In the 1940’s Richard and Maurice MacDonald opened a restaurant which operated as a hamburger stand in San Bernardino, California. They introduced the new system of service called ‘speedee service’, which made and served burgers faster than ordinary in those days. The business was growing slowly and steadily, opening a few branches in other towns. They were steadily in the slow lane.
SIX STEPS TO BUILDING A BUSINESS IN THE FAST LANE “Now the general who wins a battle makes many calculations in his head before the battle is fought. Thus do many calculations lead to victory and few calculations lead to defeat: how much no calculation at all!” – Sun Tzu in Art of War The government has taken the lead with the president declaring that Zimbabwe is open for business and is set to grow into a middle class economy by the year 2030. The ease of doing business is set to improve, freeing up entrepreneurs who were restricted by old policies like indigenisation laws as well as excessive red tape in the process of setting up a business.

and creating wealth are related pursuits because it is difficult to create much wealth without some form of business enterprise unless you are a talented artist, musician or sportsperson.
Anyone wishing to set up a business can now do so much more easily than before. The registration of new business organisations can now be done online, the same with registering for and paying taxes. Opportunities are plenty in agriculture, mining and manufacturing as old firms are being left behind due to antiquated machinery as well as old technology. The current shortages are a clear signal that old firms cannot cope with high demand. There are many opportunities for smaller firms to be subcontracted by bigger firms in the ‘mega deals’ projects that the government is embarking on in the mining, energy and infrastructure sector. The door is now open for new smaller and fast moving firms to take over the market.
Now there are three ways of creating wealth: you can work for someone else’s company and earn a salary. If you work for long enough you would have earned a million dollars by the time you retire. Unfortunately, money earned is not necessarily wealth as it is usually all spent and gone and there will be very little wealth available for retirement. This route is called the side lane, or the pedestrian lane as an employee is riding on his employer’s dreams; in other words he is a passenger. He is totally reliant on his employer for his future. There is also the slow lane, in which one slowly works on building a small business, nurturing it daily for it to grow. If one is lucky, the small business will eventually grow in to a big business. But it may take a very long time. Many small business owners today are in the slow lane; they have no hope of their businesses getting big in the near future. Instead they hope on luck and on opportunities knocking for them to expand.
I was recently reading MJ Demarco’s book The Fast Lane Millionaire, a bestselling book that I think anyone serious about building a successful and profitable business should read at least once. Building a business
Now the fast lane entrepreneur is different. His or her eyes are fixed onto a big and profitable future. They started building a business with the objective of building a big enterprise. When Henry Ford developed his

Until in came Ray Kroc as a business partner. Mr. Kroc was an experienced entrepreneur who had spent years in the food industry. His mind was in the fast lane. He introduced the concept of franchising to McDonalds. Kroc was convinced that the concept and design of this small chain had the potential to expand across the nation. He made innovative changes to McDonalds and sold the first franchise which opened in 1955. More franchises followed and the chain grew exponentially turning into a nationwide and eventually global franchise, making it the most successful fast food corporation in the world. That was fast lane thinking. The lesson? You don’t have to create a totally new product. You can improve an existing business to provide better and faster service and serve more customers in more areas in order to build growth and value. Now in this series I will cover the process necessary in building a successful business. The steps are as follows: 1) How to pick the best idea 2) Setting the core team 3) Developing a simple business plan 4) How to mobilize funding 5) Formal business registration processes 6) Set up your business for growth through strategic thinking. ZIMPARKS EXTENDS VICTORIA FALLS VIEWING UNTIL 10PM ZimParks extended the closing time for viewing the Victoria Falls from 6.00pm. to 10.00pm. All visitors will now be able to view the Falls at night. Wild Zambezi advises all visitors to NOT to walk between the town and the Victoria Falls Rainforest entrance gate at night, as this area is not fenced, and there are wild animals (including lions, buffalo and elephant) around. Take a hotel or tour operator transfer or a taxi to the entrance. In addition to extending the viewing hours, a number of other activities have been introduced in the area to meet the demands of the growing numbers of tourists visiting the attraction. Zimparks has introduced bush dinners in the evenings next to the statue of David Livingstone alongside the Falls. STAY SAFE IN WILD AREAS • Wild animals are just that…. wild…. and, no matter what some individuals in the industry will tell you, unpredictable. • Just because you’ve seen extraordinary close wildlife encounters in documentaries, movies, or on social media, don’t think it will work like that for you. • Wild areas are not Zoos. H
aving reached adulthood in the unquestionable era of the internet, life, with all its criss crossing wires, has got very busy and for the sake of my sanity and repose, a complete break every now and then, without cell signal, 3G or email is an absolute necessity. Gonarezhou, all 5,053 km² of it, is a haven for the over-worked adult and a good old fashioned bonding experience for families. It does take a day or so for the conditioned nervous system to relax into the rhythm of the bush, but gently and usually towards the end of day two
while you are filling your shower bucket with water or blowing on the kindling before it catches alight, you are pleasantly surprised at how completely unfazed you are about everything, even the fact that not a single condiment or spread or tea bag or box of milk made it to Gonarezhou. No visit to Gonarezhou is complete without a good stint at the bottom and at the top of the Chilojo Cliffs. From the West View Point, underneath my wide brim hat and the scant streaks of shade thrown by the Mopane tree I was sitting beneath, I could see nothing
but wilderness stretched outward. Sweeping, unbroken and vast. Below, the Runde River’s russeted waters sluggishly wound its way onward, dotted by shapes of elephant pulling up green shoots along the water’s edge and further downstream shadows of the herd of impala venturing onto the river’s sands for a drink. Besides the glint of the occasional vehicle winding its way through the Park roads and the land cruiser that I could far below parked under the large fig tree at picnic site one, there was no further sign of humans. Balm indeed for the soul. Lazily swatting flies and waiting out the heat on the lower cliff shelf below me, I watched two old, grizzled buffalo bulls to one side and a family of five elephant with one very young calf on the other. There is something very settling about knowing that this scene has played itself out, in one way or another for centuries, and hopefully will do so for centuries to come. The Gonarezhou Conservation Trust (GCT)has been entrusted with the role of ensuring this happens through a partnership between the Zimbabawe Parks and Wildlife Management Authority and the Frankfurt Zoological Society. The progressive partnership, which saw GCT assume management of the Park in March 2017, is governed equally by ZPWMA and FZS and provides a platform for direct investment in the protection and long-term

financial sustainability of the Park. Ensuring that the Park’s exceptional wilderness (which it boasts loads of) and wildlife are protected for generations to come. The work GCT has done in the short time since March 2017 is impressive. In the south of the Park, the Swimuwini chalets have had a complete remodel and now boast sustainably powered fridge-freezers (yes, that means cold beers the whole trip), hot showers, a good lick of paint and really comfortable beds complete with fancy mosquito net. Every campsite and picnic spot we stopped in at was looked after and in good repair. For those looking for a tip, Rossi Pools campsite in the south section has an incredible, although not particularly child friendly, set up
with the thatch rondavel perched on the edge of a specular granite cliff and the winding Mwenezi River below. In the north of the park, GCT have built three charming mud, pole and thatch units, they call Manangas (meaning ‘a place in the bush’) and inspired by the traditional building methods of the Shangaan people - the same people hired to build the units -overlooking the Masasanya dam. catering units are simply but beautifully designed and at the park’s affordable accommodation rates are definitely a steal. Game is no longer as skittish as it once was and even the elephants are more relaxed as vehicles drive past. Gonarezhou’s efforts to ensure the longevity of the park and its inhabitants is definitely worth supporting (and rest assured that 100% of your park

fees are directly reinvested into Gonarezhou). Just as we were getting ready to pack up our picnic bag and blanket from atop the cliffs to start the long drive back to our campsite, an impressive whirlwind, one of the biggest I’ve seen
was beginning to gather speed in the Runde valley below. According to Shangaan folk tales, whirlwinds are mermaids moving across land to new water. After the medicinal effect of our Gonarezhou holiday had begun to take hold, not even an ominous
mermaid could fluster me, not at all. Turn your garden into a happy spot for an afternoon of silly and frivolous competitions with friends. Garden games bring out the child in us all - and a competitive streak in some. To start with you need to sort out some garden basics. You want to create a space that’s as large and level as possible. The grass will need to be mowed and any large bushes cut back to allow more space. Store away anything taking too much room, such as garden furniture and loungers, and give any hard areas, such as decking or paving, a good sweep. KEEP IT SIMPLE Keep your snacks and drinks simple and on a help-yourself basis. This way, you can join in on the games too!
DECIDE ON THE GAMES
Remember this is an afternoon for silly fun and lots of laughs, so make sure the friends you invite are up for it. It’s a good idea to have a few different types of games, from lawn games such as croquet or boules and active ones such as Twister and table tennis.
WHERE TO PLAY
Make the largest area of your garden the ‘centre court’ with garden friendly badminton or volleyball. Instead of setting up a net for the badminton/volleyball court, hang pretty bunting from trees, fence posts or two chairs positioned at the edges for tennis. You could also use a grass marking spray paint to mark out the court. Proper badminton courts are 13 x 6m, volleyball courts are 18 x

9m. However, as this is just for fun, try to allow around 12 x 6m for both. If it’s smaller, it doesn’t matter as the games will become more fast, furious and silly! Set up some seating around the perimeter for the spectators and nominate an umpire and some ball boys and girls!
DRINKS, SNACKS & SCORES The games are the star of the show, so snacks should be kept simple and drinks on a help-yourself basis. Designate an area in the kitchen with a printed menu on where you can find everything - for example, bottles of beer, iced tea and wine are in the fridge, plastic glasses are on the side, ice creams and lollies are in the freezer, packets of chips, nuts and biltong are just there, cakes, bakes and plates are on the cake stand and so on.

Cross the finish line full of pride, by ensuring that the little things make a big difference… • Pin printed sets of rules for the game scores onto tree trunks or fences and keep the equipment for each game in a practical and pretty fabric bag. • You’ll need a prize for the person who scores the most points and a booby prize for the lowest scorer! • As there’ll be so much going on in the garden, keep decorations to a minimum. Cushions as seating and a few lengths of bunting or some Chinese lanterns are sufficient. • Once the afternoon is over, give your guests loot bags comprising game memorabilia - a mini trophy, gold winners medals, a pack of cards and a whistle!

FITTING IN FITNESS THROUGH CHRISTMAS Maintaining fitness through any holiday period is extremely challenging and fraught with the dangers of over indulging on food and beverages. The best way to achieve any worthwhile success through this festive period is with the five points suggested below:
1.
SET SPECIFIC GOALS These goals need to be very specific, measurable, achievable, realistic and time related. As these goals are specific to the festive period (1st December – 7th January) it would make sense to keep them to a very short time scale so I would suggest weekly goals. Suggested goals would be to beat your mile run time by 5 seconds each week, to get 3 more burpees in the 7 minute burpee challenge, for 1 week complete 30 burpees a day. I hesitate to give any goals measured in weight loss, as there is so many factors that affect this, so I rather focus on goals of what we are physically able to do and our weight will adjust to what is natural and best suited for our healthy, athletic bodies.

PLAN A SPECIFIC STRATEGY/ SESSION PLAN THAT WILL ACHIEVE THE GOALS I recommend short (5 -15min) high intensity sessions, as the idea of slogging away for over an hour after a late night will take the world’s strongest will power and determination to get going. Plan to get these sessions done as close as possible to when you wake up as we all know too well how the world can get in the way of us keeping fit and healthy. Wake up early get coffee and breakfast in and then get the sessions done! You’ll be amazed at how much energy you will have to help you enjoy your day!

EAT IN BEFORE GOING OUT When you know you are going to a function where the food will be delicious and plentiful - the chances of over indulgence is high. Have a healthy cheat meal before you leave so you are not arriving with your tummy rumbling. Help yourself to the tasty treats that tickle your taste buds, but the chances of over indulging on a full stomach of healthy food will be less.

STAY HYDRATED We all know this is important before during and after our training sessions but when the goal is to continue the fitness journey through the festive season, maintaining hydration constantly throughout the day is crucial. When we become dehydrated it affects our mood, energy levels and we will inevitably become lethargic and lazy. This will jeopardize our chances of getting our planned sessions in and done properly, as hard as we can. Going to any functions well hydrated and full on food will also limit/delay the impact of the free flowing beverages we could be presented with.
5.
GET ENOUGH SLEEP It’s no secret that a lack of sleep can lead to bad food choices and cancelled workout plans. While the occasional late night here and there won’t do much damage, it’s the flow on effects of back-to-back sleepless nights that can lead to hormone imbalances, a messed up metabolism and weight gain. Do the right thing for your mental and physical health over the holidays and get at least 7-9 hours of shuteye a night.
6.
STAY ACTIVE Don’t quit just because it’s Christmas. Use the break in your routine to mix things up and challenge your body in different ways. Try a different class on the holiday timetable, schedule a sunrise power walk each morning, climb a mountain, explore your holiday destination on foot, take the kids to the park, break up your beach time with a quick soft sand sprint session. You won’t regret it when you start the New Year off fitter and healthier than when you started it.

Christmas MINCE PIES
Christmas without mince pies is unimaginable. Keep the traditions of Christmas alive with these classic fruit pies.
For the pastry: 175g plain flour 75g butter, cut into cubes 25g icing sugar finely grated rind 1 orange 1 egg, beaten For the filling: 350g mincemeat 1 egg, beaten, to glaze Icing or caster sugar for dusting
Preheat the oven to 200ºC. To make the pastry, put the flour, butter, icing sugar and grated orange rind into a food processor bowl and process until the mixture resembles breadcrumbs. Pour in the beaten egg and pulse the blade until the dough starts to form a ball. Knead lightly by hand on a floured board. Roll the pastry out thinly on a lightly floured work surface and cut out 18 rounds using a 7½ cm fluted cutter. Use these to line 18 holes of two 12 hole bun tins.

Spoon a generously heaped teaspoon of mincemeat into each pastry case. Re-roll the pastry trimmings and cut out 18 stars using a 4½-5 cm star cutter. Put a star on top of the mincemeat, and brush the pastry with a little beaten egg. Bake in the preheated oven for 12-15 minutes or until golden and crisp. Allow to cool slightly and dust with icing sugar or caster sugar before serving.

THE KOPJE’S SECRET One of the stand-out features of Zimbabwe’s natural landscape are its stunning rocky outcrops and kopjes scattered across the country. RESURRECTION-ROOIBOS, CITRUS AND GINGER ICED TEA 1 litre resurrection-rooibos tea (Petalilli), freshly-brewed 3-4 tbsp honey (or more to taste) zest and juice of 1 lime zest of 1 naartjie or orange juice of 4 naartjies or oranges 1 thumb-sized piece of fresh root ginger, roughly chopped small handful fresh mint leaves Add all the ingredients to a large jug or pot and allow to steep for at least 10 minutes, preferably longer. Make a mouthwatering ham the centrepiece of your holiday table. 11/2 kg ham 2 litres dry cider 1 carrot, chopped 1 onion, halved 2 fresh bay leaves 2 sticks celery, chopped 6 black peppercorns 1 tbsp whole cloves 1 tbsp English mustard powder 2 tbsp brown sugar Put the ham into a large pan and pour over the cider. Add the carrot, onion, bay leaves, celery and peppercorns. Bring to the boil, turn down the heat and simmer for 1 hour. Drain, saving the cooking liquid, and discard the veg. Leave to cool. Preheat the oven to 200°C. Once the ham has cooled slightly, use a small sharp knife to remove the skin, making sure you leave a 1cm layer of fat all over the top. Score the fat into diamond shapes and press a clove into the middle of each diamond.
Citrus Roast Chicken
Mix the mustard powder and sugar together with ½-1 tbsp hot water to make a thick paste, cool a little and then spread over the top of the ham. Place the ham on a rack in a roasting tin lined with foil. Pour a small ladleful of the cooking liquor into the base of the tin (this stops the meat drying out) and bake in the oven for 25-30 minutes or until it is a rich, golden colour on top. Baste once or twice with the juices in the base of the tin during cooking. Remove from the oven and rest for 10 minutes before serving thinly sliced.
CITRUS ROAST CHICKEN
This roast chicken, scented with citrus and fresh rosemary, is beautiful to serve over the festive season. 1 whole chicken 2 oranges 2 tbsps honey 1 tbsp apple cider vinegar 1 tbsp butter, melted 2 sprigs rosemary

FESTIVE FEASTS zest of 1 orange 1/4 onion, sliced 1 tbsp onion powder 1 tbsp Dijon mustard 1-2 clove garlic, finely chopped ½ tsp salt 1 tbsp olive oil Combine the juice of one orange, honey, vinegar, butter, onion powder, Dijon mustard, garlic, salt, rosemary and orange zest. Poor the mixture into a bag with the chicken, and let marinate for at least 15 minutes. Pre-heat oven to 200°C. Spread the rosemary sprigs and onion slices along the bottom of a roasting pan or casserole dish, place chicken on top, and pour marinade juices over the chicken. Stuff the squeezed orange pieces inside the chest cavity. Cut the second orange in half, and then slice one half into smaller pieces. Place these pieces in the pan.
Roast for about 1-11/2 hours. Use a meat thermometer to ensure doneness. Thickest part of the breast should measure 74°C, and juices should run clear. Pour juices/drippings into a saucepan with the rosemary, onions, and cooked orange pieces. Cook over medium to medium high heat, stirring regularly, until thick like a gravy. Allow chicken to rest at least 10 minutes before carving. Slice remaining orange half and use as garnish with chicken.

125ml beef stock 3 onions, peeled an halved 2 fresh rosemary sprigs olive oil sea salt and freshly ground black pepper Preheat your oven to 190°C. Rub the roast with olive oil, garlic, and season with salt and pepper to taste. Place the roast in a roasting dish and pour the beef stock around the meat. Surround the beef with the onions. Place the rosemary sprig on top of the beef, place in the oven, and roast for 45 minutes to 1 hour. Reduce the heat to 120°C and cook for another 15 to 20 minutes. Remove from the oven and let rest for 10 minutes before slicing.

ROAST LAMB WITH TOMATO & AUBERGINE
Classic Mediterranean flavours are combined in this beautiful roast. 680g tomatoes, sliced 1 onion, sliced 1 eggplant, sliced 4 garlic cloves, chopped 11/2 tsps dried oregano, crumbled 1 tsp salt For the lamb 2kg leg of lamb 3 garlic cloves, thinly sliced 60ml fresh lemon juice 1 tsp dried oregano Preheat oven to 180°C.
Toss half of tomato slices with onions, eggplant, garlic, oregano, salt, and pepper to taste in a large bowl. Transfer to an oiled casserole dish, spreading evenly. Arrange remaining tomato slices on top. Roast, uncovered, in middle of oven 30 minutes.
Roast Lamb with Tomato & Aubergine
Trim lamb of all but a 1/2cm layer of fat. Cut small slits all over lamb with a sharp small knife and put a slice of garlic into each slit. Rub lamb with some lemon juice and season with oregano, salt, and pepper. After vegetables have been roasting 30 minutes, place lamb on top of vegetables. Roast in middle of oven for 30 minutes. Continue roasting, basting meat with cooking juices (baste with remaining lemon juice during last 30 minutes of roasting) until a thermometer inserted into thickest part of meat registers 57°C for mediumrare, about 11/2 hours. Transfer meat to a cutting board, cover the vegetables with foil, and let meat stand 15 minutes before carving. Spoon off any excess fat from the vegetables and discard. Serve the vegetables with the lamb.

This festive stuffing brings together all the trimmings. 225g butter, divided 450g day-old white French bread, diced into cubes and dried 1 onion, diced small 225g celery, diced small 17g flat-leaf parsley leaves, finely chopped 10g fresh sage leaves, finely chopped 3 tbsps fresh rosemary, finely chopped 2 tbsps fresh thyme, finely chopped 1 tsp salt, or to taste 1 tsp pepper, or to taste 625ml chicken stock, divided 2 eggs Preheat oven to 120°C. Place cubed bread on a baking sheet and bake, stirring occasionally, until dried out, about 45 minutes. Transfer bread to a large bowl; set aside. Heat oven to 180°C and spray a baking dish with cooking spray; set aside. To a large pan, add 170g butter and heat over medium-high heat to melt. Add the onions, celery, and cook until vegetables have softened and are just beginning to lightly brown, about 10 minutes. Stir frequently. Transfer vegetables to bowl with the bread. Add the parsley, sage, rosemary, thyme, salt, pepper, 310ml chicken stock, and toss well to combine; set aside.
Festive Stuffing
In a small bowl, add the remaining chicken stock, eggs, and whisk to combine. Pour mixture over bread and toss well to combine. Turn mixture out into prepared baking dish. Dice the remaining butter into 8 to 10 pieces and evenly dot the butter over the top of the stuffing. Cover with foil and bake for 40 minutes. Uncover and bake for an additional 40 to 45 minutes, or until top is as lightly golden browned as desired. Serve immediately.

FESTIVE FEASTS 2 large sweet potatoes, peeled cut into wedges 2 red onions, peeled cut into wedges 1/2 lemon, zest and juice 2 tbsps olive oil 1/2 tsp ground coriander 1/4 tsp ground fennel 1/4 tsp dried rosemary 1/4 tsp cayenne pepper 1/2 tsp salt 50g feta cheese Preheat oven to 230°C. Put sweet potatoes and onions into a bowl and toss with lemon juice and 2 tablespoons olive oil. Sprinkle all the spices over the veggie mixture and toss until all the vegetables are coated with the seasoning mix. Spray a large baking tray with non-stick spray or mist with olive oil. Spread the vegetables out on the baking tray. Roast in the oven for about 15 minutes, then flip them over. Potato & Mushroom Salad
Roast 15 minutes more, then flip them over again. Roast 10-20 minutes more, or until the sweet potatoes and onions are both nicely browned and sweet potatoes are soft. Total roasting time will be 40-50 minutes, depending on the size of the sweet potatoes, your pan, and the oven. Season with salt and fresh-ground black pepper as desired, sprinkle with crumbled Feta, and serve garnished with fresh rosemary and lemon zest.

Roast Beetroot & Butternut Salad
Preheat the oven to 200°C. In a large bowl, toss the potatoes with the olive oil, salt, pepper, vinegar tarragon and garlic. Add to a greased baking dish and roast for 30 minutes. Turn the oven up to 220°C and add the mushrooms to the baking dish and roast for another 20-minutes, tossing a few times. Remove the dish from the oven and allow to cool slightly. Sprinkle over the rocket and red onion.
ROAST ASPARAGUS & PARMESAN
This is one of the easiest and tastiest ways to prepare asparagus. 450g asparagus 2 tbsps olive oil 2 garlic cloves, finely chopped 3 tbsps Parmesan juice of one lemon

salt and pepper to taste Preheat oven to 200°C. On a baking sheet, arrange the asparagus in a single layer. Toss in the olive oil and sprinkle with salt and pepper. Roast for 8-10 minutes or until the asparagus is crisp on the outside and tender in the centre. Toss in the garlic, parmesan and lemon juice. Add more if desired. Serve immediately.
ROAST BEETROOT & BUTTERNUT SALAD
A bright salad that matches the colours of Christmas. 50g beetroot 1 butternut, peeled and cubed 1 tsp cinnamon 1 tsp garlic powder 130g rocket 100g Feta cheese, crumbled
½ pomegranate, seeded salt pepper balsamic vinegar olive oil Heat oven to 200°C. Wrap whole, unpeeled beetroot in tin foil. Place on a baking tray and roast until tender, 45 minutes to 1 hour. Let cool, then remove skins by rubbing them off with a paper towel. Cut beetroot into bite size pieces. At the same time, place the butternut on a lined baking sheet, drizzle with 1 tablespoon olive oil, 1 tablespoon salt, 1 teaspoon pepper, cinnamon, and garlic powder. Toss to coat. Roast until tender, about 35-40 minutes. To serve toss the rocket, butternut and beetroot. Top with feta cheese and pomegranate seeds. Sprinkle evenly with salt and pepper. Drizzle with balsamic vinegar.

These cupcakes are so festive and packed with that irresistible gingerbread flavour. 220g brown sugar 3 eggs, room temperature 225g plain flour 1 tbsp baking powder 1/2 tsp bicarbonate of soda 2 tbsps cinnamon 1 tbsp ginger, freshly grated 1/2 tsp ground cloves 1 tsp ground cardamom 1/2 tsp sea salt 170g butter, melted 160ml cream For the Icing 340g cream cheese, room temperature 90g butter, room temperature 160ml maple syrup 150g icing sugar gingerbread cookies to garnish Line muffin tins with baking cups. Preheat oven to 190ยบC. Whip brown sugar and eggs together until foamy. Put flour, baking powder, bicarbonate of soda, cinnamon, cloves and cardamom into a sifter together. Sift over egg mixture. Add fresh ginger and sea salt. Gently stir to combine.
Rosemary Cranberry Cookies
Combine the melted butter and cream, then slowly add to the batter. Pour batter into baking cups 90% full. Bake for 20-25 minutes or until a toothpick comes out clean when inserted. Set aside to cool. For the icing, combine cream cheese and butter together in a mixing bowl. Beat until smooth. Add the maple syrup and icing sugar and mix until combined. Pipe it the icing onto each cupcake and top with a gingerbread cookie.

70g cocoa powder 3 eggs 160g plain flour 180ml milk For the Chocolate Ganache 190g icing sugar 3 tbsps cocoa powder 1 tsp vanilla essence 3-4 tbsps milk 2 tbsps pecans or walnuts, chopped Heat the oven to 180°C. Grease and flour a loaf pan or spray with baking spray. Beat the sugar and butter together until well blended. With the mixer on low speed, add the salt, vanilla essence, bicarbonate of soda, baking powder, and cocoa. Mix until blended. Add the eggs, one at a time, beating well after each addition. Add about one-third of the flour and half of the milk and mix on low speed until blended. Add another one-third of the flour and the remaining milk and mix until well blended. Add the remaining flour and mix until blended. Do not overbeat. Pour the batter into the prepared loaf pan and spread evenly. Bake for about 60 to 65 minutes, or until a toothpick inserted in the centre comes out clean. Remove to a rack to cool in the pan for about 10 minutes. Carefully remove the cake from the pan and cool completely on a rack.
Christmas Tree Brownies 300g sugar 100g brown sugar 3 tsps vanilla essence 2 eggs 120g dried cranberries, finely chopped 2 tbsps rosemary leaves, finely chopped 2 tbsps orange peel, grated In medium bowl, mix flour, bicarbonate of soda and salt; set aside. In large bowl, beat butter, granulated sugar, brown sugar and vanilla with electric mixer on medium speed until fluffy. Add eggs, one at a time, beating after each addition. On low speed, gradually beat in flour mixture just until blended. Stir in cranberries, rosemary and orange peel. Shape the dough into 4 balls. Wrap in plastic wrap; refrigerate 8 hours.
Heat oven to 180°C. Line baking trays with baking paper. Unwrap the dough; roll out to about 1/2 cm thickness. Cut out your cookies using cutters in your desired shape. Place them on the baking trays 21/2 cm apart. Bake 8 to 12 minutes or until lightly browned. Remove from baking trays to cooling racks.

A little Huletts sweetness goes a long way. FESTIVE CHOCOLATE PUDDING Ingredients: 1. 150g unsalted butter 2. 1 cup Huletts brown sugar 3. 3 eggs 4. 200g dark chocolate, melted, cooled 5. ½ cup milk 6. 1 ¼ cups self-raising flour 7. ¼ cup cocoa powder 8. 150g glace cherries (not the juice) 9. cocoa, for dusting

Cover basin with a circle of greased baking paper and 2 circles of foil. Tie securely around rim of basin with kitchen string. Stand pudding on a trivet inside a large stock pot. Fill with enough hot water to come two-thirds up the side of basin. Simmer, covered, for 2½ hours, until a skewer inserted comes out clean. Set aside to sit for 10 minutes, before inverting. Dust pudding with cocoa. Serve at room temperature in wedges with thick whipped fresh cream and strawberries. Enjoy!

star sprinkles 5 candy canes Preheat the oven to 160°C. Grease and line a 20cm square pan with baking paper. Set up a makeshift double boiler using a saucepan with a medium sized heat proof mixing bowl nestled on top. Fill the saucepan with five to 10 centimetres of water (but don’t let it touch the bottom of the mixing bowl) and heat it to a simmer. In the mixing bowl, add butter, sugar, cocoa and salt and rest the bowl over the water. Stir occasionally until the butter has melted and the mixture is just warm. Remove from the saucepan and stir in the vanilla. Add the eggs one at a time. Beat well with your wooden spoon between additions. When the mixture looks shiny and thick, add the flour. Beat with your wooden spoon until incorporated. Spread the mixture evenly into the prepared pan and bake for 25 to 30 minutes or until a skewer inserted in the centre comes out almost clean. Cool completely in the pan (at least an hour). Cut the square in half. From each half, cut triangles. Prepare the icing by sifting the icing sugar into a bowl, add the cocoa powder, vanilla and milk and combine. Spread some icing over each brownie. Cut the candy canes in half for the tree trunks and insert into the bottom of each tree. Garnish with sprinkles of your choice.

Christmas just wouldn’t be Christmas without a fruit cake! 220g sultanas 175g currants 230g raisins, chopped 150g prunes, pitted and chopped 190g glacé red cherries, chopped 230ml brandy, 2 tablespoons extra 180g butter, softened 200g brown sugar, firmly packed 2 tsps vanilla essence 3 eggs 100g pecans, chopped 100g dark chocolate, chopped finely grated rind and juice of 1 orange
Christmas Fruit Cake 160g plain flour 60g self-raising flour 2 tsps mixed spice 2 tsps ground cinnamon 2 tsps ground nutmeg Add the fruit and brandy to a large bowl and stir to combine. Cover with plastic wrap and leave to stand overnight.

Spoon the cake mix into the tin and smooth the top. Bake for 21/2 - 3 hours or until a skewer inserted into the middle of the cake comes out clean.
Butter a deep 20cm round cake tin and line with two layers of baking paper (use a little butter between layers to help keep them stuck together). Preheat oven to 160°C.
Leave cake in the tin, drizzle with extra brandy and wrap in a clean tea towel to cool slowly overnight.
In an electric mixer, cream the butter, sugar and vanilla until light and creamy. Add eggs one at a time, beating well after adding each egg.
Remove from tin, wrap in a layer of plastic wrap, then a layer of aluminium foil and store in an airtight container. When ready to serve, sprinkle over some icing sugar.

There’s no doubt that being in charge of Christmas lunch can be a stressful task. It requires more than just a few good recipes; it needs a road map. But our foolproof planning guide will have you cruising through the big day with ease and style! 3-4 DAYS AHEAD Make your cranberry sauce and Christmas pudding (if you haven’t already), cover and chill. CHRISTMAS EVE • Lay the table. • Prepare your stuffing. • Make the sauce for the Christmas pudding; cover and chill. • Start preparing your Christmas Ham by boiling it in cider and spices for an hour. Keep covered in fridge until time to roast. • Make a marinade and cover your chicken. Leave in the fridge till the morning. • Prepare and weigh ingredients for bread sauce, if making. • Peel and cut the potatoes and carrots;
keep the potatoes covered in cold water and cover the carrots with a damp cloth, you do not want to soak the carrots as this will dilute their flavour. • Cut your parsnips and store in a bowl using the same method as the carrots. • Take anything you have prepared in advance out of the freezer and leave in the fridge to defrost. • Chill the champagne, wine and water. CHRISTMAS DAY 10.15AM • Stuff your chicken. • Start to prepare your remaining vegetables and salads. 11.30 • Preheat oven to 200°C. 12.00 • Put the chicken in the oven to roast. 12.30PM • Cook the potatoes on the stove for around 8 minutes, be brave with this, the further they go the fluffier the final result.
Drain and give them a shake- this will make them crispy later. Tip them into a large tray in one layer, and add the olive oil or butter and season and toss well. 12.45PM • Prepare your ham for roasting by scoring the fat and pressing cloves into each crisscross. Place in the oven with the chicken. 1.30PM • Remove the chicken and ham from the oven. Cover tightly with foil and leave to rest. • Drain off resting juices and use to make a bread sauce. • Make your gravy. • Put your parsnips and potatoes in the oven to roast. • Put the Christmas pudding onto steam. • Warm plates and serving dishes. If there is no room in the oven, place them in a sink of boiling water and dry them just before serving. • Take the cranberry sauce from the fridge and allow to warm to room temperature, this will improve the flavour. 1.45PM • Cook the carrots in as little water as possible so you retain their full flavour, fry or boil your sprouts. • Reheat bread sauce, stirring occasionally and adding more liquid if you need to, you don’t want it too thick. • Make sure someone pours the cook a drink… 2.00PM • Carve the chicken and ham. • Serve, sit back and enjoy!

This cocktail calls for a celebration. Bottoms up!
44ml gin 2 tsps fresh lemon juice 30ml soda water 40ml raspberry simple syrup ice cubes rosemary sprigs, for garnish mulberries or raspberries for garnish For the simple syrup 150g sugar 190g raspberries 190ml water To make the simple syrup, stir together sugar, water and the raspberries in a small saucepan. Bring to a simmer over medium heat. When the first bubbles appear, reduce heat to medium-low and gently simmer 5 minutes. Let cool, then strain. Pour all cocktail ingredients in a cocktail shaker with ice. Shake well, and serve with one or two ice cubes. Add rosemary and berry garnish and serve, either in small shot glasses or in a large tumbler.
WHITE CHRISTMAS MARTINI
A delicious creamy cocktail for the holiday season. 60ml vanilla vodka 60ml white chocolate liqueur 30ml white creme de cacao 30ml cream or full cream milk honey and coconut flakes for rim garnish pomegranate seeds, for garnish Pour the honey into a shallow dish and put the coconut in another shallow dish. Coat the rim of the glass in the honey; then dip the rim in the sugar to coat evenly. Set the glass aside.

A CONTEMPORARY RENOVATION
he original family home had good bones but was in need of up-dating and modernising inside and out. The exterior design had nodded towards a Cape Dutch influence with slightly skimpy gable ends but the pitch of the roof was all wrong for true Cape Dutch architecture. Traditionally Cape Dutch roofs have a 45 degree pitch but

on this house the roof pitch was too flat to make the design work properly. In addition there was an awkward portico by the front door with an inverted V-shaped gable above and an arched entrance below. Most of the windows were quite small and the interior layout was a series smaller, dark rooms leading off of long passageways. It felt cramped and dark for such a large house and the interior flow was uncomfortable. In addition there was very little connection from the interior spaces to the garden outside. There was a substantial patio

at the back of the house in a sort of three sided courtyard but all it had was a few concrete pillars with gum poles on top, so it wasn’t a very inviting space and was seldom used. The new owners asked Bruce Rowlands, from local firm Architexture Spatial Design, to bring the house up to more modern specifications. The renovations were contracted to Howes and Homes. The awkward gables and the portico were removed and the tiled roof was replaced with Chromadek with deeper eaves and overhangs. The front portico was replaced by a simple structure of pillars and wooden beams. The back patio had a new roof and new flooring installed as well as a built in serving counter making it into a much more inviting space. Apart from the bar or serving counter it has ample space for a dining area and a lounge area, effectively doubling the usable entertainment space. Small windows on the front of the house were replaced with large sliding stacking aluminium doors which allow much more light in and also connect the interiors to the garden (including the master bedroom which now has a view over the pool). At the back more stacking doors were installed connecting the patio to the living spaces and the kitchen. Inside a number of walls were demolished to do away with the existing long passageway and to create a second informal family lounge. The kitchen was opened up to the main living and dining areas and a new pantry and scullery was created to keep clutter out of the way. In the kitchen and the living areas the roof trusses were exposed to create

an impression of more light and space. Although the main footprint of the house was largely unchanged it became much brighter as the internal flow was vastly improved. The house was rented out to tenants for a while and then resold. The second leased owner then embarked on even more renovations and improvements. Very few structural changes were made but the interior decor was completely redone to suit the new owner’s taste. Structural changes included blocking off a single window from the master

bedroom to the front entrance patio, partly for privacy and also to create a feature wall in the bedroom against which the bed could be positioned. The interior access from the main house to the guest wing was closed off so the guest suite is now totally self contained with access through a walled in courtyard to the bedroom and en suite bathroom. The kitchen was totally gutted and redesigned and refitted

neutral unpatterned curtaining fabric which she had made up locally by Sarah Cremer and exclusive high thread count linen for the bedrooms. Leigh also managed to source some amazing artwork from local artist Tami Walker – they’re monochrome prints with Zimbabwean themes incorporated into portraits.

Three ovens, integrated fridge and freezer and top of the range Smeg appliances bring the kitchen right up to date. New solid timber floors were installed throughout most of of the house which added a generous dose of luxury. The walls and most of the larger pieces of furniture were kept neutral with colour and interest added in the small furnishings like scatter cushions, vases and artwork. While the owner had very definite ideas about the style he wanted to create he did contract South African interior designer, Leigh Went, to help with the finishing details. Wallpaper was used to bring colour and texture to the rooms, in particular the kitchen (partly to hide some imperfect plaster finishes) as well as in the lounges and bedrooms. Leigh also chose mostly
The owner also paid particular attention to the master bedroom and en suite. The bedroom has under floor heating for chilly evenings and luxurious wall panelling that looks like huge single slabs of marble. bulkheads are functional for lighting but also help to change the mood making the room more intimate and cosy. Outside the garden has been carefully landscaped by Lizette Horsley. Olive trees with lavender underneath have been planted along the edge of the driveway to screen off the house and pool from the entrance. Lizette has placed large pots of blue Petreas at the entrance, which in time will create a beautiful, shady display. The owner extended the driveway paving in front of the garage to make parking and turning easier. This left a bit of an awkward corner near the entrance which Graham Williams has transformed with a

formal water feature. Now, instead of being a difficult space it’s a stunning focal point. From being a fairly plain and old fashioned house two successive renovations have turned the house and the garden into a modern, elegant home. PAPER SNOWFLAKES
Paper snowflakes are always fun to make. With just a few folds and cuts with a pair of scissors, a piece of paper can transform into a beautiful and dazzling array of patterns that draw ooh’s and ahh’s from anyone who sees it. Start with a square piece of paper. Fold the one corner to the other to form a triangle. Fold the triangle in half. Roll up the left and right corners until the sides are even, then flatten. Make sure to keep the top of the triangle sharp and pointy. Turn the paper over to see a triangle. Cut at across the bottom of the triangle. Snip and cut away at the triangle any way you like. When you’re done, slowly unfold the paper to reveal your masterpiece.
HANGING CHRISTMAS TREE
Cut some sticks into a series of different sizes and arrange them into ascending order. Tie them together so that they hang in a Christmas tree shape. Starting at the bottom, tie the end of some string to one end and begin attaching more string to the rest of the sticks moving upwards. Once you reach the top stick, loop the string over the final stick and make your way back down the other side. Make sure that the length of string is the same between each of the sticks on both sides. Once the string is secured you can start adding decorations to the sticks. Pine cones, gift tags, small baubles and even red apples can be wrapped around the sticks to add a real festive vibe.

Cut 2 stocking shapes from felt, 2 strips for the top in a different colour and 1 reindeer, star or any shape of your choice. Sew the strips to the backs of each stocking and the reindeer to the front. Place the stockings together and sew all the way around with a blanket stitch. Sew on a strip of ribbon at the top for hanging and make a bow for the reindeer.

1. Line a baking tray with tin foil, letting ends extend over sides by 2cm. Grease the foil with butter; set aside. 2. In a large saucepan, combine the chocolate chips, condensed milk and butter. Cook and stir over medium heat until mixture is smooth. Remove from the heat and stir in peanuts. 3. Place the marshmallows in a large bowl; add the chocolate mixture and stir well. Spread into prepared pan. Sprinkle with additional peanuts and marshmallows. Refrigerate until firm. 4. Using foil, lift fudge out of pan. Cut into 4cm squares.

espite any challenges we may face, as Zimbabweans we are masters of invention, reinvention and ingenuity. The Annual Garden Show (TAGS) 2018, held at Parklands Business Venue in Borrowdale, was a showcase for so much of the design talent and craftsmanship on offer in our nation and we were so proud to be a part of such an amazing group of exhibitors. With 110 stands and over 6,000 people through the gates, TAGS has grown into one of the largest horticultural exhibitions in the region in only five years. The show centres around the show gardens installed by Zimbabwe’s leading landscapers, nurseries and garden centres and the standard of design this year was equivalent to that of other shows on the international stage. The incredible Halsteds Garden Centre entrance designed by Neels Scott set the tone, winning the award for ‘Best Stand’ with an innovative water feature, living wall and crisp, clean modern design. ‘Best on Show’ was won by Nature’s Way Landscaping by Natalie Price. The design of her garden was intricate, full of detailed features and the standard of plant cultivation second to none. The race for points in the design competition was the toughest ever and resulted in there being three Gold Medal winners: • Plant Plan Nursery built a truly stunning oriental garden filled with serene water features, a seating area and wonderful atmosphere created by subtle music and incense. Showing off their skill in both design and cultivation, their garden also won the ‘People’s Choice’ award.
OUT OF AFRICA Magazine Lifestyle Centre under the shady forest was filled with gorgeous décor and inspiring ideas for home.
• Hivu Nursery’s display of whimsical flowers and quirky features drew the audience in and as always, their rare and different plants were a huge drawcard for the garden enthusiasts looking for something different for their gardens. • Mr Chris Nurseries garden was designed by the talented Jan Edgar. Jan used the incredible orchids available from Mr Chris to create a garden retreat full of colour and calm. The ‘Flame Lily Award’ is given to the best newcomer to the industry and this year was won by Abundant Life Nurseries and Landscapes, by Thoko. The Annual Garden Show runs a mentorship program where new landscapers and nurseries are given invaluable advice and support from veteran experts in cultivation, design, marketing and business strategy. The program has proven enormously successful, boosting new businesses, building community within the industry and nurturing new talent. Thoko was a part of our mentorship program this year and we were thrilled with the success of her design.

Mix and match crockery and tableware with cheerful tartan and a new fabric runner to make it extra special. PICK A PERFECT TREE Choose one with dark green needles that looks fresh. Keep it looking fresher for longer by sawing off a little from the bottom and soaking it in water overnight before decorating. If you have lots of indoor plants, dress them up too!
Festive Chocolate Truffles
Celebrate the festive season with deliciously easy no-bake truffles. 1. In a small, heavy saucepan bring 120ml cream to a simmer (stir and scrape down the sides with a spatula every few minutes). 2. Place 225g good quality chocolate in a bowl. Pour the cream over the chocolate, add 1 tsp vanilla, and allow to stand for a few minutes then stir until smooth. 3. Allow to cool, then place in the refrigerator for two hours. 4. Use a teaspoon to roll out balls of the ganache. Roll in your hands quickly (as it will melt from the heat of your hands) and place on a baking sheet lined with parchment paper. Place in the refrigerator overnight. 5. Roll in cocoa powder or chopped nuts and serve, or place back in the refrigerator until needed.

GO FOR TRADITIONAL AND DECORATE YOUR HOME IN RED, GREEN AND GOLD.
KITCHEN In your kitchen, opt for cabinets in Dulux Lunar Falls, with a varnished cherry wood top. Farmhouse style crockery and kitchenware in shades of cream and red would work well with this scheme. Tea towels decorated with tartan or tree designs would also keep the theme going. Natural hessian for the kitchen blinds would bring in a rustic element.

Keep a traditional Christmas theme flowing through to the dining room with a golden cream hue for the walls, such as Dulux Jasmine Shimmer. Spread a hessian table cloth over your dining room table, and place a red and green tartan table runner down the centre. Fill a shallow wooden crate with sprigs of conifer, miniature pinecones, and a collection of large candles decorated with hessian and twine. Set the places with deep red dinner plates, and cream side plates and bowls with a matching red rim. Place names could be done on cream card, and feature a star silhouette.
In the living room, create a warm and cozy feature wall by painting the fireplace in a warm, hearty red such as Dulux Volcanic Red. Paint the rest of the walls in a pale cream, and select scatter cushions in rustic hues and tartan patterns. Replicate these patterns and colours in the edging on hessian curtains and lamp shades. Harmonize with rich cherry wood furniture. Decorate with classic Christmas reds, greens and gold. Consider some wicker ornaments on the mantelpiece.

BEDROOM Take a slightly different approach with the bedroom; after all, this is a room for relaxing. Begin with a grey tone, log cabin effect wallpaper behind the headboard, and either leave the remaining walls white, or a very pale grey. Bring your Christmas colours in with rich tartan bedding and scatter cushions. To enhance the Christmas feeling, hang a wreath above the headboard, or alternatively, you could opt for a stag head made from wood. Bring in touches of gold with metallic bedside lamps, and curtains edged in gold satin.
BATHROOM Red wood cabinets and a cream counter top would be a good place to start for a Christmas themed bathroom. Add a pot of poinsettias beneath a gilt edged mirror. Rich red or forest green would be an ideal colour for the towels and bath mat. Revert to hessian for the curtaining for consistency. Cinnamon scented soaps would be ideal for this theme.
