This Hawaiian-Filipino Fusion restaurant concept is tied to the plantation days. Chef Joey’s grandfather (Lolo) whose name was Gido, was one of the Sakada (barefoot) workers on the Koloa sugarcane plantation on Kauai. Back then, the Filipino, Portuguese, Japanese and Chinese plantation workers would bring their bagged or boxed lunches and trade portions of their meals with one another – and there you have chef Joey’s inspiration for his fusion cuisine.
