SUMMER’S EASE One of the favourite aspects of this job is the people we meet and places we visit. I am often asked if it’s hard to find new things to feature and my answer continues to be an emphatic “no!” Ottawa and its surrounding areas offer plenty of intriguing people and places, as seen inside when we enter the historical and political doorway to Stornoway, the Residence of Canada’s Leader of the Official Opposition. This summer issue drives us around and beyond the city limits as Ottawa At Home stakes its claim to being Ottawa’s StayCation guide, offering up day trips, afternoon drives and weekend getaway ideas. Even our food section pays tribute to the freedom trail with a road trip full of fun ideas from local food purveyors on what to pack for a picnic or cottage visit. While Jane Whiting is the authentic horsewoman on the team, I get to experience my equine passion for these elegant animals with thanks to my highschool pal Jeremy Roberts and his wife Jane Asselin. They generously share their horseloving lifestyle and breathtaking horse farm in Dunrobin on the pages of a feature story that provides the visual for our stunning cover. I must admit that by the normal set of rules, I’m not a cottage girl! I don’t like messing in the garden and prefer swimming in the ocean over the lake, but there are aspects of cottaging that are in my blood. The simple, easy décor splashed with treasured finds and passed-down trinkets always make me smile. And hopping into my kayak on a quiet morning, when the lake is flat and the sky clear and blue, is magical for me. BACK STORY Sylvia Hoppner has a flair for all things stylish. She leans towards finer details and elegance with an easy appreciation for classic style. Sylvia started in the fashion world working at the Ralph Lauren store in the ByWard Market in the mid to late-1980s, and eventually transitioned to interior design. She worked in commercial design for sixteen years focusing on retirement home projects, and has recently made the shift to residential work to include cottages as well as primary residences. A year-and-a-half ago, she purchased a town home on a funky street that appealed to her current empty-nest lifestyle. “I wanted to enjoy a more pedestrian-friendly neighbourhood, so I bought

a post build from Timberville in Westboro that appealed to me because of its classic dark oak floors with modern finishings. It was rare to find a place with such attention to detail and similar design sensibilities to mine,” she says of her home.

PERSONAL STYLE Sylvia describes her style as contemporary-traditional. She loves to mix modern elements with treasured keepsakes, like the brass coffee table in her living room that she picked out for her parents when she was 16 years old, and has since had refinished for her own place. “I believe houses become homes because they have soul. This is best achieved with a mix of well-loved pieces and new finds,” says the zealous designer.

A warm, western welcome has been blowing through the stately rooms at Stornoway since Rona Ambrose moved into the Official Residence of Canada’s Leader of the Opposition. Together with her partner J.P. Veitch, the interim leader of the Conservative Party is proud to share the century-old heritage home with a host of visitors and houseguests. The couple frequently invite people over and bring a lively presence to the picturesque neighbourhood of Rockcliffe Park. “We approach this as an adventure for us for two years and we want people to be part of it,” says the petite politician from Alberta. “The home is always full of MPs,

travellers passing through Ottawa, family, friends of friends and people who just want to see Stornoway because it has an incredible history.” While the house is not open to the public, Rona generously offers, “We do encourage people to come in for a cup of tea.” The 34-room house on three levels is a busy place, especially when J.P.’s two youngest children arrive for their regular visits. His eleven-year-old daughter, and son who is eight, each have their own bedrooms on the private second level, and love exploring the character-filled house with its maze of corridors and back stairs to the kitchen. Over the years, many well-known children have lived at Stornoway including the princesses of the Dutch royal family during their wartime refuge, and Ottawa

A POPULAR POLITICAL SEAT Since being designated as the Opposition leader’s official residence in 1950, Stornoway has housed numerous political families and future prime ministers. A sense of intrigue emanates through the home which appeals to the astute politician, who is attuned to all of its historical and political distinctions. “Looking at the list of people who lived here, we like to imagine the machinations that happened between these walls – all the scheming and all the politicking,” says the engaging Rona. “Wars were fought while they lived here, big decisions were made about our country, and real families grew up here. There

are lots of memories in this place.” Built as a large country house for a prominent Ottawa family in 1913, Stornoway was designed in a Colonial Revival style by noted local architect Allan Keefer. After being purchased by the Government of Canada in1970 and then managed by the NCC, only a few major renovations have been carried out, with a new kitchen being the most recent. Yet, Rona reports that the house continues to be a favourite home with some former prime ministers who preferred the comfy living at Stornoway to the big house at 24 Sussex.

A WORKING HOME Life as the leader of the Opposition involves frequent travel, and a riding in western Alberta means Rona and J.P. are rarely in Ottawa on weekends or during the summer. “We would love to enjoy the gorgeous gardens here more, but it’s our working home in Ottawa. Summer will be spent in our own family homes or on the road.” When she is home at Stornoway, Rona’s two favourite places are the kitchen where everyone hangs out, and the nearby office which is tucked away under the main stairway and a great place to hide out. “There’s always lots of people and activity in the kitchen. It’s where I grab a bite on my way to work, make my juice or cup of tea,” she says, adding that with no sitting area in the kitchen, all meals are taken in the formal dining room, which has sunny yellow walls, a big bay window and French doors to a cozy sunroom. To put some personal touches to the government-furnished public areas, the couple have added family photos, books, plants and a Bose music system. “It’s already a beautiful home and it’s a privilege to live here,” notes Rona whose only change has been to convert a TV room on the second floor to a gym. “For me, the measure of how comfortable I am in a home is how well I sleep. Being on the road in different cities is part of the job, so a good night’s sleep is important and I get that here!” As a woman officially residing at Stornoway, she acknowledges that it creates a different domestic dynamic. “My spouse is a man, who has a busy career and is not accustomed to taking care of all the home stuff,” explains Rona. “But J.P. does it fantastically – he plans dinners and parties, looks after visiting friends and family plus gets groceries as well! We see ourselves as a real team and we’re both enjoying this experience so much.”

Builder and developer John MacDougall was always excited about architecture. Graduating from Carleton University with a civil engineering degree, John first worked in Calgary and then returned to Ottawa where he re-connected with classmate Peter Stenger, whose father Walter was a home builder and founded Uniform Developments. With Walter’s guidance and assistance, John and Peter joined forces in 1984 to start their own company as co-owners of Uniform Urban Developments. Since then, they have built more than 100 homes a year across the city region, and won numerous design awards from the Greater Ottawa Home Builders’ Association for excellence. Their latest development project is Wateridge Village at Rockcliffe, site of the former CFB Rockcliffe Lands. This masterplanned community by Canada Lands will include residences, retail and office spaces in an urban setting of over 300 acres surrounded by multiple parks and green space. Uniform Urban’s first release of 90 lots in the forested area surrounding the Montfort Hospital happens late this summer. But life cannot be all work and no play! John and his wife Manon Gouin find refuge in their historic cottage on Big Rideau Lake. Having worked closely with Barry J. splendid, summer residence. When he first saw “Ironwoods” cottage, he was drawn to its Craftsman-style architecture, which is similar in design to some Uniform Urban homes. Gutting and renovating turned out to be more work than building a new place, but once he embarked on the path there was no return. Now John, Manon and their three sons – Phillip (an architect in New York), Matthew and Ryan (who both work at Uniform Urban) – make time to enjoy the three-season cottage.

WHAT MADE YOU DECIDE TO BUY IRONWOODS? It was built and designed for Gordon Cameron Edwards, a Canadian lumber baron, by the same architect who designed Stornoway – Allan Keefer. I purchased the cottage and ten acres of land from a family descendant in 2008. At the time, I was looking for a cottage about 2,500 sq. ft. in size, and this had four bedrooms and an adjacent 1,000 sq. ft. bunkie with three additional bedrooms. It was a big project that needed a lot of TLC, and I worked with Barry Hobin, interior designer Danielle Hannah of 2H Interior Design and landscape architect Gerry Larocque to bring it back to its former splendour. The setting is picturesque and being on a point of land, it has water on two sides. You drive through meadows and forests of sugar maples, white pine and ironwood trees on the kilometre-long access road. Front stone walls were planted with native perennials, and ground-covering periwinkle has existed there forever. It was hard to resist!

WERE THERE MANY CHANGES FROM THE ORIGINAL DESIGN?

Initially, we took down some interior walls and studied the effect of doing that in order to design the new space. We kept a lot of the original windows and moved them around the building. The three-bedroom bunkie needed lots of work and because of strict bylaws we had to repair it 2 x 4 by 2 x 4, rather than knock it down and rebuild it. The cottage itself didn’t need a lot of exterior change, but we added a front porch, a screened-in porch to the lakeside and expanded the master bedroom by adding some dormers.

DOES IT STILL HAVE ITS ORIGINAL CHARM? It was important that the cottage be comfortable and homey after

In the last few years, it has been enhanced by the redevelopment of Ottawa’s top equestrian facility at Wesley Clover Parks that once again attracts international show jumpers, dressage riders and serves the local horseshowing circuit. with horses and together with her husband Jeremy Roberts and their four kids, has enjoyed living on three different horse farms over the years. Now they are putting the finishing touches to the fourth “Chalk Farm” homestead where they live with their two youngest, Jacob (17) and Jasmine (19) who is a competitive equestrian. Restored to its original stabling status, the barn has five new horse stalls with a full apartment above to house both horses and riders in high-level comfort. Newly created paddocks against the scenic backdrop of the Gatineau Hills provide pasture with a view for Casino, Jasmine’s Oldenburg show jumper, and Jane’s handsome horse, Pavan. It all makes a pretty picture from the large windows of the chateauesque-styled stone home, with its own impressive patio and pool area.

“Luckily, Jeremy’s career moves have all been to locations where there is a significant horse showing venue...” HORSE & COUNTRY LIFESTYLE After living a horse-riding lifestyle in Quebec and Ontario, the family’s latest move from north of Toronto was initiated by a job opportunity with Mitel Networks, where Jeremy (who grew up in Ottawa) is now senior vice president, Finance. “Luckily, Jeremy’s career moves have all been to locations where there is a significant horseshowing venue,” explains Jane. “The improvements and investment made to the showground infrastructure at Wesley Clover Parks had a major impact on our horse farm decision. We now live only 15 minutes away from a world-class showjumping venue that puts Ottawa back on the equestrian map – which is very stimulating for the equestrian community and local businesses as well.” This is an important factor for Jasmine, who is a focused show-jumping athlete and plans to compete on Casino at Ottawa’s International Horse Show in July. She has had a mentor in her uncle Jonathan Asselin, a well-known Canadian rider/trainer and

two-time show-jumping Olympian, who has been a positive influence by selecting challenging horses and helping fuel her passion for the sport. “My older brother Jonathan was a natural talent and went on to be one of Canada’s best in show jumping,” says Jane, adding that she also loved horses and riding from an early age. Sadly, her childhood riding lessons came to end with the death of her mother, followed by the sale of her pony and the thousand-acre family farm in Saint-Lazare (which is now the Montreal Polo Club). Fast forward from age 12 to her late 20s, and Jane jumped back in the saddle when her own kids started to ride and she became their “horse-show mom” at local competitions. “With Jeremy’s whole-hearted encouragement, we began to spend much of our free time looking at horse properties and were thrilled to buy our first farm in SaintLazare in 2003. We’ve been addicted to the lifestyle ever since!”

A PICTURESQUE PONDEROSA Jane considers it a privilege to have a life filled with horses, and believes that they are living a dream come true on a property that she calls a bit of equestrian heaven. “I was such a cowgirl growing up and loved watching Ponderosa and Big Valley on TV,” she says, admitting that she also liked to pretend to be Linda Evans who always wore great riding outfits on the ranch. Set in the Ottawa Valley landscape, this picturesque Ponderosa oozes with natural charm, enchanted trails, a pond and rows of cedar groves. And, of course, Jane always looks good on her well-trained horse. “Pavan is a former dressage champion and a perfect pleasure horse for me. I love riding him on the wooded trails around the property.” All horse farms require major work and Chalk Farm is no exception. Yet, Jane takes care of all the property maintenance, horses and home by herself – with some family help. “It’s my job and it pays me back with its bountiful beauty,” she says, adding that Jeremy’s favourite outdoor job is clearing trees to open up views of the paddocks and horses from the house. A short commute to work in Ottawa’s west end is another benefit for Jeremy and contributes to their combined enjoyment of country living at its best. “We look at each other every day and say ‘wow!’ – just cannot believe we live here,” exclaims Jane who could not be happier with the Ottawa equestrian lifestyle.

Getting a gorgeous summer garden display doesn’t have to mean having a grand scale garden. Container gardens provide plenty of bountiful beauty and long-term enjoyment. Andrea Murray, a horticultural technician with Artistic Landscape Designs, says the trend today is to combine annuals with perennials to bring texture and colour together. “By using both annuals and perennials you increase your material options for creative plant combinations,” offers the expert. Andrea designed a tropical container by combining greens with orange flowering plants; she used dahlia, begonia, hosta, tropical spike and neon pothos.

Lifestyle & decor expert instagram.com/ maryktaggart One of the beautiful aspects of having a cottage – aside from the proximity to water, the laid-back lifestyle and time spent with family – is the ability to decorate a second home with a different style influence than your principal residence. While there are a myriad of styles that work well with cottage-themed décor, the colour scheme should be toned down to let the reflection of nature play a strong role. Windows are oversized and rooms are positioned to bring in the outdoors, so don’t fight this natural beauty with the chaos of too much colour. Start with a neutral colour scheme; go with a stark white or a warm cream and then work at bringing in colour as space allows. Painted furniture and colourful accessories do a lot to add personality into cottagestyle décor. Painted furniture is an

ideal way to bring life into old furnishings and add vibrancy to the space. Be sure to have the furniture sprayed professionally to ensure long-lasting durability. Stick with one or two colours, ideally one colour in no more than three tones. When the overall space is painted in a neurtral shade there is an opportunity to inject colour in a variety of ways. A powder room, laundry room and bedroom are perfect places to pop vibrancy onto the walls. Beware of overdoing the bedroom in a wash of colour, in particular if these rooms are guest spaces as well. Everyone reacts to colour differently. Cottages are meant to be restful; decorate bedrooms with this in mind as bold colours don’t create soothing environments. In my own lake house, I handled my passion for colour by painting the walls white and splashing colour onto the ceilings. This is a brilliant solution to creating colourful space without overtaking the room. I brought the crown moulding down into the walls, offering more space to bring in the colour and to help ease the effect into the room. Cottage décor doesn’t have to follow the

typical design rules and should always show off the personality of the owners and the structure. Establishing a colour scheme to honour both of these elements will ensure that your cottage is dressed to handle what you bring into it. CANADIAN MUSEUM OF NATURE

OTTAWA ART GALLERY Construction to expand the Ottawa Art Gallery has begun. Currently one of the smallest municipal galleries in Canada, the expansion will see the OAG grow to more than 80,000 square feet on five floors. The new gallery will connect on four levels with a multipurpose film-screening room, a changing exhibition gallery, a permanent collection gallery, a studio for workshops, a café and a gallery shop for visitors, as well as a new dedicated gallery space for the Firestone Collection of Canadian Art, which includes works by the Group of Seven and other important Canadian artists. The OAG Expansion is part of a longstanding vision for Ottawa that coincides with other major projects to revitalize the downtown. While the gallery is under construction, operations will continue within Arts Court and at the OAG Annex located at City Hall. Scheduled to open in 2017, during Canada’s 150th birthday, the new OAG will be a vibrant cultural landmark

in the heart of the nation’s capital. The summer 2016 exhibition at the OAG features four powerful and diverse female artists. Gail Bourgeois’ exhibition Correspondence: from roots to rhizomes to mycelial networks features artwork that depicts overlapping lines and nodes in ink wash, wax crayon, graphite and watercolours. Paula Murray uses clay vessels as a medium to explore life and art, to produce a wondrous collection of bowls. Her exhibit Paula Murray: You are Me runs from June 24 –September 25. Jerry Grey’s exhibit on the Grid: 1968– 1978 is a celebratory exhibition of her artwork with paintings that mix colour with her experience of the landscape. Robbin Deyo’s exhibition is a collection of drawings and watercolours using the Super Spirograph, a children’s toy from the 1960s. For a great outdoor experience, take the kids to explore three of Canada’s great ecozones at the Canadian Museum of Nature’s first living outdoor exhibition. Immerse yourself in landscapes commonly found in the boreal forest, prairie grasslands and Arctic tundra in the Landscapes of Canada Gardens. Enjoy the plants and other features that are native to these Canadian habitats like the woolly mammoths and the stainless steel “iceberg” sculpture, and then have a picnic on the museum’s grounds. Afterwards, visit the newest, biggest, meanest exhibit of dinosaurs from the ancient continent of Gondwana. THE HAUNTED WALK Do you believe in ghosts? The Haunted Walk of Ottawa conducts a variety of tours of Ottawa’s oldest and most haunted buildings sharing scary ghost stories along the way. The original outdoor tour is led by lantern light to some of the city’s favourite haunted spots, including the Bytown Museum, the Fairmont Château Laurier and Ottawa’s haunted high school. STITTSVILLE The Trans Canada Trail now runs where train tracks once brought steam engines through Stittsville as early as 1870. The Black Family Farm sits on hundreds of acres west of Ottawa, where Tom Black and his family have farmed for generations. Together with his wife Marlene, Tom has raised sheep, herded cattle and grown cash crops that have fed people far and wide. Perhaps because of this, Tom has a tremendous sense of compassion for those who go hungry, and it was that empathy that led the Black Family Farm to become a vital part of the Ottawa Food Bank Community Harvest Program. “It all started from a family discussion,” recalls Tom. “We got to thinking – rather than giving the Food Bank money, how

would it work if we gave them food instead?” After calling the Food Bank, Tom found out that they already had a project of this nature going – but what they didn’t have was enough land to grow the food. Tom and his family were eager to help, and last year Community Harvest volunteers planted five acres of food and two acres of cover crop on land donated by the Black family, all benefitting the Food Bank. In total, they produced just under 102,000 pounds of fresh, high-quality produce for local families in need. “Tom and his family have been incredibly generous with their time, their energy and their equipment – he helps to plow the fields, harrow the fields, he puts down his own compost,” says Jason Gray, Community Harvest Coordinator with the

Ottawa Food Bank. “We never would have been able to evolve this program so quickly if it weren’t for Tom’s input.” Tom is quick to point out that his family doesn’t do it alone, emphasizing the support of Jason and the Food Bank and notes, “It wouldn’t work unless you had someone like Jason.” Tom also feels particularly humbled when he watches volunteers arrive to help tend the fields throughout the growing season or when local businesses and community members volunteer goods, time or services. “It reaffirms your respect for people, confirms that people really do care about others with no gain to them – they just want to help,” he adds. “I’m not a rich man in terms of finances,” concludes Tom. “But I’m rich in family and friends and a place to live in this beautiful country and I’ve always been of the mindset that we should give back. The classic Bloody Mary cocktail can double as breakfast, lunch, snack or appetizer with some creative garnish combinations.

INGREDIENTS

1-1/2 oz vodka (optional) 1 tbsp (15 mL) freshly-squeezed lemon juice 1 tsp (5 mL) freshly-grated horseradish (more to taste) 2 dashes hot sauce (more to taste) 1 dash Worcestershire Sauce (more to taste) Tomato juice 1 stalk celery

GARNISH

1 strip cooked bacon 1 hard-boiled egg, halved 1 cherry tomato 1 leaf romaine or Boston Bibb lettuce

PREPARATION

Fill a wide-mouth glass with ice, then add vodka, lemon juice, horseradish, hot sauce, Worcestershire Sauce and tomato juice; add celery and stir lightly. On lettuce leaf place bacon lengthwise; top with halved hardboiled egg and tomato; pull lettuce and bacon up around the egg and tomato to envelop. Run skewer through the lettuce, bacon and center of egg and tomato to secure. Place skewer on glass; serve on small plate with pita bread on the side to turn the garnish into a sandwich.

KOREY’S TIPS Have garnishes prepared in advance for easy assembly. Rim glass with cracked black pepper & coarse sea salt for added flair and flavor.

If your summer plans keep you close to home, you’re in luck, because there are some great possibilities in the Ottawa area that make for unforgettable staycation memories. Ottawa At Home looks at three locations where great food is served up with a side of fun.

MULLIGANS GOLF BAR The newly opened Mulligans Golf Bar offers fun for the whole family. Centrally located just a chip shot away from Parliament Hill, the venue combines gastropub fare with virtual-reality golfing and race car simulators. Given that Ottawa has more golf courses per capita than anywhere in North America with the exception of Myrtle Beach, Mulligans’ owners knew there was an untapped market for a downtown golf facility. “We charge by the hour, rather than by the round, so it’s easy for people to come in and play nine holes then grab a bite to eat, or even to squeeze in some driving range time during the week before heading to a course on the weekend,” explains Cam Ross, one of the co-owners. “We have hosted birthday parties and corporate events. We’re also seeing lots of couples coming in for a fun date night, and, because of our kids’ golf game, it’s a perfect venue for the whole family.” The food is no afterthought at Mulligans. Like an upscale clubhouse, the menu has been carefully crafted to provide a variety of options ranging from lighter bites to meaty meals, with vegetarian dishes too. Chef Jayce Edwards, who made a name for himself as part of the impressive kitchen at the Albion Rooms, has assembled a strong team to deliver the menu – designed by co-

owner Andrew Grace – of classic comfort food but with a signature twist. “Ours is a scratch kitchen,” explains co-owner Chris Prendergast, “and all our dishes and cocktails offer a layering of flavours. Our big emphasis is on making sure that our execution is totally consistent.” From the house-made brioche for burgers and club sandwiches, to the caramelized onions cooked in bourbon-infused pork drippings, to the smoked tomatoes that grace the pizzas, everything at Mulligans is a cut above what you might expect of pub fare. The complementary “jango-dusted” popcorn is addictive, as are the jalapeno-brined French fries. There’s a great beer selection and killer cocktail menu, including what is arguable the city’s best Caesar, featuring infused vodka with crispy prosciutto, chèvre-stuffed olives and a house-made burnt honey, maple and bacon rimmer.

CALABOGIE PEAKS RESORT Whether you’re keen on a drive in the country or a short “stay and play” getaway, Calabogie Peaks is an idyllic destination. Just an hour from Ottawa, this four-season resort offers plenty of fun, whether you’re drawn to the mountain, land or lake. “You can spend the day on the water, hiking, playing tennis or enjoying a round of golf, then savour a gourmet meal in our Canthooks restaurant,” explains Calabogie’s director of marketing, Liz Murphy. Calabogie’s kitchen is open all day long and evening reservations are preferred but not always necessary. “Many visitors enjoy a pre-dinner stroll around the grounds with a cocktail or

glass of wine,” adds Liz. “You can wander down the pathway to the beachfront or the ponds, taking in the view of the mountain or watching the deer playing in the forest. Ours is a beautiful outdoor setting, offering a true escape from the city and we have a variety of activity packages available to make your getaway really special.” The recent addition of executive chef Tristan Hertzog to the Calabogie team has elevated the resort’s food and beverage services thanks to his inspiration, sommelier training and love of farm-to-table cuisine. “We moved to the Ottawa Valley to be closer to family and I’ve had so much fun sourcing local products and developing relationships with producers in the area, including trout and beef suppliers, local microbreweries, chocolatiers and more,” notes Tristan. “Their excellent products appear on our new menus and many will be featured in our upcoming pairing dinners which are highlighted on our website.” In the summer, the lakeside Boathouse Bar & Grill offers delicious, casual bites like Korean barbeque pork lettuce wraps. At Canthooks, the new menu incorporates both gourmet and family-friendly fare including lots of healthy dishes. Cedar-smoked pickerel, chorizo gnocchi and crave-worthy parmesan frites are just a few of the regular items. “We plan to offer specials as well to encourage creativity in the kitchen; it’s fun to work on different dishes with interesting elements,” says Tristan. An expanded on-site garden gives Tristan and his team ready access to fresh herbs and vegetables to complement the foraged items he’s sourcing from the resort’s grounds. Having great food and drink is just the beginning when it comes to success in the busy ByWard Market. For Lowertown Brewery, location is also key to making it one of Ottawa’s favourite places to while away a summer’s day or evening. Lowertown has expanded its foothold and now boasts the city’s largest patio, with room for about 130 patrons on its York Street frontage, coupled with 250 seats on a new Clarence Street back patio. Add in the option to purchase beer to take home from 11 am to 11 pm, plus an ever-changing lineup of events, and it’s little wonder that Lowertown is hopping every day and night. Regulars know that one of Lowertown’s secrets is a fun little arcade featuring a handful of pinball machines and two foosball tables. “The classic games like Kiss, Elvis and Star Trek are the most popular by far, though we vary the lineup from time to time,” says Lowertown’s engaging chef, Kyle Mortimer-Proulx. With a DJ spinning vinyl on Friday nights and live music on Saturday nights, Lowertown delivers a full-customer experience. While there’s always a buzz at Lowertown, the environment is laid back, making it even easier for Kyle’s kitchen artistry to shine. “To me, Lowertown is Canadian smokehouse with elevated pub food,” he explains. “I love preparing smoked meat, brisket and our famous brined, smoked, deep-fried chicken wings which are served with our housemade sauces. I try to incorporate our beer into the food as much as possible, using it for marinating and braising as well as in barbeque sauces.” Kyle’s cold-smoked cod is dressed in a pale ale batter for the fish and chips; chicken is brined in beer before air drying then roasting, giving it a hoppy flavour matched with a nice salinity. While there is much meat on offer, vegans also recognize a kindred spirit in Kyle, thanks to his time as executive chef at Zen Kitchen. Ideal for date night or a large family gathering, there’s ample room indoors or out at Lowertown. It’s also a great late-night spot. The menu switches at 10 pm to include such delicacies as deep fried mac ‘n cheese with house-smoked brisket – perfect fuel for the impromptu dance parties for which Lowertown has become famous.

With Hawaiian cuisine trending in 2016, this dish (pronounced poke-ay) is a great way to embrace the gorgeous flavours of the Pacific Isles. It’s a very traditional way to prepare top-quality tuna, and the gentle melding of Asian influences is a perfect complement for the fish. It’s normally eaten spooned onto deep-fried wontons, but these oven-baked versions are healthier and easier to prepare. Kept properly chilled, this make-ahead dish is a perfect picnic item or appetizer for an outdoor meal. 62 ottawaathome.ca SUMMER 2016

INGREDIENTS For the wonton crisps: 1 package of wonton wrappers (find them in the produce section) canola oil For the poke: 2 lbs (900 g) sushi-grade Ahi tuna 1/2 cup (125 mL) soy sauce 2 tbsp (30 mL) water 1 tbsp (15 mL) sesame oil 1/4 cup (60 mL) finely minced sweet onion 2 tbsp (30 mL) finely minced ginger root 1/4 to 1/2 tsp (1.25 mL to 2.5 mL) finely minced Thai Chili pepper 2 tbsp (30 mL) finely chopped macadamia nuts 3 tbsp (45 mL) green onion tops, finely sliced on the diagonal 1 tbsp (15 mL) toasted sesame seeds

METHOD To make the wonton crisps, preheat oven to 375F. Cut 3-inch wonton wrappers into halves on the diagonal (creating two triangles out of each square wrapper). If using the larger 6-inch egg roll wrappers, cut them into eighths on the diagonal. Brush two baking sheets lightly with oil then place the triangles of dough in a single layer on baking sheets. Flip the wonton triangles over so both sides get a light coating of oil. Bake for 5-7 minutes until golden and crispy. Watch them closely during the last few minutes of baking so they donâ&#x20AC;&#x2122;t overcook. Remove from oven and place crisps on a wire rack to cool. Store in an airtight container at room temperature for up to one week. To make the poke, cut tuna into small cubes (less than 1/2 inch). Place in a bowl. Combine soy sauce, water, sesame oil, sweet onion, ginger root and hot pepper in a glass jar with a tight lid. Shake to combine well. Drizzle over tuna, stir gently, then cover and refrigerate mixture. Let tuna marinate for 1-12 hours, stirring occasionally. When ready to serve, add macadamias, green onions and sesame seeds to marinated tuna. Stir gently to combine and serve with wonton crisps. Serves 4- 6
