The Orot Tinto is fermented and aged in stainless steel vats to preserve its youthful, fruity perfume. Intense dark fruit, floral, and nutty aromas mingle with earthy bass notes on the nose. The palate is full-bodied and initially quite velvety in texture, with a concentrated core of baked dark fruit and smoky tobacco hints. Still quite tightly wound and grippy on the finish. Cellar for one to two years to soften.

These 20-year-old Tempranillo vines are grown on the sandy-clay soils of the Toro region. The Roble 2019 is inky purple in colour with a dense, powerful nature. Lovely dark fruit notes mingle with sweet tobacco and spice on the nose. The palate is concentrated and fresh with grippy tannins. Finishes long and subtly savoury. 2024-2031–jb

The 4 Rosas Negras Ancient Vines 2021 is sourced from a slope-side Tinta de Toro vineyard boasting vines of over 60 years in age. This is a full-bodied, tightly wound red with mingled dark fruit and earthy nuances. Still a very young wine, as displayed by its mouthwatering acidity and bold tannins, it should reveal its full potential in a few years for those with sufficient patience. 2025-2033 –jb

Agustin Maillo is a third-generation restaurateur, a business that began with his grandmother, Quica, in 1974. The family has always made wine but previously only for friends and family. As Agustin’s appreciation for wine grew, he became so passionate about the potential of the rare Rufete grape that he founded Compañia de Vinos La Zorra in 2010. In the same year, he helped to establish the Sierra de Salamanca appellation in which his winery is located.
