‘Tis the season for gingerbread cookies
Soft Glazed Gingerbread Yields 12 to 20 cookies
Dough
33⁄4 cups all-purpose flour 1 tablespoon cocoa powder 4 teaspoons ground ginger 11⁄2 teaspoons ground cloves 2 teaspoons ground cinnamon 1 ⁄2 teaspoon baking soda 1 teaspoon salt 11⁄4 teaspoon freshly ground black pepper 1 cup unsalted butter, at room temperature 3 ⁄4 cup plus 2 tablespoons granulated sugar 1 large egg 1 ⁄2 cup blackstrap or other dark molasses 2 tablespoons light corn syrup
Glaze
1 cup confectioners’ sugar 2 tablespoons water
Instructions To make the dough, stir together the flour, cocoa powder, ginger, cloves, cinnamon, baking soda, salt, and pepper in a mixing bowl. Set aside. Beat the butter on medium-high speed until creamy. Slowly add the granulated sugar and mix on medium speed until the mixture is completely smooth and soft. Add the egg and mix well. Add the molasses and corn syrup and beat until incorporated. Add the flour mixture and beat on low speed until a dough forms that pulls away from the sides of the bowl and all the ingredients are well incorporated. Remove the dough from the bowl, flatten it on a large piece of plastic wrap into a rectangle about 1 inch thick, cover the dough with the plastic wrap, and refrigerate overnight. Preheat the oven to 350 F. Roll out the dough 1⁄3-inch thick, lightly dust the top with flour, press your cookie molds over the dough, and then cut out the shapes with a small knife and place on the prepared baking sheet, spacing them about 1 inch apart. Bake the cookies until lightly golden along the sides but still soft to the touch in the centers, 7 to 15 minutes. The timing will depend on the size of the individual cookies, or if you have made a single large patterned piece that will be cut after baking. While the cookies are baking, prepare the glaze. In a small bowl, whisk together the confectioners’ sugar and water until smooth. When the cookies are ready, remove from the oven and let cool in the pan on a wire rack for about 10 minutes. Then, while the cookies are still warm, using even strokes, brush a light coat of glaze on the top of each cookie, evenly covering it. This recipe for “Soft Glazed Gingerbread” from Elisabeth M. Deck the halls with DIY decor Decorating is one of the joys of the holiday season. Families often decorate together, and such traditions may include dressing the Christmas tree and hanging holiday lights around the house. A day spent making homemade ornaments is another great way to decorate and spend quality time together as a family during the holiday season. Though families can let their imaginations run wild when making ornaments at home, the following are some great starting points that can serve as springboards for holiday crafting sessions.
Snowmen
The holiday season simply wouldn’t be the same without snowmen. Homemade snowmen can be made out of ping pong balls, which are the ideal size when making ornaments for the Christmas tree. Those who want to go a little bigger can glue wiffle balls or large polystyrene balls together or create their own papier mâché snowmen to display on mantles or on console tables in a
foyer or hallway.
Santa Claus
Another staple of holiday decor, Santa Claus has inspired many a DIY holiday ornament over the years. A paper plate Santa Claus with a cotton ball beard glued on can make for a fun Christmas craft, especially for young children who can’t wait for the big guy to appear on Christmas Eve.
Penguins
Though they might not have a direct link to the holiday season, penguins evoke feelings of cold weather, making them an ideal addition to holiday decor schemes. Make your own penguin family using polystyrene craft balls in assorted sizes and then hang them on the tree or place them around the house.
Reindeer
Santa would not be able to get the job done each Christmas Eve without his trustworthy
team of reindeer. Popsicle stick reindeer projects can be fun for kids of all ages and a great way for youngsters to recognize the efforts of Dasher, Dancer, Comet, Cupid, and, of course, Rudolph, among others.
Cookie cutters
Family baking sessions are a holiday tradition for millions of people. Though that often leads to batches upon batches of tasty cookies, it also means families tend to have a surplus of holiday cookie cutters around the house. Surplus cookie cutters tend to be discarded or relegated to the miscellaneous items drawer in kitchens, but a more awe-inspiring fate can await them. A coat of paint, some glitter and a little bit of string or twine is all families need to transform their extra cookie cutters into colorful tree ornaments. Holiday decorating sessions can be made even more fun when families take time to craft some DIY decorations together.

Slow cooker meal makes holiday entertaining a breeze Beef Roast With Dark Rum Sauce Makes 6 servings
T
he holidays wouldn’t be complete without a delicious meal to share with family and friends. A holiday roast is often the centerpiece of festive occasions. Having a go-to recipe for this classic main course makes holiday preparations that much easier. Recipe for “Beef Roast With Dark Rum Sauce” from “Crock•Pot® 356 Year-Round Recipes” (Publications International, Ltd) by Crock•Pot Kitchens.
1 teaspoon ground allspice 1 ⁄2 teaspoon salt 1 ⁄2 teaspoon black pepper 1 ⁄4 teaspoon ground cloves 1 beef rump roast (about 3 pounds) 2 tablespoons extra-virgin olive oil 1 cup dark rum, divided 1 ⁄2 cup beef broth 2 cloves garlic, minced 2 whole bay leaves, broken in half 1 ⁄2 cup packed dark brown sugar 1 ⁄4 cup lime juice
1. In a small bowl, combine allspice, salt, pepper, and cloves. Rub spices onto all sides of roast. 2. Heat oil in skillet over medium heat until hot. Sear beef on all sides, turning as it browns. Transfer to a slow cooker. Add 1⁄2 cup rum, broth, garlic, and bay leaves. Cover; cook on low 1 hour. 3. In a small bowl, combine remaining 1⁄2 cup rum, brown sugar and lime juice, stirring well. Pour over roast. Continue cooking on low 4 to 6 hours, or until beef is fork-tender. Baste beef occasionally with sauce. 4. Remove and slice roast. Spoon sauce over beef to serve.

ounting down to Christmas Day means many different things to people across the globe. Although people likely have several different traditions they anticipate each year, it can be fun to incorporate some new merrymakers into the festivities. Here are some festive ideas to include in the days up until Christmas — a special family calendar of fun finds.
1. Annual memento: Have the kids or adults make one new handmade ornament each year. This way the tree is always evolving and everyone can track milestones. 2. Cookie day: Devote one day to making Christmas cookies. Invite friends or family members over. Distribute some cookies to elderly neighbors. 3. Holiday classic: Spend a night in and watch a
classic Christmas flick you’ve never seen before. Streaming movie services often put classics and obscure titles into rotation during the holiday season. 4. Christmas concert: Host a gathering of children where they can sing or perform their favorite tunes for an audience. Take it on the road to a nearby nursing home. 5. Dine out: Take a break from cooking, shopping and hosting and stop into a restaurant you’ve been meaning to try. Keep it local to support nearby businesses. 6. Adopt a child/family: Volunteer with a charitable organization that provides for less fortunate families. Answer the Christmas desires of a needy child or family by purchasing an item on their wish lists. 7. See the sights: Pack the children into the family car to tour nearby areas and look at Christmas lights displays. Bring along cookies and hot chocolate. 8. Trim a tree: Get together with adult friends at a tree-trimming party. Rotate the hosting house each year. 9. Play dress-up: A gentleman can dress up as the man in red and pop into a friend’s holiday gathering. 10. Treat guests to a beloved holiday staple DIY Peppermint Mocha Makes one 12-ounce beverage Preparation time: 10 minutes 1 fluid ounce coffee or 1 shot espresso, such as Starbucks Christmas Blend or Starbucks Espresso Roast Coffee 1 ⁄2 cup milk (or dairy alternative) 2 tablespoons peppermint-flavored syrup 3 tablespoons mocha sauce Whipped Cream Dark chocolate or shaving
1. On a stovetop, heat milk on medium setting. Whisk the milk to make foam about 30 seconds. Set aside. (Or, use an electric milk frother at home if you have one.) 2. Pour two tablespoons chocolate sauce and two tablespoons peppermint syrup into bottom of 12-ounce or larger coffee mug. 3. Add one shot of brewed espresso. (Don’t have an espresso machine? Make concentrated coffee by using less water in an alternative brewing method.) 4. Fill mug with steamed milk. 5. Top with whipped cream and garnish with chocolate shavings. This Italian cheesecake makes a great holiday dessert Torta Dolce di Ricotta Serves 10 to 12
Crust: 2 3/4 1/2 2
cups all-purpose flour, plus extra to dust board and pan cup sugar Zest of one lemon cup unsalted butter, softened, plus extra to grease the pan large eggs
Filling: 8 large eggs 3 pounds ricotta cheese, drained of excess water 2 teaspoons vanilla 1 1/2 cups sugar Zest of 2 oranges Juice of 1 orange | Juice of 1 lemon 3/4 cup candied pear, chopped (optional)
To make the crust, place the flour, sugar, and zest on a pastry board or clean, dry, flat surface. Mix thoroughly to combine. Add the butter and work it into the dry ingredients. Gather the mixture into a round and create a well in the center. Drop eggs into the well, beat with a fork while gathering the dry mixture, then knead once the dough completely forms. Refrigerate for 30 minutes. Preheat the oven to 350 F. Butter and flour a 10-inch springform baking pan. Set aside. Meanwhile, to prepare the filling, combine the eggs, ricotta cheese, vanilla, sugar, orange zest, orange juice, lemon juice, and candied pear (if using) in a large mixing bowl. Mix thoroughly and set aside. After the 30 minutes, remove the dough from the refrigerator and place it on a large board or clean, dry, flat surface, lightly dusted with flour. Using a floured rolling pin, roll the dough out into a large circle, approximately 14 inches in diameter. Now roll the dough over the rolling pin and carefully unwind it over the baking pan, gently easing it to fit evenly in the bottom and up the sides of the pan. Pour or spoon the filling mixture into the crust, leaving about 1⁄4 inch below the rim of the pan. Place the pan in a preheated oven and bake for 1 hour and 45 minutes, until the center is slightly firm. Cool for at least 2 hours. Carefully run a plastic knife or rigid spatula around the sides of the pan to remove it, so that no crust is pulled away when you release the spring of the pan. Serve at room temperature.
