MSU and Quapaw announce partnership: Missouri State University Darr College of Agriculture has partnered with the Quapaw Native Americans to reach educational, business and sustainability goals, and the two plan on continuing to expand their relationship. According to a press release from the university, the Quapaw, headquartered in Northeastern Oklahoma, work under two main agricultural goals: food sovereignty and food security. William Meadows, MSU’s coordinator for Native American studies, said these goals are reminiscent of goals most Native American tribes work towards. The Quapaw have invested money into establishing facilities such as a livestock processing plant, greenhouses and a facility for importing and grinding their own coffee in order to maintain their goals of food sovereignty and food security. The Darr College of Agriculture is looking to resurrect marketing Missouri State beef to sell at the local Hy-Vee grocery store. The Quapaw nation would help by processing MSU cattle. The next group of animals ready for processing will be transported to the Quapaw Nation’s livestock processing facility, which is the first USDA-inspected processing plant located on tribal territory that a tribe owns and operates. FFA comes to Springfield, Mo., school: Hillcrest High School in Springfield, Mo., has become the first Springfield School District’s school to have an official chapter of FFA. The group includes students in all high school grade levels, from newcomers to members of farming families. The group is advised by Hillcrest teacher Sharon Blauvelt. “This is the first year of a threeyear process,” Blauvelt said. “I’m working on getting my certification from DESE to be certified to teach agriculture. And going forward, we’ll have at least three agriculture classes, hopefully more. This is just the beginning, and Hillcrest has 70 acres, with half of that land covered in forests. We have a lot of space for our students to learn.” Blauvelt said several students have been asking for an FFA chapter for several years, including two of the seniors in the initial group of 22 students. Grandin to speak at symposium: Dr. Temple Grandin will give the keynote address on Dec. 6 at the 20th annual Missouri Livestock Symposium in Kirksville, Mo. Grandin gained fame for her work in animal handling and animal welfare. She tells how improved stockmanship helps bottom lines, and she gives insight into how animal welfare shapes the industry. MDC confirms ash borer: The Missouri Department of Conservation has reported the presence of Emerald Ash Borers in 16 new counties across Missouri, including counties in the Ozarks. A collaborative effort between MDC staff, Missouri Department of Agriculture inspectors and USDA Animal and Plant Health Inspection Service officers, has detected the EAB in Benton, Douglas, Howell and Ozark counties, according to an MDC news release.

As a kid, bundling up in warm layers of clothes to build snowmen, having snowball fights and going sledding, was a big treat. Even as a young man, I continued to enjoy the colder temps, just knowing how good it would feel to come in by the fire and warm all the extremities, once the outside jobs were completed. I remember visiting with a farmer friend from the very northern tip of Wisconsin a few years ago, and him telling me, that where he was from, they really only had two seasons – winter and the Fourth of July. Even though he was exaggerating (I think), I thought to myself that it must be a wonderful place to live and farm. I could even imagine myself moving there. A lot of my cattlemen buddies disagree with my past love of winter, when it comes to raising cattle, but I have always taken great pleasure in caring for cattle in cold weather. Feeding hay and chopping ice on the ponds for the cows is kind of like dating those “husky” girls in college – they seem to appreciate it more.

eady or not, the holiday season is here, which means diets are out the window for many of us as gatherings with family and friends center around food. The menus of our holiday tables may differ, but they all have something in common – it took farmers to make it all come together. From the flour to the butter, the turkey to the ham, the cranberries to the green beans, farmers are a needed ingredient to create our holiday feasts. Even vegetarians and vegans who opt to celebrate with a Tofu “turkey” have to give kudos to our soybean producers for the production of soymilk used to make the Tofu, as well as the other farmers who toiled the soil to grow the produce they enjoy. Society, in general, seems to have forgotten how important agriculture is. Many Americans today simply go to the store, pick up what they want, check out and go home. They don’t think about what it takes to produce their food, and how many — Continued on Next Page

Tootsie Roll Bars Submitted by: Jamey Archer, Falcon, Mo.
Ingredients:
1 C. brown sugar 1 3/4 C. flour 3/4 C. shortening 1 3/4 C. quick oatmeal
Topping Ingredients:
2 eggs 1 tsp. vanilla 1 tsp. baking soda 1/2 tsp. salt
6 ounces chocolate chips 1 can sweetened condensed milk
Directions: Combine shortening and sugar. Add eggs and vanilla. Add dry ingredients. Pat two-thirds of this mixture into an ungreased 9-by-13 pan.
Directions: Heat these two ingredients in microwave until chips are melted. Mix well and spread over dough. Crumble remaining dough on top of chocolate topping. Bake at 350 degrees for 25 minutes.

Agriculture is not only the core of our small and rural communities; it’s the building block of our society. American consumers also seem to forget the U.S. has a stable food supply thanks to our farmers and ranchers. There’s no need to stand in line for hours at a time just to receive a cup of rice and hope there’s still some available when it’s your turn. According to an American Farm Bureau Federation report, Americans spend only 4.8 percent of their disposable income on food, not including food purchased at restaurants. In contrast, the poorest countries in the world spend the highest percentage of income on food. For example, Nigerians only spend about 40 percent as much money for
food as Americans in raw dollar terms. But, Nigeria’s lower median income means about 59 percent of disposable income goes to food-at-home purchases, according to the AFBF. Food isn’t the only product of agriculture. Oils, resins, fibers, clothing, medications, energy, cosmetics and plastics are just a few of the other products with ties to agriculture. I’m thankful for our farms of all sizes this holiday season for their hard work, day in and day out to not only put food on their tables but mine as well. Thank you for being a farmer.

Life Is Simple Continued from Page 3 But, alas, all good things come to an end. These last two or three winters have become a lot less enjoyable for me. Even though the recent winters haven’t been extremely cold or snowy, it seems that my toes, fingers and ears react much more negatively than they did just a few short years ago. And, now, when I slip and fall on snow-packed ground or ice-covered ponds, I don’t seem to jump right back up like I used to… at least, not without assistance. As I write this column, I’m staring out the window at the ground that is beginning to turn white. We’ve had freezing
rain, sleet and snow this morning and the TV weatherperson is predicting temperatures in the single digits tonight, with the wind chill below zero. A few years ago, I would have looked forward to getting up earlier than usual, and getting out to check the cows and make sure everyone was OK, but I have a feeling I’ll have to drink an extra cup or two of coffee before I find the fortitude to do so. Given my newly found distaste for winter, I can only conclude two things; I guess I really am getting old, and secondly, the only time I need to go back to northern Wisconsin is on the fourth of July.

Everyone is allowed to walk around and see the animals, too. The goal is to provide a fun, fall experience for everyone. To this point, the event has been by word of mouth, open to people they meet in the community, along with neighbors and friends. However, they’re considering making it a public event in the future. Midge said she loves event

planning, so this is right up her alley. Midge jokes that she’s very much “all in.” She gave the example of when they brought home their first two pigs from Texas – in the back of their van. Because they had no fencing established on the property, they had to figure out what to do with the pigs when they arrived home at midnight. Aron said he prefers to take his time and figure things out. They seem to balance each other out between Midge “jumping all in” and Aron being more reserved. “She likes to build the fence around the animals, I like to build it before we get the animals. That’s the difference,” Aron said.

In 13 years, they have built 13 acres worth of corn mazes and offer another 8 acres of various activities for children and adults on their 180-acre farm. “In the beginning, we tried the ‘scare factor’,” Vicky explained. “But it takes a lot to keep that up with live actors, and some of our visitors were concerned and wanted to know just how scary it was. We found we do better with our mini-maze designed for the little ones, our inflatables, our barrel train and our kids’ tent, which also has a ball pit and a corn box, similar to a sandbox. Several of Vicky’s other grandchildren also help out when they can with various chores and activities, as do several of their friends and neighbors. She estimates that they entertain approximately 3,000 people during the fall season. “We talk to the kids and families about agriculture and farming every chance we get,” Vicky shared. “We host school groups during the week and are open to the public on weekends. The kids get to see the hogs, the high tunnel and we talk about raising corn, pumpkins, gourds and other fall decorations, and also about feeding animals and farm life in general.” The weather can also be a major factor in their work and planning each year. “Last year, we had to contend with rain and even cancel a few times due to the mud,” Velynda added. “This summer started rainy but we have had good weather for our fall celebrations.” “We always ask our visitors not to pick DECEMBER 2, 2019
the corn,” Vicky laughed. “Otherwise, we won’t have enough to last through the fall season. We plant the long day corn and we plant it late in the season. It can make harvesting with the combine a little more difficult but we’ve learned over the years, it is the best way to have it tall and green long enough for all the mazes.” Vicky has also worked for the Polk County Soil and Water Conservation District for the past 30 years and is the office manager. She also knows about raising decorative fall crops. In the past, she and her family raised and sold 10,000 corn husk bundles a year, as well as Indian corn and pumpkins to various stores throughout Missouri, Kansas and Arkansas, including Wal-Mart. “It was another way to supplement the farm income,” Vicky continued. “My husband was the peddler in all that. We quit, however, as we got into the family farm activities. That’s all we do now. It had always been my dream but it has grown really fast. We also provide areas for families, church and scout groups to come out and picnic or have a campfire any evening. “We are ending up the 2019 season now but each year it gets bigger and we are already starting to plan for our 2020 season. While we are open to the public just in the fall, this is a year-round operation.” Chris LeDoux would be proud.

Established in 1995, the iconic Branson, Mo., stop still serves up breakfast and lunch If they aren’t careful, motorists taking Highway 265 from Branson, Mo., to Silver Dollar City theme park may pass by one of Branson’s few long-standing and locally-owned restaurants, BillyGail’s Cafe. Gail Blong and her husband Billy were originally going to call their restaurant Table Rock Cafe when they founded it, but their friends in Minneapolis, Minn., told them, “It doesn’t sound like a hillbilly. If you’re going to be down there you need to sound like a hillbilly.” The breakfast-and-lunch-only cafe’s exterior continues the hillbilly theme with log cabin walls crowded with weathered and eclectic antique decor. Inside, more antiques on the walls and shelves convey a homey, country atmosphere, and the people there are just as warm and welcoming. Gail explained they decided to move to the Ozarks and establish a breakfast cafe after visiting Branson and falling in love with its people.

Opening their doors on May 18, 1995, Gail said they served 11 people. “Billy and I gave each other a hug, and we said to each other, ‘We are going to make this work,’” Gail recalled. With time, they did. The restaurant became famous in the area, through word-ofmouth in the beginning and more recently through social media. They’ve gained nation-wide notoriety as well, being featured in publications like USA Today and Food & Wine, and on TV shows like “Man v. Food.” Having built a very successful cafe with Gail, Billy tragically passed away in 2012. Gail continued running the restaurant until late 2016, when Gail’s daughter and son-in-law, Donna and Joe Funk, retired from their jobs in Minneapolis and moved down to take over ownership and operation of BillyGail’s Cafe. Donna and Joe had never worked in the food service industry, so the hectic work environment was a bit overwhelming for them at first.

“It was just crazy all the time,” Donna said. They love working there, however, and plan to stay until their grandson takes over. Gail, though retired, remains a staple at BillyGail’s as well, making sure guests enjoy themselves. “We love to have fun here,” Gail said. “We make sure everyone has fun.” The fun draws in many regulars and repeat customers for BillyGail’s, including both tourists and locals. Tourists who have been there before know to come back to the cafe when they visit, as Gail has come to know many of them by name. Locals visit regularly at the times that tourist crowds are easily avoided. Donna credits the continued success to

the restaurant staff. She said they are an amazing and motivated crew, with little turnover, as many employees have worked at BillyGail’s Cafe for 10 or more years. According to the owners, the staff stay because of the good hours and the family atmosphere. “We treat our staff like family because they are family,” Gail explained. “We could not do this alone.” But of course, the main reason anyone goes to a restaurant is to eat, and part of the appeal at BillyGail’s is the generous portions. Famous dishes are the pancakes the size of hubcaps and the combination French toast and pancake they call the French cake. Large breakfast platters with

After taking over, Donna made several improvements to the restaurant, including modernizing behind the scenes and in the kitchen. Other recent improvements include adding on a new seating area that seats an additional 20 customers, expanding the outdoor accommodations for those waiting in line, and an overflow parking for the typically packed restaurant. Donna said they have plans in store for an add-on to the kitchen and an expanded pancake grill as well. Through all those changes and improvements, however, BillyGail’s rustic aesthetic and personable service remain intact. “We use our old recipes, we’ve never changed them. We’ve added on some things, but mostly it stays the same.” While the Branson landscape and attractions have changed, BillyGail’s Cafe stays true to its hillbilly roots.

Store Manager: Ben Pugh (pictured) History: Ben Pugh has been the manager of the Rogersville, Mo., location of Gordon’s Feed and Pet in rural Greene County, Mo., for the past three to four years and worked for the firm for a total of approximately eight years. He takes a rather unusual view of his role as a feed store manager. “The people is what this business is all about,” he explained. “You make a lot of Photo by Laura L. Valenti friends in this business, people you see all the time so I think of myself as something like a bartender to the agriculture community around here. That means I talk to a lot of people and I listen to a lot of people. I hear about their animals and their individual operations, which is great. It also means I watch out for them and when one of my regulars hasn’t shown up here like they usually do, I want to know why. I want to make sure there aren’t problems on the farm where we can help, but I also want to know if there are problems at home or with someone’s health. That’s just what friends do for one another.” Products: “Cattle and horse feed are always going to be the driving forces behind this kind of business in the Ozarks,” Ben said. “Purina products are the bulk of what we sell. We have lots of different brands of dog and cat feed. I can see 12 different brands on the shelf right here from where I’m standing. Another big seller for us though is our exotic feeds. We like to say we can feed everything from Angus and aardvarks to zebras, as well as your dog and cat. We serve a number of businesses that are breeders and animal rescue operations and that includes folks from Branson, Nashville, St. Louis, Memphis, Little Rock, Kansas City all the way to Dallas. In addition to the Rosgerville, Mo., store, Gordan’s Feed and Pet has locations in Ash Grove, Clever, Greenfield and Marshfield. Family: While Ben himself does not farm, he helps out his father, Vern Pugh who raises Irish Dexter cattle on his farm named Windswept near Willard, Mo. He and his wife Allison have two grown daughters and spend their time off work, with family and friends. Ben does enjoy the pet side of the business in a more personal way, however, and has three dogs, a Blue Healer and two long-haired Chihuahuas. “Those two are Rooster T. Cogburn and Mable Misdemeanor, because she’s too small to be a felony,” he concluded with a chuckle.

Carl Goodnight feels the Angus female is the most versatile female of all breeds Carl Goodnight is a fourth-generation farmer and has been raising cattle for 76 years. He was born on the farm in Carthage, Mo., where he now lives. He has been farming or running cattle on his land since he can remember, except for the time he served in the Vietnam War. “Growing up, we raised hogs and raised and milked Jersey cattle,” Carl recalled. “I now run around 75 Angus, depending on the year and own 120 acres.”

meet your neighbors Cattleman is Sold on Angus Continued from Previous Page Farm because the Angus cow is the most versatile beef female available, Carol said. “You can breed her straight and make a very usable calf, or you can cross her with Charolais, Simmental, Hereford or an eared breed and make a very usable calf for your specific needs,” he explained. “But, when the chips are down and you need to get back to basics, the Angus cow will always be the go-to female in Southwest Missouri for a beef cattle operation.” There is no such thing as a “perfect” cow, heifer, bull or steer, Carl said, but he feels Angus cattle are the best option. “In fact, if you can be average in every measurable trait with cattle, you are probably doing well,” Carl said. “The Angus cow does that for us, because there was a time that I sold all my cattle.

Goodnight Angus Farm primarily sells bred heifers through the Show-Me Select Heifer Program, bred cows through special cow sales at the Springfield Livestock Marketing Center, and they retain
heifers, about 22 months of age. The majorty of the herd consists of 3- to 7-year-old females. If a cow gets over 7 years at the Goodnight Angus Farm, she has a home until she comes up open.
Carl said those are rare females and if they last that long than they are usually part of the family by that time. Breeding season at Goodnight Angus Farms normally synchronizing and AIing heifers, and some cows around the end of March or first of April. The remainder of the females will be exposed to herd bulls around the middle of March. Calving season for the Goodnight farm starts around the middle of December and lasts until the end of February. Any females that haven’t calved by the end of February are culled, unless there is a very good reason to retain them, and it better be a very good reason. Weather is a critical factor when it comes to weaning calves. “If we are short of grass, we will wean as early as late July, and if we have a wet summer, we will keep the calves on the cows until late September.” Angus Goodnight Farm hopes to see their farm grow as much as their family’s

In Town: Stephanie Beltz-Price is the association executive of the Ozark Trail Board of REALTORS®, a position she has held for five years. While she is not a real estate agent, Stephanie works with about 200 REALTORS® in seven counties to keep them updated on industry regulations. “I help make sure our members comply with all state and national rules and regulations, and we also have a MLS (multi-listing) service that I work with. Shawn has been at Smith Flooring for more than 25 years, where he is the safety director. In the Country: Stephanie has been involved in the cattle industry her entire life.
“I grew up on a cattle farm in northern Howell County/southern Texas County,” she said. “My husband Shawn and I have about 20 cows of our own, but then we’re part of the larger family farm where we have about 225 head with my mom and dad, Joe and Nancy Beltz; my brother, Jason; and son Matthew.” The base of the family’s herd are Salers and Angus/Salers cross, along with a small herd of crossbred cattle. The Beltz family became with Salers in the mid-1980s, about a decade after the French breed came to the U.S. “We’ve kept them based on their milking and mothering abilities, and their low birthweights,” Stephanie explained. “My husband and I both have town jobs, and growing up my parents worked in town, so they needed cattle they didn’t have to watch 24/7, cattle that had no problems calving, even the heifers. When the Salers calves are born, they get up and they start nursing, and grow like weeds.” She added that Salers also work well in crossbreeding operations, bringing their low birthweights and high maternal traits to other breeds. The family has both fall and spring calving, with the registered herd being mostly spring calves for show cattle. Matthew has shown cattle for the last five years or so and has held leadership positions in the American Salers Junior Association. Stephanie and Shawn are in the process of building their own herd, so they retain most of their heifers, focusing on the bloodlines of some of their older females that have been in the family for many years. Shawn had no agriculture or farming background prior to marring Stephanie, but she said he quickly grew to love the lifestyle and is very involved in the cattle operation. Stephanie and Shawn recently moved to her grandparents’ former home, which is only a few years away from becoming a Century Farm. Although there was still some cold nights a few warmer than average days this past week took some of the frost out of the ground and made the ground soft on top for those trying to feed or get around. Some feeding is taking place but nothing in the way of full diets yet as most still have some stockpiled grazing available. Hay movement continues to be slow other than some equine owners looking for a few small bales at a time. Hay supplies are moderate with ample supplies being offered for sale, demand is light and prices are steady. Cheese: Barrels closed at $2.1850 and 40# blocks at $1.8425. The weekly average for barrels is $2.1650 (-.1060) and blocks, $1.8455 (-.0855). Fluid Milk: Milk production is mixed across the regions of the U.S. Outputs are picking up in the Northeast, Arizona, Florida and the mountain states of Idaho, Utah, and Colorado. In California, the Pacific Northwest and New Mexico production remains stable, whereas in the Midwest, it is steady to lower. Aside from the Northeast and Florida, where bottled milk demands are increasing, orders are generally stable to declining in the other regions. The holiday dairy product production schedules are keeping some processors busy and causing increases in Class II milk requests in some areas. Cream availability is mixed in the Midwest and West. Some loads of cream continue to move from the West to the Midwest at competitive prices. Demand is unchanged in the East, but variable in the West. Dan Bruemmer expanded his poultry and egg operation after his retirement Dan Bruemmer dreamed of having of farm since he was a child. He has turned his love of the land into a profitable business, raising free-range and antibiotic-free chickens on his 180acre farm near Dixon, Mo. The farm sets back off the road, under shade trees, and boasts a large one-story house Dan built himself. But the main attraction is the chickens. They roam at will, pecking the ground, clucking, and
Leonard Wood as a civilian employee, overseeing a $30-million budget as a supply purchaser for the Engineering School. Since retiring five years ago, Dan has expanded his flock of birds, delivering eggs people living on Fort Leonard Wood and to homes in Rolla, Mo. On most Saturday mornings, he and his eggs can be found the farmer’s market off Bishop Avenue in Rolla. Dan sells about 60 dozen eggs a week. He also manages In addition to his egg business, Dan Bruemmer is the manager of the farmers market in Rolla, Mo. He also raises cattle and grows peaches, apples and blackberries.
All of Dan’s chickens are antibioticfree and are fed MFA egg pellets and corn, along with “whatever they can find on the ground.” The chickens are turned loose to graze in the afternoon. “If I turn them out in the morning, chicken hawks will get them,” Dan said. At night, the birds retreat to the safety of their chicken coop. Automatic doors keep predators away, though racoons eliminate some birds. Dan’s chickens are with him for life, and usually die of old age, unless a predator gets them first. In addition to raising chickens, Dan owns a few black Angus beef cattle. He

Wife Marie helps with some of the chores, including gathering eggs when her husband wants to go fishing. Fiduciary vs. suitability standard It’s important to note that there’s a clear distinction between investment advisors who are fiduciaries and broker-dealers who need only to follow the suitability standard. The suitability standard only requires brokerdealers to provide advice and direction that is considered suitable at the time. It doesn’t require that they prioritize their clients’ best interests in the long-term, and it doesn’t require they make recommendations irrespective of their potential commission. What are the particular areas a fiduciary can be helpful in? Estates and trusts are key areas where it’s particularly helpful to work with a fiduciary. Accounting for estates and trusts can be extremely technical and require excellent recordkeeping and tracking. Fiduciaries must be able to demonstrate through proper accounting that they have handled and managed the estate in an accurate, fair and unbiased manner. If an individual is lacking in knowledge or organizational skills, they are at risk for liability. Tax planning is also a necessary expertise; it’s imperative that an estate, trust or any taxable portfolio is run in a tax-efficient manner. Fiduciaries must understand how their actions will impact the tax liability on estates or trusts and the beneficiaries. This includes how assets are invested and distributed as trusts are subject to different tax rates and laws than individuals or corporations. A professional can adeptly advise and maneuver through these technical and sometimes obscure areas. It’s their responsibility to be experts and to stay abreast of changing laws. Can I afford to work with a financial advisor who is a fiduciary? Employing a professional fiduciary is cost-effective, and something you should think about even. Your immediate reaction may be that it’s more expensive to hire a fiduciary to handle everything, rather than seeking individual counsel from different experts as needed. Understanding Macronutrients By Klaire Howerton
Proper macronutrient management is critical for livestock nutrition When thinking about and developing livestock nutrition programs, producers should bear macronutrients in mind. Macronutrients are, by definition, nutrients required in large amounts. When looking at livestock nutrition, water, energy and protein are essentials.
Water
Dr. Shane Gadberry, ruminant nutrition specialist with the University of Arkansas Cooperative Extension Service, explained that water is essential and required in large amounts, but often taken for granted because livestock often have free access from a pond, tank or stream. If animals are not drinking enough water, either due to an insufficient supply or a contaminated water source, their feed intake, productivity and overall health will rapidly decline. According to the Noble Research Institute, a beef cow can drink up to 5 percent of its body weight per day; a high-producing dairy cow, up to 20 percent.

The amount of this macronutrient in livestock feedstuffs is derived from total digestible nutrients (TDN) found in fat and carbohydrates. “Cattle get the majority of energy in the diet from carbohydrates, primarily fiber,” according to Dr. Eric Bailey, Beef Cattle Nutrition Extension Specialist with the University of Missouri Extension. Since fiber and forage provide a great deal of energy, the quality of the forage animals are eating should be determined and addressed. Knowing the forge quality and the amount of energy it is providing will ensure that animals get enough of this macronutrient year-round. “Energy deficiencies often occur in winter because stored forages can be low in energy while production and environmental conditions ramp up energy needs during this time,” Gadberry said.

important for microbial proliferation in the rumen. “The combination of feed protein and microbial protein for ruminants take care of protein turnover in maintenance along with protein deposition in growth and fetal development,” he said. Again, producers need to consider the amount of the macronutrient in the forage they are feeding. Fescue hay often has adequate protein. “Tall fescue hay is unique relative to other forages used for hay in that energy is often limiting, but not protein,” Bailey explained. “Many of you have heard or seen article after article encouraging feeding supplemental protein to cattle when feeding hay. There is a lot of poor fescue hay put up around this state with 8 to 10 percent crude protein, which is not significantly limiting to cattle, depending on their stage of production (lactation, pregnancy, etc.). The reason protein supplementation is talked about frequently is that in warm-season forage systems, hay crude protein will commonly drop below 6 percent. When forage crude protein gets that low, it slows the rate at which rumen microbes ferment feed. When the rate of
fermentation slows, feed stays in the rumen longer and they eat less overall.”
Putting It All Together
Livestock water supplies should be evaluated to ensure proper water intake. If producers suspect a contaminated water supply, testing should be done right away to determine the contaminate and a course of action. To ensure enough consumption of protein and energy, producers need to evaluate the levels of both, because if the amount of macronutrients in the nutritional program is found to be lacking, producers will need to provide an appropriate supplement. “Assessing forages for nutritive value is very important as these conditions vary from farm to farm,” Gadberry said. “If the goal is to feed livestock to a target level of production, it is important to both understand nutrient requirements and nutrient supply. Putting the two together can help determine if and what is most limiting.” County extension agents can assist producers with forage testing, analyzing feedstuffs for nutrient composition and interpreting results.

Fescue Foot By Klaire Howerton
Causes, treatment and prevention of the disease Tall fescue is a commonly utilized forage in the Ozarks. While fescue has plenty of pros in its favor, it also brings a few cow-health related cons to the table, such as fescue foot. What is it? “Fescue foot refers to a disease condition of the hooves of cattle that is associated with consuming endophyte infected tall fescue,” Dr. Craig Payne, veterinarian with the University of Missouri Extension, explained. “Cattle may appear lame or in severe cases, a hoof, or hooves, may become gangrenous and eventually sloughed.” What causes it? The condition is caused by the culprit that is responsible for more than one fescue-related livestock health issue – endophytes. “Endophyte in tall fescue produces a class of compounds known as ergot alkaloids,” Payne explained. “At sufficient levels of consumption, these compounds cause vasoconstriction and damage to capillary endothelium, which leads to decreased blood flow in the distal extremities. The rear hooves, particularly the right, are most susceptible, and cold environmental temperatures contribute to the severity of lesions.” Cold temperatures contribute to the manifestation of the condition, as does fertilizer. “Spreading extra nitrogen fertilizer in the fall to boost grass growth also boosts production of toxins,” according to Craig Roberts, agronomy field specialist with the University of Missouri Extension. Treatment options. Fescue foot is an unfortunate condition, as there’s not much that can be done. “Treatment options are limited and primarily consist of removing the animal from the source of alkaloids, or vice versa, and providing supportive care as recommended by your veterinarian, antibiotics and/or anti-inflammatories for example. Severe cases may warrant euthanasia,” Payne explained. DECEMBER 2, 2019
How can it be prevented? Prevention is the best course of action when it comes to fescue foot. Payne advised prevention consists of limiting exposure to potential sources of alkaloids. If endophyte tall fescue is the source of the problem, it may be necessary to renovate your pastures, inter-seed legumes, or adopt some other management practice to reduce exposure. Other preventive measures include not allowing cattle to graze fall-grown fescue too short (recent research shows most toxins in the fall stay in the lower two inches of the fescue plant), feeding hay during fall cold snaps, leaving stockpiled fescue alone until about January (the toxins will have decreased by this time), and implementing management intensive grazing practices. “With rotational grazing, cows are moved before they grub grass into the ground,” Roberts said. Producers are encouraged to reach out to their local extension offices regarding fescue foot issues.

Developing Heifers on Pastures By Klaire Howerton
With plentiful forages in the Ozarks, experts say pasture is prevalent over dry lotting There are generally two schools of thought when it comes to the development of replacement heifers – developing them on pasture or developing them in a dry lot situation. Out of the two, pasture developed replacement heifers seem to be more common in the Ozarks. In this part of the country, grass is plentiful, which makes developing replacement heifers on pasture an economical option. “My perspective is that in our environment where we have the capability to grow a lot of forage for much of the year, that’s almost always going to be the cheapest and best fit for most operations,” Andy McCorkill, livestock field specialist with the University of Missouri Extension, said. “It is generally accepted that heifers should be developed as closely to the way they will be managed as cows as possible. We do have to consider they are still growing, and they need a little TLC to meet that growth need.” Some supplemental feed can be given to pasture developed heifers to help them along. There may be situations where producers might have to consider developing heifers or partially developing heifers in a dry lot scenario, such as during a drought or if pasture space is limited. “If dry lotting is a must, it’s still advisable to utilize a high-forage diet, remember, we are developing heifers, not finishing cattle for slaughter,” McCorkill said. “A target of somewhere around 1.5 pounds of gain per day is what you want to shoot for.” There have been studies done on range development versus dry lot development for heifers. The South Dakota State University Extension Antelope Range and Livestock Research Station conducted a research project that compared how heifers developed in the two respective systems performed. The results of the

study showed the range-developed heifers gained more weight per day and were heavier by the time both groups reached their target breeding weights. Dry lot-developed heifers lost weight, at first, when they were turned out onto grass, possibly due to underdeveloped grazing skills that the other group already had in place. Another South Dakota State study conducted by Dr. George Perry, SDSU Extension Beef Reproductive Management specialist, showed that developing replacement heifers in dry lot following weaning can have an impact on their grazing behavior which can affect their ability to ingest forages efficiently during the following grazing season. This abrupt change in nutrition following breeding has negative effects on pregnancy success, embryo quality and performance of the calves in utero. Regardless of which method is used to develop replacement heifers, most experts agree that when heifers reach 55 to 65 percent of their anticipated mature weight, they are ready to be bred. Each end of that weight range can have some different benefits. “It is a bit of a tradeoff,” McCorkill said. “You’ll have more feed costs at 65 percent of mature weight but more heifers should be cycling. On the other hand, staying towards the lower end of the range will help naturally select the more fertile heifers in the group.” Even after evaluating both development systems, some producers may opt to just purchase heifers instead. “For many operations, it winds up being more economical to buy quality replacements than it is to raise them on your own,” McCorkill said. “However, there is a lot of personal satisfaction that comes out of seeing the progress in your herd over the years and you always know what you have and how the heifers were developed if you do it on your own.” DECEMBER 2, 2019
