W
ith a career that includes running an awardwinning beauty brand, writing bestselling books and appearing on TV, prepping stars such as Natalie Portman and Kate Beckinsale for the red carpet and creating models’ make-up for Fashion Week, it’s no wonder that Bobbi Brown values her home life. In a spacious house in New Jersey, near New York, Bobbi spends precious spare time with her family – husband Steven and three sons – cooking, relaxing, reading and watching TV, snuggled up in her favourite room, the bedroom. Her home is a timeless American classic, full of gilt-framed portraits, Ralph Lauren furniture, aged-leather sofas and homely touches, like wicker chairs with cotton ticking covers and log-filled baskets. M y f a v o u r i t e p l a c e i n t h e h o u s e i s M y b e d – it’s the only place that I get to have time by myself. Even though I love my job, it’s constant. I’m most content when everyone’s at home; all my family [Bobbi has three sons: Dylan, 19, Dakota, 17, and Duke, 11] are tucked away in their bedrooms and the door’s closed. I adore my bedroom. For a real indulgence, I take a glass of red wine and some dark chocolate into my bed. I regard my bedroom as my haven. I have a big, dark walnut Ralph Lauren bed with tables on each side and French doors opening on to the back yard. I get into bed with a basket of magazines and books and put the TV on, and then exhaustion hits me and I instantly fall asleep. i learnt early in My career that as long as i put My f a M i l y f i r s t , everything else would be fine. At the beginning, it was
difficult trying to build a company while coping with babies crying, but it’s rare that I don’t make one of my sons’ important dates. School events, teacher conferences… they all go on my calendar straight away. the phone has to stop ringing with work calls in M y h o u s e b y 6 p M . I leave my office in New York around 4pm so
that I can be home by 5pm, and have dinner by 6pm. I don’t want to deal with business when I’m feeding my family. As much as I’d like to gab on the phone with the girls from work at night, I don’t. It’s important to keep work and home life separate. t h e k i t c h e n i s t h e f a M i l y h u b . My husband, Steven, would love takeaway every night, but I do cook once or twice a week and we’ll all eat out on another night. It used to be in a bar in Kansas and they drove it up for us, all for $150! I found my old louIs vuItton trunk In a lIttle shop I n e n g l a n d . I was on my way to the airport about eight years ago
when my husband called me, saying, ‘You’ve got to come to this store.’ I showed up at what looked like this clunky little shop, but it was full of vintage Vuitton – I love its character. m y h u s b a n d a n d I f I g h t f o r w a l l s p a c e . He collects antique pictures of dogs, while I go for portraits. Steven keeps buying more, especially at auction, but we’re running out of space and, as much as I love dogs, I don’t want a whole house of dog pictures. there’s nothIng worse than havIng damp, messy t o w e l s a l l o v e r t h e f l o o r , so I have a tumble dryer in my bathroom. There was no place that was good enough to have a towel rack, so we came up with the idea of putting a tumble dryer into the wall. Now, I always have a warm towel for when I get out of the bath, and then I can just sling it back in there afterwards. f I v e d a y s a w e e k , I g e t u p a t 5 . 3 0 a m . I make some coffee

and watch the news on TV, then I go walking for 40 minutes with my neighbour and the dogs. It’s my social life, really, and I love to keep healthy. I also do yoga once a week and weight training three times a week – my trainer comes to the house. By making an effort to exercise and eat well, I am able to have two jobs – be a business woman and a mother and wife. I divide my time between my office and my home and this leaves time left over for me. I have a photo album for every year, sInce my w e d d I n g t o s t e v e n , 21 years ago. In them, I record everything in
our life. I especially love the older ones, before digital photography, so it’s not just the ‘good’ pictures. All of the goofy ones are in there, too. One perfect picture doesn’t tell the whole story, like a bunch of snapshots can. My husband never looks at them – he’s not one of those fuzzy, emotional guys – but every year on my birthday, I make him. generally, I tend not to stress about work Issues. I really do try to leave my work issues at the office at the end of the working day so that I’m relaxed and available for my family at home. Of course it’s impossible not to worry or stress sometimes, but I tell myself that whatever work-related issue is bothering me, will still be there in the morning. I dIdn’t thInk of becomIng a make-up artIst untIl m y f I r s t y e a r o f c o l l e g e . My mother and I were having a ‘careers’
chat. She asked me, if it was my birthday and I could do anything I wanted, what would I do? I realised that all I’d really want to do would be to go to Marshall Fields [an American department store] and play with make-up all day long. we lIve In a socIety where everyone thInks that b e I n g ‘ p e r f e c t ’ I s g o I n g t o m a k e t h e m h a p p y , but there’s
no such thing as perfect. I’m scared by the people young girls feel are role models today. The sort of girls like Paris Hilton and Lindsay Lohan are not people whose lifestyles you should want to emulate. I d o w e a r m a k e - u p m o s t d a y s , but on Sundays it’s just a touch of concealer. I feel much better if I just do a little something. If I had to have a desert-island beauty product, it would be sunscreen, of

course, but if you told me that the scenario was more, ‘You get off the plane in Paris and you can only have one item of make-up’, then it would have to be concealer. Beauty is aBout character, confidence, clear skin, B r i g h t e y e s a n d a s t y l e . It doesn’t matter how skinny women are,
how tall or small, it’s about being comfortable in their own shoes. I find that a lot of women try too hard – they don’t look confident, they just look stressed out. Women who are strong epitomise beauty to me. i’ve always Been pretty low-maintenance with
m a k e - u p , but clothes can take me ages. It can sometimes take me a few
pairs of jeans before I decide on the right ones. Maybe that’s because my weight fluctuates daily, depending on my water intake. it’s more important to Be comfortaBle than to Be f a B u l o u s . I like comfort, quality and simplicity. If I had to save one
thing from my closet in a house fire, it would be my old Prada loafers. I get caught up with the colours; the water, shells and sand-washed shades. the last thing i ever want for my Birthday is to Be s e n t f l o w e r s . I spent my last birthday answering the door all day.
They’re such a waste of money. I’d rather my friends sent a cheque to charity of my behalf. t a k e c h a r g e o f y o u r s e l f . Instead of fighting the body you have, accept it and make the most out of it. Focus on being healthy, strong, and fit. Commit to making smart food choices, drink water and exercise regularly. This requires work and it’s not a quick fix, but you’ll look and feel better over the long term. We spend a lot of energy feeling bad that we don’t look like we used to, instead of appreciating what we do look like. It makes no sense to obsess that you don’t look 30 now that you’re 40 because at 50 you’ll look back at photos from 10 years ago and realize how young and fresh you looked. Stylish, unique and carbon-free, H&I took a peek behind the doors of Birmingham’s first zero-carbon home to get a glimpse of what the future looks like WORDS BY CHLOE BEST

On an otherwise unassuming suburban street of Victorian semi-detached homes, there is one house that stands out from the rest. Solar panels line the roof, and a modern extension peers over the other two-floor homes. This is the first zero-carbon home in Birmingham, and the first in the UK to incorporate an existing building. Home to architect John Christophers, the design has already won an award for architectural excellence from the Royal Institute of British Architects (RIBA) as it was said to be “full of quirky, delightful and well considered details and is a robust and thoughtful design of exceptional quality”. Furthermore, it was short listed for the RIBA Manser Medal 2010 for the best new house in the UK in association with HSBC Private Bank. Impressive, considering the zero carbon status was achieved with a budget of about £300,000, little more than the cost of a regular new-build property (a typical housing association new-build costs £120 per square foot as opposed to £150 per square foot for Christophers’). John is obviously delighted with the acclaim his zero-carbon home has received, saying: “Often the medal has gone to a very expensive house in London so even to be on the shortlist is very good news for Birmingham. We hope the publicity will make more organisations and individuals realise the potential to make our old buildings energy-efficient.” So what makes this renovated Victorian home so special? The 2,000 square foot property boasts four bedrooms, an open plan kitchen and studio loft, living and dining areas. This may not sound particularly remarkable, but it is the thought and planning that has gone into making every last aspect of this home free of carbon emissions that is truly impressive. John spent a year planning and designing the project out of work, and a further year on site before the renovation was complete. Starting at ground level; the new part of the building was constructed on unfired hydraulically compressed earth blocks, which act like a natural air-conditioning system, absorbing moisture when it’s too humid and giving it out again when it’s too dry. The interior floors are made from rammed earth dug from the foundations of the house mixed with red clay. This natural floor is also fundamental to the heat in the house and keeps the family warm in the winter and cooler during the summer. Oiled and finished with beeswax, there is no need for high maintenance vacuuming or cleaning, thus saving electricity and water. The walls, windows and doors have all been insulated to keep the house airtight and prevent energy wastage and heat escaping from the house. A draught lobby on the front of the house has a door and screen made from ‘Mykon’, a lightweight double skinned material that filters and reflects light into the house, and Warmcel 500 insulation is used to line the roofs and inside of the front wall. This is manufactured from 100% recycled waste newspaper, highlighting just how simple it could be to insulate your own home. Mixing 19th century architectural aspects with the 21st century eco-friendly technology gives this house a real character, and there is a story behind a lot of the materials used throughout the home. The Canadian Honeydew maple staircase was once the floor of an old silk factory before being lovingly restored, and some of the bricks used to construct the extension were reclaimed from a demolished local garage. Recycled glass recovered from household and commercial waste forms the bathroom floor and kitchen work surfaces, an innovative reuse of resources that otherwise would likely end up in landfill sites along with 2.5 million tonnes of glass in the UK each year.

‘We have no fuel bills and we are actually paid for all the electricity we generate’ Power predominantly comes from renewable electricity generated by solar panels on the roof. With 35 square metres of photovoltaic panels covering the roof of the property, the Christophers’ generate enough energy to supply their own house and also act as a mini power station, with any surplus energy exported to the National Grid. For every kW of power the home generates, including the energy they use themselves, the family are paid 41.3 pence – an income that will soon repay the extra expenditure they had to make their home carbon neutral. This is what John describes as the biggest benefit of creating the carbon neutral home, saying: “We have no fuel bills and we are actually paid for all the electricity we generate, so we just had a cheque for £1200!” There doesn’t have to be strong sunlight for the solar panels to generate electricity, and they continue to prove effective and powerful in heating the home throughout the winter. “Like solar-powered calculators, the panels generate electricity when daylight falls on them – it

doesn’t have to be bright sunlight,” John explains, “All the heat that goes into the house also helps: sunshine, cooking, lights, computers, cooking, having a shower, even heat given off by people. The electric and hot water solar panels help. We expect that for about five or six weeks of the year we will need a little extra heat from our wood-burning stove.” The house is certainly a suntrap, with five skylights in the roof. Many of these, along with the windows, have mirrored linings so splashes of sunshine illuminate the whole house and limit the need to have lights on so often. This zero-carbon home is surprisingly aesthetically pleasing; the fusion of Victorian and modern influences works well and has a lot more charm than many new builds. However this isn’t the reason that John chose to develop an existing house rather than build a new home: “By 2050, 87% of us will still be living in the homes which we see around us today, so a small number of very low energy new homes won’t make a big difference. We wanted to take a 170-year old ordinary two-up, two-down Birmingham terraced house and see how far we could go.” “No-one else has yet tried to reach zero carbon standards with an old house, but we have shown it can be done. If even some of these ideas were rolled out on a large scale they would make a huge difference.” Of course many of us don’t have the skills or resources to completely renovate our own homes to such lengths as the Christophers, but there are simple steps one can take to make a home more eco-friendly. John advises to aim high: “Start with draughtproofing, very good insulation, and air-tightness. Remember there are savings to be made if you can get as far as doing away with a heating system altogether, but be prepared for hundreds of visitors!” Indeed, the Christophers’ new home has attracted lots of attention, with people “amazed and inspired that we have done it, especially the example it gives that our homes don’t have to consume resources, they can actually generate them…” John is passionate about the environment and is keen to encourage others to do the same: “Despite oil companies trying desperately to argue the opposite, global warming is a reality,” he says. “It will affect our children and future generations far more than us, and I think they will rightly point to the last thirty years and ask, why was nothing done for so long when you could see this was happening?” While he doesn’t currently have plans to build any more zero-carbon homes, John and his colleagues at Associated Architects have designed a string of zero-carbon vicarages that are going to be built by the Diocese of Worcester, and are hoping that other local councils, developers and housing associations will follow suit. Looking at this fantastic, futuristic home, the benefits of living carbon free are evident. For all the complex and revolutionary technology that helps to keep this home carbon neutral, it is first and foremost a family home, and is summed up simply by its proud owner - “Warm, sunny, tactile, magic…the future!”

In this exhibition she questions the reasons behind the continued occupancy of these “primitive huts” by the economically displaced of the Caribbean, and their continued poverty. Made from recycled timber and found metal, these pieces each with their own plinth pay tribute to the tenacity, creativity and resourcefulness of the people who lived, and still continue to live in such structures. These structures can be traced back to slavery with little variation in design, poverty continues to be handed down from one generation to the other with little hope of escape. This winter Ikon Gallery presents the first retrospective exhibition in the UK of work by New Zealand-born artist Len Lye (1901-80). The exhibition features film, sculpture, painting and drawings that are often influenced by indigenous antipodean traditions and convey Lye’s belief in the possibility of ‘the best in human experience’ for all. Lye’s early career began in filmmaking, using a distinct camera-free technique by painting colour directly onto the celluloid film. Several of these films including Rainbow Dance (pictured) will be exhibited at the gallery alongside his later works.

arcelona is renowned as a fascinating culturally rich city for good reason. There are so many things to explore there that a weekend visit just doesn’t seem long enough. Luckily many of the biggest attractions were easily reached from our first hotel - The W Barcelona. A short walk from our doorstep and we were in La Barceloneta, a busy fisherman’s village which leads to the Olympic Village’s beaches, water sports and some acclaimed restaurants that sit along tree-lined boulevards. A short walk in the other direction took us to Ciutat Vella, the old city where one can explore gothic cathedrals, Roman buildings and a maze of bustling streets. We took a stroll up La Rambla, a mile-long street dotted with living statues, artists and the brilliant La Bouqueria market. Frenetic and commercial, with more than enough to keep us entertained for hours, this was one of our favourite spots in the city. It links to Barri Gòtic, the original old quarter as well as La Ribera where galleries and boutiques revolve around the Museu Picasso. Commemorating the artist’s heritage in Barcelona, the Museu Picasso holds hundreds of pieces of art by Picasso, from his adolescent sketches to more mature cubist works. If you are hoping to see his more well known portraits then you might be disappointed, as extensive as it is, the museum is by no means a comprehensive display of Picasso’s art but is a must-visit for fans of the artist and art lovers alike. The awe-inspiring architecture of Barcelona’s buildings is one of the things that attracts millions of visitors every year, and there is one name that is synonymous with many of the most magical buildings. Antoni Gaudi was a Catalan architect who worked during the Modernisme period and is the man behind both the incredible Sagrada Familia and Park Güell. We chose to pay the entrance fee to get the chance to see the Sagrada Familia up close. With access to the basement located museum and incredible views across Barcelona, it was well worth the entry fee. The cooler temperatures and views from the Montjuîc Mountain were tempting, but instead we decided to take things a little easier and get some retail therapy at Barcelona’s fantastic shops. Alongside recognisable Spanish labels Mango and Zara, we visited designer boutiques and picked up some unique Spanish threads. After a long day sightseeing we were glad to return to the lavish comfort of our room at the W hotel. This avant-garde building is more than just a hotel, it is a whole resort with 26 floors, 473 guest rooms, world-class restaurants, bars, a business lounge, swimming pool, spa and access to its own private stretch of Playa Sant Sebastia beach. The W lends itself to a long stay, with such comforts that it would be too easy to never leave the complex. We soaked up the sun by the WET infinity pool while staff catered to our every need from sunglasses to sangria. At the W, your every whim is indulged thanks to the Whatever/Whenever service

they provide. A relaxing poolside massage? An expertly mixed cocktail? Whatever your request, the W staff will make it a reality – as long as it’s legal! Voted Best Hotel Architecture in Europe by Villegiature, the W Barcelona was designed by Spanish architect Ricardo Bofill and is a modernist construction with a reflecting façade of silvered glass. My room had mesmerising Mediterranean views from the floor-to-ceiling windows, and was incredibly comfortable with a stylish elevated signature W bed, a chaise lougue, desk and contemporary state-of-the-art entertainment system. In contrast our room at The Claris Hotel in central Barcelona had a more classic feel with fine wood panelling and luxe leather sofas. The Claris is equally as grand as the W Barcelona but provides an entirely different experience of the city. Art aficionados will love exploring the hotel’s own Egyptian art museum, as well as the original pieces of fine art that adorn walls in both guest rooms and communal areas. Located in the Palau Vedruna, a palace dating back to the beginning of the 20th century, Hotel Claris certainly has a palatial feel and emanates elegance. It is home to three fantastic restaurants, a swimming pool, solarium, gym, sauna and business centre, so much like the W, one is almost unwilling to leave the grounds. The hotel is located in the heart of the Eixample neighbourhood, which is the hub of Barcelona’s nightlife and stunning architecture including Sagrada Familia and La Pedrera, another of Gaudi’s masterpieces. Of course a trip to the Mediterranean is incomplete without sampling some delicious tapas and sangria. Our favourite restaurants were located in the Olympic village of La Barceloneta and overlooking the beach. Can Majó was fantastic for fresh-from-the-nets seafood including oysters and scallops in rich paellas or light soups, while Kaiku offers sophisticated takes on classic dishes. It is well worth a visit, despite a less impressive façade than some of the other seafood restaurants in this area. you’re sure to find what you’re looking for. Meanwhile Diobar is a popular nightclub in the unlikely location of the basement of a Greek restaurant. From Thursday to Saturday nights the cosy venue is transformed into a wild club that plays funk and soul classics until late into the night. If the lure of your lavish design hotel has you a little reluctant to venture out at night, it doesn’t mean you can’t still have a good time. The W Bar at The W Barcelona is a chic venue to see and be seen as you sip a drink from the W signature cocktail list and are entertained by local DJs, or venture up to the 26th floor where you can party at the exclusive Eclipse Bar with an incredible moonlit outlook over the Mediterranean. Meanwhile if you are staying at the Claris, make a visit to La Terraza del Claris on the top floor of the hotel. Similar to the W Bar, the Claris’ bar gives incredible views across Barcelona and is located next to the hotel’s beautiful rooftop swimming pool. Live music, ‘Claris fashion cocktails’ and some culinary delights all help to make this one of the hottest spots in the city. If you are looking to stay somewhere steeped in a little more history, then you would be hard pushed to find anywhere better than the Staying Cool 39 Steps apartment in the Raval. Located in a 200-year-old building with 39 authentic narrow steps leading upstairs, the apartment is unremarkable to look at from the exterior, but inside it is a stylish, comfortable and as the name suggests, cool apartment that fuses its 19th century origin with modern comforts including free wifi, an iPod player

and well-equipped kitchen complete with dishwasher and espresso machine. Take note that this traditional building doesn’t have a lift, so getting luggage up the iconic 39 steps may be a struggle but once inside the apartment it is totally worth the effort. We had fantastic views from our Juliet balcony over the Raval, home to La Bouqueria market, galleries and fantastic restaurants. Indeed, we found that at the Staying Cool apartment we were ideally situated to explore the old city as well as the Eixample area. Combining the lavish feel of a chic design hotel, with the independence of a fully equipped apartment, it provided another ideal base from which to explore Barcelona. We were situated within walking distance of La Rambla, one of our favourite sites in the city. Further attractions in Barcelona include Park Guell, another Gaudi creation and a great picnic location, and a tour of Camp Nou, the home of Barcelona FC will appeal to football fans. Travelling around the city is made easy thanks to the extensive underground metro network, and most of the landmarks are within walking distance of each other. The only concern is to take care of belongings when walking around the city as pick pocketing is rife and the thieves are skilled in taking possessions without you even realising. However being aware and keeping an eye on possessions will prevent theft from ruining your trip. Whatever it is that you want from your city break - relaxation by the beach or exploring monumental architecture and art, you are sure to find that Barcelona ticks all the boxes. Mediterranean temperatures, Catalonian culture and amazing art ensure that it is a must-see city! winter '10

So many people visit Thailand and never see beyond the beach resorts or Bangkok, but you don’t have to go far to really discover the authentic side of the country.

scape to Thailand, where the diverse mix of pristine beaches, ancient temples and deluxe spas will remedy any winter blues. With its white sandy beaches, rich culture and warm hospitality, it is no wonder that Thailand is often referred to as a golden land. A backpacker’s wonder and a sun-seekers paradise, the country welcomes around 11 million tourists each year. Arriving in Bangkok, it seemed as if all of these travellers were there at the same time - bustling pavements line the roads where tuk-tuk taxis weave erratically through the traffic and the air is intensely humid. After an almost 24 hour journey from Birmingham International Airport via Dubai, this welcome was overwhelming to say the least, but after a quick shower and freshen up we were eager to explore. Like you would expect from all great cities, Bangkok never sleeps. We visited the main tourist area at Khao San Road, where market stalls sell their bargains; copies of designer jewellery, clothes and DVDs are rife. Street vendors serve the tastiest food in the city, rustling up generous portions of the signature Pad Thai noodles, Spring Rolls and pancakes fresh for less than 50 baht (around £1). Eating and drinking is inexpensive everywhere in Thailand, to spend more than £5 on a meal was an extravagance and probably unnecessary at that. Popular alcoholic drinks include the Thai Whisky SangSom and Chang or Singha beers. Thailand is renowned for its lively party atmosphere with the Full Moon beach parties attracting people from
all over the globe each month, but it also has a devout Buddhist faith, and citizens are devoutly patriotic to their King Bhumibol Adulyadej (Rama IX). A trip across Bangkok will take you to the cultural quarter which is home to the stunning Wat Arun temple (www.watarun.org), a Buddhist temple that lies on the west bank of the Chao Phraya river. Translating as The Temple of Dawn, Wat Arun Rajwararam is probably Bangkok’s most memorable landmark and looks fantastic from the river, but even better up close when one sees the intricate work that has gone into decorating it. The prangs of the temple are studded all over with bits of broken porcelain, ceramic shards and tiny bowls that have been formed into colourful flowers. Subtler than the architecture on other Thai temples, the decoration is equally as stunning. We climbed up the steep steps to the platform area, which offers fantastic views across the city and to Wat Phra Kaeo, Wat Pho and the Grand Palace, that are on the east side of the river. The holiest Buddhist site in Thailand, Wat Phra Kaeo dates back to 1782 and houses the Emerald Buddha, a tiny figure reputed to have been created by the Gods in India. For this reason, it is important to be respectful when visiting Wat Phra Kaeo or any other temple; shoulders and knees must always be covered, and when sitting down feet must point away from the Buddha. There are over 100 brightly coloured buildings with glittering mosaics and golden spires in this compound, which leads on to The Grand Palace. Only the northern edge of the Palace is on show to the public and access

is limited to the ground floor weapons museum and surrounding gardens, as the Palace is still used for state ceremonies, but they are well worthy of a visit. The architecture here incorporates Thai and European design influences for a contrast to the temples. To the south of the Grand Palace lies Wat Pho (www.watpho.com), the oldest temple in Bangkok where you can visit the chapel of the Reclining Buddha. This 45-metre-long gilded statue depicts the Buddha entering Nirvana, a common Buddhist motif, and is a fantastic attraction to see up close. After a couple of days of exploring the myriad cultural attractions in Bangkok we were ready to take to one of the other jewels in Thailand’s crown – its beaches. With over three thousand kilometres of tropical coastline to choose from, we opted to see as much of it as possible with a tour of the southern islands, travelling by overnight sleeper train to Surat Thani, before reaching Koh Pha Ngan by boat. Renowned as the home to the Full, Half and Black moon parties, Koh Pha Ngan attracts thousands of party goers at peak times but is surprisingly quiet throughout the rest of the month. With its rugged mountains, dense jungle and commercialized backpackers hangouts at the coast; Koh Pha Ngan is a paradox of traditional Thai customs and more westernised resorts, a fusion of different cultures which proved to be one of my favourite Thai destinations. We stayed at the Sarikantang resort (www. sarikantang.com) with its own private stretch of Leela Beach and gorgeous bungalow accommodation. A five-minute walk from Hat Rin beach, it is close to the evening entertainment whilst still feeling exclusive and peaceful enough if you want to relax. You can expect to stay in luxury at minimal cost in Thailand. Service and cleanliness was second to none here and indeed everywhere we stayed, even on a backpackers’ budget. As you would expect from the notorious party island, the nightlife on Koh Pha Ngan is very lively. Beach parties are not resigned to the special moon parties, but are held every night on Hat Rin beach with DJs, fire entertainers and high platforms for ravers to dance on next to the sea. While we were keen to make the most of the nightlife on the island, we were also taken aback by some of the stunning beaches and other undisturbed areas of tropical rainforest to discover. We travelled into the centre of the island for an incredible Elephant Trek through the jungle. Our tour guide allowed us to feed the elephants before we rode on their backs through the jungle and up to a vantage point across the island. Other trips available on Koh Pha Ngan include the all day Snoop Dogg Boat Trip. This excursion travels around the island on an original Thai long tail boat to see the beautiful Bottle and Thong Nai Pon Nai beaches, as well as giving the opportunity to go snorkelling and swim in Than Sadet waterfall. Not to be missed is a day trip to An Thong National Marine Park, a dense group of 42 small islands strewn across the Gulf of Thailand. The park headquarters lie on Ko Wua Talab (Sleeping Cow Island), where a 430-metre climb takes you up to the island’s peak for a panoramic view across the deep blue sea and the neighbouring islands of Koh Samui and Koh Pha Ngan. The sparkling blue-green water is surrounded by natural rock cliffs and was the inspiration for the setting of the novel and film ‘The Beach’. The next stop on our island-hopping journey was Ko Samui, a large island with golden sands and clear blue waters. For most visitors, days are spent soaking up the sun, indulging in water sports or visiting one of the islands’ many spas. We managed to tear ourselves away from the beach for a day to take an Around The Island tour stopping at Big Buddha beach, where a 12 metre high Golden Buddha stands at the top of 73 steps, and Khunnaram Temple where the body of Samui’s mummified monk sits on display in the same meditation position that he died in over 30 years ago. We also sought brief refuge from the intense heat with a visit to the Ice Bar, (www.baricesamui.com), the world’s only -7˚C tropical themed ice bar, which is decorated with ice elephant and tuk-tuk sculptures. From Ko Samui, we travelled on to Koh Phi Phi Don, one of the smallest and most picturesque of Thailand’s islands. Despite being nearly destroyed when the tsunami struck in December 2004, the island has recovered remarkably. Nearly 70% of buildings were devastated and 2000 people were killed when the massive waves met over the symmetrical bays of Ao Loh Dalum and Ao Ton Sai, but businesses today are thriving as they were quickly rebuilt after the tsunami struck. It is clear to see the legacy this has left on this small island; wooden boats and washed away possessions still litter the jungle area, while the Tsunami memorial area is a chilling reminder of how many lives were lost. Koh Phi Phi Don is a must-visit island, not only because of its history, but also because of its breathtaking scenery and stunning sunsets. No visit to the island is complete without a visit to the Viewpoint, which is a 30-minute trek through the jungle, passing wild monkeys and birds until you reach the cliff at the most northern point of the island. At sunrise and sunset you will be joined by numerous other visitors all sharing the incredible panorama across the two bays. Also a popular party destination, there are a number of beach bars lining the bays, with entertainment

Health and Safety is not much of a concern! Of course there is much more to a night in Thailand than sea, sand and SangSom; dining out is a great experience with the countless vendors offering delicious Thai cuisine, all cooked fresh and served generously. Dishes to savour include Pad Thai noodles, while spice lovers can try the Thai Green, Yellow, Red and Massaman curries among others. While it is enjoyable to dine out in the restaurants, it is often better and tastier to eat from the street cafes and vendors, which is where you will most likely see the locals dining. Other places to visit include Koh Phi Phi Ley, the sister island to Koh Phi Phi Don. It is only a quarter of the size of Koh Phi Phi Don so is generally only a day tripping destination, but after its starring role in The Beach Maya Bay attracts huge crowds to see the idyllic scenery and bright turquoise waters year round. We travelled by boat from Koh Phi Phi Don, visiting Maya Bay and Shark Point, where you can snorkel and get up close to harmless black tip sharks. From there we made a stop to kayak and snorkel at the beautiful Bamboo island and Monkey Beach where families of monkeys play on the beach, before watching the sunset over the island. After touring the southern coast of Thailand we headed back up north and made a visit to the Bridge over the River Kwai. Recognised from the film and novel of the same name, the bridge is in an area called Kanchanaburi, and is a key part of the region’s history during World War II. On the way we stopped at the floating markets of Damnoen Saduak for an alternative shopping experience in a long tail boat. Later on in the day, we visited the Kanchanaburi Tiger Temple, where Buddhist monks reside and you can get up close to tame Tigers. A visit to Thailand is incomplete without a trip to one of the many spas or salons that are open in abundance. From Traditional Thai Massage to Reflexology, one can sit back and enjoy some relaxation after long days sightseeing. I opted for the fish spa treatment, where your feet are submerged into a tank of Garra Rufa fish that nibble away the dead skin. Not for the squeamish, the ‘massage’ gives a strange sensation but does leave feet feeling soft and rejuvenated. Shopping is also fantastic in Thailand - the markets sell everything from clothes and jewellery to exotic spices and ornate wooden carvings, with the already low prices made even cheaper thanks to the customary bartering with the retailers. This can be fun, but exhausting if you’re looking to buy souvenirs without too much hassle! My journey around Thailand was extensive, but by no means comprehensive in seeing all that this magical country has to offer. From the cultural northern cities of Chiang Mai and Chiang Rai to the diving resorts on Koh Tao and hedonistic haunts of Phuket, there is so much more waiting to be seen. Peak season falls from November to March with the high temperatures and mostly dry weather making it the ideal destination for those looking to escape the dreary British winter. With an incredible blend of Buddhist culture, interesting architecture, amazing beaches and great weather all year round, I can’t wait to return.

Sift the flour, mustard powder, salt and baking powder together into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in 50g (2oz) cheese then pour in enough butter milk and the egg to give a fairly soft dough. To ensure a good rise, avoid heavy handling. On a lightly floured surface, lightly roll out the dough to a thickness not less than 2cm (¾ inch). Cut into rounds with a 3cm (1 1/2inch) plain cutter. Place on a greased baking sheet and brush the tops with beaten egg or milk, sprinkle with the remaining cheese and a little cayenne pepper. Pre-heat the oven to 190°C, fan oven 170°C, gas mark 5. Drain the canned salmon, discarding the liquid. Remove any skin and bones, if wished, then break the salmon into chunks. Gently stir the chunks into the tomato pasta sauce. To make the sauce, put the milk, butter and flour into a non-stick saucepan. Heat, stirring constantly with a small whisk until smooth and thickened. Remove from the heat and stir in about half the cheese. Season. Spoon half the salmon mixture into a large baking dish. Arrange half the aubergine slices on top, then spread the remaining salmon mixture over them. Top with the rest of the aubergine slices, then finish off with the cheese sauce, spreading it over the surface. Sprinkle the reserved cheese evenly over the top. Bake for 2530 minutes, until cooked and golden brown. Allow to stand for a few minutes, then serve. Cook’s tip: Make the bakes in individual dishes, if you prefer.

Keralan prawn soup Serves 4
◆ 1 tsp black peppercorns ◆ ¾ tsp mustard seeds ◆ 2 tsp coriander seeds ◆ ½ tsp fenugreek seeds ◆ 2–3 large red chillies ◆ 4 garlic cloves, chopped ◆ 5cm (2in) fresh root ginger, chopped ◆ 4 tbsp hot water ◆ 2–3 tbsp vegetable oil ◆ Small handful of fresh curry leaves ◆ 2 onions, finely chopped ◆ 750ml (1¼ pints) fish stock ◆ 250ml (8fl oz) coconut milk ◆ 250g (9oz) raw king prawns, shelled ◆ 1 tbsp coconut cream ◆ 2 tbsp fresh coriander leaves, chopped ◆ Juice of 1 lime, to taste Heat a frying pan over a low heat. Roast the peppercorns, mustard, coriander and fenugreek seeds for about 30 seconds. Grind the spices to a powder and set aside. Roughly chop the chillies and place in a food processor with the garlic and ginger. Pour in the hot water and process to a paste. Set aside. Heat the oil in a wok or saucepan, toss in the curry leaves and fry for 20 seconds. Add the onions, cover and soften for 10 minutes. Stir in the chilli, garlic and ginger paste and fry for 2–3 minutes, until the water evaporates. Add the ground spice mixture and cook for a further 30 seconds, stirring all the time. Pour in the stock and simmer for 20 minutes. Stir in the coconut milk and reheat before adding the prawns and cooking for a further 4–5 minutes. Add the coconut cream and finish with the coriander leaves and enough lime juice to sharpen.

◆125g (41⁄2oz) (shelled weight) unsalted pistachio nuts ◆1 green chilli, cut in half and deseeded ◆120ml (4fl oz) hot water ◆6 green cardamom pods, crushed and seeds extracted ◆1 small blade of mace ◆1⁄2 tsp coriander seeds, dry-roasted (see p25) ◆25g (scant 1oz) butter ◆2 large garlic cloves, finely chopped ◆Small bunch of spring onions (white parts only), finely chopped ◆2.5cm (1in) piece of root ginger, peeled and finely chopped ◆1⁄2 tsp garam masala ◆450ml (15fl oz) hot vegetable stock ◆100ml (31⁄2fl oz) single cream ◆1 tbsp chopped coriander leaves ◆Salt and freshly ground black pepper

Cook the pistachios in boiling water for 2-3 minutes. Drain under cold running water, pat dry and give them a vigorous rub with a tea towel to remove the skins. Reserve a generous tablespoon for garnishing and put the rest in a food processor. Add the chilli and hot water and process to a rough paste, then set aside. Grind the cardamom seeds, mace, and coriander to a powder using a pestle and mortar. Fry the garlic, spring onions, and ginger, and soften over a medium heat for 2–3 minutes. Stir in the ground spices and garam masala, then add the pistachio paste and stock. Simmer for 10–15 minutes, stirring occasionally. Blend until smooth and stir in the cream and coriander leaves. Garnish with the reserved pistachio nuts roughly chopped.
Watercress soup Serves 4
◆25g (scant 1oz) butter ◆1 onion, finely chopped ◆175g (6oz) watercress ◆3 ripe pears, cored and roughly chopped ◆1 litre (1¾ pints) vegetable stock ◆Salt and freshly ground black pepper ◆200ml (7fl oz) double cream ◆Juice of ½ lemon. Melt butter and cook the onion for 10 minutes until soft. Meanwhile, trim the watercress and pick off the leaves, adding the stalks to the onion with the pears and stock, and season with salt and pepper. Bring to the boil, cover, and simmer for 15 minutes. Remove from the heat and pour into a blender along with the watercress leaves. Stir in the cream and lemon juice, adjust the seasoning. If desired, the soup can be made up to 4 hours in advance and refrigerated until ready.

Fish soup with fennel Serves 4 ◆1 large fennel bulb, finely chopped ◆2 garlic cloves, crushed ◆1 small leek, sliced ◆4 ripe plum tomatoes, chopped ◆3 tbsp brandy ◆¼ tsp saffron threads, infused in a little hot water ◆Zest of ½ orange ◆1 bay leaf ◆1.7 litres (3 pints) fish stock ◆300g (10oz) potatoes, diced and parboiled for 5 minutes ◆4 tbsp dry white wine ◆500g (1lb 2oz) fresh black mussels, scrubbed and debearded ◆500g (1lb 2oz) monkfish or firm white fish, diced ◆6 raw whole tiger prawns ◆Parsley, chopped, to garnish Heat some butter with 2 tbsp of oil and stir in the fennel, garlic, and leek. Fry over a moderate heat, for 5 minutes. Stir in tomatoes, add the brandy, and boil rapidly for 2 minutes. Stir in the saffron, orange zest, bay leaf, fish stock, and potatoes and bring to the boil, skimming off any surface skum. Cover and simmer for 20 minutes. Remove the bay leaf. Meanwhile, heat 1 tbsp of oil with the wine in a large, deep pan until boiling. Add the mussels, cover, and continue on high heat for 2–3 minutes, shaking the pan often. Discard any mussels that do not open. Strain, reserving the liquid, and set the mussels aside. Add the liquid to the soup and season to taste. Bring to the boil, add the monkfish and prawns, then reduce the heat, cover, and simmer gently for 5 minutes, or until the fish is just cooked and the prawns are pink. Add the mussels to the pan and bring almost to the boil. Serve the soup sprinkled with chopped parsley.

First job is to set the beans aside to soak separately over night in cold water. This will make them larger and much easier to cook. To confit the duck legs: This can be done ahead of time and the duck legs reheated when needed. Place duck legs in a tray with deep sides and cover with duck fat (if legs aren’t totally covered top up with vegetable or light olive oil). Cover tray with tin foil (shiny side down to keep the heat in) and cook on 160°C for 1 1/2 - 2 hours. When cooked the skin with have darkened in colour and the meat will be flaky. For the cassoulet: Cook the three types of beans separately in boiling salted water. They should all take 20-30 minutes to cook. When cooked run under cold water, mix and set aside. Slice chorizo sausages and place in a dry saucepan on a low heat. Cook for 3-4 minutes until the fat starts to come out of the meat. Add the cooked beans, chopped tomatoes, green peppercorns and chicken stock. Simmer for 5 minutes and season to taste. Place the cassoulet in a large ovenproof dish with the cooked duck legs on the top. Place the tray uncovered in a pre-heated oven on 180°c for approximately 20 minutes or until the duck is hot in the middle. Just before serving stir in the sliced baby spinach and serve straight to the table. This recipe is great with a bottle of red and some good company.
Roasted winter vegetable tart Serves 6 For the jam ◆ 2 large red onion ◆ 1 tbspn vegetable oil ◆ 2 tbspn balsamic vinegar ◆ 100ml red wine ◆ 100g demerara or soft brown sugar ◆ 20g fresh cranberry or if needs be 1 tbspn of cranberry sauce from the fridge! Roasted Vegetables ◆ Roasted vegetables ◆ 1 large carrot ◆ 1 large parsnip ◆ 1 large red onion ◆ 200g butternut squash (about 1/4 of a squash) Assembling of the tart: ◆ 1 egg ◆ Splash of milk ◆ Puff pastry is the last ingredient! Finely slice the onions, cook on a low heat for 5 minutes until softened. Add all other ingredients setting aside the cranberries for later. Cook ingredients together on a low heat for approximately 10 minutes or until all has thickened and looks glossy in the pan. Take pan off the heat and stir in cranberries. Leave to cool. Peel and cut vegetables all to roughly 1/2 dice. Toss vegetables together in a bowl with salt, cracked black pepper and a drizzle of light olive oil. Roast vegetables in a tray for approximately 15 minutes in a preheated oven at 180oC. Vegetables should be softened and lightly coloured when done. Roll puff pastry out onto a floured surface. Roll to an even thickness of 3mm. Cut squares 10x10cm and place on a greased tray. Leaving a border of 1cm around the edge spread your jam in the middle and top with the cooked vegetables. Whisk together the egg and milk. Using a brush ‘paint’ the border of the tarts lightly with your egg mix. Cook tarts in a pre-heated oven for approximately 15 minutes at 180°C or until the edges of the pastry have risen slightly and turned golden brown. This is nice served with some crispy baby leaves, a twist of cracked black pepper and a splash of balsamic vinegar.

review It had been a while since I had visited The Jam House, the last time being an audience with the fantastic Mica Paris, where the venue was packed to capacity! On this visit to the restaurant we sat upstairs and decided to eat from the very impressive menu. I chose Thai fish cakes as my starter with mouli salad and sweet chilli. This was presented beautifully and tasted just as scrumptious. My husband chose the sweet potato, coriander and feta risotto, roast tomato oil, sweet potato crisps. This was a meal in itself and also looked delicious! With a large selection of both vegetarian and meat/fish mains on offer we chose one of each; my braised chicory tart with goats cheese, wilted spinach, pickled beetroot and orange dressing was really light on the palate with a zesty twist! My partner chose roast lamb neck fillet with flagoulet beans, wild mushrooms and leeks, port wine jus and mint hollandaise. The comfortable Sunday smell of this dish was enough to make your mouth water without even seeing it. For dessert we shared ‘A Trio of Apple’ – apple crumble, apple bavarios and apple tartin. We chose this to complement the wonderful taste of the lamb, and it was more than enough for two people. I’m glad that we decided to visit the restaurant in The Jam House, as it was a great night out. The Mailbox’s newest restaurant Côte Brasserie opened its doors to the public recently, and it definitely has a certain je ne sais quois!
The restaurant offers fuss-free French food in an ultra-stylish setting, located down at the waters edge of the canal. We were given a warm welcome when we entered the restaurant and were impressed by the simple, yet wide range of dishes on offer. Fish lovers will be spoilt for choice with sea bass, cod and salmon available alongside Gallic favourite dish moules, while vegetarians and meat eaters alike are equally well catered for. My starter of smoked salmon with a dill, capers and crème fraiche dressing was generously served with little slices of French toast, while my friend loved the tomato tart from the daily specials menu. A classic main course came in the form of cod goujons with chips and tartare sauce (£10.95), presented perfectly as was the risotto vert (£9.95) a light dish served with grilled asparagus and rocket. Although we were more than full from our delicious first two courses, greed got the better of us and we tucked into the crème brûlée (£4.95) and a tasty crêpe topped with strawberries and Chantilly cream. Piccolino Piccolino is a vibrant up market Italian restaurant and bar, that brings a taste of Italy to Brindlyplace.
Situated just on the charming Oozells Square which provides a peaceful oasis to the usual bustle of the area, Piccolino has all the characteristics usually associated with traditional brasseries. The interior is bright and stylishly designed in tasteful red leather and dark wood, with an inviting bar as you walk in and intimate booth seating. The service is provided by quite a few Italian patrons, who give Piccolino an authentic Mediterranean feel. It was a Monday night when we visited and I was pleasantly surprised by a bustlingambience with many diners. Piccolino’s menus offer a wonderful array of both modern and classic Italian dishes. The beauty here is that they use the finest quality seasonal ingredients for everything, including bread and ice cream which are freshly made on the premises. There is a choice of the usual Italian favourites including a creamy wild mushroom risotto, classic pasta dishes, stone baked pizzas and succulent meat and fresh fish dishes. Try the crispy duck served with honey glazed apples and a red wine sauce which is a taste sensation.
