These days, I feel comfortable in my own skin. In your thirties, you know who you are, you know what suits you and I know that my style has evolved. I don’t worry about being too cool, too funky, or co-ordinated from head to toe. I like to work a classic look with edgy accessories, or a splash of colour. I have a passion for jewellery, especially silver. I don’t feel ‘dressed’ until I’ve got the accessories right, even if that means absolutely minimal ones. I’m an instinctive dresser: it has to feel right for me to be happy. Fashion is all about what mood I’m in that day. As an actress, this even extends to what perfume I feel like wearing: if I want to be ultra-romantic and classic, I’ll wear Chanel; if I want to be sexy, it’ll be Tom Ford or Dolce & Gabbana. It all brings out the essence of who I am that day. Most of my style icons are classics. I love Marilyn Monroe, Jane Birkin, Julie Christie, Kate Moss, and the beautiful Monica Bellucci. Making mistakes with your look is part of growing up. I can look back at outfits I wore in the past and laugh about them. When you’re in the public eye, you have no choice but to have a sense of humour about these things. The trick is to keep evolving: think about what you want to do today and tomorrow. When it comes to shopping, I’m a professional. I kid myself that I’m going to just have a little look, then as soon as I get into the shop the X-ray vision comes out and I’m whizzing through the rails saying ‘yes, no, yes, no, wrong sleeve, right neckline...’. I’m fast and I’m focused, because I know what works on me and what doesn’t. I go in for five minutes and end up losing an hour or four. I like to meet up with friends for coffee so we can show each other our finds, but I do the trying and buying on my own: I love my friends but they mustn’t get in the way of my process! Everyone says it, but I really do love mixing designer with high street. British high street fashion is fantastic, especially River Island and Zara, and some designer prices can be ridiculous. Investment pieces aside, it’s foolish to spend huge amounts on something I know I’ll wear once. I’ll head to Selfridges, Harvey Nichols and Harrods for a good look around: I adore Sass & Bide, Helmut Lang, the Olsen twins’ own label Elizabeth & James, and Yves Saint Laurent. I go to London Fashion Week to support friends in the industry. Increasingly, fashion shows are about colour, music and spectacle, so as a lover of theatre, I’ve really started to enjoy it. I’m looking forward to Style Birmingham Live. I haven’t presented a fashion event on this scale before, and it sounds like it’s going to be brilliant. Women, goodie bags and fashion shows are just up my street! Everyone will be asking where I am and I’ll be off shopping for dresses in one of the stores...! I’m getting married soon and choosing my wedding gown was so difficult. Friends kept asking me what kind of bride I was – traditional, full-on romantic and the rest – but the actress in me means I’m chameleon-like, so to pinpoint one dress was hard! You have to live with the photographs forever, so I decided to forget about all that and just go with the one I felt most gorgeous in. One of the most bizarre misconceptions about me concerns my figure. When people meet me, they often remark on how much smaller I am than the press makes out. As a woman, it’s never nice to feel like you’re being compromised in any way – they don’t do it to men – and if other women buy into it, that’s a shame. It seems an injustice to the women who write that stuff, and anyone

who reads it. If it was accurate, I wouldn’t mind but when it isn’t, it’s frustrating. I work hard to look after myself and I’m happy with who I am.

I’m a total beauty junkie. When you’re in the spotlight, it’s part of your job. Budgets were tight when I was growing up, but my mum taught me to always cleanse, tone and moisturise. She’d say ‘it doesn’t matter what brand you use, as long as you do it’, and I stick to that routine. When I hit 35 last year, I added an eye cream too, and I use Clinique when I get hormonal breakouts. My can’t-live-without products? I love a red or coral lipcolour and Shiseido skincare: expensive but so worth it because it instantly takes away any signs of tiredness. I like spa days but I’m too impatient to properly relax. I’ll go for a deep tissue massage to stretch my muscles, anything holistic with oils or a hot tub treatment. Though I like the results of a good facial, I don’t enjoy it because you have to close your eyes and that makes me claustrophobic!

Body art’s cool and I have a big tattoo on my foot. It’s about individual style, but, like cleavage and one’s midriff, there’s a time to bare and a time to cover up. Tattoos can be really beautiful on the right person and in the right place. Angelina Jolie’s give her classic beauty a fantastic edge.

• London Fashion Week
and I’m focused, because I know what works on me and what doesn’t. Filming Let’s Get Gold was so much fun (ITV1’s new sports talent show which aired in July). A proper entertainment show, it had something for everyone in the family. I was on the judging panel with Freddie Flintoff and Rio Ferdinand, who were hilarious, and Una Healy from The Saturdays. Una and I became real friends, bonding over our wedding talk!

When I’m not working, I’m really casual, running around in Converse, jogging bottoms and a t-shirt with my hair scraped back, but I do enjoy the dressing-up element of my job. It’s a thrill to see how your hair, makeup and wardrobe team can make you look, especially as each person will have different ideas about how to transform you. It’s exciting and I never get bored of that. I don’t have a dream project or ultimate goal. I took time out of my career for personal reasons and I’m just happy to be back doing what I used to. I’m an actress and singer and all-round entertainer, that’s what I’ve always wanted. You have to be honest about what you’re good at, and not so good at, and keep working. I think it’s important to stay grateful and never take any of it for granted. As for cracking America, if it happens, it happens. At the moment, I’m working on new music, and a TV comedy. As you get older, your priorities change and you just want to do great work, wherever that is. I’m happy either way.

They shot to fame after performing their self-penned track Lovesick on Britain’s Got Talent. Now Eddie Brett, Te Eugene and Sonny Jay have signed a £500,000 record deal with Syco and they’re keen to spread the word. We caught up with the Loveable Rogues at Hotel La Tour in Birmingham to talk fame, girls and life after BGT . How is life different after Britain’s Got Talent? When we first came out of the show we went straight home to familiarity. Now, coming to places like Birmingham with people recognising you and coming up to you is really strange. We tried to prepare ourselves for life after the show, but it’s still weird when people know who you are. Do you consider yourselves to be famous now? The word ‘famous’ is hard to define. We still see ourselves as very normal people. You don’t realise how many people are actually watching you night after night. It’s crazy. When you are in the show it’s like you’re in a little bubble, when you come outside everyone is talking about you; it’s only when you come to places like Birmingham and everyone knows who you are, it’s like wow! What are you looking forward to about being ‘famous’? Recognition for our music. There’s no point being the next John Lennon if only your mum buys your CD. We’ve now got this huge audience listening to our music. Is there anything that comes with fame that you’re not looking forward to? Personal intrusion is a worry. It’s quite a scary thought to think that everyone knows every detail of your life without actually knowing you. Up to now we’ve had loads of really good press and everyone’s got behind us, but you’re always waiting for that one moment where someone will dig up something. Like they did with One Direction: one minute they were the best band ever and now they’re asking how long they’re going to last. Do you think you were well suited to Britain’s Got Talent or do you think you should have tried The X Factor? No, not at all. At first, we were really sceptical about the whole talent show thing and we were worried that it would tarnish everything we’ve worked to build. With Britain’s Got Talent though, you’re going on as your act, as who you are; you’re not trying to be someone else. With shows like X Factor you are told what songs to sing and how to act, but with Britain’s Got Talent we were able to go out there and sing our own songs and not pretend to be people we’re not. It was a gamble, but it paid off for us.
‘It’s only when you come to places like Birmingham and everyone knows who you are, it’s like wow!’ What is Simon Cowell like in person? We haven’t met him much. When they first put us through he told us that we deserved it, but other than that we didn’t really have much opportunity to speak to him. The judges have such a strict schedule and they’re literally told to take their seats the second before the show is about to start. If you could choose one of the judges to take to dinner, who would it be? Simon, without a doubt. What are Ant and Dec like in person? They are the kind of guys you feel like you’ve known for years. They’re just lovely, genuine guys. They’re so funny in rehearsals. When you speak to them you’re always trying to think of something new to say because you don’t want the conversation to end. Even though you didn’t win, runners up in talent shows often do better than the winner in the long term; why do you think this is? We went on the show to get a platform and build up a following and in order to do that we just wanted to get to the final. We are all competitive and when you enter a competition you do it because you want to win. But we were very realistic from the start because we were aware of the format of Britain’s Got Talent and knew the kinds of acts that have won previously so we just set our goal as the final.
What’s it like when you’re standing up there waiting to hear the results? It’s nerve-wracking just talking about it! You know how people want you to react, but you can’t plan a reaction so you just have to try not to overanalyse it too much. What did you think of the winner, Ashleigh and Pudsey? Absolutely incredible; we were flabbergasted when we first saw them perform. We were in the same deliberation in front of the judges with Ashleigh and Pudsey, Fish the Drummer and Kai & Natalia and we were just absolutely amazed. Who will be first to get an a-list girlfriend? We’re all very different people but we’re all capable of getting girlfriends! How does it feel going from being normal lads to being able to go up to any girl knowing that she’ll already know who you are? None of us have ever had any reservations about talking to girls so nothing’s really changed. Who has the worst habits? We all bite our nails, but apart from that we’re all quite boring and normal really. Who writes most of the music? When we first started, Eddie would write most of it, but now we write together. Where do you get your ideas for your music? Honestly, good songs write themselves. The best songs are the ones that take about half an hour to get out because you’re so in the moment when you’re writing it. One direction or JLS? One Direction, definitely! Adelle or Jessie Jay? That’s a tough one man! Depends what kind of mood you’re in. We love both, amazing voices but definitely Adelle before bed If you could dine with one of the judges who would it be? Simon all the way! Although David Walliams is very funny and Alesha is beautiful! Loveable Rogues will release their debut single later this year. issue 29

full time athletes, allowing them to fully commit to the sport. Since we won the bid to host the 2012 Olympics, we have come even further forward. We have built more 50-metre swimming pools in the last three years than we built in the previous 30 years. When we started preparing the bid, there were more 50-metre pools in Paris than there were in the whole of the UK. It was a disgrace so we did something about it. The first 50-metre pool I ever swam in was actually not far away in Coventry. I won a bronze medal for 100-metre breaststroke when I was nine!

It’s important that children enjoy sport. Schools need to make sure they give options to children when it comes to sport because if kids enjoy the sport, they will want to do it more whether it’s swimming, table tennis or zumba.

Everything is Olympics, Olympics, Olympics this year. After the Olympics and the Paralympics, I’ll just be carrying on the way I have been for the last 20 years in PR, marketing and television, in between being the taxi service for the kids!

I often get asked my best tip for getting in shape and the best tip I can give is to find something you enjoy. There’s no point me telling everyone to go swimming because if you hate it, you won’t go. Find something that you enjoy doing and go with a friend for moral support. It’s all about maintaining your metabolism when you get older and keeping your body functioning properly. I still work out when I can, but it depends how much time I have after work and the kids. Most of the time I’m just the proverbial taxi driver! In my gym at home I’ve got a cross-trainer, bike, rowing machine and a few weights. I like to do 30-40 minutes of cardiovascular, usually exercise bike then something for my stomach and the old bingo wings. I believe in core fitness so if your stomach is in reasonable shape, everything else comes nicely after that. It’s nothing excessive and it never takes me more than about 50 minutes for a full workout.
I hate diets. When I first stopped swimming, I was only 19 and I put on three stone. I’m normally around 10 and a half stone, so that was a big increase for me. I did all sorts of yoyo diets for a year and all I found was that I was absolutely infatuated by food. I wrote everything in a diary and spent my life thinking about what I was going to eat next. Don’t tell yourself that you shouldn’t be eating potatoes or chocolate because you will instantly crave them. Just be sensible and think everything in moderation. We have a really strong team GB this year. We’re bringing our biggest team in ten years with 550 athletes. We’ve come a really long way with sport in this country. Back in 1996 at the Olympic Games in Atlanta, we only won one gold medal and that was Steve [Redgrave] and Matthew [Pinsent] in the rowing. We realised that sport in the UK was in a really bad way so we introduced Lottery Funding and were able to make our guys proper
I’ve always been really overprotective of my hair so it’s been quite a challenge for the Wella people to find something that I would actually let them do! My hair has been through the wars being subjected to chlorine water all these years so I’ve had to take good care of it. A good tip for swimmers: rub a serum into the ends of your hair before you get into the pool to create a barrier against the nasty chlorine. I’m a big believer of prevention before cure, so I never sleep in make up, I always make sure my hair is moisturised and I cover myself in cocoa butter. I love Bare Minerals make up; it’s really light and never makes me feel caked. As I’m getting older, make up tends to go into the wrinkles if I’m not careful! The hairstyle that Mia Delliconpagni at the Francesco Group Salon in Birmingham did for me is Grecian inspired with a boho chic twist. I had a great time in Birmingham showcasing this Olympic themed hairstyle and I really hope people can have fun recreating the look for themselves with the step-by-step instructions. With a large paddle brush, wrap the dry hair following the contour of your head encouraging an even distribution of product and keeping the cuticle flat and in a downward motion.

Step 5: Clasp hair in one hand and with the other wrap a rubber band around the hair and secure until you have the desired tension. Separate the hair into three equal bunches, taking the outside bunch over the middle to form a plait.
Step 3: When the hair is 80 per cent dry, apply a little Flowing Form to mid lengths and ends to smooth and reduce any frizz.
Step 6: Next, take hold of the ponytail and plait, securing with a small rubber band at the end. Bring the plait around the front of the head, positioning as required. Use grips to secure.
Step 4: Once dry, brush hair over to the back of one ear and secure tightly with a band. Lightly secure any stray hair with Flexible Finish.
Step 7: Once style is achieved, fix in place with Stay Styled and add a light shimmer of shine with Sublime Reflection.

I was with the group for 17 years and I went from junior technician to director.

When Umberto passed away, I honestly questioned whether I would ever do hair again. But, it pushed me to leave London and come back to stand on my own two feet. My salons are not like others you’ll find in the city. Some salons are intimidating; I don’t want to be like that. We want you to be comfortable while we do your hair. You can go through to the seating area where you can sit back with a magazine or one of our iPads, help yourself to the drinks fridge and just relax while your colour takes instead of staring at yourself in the mirror for two hours. I’ve always been one to push for awards. I won Midlands Hairdresser of the Year three times and Colourist of the Year three times so I’m not

allowed to enter anymore! British Hairdresser of the Year was the big one for me, and I won that in 2005. Now it’s all about the team. I’m here to develop their wins and nurture them through.
After taking a step back from the business for two years to have my second child, I have decided that the time is right to get back in control. I feel like I’ve got a new job! I love it because I’m back in the thick of it and back doing what I do best: inspiring my team. I’m a commercial hairdresser; I don’t do flamboyant, off-the-wall hair. I like women to look sexy and
I don’t pay attention to rules when it comes to colour: I do it my way and it works. My staff give all clients a proper consultation each time they come in, like they’re brand new clients. The client has to understand why they are having a particular cut, colour or treatment and what it means for them in the future: all my clients leave here knowing exactly how to maintain their new style and how to achieve it in ten minutes before work in the morning. Although I’ve won what I’ve won and done what I’ve done, I still love the nitty gritty of my job. I still scrub the floor with the rest of the staff and get stuck in where I’m needed. I’m in my salons four days a week and I wouldn’t have it any other way. Looking into the future, I can honestly say I’ve only scratched the surface of where I want to be. I’m such a perfectionist, and things will happen when I’m ready. New franchises, my product range: it will all happen when I am 100 per cent happy that it’s as good as it can possibly be.

After a few consecutive seasons of neon brights, block colours and clashing prints, autumn/winter ‘12/13 brings in a new mood of modesty, elegance and classic silhouettes. Colour palettes are muted and edge on the sombre, and several fashion-favourite motifs are back in a big way for autumn: military influence and urban utility were seen on the runways at Victoria Beckham, Alexander Wang, DKNY, Marc Jacobs, Stella McCartney and Givenchy. Fittingly, in a Diamond Jubilee year, royal purple is the stand-out shade of the season ahead. Every one of the leading design houses sent their models down the catwalk in rich shades from lavender to mulberry, aubergine and classic imperial purple.
A few micro-trends popped up at Fashion Weeks around the globe. Update your winter wardrobe with a cape: they were seen at Tom Ford and Miu Miu and got a seal of approval when Gwyneth Paltrow wore a white one to the Oscars. Elbow gloves are another huge trend, in cotton, satin or leather, and in shoes, both pointed-toe and timeless Mary-Jane styles are enjoying a renaissance. Fashionistas will love autumn’s emphasis on decadent fabrics, such as velvet, lace, brocade and even damask, but if embellishment isn’t your thing, try the cool monochrome prints that will be everywhere. They were seen at Armani and Alberta Ferretti, and the Duchess of Cambridge’s wedding gown designer Sarah Burton also threaded black and white through her collection at Alexander McQueen.

People ask me about a ‘typical day’ in my life but there really isn’t any such thing. I don’t have many ‘typical days’ because I travel so much: I love to keep moving and seeking out ideas for inspiration. I am a pop culture sponge, I read every magazine and book, I am movie- and theatre-obsessed and I watch lots of television. I really only truly unwind when I escape to a beach - then I can really shut down and relax, so I try to get away for a couple of days or a long weekend once a month. But I run a busy calendar and am very Attention Deficit Disorder - so I really need to pack it all in to keep me going.
I like to indulge in a few spa and salon treatments. I go to several regular spots in Greenwich Village in New York, where I’m based. I have massages several times a month with a great masseur called Rick at the Relax spa, I love having reflexology at Angel Feet, and for pedicures I visit Jin Soon Hand & Feet Spa.

Men’s fashion finally arrived on the Fashion Week circuit when its own edition, London Collections, took place in central London over three days in June, opened by the Prince of Wales. From Burberry and Tom Ford to Paul Smith and Pringle of Scotland, a long list of designers showed Gieves and Hawkes, their spring/summer 2013 collections on the catwalk Savile Row and in presentations across the city. For once it was all about the men and not a one-day event attached to the main London Fashion Week. Savile Row tailors opened their doors to guided tours of their ateliers and cutting rooms where the real action happens. After witnessing how a tailored suit is painstakingly handstitched from start to finish at Gieves & Hawkes, it’s no wonder the price tag for these garments run in thousands for such a laborious effort. It was at the London Collections I came across London-based brand Dashing Tweeds. Designing with wit, Guy Hills and Kirsty McDougall have put a spin on trad pieces such as threepiece tweed suits, knitted tank tops and sporting caps, adding clashing colours and sporty nylon detailing. “This autumn we’re going big on British wool and designing a technical explorer’s jacket called the Dashing Explorer”, Guy told Style Birmingham. “The fabric is woven using British wool and a reflective yarn and the jacket
will be full of useful hidden features including lights and silhouette changing fasteners.” Dashing Tweeds has also done a collaboration with Converse, resulting in a funky tweedy pair of sneakers, £80 (dashingtweeds.co.uk) and a bicycle bag range with Il Soigneur, from £80. Their collection for Topman will hit the shops this autumn. On the subject of designer collaborations, H&M teams with French fashion house Maison Margiela for a new range launching November 15.. Famed for their deconstructed tailoring, there will be plenty of statement pieces for guys who are not afraid to plunge into a surrealist approach to classic fashion. Topman carries on the Britannia Rules momentum with a t-shirt collaboration Converse trainers, £80, Dashing Tweeds
with Newgen designers James Long, Katie Leary, Lou Dalton, Sibling and Christopher Shannon, and £5 from the sale of each t-shirt (prices from £24) goes to the British Fashion Council’s Princess of Wales Charitable Trust to support young designers. For sneaker lovers, Aston Martin has rolled out a collaboration with London shoemaker John Lobb: shoes, £525, mrporter.com. These beauties have been expertly crafted by Aston Martin’s director of design Marek Reichman and John Lobb’s creative director Andrés Hernández, resulting in a go-faster shoe
made of butter-soft Italian leather with a streamlined rubber sole. I first saw the sneakers on Aston Martin’s CEO Dr Ulrich Bez at an Aston Martin launch back in May and he told me they were the most comfortable shoes he has worn. Now, Dr Bez might be slightly biased to his own product but they do look ergonomically designed and make a fantastic driving shoe. Right now, shops are finishing sales and filling up with autumn collections. Separates are the easiest and quickest way to update your wardrobe. Get started with a new jacket and go for the gentleman look with a burgundy melange wool jacket by Jaeger, £340, House of Fraser, in stores from mid August. For a more casual look, opt for a mustard jacket by Jigsaw, £225, for a hard-working staple piece to wear with jeans or chinos. Dockers has a great range of corduroy chinos in a multitude of colours from mustard and rust and khaki for £90 a pair at House of Fraser.

New Look has also tapped into the dapper side of tailoring. “Our newly relaunched tailoring range shows the smarter side of the Sweeney Todd trend, consisting of three-piece suits in cottons and Neppy wools worn with tonic shirts,” says Leszek Kubasiak, menswear designer of New Look. This black-grey Donegal tweed style jacket, £49.99, and matching waistcoat, £24.99, are so well cut they easily look five times the price tag. Nowadays it is worn as part of a morning suit and is typically paired with an alternate coloured waistcoat and/or trousers. Personally, unless you’ve got your heart set and are investing in one to be made for you I think you are much better off wearing a more contemporary designed lounge suit asthis is something that will get more usage in the long term. We are finding that more grooms are wanting their outfits to be multi-functional pieces that can be worn in many different situations as opposed to something that gathers dust in the wardrobe. Always keep a spare Although planning and execution are vital for your wedding attire, it’s always best to have a backup. Spare accessories such as ties and cufflinks are a great idea for that ‘just in case’ scenario. I always advise grooms to carry a spare shirt with them even if it’s to just to refresh and change into as the day progresses; there’s nothing quite like a crisp, clean shirt. You would be surprised the difference this can make, giving most gents a second wind of confidence in preparation for that all-important first dance.

Edd’s winning rum based cocktail is inspired by the national drink of Guyana and served in a hollowed out pineapple and garnished with a collection of flaming fruits. Edd, or Captain Fishcake as he’s known to the regulars at the Tiki Bar in Island Bar, used his extensive knowledge of rum to create the heat-winning cocktail. The national El Dorado Swizzle Cocktail competition sees bartenders from around the country compete at making Swizzle style cocktails that are mixed using a stirrer. PINK LADY APPLE, GORGONZOLA AND PANCETTA BRUSCHETTA This makes the perfect lazy Sunday brunch, just oozing with flavour. If you want you can use smoked streaky bacon instead of pancetta.
You’ll need:
4 thin slices smoked pancetta 2 thick slices of ciabatta or rustic bread 1 tbsp olive oil 15g unsalted butter 1 Pink Lady apple, cored and thickly sliced 50g gorgonzola, sliced A few wild rocket leaves
Serves 2 Preparation time: 5 minutes Cooking time: 10 minutes
What to do:
Heat a non-stick frying pan until hot and cook the pancetta slices for 1-2 minutes until golden and crispy, turning halfway. Set aside on a sheet of kitchen paper. Then break into large pieces. Add the ciabatta slices to the pancetta pan and toast for 1-2 minutes, turning halfway until lightly toasted and the pancetta juices have been absorbed. Remove and set aside. Allow the pan to cool down slightly off the heat. Then return to the heat and add the olive oil and butter. Gently heat until melted and then cook the Pink Lady slices for 3-4 minutes, gently turning until lightly golden. To serve top each ciabatta slice with the cooked Pink Lady apple, sliced gorgonzola and rocket. Top each with the pancetta pieces and serve immediately.

SUMMER PUDDING “This traditional pudding just sums up an English summer, and nothing can better the flavour of fresh British berries ripened naturally in summer sunshine” says the top celeb chef
You’ll need
Serves 6 Preparation time: 30 minutes Cooking time: 25-30 minutes Chilling time: overnight
600g/1lb 6oz raspberries
Juice of ½ lemon
600g/1lb 6oz strawberries hulled and halved if large
150ml/ ¼ pt white wine
600g/1lb 6oz blackberries
6 slices of thick cut white bread
300g/11oz caster sugar
Fresh jersey double cream, to serve
300ml/ ½ pt water

COOK THE iBOOK Got luscious summer berries left over from Valentine’s recipe? A new iBook makes it easy to make your own organic jams and jellies with step-by-step instructions, pictures and video. Written by prize-winning preservesmaker Vivien Lloyd, First Preserves: Jams is available to download from the Apple iBookstore for just £2.99.
1. Put half the fruits in a large saucepan with the sugar, lemon juice, wine and water
8. Cut the crusts off the bread and cut each slice into two rectangles.
2. Bring to a gentle simmer and cook for five minutes until softened, stirring occasionally.
9. Thoroughly paint one side of each rectangle with the reserved syrup.
3. Lift out the fruit into a sieve using a slotted spoon, strain any liquid back into the saucepan, then put the fruit in a bowl on the side. Allow it to cool (this is so you don’t cook the raw fruits in the hot ones). 4. Reserve 200ml/7fl oz of the fruit syrup for painting the bread. 5. Return the pan to the heat and boil the remaining liquid for 20-25 minutes until syrupy. Allow to cool. 6. Combine the cooled cooked fruit and reduced syrup with the raw fruit. (I like the mixture of cooked and not-cooked for better flavour and texture). 7. Line a 1.8 litre/3¼ pt pudding basin with two sheets of overlapping cling film (the edges of the cling film should hang over the top of the basin so that they can enclose the pudding).
10. Cut and paint a circle of bread that fits the bottom of the basin. Put this in the basin with the red side facing the cling film. 11. Arrange the bread all the way around the inside of the basin, overlapping slightly where the joints meet, with the painted side always facing the cling film. 12. Spoon the fruit into the basin and pack down well. Top neatly with the remaining painted slices of bread. 13. Cover with the overhanging pieces of cling film and place a side plate holding a heavy weight on top to press it down. Put in the fridge and leave overnight. 14. When ready to serve, remove the weight, open the cling film and invert the pudding on to a serving plate. Remove the cling film. Should there be any syrup left, using a pastry brush, daub any pale patches with it. Serve the pudding with cream.

When we were invited to Edmunds in Brindleyplace we knew that we were dining in one of the city’s best restaurants but we weren’t quite prepared for just how good it was. Edmunds has seen a lot of change over the last few months, but the arrival of Didier Philipot has marked a new direction for the restaurant that is sure to keep it at the top of its game. Philipot is already well known in the city and after a spell at Brockencote Hall in Worcester and his own restaurant La Toque d’Or in the Jewellery Quarter he is now leading the way at Edmunds bringing his passion for French cuisine to the establishment. Despite its Brindleyplace location, Edmunds has always maintained its status as a ‘hidden gem’ in the city. As soon as you walk in you immediately feel at home, helped by the restaurant’s comfortable yet chic interior design. For fans of elegant spaces, Edmunds’ warm golden walls mixed with stainless steel lamps provide the perfect setting for an evening of decadence. The restaurant has just 40 covers, which gives it an intimate feel and makes it an ideal location for a lunch meeting, romantic dinner or celebratory meal. Upon arrival, we were welcomed by the very friendly staff who relieved us of our rain-soaked coats and umbrellas, and as soon as a glass of Champagne came our way the hideous rain was a distant memory. We were taken to a table in the corner of the restaurant that gave us both privacy and a great view of the restaurant. There was a mixture of clientele; from families with older children discussing the perils of the medical profession to couples celebrating anniversaries. After a brief moment to enjoy our Champagne we were informed that we’d be enjoying the tasting menu for the evening, including wine. Our journey through Didier’s culinary vision began with a fantastic amuse-bouche of prawn and chives jelly, jersey royal potato vichyssoise summer truffle foam. The first of two starters was Orkney king scallops, smoked haddock and ratte potato brandade, new season green asparagus, smoked olive oil dressing. The scallop was bigger than I

had ever seen before and the salty seafood was complimented perfectly by the asparagus and smokey sensation of the haddock and olive oil. This was accompanied by a fantastic Pinot Grigio, which was light and refreshing. The second starter continued the seafood theme and saw Devon crab, Brixham crab risotto, fricassee of seasonal wild mushroom, tarragon, lobster and brandy veloute. The risotto was cooked to perfection and was accompanied by a fresh yet bodied Sauvignon Blanc. The first of our main courses was organic wild Shetland sea trout, haricot bean mousseline, white asparagus, truffle and oyster emulsion. The strength of the truffle shone through with this dish and the trout was cooked beautifully. I did begin to wonder whether it was possible for the meal to get any better and then came the second main course, and possibly one of the best meals of my life to date; Pigeon, Squab from the Loire, Perigord duck liver, spinach, morel mushroom, shallot purée and pigeon jus. The pink pigeon meat provided an impeccable taste, which was washed down perfectly with the accompanying Merlot. After four stunning courses – and a stomach that was feeling slightly too full – the Peach Melba predessert was a delight. It was refreshing and light and made way for the strawberry extravaganza that was to come: new season Gariguette, Champagne jelly, strawberry macaroon, Eton mess, strawberry ice cream and strawberry tuille. It was a summer fruits sensation and we were quick to commend the chef on the best macaroon we had ever tasted. Even after the dessert, the surprises kept on coming and the cheese board put most to shame. Then, just as we thought we couldn’t possibly fit anything else in, came the petit fours consisting of pistachio macaroon, passion fruit and mango jelly, flapjack, vanilla fudge and chocolate truffles. It would have been rude not to sample them all! Overall, the tasting menu at Edmunds was superb, and costs just £69, or £99 with accompanying wine. The team were fantastic and were attentive without being obtrusive. The night proved why some restaurants have just ‘got it’. If you are part of Birmingham’s social scene and your inbox is full of event invites then you have probably already been to Hotel La Tour, the city’s exciting new hotel. Even if you have already paid a visit, canapés and bubbly won’t have done the place any justice, as we found out when we embarked on a threecourse meal in the Aalto Restaurant. Having opened just a few months ago, Hotel La Tour has fast become a city hot spot and the go-to place for everything from lunch meetings and romantic meals to the perfect place to start a great night out with the girls. When we were invited down to sample the menu at the Aalto restaurant and we were looking forward to seeing how it matched up with its outstanding reputation.

For those of you who have lived in Birmingham for more than a decade you will remember the location of Hotel La Tour as part of the old concrete traffic system formerly known as Masshouse Circus. When it was demolished back in spring 2002, a new era began for the Eastside of Birmingham and Hotel La Tour now joins the likes of Millennium Point, Matthew Boulton College, BOA and the beginnings of Eastside Park – all of which are helping to transform this part of the city. Walking into Hotel La Tour you are welcomed by an impressive reception area which then leads to a sweeping spiral staircase that takes you to the stylish bar and restaurant. Usually hotel bars feel very much part of the hotel itself but the layout and décor at Hotel La Tour give it a very different feel, and you feel more like you’re in a swanky city bar. This makes it a great destination for non-hotel residents. After being welcomed by several members of staff we were taken to our table by a very attentive waiter. For a Wednesday night the place was buzzing and we even caught sight of legendary hairdressers Royston Blythe and Nick Malenko. We had already guessed that the place was a celebrity hot spot but we then caught sight of the guests from The Torque Project – a brand new supercar showroom in the Bullring – launch party.

The whole meal was thoroughly enjoyable and we definitely forgot that we were in a hotel restaurant. After making our way through main courses and a delicious bottle of Merlot, the need for sweet took over so we decided to treat ourselves to raspberry Eton mess and an apple and blackberry crumble. Throughout the meal, the staff were very attentive and it felt more like a top restaurant than an ‘add on’ to a hotel. The whole place was buzzing – and not just because of the celebrity clientele – which made the evening even more enjoyable. This night, without a doubt, proved that Hotel La Tour is just what the city has been waiting for. As well as great place to stay, the stylish bar and Aalto restaurant provide the city’s residents with the perfect place to drink and dine.
Knowing that F1 legend Paul di Resta was just around the corner from our table made the meal that little bit more exciting. The Aalto restaurant menu had a range of great options – all at a very reasonable price. Head chef Alex Penhallgon, Marcus Wareing and the Aalto team are the vision behind Aalto. Working in an advisory role, Marcus has brought his experience to the restaurant to create a fantastic menu that boasts a host of English classics, all with a modern twist. The open plan kitchen is a great feature and gave us a glimpse of the culinary genius taking place to create our meals. After sitting down with a fabulous cocktail – Rhubarb Bellini was a great choice – we then opted for two of their classic starters; Brown & Forrest smoked salmon and a shrimp cocktail (a modern take on an 80s classic). Once relaxed, our waiter came over with an iPad, which had the restaurant’s wine selection on and allowed us to choose exactly what we wanted and order it with the touch of a finger. A very nice touch indeed. The choice of main courses was fantastic; from pork chops and battered cod to a Cornish sea bass and mushroom and thyme crumble. We opted for the rib eye steak (rare) and belly of lamb, and if they were anything to go by then we have to return and try the rest of the menu.

The hotel itself is the perfect location to enjoy Birmingham at its best - whether you are a regular to the city or even better visiting for the first time, the Mal won’t disappoint! You can choose to stay over, dine or just party with friends at the Mal Bar and Brasserie, and you’ll find yourself in good company, as Mal attracts Birmingham’s glamorous socialites and celebrities alike. We arrived to a warm welcome by friendly staff who took our coats and showed us to our table. The menu was very clear and the waitress was extremely knowledgeable and able to answer all our queries. Overall the service was impeccable and very attentive.
From the plat du jours menu, I chose the 12oz t-bone of beefsteak, which was deliciously tender and juicy and arrived on a hearty, rustic style chopping board. This was served with a peppercorn sauce, hand cut potato fries and rocket garnish, priced at £23.50. Andrew had the fish bouillabaisse which was a seafood celebration consisting of salmon, cod, mussels, plaice, hake and lobster bisque, priced at £14.95. The dish wasn’t as fishy as one would expect but still flavorsome for del Mer lovers! Neither of us could resist the lemon drizzle cake served with crème fraiche sorbet. Priced at £5.95, it was a light and refreshing palette cleanser, an indulgence of citrus flavours.
I chose deep fried goat’s cheese with red onion chutney and balsamic sauce from the table d’hote specials menu, priced at £4.95, which at first sounded quite heavy but was actually deliciously light and delicate tasting.
The pièce de résistance for me was the wine tasting presented by Mal’s extremely knowledgeable head sommelier in their private and intimate tasting room, where we were given the opportunity to sample a range of vintage wines and Champagne from a variety of regions and countries.
Andrew opted for the raised pie, which was an absolute must-eat for meat lovers, crammed full of succulent pieces of ham, turkey, chicken and beef with a light puff pastry lid priced at £5.95.
Overall the experience was extremely pleasant and I will certainly head back to Mal - I just can’t decide whether to go with a big party or a romantic date - maybe I’ll do both!

Jakkin Rabbit are local duo Danny Kane and Marc Spence. After signing music to the well-respected Hot Waves label, they have exploded onto the deep house scene with a bang. Their music is being supported by the likes of Jamie Jones and Pete Tong. How did Jakkin Rabbit come to life? Marc: Music has always been a part of me from playing brass in primary school to the drums in seniors and then producing on Music 200, a game on the PlayStation. I’ve been DJing now for the best side of a decade and producing for almost as long. It was a few years ago that Danny and myself stepped into the studio and created Jakkin Rabbit, but only a few months ago we started to take it seriously and produced Blame which had some really good coverage. Blame achieved a solid place on the last Hot Creations Hot Waves Release and earned some massive
support from Jamie Jones and Pete Tong. What are your main influences? Danny: I love many different styles but my main influence is late 80s early 90s funk electronic music like Zapp, Slave, James Brown, and great pop bands like The Human League and The System. Marc: My main influence is Switch aka Dave Taylor. I love his versatility, and, no matter what he produces, he always delivers some serious grade A production! You’ve had music signed to Hot Waves and Mexa records, both of which are well-respected labels. How does it feel to be releasing music on labels like these? Marc: It feels like a massive achievement to be able to get releases on such big labels. It has really boosted our
confidence with our production as well as inspired us massively to get back in the studio and see what else we can conjure up. How does it feel to say that you’ve played alongside the likes of Soul Clap, Clive Henry and Robert Owens? Cream Classics - Summer Street Carnival After a sold-out show last year, Cream Classics returns to the Rainbow Complex on Saturday August 4. The Summer Street Carnival will take over the full 2,500 capacity venue incorporating a street closure, warehouse, and garden, for plenty of indoor and outdoor party action. Four arenas of music: Cream Ibiza Classics celebrating the sounds of years gone by, featuring a Live PA from Alision Limerick and clubbing heroes Danny Rampling, Tall Paul, Brandon Block and Alex P. Expect first class sound, production and lighting to match. Pacha London and Pacha Recordings together are hosting the warehouse as part of their UK tour! Secretsundaze is the brainchild of DJs and promoters Giles Smith and James Priestley. Starting life in the summer of 2002 it took a healthy dose of inspiration from outdoor parties in Ibiza where the pair had been going for many years. In a very short space of time it became the talk of the town amongst the media and clued up party people alike. Taking daytime partying to a new level with its uncompromising music policy, use of quirky, original venues often with outdoor areas. TH E CAS IN O The New Year saw a brand new chapter in the life of Broadway Casino with an extensive £500,000 refurbishment project. The Casino, located on the original site of Birmingham Children’s Hospital at Broadway Plaza, now boasts a private room, The Manhattan Suite, available for conferencing, corporate entertainment and party hire with access to the main casino. Broadway Casino first opened in 2005 and has established a loyal client base and hopes to build on that with the exciting refurbishment.

Cheryl has wowed audiences in recent months with outstanding performances on The Voice UK, The Queen’s Diamond Jubilee celebrations and as special guest on the Black Eyed Peas European tour. Now, she’s back and better than ever with her first ever solo nationwide arena tour.
On October 12, Cheryl will be stopping off at the LG Arena in Birmingham to treat the audience to a selection of songs from her three albums 3 Words, Messy Little Raindrops and A Million Lights as well as pulling out a few surprises.
Cheryl became one of five members of girl group Girls Aloud in 2002 as a result of talent show Popstars The Rivals, enjoying 20 top ten singles, four number ones and five platinum albums. In 2009 the band won the title Best Single for their song The Promise and later announced their hiatus.
