Jimmy and Leslie Chapman share how they have stood the test of time, right here in Osceola County, through hard work, dedication, and a bond that has lasted a lifetime.
LOVE THROUGH WORK AND COMPANIONSHIP.
When asked what makes their love last; Leslie explained how they formed a unique bond; “we worked together, it allowed us a special bond. We both wanted the ranch to thrive. Time for Some NEW YEAR’S (FINANCIAL) RESOLUTIONS | By Cleve Grissom |

is here! If you’re like many people, you might be mulling over some New Year’s resolutions, such as hitting the gym more, learning a new language or taking a cooking class. All are worthy goals, but why not add some financial resolutions as well?
For example:
PAY YOURSELF FIRST. Even if you aren’t living “paycheck to paycheck,” you probably don’t have much trouble spending your money – because there’s always something that you or a family member needs, always a repair required for your home or your car, always one more bill to pay. But, if you are going to achieve your long-term goals, such as a comfortable retirement, you need to invest consistently. So before you pay everyone else, pay yourself first by having some money automatically moved from your checking or savings account each month into an investment. TAKE ADVANTAGE OF YOUR OPPORTUNITIES. If you
have a 401(k) or similar plan at work, take full advantage of it. Contribute as much as you can afford, or at least enough to earn your employer’s match, if one is offered. Choose the mix of investments that give you the potential to achieve the growth you need at a level of risk with which you are comfortable.
FOCUS ON THE LONG TERM. In the short term, you might be excused for not wanting to invest. The h adlines are typically scary, the financial markets are frequently volatile, and the future often looks murky. Yet, if you can look past the uncertainties of today, and keep your focus on tomorrow, you will find it easier to follow a disciplined
investment strategy that gives you the opportunity to meet your long-term goals, such as a comfortable retirement.
DON’T BE DRIVEN BY FEAR. When the market is down, investors tend to react with fear. Specifically, they rush to sell their investments, afraid that if they don’t “cut their losses,” they might sustain even bigger ones. If you can get past this feeling, you may find that a down market can offer you the chance to buy quality investments at good prices. FORGET ABOUT THE “HOT STOCKS.” You’ll hear friends, co-workers, and talking heads on television tout today’s “hot stocks.” But by the time you might hear about them, they may have cooled off, and in any case, they might not be appropriate for your needs. Forget about “getting rich quick in the market” – it probably won’t happen. True investment success requires patience and persistence. CUT DOWN ON YOUR DEBTS. It’s easy to pile up debts, but a lot harder getting rid of them. Yet, if you can reduce your debt load even moderately, you’ll free up money you could use to invest. So look for ways to conserve, cut back and consolidate; it will be worth the effort. Making these resolutions, and sticking to them, can help you as you work toward achieving your financial goals.

March 18th, Osceola Heritage Park will be opening its doors to Kenny Chesney, Eric Church, Jake Owen, Neal McCoy, Sawyer Brown, Jamie Lynn Spears, Radio Romance, and many more of country’s most boot-kickin’ bands. What makes it Florida’s best country show? How about 3 days and nights with a 4-story mobile stage, Nashville’s best audio and light show, dance clubs, taverns, and special side-stages.

All-day shopping and dining will line Osceola Heritage Park; and when the lights go dim, country’s biggest stars will come out to entertain. “Every March, country fans get together in central Florida with the biggest stars in music! Classic Country, New Country, Hit Country, Country Rock, it’s a spring tradition! 2016 will be the best year, yet” says executive producer Gary McCann. “Fans will enjoy the largest line-up ever with 30 artists playing over 3 days. OW Which band/ performer are you most excited to see? RL: There are so many artists to be excited about but if I were cornered and forced to pick one, I would say Old Dominion. gain fans. It’s always fun to watch groups on their way up to superstardom. OW Any great vendors our readers can get excited for? promoter to finalize traffic and parking plans for the area. As with any highly attended event there will definitely be heavy traffic, and our goal is to be as effective as possible at limiting inconveniences for attendees and local commuters alike. Stay tuned for details. OW As this is the inaugural RC for Osceola, why should Osceola County
be excited that it’s coming to our own back yard? RL: The Runaway Country Music Fest has been very successful for 5 years, and now coming to our County for year 6 there will be great excitement and enthusiasm. We expect the event will blossom even more now that it will be here in Osceola County. Festivals take time to develop and we are fortunate to have the best of both worlds this March with a brand new festival for our complex,
yet a festival with history. Having experienced the event in the past I am excited for our community to benefit from the tens of thousands of visitors that will be coming to our area to enjoy the music as well as our hotels, restaurants, shops, and theme parks. Osceola County is a great place to live, work, and play; we expect Runaway Country to make a big splash in a good way for all of us! OW Explain the Outer Limits Party Zone and My Apartment, and what they offer to RC’s guests. GM: For three days, the Silver Spurs Arena is turned into The Outer Limits Party Zone; line-dancing during the day and an after-hours night club when the Main Stage goes dark. My Apartment is a 17,000 sq.ft. duo saddle span structure with more artists playing all day and into the late night. Between Main Stage acts, fans enjoy more great entertainment AND another after hours party till the early morning.

MOVE IT TO LOSE IT! Eating healthy is important, but making your body move, is another key ingredient to fitness success. Don’t worry about going crazy; implanting three to four days of exercise, for 30 minutes to an hour a day, can help you reach your weight loss or fitness goals! Here are some key tips to help keep you moving! Make a schedule, one week at a time. Write your work-outs for the week in a fitness journal, and then go back to checkit off and comment on your progress. It’s a great way to see how far you can go. Even print out pics of yourself along the way, to visualize your changes. Make sure to write your goals along the way, so you can treat yourself (see below) for your hard work! Change it up! Don’t stick to one work-out. Change things up, each week or after a month. This can keep those

Just work it back in, and keep moving with your new healthy life.
Also, make sure you do give yourself that occasional treat. By skimping out on all your cravings, you could fall into a downward spiral. If you are wanting, say chocolate, get yourself a small bar, and indulge. However, the key word is occasional. Learn to satisfy your sweet tooth in other ways, too. They are designed to help you out of debt and stress and into a life of saving and giving. We’re all in different places with money. Start right where you are and get where you want to be. Know-how is 20% of the equation. Behavior change and self-discipline make up the other 80%. You can do it! Just follow the steps.
HERE’S THE PROCESS: STEP 1: $1,000 to start an emergency fund An emergency fund is for those unexpected events in life you can’t plan for. Whether there’s a plumbing issue and everything but the kitchen sink is draining, or your brakes are squealing at every stop sign, you can be ready!

STEP 2: pay off all debt but the house List all debts but the house in order. The smallest balance should be your number one priority. Don’t worry about interest rates unless two debts have similar payoffs. If that’s the case, then list the higher interest rate debt first.

You’ll never be in debt again—no matter what comes your way. STEP 4: invest 15% of household income into retirement Now it’s time to get serious about retirement. With no payments and a full emergency fund, put 15% toward the retirement of your dreams. Between your 401(k), Roth IRA, and Traditional IRA, you have a lot of options. PLAN A VACATION Sometimes all we need is a week (or even a long weekend) to recharge our batteries. Lucky for us, we live in the cruise capital of the United States. We have plenty of ports to choose from, but the hot one now seems to be Port Canaveral, voted North America’s best home port by Cruise Critic. With a new terminal and plans in the works for The Cove, a 250,000 square foot marketplace, this port is pulling in some fantastic cruises! The one to watch for, is Norwegian Cruise Line. REMEMBER THE BALANCE Work, activities, and day-today chores take up almost all of our time. It’s easy to see relationships and everimportant alone time suffer, when we don’t make them a priority! This year, remember the balance. Make a monthly schedule for your house, and remember to include the three important things — time for you, time for your spouse, and time for a family day. Time for you is essential to help relax. Choose your favorite hobby and concentrate on that during this special down time. Maybe it’s shopping, going to a yoga class, or seeing a movie – it’s time just for you! Time for your spouse is often the one left out. Make sure to mark that calendar with a big red heart each month for a date night (page 21). If you are
in need of a sitter, check out Care.com; which will allow you to search from listings of trustworthy and background-checked sitters in your area! Make sure to choose something new each month, which will keep the excitement and anticipation of that night going throughout the year. Time for the family. Put away the phones, and make a family meeting this January. During your sit-down chat, make a list of things and places you want to do and see. Put them in a jar, and then each month, pick one out to put on the calendar. Make sure everyone gets to put in their ideas, and keep them all within budget to reduce the stress of any financial burden.
If your plate is full enough, make sure that you prioritize what you take on. You deserve a relaxing night at home after a hard day at work. Try leading with some positive sentiment, such as, “I appreciate you thinking of me” or “I really enjoyed doing it last year, however” which will make you feel less guilty, and really show that you’re unable to help at the moment.

JO THACKER SERVES AS SILVER SPURS RODEO’S SECOND FEMALE “BIG BOSS” | By Lindsey Lupfer |
Jo
Thacker is no stranger to rodeo or to leadership, so it should come as no surprise that she’s serving for a year as the Silver Spurs Club’s board chairperson, which club members affectionately refer to as Big Boss.
Celia, Clarence, Jo, Henry, and Celeste Thacker Jo, a University of Florida College of Law alumna, is a partner at Broad and Cassel. She’s married to Clarence Thacker, an Osceola County School Board member, business consultant, and past Silver Spurs Big Boss. Jo and Clarence have three grown children – Celia, Celeste, and Henry – who all live in Central Florida. Jo has been around the Silver Spurs Rodeo since before she could walk. She’s a sixth-generation Osceola County resident. Her parents and grandparents were Spurs members. Her father, Murray Overstreet, was honored as a Silver Spurs’ Coca-Cola Cowboy in 2001
(an award that recognizes an Osceola County resident who has worked to promote the ranching and rodeo way of life). Her sister-in-law, Patsy, was the first female Big Boss in 1992. And now, while she serves as Big Boss, all three of her kids are first year Spurs members, too. “Mom’s role as Big Boss is the culmination of years of service and dedication to the Silver Spurs Club. She encouraged Henry, Celeste, and I to volunteer for the Rodeo once we were tall enough to see over the concession stand counters. Ruggieri, CEO of Florida Technical College (FTC), is often asked about strategies to reach professional and personal success. He believes “Success is a route you follow� and cautions that achieving success and THEN maintaining it is hard work. Also, success generally eludes those who require instant gratification.

Ruggieri, recently co-wrote a book with motivational author Jack Canfield, of the famed Chicken Soup for the Soul, titled Soul of Success VOLUME 1. Since its release late this summer the book climbed to the top spot of Amazon best sellers. We talked to Ruggieri about his book and another topic he is passionate about, post-secondary education.
Q:
Tell us a bit more about the book. What are some of the strategies to attain success?
“I
participated in this project because Jack Canfield, who spearheaded it, is a respected authority in the subject of self-help. His Chicken Soup for the Soul series has helped millions. Success requires discipline. But first, we must identify what we’d like to do, what brings a sense of fulfillment and how that fits into opportunities in the market or in your community. Once you have identified those elements, we establish short and a long term goals and set a plan to achieve them. We should also accept, from the get go, that we will fall along the way. But I always tell my students, if you fall, don’t fall backwards, fall forwards. You’ll be at least four feet ahead from where you fell. But to summarize it, success is a process. Those who seek immediate gratification will likely not get it.”
Q:
How did you get started in the post-secondary education industry?
“I
got started as an instructor at a technical school in California. I had just completed my military service and was attracted
to by the fact that this institution in San Diego, was registering lots of people like me fresh out of the service. I realized that many of these veterans were coming back into civilian life with plenty of skills, but many had little or no application in the civilian world. I felt a calling to help these guys reinvent themselves. Funny thing is, I told myself that I’d do it for a year or two, much in the way someone donates their time to the Peace Corps, but 40 years later, I’m still here.”
Q:
What differentiates FTC from other colleges?
“W
e have 35 years of experience and knowledge of the Central Florida market. In that time, we have developed solid relationships with many of the area’s largest employers which enables us to understand demand and where it is coming from. Another element that sets us apart is the quality of our instructors and staff. They are knowledgeable on their fields but also
compassionate and caring. To them, our students are like family and they treat them with that same sense of caring.”
Q:
In your years as FTC’s CEO, what do you consider to be your top accomplishment?
“G
rowth, most definitively. When I was appointed CEO seven years ago, we had three locations and less than 1,000 students. Today, we have twice the campuses (6) and have quadrupled the number of students to 4,000. I’m also very proud of our success rate. We take starting and graduating seriously as well as helping our graduates find jobs.”
Q:
One of your objectives as an educator is to enroll more Hispanics and other minorities in college. What is stopping these demographics from pursuing a college education, money or time?
“I
don’t think it is because of money. It is a more
complex social issue. Often times, young people in these communities grow up in larger, more complex family situations that sometimes prohibit the opportunity to attend college or a training program. After high school, some go straight into the labor market to help the family. The problem is that the jobs that are available for people with just a high school diploma are not going to help these students break the cycle so the cycle continues with each generation. We have to break this cycle.”
Q:
Some people choose a career track based solely on financial projections: how much money will they make upon graduation. Is that right or wrong?
“I
t’s not the smartest way to pick a career. Money should be one of the considerations, of course, but not the only one. We try to spot students like that from the start and try to steer them the right way. We make it clear to someone who say,

wants to study criminal justice, that they may see bloody scenes. If blood or violence, is something you can’t even think about, you’d be wasting your time and money in a career in the criminal justice arena. It is important for us to HELP counsel these students because choosing the wrong program cannot only lead to the student dropping out of the program, but ending up with debt and no benefit.”
Q:
So, do you see yourself as an academic or a mentor?
“D
efinitively a mentor. In this role, I complement the work of our instructors who are the academics. They are knowledgeable in their respective fields and are great at imparting that knowledge.

Part of my job, is to make sure our students stay on track. That they have all the support they need to be able to finish what they have started and walk across the graduation stage to receive their diploma. This is important because our students, for the most, are not the traditional students that come here right after high school. They are young adults in their mid-twenties, thirties and older. They have lives, families, jobs, and sometimes balancing all of that with college can be trying.”
Q:
As CEO, what do you think are post-secondary educations biggest challenge for an institution like FTC?
“O
ne of the biggest challenges is jobs.
As a nation, it is important that we continue to incentivize industries that generate well-paid jobs. The medical sector and technology are good examples. I take the pulse of the labor market almost daily. I don’t guide myself just by national statistics. I speak to the leaders and employers of the communities that our campus locations are part of and also with state leaders. They know better than anyone whether the economy is expanding or contracting in their areas. This is necessary to ensure that our graduates are a reflection of the workforce that is needed, so they may transition easily from students to professionals. Otherwise, we wouldn’t fulfill our mission.” “Another challenge we face is that grants and financial AID for low-income
students are dwindling. The same is true for public schools, whose budgets keep getting slashed. K-12 is the foundation for college, so without that base students will struggle.”
Q:
What are some of FTC’s future projects?
“W
e are developing more programs in technical fields as well as construction, construction management, business, IT and the medical field. We are also developing programs taught in Spanish that would be complemented by English classes for non-native speakers. The goal is to help people who are new here earn a post-secondary education while at the same time learn English so that they may be productive citizens. “

PUPPY AND KITTEN NUTRITION

In
the most recent issue of Osceola Woman, I discussed some considerations when choosing a new household pet. The legally required Florida Certificate of Veterinary Inspection is your best assurance of good health and appropriate preventative immunizations/parasite control medications. Healthy and hungry puppies and kittens do need to eat, and this is the time to do it right!
We usually recommend sticking with the current diet from the breeder or a pet store for at least the first few days. Any changes in type of food should be gradual. The new diet should be introduced over several days, gradually increasing the percentage of new food in the bowl. There are many choices of diets. Selection of specific brands and types of food should be any early conversation with your family veterinarian and staff. Kitten nutrition advice is easy. Most kittens readily accept dry kitten chow/ growth formulas and the food can be offered “free-choice” with the full bowl re-filled as needed. An important caution is that milk can cause diarrhea in kittens (and puppies) and should be avoided. As kittens grow up, most

adults will need portion control to avoid obesity and all the associated health risk factors such as diabetes and internal organ disorders. At some point, it is advantageous to consider introducing canned food to maturing kittens and young adult cats, while decreasing or eliminating dry foods. Cats are carnivorous. Higher protein canned diets are considered healthier in the long run. Puppy nutrition is much more complicated. Most puppies can receive all their nutritional needs with two meals per day of a well balanced growth formula. Some small and active individuals such as Yorkshire Terriers need multiple small meals per day to avoid hypoglycemic events. There are many choices of brands of puppy foods and this is
best discussed with your veterinarian at the first wellness visit. I like to recommend a “timed meal” which means we offer enough food to satisfy the puppies appetite by filling his/her stomach in about 15 minutes. I like to offer this meal inside a crate with the door open. This makes the crate training easy because entering a crate is rewarded. When the puppy emerges and starts circling and sniffing the floor it is time to move to the designated elimination venue. Crate training is the “best thing since sliced bread” for puppy house training. Large breed dogs (over 50 pounds at maturity) should be fed a growth formula (puppy chow) specifically labeled for large breed dogs. These diets will help minimize joint problems such as hip dysplasia and the resultant osteoarthritis later in life.
The nutritional needs of mature dogs and cats is a complex issue. There are literally hundreds of pet food manufacturers, hundreds of products available, and thousands of opinions about feeding pets. The Hills Company, which manufactures and distributes the Science Diets and Prescription diets, has been involved in pet nutrition longer than any other pet food manufacturer. Additionally, the Purina Company offers their Pro-Plan Prescription diets. Innovative Veterinary Diets also offers some unique and effective prescription diets. Many other manufacturers claim superior knowledge and products. As my fatherin-law was fond to quip “the advertising speaks well of it”. IT’S FLU SEASON – Do You Know the Facts? | Florida Hospital CentraCare Physicians |

changing, the flu virus and the impact it causes, varies from year to year. Because many flu symptoms mimic that of the common cold, it can be difficult to tell what illness you have. If it is influenza, the earlier you are diagnosed can make a difference in how long the flu lasts or how severe it may become.
How do you tell if it’s flu, or just the common cold? Both are upper respiratory infections caused by viruses, so many of the symptoms appear to be similar. Chest congestion, a sore throat and a feeling of tiredness are all symptoms of a cold, but if they are accompanied by extreme weakness, muscle and joint aches and a high fever, then you also have symptoms of the flu. Generally, flu symptoms come on more quickly and are much more severe than cold symptoms. Common symptoms include: • HIGH FEVER • SEVERE ACHES AND PAINS • EXHAUSTION, FATIGUE & WEAKNESS • HEADACHE • COUGH • CHEST DISCOMFORT Symptoms can also include: sneezing, sore throat and stuffy nose, however these aren’t as common. What’s known as the “stomach flu” actually has nothing to do with influenza. In fact, stomach issues are rarely a part of flu.

WHO SHOULD BE VACCINATED? VERYONE 6-MONTHS AND OLDER SHOULD GET A FLU VACCINE EACH YEAR . This f lu vaccination recommendation

was just created by the CDC in recent years. Vaccination is especially important for those at high risk of having serious f lu-related complications, or those who live with or care for high-risk individuals. According to the CDC, high-risk categories include: • YOUNG CHILDREN, PREGNANT WOMEN, PEOPLE WITH CHRONIC HEALTH CONDITIONS LIKE ASTHMA, DIABETES OR HEART AND LUNG DISEASE, AND PEOPLE 65 YEARS AND OLDER. • CHILDREN YOUNGER THAN 6 MONTHS ARE AT HIGH RISK OF SERIOUS FLU ILLNESS, BUT ARE TOO YOUNG TO BE VACCINATED. PEOPLE WHO CARE FOR THEM SHOULD BE VACCINATED INSTEAD.
WHY GET PROTECTED?
The flu can be deadly. Seasonal flu shots are up to 90% effective in prevention. And even if you still get the flu, if you’ve had your shot, your symptoms will likely be less severe. Contrary to what some people believe, it is impossible to get the flu from the flu shot. The flu vaccine generally takes about two weeks to be most effective in fighting off the virus, so it is possible to contract the virus during that time, but the vaccine is not the cause.
WHAT TO DO IF YOU SUSPECT YOU HAVE THE FLU:
Osceola is home to Centra Care, who has a quick influenza test that can confirm flu within minutes. The earlier you are diagnosed can make a difference in how long the flu lasts or how severe it may become. Prescription anti-viral medications (like Tamiflu) are very effective in shortening the duration of flu, and all Centra Care locations carry this, but you need to start the medication within 48 hours of symptom onset, so do not delay before being seen when you have flu symptoms. THE AIRLINE APPROACH TO HEART HEALTH “Place

Place the mask on yourself first, and then help those around you.” Anyone who’s flown on a commercial passenger airplane has heard the “put on your oxygen mask first” speech. Your stewardess knows if you don’t get the oxygen you need, there’s no way you’ll be able to assist others around you. This old airline approach can be a great teaching tool for women when it comes to heart health.
Women make nearly 80 percent of health care decisions for their families, and are more likely to be the caregivers if a family member falls ill; yet in a Kaiser Women’s Health Survey 23 percent of women report they went without care they needed because they couldn’t find time to see a doctor. Women are notorious for putting aside their own medical needs to take care of work and home. When it comes to heart health, women are also more likely to ignore symptoms like shortness of breath, unexplained extreme fatigue, and upper back pain (all of which are warning signs of a heart attack). The price tag of self-neglect can be costly. One in four women in the U.S. dies from heart disease, but with the right information and action, heart disease can be managed and prevented. Here are three actions you can take this Heart Month to put your ticker in first place.
GET A DOCTOR’S EXAM. Ask your physician about a cardiac risk profile screening. These screenings will check for total cholesterol, HDL/LDL cholesterol, triglycerides and glucose levels. Few hospitals can offer a greater range of services to effectively diagnose and treat cardiovascular disease than the Heart & Vascular Institute at Osceola Regional Medical Center (ORMC).
