Joey Macadangdang - Founder

Born in the Philippines and raised on the family farm, he lived the "seed to table" concept before it became trendy. Learning to cook rice in a clay pot was more than rinsing, cleaning, and cooking. Waking up with the rooster and caring for the land alongside his family members are his fondest childhood memories that sparked his passion for cooking.

After two decades under the tutelage of others, he opened his first namesake restaurant, Joey’s Kitchen, at Whaler’s Village Shopping Center’s food court in Ka’anapali. Finding great success, he opened a second location in Napili soon after. His third venture, "Macadangdang," is his signature restaurant where his cuisine can be enjoyed in a more celebratory atmosphere. Here, he shares his homeland dishes served with island flavors and locally sourced produce. Several favorites include the Grilled Half Kampachi, Half Duck Kare Kare and Banga Banga – a sampler of chef Joey’s six specialty offerings.

Jesse Sidney

A local boy from Lahaina, Jesse began his career at Roy’s Kahana where he met chef Joey Macadangdang, igniting his passion for amazing food. With 25+ years under his belt, learning and performing roles both in the front and back of the house, he’s instrumental in bringing chef Joey's first full-fledged restaurant into life. He recently left his general manager position at two Coconut Fish Cafe restaurants in South Kihei. Now, he leads the culinary team at Macadangdang, working side-byside with chef Joey sharing Hawaiian and Filipino flavors with our community and visitors. He enjoys exploring food on and off the clock, spending time with his wife Tawney and raising their two teenage daughters.
