Talk September was a happening month for GLAM! With all the fashion majors highlighting their new collections, the Paris Fashion Week, London Fashion Week and the New York Fashion Week shows stealing our attention one after the other and our chic GLAM colleague Orna Ballout packing her bags to fly out of Doha shores, the GLAM team has been hyperventilating. But that hasn’t stopped us in getting you the top trends of the new season. KAREN MILLEN Autumn/Winter 2012 Karen Millen has fused minimalism with modernity to create bold statement staples for the new season in classic black and white. There’s also a few touches of vibrant reds, mellow blues and flat greys. Add shimmering texture with their beaded colour blouses in both classic masculine and fit-and-flare peplum shapes by layering them in new proportions. In the new Mango A/W 2012, there is a clear military influence, with details incorporated in clean lines. There is also the clear influence of architectural forms which add new volumes, with particular emphasis on volume sleeves and waists to which frills have been added in skirts and dresses. Complete black or white winter outfits are very important in these silhouettes, while deep and bright colours such as cobalt blue also add fervent energy to the fall. Features include epaulettes, patch pockets, contrast piping, leather adornments, buttons with military motifs and padded garments. In a colour palette, different shades of khaki become the neutral tones of the season.

What are the jewellery trends for Autumn/Winter? Coloured stones are very fashionable this season. These stones give the designers a chance to create magnificent jewels. Tell us about the most showstopping piece from Colours of Emotion collection. Our one of a kind show piece is the Dancing On the Bosphorus Ring. This ring is inspired from the breathtaking hues of colours twisting into elegant curves. I never really had the guts to follow designing, something I’ve always been passionate about. When I eventually started, every piece I’ve created has been out of love, and I’ve been touched by the response so far.”
“My family are a huge support. My Dad is from Saudi Arabia and my mum is from Lebanon, the Lebanese helps smooth the Saudi over! It’s good dynamics. Fathers are always a bit confused when their daughters venture into something creative but he’s pleasantly surprised.”

“For the event at The Vanity Room, I’ve created four exclusive blazer designs for Qatar. The Qatari women have a very distinctive sense of style, it’s almost majestic but also very fashion forward. “Since I started designing, a lot of celebrities have been spotted in my blazers. Kim Kardashian was seen wearing one from my first collection in New York; that was amazing. And winning at the Grazia Style Awards for 2012 was the cherry on top!”

“Some people complain that I don’t represent Islam in a proper way. There are a lot of designers from Saudi but they’re very conservative and usually work behind the scenes. I prefer being in front of the scenes, because as a designer, my clothes represent who I am and I think people can connect to the clothes I make.”

“It’s not going to stop at blazers. They will always be a part of the collection but we’ll be bringing out a lot of things that will surprise people. There’s something cooking with Topshop at the moment, and I’m also collaborating with Violent Lips on a special edition for Lady Fozaza.”

The very stylish and savvy Ekaterina has been in Doha for a little over a year and she has a finger on the fashion pulse as she helps manage multibrand boutique The Closet. Your style: It all really depends on my mood. Sometimes sporty, but mostly trendy and street casual. I have been a stylist for six years in Russia for various fashion publications, and have also worked at Russia Fashion Week. I wear high heels all the time – I even sleep in them! I always go for one standout piece that would highlight the outfit like a statement jacket. This concept is so ingrained in me that I naturally work it into my designs. If you look at my collection, you can see all my style influences - the statement pieces, the soft lines that are easy on the eyes and influences of late 50s and early 60s design movements. For A/W 2012, I am obsessed with: Soft cardigans and a lot of metallic touches be it on bags or knitwear. The metallic can be printed or incorporated with other materials to really make a statement. And of course, I love to accessorise with big chunky pieces. I am also loving loafers this season instead of boots. And a big thing for me is the scarf - I think people don’t wear scarves enough and it is always an afterthought when they are feeling cold. Scarves can really change your outfit with colours and patterns. Also for A/W, I will be working on my new collection that will incorporate prints inspired by my heritage, an Islamic pattern base which includes typography and architecture. Your move back to Doha: Before I left
London, I gave away boots, heavy cardigans, chunky knits, capes and all the things that I won’t need in Doha. In London, my wardrobe mix is all about keeping warm and comfortable but in Doha, I would always wear more dresses, heels and accessories. It is a change of lifestyle that calls for a wardrobe makeover!

Creative and edgy, Bridget injects a fresh burst of fashion energy to our city. Your style: I tend to wear a lot of
independent designers, most of them from Down Under. Australians, especially those of us from Melbourne have a very indie and hipster vision when it comes to fashion and culture. I like to always keep a look out for emerging designers that are not available everywhere, unlike mass market brands. I wear a lot of black and keep to loose-fitting tops paired with tight bottoms. I love layering as well which works great for the weather in Melbourne and also here in Doha, to keep on the modest side of things. When it comes to footwear, I have always worn flats because of my height and have only recently started wearing wedges. I am really hard-wearing on my shoes so I will spend more money on shoes and bags because I need to get more wear out of them!

constantly keep a close tab on are Alpha 60, Claude Mouse, and Trim Paee – all Australian. I will always follow what their latest looks are and kind of integrate all of my favourite items to create my own personal style. I personally really love Australian designers as they tend to lean on the creative and experimental side – sometimes really androgynous with lots of simple and easy to wear cuts as well as amazing jackets.

First impressions of Doha’s fashion scene: A lot of people here dress for the
weather and at the same time still stick to certain restrictions to be modest. Although sometimes you feel that it does kind of cramp your style to adhere to certain guidelines, but I guess everyone has somehow adapted their own style to the community here.

Whenever a trip abroad comes up, we raid our closets for our most fashionable pieces that have become hidden treasures waiting to be seen out and about. A trip to Paris however, requires a lot of planning in terms of what to wear, when to wear it and how to wear it. Our trip becomes a fashion schedule, after all, a fashion faux pas will be spotted amongst the Parisians. After being part of Paris Fashion Night Out, every person I met, whether a fashionista,stylist, blogger, designer or even shop manager revealed they were wearing at least one vintage piece to add some class to their uber chic outfits. After careful thought, I decided it is about time for us to explore the best vintage shops in Paris.
GL AM STYLE COME ON EILEEN
This is one of Paris’s most clustered vintage shop. From vintage converse to 1970s Dior bags, everything and anything is here. Located on 40 Rue De Rivoli, 7504, Come on Eileen, (yes that’s the name of the shop), is full of treasures. The shop opened a year and a half ago, with three floors covering menswear, womenswear, kidswear and accessories. After speaking to Fabien, the shop manager, I discovered that most clients range anywhere between 15 to 60 years old, which pretty much sums up the shop. Racks and racks of dresses, coats, shirts, pants, bags, hats, whatever you can think of, are available. I shared my stop concern that even though the shop is three floors, one can barely move without knocking something over. Her answer was simple; they have pieces from all ages, so don’t store anything. What is shown is what is available, fair enough. For women, you’ll find vintage Christian Dior, Chanel, Louis Vuitton, Gucci, Hermes and many more high end brands. For men, Lacoste, Ralph Lauren, Converse, Levis, Burberry, Marc Jacobs and more. The shop’s main branch, which has been open for just over 10 years, is located on 16-18 Rue Des Taillanders, 75011, Paris.

Saving the best for last, Dider Ludot has been rated by all Parisians as the creme de la creme of vintage shops located on 20-24 Galerie Montspensier, Palais Royale Metro Exit. Dider Ludot, the owner’s name, is not just a vintage shop, it is almost like a museum where people from all ages can go and marvel at fresh off the runway vintage couture dresses, dresses that have never been worn before except on a model, the same dresses that take four to five months to make. The items displayed are from the early 1920s to present, the only pieces available for men are vintage coats and a small selection of shirts. 75% of the couture items displayed come straight from the fashion shows, so as you can imagine, one would feel extra special wearing them.. Brands available include Hermes, Balenciaga, Christian Dior, YSL, Balmain, Escada, Gucci, Chanel and John Galliano, to name a few. The hype surrounding the new Hollywood heroine, Emma Stone, has not gone amiss. Her show-stopping performance as the female lead in the recent blockbuster film, The Amazing Spider-Man, has sealed her spot among the A list celebrities of Hollywood in addition to earning the nomination for the 2012 Teen Choice award for Choice Female Movie Star of the summer. HER JOURNEY TO FAME
From Scottsdale, Arizona, the 23-year-old landed her first ever starring role in 2008 as Jules, the love interest of main character Seth (played by Jonah Hill), in the funny high school movie Superbad, earning her the 2008 title of Young Hollywood Awards’ Exciting New Face. Emma’s reputation as the easy going girl-nextdoor grew rapidly after playing similar roles over the following years. Emma played Natalie (the President of a sorority of misfit girls) in the 2008 romantic comedy, The House Bunny. She starred alongside Anna Faris, Katharine McPhee, Kat Dennings, Rumer Willis and Colin Hanks. The condition is very aggressive and generally doesn’t respond to standard treatment. The excitement surrounding Stone’s upcoming films increase as we await the release of the crime drama, Gangster Squad, (due for release on January 11th 2013) by Zombieland Director, Ruben Fleischer, in which Stone will be starring opposite Ryan Gosling. Shortly following is Movie 43, (to be released on January 25th 2013) a feature film produced by the Farrelly Brothers. The film is composed of 25 short comedy segments, featuring a large ensemble cast including the likes of Halle Berry, Gerard Butler, Hugh Jackman, Uma Therman and Kate Winslet. T
he sheer extravagance behind fashion weeks’ autumn/ winter ‘12 catwalk shows lead me to wonder if designers are taking refuge from today’s hard economic reality by looking into the future, or perhaps well into the past, to conjure up abundance. The catwalks’ secondary focus, a flurry of regal and vivid colour (think gold, red, purple, plum, to hunter green and pretty pink) was outdone only by the sumptuousness of the fabrics from which they shone!

Brocade has made its lustrous comeback, along with modern laces, crochet yarns, cushioning velvets and shimmering metallic to complete the feverish winter wonderlust. Nothing short of theatrical, these textiles certainly have the visual power to embody a splendid, yet short-lived, celebration of unadulterated wealth. Once all is said and done though, it would be amiss of me not to validate the designers’ exaggerated stories of grandeur and prosperity, so beautifully told through these fabrications. So let’s indulge ourselves in some story sharing of rags and riches.

eastern origins, which began as early as the 7th century when Kashmiri merchants introduced it to Baghdad, Iraq’s capital. Around the same time, Ziryab, an Iraqi-born multi-talented artist and fashion designer, introduced and popularised this luxurious textile in Cordoba, Spain. Fast-forward a number of centuries, and velvet continues to be a textile of choice for royalty and wealthy folk. Although, if you don’t find a silver spoon in your mouth, don’t be disillusioned: fake it as Scarlett O’Hara from Gone with the Wind did. “I’m going to Atlanta for that three hundred dollars, and I’ve got to go looking like a queen.” Nothing better illustrates true optimism than Scarlett’s determined transformation of her velvet curtains into her iconic moss green drapery dress. Lace
Although it’s hard to pin point the origin of lace, Venice, an important trading point in the 15th century, was the first city associated with it. To this day fashion has always driven lace production and supply, so back then it quickly became a worthy currency, which was traded (and smuggled) across borders. Travelling noblemen and intermarriage between royal families ensured that new fashion ideas were widely spread and popularised. I caught myself stifling a yawn when coming across a leading American magazine article entitled “lace: bedroom to boardroom”. This attention-seeking headline seemed such a cliche, yet truthfully, it’s an honest account
of the versatility of lace. Kate Middleton’s modern fairytale wedding dress is a masterpiece of exquisitely intricate lace making. Designed by Sarah Burton of Alexander McQueen, the dress, made of French Chantilly lace with its long-standing tradition and English Cluny lace, will be something future generations come to speak of. Crochet knits
Unlike brocade, velvet and lace, born into a blue blood society, crochet lace had more humble beginnings. Its production began as a way of making money for impoverished Irish workers during the Great Irish Famine, mid 19th century. These days, if your reference to crocheting is your grandmother’s hobby-making teacozies, blankets and egg-warmers, then it only takes a look at Marc Jacob’s a/w ‘12 collection, of handmade crochet sweaters and cosy cocoon-like shawls, to see yarn being skillfully transformed into style modernity. Style tips and wardrobe inclusions
One of the best ways to create an eyecatching outfit is by incorporating texture. This winter you can meet the challenge head-on with the abundance of variety, coupled with some style know-how: Unless you can afford a vast wardrobe, it’s wise to avoid investing in a very distinctive, elaborate brocade coat. Keep this big investment classic and neutral, but beautifully tailored and cut. Rather select your favourite brocade in a more wearable, versatile piece like a jacket
or pair of pants. Lace is a versatile and easily incorporated trend, whether it’s a skirt’s hem, ruffled shirt or full-on lace dress. You certainly can afford to go heavy handed on lace this season. If you’d prefer a less elaborate use of lace, then a simple lace top slipped under a structured jacket or teamed with your favourite pair of denims gives instant glam appeal without losing the style strength you desire. Worth mentioning; lace stretched tightly over the body can cheapen a look, while free flowing or well-draped lace makes for feminine and classy style. Make a couple of textured pieces work together by mixing interesting fabrics found in separates or adding textural accessories. Juxtapose heavy velvet with the delicacy of lace to enhance the beauty of both. D
o you have a place where you feel comfortable, secure, safe, “at home”? With Qatar having close to an 80% expatriate population there are always many who are new to the country, many who have left or lost that familiar sense of home and security, one of our most basic needs. Critical to the overall experience when moving to a new country is the initial settling in period. Getting it right with a smooth transition can lead to a positive experience. Done wrong, it can be a disaster. This is often the case for anything new in our lives. It may be a move to a new country, but it could be a new job, new school, the leap into parenthood or leaving the workforce to try something different. Each is a journey into the unknown and can bring feelings of doubt, insecurity and fear. In a yoga class, the settling in is an important and the the first thing the teacher does is to spend time helping attendees settle into the class. What does that mean and what’s the purpose behind it? It means creating conditions to ease the transition from what was going on before you came to class, to what’s about to take place. Though each of us are unique, we all lead lives that are full, busy and constantly changing. We diligently make our way through the busy streets, attend appointments, rush from one meeting to another, checking off our to-do lists as we go. As far as coming to a yoga practice on any particular day, who knows what you may have had to go through just to roll out your mat for an hour or so? Or what’s happening in your life that you maybe need a break from, or get prepared for? Add to that any uncertainty,
confusion or major change that’s occurring in your life and it’s sure to add to your level of stress or anxiety. Much of what happens is not within our control (though often we think it is, or should be) which then creates even more discomfort. So how do you settle yourself through all of this? Find a little peace, security, relief perhaps? Some resilience to see you through. Of course there are various ways, but a simple tool we use in yoga can also be used in your everyday life. It is free. It is always with you. And it is something you can learn to regulate and control. Your breath. Each time I begin teaching a class we start by focusing on the breath. We take some time to close our eyes, notice our breath, feel it moving in our body. That alone can provide a sense of being grounded, secure and safe. Creating a long, slow and steady breath can help quiet and calm the nervous system, reduce stress and bring both ease and relaxation back to the body. There are many types of breath exercises used for various purposes but in the example below, a simple technique of lengthening the exhale can quickly bring about some relief. So before you settle into your car to head out on those busy streets, before you work up the courage to speak to your new boss about uncertainties, or after you’ve had your most harrowing day, take a few minutes and give your breath some attention. Even for a few seconds, close your eyes, soften your jaw, close your mouth and take a few simple inhalations and exhalations. Do that, and see if it helps you to find a little stillness and some peace. Like the ocean, though the surface of the waters might be rough, choppy and disturbed, down below is a place where the sand is settled, the water’s calm, and there is deep tranquility. Find that space within.
Begin by lying flat with your back on the floor, legs straight in front of you. Or if it’s more comfortable, have your knees bent and feet flat on the floor, hip width apart. Close your eyes and place your palm on your abdomen and take a few moments to notice the movement of your abdomen with each inhale and exhale. Mentally count the length of each inhale and exhale and first try to balance the length of each, so maybe breathing to a count of 4 on your inhale and 4 on your exhale. Then gradually increase the length of the exhale for by 1 or 2 counts for several more breaths, ensuring the breath remains smooth and relaxed. Gradually increase until your exhalation is twice the length of the inhales, so a count of maybe 4 on the inhale, to an 8 count on the exhale. Do not go beyond what’s comfortable for you, or increase to anything over 8 seconds. Even a slight increase of the exhalation over the inhalation can bring a calming effect, so be careful not to push yourself beyond what is comfortable. Continue for a few minutes and then finish off by taking a few natural, relaxed breaths.

Co-enzyme Q10 and alpha lipoic acid are also fantastic for their anti-oxidant properties! The next time you are buying some new skincare items, have a look if they offer anti-oxidant protection too!

Of course we don’t have to be so extreme to maintain youthful looks, and it’s really not a difficult formula to follow. Here are some tips how... - Invest in a proper skincare consultation and a good skincare routine. Try to make time every month to visit the spa and have professional skin care treatment. - Instead of resorting to deep chemical skin peels, a more delicate version may be available at the spa. A skin peel at the clinic does have the effect of peeling off layers from your skin. The result, fine lines and wrinkles appear less deep and will also promote the re-generation of new skin cells. However, these treatments can be uncomfortable and the skin will shed from your face after a few days which can render you housebound. - Drink at least 8 glasses of water every day. Hervi Leger, Ralph Lauren and Chanel Nail the trend: Equestrian-style ponytails have been the order of the day for a couple of seasons now, and from the looks of things, they are here to stay. Ponytails were super tight and straight at Chanel, while at Hervi Leger hairstylists played with hard and soft textures. Leather harnesses were used to secure the ponytails at Hervi Leger, while black tape was used at Jason Wu, and over at Chanel and Ralph Lauren, hair elastics were cleverly concealed with extra strands of hair wrapped around the base. To create your own sleek ponytail, first prep your hair and tame any frizz using styling cream or hair serum. Brush your hair from the top of your head backwards and secure into a ponytail in the middle of your head. Use a hair straightener to flat iron the ponytail until it is poker straight, creating a contrast between the texture of the ponytail and the hair on top of your head.

To create this version of the side parting, work a generous amount of hair gel through damp hair. After brushing or combing the tangles out of your hair, use a fine-tooth comb with the teeth down to find a parting and comb that section of hair to the side. Attain that mirror-like look as seen on the catwalk by spritzing some shine spray.

The models’ twisted, wavy locks were as ethereal as the dreamy collection itself. To replicate the look work mousse into your hair while damp, comb a centre parting and leave to dry naturally. Section your hair and create waves using a curling iron. Take two sections of hair that frame your face and twist them around into two braids securing them together at the back of the head with a pretty hair clip. The waves do not have to look perfect; the whole point is that they look natural.

Using a wide-tooth comb, create two sections in your hair: one at the back of your head and the other at the crown. Tie the section at the back into a ponytail to keep it out of the way. Then, with a fine-tooth comb, start backcombing the section of hair at the crown until it becomes big. Remove the other section of hair from the ponytail and lightly comb the teased hair back with the rest of the hair - be careful not to comb out the volume. Secure the hair with bobby pins into a French twist at the nape of your neck. Finally, spray your bouffant with hairspray to hold it in place. Leave some strands loose for a laid-back look. Tie a scarf or headband around the front of your hair for a chic finish.

ew York fashion powerhouse The Row may have gotten all the attention with its Spring 2013 collection at New York fashion week, but Elizabeth & James – the newest addition to the Olsen twins’ empire is about to steal the show by taking the perfume industry by storm. Mary-Kate and Ashley Olsen’s second ready-to-wear label will launch its first fragrance exclusively with Sephora in March of next year. The twins are self-confessed perfume junkies and are said to be partial to a spritz or two of Prada’s Tendre Eau de Parfum, Marc Jacobs’ Grapefruit Splash, Black Orchid by Tom Ford, CK Euphoria and L’artisan Mure et Musc. While this mixed bag of scents provides little clues about the composition of the twins’ new fragrance, if you could bottle their cool retro style you might come up with a vintage-themed scent with a few sweet notes and a fabulously stylish bottle.

ormer face of Estee Lauder Gwyneth Paltrow has inked a deal with the “makeup of makeup artists,” Max Factor. Fans of the US cosmetics giant will see the movie star front a six-month global campaign for the brand, starting in November. The news is all the more surprising given the actress’s penchant for English beauty products. MyFace, Boots N07 and Little Me Organics are all brands she has raved about on her lifestyle website Goop.com. Of ‘project Gwyneth,’ Pat McGrath, Max Factor’s Global Creative Design Director, said, “I tasked 11 of our national makeup artists to create three glamour statements for Gwyneth. These were to be inspired by her life and the different roles she has to play – model, actress, mother, singer.” The new campaign aims to celebrate Max Factor’s makeup artistry and hopes to give inspiration to other women to find the “glamour statements that are right for them.” Paltrow’s signing for Max Factor comes days after Bobbi Brown announced actress-turned-fashion designer Katie Holmes is to become the first-ever face of its cosmetics range. Women’s Wear Daily claims she will be paid between $2 million and $3 million over the course of a multi-year deal.

Is working out good for your skin? While your heart, lungs, muscles, and bones gain the most benefit from working out, the skin isn’t left behind. According to the National Institute of Arthritis and Musculoskeletal and Skin Diseases, exercise increases blood flow to the surface of your skin and brings oxygen and nutrients to your whole body – your skin included, writes FitBottomGirls.
Keep it clean To protect your skin during workouts, avoid wearing clothing that rubs or chafes, and be sure to keep protective equipment like helmets, hats, and sunglasses clean, writes news resource SparkPeople. When working out, avoid touching your face to prevent blemishes. To wipe sweat from your brow, blot your skin with a clean, dry towel. If you have long hair, pull it back from your face, and pin bangs off of your face to prevent additional dirt and oil from clinging to your skin. Should I remove my makeup before working out? SparkPeople adds that when it comes to makeup, most products on the market are noncomedogenic, so they shouldn’t clog pores even if you wear them while working out. Plus since overwashing your face can strip your skin of necessary oils and cause irritation, pre- and post-workout washes may be overkill. Best bet: early morning workouts sans makeup.

For a slice of South East Asia at your doorstep, head to Chantara Spa at The Venue. The new kid on the block comes with a team of therapists who know the art of TLC. The Treatment: Nusantara Heritage: Pandan & Coconut Foot Spa, Traditional Eastern Massage, Hair Cream Bath, Royal Javanese Lulur & yoghurt body treatment. Time: 120 minutes Cost: QR 1,100 Review: Located at The Venue, a new leisure club featuring a huge gym and leisure facilities is Chantara Spa, a gem right at your doorstep. The spa surroundings offer a chilled vibe . Rich aromatic smells are the first thing to catch my attention followed by warm greetings of smiling therapists, all from Bali. Up for review is the Nusantara Heritage package, a recommended treatment for brides-to-be or a pampering treat. I’m told the combination of massage, scrub and wrap is great for removing dead skin cells and toxins. The treatment kicked off with a relaxing foot spa in a room fit for a princess. Here, majestic furniture is placed around a water feature; its soothing sound managed to transport me from the hustle and bustle of everyday life to calm. All this while my feet were gently scrubbed with sweet-smelling natural products from the Biossentials range which the Spa features. A tastefully decorated treatment room enhanced by dim lighting set the scene for the massage. Prior to the treatment, I was encouraged to choose between oils, each with a specific purpose, to personalise my massage experience. I opted for the Balancing oil simply because I liked the fragrance best. My therapist was extremely attentive and made sure I was completely comfortable before she started the treatment. Throughout the massage, I was impressed with her thoroughness; from my head to the tips of my toes, each part of my body was treated with a large dose of tender loving care. The stubborn knots in my left shoulder that refused to budge for quite some time were insistently worked on until they vanished. After the massage, Lulur cream was rubbed in to my skin. I was then wrapped in plastic and covered in a hot blanket. The wrap procedure of the treatment is great for clearing toxins from your system. However, I really advise people who can’t handle heat or suffer from claustrophobia
to avoid wraps. While the wrap gets to work, a concoction of creams was gently massaged into my hair; this is great for nourishment, and also takes your mind off how hot your body feels from the blanket. Don’t be put off by sweat, this means the treatment is working effectively. Next, warm yoghurt is coated over the body. It is a welcoming treat after the hotness of the wrap. My only negative about the whole experience was in the shower, which contained water not hot enough to my liking. Despite the cold finale, my skin felt incredibly smooth albeit with goose bumps! Rating: Highlight: From my head to the tips of my toes, every part of my body was thoroughly massaged. OCTOBER 2012 / 81

GLAM digs into the lip-smacking Italian delicacies at Cucina, at the Renaissance Doha City Center Hotel Qatar and meets the master, Chef Daniele Chiari.

here’s something about Italian cuisine that evokes a whole lot of warmth and affection with every bite. This could be attributed to the fact that most Italian chefs seek inspiration from their mothers and grandmothers and recreate the same magic and simplicity of traditional cooking in their restaurant. Chef Daniele Chiari is no different. “When I was a baby, I didn’t eat much, just simple food,” says the Italian chef. “I never loved onion, garlic or vegetables in my meal. Many in my family own bakeries, trattorias, pizzerias and pasta shops. So I asked to work in the kitchen and from there my passion for Mediterranean cuisine, different tastes and travel grew.” In November 2011, Chef Daniele was offered the Sous Chef position at Cucina, at the Renaissance Doha City Center Hotel Qatar and since then has been instrumental in revamping the Cucina menu to incorporate traditional Italian colours and flavours. The newest addition to the delectable menu is
Cucina’s Seasonal specialities that feature local seasonal produce to ensure the highest level of flavour and quality in every dish. Chef Daniele explains, “In Italy, we give our guests the best ingredients at the right time of year. Today many people, mostly youngsters, are unaware of which period is right to eat which seasonal products, because we can find every ingredient in the supermarket, all year. Ingredients sourced in the right season will give the dish the right colour, freshness and taste, as well as more vitamins and minerals.” September’s special ingredient was the pumpkin, and GLAM was invited to sample the seasonal special menu. From the refreshing pumpkin salad to the wellcooked pumpkin flan with beef fillet and the utterly delicious pumpkin ice-cream, we were amazed by the creative dishes that the chef managed to pull out one after the other – all made from the humble pumpkin. Don’t be disappointed if you missed out on the amazing Zucca fiesta last month. Cucina brings the glory of the magical truffles to your tables this month in its ‘Porcini mushroom, Truffle and Barolo Week’ from October 12-24. “Truffles are a type of mushroom, and like all other mushrooms, it needs humidity and
water. We start to find truffles in the Italian mountains during the months of September, October and November. This period of rain and moderate temperature are perfect for sourcing this delicacy,” says Chef Daniele. Cucina’s Express Business Lunch (QR85 from 0000 12pm-3pm) is another must-try. A highlight is the option to choose your own pasta and sauce; we fell in love with the simple yet flavoursome Ricotta e Balsamico that is in fact one of Daniele’s own family traditions. We were grateful that we didn’t stuff ourselves as warm fig and apple tart with lemon sorbet was also pending to be devoured for dessert. Cucina has a nice, warm and friendly ambience in which to unwind with friends or family. Food quality is guaranteed as Chef Daniele ensures the freshest ingredients for all his dishes. “Freshness, the right ingredients in the right recipe, cooked with simplicity and a lot of passion should be in your mind in the kitchen. The cook is an artist, and like all artists, most important is good technique. When you learn those techniques, then the cooking becomes easier,” says the Chef. Jazz at Lincoln Center opens At The St. Regis, Doha
Jazz at Lincoln Center (JALC) at the St. Regis Hotel, Doha opened their first performance, with the swing sounds of the acclaimed Rodriguez Brothers.
“There
are elements of swing in our music,” said Robert Rodriguez. Combining Afro-Caribbean rhythms with Modern Jazz and European classical music, the young Latin Jazz performers began recording in 2002.They recorded three albums and played on Ray Barretto’s 2005 Grammynominated album, Time Was Time Is. “We have strong rhythmic culture that we incorporate into our music,” he added. The band is playing under two themes: “What is Jazz?” followed by “What is Afro-Cuban Jazz?.” “Jazz was born in the US but it now belongs to the world,” said Robert. “Everybody has access to it and everybody has contributed to jazz. A lot of different cultures have contributed to it.” Robert is the pianist in the band and his brother, Michael, is the trumpeter. Carlos Henriquez, the bass player, Eric Doob, the drums player, and Paulo Stagnaro, the percussionist, will join the Rodriguez Brothers at St. Regis, Doha’s JALC. 84 / OCTOBER 2012
The five-star luxury hotel, St. Regis, opened early in 2012 as part of Al Gassar Resort, located in the emerging commercial heart of the West Bay. St. Regis, Doha is the Jazz at Lincoln Center Orchestra’s (JLCO) first branch outside its New York City home. The Rodrigues Brothers toured around the world at top jazz festivals in New York, Monterrey and Iceland. Qatar is not the band’s first time in the Middle East. The Miami-raised brothers performed in Israel. Henriquez has also performed in Oman and Abu Dhabi, UAE. “Jazz is new here, but we’re not the first jazz musicians to come out here. There have been others. I know Dizzy [Gillespie] travelled all the way out here,” said Henriquez. “We hope to share our love of music and broaden our audience and bring the music to a whole new group of audience,” said Michael Rodriguez. “We use music as a way of communication to share our life experiences.” The Rodriguez Brothers are only the start of the establishment of a world-class jazz platform in the region. In a few weeks, JALC is introducing the music director of the JLCO and ninetime Grammy Award Winner, Wynton Marsalis, to this small Arabian Peninsula.
