We survived another year on Poppy Mountain. David and Yvonne Harrison were our guests again, along with Shirley Lowe from Clay City, who joined us this year. We always have a pretty nice week up there and this year was no exception. The weather only got bad one night - Saturday brought a few rain showers. But, all in all, another great time was had by everyone. We can’t thank Poppy Mountain enough for their hospitality and for their support each year in this magazine. And it’s always fun to catch up with everyone each year on the mountain, so I’m sure we’ll

be returning again in the future. •••••• The weather is starting to turn chilly. How many of you have just been holding your breath before you have to turn the heat on? I know that we have. Thank goodness we have one of those electric fireplaces this year, so it takes the chill off. I’m afraid that the winter is going to be another cold one around here. Trust me, I won’t be asking for a big ole’ snowfall this year. Been there, done that. Last year’s water outage was enough for me never to want it to freeze again! I’d much rather go without power than water.

•••••• I cannot end this column without mentioning Fred Brown, who passed away a few days ago here in Irvine. What a man Mr. Fred Brown was. He was a great supportor of this magazine, and our farm too. We were honored to sit in front of him at church when we attend and it will be very strange to see his spot empty from now on. Our prayers go out to his wife Thelda, son Fred Jr. and the rest of the family, along with our church family at Wisemantown United Methodist Church.

Each year when October rolls around, I think about my Grandma Alice, my mom’s mother. Her birthday was in October and one of these things she always told me near her birthday - or mine for that matter - was ‘get a mammogram.’ October just happens to be Breast Cancer Awareness Month and I think it’s kind of fitting that it rolls around on my Grandma’s birth month.You can see on the back page that Marcum and Wallace Memorial Hospital has a wonderful radiology department with friendly faces just waiting to help you get yours taken care of. It’s on my list this month, is it yours?

Christmas Arts & Crafts Show 12th Annual Event Coming December 5

The 12th annual “Christmas Arts & Crafts Show” will be Sat., Dec. 5 10 a.m. – 4 p.m. at the Central Office Gymnasium, 253 Main Street in Irvine. The Estill Arts Council will offer unique gifts for sale from local artists and craftsmen, live entertainment, free children arts activities, a silent auction of arts and crafts items, concession stand with chili and hot dogs, and 50/50 pot. Only original artwork, handmade crafts, and baked goods (individually wrapped) are eligible for entry. No canned goods can be sold unless home based processing has been approved. Demonstrations are encouraged. Area artists and craftsmen can get an application form from the Citizens Guaranty Bank (River Drive), Estill County Public Library, or Ravenna Greenhouse. The cost of a 10’ x 10’ space will be $15 for Estill Arts Council members and $20 for non-Estill Arts Council members before Nov. 6. Entries postmarked after Nov. 6 will be an additional $10. Thyme on Broadway Has Re-Opened!

n Irvine business has re-opened after former owner Sherry Reams took a break from the business a few months ago and local residents have been patiently waiting for it’s return. Thyme officially re-opened on September 8th, after a few weeks of anticipation as the news spread about the new owners. Yes, I said new owners. That is because Thyme on Broadway was recently purchased by Mark and Laura Ashley Johnson. Now, most people in Estill County know Laura Ashley, she is the former Laura Ashley Dennis and known to so many in the area. We actually met Laura Ashley through Relay for Life years ago, and many members of her family have now become friends through various organizations that we all belong to. Of course, she up and moved on all of us a couple of years ago after meeting Mark Johnson, who works as an Engineer on a project in Easterm Washington. And get this ... he’s from the same valley we are from out west. He’s from Asotin, on the Washington side of the Snake River, Dave and I are from Lewiston, on the Idaho side. But, we all considered “The Valley” home for many, many years. So, we were sad Laura moved, but happy she had met Mark. Since that time, they’ve married and continued to come back to Estill County for visits, although they live in the Tri-Cities area of Washington State.

Thyme on Broadway has always been a place Laura Ashley loved and she never missed it during her visits ‘home.’ The entire community is pleased that Thyme has re-opened and that a former resident has invested in her hometown. We were all a bit afraid that Thyme wouldn’t re-open. And to those of us that are coffee lovers, well that just wasn’t good news. The business, which is located at 131 Broadway in downtown Irvine, is much more than coffee though. I’ve pretty much learned when I visit that I walk away with more than coffee every time. They open at 6:30 am Monday through Saturday for the early coffee crowd, and they begin serving from their breakfast menu starting at 7 am. The menu at Thyme offers high quality ingredients and healthier options for the community. You might wonder how Laura Ashley and Mark run this from Eastern Washington State? They have an excellent staff that oversees it’s operation. The manager is Laura’s mother Phyllis Dennis. Former employee Brittany Brinegar is Assistant Manager and Lead Barista is John Isaacs. In fact, they tried keeping as many former employees as they could. Their culinary team consists of Lori McKinney, Eldina Howell, Mandy Neal, Marla Marrs, Chris Winthrow, Brenda Clair and Laura’s aunt, Rebecca Wolfinbarger. I’m sure you’ll find that Estine Tipton, mayor of Ravenna and Laura’s grandmother, does some of the baking from time to time as well. And who doesn’t love Estine’s cooking? Of course, anyone that knows me, knows how much I push supporting local businesses and Mark and Laura Ashley have really taken a great step in that direction. They offer Brown Farm Meats for their breakfast sandwiches and are great supporters of Ravenna Greenhouse, Take It Personal and All Things Country Magazine, along with other businesses throughout the community. They welcome groups and children are welcome as well. Thyme offers a lounge-type setting with free Wi-Fi, so you can enjoy your tablets while sipping on a delicious coffee beverage. They offer take-out, which Dave and I have taken advantage of many times since Thyme originally opened. They also offer catering services to any business, any day of the week. Zucchini Squash Bread Pauline Townsend, Irvine 2 cups sugar 1 cup oil 3 eggs 2 cups grated raw zucchini 3 cups flour sifted with: 1 tsp. soda 1 tsp. salt 3 tsp. cinnamon ½ cup chopped nuts Mix in order given. Pour into two greased loaf pans and bake at 350° for 45 minutes.

Mix eggs and sugar. Blend well and then add spices, flour and pumpkin. Add heated milk. Beat egg white and fold in last. More pumpkin can be used if desired. Bake at 425° for 15 minutes, then at 350° for 45 minutes.

Cream together potatoes, sugar, milk, butter, vanilla and eggs. Put in baking dish. Mix the topping mixture and spread on top of potatoes. Bake 350° for 35 minutes. Pumpkin Pie Wanda Walling, Irvine 2 eggs, slightly beaten 1 can (16 oz.) pumpkin (solid packed) ¾ cup sugar ½ tsp salt 1 tsp cinnamon ½ tsp ginger ¼ tsp cloves 1-½ cup milk (evaporated) 1 deep pie crust shell Pre-heat oven and cookie sheet to 375°. Remove one crust shell from freezer. Combine filling ingredients in this order: eggs, pumpkin, sugar, salt, cinnamon, ginger, cloves and evaporated milk. Place pie shell on pre-heated cookie sheet, pour filling into shell. Bake on pre-heated cookie sheet for approximately 70 minutes or until knife inserted comes out clean.

Arrange apples in well greased 2 quart casserole dish. Sprinkle with water and lemon juice. Mix flour, sugars and cinnamon and mix well. Cut in butter until mixture is course. Spoon crumb mixture evenly over apples. Bake 375° for 40-50 minutes. Boston Market Sweet Potato Casserole Frances Hall, Irvine 3 large sweet potatoes 1 cup granulated sugar 2 eggs ½ cup (1 stick) butter, softened 1 tsp vanilla extract Crunch Topping: 1/3 cup melted butter 1/3 cup flour 1 cup brown sugar 1 cup chopped pecans 1 tbsp cinnamon Boil potatoes until tender. Remove skins when cooled. Put into a large bowl and whip them until fluffy. Add remaining ingredients. Pour into a greased casserole and top with the Crunch Topping. Bake at 350° F for 45 minutes. Candied Sweet Potatoes Faye Bunch, Irvine Sweet Potatoes Brown Sugar, to taste 1 tbsp margarine. Peel and slice sweet potatoes. Boil until just tender. Drain. Put in a baking dish. Add brown sugar and margarine. Bake at 350° until done.

(NewsUSA) - Your attic could save you from breaking your neck this autumn. Got your attention, huh? Seriously, this is one of the two times each year when homeowners are supposed to check the health of their roofs. (Among other reasons, because they’re key to a home’s energy efficiency.) But who wants to be climbing a ladder 25 feet or so into the sky when the weather is turning sharply colder and nastier? That’s where your attic comes in. According to Jason Joplin, program manager of the Center for the Advancement of Roofing Excellence, that space you’re probably using mainly for storage can substitute, as a fallback, for the eyeball roof check normally recommended to be done every pre-winter and spring. “Roofs actually create an insulated barrier that helps trap heat inside, and most attic spaces are located right below them,” says Joplin. “That makes them perfect for spotting potential problem areas and damage without worrying about falling off a ladder.” Here’s what to look for while up there: * Water leaks. As sure as Tom Brady will never be a fave among Deflategated Indianapolis Colts fans, it will soon storm. And when it does, shine a flashlight up in the attic to check not only for dripping water and condensation, but also for water stains on the ceiling, walls and floors. All signal that H2O is finding its way beneath your roof’s shingles or behind its flashings. * Ventilation. “Think of the attic as the lungs of the house,” advises Joplin. “It has to be able to breathe in order to function properly.” Which is to say, vents stuffed with debris need to be cleared. * Animal damage. You know those “If you see something, say something” homeland security ads? Well, to avoid the havoc refuge-seeking birds, bats, squirrels and raccoons can create, warning bells should likewise sound -- followed by a call to a pest-control pro -- if you spot any of these telltale signs: nests, droppings and gnawed wood, wires or insulations. * Structural problems. The mere hint of a sagging roof -- look up for this one -- could indicate potential structural weakness requiring professional repair. Wilderness Wanderings . . .

Loons

Once you’ve heard one, you’ll never forget it, ever. Common Loons, one of five Loon species found in North America, are signature birds of the North Woods, their varied calls iconic sounds of wild places, wilderness, and back country freedom. They’re one of my favorite wild critters of all, and have probably shaped a significant part of my thinking and wilderness ethic. I literally grew up with them on the eastern Pennsylvania lakes we frequented, the lakes and ponds of Maine during summer vacations, and the coastal Atlantic waters when deep sea fishing. Loons inhabit the remote wilderness lakes where we take our summertime Canada canoe trips and the Florida bayous where they winter, and we see them during our wintertime canoe trips there. I occasionally see them here in Kentucky on Laurel River Lake, where they stop over for rest and refreshment while on their twice yearly migration flights between the North Country and Gulf Coast waters.

When the North Woods lakes become ice-free in late spring, the males begin looking for a suitable nest site. They like to use the same nest areas, and will return from migration to the same lakes each year. Like many birds, they are mostly monogamous, and the nesting

pair will work together gathering vegetation for the nest in their secluded spot on the shoreline. Then they root around on the pile, making a bowl-shaped nest cup in the middle. Generally two eggs are laid, and both parents take turns incubating the eggs, a secretive, quiet process that takes about a month. They are very territorial birds, and you will often hear Loons calling from out in the lake, or flying circles around the lake, announcing their territory. They do this a lot at night as well as during the day. The next time you see a Loon, observe it closely. It will most likely have the very characteristic black and white checkered pattern on its feathers. This is their summer breeding season coloration, which they don’t start getting until at least two and a half years old. When they molt each fall their winter feathers are a dull grey with whitish belly. If you are lucky enough to be in the North Woods, and see an adult pair with babies, they are pretty old birds. Loons don’t start breeding until they reach five years of age. At best they will raise two babies

Studies have shown the number one cause of death in adult birds is ingesting lead shotgun pellets from lake bottoms, and the biggest killers of chicks are motorboats and personal watercraft. This incredible bird is worthy of our care, concern, and

protection. They are an excellent indicator species. What that means is we can gauge environmental and habitat conditions by their presence or absence. Loons need clear, clean water in order to see the fish they need for survival and raising a family. Polluted or silty water destroys aquatic life like insect larvae and other

macroinvertebrates that fish feed on, or will kill the fish outright. No fish, cloudy water, polluted water, no Loons. Declining Loon populations are reflecting our poor stewardship of water resources and watershed habitats. See you in the woods, sometime soon,

Let’s take a close “nature detective” look at this incredibly cool bird as I share some of its secrets with you. Most often people that see one for the first time refer to it as a duck, but in fact it is not. It is most closely related to

a penguin, and is completely separate and different from all the various duck species. Right away this should give you a clue that it is going to be a very neat bird to learn about. Loons are quite big, its size ranging between that of a duck and a goose. They can be three feet long, have a wingspan over four feet, and weigh up to 12 pounds. Pretty impressive. Most birds have hollow bones, which are incredibly light and allow for better flying ability. These are called ”pneumatic bones”, meaning air-filled. The Common Loon has solid bones, which are much stronger. This bone structure enables the Loon to be a super powerful swimmer. They in fact spend almost all their time in the water, and only come on land for short distances. Like penguins, their legs attach far back on the body, and on land they are quite top-heavy. Their nests are located in very secluded bays right along the shore, so the parents can approach the nest underwater or partially submerged for secrecy, then immediately climb into the nest and hunker down, where they will sit still and quiet, nearly disappearing in plain sight. The whole nesting process is actually quite fascinating, and their behavior is worthy of sharing with your family or grandkids.

Rats

These primarily nocturnal pests are known to gnaw through almost anything to obtain food or water, including plastic or lead pipes. Rats are able to fit through an opening the size of a quarter, and once inside they are capable of spreading diseases such as plague, jaundice, rat-bite fever, trichinosis and salmonellosis. Tip: Before bringing decorations out of storage and into the home, inspect all boxes for signs of infestation such as gnaw marks and rodent droppings. When it’s time to put away decorations, store them in a plastic, sealed box to keep rodents out.

Bats

Bats are frequently associated with vampires and haunted houses, causing an unfounded fear in many people. However, it is important to note that bats are common carriers of rabies, a disease that can be fatal in humans, and their droppings can lead to histoplasmosis, a lung disease. Tip: Screen attic vents and openings to chimneys, and install door sweeps this fall to keep bats out of the home. If an active bat infestation is suspected, it is important to contact a licensed pest control professional because bats are protected by law in most states.

While most spiders that invade homes are simply an annoyance, albeit a creepy one, the brown recluse and black widow spiders will bite when threatened and can cause painful -possibly fatal -- reactions. Prompt medical attention is required if you’ve come into contact with one of these venomous spiders. Tip: Avoid coming in to contact with spiders by keeping garages, attics and basements clean and clutter-free. What Makes Fall Colors?

Fall is here! Many trees and shrubs will begin showing their fall colors. The intensity of fall color and time of peak color vary and are determined by complex environmental factors, as well as the genetic makeup of the plants themselves. These factors vary by plant and by geographic area. What happens to leaves in the autumn? In summer, leaves are green because of a group of pigments known as chlorophylls. Chlorophylls are vital to the tree’s food-making process, called photosynthesis. Leaves manufacture simple sugars from water and carbon dioxide, using energy captured from the sun by the chlorophylls. These sugars are the sole source of the carbohydrates needed for the tree’s growth and development. In the food-making process, chlorophylls break down and are continually “used-up”. However, the tree replenishes them all through the growing season. As long as replacement remains high, the leaves stay green. As fall approaches, influences inside and outside of the plant cause the chlorophylls to be replaced at a slower rate. Shorter days cause a layer of cork cells to form at the base of each leaf, gradually closing off the flow of water and minerals into the leaf. This is the location where the leaf will eventually separate from the tree and fall to the ground. As the supply of chlorophylls dwindles, other pigments that may have been present in the leaf all along are slowly unmasked and begin to show through. Unmasked pigments include the carotenoids, which result in brilliant yellows and oranges. Some trees where carotenoids are conspicuous include ash, maple, aspen, birch, black cherry, cottonwood, tulip tree, and sycamore. Another group of pigments, called anthocyanins, are responsible for the reds, purples, and blended combinations of these colors. Unlike the carotenoids, these pigments have not been present in the leaf all season. Instead, they develop in late summer in the sap of the leaf cells. Their formation depends on the breakdown of sugars in the presence of bright light while the level of phosphate in the leaf is reduced. Phosphate is at a high

Relay For Life of Estill County 2016 Kick-Off Meeting The Kick Off meeting for the 2016 Relay For Life of Estill County event will be held October 13, 2015 beginning at 6:30 p.m. The monthly meetings are held at the South Irvine Baptist Church Fellowship Hall, located in South Irvine.

The Trailhead Cabin at Red River Gorge Cabin Rentals, located in Cliffview Resort at Slade, is a cabin with a great location including a long private driveway. You’ll find a hot tub on the covered back deck and a wood-burning fireplace in the living room of this beautiful cabin. The cabin sleeps from four to six people and is very private. There are two bedrooms each with a queen bed and two bathrooms, plus a pull out couch. You’ll find the usual amenities like television with Dish Network, a DVD player and all linens and towels are furnished for your stay. The kitchens are nicely furnished with everything you would need to prepare the perfect meal for your get-away. This cabin actually has amenities for your pet too - a fenced in back yard with a doggie door. Most of the cabins at the resort allow pets, with a deposit of course. Since many families have dogs that are members of their families, this is the perfect place because they are welcome.

Angel Biscuits Audrey Adams, Irvine ½ pint carton of whipping cream 1-½ to 2 cups self rising flour Mix together whipping cream and flour, then mix flour with fork. Spoon out on a pan sprayed with Pam. Bake at 350° for 15 to 20 minutes. Pumpkin Bars with Cream Cheese Frosting Wanda Whisman, Rogers 4 eggs 1 cup vegetable oil 2 cups sugar 1 can (15 ounces) pumpkin 2 cups flour 2 teaspoons baking soda 1 teaspoon baking powder ½ teaspoon salt 2 teaspoons cinnamon* ½ teaspoon ginger* ½ teaspoon ground cloves* ½ teaspoon ground nutmeg* 4 ounces cream cheese, softened ½ cup butter, softened 1 teaspoon vanilla 2-¼ cups powdered sugar Preheat oven to 350°F. Combine first four ingredients in a large bowl. Using a wire whisk, mix together flour, baking powder, baking soda, salt and spices; add to pumpkin mixture and mix well. Pour into greased and floured jelly roll pan. Bake for 20 to 25 minutes. Cool. Beat together the cream cheese, butter and vanilla extract, gradually add powdered sugar. Frost cooled cake. Cut into bars. *May substitute all these ingredients

with 1 tablespoon and ½ teaspoon pumpkin pie spice. Sweet Potatoes Sarah Watkins, Winchester 3 cups mashed sweet potatoes 2 lg. eggs 1 tsp. vanilla ½ cup flour 1 cup brown sugar 1 cup sugar 1-½ sticks margarine ½ cup milk ½ cup pecans, chopped Preheat oven to 350°F. Mix sweet potatoes, sugar, eggs, 1 stick of margarine, vanilla and milk in a bowl. Pour the mixture into a buttered casserole dish. Mix the flour, pecans, brown sugar and remaining ½ stick margarine in a bowl. Sprinkle this mixture over top of the sweet potato mixture. Bake at 350° for 35 minutes Pumpkin Cake Joyce Willadean Keating, Stanton Sift together: 1 tsp. salt 2 cups flour 2 tsp. baking powder 1 tsp. soda 2 tsp. cinnamon Beat 4 eggs and 2 cups sugar; add 1 cup cooking oil; beat again. Add flour mixture, beat again. Add 2 cups pumpkin and beat again. Put in 9x13 baking pan. Bake at 350° until done. Cool and spread with Butter Cream Frosting Butter Cream Frosting: ¼ cup soft butter

2 cups confectioner’s sugar 1 dash salt 2 tbsp. cream 1 tsp. vanilla 6 oz. chopped pecans, optional Beat all ingredients at low speed until blended. Then beat at high speed until smooth and creamy. If too thick to spread, add a little more cream.
