EDITOR’S NOTE
PEEK IN Someone recently commented that they could tell which path my life was taking by reading Ottawa At Home magazine! As editor, I do have an influence over the direction each issue takes and there is always a personal element within the pages. It’s an assessment that holds some credibility, as I let readers peek inside my own home for this issue to look at how my holiday decorating has evolved as my husband and I transition through to the empty nest stage of life. Although I loathe the term, it’s recognized as the universal tag for households that have been emptied of children. While I may not decorate with the same magical force that I did when our house was full of kids, I still honour the season with whimsical decorations that let my adult children continue to feel an attachment to Christmas past, while moving into Christmas future and enjoying the present. I am always inspired with the opportunity to peek into other people’s homes to see their holiday traditions. Rochelle James takes us into a home that honours East coast roots, while Jane Whiting visits a Rockcliffe home that plays up on the unusual, but oh-so-stylish choice of fuchsia as a holiday colour scheme. Designer Henrietta Southam opens her home to us to reveal timehonoured family traditions in a setting that tastefully combines worldly treasures. I am grateful for having been able to continue to tap into the many sides of holiday traditions and celebrations as we worked to pull together this festive issue. Photographer Mark Holleron and I had fun touring a Christmas tree farm and both left feeling prepared to tackle the art of cutting our own trees and maintaining their beauty throughout the season. Read more about this merry adventure on page 38. enrietta Southam’s style could easily be described as eclectic, given the mixing of several décor elements and objects within her space. Yet, upon careful inspection, it is evident that each piece is prudently curated with the greatest attention to detail. The well-travelled designer opened her home for the 2017 Homes for the Holidays tour in support of Hospice Care Ottawa. Her home is intriguing to say the least, and visitors are sure to be impressed with collections of family heirlooms like the Polish nativity set from her father, Hamilton Southam, who was appointed as Canada’s first Ambassador to Poland in the early 1960s. Her holiday table is set with treasured collections including dishes, linens and silverware. Influences from her Norwegian mother are evident in several details such as the table runner.

Mood Moss florist, the floral designer responsible for bringing festive florals to the home for the tour, honours Henrietta’s holiday style with traditional bouquets that include red roses. Henrietta’s ailing mother is the catalyst for her involvement with this year’s tour. Henrietta has first-hand experience with the challenges that a patient can place on family members, and she applauds the work of hospice when she states, “Hospice care alleviates the burden of caring for a loved one while allowing you the time to just be with them.” The backdrop of her home is ideally suited to the rich jewel tones of the festive season. Wallpaper in the front hall plays into her fondness for the woodsy elements of the season. The birch tree print with golden pears works beautifully with deep red, gold and wooden Christmas trees on display. The enchanting theme is continued

throughout the New Edinburgh area home. “I like spreading the cheer to all rooms and use primarily organic colors found in nature – acorns, berries, twigs and bark are favorite go-tos,” muses Henrietta. Nature’s influence is a common theme carried from the front hall to the magnificent ensuite bath, where a dramatic drum fixture by Nicolette Brunklaus from Amsterdam hangs theatrically over the luxurious space. The entire home is a tribute to luxury, found in the details that are a nod to a lineage of charismatic style mingled with the ability
to blend a mélange of collected pieces with modern finds. A patchwork dining table from Anthropologie complements the 17th century Flemish tapestry that hangs next to it. “My style is a loose and playful mash up of collected treasures,” states Henrietta. “It translates sometimes as busy, but if you look closely it is all carefully edited and chosen with care of detail.” You can contact the designer at henrietta@henriettasoutham.com. aking the transition from having four young children at home to eventually having no children in the house during the holiday season is challenging! It takes the empty nest to a heightened new level. I have boxes of decorations that hold memories of the magic of Christmas through the eyes of a child. But with no childlike wonder in the air, I don’t see the need to bring out the Santas and other festive collections for display. However Christmas is still a big deal in our home and my adult kids expect a festive feeling when they walk through the door. So I balance a more sophisticated approach to the décor with a touch of whimsy by scattering elves on shelves and hanging stockings with a more decorative flair. My holiday decorating incorporates woodsy elements with colourful accents, and mixing traditional pieces with up-todate influences brought in by local florist Virginia Vince, from Bloomfields Flowers. She helps to transition my home into an enchanting space for entertaining adults with a childlike fondness for Christmases past.

hen you think of decorating an elegant century-old home for the holidays, pink is not the colour that instantly springs to mind. Especially when the home is packed with woodpanelled walls, elaborate moldings, fine furnishings and antiques. But this home went pink for Christmas to pump up the décor with a fresh, fun factor – and it worked perfectly. The three-storey Rockcliffe Park home, built in 1913, was newly renovated when Sarah and James Baxter bought the property last year. “It’s not a particularly grand or formal house,” says Sarah who describes her family home as busy and chaotic with teenage twins (boy and a girl), an 11 year-old son and a 100-pound dog. “I wanted a cheeky holiday décor that reflected that,” she adds, noting that a pink Christmas makes for some great festive memories. The Baxters had been renovating another vintage-era house in Rockcliffe Park two years ago with Ernst Hupel, coowner of 2H Design, that burned down before they moved in. “We did a lot of work without actually having a product at the end of it,” recalls Sarah. So, she is pleased to share the success of her second collaboration with the designer, which involved painting out the home’s extensive millwork and many built-in features to bring a more contemporary-style unity to the rooms. They opted for a dark, blue-grey on the dining-room walls, French doors and trim using the intriguing paint colour of Witching Hour by Benjamin Moore. It is carried through the house on interior doors and trim, which sets up a striking contrast with BM’s White Down in the

living room, kitchen and entry. Both colours provided a wonderful canvas for the vivid pink theme of the holiday décor combined with bright greens, lilacs and metallic elements.

Before the Baxters even moved into the house, they agreed to be on the 2016 tour for Homes for the Holidays. While Ernst and Sarah came up with the idea of a pink-accented holiday décor, they teamed up with the expertise of Karen Grand of Grand Expectations and florist Machiko of Ottawa Blooms to put the plan into action. “Karen does big, beautiful arrangements and urns, and Machiko is very exquisite and generous with her flowers, notes Sarah. She adds that they not only wanted to support Hospice Care Ottawa, which the tour benefits, but also showcase the role of the professionals and volunteers who work on the homes. “They are all amazing - so kind and patient in their work, which is not always easy.” Combining their talents, Karen created luscious green wreaths and boughs with colourful balls and fuchsia ribbons to hang on interior doors and windows, as well as a mini 12-inch Christmas tree; while Machiko worked with fresh flowers to bring in vibrant florals. She arranged delicate orchids, pink roses, and lilies in silver vases with artistic flair, in addition to decorating a snowman with berries and protea for the kitchen. Sarah added some of her own touches with ornaments that she has collected over the years, which included hanging pink balls from the kitchen chandelier for extra sparkle. Left to her own decorating devices, she admits she would probably not use as much pink, but loved getting away from the traditional red and green of the holidays. “It was an inspiring experience and I might go with a light-blue holiday décor next time to match the exterior shutters. We’ve moved around quite a bit and I’m finding that every house is different, so I am getting better at deciding what works where – but I don’t want to be too serious with it.” With a taste for dramatic colours in a stylish setting, plus a liking for fun and cheeky elements, Sarah will be dreaming of many more vibrant Christmases to come.

he CHEO Dream of a Lifetime Lottery is celebrating its 27th year with tickets to win luxurious prizes, including the million-dollar-plus Minto Dream Home in Manotick. The magnificent Red Maple model in the Mahogany community has been designed to reflect Canada’s rich heritage, in celebration of Canada’s 150th birthday. The lead designers of the Dream Home for over 20 years, Donna Correy and Tracey Woodman of the KISS Design Group, brought on designers Sarah Kidder and Krista Jadowski for this year’s home. They were both delighted at the opportunity to work on the team, and as mothers were also grateful for all that CHEO does for the medical needs of children and their families. Boasting 5,392 square feet of space with high ceilings and large windows, the Dream Home is both modern and rustic. Original pieces of Canadian art transform walls into galleries, and floors of reclaimed wood pulled from the Ottawa River by Logs End ground the house with authenticity. A neutral paint palette provides a perfect backdrop for layers of textured materials and fabrics, such as metal, faux fur, leather and wood. Bathroom trends of black metal fixtures and sealed live-edge wood countertops make for an upscale look, durable enough for family life. Just beyond an elegant dining area, an expansive gourmet kitchen and family room are waiting to impress. A bright yellow Bertazzoni range has a starring role along with an upholstered banquette, neatly tucked into the angle of a Dekton countertop island. Despite the generous size of the Red Maple, the designers achieved a cohesive
feel by quietly repeating geometrical shapes and patterns in carpet, tile and window treatments. They were pleased to report happy exclamations from more than 4,000 awed visitors on the opening weekend of the Dream Home. With the belief that good design and art should create emotion, they also wanted to allow every visitor to picture themselves living in the home. With high hopes of a sellout, Dan Champagne, VP of Development and Corporate Relations at the CHEO Foundation explained what the proceeds of ticket sales can do. “The Minto Dream Home plays a massive role in making CHEO’s Dream of a Lifetime Lottery such a huge success. Funds from the lottery make a difference in all areas of the hospital, from purchasing specialized medical equipment, to funding programs that help children and youth better deal with their medical challenges while in hospital.” He adds, “During the time I get to spend talking to visitors at the Minto Dream home, I hear countless stories of how CHEO has made a difference in people’s lives. This speaks to the commitment our community has for CHEO, and we are so thankful that so many choose to make a difference in the lives of children and youth by purchasing a CHEO Dream of a Lifetime Lottery ticket.” The Red Maple is located at 585 Chriscraft Way, in Manotick. ressed in wood and twine ornaments, rustic bells, heirloom ornaments, burlap and plaid for the holiday season, Matt and Nicole Dawson’s renovated home pays homage to the family’s seaside vacations and childhood memories. Together, they have crafted a unique aesthetic, brimming with style and charm, to welcome friends and family into their home on Christmas Eve. The result is a gleaming, light-filled space created for comfort and togetherness, with a nod to Atlantic Canada. Built in 2006 in Kanata’s Bridlewood subdivision, the couple’s original galleystyle kitchen wasn’t practical for their busy family and love of entertaining. So, the family decided to tackle their first-ever home renovation and reimagine their entire main floor. “Now,” explains Nicole, “I smile every morning when I go down to make my coffee. It has to be the most comforting, happy space I could imagine.” Matt, who is in landscape design and construction, and Nicole, a teacher for the deaf and hard of hearing, both had definitive ideas as to how to achieve a more open, usable space. With inspiration in hand, they sought out a contractor who would work closely with them to cultivate the right style, rooted in the history of their home provinces of Newfoundland and Labrador. To create the quintessential east-coast feel, the homeowners turned to Brad Durie, owner of InStile Design Build. Their goal was simple: they wanted a large kitchen with good flow for entertaining.
“When I first met Nicole and Matt, they told me that the original layout of their kitchen did not meet their family’s current lifestyle,” says Brad. “While the homeowners have an eye for design, they were mindful about keeping the vibe low key and easygoing to make sure that everything in their home resonates with them.” The first step was to close off the original entrance to the formal dining room to create an office space/homework nook and larger kitchen footprint. Next, the three-sided fireplace was removed and relocated to create a floor-to-ceiling stone hearth. The

16-foot ceilings in the back of the house allowed for the potential to create an open room with a wall of expansive windows. With an abundance of natural light, choosing the right paint colour had its challenges. Using a palette that evokes the shimmery shades of the ocean, Nicole landed on the combination of Sherwin-Williams’ Comfort Gray and Sea Salt for the walls. She then selected a complementary neutral colour scheme for her kitchen cabinets from Ottawa Valley Kitchen, using Benjamin Moore’s Cloud White and Trout Gray for the island. To add visual interest in her new space, Nicole went for a colourful backsplash. She chose a handmade encaustic cement tile from Saltillo Tile & Stone in her favourite hue of blue, along with floating shelving that did not detract from the beauty of the pattern. “With the addition of the island, it gave me more storage options and more opportunity to showcase the backsplash and display items that bring us joy,” she says. “We have rocks and sea glass from family trips, a flour sifter like the one I used making biscuits with my Nan, my greatgrandmother’s canisters for homemade donuts and other treasured heirlooms.” The homeowners also incorporated rustic touches punctuated by unexpected details in their design plans. They used dock cleats for drawer pulls; cabinet door pulls made from railway ties; coal-miner lanterns as island pendants; and saddleseat stools from the Atlantic Canadianbased Wicker Emporium, where Nicole worked during university. To add a timeworn, farmhouse quality to their suburban home, they installed vintage beams and a barn-wood mantel with reclaimed wood sourced from Atmosphère & Bois in Manotick. Matt designed the iron brackets himself and worked closely with a local iron artist from Grindstone 250 to create the unique look. Nicole discovered a long farmhouse table on clearance, and added mismatched chairs in the same colour family and rugs with bold patterns. “Our hearts are definitely still on the east coast,” notes Nicole. “But having pieces of home around our house makes us both feel that we’ve brought some of the best parts of our heritage into our family space here in Ottawa, for the holidays, and all year round.”

The holiday season is steeped in traditions, and perhaps the most symbolic is the Christmas tree. Whether it’s an artificial tree stored in the basement and carried up each year to decorate, or an outdoor adventure with a hunting and gathering ritual to find the perfect specimen, every celebrating household has its own idea of what makes for the ideal Christmas tree. There is often a heated debate on the merits of bringing in a fresh tree versus using a fake. Both seem to carry environmental benefits, as fake trees are reusable and real trees contribute to the cycle of life. Regardless of whether you side with the fresh-or-fake crowd, a trip to Ian’s Christmas Adventure Park &Tree Farm, just west of Ottawa in Beckwith, is an educational and a fun holiday tradition. Tour the trails with your saw to cut down your own tree and then be sure to stop in and meet the reindeer on site. To gain some insights from the tree expert on what makes the best Christmas tree, Ian Andrews explained that there are three popular types: fir, pine and spruce – with the Balsam Fir being the most popular. Ian, of course, believes firmly in the natural beauty of a real tree for the holidays. He takes pride in the care his trees are given to ensure that each cut tree will last through the season. “Always be sure to give your tree a fresh cut once you get it home,” advises Ian, who also notes that the tree can go straight from the farm into your home.

FIR The Balsam Fir lasts a long time, grows straight, drops the least number of needles and has strong branches to support ornaments. This tree can be put up as much as five weeks in advance. The Fraser Fir is the longest lasting, but is the most expensive. An intriguing feature of this type of tree is that it has no scent.
PINE
SPRUCE Spruce trees drop their needles quickly, but have merit as the most traditional of the three varieties. The White Spruce is popular with Europeans who like to put candles on the tight, full branches. This type of tree is ideal for placing decorations onto the branches rather than dangling ornaments from them. Look for spruce trees with colour variations from shades of blue to lighter green. PINE Pine trees are ideally suited to a country Christmas with the long needles begging for bulky homespun crafts hanging through their branches. Scotch pine needles are sharp and can make placing ornaments a challenge. White Pine trees have much softer needles, but this means that the branches cannot withstand a lot of weight, so think home-made, paper-link chains and strings of popcorn on these trees.

PAST Moss Kent Dickinson is one of the most significant forces in the founding of the village of Manotick, as we know it. Prior to his arrival, the area consisted of a small settlement around the newly constructed Long Island Locks on the Rideau River. There was a post office, but not much else. In 1859, Dickinson set about constructing the town’s industrial infrastructure, harnessing the power of the Rideau, and naming the village Manotick – meaning “island in the river” in Ojibwa. The population of the village hit 100 by the mid1860s. Watson’s Mill, currently regarded as the most prominent and noteworthy feature of the Manotick area, was not built by Harry Watson but also by Dickinson. Watson purchased the mill in the 1940s and renamed it after himself. Another significant piece of Manotick’s heritage is Dickinson House, built in 1867. The building housed Dickinson’s family, while also serving as the village’s general store and post office. Dickinson
became mayor of Ottawa from 1864 to 1866, and a member of the Canadian Parliament from 1882 to 1887, during which time Sir John A McDonald used his house as a campaign headquarters for two elections. Dickinson, who is buried in Ottawa’s Beechwood Cemetery, passed down the milling operations to his son George before his death in 1897. To honour Manotick’s founding family, the village celebrates Dickinson Days on the first weekend of June with events held in the area known as Dickinson Square.

PRESENT Through the years, Manotick, with a small-town population of about 4,500, has managed to maintain its quaint village status. Nestled along the banks of the Rideau River as it snakes around Long Island, it is only a five-minute drive from the bustling suburb of Barrhaven. Much of the original architecture from the 1800s still remains in the village, including Watson’s Mill, Dickinson House and the St.

James Anglican church. The old mill is still in operation, and it offers stone-ground, wholewheat flour for sale after milling season ends every autumn. Manotick is also home to the Black Dog Bistro, known for its high-end food and a seriously tasty burger, served in a neighbourhood pub atmosphere with an abundance of dog-themed artwork hanging on the walls.
CHRISTMAS IN MANOTICK The village enjoys one of the more unique Christmas traditions within the City of Ottawa. An Olde Fashioned Christmas celebration presented by Manotick BIA is held every year on the first weekend of December, when the village is transformed into a Dickensian vision of Christmas past. Wreaths hang from lamp posts and trees are lit up, with sunset caroling, horse-drawn wagon rides, craft markets t and live music filling the streets. In addition to the annual Christmas Parade and celebrations, Manotick hosts over 20 unique retail shops along the walkable and easy-going main street of Rideau Valley Drive, far from the hustle and bustle of downtown Ottawa. If you’re looking for a special Christmas gift, this could certainly be the place to find it.
LIVING Most people living in Manotick are families and retirees, typically falling into the higher income brackets, mainly in single-detached housing built mostly between 1960 and 1990. There are very few rental properties available, as the town has no large apartment towers and the majority of homes are owner households. One large and new housing development of note is the Mahogany subdivision by Minto Homes. Located at the south end of town, it’s a modern housing development that holds true to the classic spirit of Manotick. Sarah Marsh, Mahogany’s senior landscaping architect, replicated the stone laying patterns of Watson’s Mill to build many of the stone gateways, pillars and bridges around the community’s central park area. Minto worked with the subdivision’s natural topography to preserve as many natural features of the land as possible, including large, historic maple and oak trees and endangered species of butternut tree. The development is also home to a natural creek and pond.

en years ago, Jim and Shana Perkins decided to launch a hockey program for kids and dependent adults with special needs in Ottawa. Their goal was to give these individuals the opportunity to get on the ice and to be part of a team; something most of them had never had the chance to experience before. “Hockey is Canada’s favourite pastime,” says Jim. “These people were often at games cheering on their friends and siblings, but they didn’t have a chance to participate themselves – and we thought maybe something could be done about it.” And do something they did. Jim and Shana started small with only three enthusiastic players and their families. But word spread, trust grew, and the Capital City Condors are now celebrating their 10th anniversary season with 102 players and five different teams, each operating at a different level. “We never realized the impact it would have on us, not just the kids and their families,” says Shana. “It is unbelievable to see the progress, to see faces light up when we pull out a jersey because most of these kids have never had a jersey before.” “Every kid gets to choose their favourite
number, because it’s the only jersey they may ever have, so sometimes we have five kids out there wearing #7 on the ice,” laughs Jim, referring to the jersey number worn by Ottawa Senators centre Kyle Turris, who serves as honourary captain of the Condors. He adds that the kids and families are so grateful and so expressive about their gratitude. “I often tell people the more time we get to spend with these folks the better people they make us – their love meter goes to the top right off the bat. It looks just like a hockey program, but there’s something so much bigger going on beneath it,” Jim continues. “The social interaction is so important – it’s an environment which changes the players’ and families’ lives.” For Jim and Shana, it’s vital that everyone goes home with a smile, regardless of their ability or disability. “Everybody celebrates a goal, even the opposite team,” notes Jim. “We’re committed to building into them a sense of belonging and accomplishment.” The couple say they look back and can’t imagine what their lives would be like if they hadn’t started the organization. Start by thinking of the types of drinks you gravitate toward on an average Saturday night. Usually there are four different categories of cocktails: strong, sour, sweet or low alcohol. A specialty cocktail is easy to create when you start with a basic mixed drink like a gin and tonic, and simply add in some seasonal flavour like cranberry juice. Make it even easier and premix the drink to be served in a pitcher or punch bowl, or create individual cocktails funneled into clear glass ornaments for that extra festive flair.
Use cranberries, cinnamon, rosemary and oranges to give holiday cocktails a celebratory feel. Festive ice cubes are another way to add holiday flare. Freeze pomegranate seeds or cranberries into your ice cubes for a splash of colour and added flavour. Decorating for a holiday party can simply mean bringing in the colours of the season by adding boughs of greenery to your tablescape and dotting them with fresh red berries. Other decorative elements can come in the form of food and drink. Cheese and charcuterie platters are ideal cocktail party food and take on a festive feeling when touches like cranberry and sprigs of rosemary are part of the presentation.

GRAMMA STELLI’S BARZIPAN Barzipan is the abbreviated word for Marzipan Bars. Marzipan, the delicious confectionary paste comprised mainly of sugar or honey and ground almonds, is traditionally transformed into sculptures of fruits, veggies, and even little animals like frogs and pigs. This simplified square by Gramma Stelli (my mom) is less complicated, but just as delicious, as a green and pink holiday square. The results are not only bright, colourful and delicious, but add the finishing touch to the boring shortbread cookie tray. I hope this becomes your family tradition too! INGREDIENTS PASTRY: 1 1/2 cups (375 mL) all-purpose flour 3/4 tsp (3.75 mL) salt 1/2 cup (125 mL) cold shortening 1 1/2 tbsp (22.5 mL) cold butter 1 1/2 tbsp (22.5 mL) cold water FILLING: 3⁄4 cup (175 mL) seedless raspberry jam 3/4 cup (175 mL) butter, softened 1 cup (250 mL) white sugar 3 eggs 1 cup (250 mL) rice flour 1⁄4 tsp (1 mL) salt Few drops red food colouring Few drops green food colouring

Line a 9x13-inch baking pan with parchment paper. In food processor, lightly pulse flour, salt, shortening and butter until shortening and butter are pea size. Add cold water; pulse until dough starts to come together. Roll into ball then form into round disc; cover in plastic wrap; refrigerate 30 minutes or until ready to roll. Roll dough into 9x13 inch rectangle; transfer to parchment-lined pan; spread

raspberry jam evenly over unbaked pastry. In medium bowl, cream together butter and sugar until light and fluffy, about 1 minute; add eggs, beat until well incorporated. Fold in rice flour and salt. Divide batter into two different bowls and tint one green and one red; mix until desired colour. Place 1 tbsp (15mL) of each batter in a checkerboard pattern over the jam topped pastry. Bake 30- 35 minutes in 375 F oven or until firm to the touch. It will brown slightly. Cool thoroughly. In large bowl beat together icing sugar, butter, almond extract and warm milk until smooth; spread evenly over cooled bars.

he revitalization of the National Arts Centre (NAC) is one of Ottawa’s most exciting cultural transformations. Bringing new life and light into this venerable building is a welcome complement to the innovative programming changes, which are also helping to modernize the NAC. At the same time, recently-appointed Executive Chef Kenton Leier is carefully making his mark on the centre’s food offerings, refreshing the menus to reflect his fondness for seasonal ingredients and Canadian influences.
How does it feel to be cooking in such a prestigious venue? The timing was right for me to make a change and this opportunity feels really exiting. I knew a bit about the history of the NAC, especially in the glory years under Kurt Waldele, so it is a great honour to now play a role here. The NAC feels special; it’s quite different than a hotel environment and the corporate culinary world. Food service here is one artistic department in a building full of artists.
As you work to update the menus, what are your objectives? I’m excited to continue building on the focus on Canadian ingredients and dishes that my predecessors started. I also think it could be fun as a team to look at some of the dishes that were on the menu during Kurt’s time and revive them in a modernized way. When I was at the Westin we focused on adding healthy, lighter items to the menu and balancing the emphasis on protein – I’d like to do that here as well.
Do you feel it’s possible to create a menu that is reflective of the building itself? Absolutely! The décor of the NAC is a bit minimalist and to me that means really good simple dishes with fewer components which really lets the ingredients shine. I want to highlight fresh, Canadian elements so people get a sense of place. Of course we are always mindful of our clientele’s tastes so we won’t change some of the most popular dishes, except perhaps to refresh the presentation.
How will the artistic programming of the NAC influence what you do? The NAC is a very collaborative place and
there is a lot of crossover of ideas between departments. The range of performances here has an increasingly broad demographic appeal, and we want to be sure that the food offerings do as well. I’d like to look at creating some special menus, like this fall’s Nordic table d’hôte, or dishes themed to current shows. We’ve tried that with our Casual Fridays offerings and it’s been very popular.
You have a lot of experience with special events. What are you doing differently at the NAC? Events are something I have a lot of fun with – for me they are a chance to elevate dishes and add more elements to create unusual, appealing plates. At the NAC we host a lot of VIPs so that will be enjoyable. We also have several new spaces created during the renovation including the two beautiful rooms in the spectacular glass-walled Kipnes Lantern. I am eager to work with clients to create dishes especially tailored to those environments to help make their
events particularly memorable.
What other changes do you have planned to Le Café? We have new kitchen equipment in place to support our quest for excellence. We’ve also purchased new dishes, cutlery and serving pieces to freshen things up and we’re looking to install some rooftop beehives. In addition, we will be renovating and renaming the restaurant in the near future as part of our rebranding efforts.
What do you enjoy most about working at the NAC? I appreciate having the freedom to play around because artistic expression is more important here than the bottom line. It’s what truly appealed to me about his job – the ethic of the NAC is not about making money – it’s about delivering artistic excellence in all aspects of the operation. It’s a really different mindset and very inspiring.

METHOD • Put spices in a 2 cup /500 mL canning jar (or divide among two 1 cup / 250 mL) jars. • Pour whisky over spices; put lid on jar(s) and shake well to combine. • Let rest at room temperature, out of direct sunlight, for 7 days to infuse, shaking periodically to redistribute spices. • To package for gifting, strain the spiced whisky through cheesecloth or a coffee filter, discarding spices, into clear jars or bottles.

D
uring World War II, Ottawa was home to a rag-tag squadron of hand-me-down American bomber aircraft that were stationed at Rockcliffe Air Base, now part of the Canada Aviation and Space Museum grounds. This newlyformed 168 Squadron of the RCAF was comprised of aging B17 bombers handed down from the US Air Force and converted to deliver mail instead of bombs, as they were previously designed to do. These Ottawa based “mail bombers” loaded their bomb bays with precious mail to fly over to the thousands of Canadian troops serving overseas. One of these Ottawa mail bombers was piloted by Flight Lieutenant Clark H. Ready, a pilot who made a very special flight that was nothing short of a Christmas miracle. As the story goes, the B17 bomber was filled with special holiday mail and Christmas presents for Canadians serving overseas. Flight Lieutenant Ready and his aircrew lifted the loaded plane off the Ottawa tarmac and pointed the silver nose of the B17 through the crisp winter air bound for Europe with a brief refueling stopover in Stephenville, Newfoundland. As the plane took off after its refueling, Clark suddenly discovered his landing gear was completely malfunctioning. With faulty landing gear, Clark and his crew were faced with two options: bail out of the plane and let it crash into the Atlantic along with its Christmas cargo, or make a controlled crash
landing without any wheels and hope the plane would not explode on impact. Weighing his options and conversing with his crew about the importance of his valuable Christmas cargo, Clark made the decision to crash land the plane back in Ottawa. As dawn broke, Clark piloted the wheel-less B17 over Ottawa, circling the skies above the city to burn off excess
fuel in the tanks and reduce the chance of an explosion on impact. The pilot braced himself and gave the signal to his crew that they were now going to attempt to land the massive four-engined bomber at Rockcliffe without any landing gear. Dropping in altitude, Clark eased the mighty B17 down closer to the surface with tense, but skilled, hands on the controls that would eventually bring the mail bird’s aluminum fuselage screeching across the icy ground. The impact of the bomber resulted in a flurry of snow, grinding metal, and bending propellers, but the B17 came safely to a rest. The crew rejoiced as they and the Christmas cargo were now safe. The precious cargo was reloaded into another aircraft and safely made its way to the waiting Canadians overseas for Christmas of 1944. Clark was formally given a King’s Commendation for his bravery, skills and his decision that combined to save the aircraft, the crew and all cargo aboard the Mailbird of Ottawa on that fateful day of Christmas past.
