Eating Out: The Itinerant Diner A Pacific selection: from intimate indulgence in Fiji to Nauru informality, you’re spoilt for choice.
Wakaya Club and Spa
Wakaya Island Fiji Booking in the same day for dinner at Wakaya is not something you’re likely to do on a spontaneous whim, it will require booking a stay of at least one night but the recommended minimum is four so as to experience everything on offer, so dinner will be somewhat more expensive than a trip around the corner to your local favourite restaurant. This indulgence is worth whatever it costs though as the food is as deliciously fabulous as the resort itself. And this is a resort that takes its cuisine very seriously. Not so serious that it’s the slightest bit uptight but serious enough to ensure that your food is locally grown and organic with the intensity of flavour that only comes with this sort of produce. Whether you choose the seafood from the Koro Sea – Pacific green lobster, shrimp, mangrove crab, tuna, wahoo or mahi mahi all of which feature on a changing daily basis, or you prefer something more carnivorous you won’t be disappointed. The Pacific Rim specialities include their own locally raised venison, pork, lamb, chicken or Muscovy duck along with their organic garden greens and fruits. Even the breakfast preserves are home made. In addition to the resort’s own chefs Wakaya has for many years run a guest chef program which has attracted some of the best of the breed including Nobu of eponymous restaurant fame, Matthew Crabbe of Tokyo, Charlie Trotter from Chicago, Greg Doyle from Australia and Grant MacPherson of Las Vegas, all of whom have left a stamp on the sumptuous but simple menu. This month you’re in luck as Craig Strong, Executive Chef from the renowned Studio Restaurant at the Montage Laguna Beach is making the trip from California to contribute his expertise. He’s due on the island on Saturday September 29 through to Saturday October 6. In addition to crafting his signature epicurean delights he will be hosting an organic farm tour and cooking classes for the lucky few. So why not make a date to experience some of Craig’s fabulous food, which has been influenced by his

stints in Barcelona as well as the US west coast. His blend of Mediterranean, French and Spanish flavours is certain to be a worthy addition to Wakaya’s already stunning repertoire.
