Maryland Crabs A Crustacean Conversation

or most Marylanders, picking crabs is an essential summer ritual. This deep-rooted Chesapeake tradition starts when they are young. It’s common to see toddlers with a bib and wooden mallet squeal with delight when their parents cover the backyard picnic table with steamed crabs. Maryland wedding couples often design special nuptial crab mallets embossed with the bride and groom’s names. And in 1989, the Maryland crab was designated the official state crustacean. Fortunately for the rest of us, everyone is welcome to share the Maryland crab feast experience. To help newcomers navigate their first dozen steamed crabs, locals offer the following pearls of wisdom to get your crabitude going amid the mounds of shells.

the mid-Atlantic and Gulf of Mexico. Good news from Virginia’s Marine Resources Commission: Its latest survey of the Chesapeake crab population reports that their head count is up from a dangerously low 68.5 million in 2014 to 101 million Bay crabs this year.
How can you tell them apart? It’s actually pretty easy. The males are called Jimmies, and when you flip them on their backs, you see an apron shaped like the Washington monument. Females, named Sooks, have a wider apron that looks like the U.S. Capitol Dome. Lady Sooks claws have a red tip as if she just painted her nails. Jimmies are more likely to appear at your table, because the Bay needs Sooks to reproduce.

How are they cooked?
Chesapeake Bay crabs belong to the species Callinectes sapidus, which is Latin for “beautiful swimmer that is savory.” They can grow to about 9 inches, but waterman must toss them back if they’re less than 5 inches across their shells. If you see True Blue on the menu, then the Maryland Department of Natural Resources has certified that you’re getting the real deal and the restaurant is only serving local crabs, instead of imports from other regions or countries.
Blue crabs are placed pinching and kicking into steamer pots for about 25 minutes and emerge with a glowing red-orange color. Heavy doses of Old Bay, J.O. or special house seasonings are poured on top. Purists keep it simple, cooking just the crabs and the spices. Others cover their crustaceans with corn on the cob, potatoes or even sausage. No matter how they’re prepared, you can’t wait to dig into a dozen of Maryland crabs. The briny aroma of Old Bay seasoning fills the air. Corn on the cob, hushpuppies and cole slaw appear as sides, but you hold out … saving your taste buds for the tray

Follow a Few Simple Rules 1. Collect 12 photos of the items listed below and email them to crab@marinalife.com when your 12-pack of shots is completed. 2. From July 1 until September 7, we challenge you to show your crabitude by cruising around the Bay and taking photographs of 12 crabby items. Work solo or build teams. If you’re among the first participants to send in all 12 photos, you could win the coveted Golden Mallet Award. There will also be awards for funniest photo and most creative photo, so even if you cannot visit all 12 crab decks please send your photos!

She knew an elderly woman inside was too sick to flee, so Kitty stomped out the flames. The Brits raised their torches a second time, but Kitty made such a compelling case that the officer spared the dwelling and a church nearby. Kitty Knight House carries the heroine’s name as a tribute to her courage in saving part of Georgetown. MeeTing MixologiST Tom Brown at Herrington Harbor Marina would have been perfect. That’s where he keeps his 26-foot 1979 Chrysler sloop, and we could have discussed tiki cocktails while sailing around the Bay. But busy guys like Tom aren’t flush with free time, so we convened at Slipstream, the new D.C. location where he is sowing the seeds of tiki-infused libations. noticing sweat on my temples from the sweltering urban heat, Tom points to a
drink on Slipstream’s menu entitled “Tiki Coffee – Booze, stuff that makes you happy with nitro draft coffee on ice.” He pours iced coffee, pineapple juice and other magical elixirs into a metal shaker, mixes them vigorously and hands me the glass. “You can’t really talk about tiki drinks if you don’t have one in your hand.” After my first sip, the thick

Another was New York Avenue Beach Bar, where he filled a parking lot with 70 tons of sand, food wagons and a cocktail bar to create an oasis of beachy fun near the convention center. Why bring tiki to the pressed-shirt world of Washington? “People work so hard that they need to decompress and forget about a long day at the office. They meet friends at bars to unwind and escape the daily grind. Tiki is fanciful, with a sense of the exotic. I bring the beach to them, and they get a brief vacation from the mundane,” says Tom. Since the 1940s, when Don the Beachcomber and Trader Vic spread Polynesian Pop across the country, Tahitian cocktails have represented a release from everyday routines and helped Americans experience a small slice of the South Pacific. Today’s tiki
drinks are less sweet than the previous generation’s, but they continue the tradition of serving cool beverages to dispel the heat. It’s hard to go wrong when you mix good rum with island ingredients such as pineapples, limes, coconuts, oranges — even nutmeg and vanilla. “The flavors are refreshing and unexpected. At Hogo, we even garnished one rum drink with flaming pirate ships made of orange peels,” says Tom. Once it left the bartender’s hand, everyone in the place wanted one. Advice from our tiki connoisseur: Advance planning before boarding your boat is key. Choose your tiki cocktail recipes, mix them at home and pour them into a thermos, either with or without ice. Save time by cutting the garnishes ahead of time. Also, resist the temptation to use glass tiki mugs that could shatter on the boat or deck,

Imagine cruising through unfamiliar waters without your GPS sonar, nautical navigation charts or even electricity. That’s what Colonial-era ship captains faced while sailing through the Chesapeake Bay. Its jagged coastlines, treacherous shoals and unpredictable forces of nature created a harrowing experience for sailors who only had buoys in the water and signal fires on
land to keep them out of harm’s way. As Bay shipping traffic swelled in the 1700s, George Washington understood that safely transporting people and goods was paramount to the fledgling nation’s growth and commerce. Making sure vessels could come and go out of essential ports such as Baltimore, Annapolis, Alexandria and Norfolk became a pressing issue, so in 1789 the U.S. government
took charge of the American lighthouse system. In 1792, the 90-foot tall Cape Henry Lighthouse at the mouth of the Bay in Virginia became the first to shine its light on Chesapeake waters. By the early 1800s, these beacons of safe passage sprang up all along the Maryland and Virginia shores, thanks CHESAPEAKE BAY EDITION 2015

STEP BACK IN TIME AND EXPERIENCE CHESAPEAKE HERITAGE
At the peak of construction, 70 lighthouses dotted the coastline, each with distinct histories and designs. to master builders like John Donahoo of Havre de Grace. He is credited with constructing dozens of lighthouses from 1823 to 1853 and guiding millions of travelers through perilous channels. MAN VERSUS THE BEASTLY FORCES OF NATURE
By 1900, most of the Bay’s danger zones were marked with warning beacons. At the peak of construction, 70 lighthouses dotted the coastline, each with distinct histories and designs. The early ones were lofty towers made of brick or stone and were erected on land. Modest homes for lighthouse 18
keepers stood nearby. Examples include Old Point Comfort, Cape Charles, Point Lookout and Cove Point lighthouses. It was a good start, but soil erosion under the towers posed a problem and caused some to collapse or be moved. Plus, these lighthouses were located above the water where dangers awaited cautious ship captains. To address those logistical problems, screwpile lighthouses were developed. From 1854 to 1900, 42 of this design were erected – more than anywhere else in the world – and they became a symbol of Chesapeake maritime ingenuity. Screwpile lighthouses were two-story

buildings with seven or eight sides, the beacon on top and iron piling legs that were screwed into the Bay’s soft muddy floor. Lighthouse keepers and their families lived on the second story. Examples: Thomas Point Shoal, Drum Point and Hooper Strait lighthouses. They were positioned in the water to better aid passing ships, and massive rocks were piled around the base to secure their spidery legs. However, this type of lighthouse struggled to hold up against the Bay’s pounding waves, ice chunks and high winds. One screwpile structure was blown off its platform during a ferocious storm with the keeper inside and floated for five miles before he could escape. Undaunted by Mother Nature’s powerful forces, determined maritime architects came up with a new solution — the caisson lighthouse. From 1873 to 1914, they designed lighthouse foundations with cast iron cylinders filled with stones or concrete and drilled them deep into the Bay’s bottom. With a top tower built of brick the caisson style evolved into sturdy structures that could withstand rugged Chesapeake conditions. They might not have as much curb appeal, but most of them have survived since the 1890s. Examples: Wolf Trap, Sandy Point Shoal, and Smith Point lighthouses. Last but not least was another resourceful means to beat the precarious elements and offer travelers safe passage around the Bay — lightships. The first of these warning vessels was built in 1820 in Virginia. They could move into deep waters and withstand harsh conditions that land-bound lighthouses could not endure. Plus, they could scurry away if situations became to rough. The Lightship Chesapeake is retired from her call of duty and now entertains guests in Baltimore’s Inner Harbor. ml
