A Month to Remember .... It seems like my headline last month was the exact same thing! I saw no need to change it considering everything we’ve gone through since our March edition printed. And for those of you wondering, yes - I’m ready for spring and all the new beginnings that happen then. Unfortunately we aren’t totally done with winter yet, or at least the stormy weather. Last week brought flooding rains, like lots of rain - some places received over 5 inches of rain. Thank goodness that April showers bring May flowers, right? •••••• So for those of you that don’t know, on the last day of delivery last month - my dear sweet Dave person had a series of strokes. We were at our very last delivery of the day and he just started acting weird. Now, of course, the big burly Dave wouldn’t admit anything was wrong. But, after 22 years, I knew he wasn’t acting right. A trip to Marcum and Wallace Memorial Hospital was next and they gave me the diagnosis I wasn’t wanting to hear. He was, indeed, having mini strokes. Next thing we knew, he was loaded up into an ambulance and off to UK Medical Center

he went. Now, thankfully, he didn’t have any more of the strokes during the ride over there. It was a very tense drive for me, but he was just laying in bed smiling at me when I arrived. After a series of tests, it was determined that he has some type of blockage in his head. And I won’t even joke about it. He’s on medication now and we’ll know more in three weeks. I cannot say enough about Marcum and Wallace Emergency Room personnel who took him back right away and had him hooked up to monitors before I could walk back there. He had another little episode right in front of the doctor, so I knew then I wasn’t losing my mind. His face was in fact drooping.

We’ve been waiting for high speed internet since we moved here in 2002. I can now say .... we have it! Windstream finally put fiber optic lines out in Palmer, so the hook-up guys have been really busy. ••••• It’s almost Mushroom Festival time. We hope to see you at the festivities at some point during the weekend. Watch for our booth and stop and say hello! You’ll also find us at the Arts Council, Woman’s Club and WSKV booths. Never a dull moment.

2015 Mushroom Market, Mushroom Hunting Contest, and Mushroom Stage The mushroom related activities will be in the tent at the corner of Broadway and Court Street (behind the Courthouse) in Irvine. The Mushroom Market will be open Saturday, April 25 (9 a.m. – 7 p.m.) and Sunday, April 26 (10 a.m. – 5 p.m.). Mushroom hunters who bring mushrooms to the market will decide on the price per pound.Various types of mushrooms, such as morels, shiitakes, and oysters, can be sold. Availability is dependent on the amount that local hunters bring to the mushroom tent. Scales will be used to weigh the mushrooms. A “Mushroom Hunting Guide” will be sold at the market. Judging of the Mushroom Hunting Contest will be at the market on Saturday, April 25 at 4 p.m. Cash prizes of $50 for the largest and $50 for the most mushrooms will be awarded. The Estill Council Conservation District will sponsor the cash prizes. Educational panels on morel mushroom hunting in Estill County will be on display. A natural habitat terrarium containing the elusive morel will also be on display. The Mushroom Stage will feature several activities. Activities will include:

The bag has carrying handles and a detachable/adjustable shoulder strap which clips into the belt loops. The nylon mesh bag allows spores to fall while collecting mushrooms but yet gently hold and aerate the harvest to keep bacteria growth to a minimum. It also allows insects and debris to fall out of the bottom of the bag which is gusseted to expand with a collection of mushrooms. The mesh bag folds into its own self-storing pouch. The pouch has been personalized with “Mountain Mushroom Festival, Irvine, Kentucky.”

Mountain Mushroom Festival Twin City Kruzers Car Show

The Twin City Kruzers Car Club will host a Car Show at the Mountain Mushroom Festival Saturday, April 25 in downtown Irvine at Mack Street and Main Street. The car show registration will be from 8 a.m. to 1 p.m. with a registration fee of $15. Dash plaques will be given to the first 100 entries. Trophies to be awarded are: Top Ten, Best Ford, Best GM, Best Mopar, Best Rat Rod, Best Motorcycle, Best Specialty, Best Truck, Best Import (Honda, Nissan, Toyota, etc.) and Best of Show “Mayor’s Trophy”. Trophies will be awarded at 3 p.m. Judging will be done by out of town judges. Also there will be a 50/50 pot, raffle for a $50 gas card, four $25 cash prizes, door prizes, and a food vendor on site. DJ services will be provided by Wes Thomas. In case of rain on Saturday the show will be delayed until Sunday, April 26. If the show is delayed until Sunday it will be a rain or shine event. Hillbilly Flywheelers Masonic Antique Gas Engine Lodge & Tractor Show Pancake Breakfast The Hillbilly Flywheelers will have their 13th annual Antique Gas Engine & Tractor Show at the Estill County Fairgrounds, 38 South Irvine Road, Thursday, April 23 through Saturday, April 25. There will be demonstrations of old gasoline-powered engines and LP gas will be furnished for large engines. Those participating in the show are also welcome to participate in the Mountain Mushroom Festival parade on Sat., April 25 at 1 p.m. in Irvine. Mountain Mushroom Festival Window Decorating Contest The Mountain Mushroom Festival committee would like to invite businesses to enter the window decorating contest for our 25th festival during the weekend of April 25-26. This is a way to show community pride to all our visitors. Criteria used for the judging will include appearance/overall impression, creativity/originality, composition/spatial arrangement, thematic use of mushrooms and use of the theme, “Mountain Mushroom Festival 25th Anniversary”. The window decorations may include painting and/or an inside window display and must stay up throughout the weekend. Outside decorations will not be judged. Prize money from the Festival Committee and rosettes will be awarded to the top three. The first place winner will receive $100 and a blue rosette. The second place will receive $75 and a red rosette and the third place winner will receive $50 and a white rosette. Businesses may decorate their own window or ask an organization, such as a church, school youth group or civic organization, to decorate a window. Groups or organizations interested in decorating a window for a business or office may contact Irvine City Hall. To enter the contest or offer the use of your window, even if you don’t want to decorate it yourself, call Irvine City Hall at 7232554 or Myra Finney, Window Decorating Chairman at 723-4238. The festival shirts range in size from youth xx-small to adult xxx with a design to celebrate the 25 years of the festival. The colors are electric green and light blue in short sleeve t-shirts. Prices are $10 for the youth xx-small to adult XL and adults XXL and XXXL are $12. During the festival the t-shirts will be for sale in the gazebo on Broadway.

Mountain Mushroom Festival Parade Welcome to Estill County and the 25th Annual Mtn. Mushroom Festival

Civic organizations, churches, fire departments, and school clubs are invited to participate in the parade by entering antique vehicles, bands, marching units, and floats. All-terrain vehicles are prohibited from the parade, except for those used as part of a float. For safety reasons, no animals, bicycles or unlicensed motorized vehicles will be entered.

The theme for 2015 is “Mountain Mushroom Festival’s 25th Anniversary.” It will be Sat., April 25, beginning at 1 p.m. with the line-up at 11:45 a.m. behind Estill Springs School, 314 Main St., Irvine. Judging will begin promptly at noon. The parade will proceed up Court Street onto Broadway and end in Ravenna.

The entry fee for a float is $10 April 17 or before and $20 from April 20-25. Floats will be judged on creativity, originality, and beauty. Also 10 extra points will be given if mushrooms are used on the float. Cash prizes will be given for the top three winners of the floats. The prizes in the float category are $175 for first prize, $125 for second prize, and $75 for third prize. Parade participants will not be allowed to toss candy or other objects to the crowd in the interest of safety of the community. Candy can be handed out. Stalking The Wild Mushroom

Some mushroom hunters guard their secret mushroom patches more closely than the government secures Area 51.

“Hey, Virgil! How much farther do we have to go ?” I’m gettin’ winded!” “Heck you’re thirty years younger ‘n me! You oughta be able to keep up with an old man! Besides, it’s only ‘bout another mile or so. Just up over that ridge, then a little ways on.” The way Virgil had led me out here into the back country of Owlsley County, one may have thought we were on an illegal mission. He first had me drive away from our destination for several miles then circle back the long, or should I say the longest way around. We then parked the car off the road in as secluded an area as was available. We had taken my car because Virgil “ ‘spected none of them rascals” he was avoiding would recognize it. Leaving the car we entered the brush, and after several hundred yards, circled back until we again crossed the road and finally, towards the secret place. No, we weren’t checking on a gold deposit, nor were on some dark covert operation for a shadowy agency. We were going to Vigil’s perennial mushroom patch. That’s right, wild mushrooms, morels. Every spring hundreds of folks who know, head out into the woods and along the streams, open areas, wherever they suspect these delicious and elusive fungi may grow. The morel is sometimes known as the sponge mushroom or, possibly because of it’s delicate

To give some idea of their size, the photos were taken with the morels on a 10+ inch plate sitting on a barrel. flavor, the “dry-land fish”. There are at least four varieties, all edible and all delicious. There are several mushrooms that resemble the morel but the true morels are indeed the best known and most sought after edible fungi. All the species of morel fruit in the Spring and all are edible and delicious. these mushrooms are indeed highly regarded. The most sought after and most highly prized morels is the Morchella deliciousa. I’m not making that up. That is the name learned scientists have given this elusive fungi. The only place this plant can be found is in the wild. While many attempts have been made to produce the mushroom commercially, and spores have been successfully germinated, no one has succeeded so far. For that reason, whenever these rare treats appear on a restaurant menu, they command a very high price - ten to twenty times that of the best steak, ounce for ounce. These fungi fruit for a brief period in the Spring and in areas that seemingly are disparate. When one is found, however, there are usually numerous others in the immediate area. They also tend to reappear in the same location year after year, the reason secret ‘shroom plots are so jealously guarded. Just ahead, I heard Virgil let out a loud curse. Followed be a stream of invectives and then a tone of resignation. “Well I’ll be danged! Looks like some low down dirty dawg has done beat us to the ‘shrooms! See where they stirred up the leaves and such.” “How do you suppose anyone was able to find your secret path after all the precautions you take, Virgil?” “Well, I reckon they done it same way I did, follered somebody what knew for four or five seasons, how else?”

Giving Up Secrets Unlike Virgil and others of the same ilk, and because I’m such a nice guy, I intend to share the location of two of my most secret, and most productive ‘shroom patches. Being the eternal optimist, I visited one this weekend. I knew going out the morels wouldn’t be up yet, but the weather was great and it was as good an excuse as any to get out. Sure enough, there were no morels, but the bloodroot wasup. I also spotted some Spring beauties, trout lilies (not in bloom yet) and mayapples just emerging. The light was poor where the mayapple was just pushing through and they do look a lot like slightly green morels at that stage and well.. I have to admit, it was me that killed all those baby mayapples! I’m sorry. Anyway now comes the good part - I’m going to tell you just where may two best plots are. The one most productive is just past Beattyville a few miles down the South Fork. You’ll know the place, there’s a red barn fairly close by and you pass a couple white house three or four miles back. O.K., the other really good spot is, are you ready? Just into Wolfe County five or six miles and off to the left. There you have it, the locations of my long-guarded secret morel plots. Enjoy!

The Lost Art Of Canning By Erin Kathleen Turley, Contributing Writer

Our region, with the beauty and luster of farming & horses has delicacy all of its own. Driving through our state appeals to the character and charm that dates back into the innocent history of our land. We scurry around, hoping that we even have enough time to prepare a dinner for our family…hoping that tonight will not be another ‘fast food’ night. As spring approaches, we are becoming eager to enjoy the outdoors, leave our windows open at night to hear the frogs, and wake to beautiful songs from the birds. Canning in our region has become what I call ‘a lost art’. Most of us remember our grandparents and great-grandparents canning a variety of vegetables and jellies. We have gotten away from the traditions…the traditions that allowed us to reminisce on wonderful memories we had while growing up. I ultimately decided years ago that I wanted my children to know about canning and began canning myself. I do mostly butters. It is time consuming but the aroma that fills our house makes it worthwhile. I consider canning to be an art although decades ago, it was essential to daily living. Canning began in the Eighteenth Century. Preserving food and drying meats became almost detrimental in the winter months as food would be scarce. As our Appalachian forefathers brought the tradition of preserv ing foods and drying meats….we felt an obligation, a duty to keep such traditions within our families. As decades have passed, we have discovered the quickness of fast food and the convenience of grocery stores. What is to happen to the next generations of our area? Will they ultimately ask, ‘what is canning’? I want to share with you a favorite recipe of mine that your family will truly love. Use it on toast, ice cream, or biscuits at dinnertime. Your family will enjoy this treat.

Peach Freezer Jam Makes about 5 (8 oz) half pints Preserving Method: Freezing

You Will Need: • 2-1/4 cups finely chopped peaches (about 2lb or 5 med) • 2 Tbsp lemon juice • 4-1/2 cups sugar • 3/4 cup water • 6 Tbsp of fruit pectin • 5 Plastic (8 oz) Freezer Jars or 8 oz half pint glass jars with lids and bands (I prefer Ball) Directions: • COMBINE prepared fruit* with lemon juice in a large bowl. Add sugar, mixing thoroughly. Let stand 10 minutes. • COMBINE water and fruit pectin in a small saucepan. Bring to a full rolling boil that cannot be stirred down, stirring constantly. Boil hard for 1 minute, continuing to stir. • ADD cooked pectin mixture to fruit mixture stir for 3 minutes. • LADLE freezer jam into clean freezer jars leaving 1/2 inch headspace. Apply caps and let jam stand in refrigerator until set, but no longer than 24 hours. Serve immediately, refrigerate up to 3 weeks or freeze up to 1 year *To Prepare Peaches: Peel and pit finely chopped.

Garden Classes begin in April The Powell County Extension Office will once again be offering our annual Extension Gardening Classes each Monday night in April at the Powell County High School cafeteria. Each class will begin at 7:00 p.m. and will feature a one hour lecture and approximately one hour spent out in the greenhouse planting and potting flowers and vegetables of all kinds. We’re all ready for winter to be over and ready to get our hands dirty! Some of this year’s topics will include : Growing gourds, Pruning and grafting, spring perennials and lots more. Participants will also have the opportunity to make a cement pot from creek stones and cement at a reasonable cost. The Spring garden class is open to everyone, whether you have a green thumb, or not and will include this lecture, a garden party picnic and a plant sharing and pot luck dinner. Participants receive some free seeds and door prizes at each meeting and take a few plants home from the learning greenhouse to plant at home. The Garden class is open to anyone who wants to start gardening and learn from other gardeners in our county. Contact the Powell County Extension Office at 663-6405 for details. Wear your old clothes, because you will get dirty during this class. If you love to garden, you will love our gardening class. We encourage everyone with a green or even a “black” thumb to attend.

Farmer’s Market Meeting Scheduled April 9 Hopefully 2015 will be a great growing season. Maybe you have thought in past years, “Hey, I really would like to make a little extra income from my garden, and sell produce at the Powell County Farmer’s Market”. We would love for you to be able to do that. With the increased interest in “locally grown food”, the more members we have in the Farmer’s market, the more of that we will certainly have. To learn more about the Powell County Farmer’s market, make plans to attend this year’s Market orientation meeting on Thursday, April 9th at 6:30 p.m. at the Powell County Extension Office conference room. Everyone is invited, and those who attend will have the opportunity to become certified to be able to accept WIC vouchers and Senior coupons at the market, which as Martha Stewart says “is a good thing”. The Powell County Farmers Market is open to all residents living in Powell County. The market has lots of opportunities which can help youth and their parents and grandparents make a little additional income from their summer garden. We hope you can plan to participate in the Farmer’s Market this year.

Powell County Health Fair Scheduled For those Powell County residents who have been putting off going to the doctor for a long time, the Powell County Community Health Fair is scheduled for Thursday, April 16th at the Powell County High School cafeteria, beginning at 5:00 p.m. and going until 7:00p.m. You will want to put this date on your calendar. Some of the services offered this year by the Kentucky River foothills and other local health agencies may include glucose screening, cholesterol tests, vision and hearing tests and many other screenings that farmers and gardeners need to check on from time

Farmers might remember 2010 where we had a profusion of spring pasture growth, followed by dry weather, the white clover came up everywhere in beef cattle pastures across the state, Hopefully, this won’t happen again in 2015, but bloat can be a real problem in spring pastures. Bloat is a condition of ruminant animals only, and is far more common in cattle than sheep, deer and goats. Bloat is simply a collection of gas that cannot be burped out fast enough! Bloat is more likely this time of year when cattle are grazing quickly growing grass, and especially clover. Pastures are the most dangerous when they are wet from frost, dew or a light shower of rain. The prognosis of bloat is usually a simple matter. Affected animals usually stop eating and will distance themselves from the rest of the herd. You can tell a cow is bloated, because she will be just that. Her skin will be extremely tight and she will have labored breathing. The least exertion on the animal may result in shortness of breath, and the animal may quickly fall due to a lack of oxygen. If you happen to have an animal that bloats you must take action immediately. The animal, or all animals should quickly be removed from the field where bloat is occurring and animals should be provided good quality grass hay at the rate of at least 2 pounds per head per day. Feeding grain may also help. Waiting until the clover is dry before cattle are turned out into the pasture in mid morning may also be necessary until grass growth begins again. Proloxalene is also an effective tool in reducing the risk of legume bloat. If blocks are not available, producers can obtain a powder form of proloxalene. During this time of year, the targeted intake level is 2gms /100 pounds of body weight. Cattle must be offered this daily and all animals need to receive the product. It is recommended that the cattle receive this product 2-3 days prior to being introduced into high risk pastures. The powder form would need to be mixed into grain and fed into all the cattle in the herd. Pasture blocks that are sold as bloat prevention blocks have the chemical proloxalene in them, but it is necessary that all the animals receive this product, in order to prevent bloat. Long story short, watch your cows. Bloat can be prevented by continuing to feed grain and hay. Some animals-usually the bossy, fat ones may be more prone to bloat than others. These may be the ones which already have labored breathing, watch them especially. Most bloated animals are found dead in the field, but bloat can be treated by tubing the animal or providing a pint of mineral or vegetable oil to break up the gas inside. Call the veterinarian immediately in order to save the animal. Once an animal goes down, it will only be a matter of minutes before death occurs. As the old saying goes, if it is not one thing, it is the other. This is always true with farming, in general! An exciting new event is being planned by the Estill Action Group and the Mountain Mushroom Festival committee for the upcoming 25th Annual Mountain Mushroom Festival. The Speedy Spore River Run is a 6 mile and 12 mile kayak and canoe race on the Kentucky River that will take place on Sunday, April 26. Registration and checkin will be under the Irvine Bridge from 10 a.m. until 11:30 a.m. The registration fee is $30 per person. The entry fee will include the price of insurance, a goody bag with a whistle, snacks, and a decal sticker with the original Speedy Spore River Run Logo design. Winners of each race category will also receive a hand-carved wooden Morel Mushroom trophy, a truly unique piece of art. A livery service will be on site with a limited number of kayaks and canoes available for rent. There will be a mandatory pre-race safety meeting at 11:30 a.m. for all participants, presented by the Kentucky Department of Fish & Wildlife. The six-mile race will start at 12:30 p.m. under the Irvine Bridge and will finish at the Kentucky River Park and Recreation Center. The 12-mile race will begin at 1 p.m. under the Irvine Bridge, will turn around at the Kentucky River Park and Recreation Center and will finish under the Irvine Bridge. An awards ceremony under the Irvine Bridge will follow the race. Pre-registration is encouraged and the registration form and all race day information can be found on the Mountain Mushroom Festival’s website: www. mountainmushroomfestival.org. Other supporters of the Speedy Spore River Race include the Kentucky River Authority, Kentucky Riverkeeper, Kentucky River Water Trail Alliance and the National Park Service. The planners of the Speedy Spore River Race hope to boost enthusiasm and advocacy for the Kentucky River and encourage responsible use of the River, one of Estill County and Kentucky’s most precious natural resources. Planting a Tree Can Make Such a Difference Nothing affects the pleasantness of a yard and home for the size of the investment any more than does the careful selection and planting of just one tree. One evergreen tree, such as a big southern magnolia, an Atlas or deodar cedar, or a stately spruce or fragrant fir tree, can be the glory not just of your yard but the glory of the whole neighborhood when most yard trees are bare. A lovely or unusual evergreen looks great at all times, but especially in winter. One maple tree can color the yard one cool fall weekend almost as if a fairy had passed by at night with a can of brilliant spray paint. One black gum or sourwood tree can set a yard ablaze if there’s a backdrop of green trees. In no way can the Bradford pears with springtime clouds of white compete with these blood or carmine red trees. One flowering cherry tree, one saucer magnolia with it’s huge pink blossoms, or one flowering crabapple can appear so royally in a landscape of budding maples, bare oaks and bright daffodils in springtime. Just one majestic oak can make a grand statement. From pin oaks, burr oaks to live oaks, these trees offer a permanence to a landscape few trees can. For color, try white oaks (for purple fall color), scarlet oaks for lingering deep scarlet after most trees have shed their leaves, or the mighty burr oak. One ginkgo or Kentucky coffee tree can almost take up the whole yard in old age, (and grass will still grow under their branches). So many now live in developments created by large building contractors, called subdivisions. You know, the flat places where all the big trees were dozed, the topsoil was sold, and a little dirt and grass cover a bunch of clay, broken bricks and rocks—the kind with a few dollars worth of “generic” shrubbery that will allow them to be advertised as “new home with landscaping for sale”. A big bold or unusual tree that gets attention can make your

specimen, one big lovely or unusual tree, can make a tremendous statement. One grouping of trees can be combined for even more of a good thing. When doing just one tree, it is smart to go ahead and go overboard a bit, get a truly unique or lovely tree. Get one that will be noticed, remembered, or will be talked about. “You know, the yard with that big tree that blooms in the middle of summer.” For those with big yards, planting lots of single trees, groups of trees, trees with an understory of shrubs or perennials, you can do a lot with smaller sized trees and shrubs, plus maybe one big special tree and still not break the bank. In a few years, if selected and planted wisely, even small cheap trees from the big box store will look great in your landscape. Both spring and fall are great times to plant a tree. For planting bare-root trees or moving trees from one place to another, it’s really the only times that will work. Containerized and some b&b stock can be planted at most any time of the year, except when the ground is frozen. If it seldom dips below zero where you live, fall is actually the best time to plant most trees and woody perennials. Your yard may be bare, or it may have a number of trees. Adding one more, especially a special one, will make a difference. One evergreen if you don’t have any, one shade tree of you have no shade, one fruit tree if you’d like to try growing something you can eat. Forest Service opens roads for turkey season

WINCHESTER – Two Forest Service roads on the Cumberland Ranger District will temporarily open for turkey season. The Ramey Creek Road # 961 in Rowan County and Shooting Range Road # 909 in Menifee County (to the second gate) will be open to motorized vehicles beginning March 27. These gravel roads are typically gated for administrative use only. The roads will reclose on May 11. “The opening of these roads will increase hunting opportunities, especially for those who prefer more isolated areas for hunting,” said Acting District Ranger Tim Eling. “Once these roads are open to motorized travel, turkey hunters can be more widely distributed across the forest, which will also increase their likelihood of harvest and provide a safer hunting environment.” Hunters are encouraged to carry out their garbage so litter does not affect the outdoor experience of other visitors. Forest Service roads cannot be blocked when parking. Hunters must park to allow for other vehicle traffic. These roads may close earlier than planned if road surface damage begins to occur from wet weather.

Forest Service recreation areas open soon on London, Stearns districts

WINCHESTER – After a long cold winter, the London and Stearns districts of the Daniel Boone National Forest are preparing campgrounds and picnic areas for open season. On the London Ranger District, Holly Bay and Grove campgrounds at Laurel River Lake will open on Friday, April 10. The Craigs Creek Group Use Area and two boat-in campsites on the lake will also open. The Rockcastle Campground and all of Bee Rock Campground along the Rockcastle River will open on Saturday, April 4. On the Stearns Ranger District, all recreation areas will open on Wednesday, April 1. The scheduled openings include the Alpine Picnic Area, Bell Farm and Barren Fork horse camps, and all of Great Meadow Campground. Several campgrounds and picnic areas on each district are available for use year round. Mushrooms contain a variety of nutrients, including a small amount of B vitamins. A ½-cup serving contains only 9 calories. Common mushrooms are higher in potassium than exotics and shiitake are higher in selenium.

Mouth-Watering Mushrooms With Irvine’s Mountain Mushroom Festival coming the last weekend in April, let’s discuss mushrooms. Mushrooms are fungi that grow from microscopic spores. They live off decaying organic matter such as wood, straw, and manure. Several different mushrooms are grown by farmers. The mushroom farmers purchase spawn, which is actually grain or seed inoculated with spores, and

Knowledgeable mushroom experts pick wild mushrooms. You have to know which are edible and not poisonous. The safest choice would be to buy through your local grocery store or farmer’s market. Select mushrooms that are firm and evenly colored with tightly closed caps. The thin membrane under the cap is known as the veil. A closed veil indicates a delicate flavor while an open veil indicates a richer flavor. The veil opens as moisture is lost, concentrating the mushroom’s essence. The average shelf life of mushrooms depends on the variety. A brown or black veil indicates the mushroom is past its prime. For optimum results, The Mushroom Council recommends refrigerating mushrooms in a porous paper bag. Avoid airtight containers because moisture condensation causes the mushrooms to spoil rapidly. Mushrooms absorb strong odors, so store away from onions or garlic. To clean mushrooms, gently wipe with a damp cloth or soft brush. Or, rinse with cold water and pat dry with paper towels. Avoid soaking mushrooms. Mushrooms bruise easily so they should be handled with care.

Mushrooms can be prepared many ways, including grilling, roasting, baking, frying, sautéing, stuffed, and as a topping. With the Asian influence, soy sauce, ginger, lemon grass, and sesame seeds enhance the natural flavorings.
