hen I first laid eyes on the Pacific, my California dream was born. I was 8. Having spent my childhood summers near Atlantic City, New Jersey (where, to keep this story current, Trump’s Taj Mahal casino may or may not have been built with mob-sanctioned concrete), I had previously regarded the “shore” as the place to go to get bitten by green flies, stung by jellyfish and nauseated by buff dudes with gold chains around their necks. The word “dude” hadn’t yet made it to the East Coast back then, so these guys were actually known as “Guidos,” often because that was their real name. On America’s Finest beaches, however, guys had names like Brad, Stan and Jesus. They carried surfboards and exuded a sense of chill, which was a nice change of pace from South Jersey, where girls carried hairspray, and Guidos carried chips on their shoulders. I knew fer sher this was the place for me. Fast forward a dozen-or-so years, and I’m living in a PB apartment I found in The Reader. I had graduated from college a week earlier, packed my jalopy and headed west. Now, trying to settle into my new world, I was looking for work by day and slamming $2 you-call-it drinks along Garnet Avenue at night. These activities, coupled with my being far from home, were taxing, but a quick jump in the ocean pushed my emotional reset button every time. Today, drinks at many PB establishments are called “craft cocktails” and cost 12 bucks or more. And having a job, it turns out, really cuts into my beach time, which I now spend with my 4-year-old, digging holes in the sand. “Know what happens if you dig too far?” I ask him. “You reach China?” “No, son, you reach New Jersey. Put the shovel down.” Please enjoy this Beaches Issue of PacificSD, Dear Reader. It’s overflowing with oceanfront happenings, many of which don’t require getting wet. As for me, I’m headed to the water every chance I get. One good wave can change everything, and it’s time to jump in. Sincerely,

David Perloff, Editor-in-Chief 14

FAT-FREE LUNCH HOW SKIPPING ONE MEAL CAN CHANGE YOUR LIFE If working out has you looking good and feeling fine, but you have stubborn areas of fat that won’t disappear despite the Body Pump classes and kombucha, your love-handle hero may finally have arrived. Introducing Lunchtime Lipo. Cosmetic surgery is serious business, but it doesn’t have to be scary or inconvenient. To demystify the experience, we introduced Lunchtime Lipo a new, minimally invasive lipo-contouring procedure that requires only a local anesthetic. Properly selected

4510 Executive Dr., Ste. 200, UTC area 858.453.7224, www.FACESplus.com

patients can stay awake and lose fat instantly, enjoying more aesthetically pleasing contours in a virtually pain-free process that takes less than an hour. It’s cutting-edge stuff that doesn’t even require cutting, but rather a small hole about the aperture of a hypodermic needle through which the fat-removing device, the cannula, can be inserted. Relying on the latest surgical techniques and technologies, some of which we’ve

helped pioneer and teach to many other physicians, we are able to reduce or eliminate post-operative bruising and swelling to the point that our patients can return to work immediately following the procedure. My advice, whether or not you’re a good candidate for Lunchtime Lipo, eat a healthy lunch every day. Talk about changing your life… —Ahmad N. Saad, M.D.

BRANCHING OUT How an urban fruit tree improved my life BY CRAIG SEWING

Anyway, here’s what happened… I was arriving home from a long day, agitated at just about everything and everyone. When I pulled up to my house, I saw the tree I see on my property every day. I don’t know what kind of tree it is; its branches are full of fruit I don’t recognize. As I’m parking, I notice a beat-up minivan with a young woman, probably around 30 years old or so, sitting in the driver’s seat, looking toward the tree. She seemed fidgety, tapping her fingers on the steering wheel. Then, I figured out why she looked so nervous. There, in that tree, were her two kids — a blond-haired boy, must have been 6, and a little blond-hair girl, similar age, both with blue eyes. They looked like they could’ve been my kids. Turns out the kids were picking whatever those fruits are and taking them to Mom in the minivan. When I got out of the car, still in my business suit, I heard the woman yell. When I walked toward the tree, I realized the kids were already gone, having been summoned back to the minivan by Mom. When I looked toward the minivan, the mother looked petrified, as if she had been caught stealing. She looked even more scared when I hollered, “Where are the kids?” As I approached, she said softly, “They’re in the van.” So I walked up to the side of the vehicle and, without permission, opened the sliding door and asked the kids to step out. Cautiously, they did. They were probably scared, too, because I’m 6-foot-4 and a lot bigger than they were. As her kids exited the van, the woman seemed to freeze, as if she had no idea what to do. I asked the kids to follow me back to the tree, which they did. When we

got to the tree, I picked up the little boy, explaining to him that the way to get the most fruits is to pull on the biggest branches. More fruit will fall that way. (BTW, when I was the kid’s age, back in the Midwest, we used to steal the neighbor’s cranberries.) I held the boy above my head, and the two of us started yanking on the branches. Meanwhile, I looked back at the mother, who looked to be in a state of shock. These fruits — I still don’t know what they’re called — started falling to the ground in bunches. The kid’s hands were too small to handle more than a few fruits at a time, so I showed him how to untuck the bottom of his shirt and use it to carry more. By this point, I was doing all the work, climbing up into the tree, still in my business suit, and helping the boy fill his shirt. As I was doing this, the little girl ran back to the van, returning with a brown paper bag. The mother had still not said a word. The two kids and I then filled the boy’s shirt and the paper bag. As we finished the job, I walked them back to the car and helped them load up. Finally realizing it was all good, the woman began to thank me. The teared-up look in her eyes was priceless. Here’s the point of this long story: When she finally found the words, all the woman could say was, “Thank you.” She owed me no thanks, however. In fact, I owe her. That tree, which I had ignored since moving into my new home, bares fruit that her family needs. Now, rather than walking past it blindly, I think of those two kids each time I come home. How quickly the craziness of life makes me forget how good I have it. I hope the family enjoyed those fruits and that they’ll come back someday soon, or at least remember that one time the big guy in the suit climbed a tree with them. What I got from the experience was precisely what I required — a simple reminder of humility. It’s one of many reasons I believe God’s in the mix, and I’m really thankful he hit me with this lesson. It was just what I needed. And I still need to take that suit to the drycleaner.

You ever have one of those “life moments” that you needed at that exact moment? I recently did. This is a story I wouldn’t normally share, but, with all the negativity flowing through the media these days, I figure telling a true story of a positive nature is probably a good idea. Like anyone, I have my ups and downs. But recently, I’ve felt the pressures of life and stress getting to me a bit more than they normally do — not to the point of losing perspective, as I recognize mine are “First World” problems, but stress nonetheless.

Georgopoulos’ “dying” to do Italian stems from his having grown up in an Italian family in Watertown, Mass., a Boston suburb, where meals at Grandmother Carmella Salvucci Renzella’s house were daily delights. At Salvucci’s, located by Petco Park at Ninth Avenue and J Street in East Village, the menu exudes rich flavors and rich family history. It’s where recipes from generations of the clan (which first laid domestic roots when Loreto and Pasqua Salvucci emigrated to the U.S. from San Donato, Italy, in the 1930s) live on. And there’s an on-site matriarch to make sure they do so. To maintain his grandmother’s culinary standards, Georgopoulos

recruited the next logical choice: his mother, Darlene Renzella, who has joined the team as host, ensuring patrons receive a warm welcome from a loving Italian mother. “Mom also makes sure the sauce is right,” says Georgopoulos. “And the meatballs.” His uncles (Mom’s brothers) Dave and Dan Renzella, who represent the “D” in RMD Group, are partners in the project, as is East Village hospitality honcho Ken Lovi, founder of the neighborhood’s The Knotty Barrel Gastropub and co-owner of Don Chido and Rustic Root. TRENDING WATER

LOCAL ENTREPRENEURS UNVEIL THEIR LIQUID ASSETS By Michael Benninger | Photos by Kate and Michael Auda ust in time for summer comes a new drink that’s ideal for quenching thirst. Born from the efforts of three San Diego entrepreneurs, Coconut Beach aims to disrupt the beverage industry by retailing bottles of coconut water for just 99 cents apiece — a fraction of what other brands charge. And unlike some of its competitors, Coconut Beach sells products that are 100-percent pure, vegan and naturally free of gluten, dairy and preservatives. After cooking up the idea last summer, the minds behind Coconut Beach wasted no time getting operations off the ground. Now, less than a year later, Coconut Beach products are popping up in stores around San Diego and across the country. CONT. ON PAGE 86

ith more than 20 years of experience in the local real estate and hospitality industries, co-founder Mitchell Compton oversees Coconut Beach’s daily operations. His commitment to allergy-sensitive ingredients emerged in 2008, when his wife was diagnosed with celiac disease, and his daughter with an allergy to peanuts. The fact that Compton himself enjoys a gluten-free lifestyle further underscores his passion for pure, natural products. “Keeping things simple has always been our motto,” says Compton. “So far, it seems to work well for us, starting with the ingredients in our product line.” Co-founder Kent Harrington spent years in the sales and distribution departments of food and beverage companies. Now, he manages Coconut Beach’s production channels and sales to nationwide supermarkets. It’s also his duty to ensure the company’s customers are never short on supply. As a native son of America’s Finest, Harrington played in integral role in establishing the brand’s identity. “San Diego is my home,” he says. “I grew up in Del Mar and Encinitas, worked at the Poseidon [restaurant] through high school and spent summers at the track and going to the fair. This city represents the Coconut Beach ethos — nice weather, active people and beautiful beaches.” After 10-plus years of working in hospitality, co-founder Mike Reidy developed a deep understanding of consumers’ desires. Add in his extensive globe-trotting and time spent in Thailand, and this well-connected businessman completes Coconut Beach’s dream team. Above all else, he’s committed to ensuring the company’s products are affordable for everyone. “As founders of Coconut Beach,” says Reidy, “we want to pass the savings on to our customers. We’re proud of our food and beverage products and are confident they stand up to larger brands.” Never made from concentrate, Coconut Beach coconut water comes from safe, fair-wage farming communities in Thailand. Look for the company’s coconut water and all-natural darkchocolate-covered coconut chips at Grocery Outlet, Food4Less and Dollar Tree. Given initial consumer and retailer reactions to Coconut Beach products, it seems this triumphant trio already has success in the palms (pun intended) of their hands. coconutbeach.com Instagram: @luvcoconutbeach

BREWMASTER Q&A WITH PAT KORN BARRELMASTER, GREEN FLASH BREWING COMPANY

H

Brandon Hernández: What road led you to Green Flash and the role of barrelmaster? PAT KORN: I started brewing in 1993 at Karl Strauss Brewing Company. I’ve been at Green Flash for five and a half years and took over the barrel program about three years ago. When I became barrelmaster, I had already been experimenting with different Green Flash beers in different barrels with different microbes and wild yeasts. At the same time, I was talking to winemakers about their processes and talking to other barrel people about their methods. I combined a little of this and a little of that to come up with what we do today at Cellar 3. When it comes to barrel-aging beers, people talk about “bugs” a lot. What’s up with that? “Bugs” are the different microflora that we use to make funk and sour beers. These bugs

are flying and lying around in everyday life. Some are wild yeasts, some are bacteria, some are good for our beer, but most are really bad for our beer. For Cellar 3, we use our house Brettanomyces strain, which we isolated out of the first winebarrel we ever used and have continued to use in almost every beer we make here now. We also use different strains of bacterias, Lactobacillus and Pediococcus. What are some things brewers have to be mindful of when barrel-aging beer? In barrel-aging, you really are at the mercy of the barrel and what microbes you do or do not add to the beer. Every time we come up with a new beer idea, we sit on it and mull it over for weeks at a time and dissect it and do it all over again to let it fully gestate in our brains and come up with any and every problem that can arise. Once the beer goes in the barrel, you really have no control over it. It’s human nature to want to succeed, but, in barrel-aging, one month your beer can taste great; the next month, horrible; the next month, it’s great again. Having the wherewithal to know this can happen and accept this, knowing you’ve done the best you possibly can to make a great beer, is part of the job. If you are not willing to accept failure before you even start the process, then you probably shouldn’t do it. Green Flash just introduced a new Barrelmasters Reserve series of super-small-batch beers. What can we expect?

PAUL BODY

e’s been a jack-ofall-trades during his lengthy brewing career, but now Pat Korn is a master of barrel-aging, the most complicated practices at Green Flash Brewing Company, the fourth largest brewery in the U.S. As overseer of Cellar 3, a North County inland facility stocked to the rafters with wine- and spirit-tinged oak receptacles, Korn is responsible for the most outside-the-box (or barrel) brews from this local ale powerhouse.

I’m really excited about a barleywine we aged in brandy barrels for four years that has now been in Elijah Craig 12-year-old barrels for almost two years. Yes, six years of aging. The flavors are just all over the place; tasting it takes a bit of concentration. It tastes more like a Tawny Port to me than a beer. We’ve also had our Trippel aging in gin barrels for almost two years now. The botanical notes are really coming through and complement the ester-y, fruity nose from the beer. I’m thinking we might make a few kegs of that with some locally foraged sage and buckwheat from a friend’s farm. Another possibility is a Belgian-style Golden strong ale with raisins aged in Woodford Reserve Barrels.

Just something about that brewhouse lends a distinctive flavor that is perfect for making West Coast IPAs. True story — The Brew House at Alpine was once downtown at Hang Ten! Brewing, where [local brewing legends] Paul Segura and Chuck Silva brewed together back in the ’90s. Fall Brewing Company is a brewer’s brewery. Rarely do you not see other breweries’ brewers drinking there. They make great examples of beers to-style that are always clean and exhibit a certain finesse. Then there’s Automatic Brewing Company. [Brewmaster] Lee Chase is one of the smartest brewers I have ever met, and his beers reflect his years of knowledge and his overall worldview on brewing.

What are some of your favorite local breweries? I have always thought Alpine Beer Company made some of the best-tasting and wellmade beers, not only in San Diego, but all of the U.S.

BARTENDER

NOT-SO-SKINNY DIPPING A BUFF BARTENDER BULKS UP FOR BATHING SUIT SEASON By Michael Benninger | Photo by Kate and Michael Auda

H

aving worked at venues around the city for the past decade, Chicago native Melissa Huegal is now flexing her bartending muscle at Club Flamingo. But for this recently converted gym rat, the real heavy lifting begins when the sun sets on the vintage-style swimfest, held Sundays this summer at LOUNGEsix atop Hotel Solamar in East Village. PacificSD: What’s awesome about working at Club Flamingo? MELISSA HUEGAL: I really enjoy working outside. Being a bartender, you tend to work long, dark, night hours a lot. This is refreshing, with the sunshine, outdoor air and beautiful skyline overlooking Petco Park.

What do you like most about bodybuilding? I like the challenge. This preseason, I put on about 40 pounds of mostly muscle, which is something I never thought I’d do. And I didn’t do it by eating fast food or drunk food or anything. I eat whole foods and well-rounded meals all day, and to gain that much weight that way is a bit harder. No one’s called me skinny in about six months. Even the weight of what I can lift now compared to a year ago is like three or four times as much.

Is that weird for you? Not really. I’m training for a figure competition. That’s kind of my hobby, so I spend a lot of time posing in a bikini anyway. And that’s actually a lot less material than my work uniform.

What do you do when you aren’t behind the bar or lifting one? I foster dogs pretty frequently. Basically, when dogs need to get rescued from shelters in other counties where they’re going to get killed, the rescue groups I volunteer with pick the dogs up, and I house them or help get them adopted. I clean them up and get them ready for their forever home. I’ve helped about 20 dogs so far.

How did you get into bodybuilding? I used to be really, really thin my whole life. Like, really thin. But I

Are you a beach person or a pool person? I’d say a pool person. I love the beach and I love the ocean, but

Do you wear a bikini while working? It’s not a two-piece, so it’s not a bikini, but it is a bathing suit.

started lifting weights last May. It felt really good, and I stuck with it. Then I ran into a coach that I really clicked with, and now we’re best friends. They started a team called Team JCreation and asked if I wanted to do a show. I said, “Yes, absolutely.” It’s nice to have a goal and something you’re training toward.

I’m not a huge fan of the sand everywhere. I prefer a swim-up bar and valet parking. What are the most popular drinks at Club Flamingo? People seem to like cold shots of silver tequila on a sunny, summer day. Then we have these little pinkflamingo drink holders, and all the girls are crazy about any drink that fits in a pink-flamingo drink holder. Girls are literally coming up to the bar like, “I’ll take that pink flamingo drink.” And I’m

like, “That’s not a drink, babe.” Wet your whistle, along with everything else, Sundays all summer long at Club Flamingo. The party kicks off weekly at 11 a.m. with a (partially) farmto-table brunch — just wait 45 minutes before getting in the water after eating. What do you do for a living? JESSICA: Recent UCSD graduate, landed a parttime internship at The Brain Observatory. CESAR: I’m a sales and marketing professional. I also consult a couple of start-up companies on the side. I have been told I should teach Zumba, because my hips don’t lie, so I might consider that one day. Why are you going on a blind date in PacificSD? JESSICA: ’Cause I’m single and I like to mingle... duh. CESAR: I thrive for awkward and uncomfortable situations, as weird as that sounds. Too many people try to control the moment, so I figured this is as real as it gets. Plus, the Lakers

missed the playoffs again, so my night is open. What do you do for fun? JESSICA: Laugh at my own jokes, take selfies, get into trouble. CESAR: I try staying active for the most part — anything to get the blood pumping, like wake skating, surfing, hiking, biking or hiding in the dark to scare the crap out of my friends. What are you best at? JESSICA: Literally everything, including being sarcastic. CESAR: Thumb wars, cooking Mexican food and putting babies to sleep. What do you suck at? JESSICA: Not gonna lie, if you put me in a maze, I would probably die because I’m directionally challenged. CESAR: Popsicles, lollipops and sucking helium out of balloons. THANK YOU! BLIND DATE CONT. FROM PAGE 104

What are you looking for in a date, physically and/or otherwise? JESSICA: Someone 18-plus — not tryna catch a felony — who doesn’t suck at massages; will whisper sweet nothings in my ear; and take long, romantic walks on the beach with me as we gaze into each other’s eyes. Please make me laugh. I don’t mess with vanilla f***boys. Being able to differentiate between “their,” “there” and “they’re” is always a plus, and being taller than me would be cool, too. CESAR: Well, I’d like to meet a girl that can take care of herself. Independent, motivated and some curves wouldn’t hurt. Describe your special brand of sex appeal in five words or less. JESSICA: Sensual seduction, sultry caramel macchiato heaven.

Oops, that was six. CESAR: Witty, cultured and adventurous. What do you like least about yourself? JESSICA: My undeniable charm and good looks. CESAR: Not being able to stop eating Flaming Hot Cheetos. Rate yourself on a scale from one to ten for looks. JESSICA: I don’t believe I fit on that scale. Not saying I’m above or below it; I just don’t fit on it. CESAR: Five. Under promise, over deliver. Rate yourself on a scale from one to ten for personality. JESSICA: Solid nine-point-nine. CESAR: See above. What’s your biggest fear?

JESSICA: Being Kim Kardashian. Just kidding; she’s a goddamn genius. I wish I could build an empire off a sex tape. Guess I’m gonna have do it the old-fashion way, aka actually work. CESAR: It was Goosebumps for a while. Night of the Living Dummy II was a scary read. What traits could your date exhibit that would be dealbreakers? JESSICA: Stingy. If you take me to a nice restaurant, chances are I’m ordering the most expensive thing on the menu. CESAR: Shallowness, smoker, being inconsiderate and sending me a Candy Crush invite. Fill in the blanks: I want my blind date to be “blank” and “blank.” JESSICA: Carefree and fun.

CESAR: Alive and breathing. Will the night end with a kiss, something more or something less? JESSICA: Open for negotiation. CESAR: Who knows? Maybe we can play truth or dare. What’s the most important thing in the world? JESSICA: Family and surrounding yourself with people who add value to your life. All about those good vibes. CESAR: Treating others as you would like to be treated. Just be kind and live life. THANK YOU! Miss B’s Coconut Club 3704 Mission Blvd., Mission Beach 858.381.0855, missbcoconutclub.com CONT. PB AleHouse is the next place they’re going; it’s where food and drinks and the ocean are flowing. They order cocktails and sit for a spell, and everything seems to be going quite well. Next up is George’s, overlooking the sea, where the menu’s imagined by chef Trey Foshee. California Modern’s the bill of fare, served with a backdrop that makes people stare. What were your first impressions? JESSICA: You know what, I really like that heart/butt tattoo on his arm. It’s really cute and caught my attention. CESAR: Jess had just walked up to the limo and she’s pretty foxy, so it was great to see a goodlooking girl coming up. Is this the type of person you’d normally date? JESSICA: Yes and no. I don’t really discriminate; I do both ends of the spectrum. There’s, like, business-type, and I like the other type, too. He fits right in the middle, so it’s kind of perfect. CESAR: Based off looks, I could say yes. But usually it’s a little more in-depth, so we’ll continue on to see how the date goes.

What do you think of the way your date is dressed? JESSICA: I love it; he’s so adorable. CESAR: Somewhat conservative; I can’t complain. She didn’t look too flashy, so I like that, and it’s a plus in my book. How was Miss B’s Coconut Club? JESSICA: So good. The food was amazing. CESAR: Miss B’s is great.
