape spirit, leaving the wines lusciously sweet and smooth. Deep brown in colour with a heady sweetness ably balanced by fresh acidity. Signature notes of molasses, coffee beans, dried fruit and baking spice delight on the nose and palate.
