a lina's cocina
|ABOUT ME
Alina Asad Sheikh, the newest baker in town! How and when did you start your home based bakery, Alina's Cocina? Unofficially, I’ve been taking orders for the last ten years. I decided to open Alina’s Cocina to the public a few months ago How and why did you decide to pursue your career in food business? I’ve always been extremely fond of cooking. It started as a way of spending time with my father when I was a child as he’s a phenomenal cook in his own right. Slowly, it became the only thing that puts me at peace and I’m extremely passionate about. As it’s something I enjoy and feel that I am naturally wired to excel in, I decided to put everything else on hold and give this venture my call. We hear that you're super fond of baking/cooking? What are your personal contributions to the extensive menu? Everything I make is a personal recipe that has been tweaked to delicious perfection so it’s safe to say that you won’t find them anywhere else. My Banoffee Pie though is my ultimate guilty pleasure and something I can probably make in my sleep!

Have you taken any professional cooking/baking courses? I started cooking with my father as a young child. As I grew up, I took Food and Nutrition in my O levels and since then spend my weekends taking courses when I was at college in England. Which is your personal favourite dessert? The Banoffee hands down. What is the best & worst part about this job? The best part I guess is that I’m doing something that I love. It never gets old. The joy you experience, after successfully carrying out any
though. I’m currently catering teas, lunches and dinners and would like to move onto to bigger events. Give us 3 tips for running a successful home based bakery? • Conduct Market Research. It’s an important part of planning and can potentially make or break your start-up. • Be focused and Be Realistic. You have to give your start up your all. Be organised, write a business plan. There are no shortcuts • Develop a niche. Find out what you’re good and stick to that. Keep your originality intact. Keep your passion in mind and don’t lose that spark Our readers would like to know a little about who is behind Alina's Cocina? Where are you most likely to be found on weekends? Since I’m so busy throughout the week, I’d like to reward myself on the weekends, hang out with a few friends, go out and eat instead of cooking my own food. Very low key. Your job revolves around food. How do you stay fit? I work out four days a week and cook my own food which is usually low calorie and low carbs. I feel as if it’s easier to control what you eat when you’re the only one involved in the entire cooking process. recipe, is next to second to none. Do you feel like there is a lot of competition? I do think that generally the market is becoming saturated but everyone has a niche and once they discover that then it doesn’t matter if you have competition or someone else is doing what you’re doing. You’re going to be successful. Tell us about your team? It’s just me for now! I’m very territorial about my cooking space and can’t have anyone else around when I’m in my element. There is of course my very supportive family Do you plan on opening up a bakery in the near future? That’s the eventual plan. I’d like to expand more into catering first
Any advice you'd like to give to a junior you, who would like to step into the same field? As clichéd as it sounds, don’t give up. If this is something that you want to do long-term, then stick to it and don’t worry about how long it takes. It’ll be worth it in the end. Lastly, where do you see Alina's Cocina in another 5 years? Hopefully extremely successful and booming. I’d like to expand, start taking on bigger events and hopefully be in the process of setting up an independent eatery. I’m in no hurry to get there just yet. For now I’m just enjoying the ride. 2018

Did you stumble upon your career or was it something that you always wanted? I had no aspirations as such to be a designer or stumble upon it accidently. It all happened in a period of approximately 12-13 years. It was kind of an evolution starting from 1978 from block prints to embroideries and finally the launch of Meeras in 1991. I am a total fatalist and was labeled “Destiny’s Child” What was your “aha” moment? I have been very fortunate and as I said earlier destiny played a very kind hand. There have been a lot of aha momentsexample 1993 - the recognition as a couturier with my Central Asian Collection. It was the turning point in my career, then 1997- my first entry into the Paris Couture Week with great success, 2006- exhibiting with Balenciaga in Paris was a great honour, 2007my much appreciated showcasing in the Paris Couture Week with my Empress Josephine and Empress NurJehan’s Collection and 2014- the knighthood, “Grades de Chevalier” by the French Government. These are some of the few high points in my career. Did you ever consider or experience a career change? None at all! I had my hands full with all the diverse roles as a designer, a mother, a wife etc. I am too passionate about my role as a couturier and each collection was a challenge to do better.

But I am definitely a hard task master wanting perfection. Name one boss lady that you admire and how she inspires you? Oh there are many but to name a few who started small but built an empire with sheer grit, foresight and ambition. Nabila, the stylist for becoming an icon. Musarrat Misbah for her extreme discipline. Describe a day in the life of Nilofer Shahid. Facing challenges every day is a struggle leaving no quality time for oneself but I have no regrets and would probably do it all over again.
I AM A FIGHTER ALWAYS READY TO TAKE UP CHALLENGES, ALWAYS POSITIVE AND NEVER TAKING NO FOR AN ANSWER.
When was time you felt completely discouraged and how did you push through it? Life has been most challenging/demanding sometimes to the points of me working endlessly 24/7 but I am a fighter always ready to take up challenges, always positive and never taking no for an answer.
What was the best advice that your mentor gave you? Time Management! What are the top 3 things you cherish in your life? My beautiful children, my work and my precious rela-
Complete this sentence: To me, a #BossLady is..” The Devil who always wears Prada! What did you learn from your biggest failure? To just let go and move forward. Never dwell in negativity, I totally believe in it.

How did The Daily Juice come to life? The idea came from my sister who happens to be an artist as well as a fitness buff who travels extensively owing to her work commitments. She saw juicing as the latest and the most effective fitness trend taking roots all around the world. Moreover we wanted to provide a diet for our mother, who is a diabetic, which could limit her dependency on meds as well as healthy snacking for my young high octane nephews. These juices turned out to be surprisingly effective in maintaining optimum health levels, for all age groups, that we decided to take it up as a business. We were convinced that these juices would prove to be the healthiest addition to the menu of a city that is historically obsessed with fried, spicy, processed and packaged foods, but is struggling to maintain healthy life style in our current stressed, time constrained and polluted environment. What is your background? What have you studied? I got my degree in film studies from Beaconhouse National University and went on to work with various TV channels and creative agencies before I settled for a job as Creative Director for an agency working on mobile apps and VFX. I was heading a team of 8 that was responsible for generating ideas for mobile games as well as providing creative UX (user experience) solutions. We also worked on several animations projects, mostly 3D, ranging from TV ads to explainer videos etc. How is the daily juice made? Do you make them at home yourself or do you have a team? As the name suggests, it is made daily for daily consumption. A team of 4 very responsible and dedicated people start off with the juice production, using the best cold press machines in the world, at dawn right after fresh produce arrives from the market. We have created a purpose built juicing facility. From storage to packaging, everything is done at the facility in an environment that is way more hygienic in comparison to local juice chains. We follow all the SOPs laid down by the Punjab Food Authority. Are you planning to bring in more flavours? YES! We are. We already have 3 permanent flavours Mean Green, Super Red and Super Detox.
In addition to those we have 5 seasonal blends; Alkaline Forest, Mellow Berry, Melon Melon, Red Kiwi and Green Mango. We do not use out of season frozen produce. Apart from these we have lined up around 10 more blends which are under taste and nutrition optimization stages. Some of these drinks are especially for children. They are most vulnerable and attracted to packaged, processed and sugary foods. So we are very keen on building a line of defence for our future generation by providing delicious, nutrient rich, 100% natural, cold press juices for them. There are a lot of brands in the market that make detox juices, what makes you stand out? When you separate cold press juices from juices made with conventional centrifugal juicers, you’re left with a handful of brands that are making blends which help with detoxification. Ours stands head n shoulders above the rest primarily due to the carefully researched ingredients, our uncompromisingly hygienic preparation method and mostly important of all, our proven balanced recipe. We are currently undergoing a controlled study of one of our blend’s impact on weight loss, energy elevation, improved vitals & sleep cycles. So far the results have been amazing. What is Cold Press? Traditional juicers, or centrifugal models, use fast-spinning blades to tear apart produce, but the process adds some heat and exposes ingredients to air, two elements that cut down on how many nutrients make their way into your glass. Moreover, it causes oxidation and separations begin to appear within minutes of juicing. But now, masticating or “cold-pressed” juicers, like the Optimum700 , are becoming more popular. These machines extract juice by pressing and grinding fruits and vegetables without adding heat, hence the term “cold-pressed.” What challenges did you face starting your own business? Challenge number one was to acquire the necessary machinery for
producing premium quality cold press juices. Masticating or slow juicers are not readily available in Pakistan, so we had to import the machines. Second most challenging part was to setup an uninterrupted supply chain as most of the super foods are very hard to find throughout the year. We are now currently setting up a small scale farming unit to supply us with top quality organic produce. Thirdly, educating people and the industry about the benefits of cold pressed drinks was quite a challenge, which is on-going. What advice would you give to someone who is planning to start their own venture? Join The Daily Juice. Tell us something we don’t know about you. The Daily Juice is working on programs that involves educating people is general and children in specific about the advantages of juicing as well as rewarding people who achieve optimum health levels via incorporating raw juices as a permanent part of their regular diet. What would you like to say to our Paperazzi followers? Our bodies are the only real asset we have. So treat your bodies the same way you treat a newly bought car or a freshly built house which you furnish with the best available materials & fuels and constant loving care to extend their life and top performance levels. We have a responsibility towards our bodies to provide them with the best possible foods. Liberate yourselves from cravings and marketing traps which work round the clock to push us towards processed, toxic, packaged foods. Most of all think about our children who deserve better than what’s available on the shelves. We do not have the luxury of balanced healthy pure foods that our elder generation had at their disposal growing up. Help The Daily Juice help you on that journey. 2018

Travelling is great fun. You get to explore a new place, meet new people and get wiser! We want to know more and will share with you exciting travel stories from a few special people in our section, planes, trains & automobiles! Where did you choose to go and why? South Africa has been on my list for a long time, so i finally decided to explore the country and New Years this time and the winter break gave us a great reason to go and enjoy the summers. Who did you travel with? I travelled with a group of friends. We have made a pact to travel across the globe together to explore new regions which we might not be able to do individually or alone. Last year we did Brazil and Argentina. Where did you stay? There are a lot of cities big and small which we travelled and explored. Our first stop was Johansberg, thats South

Africa's largest city. Our second stop was Cape Town, its a port on the Southwest coast. It has mountains and rivers and the views are breathtaking. Then we went to Swellendham, Knysna , Port Elizabeth and finally Sun city. Suggest some amazing restaurants there? For many South Africans meat is the centre of any meal. The Khoisan ate roasted meat, and they also dried meat for later use. The influence of their diet is reflected in the common Southern African love of ("braai") and biltong (dried preserved meat). We ate at few places but the most amazing restaurant we tried which I will recommended would be: Big mouth Jo berg, Azure restaurant (12 apostles’ hotel. Brunch and the view), Pizza’s were divine at

Tell us about sites no one should miss out on? This was our first visit to the country so we mostly ended up doing the touristic stuff. We went to the safari which is the most important part of visiting South Africa. I had the most amazing experience of my first sky dive. Cape Town sky divers are also very famous. We visited the Penguins boulders bay, Cape of Good Hope, Table mountain and Ostrich farms. If you dig long drives, the drive through Cape Town till port Elizabeth is scenic and beautiful.
to what we were told it was exact opposite. We stayed at the Palace of city and it was brilliant. From the architecture to the interior, everything was perfect. For relaxing, massages by the pool to the walks in the wilderness was absolutely serene. I would definitely recommend everyone to visit the place at least once.
Suggest places for a perfect night out? Cape Town or South Africa is a chilled out place and not too high on night life in general. Mostly everything closes by 10pm. Water front area is a nice place or camps Bay Area for a nice breezy walk and a lot of restaurants high and low end are located there.
