Basil: Scientific Name: Ocimum basilicum Family: Lamiaceae (Mints) Information/ History: The Basil is known to be widespread all over Asia, Africa and most parts of South America. It is said that India is the first country to start cultivation of Basil and has been doing so in the past 5000 years. Today it is cultivated all around the world and is often traded by the Asian and the Mediterranean countries to France, Egypt, Morocco as main exporters.
Pallavi Palakkil Etymology: The word Basil Derives from the Greek word basileus meaning King. It is said that the sweet aroma of this herb is why it was named after the Greek word basileus. Culinary Use and Specialized uses; Basil is commonly used in fresh recipes and is commonly used in the last stages of cooking. Cooking the basil in the early stages will simply lose its flavour and the aroma of the herd as it had lost the oily substance that give the food a rich taste. The basil can be kept for a short time the refrigerator and possibly for a longer time in the freezer. Special Facts: Ancient Egyptians used Basil for religious ceremonies. They also used basil as an ingredient for the balm of mummification. In India, the use of basil for food is very limited but is commonly used as a plant that is given to worship the gods. It is also used as an Ayurvedic medicine.
Chives Scientific name: Allium schoenoprasum Family: Amaryllidaceae Information/History Chives are closely related to onions and garlic. But what is special about this herb is that it has the most exquisite flavour. They have been growing as a wild plant all over Europe, Asia and North America foe millenniums though people only started cultivating the herb, chives around in the middle ages. Chives have been dated back around 3,000 BCE, origins suggesting in Siberia, China or Greece. Gardeners in the middle ages have used chive either for decoration or to ward off evil. Siberian used chives as a gift to god. Culinary and specialized uses:
Pallavi Palakkil Chives go well together with lemon, parsley, sesame oil, vinegar, garlic, soy Sause, eggs, ginger, potatoes and chillies. Chive are grown to use their scapes as our food source as it gives a nice mild flavour to our dish. The Chives can be used as a medicine to fight off fungal infections especially around wounds like scabs. It is also used around gardens as an insect repellent. Since the flowers of the chives are being attracted by bees, it also helps other plants for pollination.
Oregano Scientific Name: Origanum vulgare Family: Lamiaceae (mint) Information/History Oregano is an herb which has purple flower and olive-green coloured leaves shaped like a spade. It is said that the oregano’s was first used by the Greeks. In the Greek mythology, the goddess Aphrodite created the herb oregano to a person to keep his life better. (Oregano means joy of the mountains) This lead to the married couples who would wear wreaths made of oregano. Oregano had first been cultivated in France in the middle ages and had been the most popular herb in the Mediterranean. Culinary and Specialized uses:
Pallavi Palakkil It would be great if you choose fresh Oregano over the dried Oregano since the fresh on will give you a delicate flavour. To look for a good fresh one, the leaves have to be a nice dark green colour so it can be free of yellow or dark spots from occurring. You will have to keep fresh oregano in the refrigerator either chopped or whole under a damp wet towel or you could keep it in the freezer. Fresh Oregano will go with any Mediterranean dish such as a salad dressing or a flavour for the pizza. In southern Philippines, Oregano was used to take away the odour of the water buffalo at the same time by also flavouring it.
Rosemary Scientific Name: Rosmarinus Officinalis Family: Lamiaceae Information/History Rosemary is an herb that has aromatic leaves that are used mainly on roasts. It is a native plant to the Mediterranean and in Asia. It can survive hot climates such as droughts for a long time period. In the Middle Ages Folklore and Customs, Rosemary was part of wedding ceremonies. Often the Bride would wear a head-piece of Rosemary and the Groom and the Guests would wear a sprig of Rosemary marking this herb as the plant of love. In myths, Rosemary was a symbol of remembrance which makes us on an ANZAC Day we would all wear a sprig of Rosemary to remember the Soldiers. Culinary and Specialized Uses:
Pallavi Palakkil Fresh or dried Rosemary herbs are used in a traditional Italian Dish. The aroma is splendid and the taste gives in as a bitter and a sharp taste. Rosemary oil is used as a fragrance. Rosemary is also burnt as incense and is used in cleaning products. India uses Rosemary as a medicine to cure some disorders.
Thyme Scientific Name: Thymus Vulgaris Family: Lamiaceae (Mint) Information/History Thyme is an herb for culinary, medicinal and ornamental uses. Thyme has a peppery taste with some little hints of lemony and minty flavour. It has a plant-like aroma which loses the smell quickly when directed in heat. It is said for that the origin for thyme is Greek. Thyme is well known to be an antiseptic especially around the 15th to the 17th Century. It was also used to fight back plagues. In World War I, Thyme was a significant herb as an antiseptic for the Soldiers. The name thyme means fumigate, so in Ancient Greece, if someone called you Thyme would be the greatest compliment you could get. Roman Soldiers use Thyme mixed with water while they bathe as the believed they could get stronger.
Pallavi Palakkil Culinary and Specialized uses Thyme is used as both fresh and dried. Even though the fresh one of thyme can be the best ingredient than the dry one, it will only last for a week or two in the refrigerator and possibly a month in the freezer. It can be used in cooked foods as leaves or the whole part of thyme. For medicinal Purposes Thyme was one of the ingredients for the modern mouthwash, Listerine. It was an ingredient as an alcohol free hand sanitizer. Also, before the modern products, thyme was used as a treatment to cure fungi specially around toenails.
