A Beach Breakfast At Coconut Joe’s
The story of Coconut Joe is well known among the tiny Caribbean Islands south of the Bahamas. (For a more complete history read the Legend of Tequila Ted & Coconut Joe on our lunch/dinner menu.) Joe was a world renowned psychopharmacologicalbotanobiologist who lost his scientific memory due to a konk on the head by a coconut. He was subsequently blown out of his island home on Mayaguana by Hurricane Corrie, and was rescued just off the Isle of Palms by marketing genius Tequila Ted. Tequila Ted had recently retired from Brenneather Corp., an international marketing giant, and wanted to open an island restaurant. It was love at first recipe, and Coconut Joe’s soon made it’s debut. Business was brisk, the work was fun, and loyal customers became good friends. However, something was missing. One day, Joe was snoozing under a palm tree on the front beach, an activity that he had never been able to avoid. Suddenly, something fell from the tree, konked him on the head, and rolled into his hand. Joe woke with a start, examined the object, and in a flash of distant memory, identified it as an egg from a rare wild chicken that roost in the palm trees on the island. “Eggs!” thought Joe. Instantly he knew what had been missing. Moments later, he was in the kitchen, with his yoga chanting daughter, happily stirring, scrambling , developing the delicious island breakfasts that are now part of the menu at Coconut Joe’s. So, sit back, savor the view, and enjoy your breakfast. And if you see Joe wandering around, (he’s the one who looks rather well-fed), please remind him to stay away from the palm trees.
