Shafaq Habib is a Pakistani Jewellery designer that established her label in 1981 in New York City. She started her career at Lord & Taylor on 5th Avenue under the label, ‘Pearls Galore.’ She re-launched herself in Pakistan in the 1990’s focusing on Jewellery for today’s South Asian women. She now heads a Jewellery Design house that employs craftsmen from all over Pakistan. Shafaq is now recognized as Pakistan’s leading Jewellery Designer. 36

Did you stumble upon your career or was it something that you always wanted? I have always loved jewelry. My commercial endeavor can be attributed to New York Diamond Exchange, my love for ethnic jewelry and admiration for western design lines. I took courses in Jewelry Designing and redesigned my wedding jewelry myself. After that, an avalanche of requests and orders for pieces flowed in from friends and family, steering me to commercial enterprise.

What is #1 thing that is yet to be ticked off your bucket list? I am very grateful to my Allah for his infinite mercy. As Allama Iqbal says, “…unfulfilled desires are mata-e-bebaha…” they give you reason to live. Let each fulfillment create more dedication and hard work. What does nobody tell you about being the boss? They say it is very lonely up there. At the end of the day it is all your responsibility!

What was your “aha!” moment? I held my first jewelry exhibition in Washington D. C. we sat and chatted with karachi's favourite heart-throb, the man behind xanders and evergreen- sikander rizvi tell us a little about his life, hobbies and how he managed to succeed in the restaurant business.

Why did you decide to pursue a career in restaurants? I don’t think i pursued it but rather it pursued me. I’m half french and I’ve spent my early childhood and summer vacations in France with my french family. Food is what we live for and everything revolved around the dinner table where we would talk about what we were going to have for the next meal. Moreoover, my mother opened Cafe Flo 20 years ago and after school, I would have my lunch there everyday and get first hand knowledge of the restaurant business. It was then that i decided to pursue a career in hospitality and i went to Ecole hoteliers de Lausanne (EHL) in Switzerland - the oldest and most respected hospitality business school. After obtaining my bachelors degree, i spent some time abroad in hotels and their restaurants before finally returning to Pakistan in 2009. I decided to stay home for a bit and open a cafe, hence, Xander’s was born. What are your day-to-day responsibilities as a restaurant owner and manager? Since i opened 6 years ago with one small cafe, I’ve opened 3 more restaurants including 2 new Xander’s outlets and a new healthy cafe by the name of Evergreen. The basic and essential responsibilities of quality control and maintaining standards are of course there, but since now its a much larger operation, i have 44

had to rely more on creating a reliable team that can carry out my work from purchasing, pricing, inventories, hiring and firing, finance etc.. Having said this, a restaurant has so many facets to it. You need to deal with suppliers, governmental organisations, landlords, customers, staff, managers etc while ensuring that they are all happy and things are functioning smoothly. You also need first hand knowledge of food qualities, purchasing, receiving, storing, cooking, staff training, cash flow, customer feedback, complaints, HR issues etc. The list goes on and on. Thats why at the end of the day, you need to take a back seat and ensure that all the work is delegated to the right people who can follow the right systems in order to deliver an ace product and experience. What gets customers to come back for more? Of course food is an important aspect. If the food isn’t good, theres no use being in this business as it will be short lived. Service is another aspect but iI don’t believe people go to any particular place because the service is great, for people to come back one needs a good combination of food, service and atmosphere along with that ‘X-Factor’ which is different for everyone. For some its the fact that it feels like home whereby they are recognised or they comfortable with the environment or they can customise their orders etc. Whatever it is, once you find that


What is your favourite dish at your restaurants? It keeps changing. I usually end up having whatever is new on the menu.. I'd say from the standards, the Granola for breakfast, the Citrus Salad, the Italian Meatball Pizza and Sunday Roast with Gravy. You’re on death row, what would your last meal be? Nihari with hot naan. What advice do you have for someone thinking about opening their first restaurant? Spend money on the best location and pay your staff well. It's harder to re-train and retain.

I'm very social and enjoy spending time out or at home with friends, but also love chilling with a good movie or starting a new TV show with mum. Sundays are usually my beach day and rarely anything can come between me and the sea even if I’ve slept 4 hours the night before. I feel it breaks the week and helps you start the new one with a fresh mindset. Also I love travelling and do intend on travelling even more this year.. What is your favourite restaurant in the world? To be honest, I love fine dinning restaurants like anyone else, but my favourite types are more casual cafes around the world that i would go back to again and again, especially for some of their signature dishes. I’d say ‘EAT.ME’ in Bangkok, ‘Boca Grande’ in Barcelona, ‘Baker and Spice’ in Dubai and fistful of restaurants in Tokyo. Oh yes, and im a sucker for Shake Shack too!

Do you have any plans of opening a restaurant in Lahore? I do, but since i just opened a large one on Tipu Sultan, i think Lahore might be slightly delayed.I do wish to do it, but I am more interested in having a local working partner who works with me on it rather than just an investor.

I love fine dinning restaurants like anyone else, but my favourite types are more casual cafes around the world.

What's the worst meal you've prepared? I was in charge for preparing Chocolate Profiteroles in school for over 1000 students that particular day during my first semester where we had to work in the kitchen, and the recipe required something like 8 KGs of Sugar and 300 Grams of Salt. I did the opposite nd everyone went back to class without dessert. 2018

Travelling is great fun. You get to explore a new place, meet new people and get wiser! We want to know more and will share with you exciting travel stories from a few special people in our section, planes, trains & automobiles! Where did you choose to go and why? I went to Istanbul, Antalya and Cappadocia. I had been craving a solo trip for a while now, and Turkey has always held a special appeal courtesy of all the books that talked about the magic of the country, I needed to go and see it for myself. Who did you travel with? I traveled alone from Lahore, and was on my own for two days, until my cousin from UAE joined me there, and then we proceeded to discover more cities together. Where did you stay? We stayed in the Sultahnahmet area in Istanbul initially, and in Antalya we stayed near the beach, which was a

bit further from the main market side, but a mere walking distance from the ocean! In Cappadocia we stayed in Goreme in the Cappadocia View Hotel, with the warmest staff, and retro rooms. Suggest some amazing restaurants there? Nusret in Istanbul, for sure! The restaurant next to Dolmabache is amazing too, their tiramisu was to die for. The Pasha Cafe in Goreme had very good food, and the best manti (turkish raviloli) I have ever had was in Antalya, a quaint little cafe outside terracity mall. Tell us about sites no one should miss out on?

Suggest places for a perfect night out? My perfect night out was a Turkish night in Cappadocia, I would definitely recommend it. With Turkish performances ranging from dervishes to belly dancing, there was rarely a dull moment. Great performers who were also very engaging with the audience.

In Antalya it was watching the sunrise at the beach, and in Istanbul it was the quiet streets of Sultanahmet at night with some turkish coffee in the cold weather. Tips? Layering is super important if you go in the winter. Istanbul is cold, Antalya is warmer and Cappadocia is the coldest. Don't be afraid of the language barrier because very few people understand english, but just go with it. I got out of haggling with my cab driver by speaking a mixture of urdu and punjabi, its all in the hand movements! Also, public transport is easy to understand and so much fun. You meet interesting people and get a feel of the culture and it helps that it’s super friendly on the pocket. So use ferry boats, metro and trams to travel around town.

What can you do over there to relax and unwind? In the rush of visiting all the historical places, the best way to unwind for me was to go out for a walk, without taking pictures, without the hassle of capturing each moment,

There is honestly so much, every ordinary thing is quite magical in Turkey, the princes Islands in Istanbul, where you can ride a bike, or see the entire island on a horse drawn carriage, its breathtaking. The Blue Mosque, Topkapi Palace, Hagia Sophia, Dolmabache Palace, Galata Tower, Taksim Square the hub of culture in Istanbul! In Antalya their Kaleici market is full of life and colour; all historical monuments are nearby, Hadrians Gate, the Clock Tower, Duden waterfalls and the beach! In Cappadocia mostly people visit for the hot air balloon rides which we unfortunately missed on, but we were welcomed with the first snowfall of the season so that was beautiful.
