SALT-CRUSTED BAKED TILAPIA

Ingredients

• 1 Great Fish Co.® Whole Tilapia

• 3 cups kosher salt

• ½ cup all-purpose flour

• 2 Tbsp olive oil

• 1 lemon, thinly sliced

• 1 Tbsp fresh thyme leaves

• 2 garlic cloves, minced

• Salt and black pepper, to taste

Preheat the oven to 425°F. Thaw and rinse the tilapia under cold running water and pat dry with paper towels to remove excess moisture. In a large mixing bowl, combine the kosher salt and all-purpose flour. Add enough water to the mixture to create a thick paste.

Spread a layer of the salt mixture onto the bottom of a baking dish. Place the whole tilapia on top of the salt mixture. Stuff the cavity of the tilapia with lemon, fresh thyme, and minced garlic.

Spoon the remaining salt mixture over the tilapia, completely covering it.

Drizzle the olive oil over the top of the salt crust. Bake the tilapia in the preheated oven for about 25-30 minutes or until the salt crust is hard and lightly browned. Remove the baking dish from the oven and let it cool for about 10-15 minutes.

Use a spoon or a small knife to crack open the salt crust. Carefully remove the tilapia from the salt crust, brushing off any excess salt. Place the tilapia onto a serving platter and serve hot with lemon wedges on the side.
