What inspired you to be a chef? I was always a big food lover, it runs in my family. But, I suppose I decided I wanted to be chef after dabbling with a few jobs here n there which made me realise, it's only cooking and consuming of food which makes me happiest. How has your journey been like up till this point, and how did you get to where you are today? Well, it's been hard and long. I've been cooking professionally for about eight years and a year was spent learning at culinary school and training in Istanbul. Prior to that, it took me about a year of prepping and arranging to go to culinary school, so overall, my food story now spans a decade. It's been a bit of a roller coaster, there have been many highs and several lows. I’ve had some amazing experiences working as a consultant and some not so good ones. By no means, has any of this been easy. Luck and support from friends and family has also been a major part of my success.

What is your vision for your new upcoming restaurant. Easy is literally me in a restaurant form. It's simple, easy, comfort food but it's also intelligent food. It's a play on classics and is an ode to a lot of the food I have grown up eating.Everything in our dishes exists for a reason. Every grain or garnish has a purpose. So, while this may be a play on classics, it is by no means gimmicky. Describe one of the most scrumptious meals you’ve ever had. There are so many, but from recent times, I had what I’d call one of my best meals ever at this tiny restaurant in Dubrovnik called Dalmatino Dubrovnik: The best
cuttlefish risotto, mussels, sweetest grilled prawns, cheeses. It was perfection! What are some of the challenges that you face in a service industry? So many! From financial to construction to local authorities, everything has been hard. But beyond that, as an entrepreneur, finding trained professionals is way more difficult! Who and what got you most excited about cooking My sister, an excellent chef instilled the love of cooking in me and then there were a number of chefs I followed - Marco Pierre White was my first chef crush and after that, Anthony Bourdain. Probably the two most inspiring men in the field of food! Name your favourite comfort dish that reminds you of home? Biryani and Manti - a dish of Turkish, mini dumplings in bone broth, topped with garlicky yogurt and fried peppers in butter. Describe the style of food that you would be serving in your restaurant? World food but simple and easy to eat! Who continues to motivate or inspire you in this industry? Apart from Ayaz of OKRA for food and Sikander and Florence of Cafe Flo for management, I don't find much inspiration in the industry unfortunately, but what drives me is the idea that one day, with the collective effort of every good chef in Pakistan, we'd be up there as a solid, global food destination. I don't want us to be labeled as a country with good food; I want us to be known as a country with amazing food. All types of food, not just desi. What has been one of the worst meals you've ever prepared? So many disasters but one I still remember is this steak pie I made, in which I over did the onions and the puff pastry. It became known as aloo gosht with paratha! Describe one of the best meals you’ve ever prepared? Quite a few, but my most popular meal (with friends) is my annual Thanksgiving dinner. A proper feast for sixty plus people. Turkey, sides, pastas, meat, dessert, you name it. 2018
