KOREAN BARBECUE TAKES EUGENE With classes starting up again, being away from family and back to the on-your-own style of living may have you missing your family’s shared meals. The solution is not far because right here in town, you can have a new family-style meal with your friends. Korean restaurants are popping up all over town, offering this unique style of eating. Four Plus 3 Korean BBQ, owned by Leslie Lee, is an example of one of these new Korean restaurants. “Korean culture is that we share everything. You eat together,” Lee says. It’s popular in Korean culture to share food with those around you. Who better to share a table of freshly cooked meats than with your fellow classmates? This meal style is perfect for your group of friends to split the bill, creating and sharing a variety of flavors to enjoy together. Korean barbecue brings your friends together and also lets you do the cooking. The restaurant provides the food and a helping hand, but you do the rest. The cooking freedom allows you to build your own flavors as well as combinations. Restaurants utilize open flame grills atop the tables, with the raw meats and sides around for you to place and cook for yourself.

Combinations could include the following: Lettuce wrap + pork belly + soy bean paste + lentils Brisket + kimchi + chili paste + black beans The possibilities are endless. You can create barbecue savory bites, or even make yours a little more spicy. You could build meals for each other, or maybe surprise one another with creative combinations. “Lettuce wraps are common with parents and family because it creates a loving environment. Children will make wrap surprises and give them to their parents. It’s a way of showing affection for each other,” explains JC Lee, owner of Noodle Bowl. Up until recently, I thought of Asian cuisine as one type of food. As my understanding of the cuisine’s complexity has grown, I now see the difference between Japanese, Thai and Korean meals. Korean stands out because its ingredients are rarely fried. Korean barbecue focuses on fresh, fermented or steamed. Leslie said in Korea, before the emergence of refrigerators, they put food in jars in the ground to help keep it at cool temperatures. The same process is still used, but modernized with nifty appliances specialized for that purpose.

Location: 2130 W 11th Ave. Offers take-out. DOMO Domo is close to campus and also provides customers the experience of cooking their own meal. However, at Domo, they use a charcoal grill instead of electric. Yong Oh, owner of Domo, said it provides more flavor for the meat than an electric grill. Domo is perfect for group dinners, and popular in Korea for celebrity parties. Location: 959 Pearl Street Offers take-out. NOODLE BOWL

Noodle Bowl not only is in the heart of downtown, but provides delivery. If you want to go out and not cook for yourself, Noodle Bowl provides authentic Korean food for you and does the cooking too. JC Lee wants his customers to experience food cooked to perfection, but can also create dishes unique to one’s preferences. They are one of the longer-running Korean restaurants, having been around for about six years. It’s not on campus, but close by for lunch after class.

off of campus for students. They focus in only real Korean cuisine and have an electric open flame grill for customers to use. Everything is made from scratch, from tofu to kimchi. The name of the restaurant actually ties directly into their use of meat: 4 as in 4 flavors of pork belly, and 3 as in 3 layers of pork belly. While you cook, you can watch popular KPOP music videos on multiple screens.

From there, you build your meal. You start with the meat, chicken, beef or pork. Korean barbecue especially uses pork belly, but a pork brisket or steak are popular as well. Meats are either marinated or not marinated, so you start cooking with the not marinated meat as to not get marinade on those pieces. Sides can include lentils, kimchi, black beans or bean sprouts. Dippings include soy bean paste, chili paste and sesame oil.

FARM TO FERMENTATION: EUGENE’S SPIN ON KOMBUCHA

.

The closer you get to the West Coast, the closer you get to crazier, boundary-pushing cuisine. Kombucha (pronounced kawm-boo-cha) is a staple in Northwest culinary culture and is popular among consumers of all ages and lifestyles because of its unique flavor and endless health benefits. I had never heard of kombucha before coming to the University of Oregon, and I was skeptical to try it after I heard that kombucha was alive! As you might guess, I succumbed to peer pressure from my local Eugenian friends and tried the funky, fermented drink. The rest was history. WHAT IS KOMBUCHA? Kombucha is a drink that is produced by fermenting sweet tea with a culture of yeast and bacteria. It is often flavored with flowers, fresh fruit juices and herbs. The brewing process is simple, therefore kombucha can be easily customized according to your personal flavor preferences.

EUGENE IS FERMENTATION FRIENDLY! Luckily, Eugene is a diverse hub for kombucha and fermented food and drink alike. Kombucha is available both on tap and in bottles in various bars and restaurants, and even in our very own EMU’s Townshend’s Tea. You can also purchase kombucha at Safeway and Market of Choice. If you’re looking to explore the local kombucha culture exclusive to Eugene, Elevate Kombucha is a great beverage to start with. Natalie and Corey, partners and owners of the brand Elevate Kombucha, have only been in the business for 15 months, yet their kombucha is available on tap in over 20 locations, with over 10 staple flavors and various seasonal options. They began their journey serving kombucha from their mobile cart at music festivals. Their organic drink was such a big hit that they brought it to local vendors, the first being Vanilla Jill’s, which sells Elevate Kombucha ice cream floats! Owners Natalie and Corey hope to open their own brewing space in the near future, which will allow them to bottle their kombucha. Along with creating innovative flavors such as First Kiss (hibiscus rose) and Apple Ginger, Elevate Kombucha popsicles may even come to fruition in the near future! Elevate Kombucha can be found at Falling Sky Brewery, Beergarden, Growler Guys, and many more locations.

9

C H E W S & B R E W S

The brewing process begins with a “scoby,” which stands for symbiotic culture of bacteria. A scoby most often resembles a large, slimy, floating mushroom head. Consider it a refuge for the bacteria and yeast that will give your tea it’s true fizzy nature and flavor profile. This is what I mean when I say kombucha is alive: it contains millions of probiotic cultures which are not only pleasing on your palate, but are also beneficial for your gut. You can buy a scoby online, make your own or even borrow one from someone in the community (which I hear is a popular method in Eugene). In brief terms, the fermentation process is completed by mixing tea with sugar, followed by resting the scoby on top and then allowing it all to bask in unlimited sunlight for about a week.

Knock, Knock! Who’s There? Hungry Ducks Delivery!

While the dining halls offer an excellent selection of healthy options for a young student to consume, the fact of the matter is it can grow old going to the same places day in and day out.

This is where the elegant simplicity of Hungry Ducks makes an appearance. As a recent college graduate himself, owner and founder of Hungry Ducks Darren Rabie describes his motivation for opening the business as being rooted in the need for alternative meal plans for students. To be clear, the dining halls and nearby fast-food joints may be convenient; but Ducks are also hungry for what our vibrant community has to offer outside of campus. Hungry Ducks has created an exceptional model for introducing college students—and local businesses, families and organizations —to the multitude of fresh and delicious dining options from all over the Eugene/Springfield area by bringing them right to your door. Now when the rain rolls in or when that quick walk to a dining hall or store sounds daunting, you can save yourself the trip and have a warm meal delivered right to your door. Nothing says college more than eating like a king without ever having to take off your sweats. Moreover, participating restaurants benefit from this model as well, reaching a wider customer base in an efficient and affordable way by outsourcing the driving to Rabie’s fleet of 70 expert couriers. If you are living off campus and decide you need the best sandwich around, you can still get yourself a Jersey Mike’s sub. Or if you want to order yourself a classic campus lunch, have a Caspian Mediterranean Cafe gyro make its way right to your door. After a long day of class, avoid that hike back to campus by ordering online through Hungry Ducks.

Campus dining is incredibly convenient - depending on your dorm, a hot meal is just a quick trip downstairs away. Despite this ease of access, you may find yourself growing bored with the same old offerings at Global Scholars Hall and LLC. Being confined to campus, it may seem like Eugene dining is too far away to really take to your advantage. Luckily, this is not the case. Located just a few blocks from campus, the intersection of 19th and Agate offers an enticing array of all sorts of dining. Here’s a look at what the neighborhood has to offer. SWEET LIFE PETITE Filling the campus’ void of fresh decadent pastries is Sweet Life Petite. Their parent location, Sweet Life Patisserie, is a staple of the Eugene dessert scene but represents a far trek for those who live on or near campus. Since opening up their new location on 19th right by the legendary ice cream of Prince Puckler’s, the corner has arguably become Eugene’s premier dessert spot. Business has been nothing less than booming, as patrons from all over the area seek out the sweet tastes and mellow vibes. Don’t let the lines dismay you, though; the wait is worth it for this slice of high tier dessert artistry at a reasonable price. Crafting everything from cream puffs to elaborately assembled cakes, Sweet Life will easily hit the spot for anyone in search of something sweet for any need. Whether it’s ordering up a cake for a special occasion, splitting some tiramisu after dinner or simply grabbing a cup of their signature espresso and a pastry on the go, Sweet Life Petite has whatever indulgent fix you’re craving.

Prince Puckler’s is page one in the local food checklist. Just about every single flavor you could ask for is available here, making it the stone cold key to your ice cream loving heart. Just be sure to bring cash; their $5 card minimum charge has caused many a brain freeze via ice cream overdose. Location: 1605 E 19th Ave. Take-out and dine-in OOLONG TEA BAR “What, another bubble tea bar?” you may ask. “As if this campus was suffering a fancy milk tea deficit,” you may say – foolishly. My advice: don’t sleep on the newest tea bar offering in Eugene. The flavored tea drinks are beyond potent, like biting into the fruits from which they derive their flavors. With innovative new styles for delicious drinks, Oolong may be the game changer to the tea scene you didn’t know you needed. It’s Friday night, and you’re looking for the perfect spot for an upscale night out on the town. The familiar haunts just won’t cut it; what you need is the perfect combination of atmosphere and fine Italian food. Look no further than Beppe and Gianni’s Trattoria, Eugene’s favorite campusaccessible array of pasta, fine wine (if that’s your thing) and antipasti. This isn’t your typical pizza-and-alfredo, Americanized Italian menu; the authentic palate of Italy is evoked through classic dishes like puttanesca and garganelli caprese. For the past eight years, the establishment has been voted the best Italian restaurant in Eugene by the Eugene Weekly, thus proving that their commitment to quality has given them longevity. Specializing in the most authentic Italian cuisine since 1998, they’re the second best choice for the taste of Italy after an international plane ticket. Whether it’s date night or the parents are in town, head to Beppe and Gianni’s for a touch of class and Italian flavors to blow your mind.

19th Ave. Providing a menu of options for both breakfast and brunch, Studio One is positioned perfectly for those spontaneous trips for latemorning breakfast following a night of partying. Adorning the walls of the establishment is an array of classic film memorabilia, fostering a memorably themed dining experience. Continuing the theme, much of the menu contains dishes titled as wordplay on famous movie titles. Offering a home-style environment with anythingbut-ordinary food creations, this friendly, cinematic breakfast joint next door is a valuable asset to the campus neighborhood.

BEPPE AND GIANNI’S TRATTORIA

Downtown BY SAM STYLES

.

College is hectic, and student life reflects that. Whether you live on campus or just off of it in an apartment or house, you are perpetually surrounded by the heartbeat of campus. The yells of elation and remorse, the swearing and tears of mentally derailed students, the sounds of love and heartbreak - it all swirls around you. All of this contributes to a mind that always runs at full speed. This is not the mental state to enjoy a fine meal in, but if you take a stroll down Alder, you can find a place to the south where things move a little slower. In the neighborhoods off Kincaid and Alder, you can watch the summer leaves turn to fall colors while you enjoy a lovely meal, and most importantly, you can relax from the wear and tear of university life. HUMBLE BAGEL

C H E W S & B R E W S

20

Looking for a spot to sit down and catch up with an old friend or new flame? Or do you just want to grab some tasty sustenance and hit the bike trail? Humble Bagel has both of these desires covered. You can craft your own breakfast of an amazingly fresh bagel topped with your choice of spreads, veggies, proteins and cheeses, or you can order one of their many pre-designed bagel sandwich options. If you aren’t feeling a bagel on this particular morning, they serve a variety of baked goods from fluffy muffins to robust chewy coffee bars. Once you have ordered, you can take a seat indoors and bask in air perfumed by the aroma of fresh baking or you can enjoy the patio seating and soak in some of the fast-fading Oregon sun. The portions are the perfect size to leave you feeling full and energized, without being sluggish for the rest of the day. Located on the corner of 24th and Hilyard and open from 7am to 5pm (7:30am on weekends), Humble Bagel is a gem to be discovered in the neighborhoods of Eugene. SUNDIAL CAFE Are you ever looking for a healthier take on food, maybe vegan, but when you try and go out for a meal, your friends are just looking to eat a burger, chicken and waffles or a milkshake? Sundial Cafe is the perfect marriage of these two ideas: hearty food with a healthy vegan spin. Here you can get mac and cheese with a sandwich, having both a vegan and non-vegan option available. Go in and take a seat, you will be greeted by a wonderfully professional and friendly staff. Take a seat in the intimate little space and watch conversations between both lovers and friends unroll. When the meal is over, you will want to stay, and you should - to order one of the sundial milkshakes. This is the perfect cherry on top of a heartwarming, nostalgic meal. If after reading this you decide you absolutely must go to this dreamland of food, you can find it on the corner of 24th and Hilyard, open from 11am to 9pm on weekdays and from 8am to 3pm on weekends.

EL SUPER BURRITO If you are looking for a student sized meal (big) at a student sized price (small), head over to El Super Burrito (or “El Supes” as most students affectionately refer to it) to get quality Mexican food at a great price. Their burritos are amazing and they also have a vegetarian option. If you are looking for something besides a burrito, they feature giant servings of nachos and traditional style chili rellenos. El Super Burrito is located at 2566 Willamette St. and is open from 9am to 8:30pm. SUNDANCE MARKET If you are looking for a market geared towards healthy, clean living but don’t want to walk the distance to a Whole Foods, or if you just want to shop local, then Sundance Market will be a dream come true. They have a fantastic selection of organic produce, as well as a hot bar and a salad bar serving up vegan options. If you are looking for an evening deal, Sundance’s hot bar is half off after 8pm, making eating healthy very affordable. You can find Sundance on the corner of 24th and Hilyard, and it is open from 7am to 11pm.

Have you ever walked past a restaurant, and noticing just how busy it was, you knew the food must simply be nextlevel good? Kung Fu Bistro is this place. I even wondered if I should actually do a profile on it, simply because it’s so busy I’m not sure you could get a table. But if you do manage to score a table, then be ready for an authentic, mouth-watering culinary experience. You will feel waves of warmth envelope you as Asian spices color the air surrounding your mouth in this sensory roller coaster. As you look the menu over, be sure to scan other tables as well. I challenge you to find anything that you don’t want to order. Try ordering several plates of food and then sharing them amongst friends but be sure to start with the potstickers, a perfect combination of crunch and chew. If you are looking for the real Szechuan deal, then look no farther than Kung Fu Bistro. It is located at 2560 Willamette St, and is open for lunch from 11am to 3pm and for dinner from 5pm to 9:30pm.

Whiteaker Located West of the University of Oregon near Blair Boulevard is Eugene’s Whiteaker neighborhood. The Whit is a lively, buzzing hub of eclectic style, invigorating art and an irresistible array of food and beverage options. If you visit The Whit on a weekend night, you will find crowds of people circling the many breweries in the neighborhood such as Ninkasi and Hop Valley, to name some. You will also find lines of hungry foodies waiting outside the door at popular restaurants like Papa’s Soul Food, as well as satisfied diners in the quirky Pizza Research Institute’s outdoor eating area. If you find yourself in The Whit during Thursday summer evenings, you’ll catch a glimpse of The Whit’s community market. With upcycled flair, The Whit offers its visitors unique options for breakfast, lunch, dinner, dessert and happy hour that do not disappoint. BREAKFAST IN THE WHIT: WANDERING GOAT COFFEE CO. As the leaves begin to change and the air gets cooler, you might be looking for a quick spot to grab a steaming cup of coffee and a light breakfast before you embark on a morning hike up Spencer’s Butte. Perhaps you’re looking for a space to study or a cozy atmosphere for conversation with a friend. Wandering Goat Coffee Co., located on Madison Street on the outskirts of The Whit, is the perfect place to stop in for coffee and stay a while. The knowledgeable caffeine connoisseurs behind the counter can provide great recommendations and will provide

you with a quality beverage every time. If you’re feeling a bit hungry as well, make sure to try some of their homemade pastries and dishes, including peanut butter bars and biscuits and gravy. They have many gluten-free and vegan options, which is a plus. Don’t be fooled by the cozy, quiet atmosphere in the early morning light, though. If you find yourself at Wandering Goat in the evening, you might just get a taste of Eugene’s very own metal music scene, which can be even more fun than a plate of biscuits and gravy. Wandering Goat Coffee Co. is open 6am-11pm on Monday, Tuesday, and Wednesday, 6am12am Thursday, Friday, and Saturday, and 6am-10pm on Sunday. BEST PLACE FOR LUNCH: TACOVORE When you walk in the front doors at Tacovore, the first thing you may notice is the long, communal dining tables and the Dia de los Muertos décor. Bartender Oscar Regalado indicates that this unique atmosphere is integral to both the customer’s experience and to the heart of what it is they are doing here—which is bringing all kinds of people together through local, sustainably-sourced, hand-crafted, amazingly delicious food. Everyone from business professionals to urban farmers to families with kids will come in for a quick, affordable, fresh, and delightful lunch, making this local hotspot stand out not just for its quality food, but also for its local colors. A large part of their mission is to bring people together, to be a neighborhood hangout as well as a beacon for ethical and sustainable business practices.

In fact, Regalado emphasizes the establishment’s commitment to quality. The chefs hand-make the corn tortillas and freshly squeeze the juices for their original margaritas daily, and they make all their own sauces to create every dish from scratch using only the freshest local and organic ingredients. Additionally, they infuse tequila with fresh fruit and hot peppers, and are firmly committed to sustainability. It is clear that the tacos here represent both an exciting new wave of fusion cuisine, and even more importantly, a viable model for fresh, nutritious, quality food at a reasonable price in a hip and fun environment. I recommend trying the carnitas taco and the house margarita. FEATURED BEST CRAFT BREW: NINKASI’S OKTOBERFEST What better way to chill out on a Friday night than visit Ninkasi Brewing’s Tasting Room? During the fall season, Ninkasi’s lineup of brews features a seasonal release. Through September and October, you can try Ninkasi’s Festbier Lager, Oktoberfest, which has been a running release since 2014. The beer’s stunning color, resembling the shade of a deep orange harvest moon, is enough to entice beer lovers. The brew’s flavor is equally as alluring as its color, with its autumnal and aromatic flavor. Stop by the Tasting Room or pick up a pack of Oktoberfest to try some for yourself. Enjoy a pint before your fall festivities. Ninkasi’s Tasting Room is located in the heart of The Whit at 272 Van Buren Street, and is open 12pm9pm daily.
