SOUTHERN-STYLE CATFISH NUGGETS

Ingredients

• 1 lb. Great Fish Co.® Catfish Nuggets

• 1 cup all-purpose flour

• 1 cup cornmeal

• 1 cup buttermilk

• 1 tsp paprika

• 1 tsp cayenne pepper

• 1 tsp garlic powder

• 1 tsp salt

• 1 tsp Tabasco sauce

• Vegetable or peanut oil for frying

Thaw the catfish nuggets and place them into a large resealable bag. Pour in the buttermilk and add the Tabasco sauce (add more if you want it spicier).

Mix the ingredients in the bag, ensuring all the fish nuggets are covered with the buttermilk. Refrigerate for at least 1 hour. Remove the catfish nuggets from the bag and place them in a colander to drain for about 10 minutes.

Combine the flour, cornmeal, and dry spices in a large bowl. Add the nuggets to the bag of dry ingredients and gently toss until they’re fully coated with the flour.

Add enough oil to cover the nuggets in a deep fryer or heavy-bottom pan and preheat to 350˚F. Place the nuggets in the oil, a few at a time to avoid overcrowding the pan, and keep the temperature always at 350˚F.

Cook for about 5 minutes or until golden brown and start floating on top of the oil.

Remove and place them on paper towels to drain. Serve hot with corn on the cob or French fries.
