Editor’s Letter Patrick Hemingway: “My Dad Was A Very Good Father” Floridians are especially fond of the great American writer Ernest Hemingway, in part because he made his home in Key West. Today, one can tour Hemingway’s southernmost American home and see the nostalgic desk and manual typewriter on which he wrote Old Man and the Sea. As such, I’ve often thought about what we could write about Hemingway in South Florida Opulence that our readers wouldn’t already know. I set out on a quest to see if I could find living relatives of the great American novelist. After all, those who knew him personally would surely know him most intimately. I discovered that Hemingway’s grandson Sean is the current curator of Greek and Roman Art at New York’s Metropolitan Museum of Art – and that he and his wife Colette are experts on Ernest Hemingway’s love for fine art. The couple was gracious to agree to an interview. (See page 39 to discover which works they say Ernest Hemingway owned and admired most!) But my search for Mr. Hemingway’s relatives didn’t end there. I found that Ernest’s only living son, Patrick, 85, resides in Montana – in the very same town as my sister-in-law. I reached out to her to see if she knew anyone who knew Patrick. What were the chances? She replied that Patrick lived just five miles away – and a friend had his phone number. Music to my ears. I carefully dialed the number. When the soft voice of a woman answered, I explained why I was calling and asked if Patrick was home. There was a pause. I thought for sure she would tell me I had the wrong number. “One moment,” she said. A man came on the line. “Patrick?” I asked. “Yes,” he said. I got a chill. We had a charming conversation about Patrick’s fondest memories of his father, Ernest. He spoke about how he enjoyed growing up in Key West, riding his bike and fishing. Patrick said he often traveled with his father and mother, Pauline Pfeiffer. After graduating from Harvard University, Patrick moved to East Africa, became a biggame hunter (like his father) and opened a safari business. As a result, the United Nations later appointed him to teach at the Wildlife Management College in Tanzania. “I remember visiting with my father when he was on safari,” said Patrick. “He was quite the adventurer. One day, he and I were in the back of a truck, racing in the hunt for an animal similar to a jack rabbit. My Dad was leaning on the side door aiming at the animal – when, suddenly, the door flung open and my Dad flew out, as did I. He took the brunt of the fall and I landed on him. We often laughed about that. My Dad spent a lot of time with his children – he was a very good father.” In 1999, Patrick edited his father’s unpublished book about an African safari and had it published under the title True at First Light. The book is available on Amazon.com and is proof positive that the proverbial apple doesn’t fall far from the tree.

Presidential Patisserie Roland Mesnier, Pastry Chef to Five American Presidents BY ROBIN JAY
The life of Frenchman Roland Mesnier is a heartfelt rags-to-riches story about achieving the American Dream. Before landing his coveted position as White House Pastry Chef for 26 years – the longest tenure of any presidential chef – Mesnier painstakingly toiled up the ranks. He grew up in a poor family with eight siblings in Bonnay, France, a tiny Catholic village of 150 people, with one church, one butcher shop and three bars. “You can tell what was a priority in our town,” said a jovial Chef Mesnier in an exclusive interview with South Florida Opulence. “We had no electricity, no running water. I remember wearing pants with worn-out elastic, wooden shoes and (laugh) underpants passed down from my sister.” Despite the odds, Mesnier was determined to become a self-made

never met a First Lady before and I didn’t know what to say,” said Chef Mesnier with a schoolboyish smirk. “But when Mrs. Carter walked in, she met me with open arms and called me by my first name, like she had known me all my life. The First Lady was the nicest lady in the land.” The two enjoyed a friendly conversation – and without hesitating, Mrs. Carter asked Chef Mesnier if he wanted to be her pastry chef. “She hadn’t even tasted my cooking!” said Mesnier. The next day, Mrs. Carter’s secretary phoned Chef Mesnier to ask if he would accept the position. “I told her I was concerned because although I had a green card, I wasn’t an American citizen yet.” The secretary assured him that Mrs. Carter would take care of that. “One day, I was driven to a government office – I didn’t know what was going on,” he said. “I was asked questions about the United States and was sworn in as an American citizen. Mrs. Carter had given me the best gift ever!” And so it was. Chef Mesnier had earned the highest pastry chef appointment in the land. He anticipated he would stay at the White House for five years. His career there lasted 26 years – longer than any other chef – and he says he never, ever, made the same dessert twice. “I didn’t want the Presidents and First Ladies to have a ‘favorite’ dessert, because if they did, that would mean I was like every other chef who recycled their recipes.. I wanted them always to expect something new.”
MAKING ALL THE PRESIDENTS’ PASTRIES In addition to the Carters, Chef Mesnier served as executive pastry chef to Ronald Reagan, George H. W. Bush, Bill Clinton and George W. Bush. Each time, the somewhat shy chef had to learn the likes and needs of each family – like Ronald Reagan’s sweet tooth and Bill Clinton’s allergies to wheat, milk and chocolate. “The press made a big deal out of President Reagan’s love for jelly beans, but the truth is, his real passion was chocolate – and First Lady Nancy (who strictly required Chef Mesnier to present menus in advance for her approval) didn’t want him to eat it.” Chef Mesnier laughed. “So when Nancy was out of town, I made President Reagan huge bowls of chocolate mousse and rich chocolate cakes. This made the president happy and he thanked me very much!” For President Reagan’s 70th birthday, Chef Mesnier was determined to impress his Hollywood guests – Elizabeth Taylor, Frank Sinatra, Cary Grant, Gregory Peck, Charlton Heston and Jimmy Stewart. He crafted a five-foot truncated sugar pyramid to support the cake, which was topped with a sugar replica of a white horse that had been presented as a gift from the Mexican president. “President Reagan loved to tell his guests how the sugar sculptures were made. George and Laura’s twin girls were nowhere to be found. The butler explained that the girls had stopped by the kitchen to ask the chefs to bring them sandwiches in the bowling alley downstairs. Barbara went down and marched the girls right back to the table. She told them, ‘When you are at my house, I expect you to do as you’re told. Do not ask the chef to prepare special things for you.’ ” “President Bush had distinctive tastes, unlike the other presidents we served. We prepared dishes with eggs, oysters and fish roe. He was a true gourmet. One day when I was walking in the corridor, I saw President Bush coming toward me flanked by his secret service guards. I stood back to let them pass, but they did the same. We were face to face. ‘Hello Roland. How are you? Everything okay? Thanks for the desserts. I love what you do; it’s fantastic.’ He turned to his body guards and pointed toward me. ‘You see this guy? He’s the one trying to assassinate me with calories. So please, keep an eye on him.’ I blushed tomato red.” Next were the Clintons, who preferred southern food, like fried chicken. “Mrs. Clinton was more like President Clinton’s business partner and didn’t want to focus on managing the household. It was sort of like we had two presidents,” joked Chef Mesnier. “They didn’t entertain as much, but when they did, the parties were enormous and exhausting – like the Clinton’s Millennium party. We were to serve 700 people dinner at 7 p.m.; we were to present a buffet for 1500 people at midnight; and at 4 a.m., we were to serve breakfast to 600 people. The Prince of Wales looked at the cup rather anxiously, but made no attempt to help himself to the tea. The president could see there was a problem, so after dinner when tongues were a little looser, he asked the prince why he hadn’t served himself a cup of tea. Had there been a problem? The prince replied sheepishly, ‘The problem was, I didn’t know what to do with the little bag.’ It seems no one was aware that in England, loose-leaf tea is infused in a teapot and poured through a strainer. Apparently, the prince had never seen a teabag in his life.” Then came the Bushes. “The Bushes raised their children to be polite and nice – and Barbara expected her family to be punctual for meals and dressed properly,” said Chef Mesnier. “One time, when the Bush’s son George W. was visiting with his family, it came time for lunch to be served. 26

Pour 2 inches of water into a medium saucepan and bring to a bare simmer. Place the chocolate in a stainless steel bowl that is big enough to rest on top of the saucepan, and place it over the simmering water, making sure that the bowl doesn’t touch the water. Heat, whisking occasionally, until the chocolate is completely melted. Remove from the heat and let cool until the chocolate is just warm to the touch, between 95 and 100 degrees on a candy thermometer. Whip the heavy cream with an electric mixer until it holds soft peaks. Add the whipped cream and the ginger to the chocolate all at once, and quickly whisk together. Scrape the mousse into a large serving bowl or individual goblets, or pipe it into chocolate cups if desired. Serve immediately, or refrigerate, uncovered, for up to one day before serving.

During Christmastime, Chef Mesnier became noted for his beautiful gingerbread houses. “For the Clintons, I made replicas of the houses where Mr. and Mrs. Clinton were each born in.” George W. Bush, unlike his father, preferred shorter, quick dinners. “Poor man, he got blamed for everything – even the weather,” Chef Roland said with a chuckle. Laura Bush knew a lot about cooking and managing the household. “She was a perfectionist like Mrs. Reagan,” he said. “If a lamp was 12 inches from the wall, Mrs. Bush would measure the distance after the maids finished dusting, making sure everything was put back precisely in its proper place.”

FROM RAGS TO RICHES “My life is proof that you can do anything if you have the will to succeed. Without electricity or computers or email or Twitter, I still managed to make it to the United States and the White House,” said a proud Chef Mesnier, who is the former President of the World Cup of Pastry and author of Dessert University, the only cookbook endorsed by all of the five First Ladies he served. “The secret is simple: Love what you do and work, work, work.”
SCUTTLEBUTT ABOUT THE WHITE HOUSE GARDEN “The Obama garden is not a first. Most presidents had one,” said Chef Mesnier in an interview with South Florida Opulence. “Truth is, the Obama garden was delivered to the White House in the middle of the night – and it was half grown. They put wood chips and dirt around it. It concerned me when reporters were told that 100 pounds of rhubarb had been harvested in the first year. If you are a good gardener, you know that it takes three years for rhubarb to produce.”

The notion of celebrity-owned and run wineries and wine labels is not a new one. For centuries philanthropists and noted philosophers would often own wineries. But the ownership was rarely for profit and primarily for the benefit of personal consumption. Today’s rich and famous often invest in wines and wineries because, quite frankly, they have the money to do it and celebrity wines are extremely profitable. In fact, a 2007 Nielsen study of supermarket wine brands showed that sales of celebrity wines were up 19 percent. There are mainly two types of celebrity vintners: those whose passion for the grape have led them to actually own their own wineries; and those who lend their names and support to develop signature wines with established wineries. Here is a look at some notable personalities and their wine connections.
CELEBRITY-OWNED WINERIES Dan Aykroyd. Arguably one of the most discriminating celebrity wine lovers, the comedian has a longstanding and impressive knowledge and passion for wine. He is the owner of Dan Aykroyd Wines in Canada, and also produces a Sonoma County, California series. He launched his “Discovery” and “Signature Series” labels in 2007. Antonio Banderas. Another well-known wine historian and connoisseur, the actor owns Anta Banderas Winery & Vineyards, which produces high quality wines through his own vineyards in the heart of Ribera del Duelo, Spain. Chef Mario Batali. The familiar television personality and restaurateur has owned the Tuscany-based La Mozza Winery with partners Joe and Lidia Bastianich since 2000. Their 90 acres produce the lush cherry fruit, a signature of the label. Francis Ford Coppola. Perhaps the most famous celebrity winemaker, the “Godfather” director purchased substantial

was arguably one of the few artists who became as well-known for his personal style as he was for his surreal oil paintings. From his licorice whip mustache to his google-pop eyes, Dali’s carefully cultivated image became a living work of surreal human art. In October, the newly renovated Salvador Dali Museum in St. Petersburg will be featuring 13 of the artist’s oil paintings on loan from the Museu Nacional Centro de Arte Reina Sofia. We thought we would take that opportunity to look back on Dali’s life and work.
A DIFFERENT REFLECTION Salvador Domingo Felipe Jacinto Dali i Domenech was born in 1904 (just nine months after the death of his brother, also named Salvador) in the town of Figures, Spain. When he was 5 years old, Dali’s parents took him to his brother’s grave and told him that he was a reincarnation, a story he came to believe. Of his brother, Dali would later remark: “… We resembled each other like two drops of water, but we had different reflections … ” His brother often appeared in Dali’s later works, including “Portrait of My Dead Brother” (1963). From an early age, Dali exhibited a duality of artistic prowess and scientific curiosity – perhaps he and his brother’s combined intellect? At the age of 12, after attending drawing school, Dali discovered modern painting during a summer vacation trip with the family of Ramon Pichot, a local artist who regularly traveled to Paris. After being expelled from university in 1922 for supposedly causing student unrest, Dali spent the next several years moving beyond his admired talent for classical realism. His

affinity for experimentation allowed him to see through the “real” and propel him into the dream world that was the surrealist movement.
MEDIA AND MUSE Dali teamed with surrealist filmmaker Luis Bunuel in 1929 for the short film “Un Chien Andalou.” In it, he created one of the most shocking images seen on film – an eyeball horizontally split with a razor blade, which brilliantly encapsulates Dali’s bending of reality and illusion. That same year, Dali met his lifelong love, muse and inspiration – his future wife Gala. Over the next 50 years, Gala would appear in various forms in Dali’s paintings. His seminal work, “The Persistence of Memory,” was painted in 1931. The piece introduced the world to Dali’s surrealistic depictions of melting clocks, barren landscapes, the brutality of the natural world, and the rejection of time as a rigid entity – themes he would revisit throughout his career.
INFINITE JEST Even later in life, Dali’s unquenchable curiosity would lead him to a variety of unusual media and processes, including: pointillism (for which Roy Lichtenstein is perhaps best known), bulletism, sculpture, filmmaking, writing, fashion photography, and the use of stereoscopic and holographic images. In his last years, critics would chastise Dali for his outrageous antics, while his collectors would dismay at what they felt was a “selling out” of his image. After the death of his beloved wife in 1982, Dali apparently attempted suicide a number of times and in the strangest ways, including self-dehydration and self-immolation. Before his death in 1988, Dali’s guardians would allegedly coerce the mentally withdrawn Dali to sign blank canvases that would later be used for forgeries. Seraphine Chai Tea Vodka marries two art forms by featuring Chimen’s art on its label. “When I first visited Yahara Bay Distillers and saw the wooden barrels, the 90-gallon copper still, and the owners and staff members paying attention to every detail of the process, I felt as if I were in the atelier of a master fine artist, with all of the still-life setups and aromas of a well-kept studio,” said Chimen. We both embrace the creativity and the spirit of our craft.” Let’s take a closer look at the aspects that unite the art of painting with the art of distilling. Just like the artist starts with a blank canvas, so, too, do the distillers, in the form of an empty still. When initiating a piece, Jonatas starts by covering the emerging painting with “broad brushstrokes of sepia tones.” These are much like the finely selected Wisconsin apples and corn that, by themselves, are simple foods, but gather far more meaning as the process continues. The next step in the vodka is distillation. The fermented fruit is boiled and distilled four times to expose the detail of the flavor, similar to the rubbing of the oil paints from the canvas to expose the detail of Jonatas’ initial strokes, a technique commonly used by da Vinci and Rembrandt, among other classical painters.

The Michelangelo Syndrome defines artists talented in creating both 2-D paintings and 3-D sculptures. One modern-day artist with Michelangelo Syndrome is Edd Hayes. Hayes began painting when he was a child and continued to develop his talents without professional lessons. “It came easily to me, so at first it was just a hobby and I didn’t take it seriously as something to pursue, instead art pursued me,” said Hayes.
THE EPIPHANY Hayes recalls the moment he decided art would become his vocation. “I was in a museum in Oklahoma staring at a Charlie Russell painting. I was amazed by all the details and, suddenly, it was as if a voice were calling out to me saying ‘It’s time’. ”

t’s very well-known that Ernest Hemingway was one of the greatest writers of the 20th century, but what is not wellknown is that he loved to come to the Metropolitan Museum
of Art and look at paintings. In fact, he had a small but very fine
collection of his own by well-known artists,” reminisced Sean Hemingway, grandson of Ernest Hemingway and curator of Greek and Roman Art at the Metropolitan Museum of Art in New York. Ernest Hemingway died before his grandson Sean was born, so he never knew him personally. “Nevertheless, he was always a prominent figure in our household and, of course, I am very proud to be his grandson,” Sean said. “My dad was his youngest son and my mother also knew him since she had worked for my grandfather as his personal secretary in the last years of his life.” Sean said his grandfather saw many similarities between painting and writing. “He once wrote that he wanted to write like Cezanne painted, and he learned much from Cezanne’s landscapes.” Sean Hemingway’s wife, Colette, studied Ernest’s passion for fine art and authored the book In his time: Ernest Hemingway’s Collection of Paintings and the Artists He Knew. “For his own small but fine

These paintings resonated in Hemingway two passions that he always held close to his heart – Spain and the artist and his art.”

Like his writing, Hemingway’s personal art preferences had tremendous influence. “Miró was very happy that my grandfather purchased that painting because it’s what caused Miró’s career to take off. My grandfather was thrilled to buy it and it hung in his home for the rest of his life,” said Sean. Some of Ernest’s other favorite paintings were seascapes of Winslow Homer, such as The Gulf Stream, and Bruegel’s The Harvesters. Sean understands why. “Hemingway was interested in how great painters achieved their most interesting pieces. About ‘The Harvesters,’ he said the geometry of wheat created powerful dimensions. Every time I look at ‘The Harvesters,’ it grabs me. It’s that emotion my grandfather was talking about. “And I think it’s very true of his writings – his prose style was very simplistic in a way; it’s straightforward. A tremendous

amount of effort and craft went into his writing. He fashioned his writing in the same way the artists fashioned their paintings.” At the Metropolitan Museum of Art, Sean said his grandfather’s favorite painting was The View of Toledo by El Greco. “El Greco lived in Toledo for many years and he knew it well. My grandfather would always say, ‘Write about what you know; you have a much better chance at getting it right.’”

Key West has always been a treasure-finder’s paradise. The island’s most famous treasure-hunter is perhaps Mel Fisher, an inveterate optimist who was a former chicken farmer from Indiana. Fisher, who opened the first dive shop in California, began treasure hunting in the 1960s as a partner and crewmember on a salvage company in Florida. But his ultimate goal was to find the Nuestra Senora de Atocha. The Atocha, a Spanish ship headed homeward, sank off the coast of Key West in a 1622 hurricane. It contained over 13,500 carats of emeralds,

360 years old, had great historical value. When all was said and done, the 1985 findings had an estimated worth of $450 million – and Fisher and his family became real-life treasure-finding heroes. In his role as steward of the treasure, Fisher was able to display portions of the find in the Mel Fisher Maritime Museum, which houses artifacts from the Atocha, the Santa Margarita (a ship that sailed in the Atocha’s fleet) as well as from the Henrietta Marie, an English slave ship that Fisher found during the course of his search for the Atocha.
THE TREASURE HUNT CONTINUES Fisher passed away in 1998, but one of his sons, Kim, and one of his grandsons, Sean, are continuing the hunt. Their company is aptly named Mel Fisher’s Treasures. The Paris Opera Ballet was the very first professional theatrical ballet company, founded by King Louis XIV of France in the late 17th century. Since then, the elegant dance form has enchanted the world. Many young American girls dream of becoming a professional ballerina, but it’s a dream that only a few ultimately achieve. Ashley Hammond, from the Boca Ballet Theatre, is one of those rising stars. Her own words on achieving her dream are inspiring‌

I started free-movement classes when I was not even 3 years old. I don’t remember what it was that had me captured that day, but dance has developed into my whole life. If I had to guess, it was because I enjoy the freedom that dance provides. When I jump, I feel as if I’m floating. When I turn, I feel like it’s effortless. It is very difficult to describe because everyone experiences passion in a personal way. There is no explanation. It is just something that you know you love and can never give up. Ballet to me is the pure classicism of dance. Nowadays, there’s modern, jazz, tap, lyrical, neoclassical and all sorts of different styles, but it all came from the basics of dance: ballet.
EARLY MEMORIES I think one of my most memorable moments of dancing as a student, apart from getting my first pair of pointe shoes, is the summer I got a soloist role. We were performing an All-American Summer featuring: Play Ball (by Christopher Fleming), Moonlight Concerto (by Jennifer VannucchiDolan), and Ella Sang: Tribute to Ella Fitzgerald (by Dan Guin). Jennifer came to observe class and to do a mini-audition to see who should get the three solos. Although I was double-casted, I received one of the solos! I was so excited! Never before had I gone out on stage, with everyone’s eyes on me, and danced with a corps behind me. It was like a dream come true. I was so nervous, I almost missed my queue; still I went on stage and danced the solo without a flaw. But for bows, while everyone was clapping, I ran out with my partner Nuk and slid flat on my behind in the middle of the stage! You could hear everyone gasp, but I just got up and thought, “Thank goodness that wasn’t during the solo!”

Farewell to a Friend and Visionary Pioneer BY MARK BLACKBURN Some things in life happen by chance. Some, I believe, by serendipity. Eight years ago, I had the honor of meeting John Ciullo, a true visionary in the yacht industry. We became the closest of friends: We were deep-sea fishing buddies, we traveled to the Caribbean, we hung out over endless dinners and drinks, and I watched him meet Elana, the amazing love of his life. We had a friendship some people never find in a lifetime. John was a true pioneer in the yacht industry. A certified pilot and professional yacht broker for, most recently, International Yacht Collection (IYC), John was also a stalwart sail- and motorboat captain who loved the adventure and splendor of the sea. He set the bar for the highest standards in the industry: white-glove service par excellence. We began to think of ways we could do business together. He dreamed big. When Horizon Publishing launched South Florida Opulence magazine in the fall of 2010, John had a stellar vision to celebrate our launch: to create the grandest MegaYacht Gala South Florida had ever seen. Hosted on exclusive Fisher Island, 400 VIP guests enjoyed an opulent evening aboard a beautiful 200-foot, $75 million yacht. John had set the bar again. The next year, he outdid himself and arranged for us to celebrate with a gala for 800 guests, featuring 11 megayachts. It was over-the-top! Business aside, John was a comrade through and through. On September 29, my dear friend lost his fight against cancer – the day before his 55th birthday. I was honored to be by his side. Here’s to you, John. To begin, an ever-so-brief history of tobacco pipes. The first western-world tobacco utensil was the clay pipe in the early 17th century followed, chronologically, in the late 17th century by the use of both porcelain and assorted woods (some 25 to 30 different species), meerschaum in the first quarter of the 18th century (and in the United States in the 1850s), briar in the second half of the 19th century and, last, our very own corncob, the ‘Missouri Meerschaum,’ introduced after the Civil War. How one Irish family traversed 200 years to rebuild Lisheen Castle or generations, the hulking ruin of Lisheen Castle loomed a kilometer from the Everard family’s 300acre dairy land in County Tipperary. Everard children have played in the shadows of the ruin, perhaps unaware of their exceptional surroundings. But in the 1960s, a young Michael Everard watched more closely as severe Irish seasons slowly consumed the parapets, stone and mortar back into the peaty earth. While working on the family’s farm, young Everard envisioned saving the castle and restoring it to its former glory. Forty years later, alongside his wife Joan and son Zane, that dream would come to astonishing fruition.
STEEPED IN HISTORY Like many grand Irish residences in the 18th century, Lisheen Castle began life as an upper-class Georgian house owned by

A Dream By degrees the castles are built. - Irish proverb Frederick Lloyd. Today, if you want to flaunt your wealth, you build a bigger house. But in the 1800s, the fashion was to “castellate” your home by actually building a castle around the existing structure – the ultimate addition. Lisheen was a more modest version of many castellated residences. The castle is a battlemented Tudor-style structure, with side turrets, and a central machicolated turret enclosing the main doorway. The castle stood that way for nearly 100 more years, changing ownerships, until in 1921 it was burned to the ground. In a short paragraph of the July 2, 1921 issue of the “Tipperary Star,” it stated that the castle, the property of John F. O’Meara, Ardfort, was burned down on Wednesday night, 29 June. It was one of the last of the burnings of unoccupied big houses in Tipperary that took place in the final phase of their War of Independence.

THE DREAM REBORN uring most of the castle’s history, the Everard family continued to maintain their adjoining grain and dairy farm. And while young dreamer Michael grew up and continued the tradition of running the family farm, something remarkable happened. The land, which the ruined castle occupies, came on the market. Michael’s son, Zane, relates the circumstances. “When the land came up for sale, my father did what all farmers do. He bought it to expand the farm. In 1994, very little monetary value was put on castle ruins. Today, any small ruin is worth substantially more. But nobody ever dreamed that it could ever be restored. Except my father.” Like generations of Everard’s before him, Zane, his brother and his cousins played hide and seek among the moldering ruins of the once-grand residence. And like his father, Zane was not immune to the siren song of the castle. “It was a major influence in me choosing to study architecture,” says Zane. “Surroundings can have such a profound effect on your life. If only for the castle I would have never considered specializing in conservation, and getting a Master’s in building conservation, learning all about historic buildings and how they work, and trying to find the most effective way of restoring them.”
THE DREAM VERSUS REALITY How do you even begin to rebuild a castle? “There was absolutely nothing left internally, just the stone walls. No floors, no roof…From the fire everything that could have burnt, burnt; and what was left was just a shell,” says Zane. “Everything had fallen down to the ground floor, which was also burnt. The stonework on the exterior of the front of the building was quite good, but around the back all of the walls had started crumbling from the top down, the battlements had all fallen in and were in a precarious state. In the rooms there were even mature trees that had been growing for 50 years. We had to get a tractor and a chain and pull trees out of windows.” Knowing he would need professional help and expertise, Zane’s father, Michael, entered into talks with Mick Cleary, a local builder/ craftsman. Between them and Michael’s wife Joan, they decided to seriously undertake the project. The daunting process soon consumed the family. “They had no experience with this type of project,” says Zane. “My dad will tell you he had many sleepless nights over the castle and where the money was going to come from.”
In 1994, Lisheen Castle was in ruins – just stone walls. No floors, no roof. No one – except Michael Everard and his family – ever dreamed it could be restored. On the page at right, you’ll see the new life the Everards breathed into Lisheen Castle.

INTERIORS Five years into the restoration, the castle was finally becoming whole again. It was time to consider aesthetic choices. But with no evidence of the former interior of Lisheen Castle, research and personal taste would come to the fore. “We had some exterior photos, which were sent to us by descendants of the original landlord,” says Zane. “But to re-create the interiors we relied upon reference books of buildings that had not burned down. We also knew the original house was in the Georgian style, so that period was incorporated into the interior design.” Fortuitously, Joan Everard had a background in interior design. “She has a very good eye. It’s really her style as well as that classic look from the Georgians that brought the house to life,” remarks Zane. “I like that it was done in a classical way, so it never becomes dated. It is very inviting. A lot of people say that.” Local craftspeople were brought in to work on the details. With a deft touch, two local ladies produced stunning murals and paintings that adorn the walls and ceilings of the castle.

Versace Estate to TV’s “Four Houses” Meet Miami’s own design aficionado, Katia Bates BY ALEX STARACE

he sizzling summer launch of TLC’s latest real estate series “Four Houses” featured four design-infatuated homeowners competing to win $10,000 and a home interiors layout in Better Homes and Gardens. In the Miami episode, camera crews followed contestants as they toured and rated each other’s homes
– Zurami Pascual’s modern Coral Gables condo, Fabian Basabe’s Art Deco extravaganza, Patricia San Pedro’s vintage bungalow and – the magic city’s winning manor – the Italian villastyled waterfront mansion of Miami designer Katia Bates. South Florida Opulence sat down with Bates to chat about her experience. She has a breezy, down-to-earth tone that belies the fact that she is one of South Florida’s premiere interior designers. When asked about her “Four Houses” victory, she shrugged it off. “It was a matter of taste – whether you like my taste or not.” As it turned out, the other contestants did like her taste – though

this shouldn’t come as a surprise. Bates is the President and Creative Director of the well-regarded Innovative Creations, the design firm responsible for two restorations of the famed Versace Mansion on Miami Beach.
A TOUCH OF VENICE IN MIAMI As for her home, Bates explained that she was born and raised just outside of Venice. Her family, including her parents and siblings, still live in Italy. So, when Bates and her soonto-be-husband, Tom, bought their Fort Lauderdale property 20 years ago, Bates vowed to re-create Venice stateside, with enough room for all of her family to visit. locations: The rug in the master bedroom hails from Morocco, while sconces on the front exterior were salvaged from an old synagogue in New York. She also has items from Belgium, Spain, France and, of course, Italy. When asked if she had trouble decorating, she laughed, “I had been collecting these things for so long, I already knew where everything would go.” Now that she’s achieved her goal, Bates is content to enjoy her newly remade residence. As for the advice she gives clients and friends, Bates said, “Buy what you like. That’s the most important thing. Don’t try to design what you think other people want, or what your friends might like. Do what you like.” It’s advice we can all live by.

In An Instant Images by photographer John Adams capture that split second in time BY NICOLE TUFTS
You might find him crawling under a flower bed, hanging off the side of a mountain, balancing on a slippery rock, or even throwing his camera up in the air. Photographer John Adams will do whatever it takes to capture that one-of-a-kind shot. Adams was a mere 5 years old when he took his first picture, a photo of a man and an old car, a picture he still owns today. While his love for photography grew, like many of us, he took pictures only for recreation when on vacation. “I knew I had a good eye for it, but I never pursued photography seriously,” said Adams. John went on to become a magazine writer and editor for 15 years and his love of photography slowly receded to the background. It wasn’t until three years ago when he moved to North Carolina and was gifted a digital camera that he rediscovered his passion for camerawork. “I just thought, Wow! I’d truly forgotten how much I love this,” said Adams.
THE WORLD THROUGH NEW EYES Inspired by Blue Ridge Mountains and the Land of Waterfalls, Adams began capturng pictures of nature, and he gained a new perspective, a new way through which to see the world. He started posting his shots on Facebook and received overwhelming positive feedback on the beauty of his images. With his new life in the mountains, Adams decided it was time to

take action, and he established his company Phoenix Photography. His ambition moved beyond simply taking pictures for himself, and his dedication to photography became his rebirth. As a writer, Adams has always been uniquely attuned to his surroundings; however, through his camera, he is able to capture the world around him in a unique way, giving others the ability to see things with a perspective they have never before noticed. “Normally, I’m just walking around a town or the forest, and I take pictures of anything that catches my eye. It can be something as simple as the way the sunlight hits a rock or something

grander like fog rising from the mountains. I try to capture an instant that would normally go unnoticed.”
LIGHT PAINTING Adams’ range is impressive. He captures mountains, waterfalls, flora, architecture and even a form he calls “light painting.” He loves macro and nature photography, which captures every detail of an image, allowing one to see the intrinsic value of the subject. “My pictures are one-of-a-kind; the water will never splash the same way, the light’s angle will never hit the same way; nature is constantly changing, which makes those photos so much more special; that moment will never happen again. Most people don’t generally crawl around in the mud to see a unique angle of plants or the trees above. Sometimes I take hundreds of shots in a day to get that one moment that is different and extraordinary,” said Adams. “Different” does indeed describe his work and is a hallmark of which Adams is extremely proud. His light painting is a standout example. Adams uses various light sources, ranging from car lights to fire to even the digital readouts on a refrigerator or computer. The concept is to open the camera’s shutter at the light source and move or spin the camera around, creating extraordinarily unique figure compositions. “Photography has become an intimate part of my life. From the outside, the house looks only slightly nattier than its tawny neighbors in the bedroom community of Coral Springs, Florida. But, step through the mahogany doors and you may wonder whether you have been transported to turn-of-the-century England. And, that is by design. “The idea was to create the feel of an English gentlemen’s club – a London club, along the line of Boodle’s, White’s or the Athenaeum,” says Charles L. Cox, Ph.D. or ‘Skip’ the home’s owner (and, perhaps best put, curator), together with his wife, Jean. “These clubs for two and a half centuries have been the classic places for meetings by England’s Lords, conviviality and intellectual discussions. Most major decisions affecting the Empire were made there over lunches and dinners”, he notes.
TRANSCENDING TIME AND PLACE Skip and Jean have devoted their energies to re-creating that clubby atmosphere during their long and happy marriage of nearly 40 years. His eclectic tastes and her discriminating eye (especially with the budget) have produced a home overflowing with an artfully arranged collection of books, paintings, furniture and other objets d’art. The overall effect is a display of grace, elegance and gentility, perhaps exceeded only by the lady and gentleman, themselves. The Atlanta native and semi-retired professor of European history exudes graciousness and charm, and a visitor soon comes to understand that this home

In closing, Skip tells me that Churchill’s short reflection, decades later, about the Edwardian era – the era in which he launched his fabled career – is apt and speaks volumes: “The Old World in its sunset was fair to see”. Though he and it are long gone, a bit of it lingers in Jean and Skip’s home like wisps of pipe smoke. They are now in their late sixties and have renounced politics. But true Tories that they are, they “always vote conservative for the good of

CHATEAU COMING TO MIAMI BY HOPE GAINER
Buenos Aires is often referred to as the Paris of South America. So it was only natural for one developer to brand his company and projects “Chateau” after the famed classic architectural style from France. After a successful round in real estate in Argentina, Chateau Group founder Sergio Grosskopf started investing in land in Miami in 1998. Soon after, Sergio sent his only son Manuel to look after his overseas investments in the Magic City. The Grosskopf family is not new to the Miami real estate landscape, but unlike many others, they have kept a low profile. Their Chateau Group has over 35 years of experience collectively in South America and the U.S. in residential, commercial and mixed-use projects. In Punta del Este, the so-called Riviera of South America located in Uruguay, the Chateau Group developed buildings located along the Mansa coastline. In Argentina, they built the first shopping centers. Later they started their now successful Chateau brand with two residential high-rises in Buenos Aires: Torre Chateau Libertador and Torre Chateau near Puerto Madero. In Miami, they bought key land parcels and partnered with local developers on projects like 900 Biscayne and Quantum on the Bay, and they sold parcels of their land to developers for Jade Ocean and Jade Beach in Sunny Isles. Chateau Group is now bringing their Chateau brand to Miami. Their focus today is their two new residential projects, Chateau Beach in Sunny Isles, which is already 50 percent sold, and Chateau Ocean, which will launch in 2013 in Surfside. “We believe the Miami market needs more affordable condos for the affluent who are buying their 2nd, 3rd or 4th home,” said Manuel Grosskopf. “Our Chateau residences will be smaller boutique buildings offering more privacy at a more reasonable and marketable price range of $1 to $5 million versus the other projects priced from around $5 to $7 million.” Additionally, Chateau Beach will have a one-of-a-kind “Sky Villa” and penthouse, each with their own pool. Prices for Chateau Ocean, designed by Arquitectonica, will start at $3 million. Kobi Karp is designing Chateau Beach Residences with 84 units across 33 floors in a curved design reflecting the shape of the ocean waves. It will include a significant streetscape sculpture by renowned Uruguay artist Pablo Atchugarry. Unique amenities include an exclusive Wine Lounge and Cigar Bar. Views will be unobstructed since the property is adjacent to protected parkland. Chateau Ocean Residences will have 65 spectacular flow-thru units. Both Chateau projects are being sold by Venegas International Group, spearheaded by Monica Venegas. Reflecting back, Grosskopf said it was a great time to come to Miami. He has never looked back. “We feel the right place to be is Miami,” he said. “It is an international city in the middle of the world, only 8 hours to both South America and Europe. The Miami market is getting very real and strong now. This will continue for a long time.”

irque du Soleil La Nouba paints the picture of two worlds drastically different in every way – at once threatening and exhilarating, frightening and familiar. La Nouba is the story of all stories, the site of all mysteries, where dreams and nightmares sleep side by side. La Nouba is memory, individual and universal. It beckons to us, challenges us to uncover passions we thought we had lost long ago. Here, anything is possible when the humdrum Urbanites converge with the eccentric Cirques. Suddenly the Urbanites conform to the Cirques more exciting way “faire la nouba.”
LIVE IT UP As the curtain rises, pay close attention to the clowns. South Florida Opulence had the pleasure to speak with Michelle, a Clown who’s been with Cirque du Soleil since shortly after the production started. Michelle developed many of the skits in La Nouba that will leave you giggling between each act. He admits that while the skits are mostly prerehearsed, “if we find a different gag by accident and we have a big laugh, we will use that gag in the number.” Michelle shared with South Florida Opulence that he prepares himself for each show while he puts his makeup on in his dressing room. “There is an intercom speaker system that plays the sounds coming from the audience into our dressing rooms,” he relished. “I listen to the crowd and I get into character.” It’s important to note that all of the performers apply their intricately layered makeup entirely by themselves!
SLIP INTO A SURREAL DREAM La Nouba’s acts include the Jongleur who whimsically juggles balls, hoops and clubs in varied

Next be prepared to fall in love with four Chinese girls who will render you speechless with the Diabolos, also known as Chinese yo-yos, as they toss, twirl, flip, twist and just about everything in between – all while twirling a diabolo. In the Aerial Cradle, a male and female performer take turns supporting each other in a doorway suspended from the ceiling. In the Aerial Ballet Silk scene, extraordinary athletes entwine themselves in floor-length ribbons of fabric in a breathtaking display of pure grace, flexibility, strength and athleticism that leaves the audience in complete silence for the

whole number. And just when you think you’ve seen it all, four performers take to the trapeze and swing like synchronized clock pieces perfectly in sync. The final number is a spellbinding seven-minute PowerTrack and Trampoline act, which thrills the audience with 394 breathtaking flips. Talk about head spinning!. Sea, the Red Sea and many other seas. This love of the water grew stronger when this young boy realized he could add speed and adrenaline to his under (and over) water adventures. Shortly after the phenomenon of windsurfing, somewhere around the year 2000, kites began to dot beaches the world over – and the prerequisite could be summed up in one word…wind, lots of strong wind. The sport attracted surfers, windsurfers, adrenaline junkies, water enthusiasts and rich folk looking for a cool hobby, and Thierry Dehove was no exception.

His first kite was a Wipika 15 m, with 2 lines and no safety system. His first board was an AHD 151 cm directional, a far cry from the equipment he holds near and dear today. Perhaps these are the lessons learned after you break your shoulder and your rib cage, a fairly large price to pay for 3 hours of fun. I asked Thierry what the attraction was, and just before he took me for a quick, heartpumping spin on his back, which perhaps is another story all together, he explained this love affair in just one powerful word. He said it was spiritual. He said it was surfing, windsurfing, snowboarding, skateboarding and a complete sense of freedom, especially when you fly. (Ben Wilson scored the world’s largest kite-surfed wave ever.) I’ve heard many horror stories about kite surfing, so we discussed the best conditions and some of the dangers. When you’re looking to kite, you’re looking for side shore wind and no obstacles whatsoever. It can be very dangerous if you’re overly eager and not thinking. Kites large enough to pull you

across the water, also have enough power to pull you up vertically. When a kite is held in a steady position, it’s like a motorcycle revving its motor with the clutch pulled in. When you quickly move the kite from one position to another, the amount of power generated can be enormous, much like revving a 1000 cc bike, and then popping the clutch. One second it’s docile, the next it’s ferocious. Anytime you connect yourself to that kind of potential power, there’s going to be risk. Thierry suggests starting with a trainer kite and, more over, a trainer, which he happens to be – IKO certified. Once you’ve mastered your basic kite skills, you can move up to a larger, more powerful kite. This is the only way to protect yourself from needless harm. I asked Thierry what the basics are of kite surfing, provided you know nothing about the sport. He explained that it’s 70 percent the kite and 30 percent understanding and respecting the surf. The best places in the world to kite are Hawaii, Brazil and many windy islands dotting the Caribbean. You can also find kite surfing along the shores of Key Biscayne and South Beach. The sport has a community of roughly 250,000 people and growing, so much so that the 2016 Olympic Games in Brazil will showcase the sport for the first time in history. Perhaps I’ll know what I’m doing by then!

When the team learned that they were being terminated from the President’s budget, a non-profit foundation was developed and fundraising initiatives were kicked into high gear. “Aquarius Reef Base Foundation is the non-governmental/non-university arm of the program,” remarks Potts. “We had previously considered it to be an augment to our research and programs. Now this effort will be our sole lifeline for 2013 and

They are producing a 3-D IMAX film about the base and their work. Social media outlets like Facebook have become a dynamic presence for the base. “People are passionate about Aquarius and the potential closure of the base,” says Potts. “We learned that an 18-year-old girl took it upon herself to save us with an online campaign: ‘Save Aquarius for My Generation.’ We extended an invitation for her to visit. She got to go inside Aquarius and meet her hero, Sylvia Earle. She came back speechless. I told her, ‘You have a huge responsibility now. You need to captivate this new generation of marine scientists.’ ” Indeed, it is up to all of us to mobilize into action.

The concept car has been a cornerstone in the automotive world since 1769 when Nicholas Joseph Cugnot commissioned and built the first recorded vehicle to drive under its own power. Since then, manufacturers have used concept cars as test beds for new designs, manufacturing and technological features in their cars. Â

Many concept cars are primarily designed to test consumer reaction to these changes and evaluate the viability of production. Though some concept cars may seem wildly imaginative, many have been released into mainstream production in forms extremely similar to their concepts, such as the 5th generation Chevrolet Camaro, the Dodge Viper, and more recently, the Porsche 918 Spyder. These cars were very well received as concepts, and soon after, went into series production. In this issue of South Florida Opulence, we bring you a look at the hottest 2012 and 2013 supercar concepts.
BUGATTI 16C GALIBER CONCEPT The Galiber concept is essentially the heart and soul of the Bugatti Veyron in a sedan form.

drivetrain consists of an estimated 1000hp twin turbo W16 engine (for reference the Veyron has a quad turbo W16 of similar power) with a permanent four-wheel drive system for outstanding power and control. The interior of the car is draped in supple leather and wood, along with tasteful touches of brushed and polished aluminum on the controls and handles. The bottom line is this: If you want a Veyron but must carry more than one passenger, this is the supercar for you.
BMW I8 Hailed by BMW as “the most progressive sports car,” the i8 concept is the frugal execution of a performance automobile. It has room for 4, an electric only range of 20 miles, and futuristic styling and lighting accents that hint at the design direction of future BMWs. It also has 50/50 weight distribution along with an extremely low center of gravity for effortless handling. With a 0-60 time of 4.8 seconds, a top speed of 160mph, and a hybrid turbo-diesel power train capable of up to 75mpg, the BMW i8 shows that sports car performance and environmental responsibility can coexist in a beautiful and useful package.
JAGUAR C-X75 Created for Jaguar’s 75th birthday, the C-X75 is an exciting concept that is a pure electric sports car paired with two diesel turbines that charge the batteries rather than propel the car. The four electric motors, one at each wheel, are capable of a combined 780hp and 1180 lb/ft of torque. With four individually controllable motors, Jaguar could easily control each wheel individually to vary the handling and behavior dynamically based on driver input, road conditions, or any other measurable parameter. The Jaguar concept also has an impressive 68 mile electric only range. Plans are already under way to develop the $1.15M electric supercar in partnership with Williams F1 team.

LEXUS LFLC The Lexus LFLC was created as a design study to showcase Lexusâ&#x20AC;&#x2122; technology and gauge consumer interest in the individual elements of the car. The front end has the unmistakable grille shape of the latest GS as well as the new LS460. The exterior of the car consists of flowing and angular lines, making the car elegant and aggressive looking at the same time. The interior of the car is a modern design that incorporates leather, brushed aluminum, carbon fiber, and a strikingly simple and modern control layout into a cohesive and beautiful package. The Lexus is powered by 3.5 liter V6 along with a permanent magnet electric motor, providing for ample performance and great economy figures. Though definitely not a closeto-production concept, the Lexus LFLC gives a look into the direction that Lexus will take in the future.
LAMBORGHINI SESTO ELEMENTO For the Sesto Elemento, Lamborghini started with Gallardo, with its 570hp V10 drivetrain, and threw everything else out the window. The body of the car is made entirely out of composite materials and allows the car to weigh a scant 2200 lbs (for reference a Gallardo weighs in at approximately 3100-3500 pounds depending on options). The performance figures are downright staggering â&#x20AC;&#x201C; this raging bull arrives at 60mph in a scant 2.6 seconds on the way to a 217mph top speed. This minimalist concept is refreshing, as dropping this much weight pays dividends in handling, braking, traction and even fuel economy. Lamborghini has confirmed 20 of these for production, of which none will be road legal.
MERCEDES F125 Designed to celebrate the 125th anniversary of 1886 Benz Patentwagen, the F125 is a fanciful look into the future and what cars could evolve into in 2025. It has an extremely aerodynamic design, with a sweeping and streamlined interior, advanced electronics, and a hydrogen fuel cell power train. The big Benz sports lithium-sulfur batteries, a metal and composite body, and is capable of semiautonomous drivetrain. The driver communicates with the vehicle through hand, voice and touch gestures. It is a look into upcoming technologies that may make their way into the automobiles of the not-so-distant future.

This is the most useful tool for planning and monitoring revenues and expenses. The budget comparison income statement compares the current year budget to the actual current year results. Where a balance sheet refers to a specific point in time, a budget comparison income statement shows accumulated activity over a period of time, such as a month or current fiscal year.
The fourth item is the unit owner account receivable subsidiary ledger. It is compared to unit owner receivable amounts reflected on the balance sheet after the bank reconciliations are prepared. The fifth item is the accounts payable subsidiary ledger report. It is also compared to the amount on the balance sheet to ensure any bills incurred but not paid have been recorded properly in the period they were incurred.
